Influence of zeranol implants and electrical stimulation on the palatability traits of five muscles in Angus and Limousin bulls and steers 总被引:1,自引:0,他引:1
A split-plot design was used to study effects of male status (bull vs steer), zeranol implants, breed types (Angus vs Limousin) and electrical stimulation on palatability traits of five major muscles when all animals were fed to a similar fat-thickness endpoint. Warner-Bratzler shear (WBS) determinations and taste-panel evaluations were performed on the longissimus, adductor, semimembranosus, semitendinosus and biceps femoris muscles removed 24 h postmortem. Breed was the most consistent main effect difference, with Angus cattle having lower WBS values than Limousin for the longissimus and semitendinosus muscles. Angus cattle also were favored in many sensory traits. Few significant differences were noted between bulls and steers in taste-panel traits. Differences due to electrical stimulation were most evident in the longissimus muscle, with higher panel-evaluation scores, an enhancement of marbling and lean color and a lower incidence of heat ring. The implant tended to have negative effects on palatability in this trial. An overall ranking of the five muscles based on WBS from most tender to least tender was: adductor, semimembranosus, longissimus, semitendinosus and biceps femoris. Correlations of palatability traits of one muscle to other muscles within an experimental unit were found to be low. 相似文献

The ability of zeranol and trenbolone acetate (trenbolone) to alter testis function, weight gain and carcass traits of young bulls was studied. In Exp. 1, the effects of age at initial zeranol implantation was determined. After a 235-d experimental period, sequential implantation (56-d intervals) beginning at 100 or 150 d of age had reduced testis growth (P less than .01), sperm production (P less than .01) and serum testosterone concentration in response to gonadotropin releasing hormone (GnRH; P less than .01). The 200-d age group was partially suppressed, while the 250-d age group was not affected. Body weights were similar to controls in all groups. In Exp. 2, bulls previously implanted with zeranol at 175 and 231 d of age received single implants of zeranol, trenbolone or trenbolone plus zeranol at approximately 300 d of age. At slaughter (135 d later), body weight and carcass characteristics in all treatments were similar to controls. However, trenbolone reduced sperm production (P less than .05), zeranol reduced sperm production and testes weight (P less than .05), but trenbolone plus zeranol was similar to controls. Mean testosterone response to GnRH was suppressed in all implant groups on d 65 (P less than .01), but only in trenbolone or trenbolone plus zeranol groups on d 112 (P less than .05). Results indicate that zeranol suppresses spermatogenesis and testosterone production if implanted before approximately 200 d of age. Reduction of endogenous testosterone without alteration of weight gain or carcass characteristics may be of benefit if behavioral or masculinity traits of bulls are altered. A total of 144 male crossbred calves were allocated to four management treatments (bulls; steers; bulls implanted with zeranol at 100 d of age and re-implanted at 69, 93 and 56 d thereafter; bulls implanted with zeranol at 168 d of age and re-implanted at 93 and 56 d thereafter), and two pre-slaughter shipping treatments (minimum pre-slaughter stress with cattle shipped and slaughtered within 4 h of leaving the feedlot pen; moderate pre-slaughter stress with cattle mixed, trucked 160 km and slaughtered up to 24 h of leaving the feedlot pen) in a 4 X 2 factorial arrangement. Management treatment had no significant effect on carcass pH (45 min), carcass muscle temperature (45 min), or peak shear-force of cooked longissimus muscle. Steers had significantly lower dressing percentage, warm-carcass weight, hide weight and carcass-lean content, but higher marbling score, fat thickness and intramuscular-fat content than all treatments with bulls. Minimum pre-slaughter stress resulted in significantly lower dressing percentage, warm-carcass weight, and carcass pH (45 min), but generally had no effect on carcass tissue-yield measurements compared with the moderate stress treatment. Implanted bulls produced carcasses with significantly darker meat, higher 24-h pH and lower meat expressible juice than bulls and castrates for the moderate pre-slaughter stress treatment. These results provide evidence that zeranol implantation in bulls had a minor influence on carcass characteristics, and did not reduce the incidence of dark-cutting carcasses in young bulls subjected to moderate pre-slaughter shipping stress. 相似文献

Effects of selection for ultrasound intramuscular fat percentage in Angus bulls on carcass traits of progeny 总被引:3,自引:0,他引:3
Angus bulls (n = 20) from three pure-bred herds in Georgia were acquired to determine the impact of selecting sires based on phenotypic yearling ultrasound intramuscular fat percentage (UIMF) or UIMF EPD on marbling score of steer progeny. Each year in each herd, pairs of bulls were selected to create large differences based on their age adjusted phenotypic yearling UIMF measurements. The average UIMF, weighted by number of progeny per sire, was 3.75% (SD = 1.10%) and 1.70% (SD = 0.53%) for high UIMF (HU) and low UIMF (LU) bulls, respectively. All available ultrasound measurements collected in the purebred co-operator herds were combined with other ultrasound records collected by the American Angus Association for the computation of genetic values for ultrasound fat thickness, ribeye area, and intramuscular fat percentage. Each year bulls were randomly mated to 14 to 30 commercial Angus females. Carcass weight, fat thickness at the 12th rib, ribeye area at the 12th rib, marbling score, yield grade, and quality-grade measurements were collected on 188 steer progeny. Carcass data were linearly adjusted to 480 d of age at slaughter. Steer progeny sired by HU bulls had higher age-adjusted marbling score and quality grade (P < 0.05), and smaller age-adjusted ribeye area (P < 0.05) than steer progeny sired by LU bulls. No significant differences between phenotypic UIMF lines were found for age-adjusted fat thickness (P = 0.84) and yield grade (P = 0.33) in the steer progeny. The regression of age-adjusted carcass marbling score and quality grade of the steer progeny on ultrasound intramuscular fat percentage EPD of the sires produced highly significant regression coefficients of 90.50 and 49.20, respectively. Thus, yearling Angus bulls selected for high-phenotypic UIMF and UIMF EPD can be expected to produce steer progeny with significantly higher amounts of marbling and quality grade. Steers were generated from Angus (A), Beefmaster (BM), Brangus (BA), Gelbray (GB), and Simbrah (SB) sires mated to cows of their breed and to Brahman x Hereford F1 cows (except A) to characterize their carcass traits, composition, and palatability. The 290 steers (48 A, 48 BM, 36 BA, 31 GB, and 46 SB) were slaughtered at an equal fatness end point as determined by real-time ultrasound and visual evaluation. Angus steers had lighter (P < 0.01), more youthful (P < 0.01) carcasses with a higher (P < 0.05) quality grade, more (P < 0.01) fat thickness, and a larger (P < 0.01) longissimus area/100 kg than BM-, BA-, GB-, and SB-sired steers. Angus steers also had a lower (P < 0.01) specific gravity, a higher (P < 0.01) percentage fat and less (P < 0.05) lean in the 9th to 11th rib, and steaks aged for 10 d were more tender (P < 0.01) than steaks from Brahman-derivative sired steers. The BM- and BA-sired steers had lighter (P < 0.01), more youthful (P < 0.05) carcasses, and smaller (P < 0.01) longissimus area than GB- and SB-sired steers. The 9th to 11th rib section from the BM- and BA-sired steers had less lean and more bone (P < 0.01) than GB- and SB-sired steers. The BA-sired steers had more (P < 0.01) marbling and a higher (P < 0.05) quality grade than BM-sired steers. The SB-sired steers had heavier (P < 0.01) carcasses than the GB-sired steers. There were no differences in shear force for steaks aged for 3 d for any of the breed types, but with 10 d of aging, steaks from Angus steers were more tender, possibly indicating that steaks of Brahman-derivative breeds aged at a slower rate than those from Angus. 相似文献

Two trials were conducted to study the effect of zeranol implants on growth and sexual development of bull calves. Trial 1 compared the effects of implanting with 72 mg of zeranol at 48 d of age (branding), at 215 d of age, or at both times with nonimplanted control bulls. Implanting at branding resulted in decreased scrotal circumference, testicle weight and proportion of bulls that could produce an ejaculate at 14 mo of age (P less than .01). Implanting at 215 d of age had no effect on any of these traits. Growth rate was not increased by implanting at either time but was decreased (P less than .02) in animals implanted at both times when compared with control bulls. In trial 2, both bulls and steers were implanted with zeranol and compared with nonimplanted control bulls and steers. Thirty-six-milligram implants were given at 21, 103, 260 and 343 d of age. Scrotal circumference, testicle weight and serum testosterone concentrations decreased (P less than .01) and the occurrence of penis abnormalities increased (P less than .01) in implanted bulls compared with control bulls. By the time of slaughter, however, testosterone concentrations were equal in control and implanted bulls; and the difference in scrotal circumference was diminishing. This is interpreted as evidence that as the bulls get older, they can overcome the effect of the implants. Carcass weights were heavier in implanted steers than in control steers but were lighter in implanted bulls than in control bulls (P less than .02). Carcasses of implanted bulls had higher quality scores and more marbling than control bulls, but carcasses of implanted steers had lower quality scores and less marbling than control steers (both interactions, P less than .01). Implanting bulls with zeranol at an early age resulted in restricted sexual development but not in total sterility. Repeated zeranol implants throughout the growing and finishing phase enhanced carcass quality in bulls slaughtered at 14 to 16 mo of age. 相似文献

Spring-born purebred Brahman bull calves (n = 467) with known pedigrees, sired by 68 bulls in 17 private herds in Louisiana, were purchased at weaning from 1996 through 2000 to study variation in growth, carcass, and tenderness traits. After purchase, calves were processed for stocker grazing on ryegrass, fed in a south Texas feedlot, and processed in a commercial facility. Carcass data were recorded 24 h postmortem. Muscle samples and primal ribs were taken to measure calpastatin activity and shear force. An animal model was used to estimate heritability, genetic correlations, and sire EPD. Relatively high heritability estimates were found for BW at slaughter (0.59 +/- 0.16), HCW (0.57 +/- 0.15), LM area (0.50 +/- 0.16), yield grade (0.46 +/- 0.17), calpastatin enzyme activity (0.45 +/- 0.17), and carcass quality grade (0.42 +/- 0.16); moderate heritability estimates were found for hump height (0.38 +/- 0.16), marbling score (0.37 +/- 0.16), backfat thickness (0.36 +/- 0.17), feedlot ADG (0.33 +/- 0.14), 7-d shear force (0.29 +/- 0.14), and 14-d shear force (0.20 +/- 0.11); relatively low heritability estimates were found for skeletal maturity (0.10 +/- 0.10), lean maturity (0.00 +/- 0.07), and percent KPH (0.00 +/- 0.07). Most genetic correlations were between -0.50 and +0.50. Other genetic correlations were 0.74 +/- 0.27 between calpastatin activity and 7-d shear force, 0.72 +/- 0.25 between calpastatin activity and 14-d shear force, (0.90 +/- 0.30 between yield grade and 7-d shear force, and -0.82 +/- 0.27 between backfat thickness and 7-d shear force. Heritability estimates and genetic correlations for most traits were similar to estimates reported in the literature. Sire EPD ranges for carcass traits approached those reported for sires in other breeds. The magnitude of heritability estimates suggests that improvement in carcass yield, carcass quality, and consumer acceptance traits can be made within the Brahman population. 相似文献

In each of 2 yr, 20 Holstein steers (185+/-7 kg initial BW) were allocated to each of three treatments: pastured for 4.5 mo on grass/legume pastures and then fed 80% corn diets (DM basis) until slaughter; pastured for 4.5 mo on grass/legume pastures with ad libitum access to molasses-based protein supplements and fed 80% corn diets until slaughter; and placed in a feedlot and fed only 80% corn diets until slaughter (FEEDLOT). Half of the steers in each treatment were initially implanted with Revalor-S and not reimplanted. Supplemented steers on pasture had greater (P < 0.05) ADG than unsupplemented steers, and FEEDLOT steers gained faster and were fatter (P < 0.05) after 4.5 mo. Implanted steers had greater (P < 0.05) ADG with no significant treatment x implant status effect. Supplement intake was variable and related to ambient temperature. During the feedlot phase, steers previously on pasture had greater DMI and ADG (P < 0.05) but were not more efficient than FEEDLOT steers. Percentage of USDA Choice carcasses, fat thickness, dressing percentage, yield grade, and final weight were greater (P < 0.05) for FEEDLOT steers than for steers on other treatments. Implanting increased ADG of all steers but did not affect carcass traits, carcass composition, or feedlot performance during the finishing phase. Holstein steers consuming supplemented and unsupplemented pasture before slaughter will be leaner, have lower carcass weights, and have generally lower quality grades than those fed exclusively in a feedlot when slaughtered at similar ages. 相似文献

This study was conducted to assess the impact of implanting intact beef males with protein anabolic agents at varying intervals throughout life. Ninety-six intact males were assigned to three implant treatments: 1) not implanted, 2) implanted at 9 wk of age, weaning and at 56-d intervals thereafter with a 36-mg zeranol implant or 3) estradiol implant at 9 wk of age and 68 d post-weaning. During the 118-d, post-weaning growing period, eight animals per treatment (one replication) were castrated. After a 114-d finishing period, cattle were slaughtered (average age of 13 to 14 mo). Feedlot performance, carcass and palatability data were obtained. Average daily gains and feed efficiency did not differ (P greater than .05) between zeranol and estradiol-implanted intact males. Regardless of implant treatment, steers had lighter carcass weights (P less than .05) and higher (P less than .01) quality grades than intact males. Implanting either intact males or steers with zeranol or estradiol resulted in higher (P less than .05) numerical yield grades. Quality grades were higher in zeranol-implanted cattle than the non-implanted or estradiol-implanted cattle. Intact males implanted with zeranol were similar in carcass fatness to zeranol-implanted steers. No differences (P greater than .05) in tenderness or connective tissue were detected. Implanting intact males early and throughout life with zeranol made them similar to steers in fatness, while estradiol implantation had few effects on carcass and palatability traits of intact males or steers. 相似文献

To evaluate the effect of zeranol implants in steers on compensatory ++growth, 80 steer calves (9 mo of age; 200 kg) were fed at two feeding levels (RO = 9.2 MJ ME/kg DM; R1 = 6.9 MJ ME/kg DM) for 119 d (Period 1). During Period 2, steers were full-fed to 400 kg BW with (Z1) or without (ZO) zeranol implants. Ten steers were slaughtered at the end of Period 1 to estimate carcass composition. Differences of 100 kg in BW were achieved by restriction in Period 1. Subsequent to restriction, cumulative ADG remained greater (P less than .05) up to the 24th wk of recuperation and implants increased (P less than .001) BW gain by 31% and 24% for RO and R1, respectively. The average daily energy intake (ME/W(.75) in Period 2 was similar for all treatments. Feed conversion was improved by 21.5% (P less than .05) by implants. At the end of Period 2 the R1ZO had 8.6 kg less muscle (P less than .001), 2.9 kg less bone (P less than .001) and 5.9 kg more fat (P less than .05) than the ROZO. In comparison, the carcasses of the implanted animals did not show significant differences (P greater than .05) due to restriction. Carcass daily gains were increased by previous restriction (P less than .01) and implants (P less than .05). Zeranol increased daily live weight gain and feed conversion in animals in continuous growth as well as in those observed in compensatory growth an tended to eliminate a tendency for higher content of fat in carcasses of nonimplanted animals making compensatory growth. 相似文献

Our objective was to determine the effect of repeated use of implants on feedlot performance and carcass characteristics of Holstein cattle. Holstein steers (n = 128) weighing an average of 211 kg were blocked by weight and randomly assigned to 16 pens. At the start of the trial (d 0), pens were assigned to one of four treatments: 1) nonimplanted control (C); 2) implant on d 0, 112, and 224 (T3); 3) implant on d 112 and 224 (T2); and 4) implant on d 224 (T1). Component TE-S implants (120 mg of trenbolone acetate and 24 mg of estradiol per implant) were used for all treatments during the 291-d feeding period. Over the course of the study, T2 and T3 cattle had greater ADG and final weights than C and T1 cattle (P < 0.05). Steers were harvested at a commercial abattoir on d 291. Hot carcass weights of T3 steers were greater than those of C and T1 steers (P < 0.05). Dressing percentage, adjusted 12th-rib fat, percentage of kidney, pelvic, and heart fat, yield grade, and longissimus color were not different among treatments (P > or = 0.26). Longissimus muscle areas (LMA) of T2 and T3 carcasses were larger than LMA of C (P < 0.01). No USDA Select carcasses were produced from C cattle, whereas the percentage of Select carcasses from implanted cattle ranged from 10 to 18%. Skeletal maturity advanced (P < 0.05) progressively with each additional implant. Steaks from T3 carcasses had a higher percentage of protein than controls (P < 0.05) and were less tender than all other treatments (P < 0.05). Repeated administration of combination trenbolone acetate and estradiol implants increased ADG and resulted in heavier carcasses with larger LMA. Administration of three successive implants decreased tenderness of Holstein beef, and resulted in more advanced skeletal maturity scores. 相似文献

In two separate 2 x 2 factorial arrangements, 69 male, crossbred lambs were allotted randomly to the following treatments: 1) nonimplanted (NI) rams, 2) implanted (I) rams, 3) NI wethers, and 4) I wethers. In Trial 1, 36 lambs were allotted to treatment groups at birth (n = 9) and I lambs were implanted with 12 mg of zeranol between 1 and 3 d of age and again at weaning (average age of 62 d). Lambs were slaughtered at three time-constant end points of 78, 93, and 107 d on feed postweaning (average age of 155 d). Rams grew faster postweaning, were more efficient in their feed conversion, were heavier at slaughter, and had lower numerical yield grades than did wethers (P less than .05). Implanted lambs tended (P = .08) to grow faster and were (P less than .05) more efficient in their feed conversion than NI lambs. Rams produced heavier (P less than .05) trimmed subprimal shoulders, loins, and legs and had (P less than .05) a higher percentage of their carcass weight in the subprimal shoulder than did wethers. During Trial 2, NI rams (n = 8), I rams (n = 8), NI wethers (n = 8), and I wethers (n = 9) were allotted to treatment groups, and I lambs were implanted at average ages of 14, 55, and 98 d. Two experiments were conducted to evaluate the effect of implants containing zeranol on growth rate, carcass composition, palatability and reproductive organ development of intact male pigs. In Exp. 1, three treatment groups were evaluated: control barrows, intact control boars and implanted boars (implanted at either 28, 56 or 112 d of age with one 12-mg dose of zeranol). In Exp. 2, four treatment groups were evaluated: control barrows, intact control boars, boars implanted at 28 d with 24 mg of zeranol (single implant) and boars implanted at 28 d and re-implanted at 56 and 112 d of age with 24 mg of zeranol (triple implant). Differences for average daily gain and carcass traits were not consistent between treatment groups with the exception of 10th rib fat, where barrows were fatter than boars. There were no differences among treatments due to zeranol for the reproductive organ characteristics, with the exception that bulbourethal gland and teat weights were heavier for boars in Exp. 2. Penis weights and lengths were lower for barrows in both experiments. Juiciness, tenderness, Warner-Bratzler shear force, pork flavor intensity and sensory scores were not consistently affected by male condition or zeranol treatment. In two of the three comparisons, implanted boars had higher off-flavor intensity scores in Exp. 1, but no treatment difference was observed in Exp. 2. Angus bulls and heifers from lines divergently selected for serum IGF-I concentration were used to evaluate the effects of IGF-I selection line on growth performance and feed efficiency in 2 studies. In study 1, bulls (low line, n = 9; high line, n = 8; initial BW = 367.1 +/- 22.9 kg) and heifers (low line, n = 9; high line, n = 13; initial BW = 286.4 +/- 28.6 kg) were adapted to a roughage-based diet (ME = 1.95 Mcal/kg of DM) for 24 d and fed individually for 77 d by using Calan gate feeders. In study 2, bulls (low line, n = 15; high line, n = 12; initial BW = 297.5 +/- 34.4 kg) and heifers (low line, n = 9; high line, n = 20; initial BW = 256.0 +/- 25.1 kg) were adapted to a grain-based diet (ME = 2.85 Mcal/kg of DM) for 32 d and fed individually for 70 d by using Calan gate feeders. Blood samples were collected at weaning and at the start and end of each study, and serum IGF-I concentration was determined. Residual feed intake (RFI) was calculated, within study, as the residual from the linear regression of DMI on midtest BW(0.75), ADG, sex, sex by midtest BW(0.75) and sex by ADG. In study 1, calves from the low IGF-I selection line had similar initial and final BW and ADG, compared with calves from the high IGF-I selection line. In addition, DMI and feed conversion ratio were similar between IGF-I selection lines; however, calves from the low IGF-I selection line tended (P < 0.10) to have lesser RFI than calves from the high IGF-I selection line (-0.26 vs. 0.24 +/- 0.31 kg/d). In study 2, IGF-I selection line had no influence on performance or feed efficiency traits. However, there was a tendency (P = 0.15) for an IGF-I selection line x sex interaction for RFI. Bulls from the low IGF-I selection line had numerically lesser RFI than those from the high IGF-I selection line, whereas in heifers, the IGF-I selection line had no effect on RFI. In studies 1 and 2, weaning and initial IGF-I concentrations were not correlated with either feed conversion ratio or RFI. However, regression analysis revealed a sex x IGF-I concentration interaction for initial IGF-I concentration in study 1 and weaning IGF-I concentration in study 2 such that the regression coefficient was positive for bulls and negative for heifers. These data suggest that genetic selection for postweaning serum IGF-I concentration had a minimal effect on RFI in beef cattle. 相似文献

The objectives of this study were to characterize feed efficiency traits and to examine phenotypic correlations between performance and feeding behavior traits, and ultrasound measurements of carcass composition in growing bulls. Individual DMI and feeding behavior traits were measured in Angus bulls (n=341; initial BW=371.1+/-50.8 kg) fed a corn silage-based diet (ME=2.77 Mcal/kg of DM) for 84 d in trials 1 and 2 and for 70 d in trials 3 and 4 by using a GrowSafe feeding system. Meal duration (min/d) and meal frequency (events/d) were calculated for each bull from feeding behavior recorded by the GrowSafe system. Ultrasound measures of carcass 12th-rib fat thickness (BF) and LM area (LMA) were obtained at the start and end of each trial. Residual feed intake (RFIp) was computed from the linear regression of DMI on ADG and midtest BW(0.75) (metabolic BW, MBW), with trial, trial by ADG, and trial by midtest BW(0.75) as random effects (base model). Overall ADG, DMI, and RFIp were 1.44 (SD=0.29), 9.46 (SD=1.31), and 0.00 (SD=0.78) kg/d, respectively. Stepwise regression analysis revealed that inclusion of BW gain in BF and LMA in the base model increased R(2) (0.76 vs. 0.78) and accounted for 9% of the variation in DMI not explained by MBW and ADG (RFIp). Residual feed intake and carcass-adjusted residual feed intake (RFIc) were moderately correlated with DMI (0.60 and 0.55, respectively) and feed conversion ratio (FCR; 0.49 and 0.45, respectively), and strongly correlated with partial efficiency of growth (PEG; -0.84 and -0.78, respectively), but not with ADG or MBW. Gain in BF was weakly correlated with RFIp (0.30), FCR (-0.15), and PEG (-0.11), but not with RFIc. Gain in LMA was weakly correlated with RFIp (0.17) and FCR (-0.19), but not with PEG or RFIc. The Spearman rank correlation between RFIp and RFIc was high (0.91). Meal duration (0.41), head-down duration (0.38), and meal frequency (0.26) were correlated with RFIp and accounted for 35% of the variation in DMI not explained by MBW, ADG, and ultrasound traits (RFIc). Carcasses of 342 steers of known genetic backgrounds from four fundamentally different growth types were developed either on pasture or feedlot regimens to study differences in carcass traits. Growth types were large framed-late maturing (LL), intermediate framed-intermediate maturing (II), intermediate framed-early maturing (IE), and small framed-early maturing (SE). Five calves from each growth type were assigned to each regimen in each year of a 9-yr study. Eighteen steers were removed from the study because of accident or illness. Data collected were preslaughter shrunk BW (SBW); hot carcass weight (HCW); chilled carcass weight (CCW); dressing percentage (DRESS); fat thickness at the 12th and 13th-rib interface (FAT); percentage kidney, pelvic, and heart fat (KPH); longissimus muscle area (LMA); marbling score (MARB); quality grade (QG); and yield grade (YG). Differences in carcass traits reflected genetic differences among growth types. The LL steers had heavier BW, HCW, and CCW and larger LMA (P < .05) than steers of other growth types, regardless of development regimen. Among pasture-developed steer carcasses, IE and SE steers had higher (P < .05) MARB and QG than either LL or II steers. Carcasses of large framed-late maturing steers had the lowest (P < .05) MARB and QG of the growth types. Carcasses of the II, IE, and SE steers had a higher (P < .05) numerical value for YG than carcasses of the LL steers. Among the carcasses of the feedlot-developed steers, IE and SE steers had the highest (P < .05) MARB and QG. Carcasses from the IE and SE steers were fatter (P < .05) than those from LL or II steers. Carcasses of the LL steers had the lowest percentage of KPH of growth types developed in the feedlot. No difference was observed in KPH for carcasses of II, IE, and SE steers. The LL steer carcasses had the lowest numerical value for YG of all growth types. These data indicate that variation existed among carcass traits for the four growth types and that carcass traits influenced by fatness were greater and more attainable in the feedlot-developed steers using current methods of evaluation. 相似文献

A study was conducted in February 1984 to characterize plasma growth hormone (GH) patterns in steers. Eight Angus steers averaging 285 d of age and 276 kg were housed in a sheltered pen and group-fed once daily. Animals gained at a mean rate of .78 kg/d, with individuals ranging from .34 to 1.02 kg/d. A jugular vein cannula was inserted the day before blood sampling, which commenced at 0600 h and continued at 15-min intervals for 24 h. Growth hormone patterns consisted of frequent GH surges of varying amplitude. Growth hormone surges occurred at an average frequency of .7/h. This rate did not differ markedly among steers nor hour of day. The magnitude of GH secretory surges varied significantly among steers and during the 24-h period. Growth hormone peaks averaged 47.0 and 27.2 ng/ml in steers having the highest and lowest GH surges, respectively. During the 24-h period there were two to four 2- to 3-h periods in which GH surges were reduced in amplitude. These trough periods occurred at approximately 6-h intervals in two steers, imparting rhythmicity to GH profiles of these animals. Periods of reduced surge amplitudes and intervening secretory episodes were less periodic in the other steers. Steers were fed at 1400 h and in all steers GH levels fell from 1400 to 1600 h, and then rebounded with two to four high amplitude surges. A comparative slaughter trial was conducted with 36 F1 Nellore x Red Angus calves (12 steers, 12 bulls, and 12 heifers), averaging 274 kg of BW, to assess the net requirements of protein and energy for growth and maintenance. Three cattle from each group (i.e., steers, bulls, and heifers) were slaughtered at the beginning of the trial to determine the initial body composition. The remaining calves were randomly assigned to 1 of 3 treatments: maintenance (diet containing 70% of DM as corn silage fed at 1.2% of BW daily) or concentrate at 0.75 or 1.5% of BW daily with corn silage available for ad libitum consumption. The diets were isonitrogenous (2% N, DM basis). The experimental design provided ranges in ME intake, BW, and ADG for the development of regression equations to predict the maintenance requirements for NE and net protein (MRNE and MRNP, respectively) and the growth requirement for NE and net protein (GRNE and GRNP, respectively). After 84 d of growth, the cattle were slaughtered. The cleaned gastrointestinal tracts, organs, carcasses, heads, hides, tails, feet, blood, and tissues were weighed to measure empty BW (EBW). These parts were ground separately and subsampled for chemical analyses. For each animal within a period, DMI was measured daily and samples of feces were collected to determine diet digestibility. There were no differences in MRNE (P = 0.06) among groups. The combined data indicated a MRNE of 71.2 kcal x kg(-0.75) of EBW x d(-1), with a partial efficiency of use of ME to NE(m) of 0.71. The partial efficiency of use of ME to NE for growth was 0.54 for bulls, 0.47 for steers, and 0.54 for heifers. The GRNE for steers and heifers were similar (P = 0.15) but were 18.7% greater (P = 0.03) for steers and heifers than for bulls. The MRNP did not differ among groups and averaged 2.53 g of CP x kg(-0.75) of EBW x d(-1). Likewise, GRNP was not different among groups. The percentage of retained energy deposited as protein (RE(p)) increased as the content of retained energy in the gain (RE(c), Mcal/kg of empty body gain) decreased. The RE(p) equation of the pooled data was 46.5 x e(-0.2463 x RE(c)). We conclude that the energy requirement of crossbred Bos indicus x Bos taurus for maintenance might be less than that of purebred Bos taurus and that RE(p) is nonlinearly, negatively correlated with RE(c). The GRNE was less for bulls than for steers and heifers. However, we found no differences in MRNE, MRNP, and GRNP for bulls, steers, and heifers of Nellore x Red Angus crossbreds. 相似文献

This work investigated the metabolic basis for the variability of carcass and i.m. adiposity in cattle. Our hypothesis was that the comparison of extreme breeds for adiposity might allow for the identification of some metabolic pathways determinant for carcass and i.m. adiposity. Thus, 23- to 28-mo-old steers of 3 breeds, 2 with high [Angus or Japanese Black x Angus (J. Black cross)] and 1 with low (Limousin) i.m. and carcass adiposity, were used to measure activities or mRNA levels, or both, of enzymes involved in de novo lipogenesis [acetyl-coA carboxylase, fatty acid synthase (FAS), glucose-6-phosphate dehydrogenase (G6PDH), malic enzyme], circulating triacylglycerol (TAG) uptake (lipoprotein lipase), and fatty acid esterification (glycerol-3-phosphate dehydrogenase), as well as the mRNA level of leptin, an adiposity-related factor. In a first study, enzyme activities were assayed in the s.c. adipose tissue (AT), the oxidative rectus abdominis, and the glycolytic semitendinosus muscles from steers finished for 6 mo. Compared with Angus or J. Black cross, Limousin steers had a 27% less (P = 0.003) rib fat thickness, and 23 and 29% less (P < or = 0.02) FAS and G6PDH activities in s.c. AT. In rectus abdominis and semitendinosus, the 75% less (P < 0.001) TAG content was concomitant with 50% less (P < 0.001) G6PDH activity. In a second study, enzyme activities plus mRNA levels were assayed in an oxido-glycolytic muscle, the longissimus thoracis (LT), in the i.m. AT dissected from LT, and in s.c. AT from the same Limousin steers and from Angus steers finished for 10 mo. Compared with Angus, the 50% less (P < 0.001) rib fat thickness in Limousin contrasted with the 1.1- to 5.8-fold greater (P < or = 0.02) mRNA levels or activities, or both, of acetyl-coA carboxylase, G6PDH, lipoprotein lipase, and glycerol-3-phosphate dehydrogenase in s.c. AT. Conversely, the 90% less (P < 0.001) TAG content in Limousin LT was concomitant to the 79 and 83% less (P < or = 0.002) G6PDH activity and leptin mRNA level. Such differences could arise from a greater number of adipocytes in LT from Angus steers because no difference was found between Limousin and Angus for G6PDH activity and leptin mRNA in i.m. AT. We conclude that FAS and G6PDH in s.c. AT could be involved in differences in carcass adiposity, but this relationship disappeared when the fatness increased strongly. Leptin and G6PDH are related to the expression of marbling whatever the body condition and thus could be relevant indicators of marbling in beef cattle. 相似文献
