In two phases, this study assessed the ability of two video image analysis (VIA) instruments, VIASCAN and Computer Vision System (CVS), to augment assignment of yield grades (YG) to beef carcasses to 0.1 of a YG at commercial packing plant speeds and to test cutout prediction accuracy of a YG augmentation system that used a prototype augmentation touchpanel grading display (designed to operate commercially in real-time). In Phase I, beef carcasses (n = 505) were circulated twice at commercial chain speeds (340 carcasses per hour) by 12 on-line USDA graders. During the first pass, on-line graders assigned a whole-number YG and a quality grade (QG) to carcasses as they would normally. During the second pass, on-line graders assigned only adjusted preliminary yield grades (APYG) and QG to carcasses, whereas the two VIA instruments measured the longissimus muscle area (LMA) of each carcass. Kidney, pelvic, and heart fat (KPH) was removed and weighed to allow computation of actual KPH percentage. Those traits were compared to the expert YG and expert YG factors. On-line USDA graders' APYG were closely related (r = 0.83) to expert APYG. Instrument-measured LMA were closely related (r = 0.88 and 0.94; mean absolute error = 0.3 and 0.2 YG units, for VIASCAN and CVS, respectively) to expert LMA. When YG were augmented using instrument-measured LMA and computed either including or neglecting actual KPH percentage, YG were closely related (r = 0.93 and 0.92, mean absolute error = 0.32 and 0.40 YG units, respectively, using VIASCAN-measured LMA; r = 0.95 and 0.94, mean absolute error = 0.24 and 0.34 YG units, respectively, using CVS-measured LMA) to expert YG. In Phase II, augmented YG were assigned (0.1 of a YG) to beef carcasses (n = 290) at commercial chain speeds using VIASCAN and CVS to determine LMA, whereas APYG and QG were determined by online graders via a touch-panel display. On-line grader YG (whole-number), expert grader YG (to the nearest 0.1 of a YG), and VIASCAN- and CVS-augmented YG (to the nearest 0.1 of a YG) accounted for 55, 71, 60, and 63% of the variation in fabricated yields of closely trimmed subprimals, respectively, suggesting that VIA systems can operate at current plant speeds and effectively augment official USDA application of YG to beef carcasses.  相似文献

One hundred beef carcasses were selected to represent the mix of cattle slaughtered across the United States. Selection criteria included breed type (60% British/continental European, 20% Bos indicus, and 20% dairy carcasses), sex class (beef and Bos indicus: 67% steers, 33% heifers; dairy: 100% steers), USDA quality grade (4% Prime, 53% Choice, and 43% Select), USDA yield grade (10% YG 1, 43% YG 2, 40% YG 3, and 7% YG 4), and carcass weight (steers: 272.2 to 385.6 kg, heifers: 226.8 to 340.2 kg). One side of each carcass was fabricated into boneless subprimals and minor cuts following Institutional Meat Purchase Specifications. After fabrication, subprimals were trimmed progressively of fat in .64-cm increments beginning with a maximum of 2.54 cm and ending with .64 cm. Linear regression models were developed for each individual cut, including fabrication byproduct items (bone, fat trim) to estimate the percentage yield of those cuts reported by USDA Market News. Strip loin, top sirloin butt, and gooseneck rounds from heifers tended to have a higher percentage yield at the same USDA yield grade than the same cuts from steers, possibly resulting from increased fat deposition on heifers. Percentage of fat trimmed from dairy steers was 2 to 3% lower than that from other sex-class/carcass types; however, due to increased percentage of bone and less muscle, dairy steers were lower-yielding. Fat trimmed from carcasses ranged from 7.9 to 15.6% as the maximum trim level decreased from 2.54 to .64 cm.  相似文献

Beef carcasses (n = 5,542) were evaluated by three USDA on-line graders and compared with the computed expert USDA quality (QG) and yield grades (YG) during 8-h shifts at a major beef-processing facility for a 2-wk period to evaluate the accuracy of applying USDA QG and YG within the traditional five-grade and the proposed seven-grade (segregating YG 2 and 3 into YG 2A, 2B, 3A, and 3B) YG systems. Quality grade distribution of the carcasses was 1.1% Prime, 50.0% Choice, 43.8% Select, and 5.1% No-Roll. Accuracy of applying QG was not affected (P>.05) by changing from the five-grade (91.5%) to either the seven-grade system, when determining only QG (94.3%), or the seven-grade system, when determining QG and YG (95.0%). Calculated expert YG successfully segregated carcasses into their respective YG, but on-line graders could not differentiate between YG 4 and 5 in the seven-grade systems. The application of YG in the five-grade system was more accurate (P<.05) than either of the seven-grade systems. A trend existed for on-line graders to undergrade carcasses as the numerical YG increased. Total accuracy of applying YG decreased by 19.4 to 21.8% when switching from the five-grade to the seven-grade system. The segmentation of USDA YG 2 and 3 into YG 2A, 2B, 3A, and 3B resulted in a decrease in the ability of on-line graders to accurately apply the YG.  相似文献

Feedlot producers could optimize the value of cattle in a given market grid if they were able to improve the uniformity of the body composition between cattle among loads. Allelic variation due to a single nucleotide transition (cytosine [C] to thymine [T] transition that results in a Arg25Cys) has been demonstrated to be associated with higher leptin mRNA levels in adipose tissue and increased fat deposition in mature beef, but the effect on economically important carcass traits has not been investigated in either market-ready steers or heifers. Therefore, the objective of this study was to determine the effects of a leptin SNP on the quality grade (QG), yield grade (YG), and weight of beef carcasses. A slaughter trial was conducted using 1,435 crossbred finished heifers and 142 crossbred finished steers as they entered the slaughter facility. Canada QG tended (main effect of genotype P = 0.16, but P < 0.01 for both CC vs. TT and CT vs. TT) to be affected by leptin genotype. Specifically, 7.6 and 7.1% more TT carcasses graded Canada AAA or higher than the CT and CC carcasses, respectively, which supports the suggestion that the leptin SNP is associated with carcass fat. The proportion of carcasses grading Canada YG 1, 2, or 3 was affected (P < 0.01, P = 0.05, and P = 0.02 for YG 1, 2, and 3) by leptin genotype. The proportion of TT carcasses of Canada YG 1 was 12.5 and 15.1% lower than that of CT and CC carcasses, respectively, indicating that rearing animals under the same management and feeding system may result in greater carcass fat and a lower probability of the proportion of carcasses grading YG 1 within certain genotypes. The carcass weights of animals with the CC genotype tended (P = 0.07) to be higher than those of the TT genotype (365.5 vs. 362.3 kg). No significant difference was observed between the TT and CT genotypes in carcass weight. The observed associations between leptin genotype and carcass characteristics may represent an opportunity to genetically identify animals that are most likely to reach specific marketing groups.  相似文献

Effect of spray-chilling on quality of beef from lean and fatter carcasses   总被引:3,自引:0,他引:3  
Carcasses from five trim cows and five choice steers were used to study the effects of spray-chilling on cooler shrink, chill rate, purge loss from vacuum-packaged cuts, cook loss, shear values and bacterial growth. Spray-chilling reduced cooler shrink but had no effect on chill rate, purge loss from vacuum-packaged cuts, cook loss or shear values. Aerobes, facultative anaerobes, aerobic psychrotrophs, facultative anaerobic psychrotrophs and lactic acid bacteria all tended to be higher on rounds from spray-chilled sides. Leaner (and lighter) cow carcasses chilled faster and had lost a higher percentage of their weight at 24 h than fatter and heavier steer carcasses. The leaner carcasses had higher bacterial counts initially and throughout storage. This difference may have been due to differences in the level of initial contamination during dressing and not due to the carcasses' leanness. Purge-weight loss for each carcass increased and cooking weight loss decreased with increased storage times, making the total weight loss from meat aged 5 vs 10 wk similar.  相似文献

Forty USDA Select and 40 upper two-thirds USDA Choice beef carcasses were used to determine the effects of postmortem aging on tenderness of 17 individual beef muscles. Biceps femoris-long head, complexus, gluteus medius, infraspinatus, longissimus dorsi, psoas major, rectus femoris, semimembranosus, semitendinosus, serratus ventralis, spinalis dorsi, supraspinatus, tensor fasciae latae, teres major, triceps brachii-long head, vastus lateralis, and vastus medialis muscles were removed from each carcass. Seven steaks (2.54-cm thick) were cut from every muscle, and each steak was assigned to one of the following postmortem aging periods: 2, 4, 6, 10, 14, 21, or 28 d postmortem. After completion of the designated aging period, steaks were removed from storage (2 degrees C, never frozen), cooked to a peak internal temperature of 71 degrees C, and evaluated using Warner-Bratzler shear force (WBSF). Analysis of WBSF revealed a 3-way interaction (P = 0.004) among individual muscle, USDA quality grade, and postmortem aging period. With the exception of the Select teres major, WBSF of all muscles (both quality grades) decreased with increasing time of postmortem storage. Nonlinear regression was used to characterize the extent (aging response) and rate of decrease in WBSF from 2 through 28 d postmortem for each muscle within each quality grade. In general, WBSF of upper two-thirds Choice muscles decreased more rapidly from 2 to 10 d postmortem than did corresponding Select muscles. Muscles that had greater aging responses generally had greater 2-d WBSF values. The upper two-thirds Choice psoas major, serratus ventralis, and vastus lateralis muscles required similar aging times to complete a majority of the aging response (< or =0.1 kg of aging response remaining) compared with analogous Select muscles. The upper two-thirds Choice complexus, gluteus medius, semitendinosus, triceps brachii-long head, and vastus medialis muscles required 4 to 6 d less time to complete a majority of the aging response than did comparable Select muscles. Aging times for Select biceps femoris-long head, infraspinatus, longissimus dorsi, rectus femoris, semimembranosus, spinalis dorsi, supraspinatus, and tensor fasciae latae muscles were > or =7 d longer than those for corresponding upper two-thirds Choice muscles. Results from this study suggest that muscle-to-muscle tenderness differences depend on quality grade and aging time and that postmortem aging should be managed with respect to individual muscle and USDA quality grade.  相似文献

The present experiment was conducted to evaluate the ability of the U.S. Meat Animal Research Center's beef carcass image analysis system to predict calculated yield grade, longissimus muscle area, preliminary yield grade, adjusted preliminary yield grade, and marbling score under commercial beef processing conditions. In two commercial beef-processing facilities, image analysis was conducted on 800 carcasses on the beef-grading chain immediately after the conventional USDA beef quality and yield grades were applied. Carcasses were blocked by plant and observed calculated yield grade. The carcasses were then separated, with 400 carcasses assigned to a calibration data set that was used to develop regression equations, and the remaining 400 carcasses assigned to a prediction data set used to validate the regression equations. Prediction equations, which included image analysis variables and hot carcass weight, accounted for 90, 88, 90, 88, and 76% of the variation in calculated yield grade, longissimus muscle area, preliminary yield grade, adjusted preliminary yield grade, and marbling score, respectively, in the prediction data set. In comparison, the official USDA yield grade as applied by online graders accounted for 73% of the variation in calculated yield grade. The technology described herein could be used by the beef industry to more accurately determine beef yield grades; however, this system does not provide an accurate enough prediction of marbling score to be used without USDA grader interaction for USDA quality grading.  相似文献

Thirty-two crossbred cattle (steers = 17; heifers = 15) exhibiting an ultrasound fat thickness at the 12 to 13th rib region of at least 10 mm were selected from a slaughter shift at a commercial packing plant. After splitting, alternating sides of each carcass were trimmed of 1) subcutaneous fat in excess of 6.4 mm; 2) all kidney, pelvic, and heart fat; and 3) all cod or udder fat and fat in the flank region. Both sides of each carcass were fabricated into subprimals (final trim level of 6.4 mm) according to normal industry procedures. Effect of hot-fat trimming, yield grade (3, 4, and 5), and gender on hot-fat trim, fabrication fat trim, major subprimal, and total subprimal yield of untrimmed and trimmed carcasses were determined. Higher numerical yield grade (YG) corresponded with higher (P less than .05) percentages of hot-fat trim. Hot-fat trimming increased (P less than .05) the difference in fabrication fat trim between steers and heifers and between YG 3 and YG 5. Steers and heifers differed (P less than .05) in percentage of major subprimals and total subprimals when processed conventionally, whereas hot-fat trimming eliminated this difference (P less than .05). Untrimmed YG 3 carcasses had 3.1 and 5.0% higher major subprimal yield (P less than .05) than untrimmed YG 4 and YG 5 carcasses, respectively, whereas hot-fat trimming reduced this difference to 2.5% for YG 4 and to 3.7% for YG 5.(ABSTRACT TRUNCATED AT 250 WORDS)  相似文献

This research was conducted to determine whether objective measures of muscle color, muscle pH, and(or) electrical impedance are useful in segregating palatable beef from unpalatable beef, and to determine whether the current USDA quality grading standards for beef carcasses could be revised to improve their effectiveness at distinguishing palatable from unpalatable beef. One hundred beef carcasses were selected from packing plants in Texas, Illinois, and Ohio to represent the full range of muscle color observed in the U.S. beef carcass population. Steaks from these 100 carcasses were used to determine shear force on eight cooked beef muscles and taste panel ratings on three cooked beef muscles. It was discovered that the darkest-colored 20 to 25% of the beef carcasses sampled were less palatable and considerably less consistent than the other 75 to 80% sampled. Marbling score, by itself, explained 12% of the variation in beef palatability; hump height, by itself, explained 8% of the variation in beef palatability; measures of muscle color or pH, by themselves, explained 15 to 23% of the variation in beef palatability. When combined together, marbling score, hump height, and some measure of muscle color or pH explained 36 to 46% of the variation in beef palatability. Alternative quality grading systems were proposed to improve the accuracy and precision of sorting carcasses into palatability groups. The two proposed grading systems decreased palatability variation by 29% and 39%, respectively, within the Choice grade and decreased palatability variation by 37% and 12%, respectively, within the Select grade, when compared with current USDA standards. The percentage of unpalatable Choice carcasses was reduced from 14% under the current USDA grading standards to 4% and 1%, respectively, for the two proposed systems. The percentage of unpalatable Select carcasses was reduced from 36% under the current USDA standards to 7% and 29%, respectively, for the proposed systems. These grading systems, which included requirements for maturity, marbling, hump height, and colorimeter readings, could be implemented into the current USDA beef quality grading standards and improve the accuracy and precision of sorting beef carcasses into palatability groups. At the least, measurements of muscle color or pH could be used in a branded-beef program to increase the palatability consistency of its beef products.  相似文献

The bacteriological quality of beef and pig carcasses was assessed at 9 Norwegian abattoirs by sampling 10 carcasses at multiple sites on each of several visits. On beef carcasses the following sites consistently carried higher numbers of bacteria: the Brisket, the Fore-ribs, the Flank groin, and the Round medial. There was no evidence that beef slaughter and dressing in the hanging position was superior to methods where the carcass was lying until the hide puller. On pork carcasses the Cheek, and the Abdomen lateral surface (belly) were most heavily contaminated. The hygienic quality of pork carcasses in abattoirs where singeing was a separate step tended to be better than where a combined singeing and dehairing machine was used.This survey suggests that bacteriological monitoring of slaughter at this level of sampling and visiting is able to detect consistently poor hygienic practices.Where direct comparisons with data from other countries could be made, the present investigation indicates that the bacterial counts on Norwegian beef and pork carcasses are of the same order or better.Key words: abattoir, slaughter, beef, pork, hygiene  相似文献

Postmortem proteolysis in skeletal muscle and factors affecting this process were examined in pork, lamb and beef longissimus muscles (LM) to determine the cause of differences in meat tenderness among these species. Fat thickness differed among species in the following order: pork greater than beef greater than lamb. The following patterns were observed for rate of temperature and pH decline: lamb greater than pork greater than beef and pork greater than beef greater than lamb, respectively. At 1 d postmortem, pork was the most tender, followed by beef and lamb, respectively. Between 1 and 14 d of postmortem storage, lamb LM was the most improved in tenderness, followed by beef and pork, respectively. Species did not differ (P greater than .05) in LM collagen solubility. Pork LM from fed pigs had the highest (P less than .05) level of cathepsins B + L and cystatin(s) activities, whereas no differences (P greater than .05) were observed among the species for cathepsin B activity. The lowest (P less than .01) Ca2(+)-dependent protease (CDP)-II and CDP inhibitor activities were observed in pork LM. Beef LM had the highest CDP inhibitor activity (P less than .05) but was intermediate in CDP-II activity. No differences were observed among species for CDP-I activity. Four experiments were conducted, using carcasses from cattle identified for anticipated variability in tenderness (Exp. 1, 2, and 3) and carcasses selected for variability in physiological maturity and marbling score (Exp. 4), to evaluate the ability of the Tendertec Mark III Beef Grading Probe (Tendertec) to predict tenderness of steaks from beef carcasses. In Exp. 1, 2, and 3, longissimus steaks were aged for different periods of time, cooked to a medium degree of doneness (70 degrees C), and evaluated for Warner-Bratzler shear force (WBS) and trained sensory panel ratings. In Exp. 4, longissimus steaks were aged 14 d and cooked to 60, 65, 70, 75, or 80 degrees C for WBS tests and to 65 or 75 degrees C for sensory panel evaluations. Tendertec output variables were not correlated with 1) 24-h calpastatin activity, steak WBS (following 1, 4, 7, 14, 21, or 35 d of aging), or d-14 sensory panel tenderness ratings in Exp. 1 (n = 467 carcasses) or 2) 14-d WBS in Exp. 2 (n = 202 carcasses). However, in Exp. 3 (n = 29 carcasses), Tendertec output variables were correlated (P < 0.05) with tenderness of steaks aged 1, 21, 28, or 35 d, and we were able to separate carcasses into groups yielding tough, acceptable, and tender steaks. In Exp. 4 (n = 70), Tendertec output variables were correlated (P < 0.05) with steak WBS at 60 degrees C and with steak ratings for muscle fiber tenderness, connective tissue amount, and overall tenderness at 65 degrees C, but these relationships weakened (P > 0.05) as degree of doneness increased. Consequently, Tendertec output variables only were effective for stratifying carcasses according to tenderness when steaks from those carcasses in Exp. 4 were cooked to a rare or medium-rare degree of doneness. Although Tendertec was able to sort carcasses of older, mature cattle based on tenderness of steaks at some cooked end points, it failed to detect tenderness differences in steaks derived from youthful carcasses consistently, and was thus of limited value as an instrument for use in improving the quality, consistency, and uniformity of the U.S. fed-beef supply.  相似文献

The effect of feed withdrawal for 48 h, prior to initiation of the finishing (fattening) period (75 d) on carcass marbling fat was studied in 120 European × British cross-bred heifers with an average weight of 585 ± 39 kg. Heifers were randomized in a 2 × 2 factorial design experiment with two dietary management treatments, where half the heifers were provided the feed components of steam rolled barley and barley silage either free choice or as a total mixed ration (TMR) containing 87% steam rolled barley and 13% barley silage with ad libitum vitamins and minerals via salt blocks for all animals. Within each dietary management treatment, 30 heifers were denied feed (water was available) for 48 h prior to the two week adaptation to the high grain diet preceding the 75 d finishing period. At the end of the 48 h feed denial blood samples were collected from the jugular vein prior to feeding for determination of glucose and insulin concentrations, which indicated that 48 h feed withdrawal consistently decreased (P = 0.0001) plasma concentrations of both glucose and insulin but the ratios of the concentrations of glucose to insulin were not affected. At slaughter samples of subcutaneous fat from the brisket (BF) and skirt muscle (pars costalis diaphragmatis; PCD) were procured for determination of chemical fat content, fat dissected from the muscle and for enumeration of adipocytes, less than 35 μm in diameter and to determine the average cell size in the dissected fat and from the BF by flow-cytometry of adipocytes fixed in osmium tetroxide. The carcass characteristics were also obtained. Although no differences due feed withdrawal for 48 h were evident for carcass weight, percent lean (saleable) meat yield, rib eye area, average fat cover, fat content of PCD or BF, the US marbling score was increased (P = 0.048) and the amount of dissected fat from the muscle tended to be higher (P = 0.107), thus 81% of the carcasses graded “US Choice” or “Canada AAA,” or displayed at least a “small” amount of intramuscular fat as compared (P = 0.0807) to 68% of the heifers not denied feed. Based on more than three years of weekly prices of carcasses that graded “Canada AAA” and “Canada AA,” these experimental results suggested that the expected price of a finished heifer could increase by $4.61 Canadian if a 48 h feed withdrawal was imposed prior to initiation of the finishing phase. Although significant differences in adipocyte numbers due to a single time 48 h feed withdrawal prior to initiation of the finishing phase were not detected, the carcass quality factors were affected leading to an odds ratio of 1.84 times in favour of cattle carcasses to grade “Canada AAA” than if fed continuously.  相似文献

Carcasses from Hanwoo steers (n = 15) and cows (n = 15) were classified into three groups: group 1 (G1), the carcasses had 10% to < 11.5% intramuscular fat (IMF) in loin muscles; group 2 (G2), the carcasses had 13% to < 14.5% IMF in loin muscles; and group 3(G3), the carcasses had 17% to < 18.5% IMF in loin muscles. These were used to evaluate the effects of gender and carcass group on quality traits and Warner–Bratzler shear force (WBSF) of Psoas major (PM), Longissimus thoracis (LT), Longissimus lumborum (LL), Longus colli (LC), Supraspinatus (SS), Latissimus dorsi (LAD), Semimembranosus (SM), Quadriceps femoris (QF), Biceps femoris (BF) and Semitendinosus (ST) muscles. Our results showed that pH values of LT, LL, LC, BF and QF muscles were lower in steers than in cows (P < 0.05). Water holding capacity (WHC) was found higher in LC, SS, LAD and QF muscles of steers (P < 0.05). At day 2 of ageing, gender affected the WBSF values of only PM, LD and QF muscles in G1, and QF muscle in G3; however, with additional ageing, the gender effect was observed for most of the muscles. Most muscles showed ageing responses; however, the rates of ageing response significantly varied depending on gender and carcass groups. The muscles of G1 and G2 had generally higher tenderization potentials than those of G3. Furthermore, most muscles in G3 had generally lower WBSF values than in G1 and G2. These results clearly indicate that ageing has a significant effect on quality and WBSF of beef muscles, and the classification by loin IMF level may be useful for prediction of the tenderness of other muscles.  相似文献

Angus x Hereford steers (n = 48) similar in frame size and in muscle thickness were allotted to eight groups (n = 6) of similar mean live weight for serial slaughter at 28-d intervals (0 to 196 d). Except for d-0 steers, which served as grass-fed controls, all steers were fed a high-concentrate diet during the finishing period. Upon slaughter, one side of each carcass was trimmed of subcutaneous fat in the wholesale rib region. Postmortem longissimus muscle (LM) temperature was monitored for each side during the 24-h chilling period. After quality and yield grade data were collected, rib steaks were removed and aged (7 d) and sensory traits of the steaks were evaluated. Most carcass grade traits increased linearly (P less than .01) with days on feed, whereas most sensory panel variables and marbling increased curvilinearly (P less than .05). Generally, after 56 d on feed, carcasses chilled at slower rates (P less than .05) with increased days fed. Taste panel tenderness, amount of perceived connective tissue, and shear force values peaked at 112 d and were slightly less desirable for cattle fed longer than 112 d (quadratic term, P less than .01). Postmortem muscle temperature at 2.5 h was the chilling time most highly correlated with tenderness values among untrimmed sides. Correlations for shear force with 2.5-h LM temperature, marbling score, days fed, fat thickness, and carcass weight were -.63, -.61, -.56, -.55, and -.53, respectively.(ABSTRACT TRUNCATED AT 250 WORDS)  相似文献

An in-home beef study evaluated consumer ratings of top round steaks (semimembranosus) as influenced by USDA quality grade (top Choice or high Select), city (Chicago or Philadelphia), consumer segment (beef loyalists = heavy consumers of beef; budget rotators = cost-driven and split meat consumption between beef and chicken; and variety rotators = higher incomes and education and split meat consumption among beef, poultry, and other foods), degree of doneness, cooking method, and marination. Consumers evaluated each steak for overall like, tenderness, juiciness, flavor like, and flavor amount using 10-point scales (1 = dislike extremely, not at all tender, not at all juicy, dislike extremely, and none at all to 10 = like extremely, extremely tender, extremely juicy, like extremely, and an extreme amount of flavor, respectively). Quality grade affected several consumer sensory traits, with top Choice receiving higher (P < or = 0.004) tenderness, juiciness, and flavor like scores than high Select. Consumers in Chicago rated steaks cooked "medium and less" higher for overall like, tenderness, juiciness, flavor like, and flavor amount than those in Philadelphia (city x degree of doneness; P < or = 0.020). Steaks braised by customers in Philadelphia received among the highest scores for overall like, tenderness, juiciness, flavor like, and flavor amount compared with any cooking method used by customers in Chicago (cooking method x city; P < or = 0.026). Overall like and flavor amount ratings were least (P < 0.05) for steaks that were marinated and cooked to "medium and less" degree of doneness (marination x degree of doneness; P < or = 0.014). Braised steaks received among the highest values for overall like, tenderness, juiciness, flavor like, and flavor amount when cooked to "medium and less" or "medium well and more" (cooking method x degree of doneness; P < or = 0.008). Correlation and stepwise regression analysis indicated that flavor like was pivotal in customers' satisfaction with top round steaks, and was the sensory trait most highly correlated to overall like, followed by tenderness, flavor amount, and juiciness. Preparation of top round steaks was crucial in consumers' likes and dislikes, and by improving flavor, higher consumer satisfaction may be achieved.  相似文献

To measure the effects of dietary fat on feedlot performance and carcass characteristics, and on beef appearance, moisture binding, shelf life, palatability, and fatty acid content, 126 crossbred beef steers (321.1 +/- 0.57 kg of BW) were allotted to a randomized complete block (3) design with a 3 x 2 + 1 factorial arrangement of dietary treatments. The main effects were level of yellow grease (0, 3, or 6%) and alfalfa hay (3.5 or 7%) in corn-based diets containing 15% potato by-product (PB). The added treatment was 6% tallow and 7% alfalfa in a barley-based diet containing 15% PB. Dry matter intake and ADG were not affected by diet; however, G:F and diet NE content increased linearly (P < 0.10) with yellow grease. Kidney, pelvic, and heart fat (2.0 to 2.3 +/- 0.07) and yield grade (2.8 to 3.1 +/- 0.09) increased linearly (P < or = 0.05) with yellow grease. Steers fed corn plus 6% yellow grease had lower (P < 0.05) beef firmness and beef texture scores but greater (P < 0.01) fat color score than those fed barley plus 6% tallow. Moisture retention of beef was not affected by dietary treatment, except purge score during retail storage, which was decreased linearly (P < 0.01) from 2.1 to 1.6 +/- 0.06 by level of yellow grease. Steaks from steers fed barley plus 6% tallow had greater (P < 0.05) shear force than those from steers fed corn plus 6% yellow grease, and beef flavor increased linearly (P < 0.05) from 6.2 to 6.7 +/- 0.11 as the level of yellow grease increased. Level of yellow grease linearly increased (P < 0.01) transvaccenic acid (TVA) by 61% and CLA content of beef by 48%. Beef from steers fed corn plus yellow grease had lower (P < 0.05) palmitoleic and oleic acids and greater (P < 0.05) linoleic, TVA, and CLA than beef from steers fed the barley-tallow diet. Feeding yellow grease increased diet energy content, which increased carcass fatness, and altered beef fatty acid content, which increased beef flavor without affecting moisture retention, shelf life, or cooking properties of the beef. Additionally, beef from steers fed corn plus 6% yellow grease was more tender and had more polyunsaturated fatty acid content and CLA than beef from steers fed barley plus 6% tallow.  相似文献
