基于等养分条件下,本试验研究了蚯蚓堆肥与解淀粉芽孢杆菌X和荧光假单胞菌Y两株不同功能益生菌配施对西瓜生长和品质的影响。结果表明,不论添加益生菌与否,与单施化肥或施用常规堆肥相比,蚯蚓堆肥均促进了西瓜生长,降低了植株枯萎病发病率,增加了西瓜产量,并显著提高了西瓜可溶性固形物、可溶性糖和Vc含量等果实品质指标,其中施用蚯蚓堆肥的Vc含量较常规堆肥提高了15.9%;添加益生菌可不同程度促进西瓜生长和品质的改善,且以蚯蚓堆肥配施益生菌的促进作用更为明显。蚯蚓堆肥配施益生菌相比于单施蚯蚓堆肥,西瓜产量和可溶性糖含量分别提高了17.3%和15.2%。方差分析结果表明,有机堆肥与益生菌在西瓜蔓长、纵茎、产量、可溶性固形物、可溶性糖含量上存在显著的交互作用。综上所述,蚯蚓堆肥与益生菌配施对西瓜促生作用显著,在西瓜的绿色生产中可减少部分化肥的使用。  相似文献

The present study investigated the changes of the bioavailable isoflavones, including daidzin, genistin, daidzein, and genistein, during the making of tofu. The amount of extracted daidzin and genistin in soy milk increased with increasing water-to-bean ratios from 5 to 9 and reached the maximum level at the ratios of 9-11. On the other hand, the amount of extracted free isoflavones (daidzein and genistein) was not affected by the water-to-bean ratio at the range of 5-11, and their extracted amounts in soy milk were 2-4-fold those in raw soybean. It is suggested that these free isoflavones are mainly derived from daidzin, genistin, malonyldaidzin, and malonylgenistin through enzymatic hydrolysis during the making of soy milk. Tofu made with water-to-bean ratios of 9:1 and 10:1 had the maximal retentions of daidzin and genistin, which were due to the fine homogeneous network microstructure that is supposed to be more effectively retained through hydrophilic interaction with protein. On the contrary, the retained amount of free isoflavones decreased significantly as the water-to-bean ratio increased from 7 to 11, due to their weakening hydrophobic interaction with protein. In this study it was found that the homogeneous microstructure of tofu improved the retention of hydrophilic daidzin and genistin and that the increased amount of drained water does not significantly reduce their retention in the final tofu products as generally imagined.  相似文献

Bifidobacterium animalis subsp. lactis bb12 and B. longum 20099 were used to hydrolyze isoflavone glycosides (IG) to biologically active forms, which are isoflavone aglycones (IA), in soymilk (SM) prepared from soy protein isolate (SPI) and SM supplemented with 0.5% (w/v) of lactulose (SML). Supplementation of lactulose significantly ( p < 0.05) enhanced the viable counts of B. animalis subsp. lactis bb12 and B. longum 20099 up to 2.34 and 2.15 log CFU/mL, respectively. Bifidobacterium animalis subsp. lactis bb12 and B. longum 20099 utilized 3.32 and 3.75 mg/mL of lactulose at 24 h of incubation, respectively. Supplementation of lactulose also appeared to be a key factor in decreasing the pH of SML. The biotransformation of IG to IA was enhanced significantly by 6.8-17.1% and 12.8-13.5% in SML by B. animalis subsp. lactis bb12 and B. longum 20099, respectively. However, the presence of lactulose in SML showed the stimulating effect on B. longum 20099 only after 12 h of incubation. Isoflavone aglycones ranged from 69.5 to 77.1% of total isoflavone compounds in SML after incubation.  相似文献

The objective of this study was to monitor the changes in isoflavone content in different plant organs (leaves, stems, roots) during the crop growth stage of three cultivars of Lupinus albus (white lupin) under field conditions, taking into account sowing time effects (autumn and early spring) and cultivar effects. Three sampling dates (from late vegetative to late grain growth stages) were evaluated. Seven isoflavones and four flavonoids were identified by LC-ESI-MS analysis. The isoflavone content was higher in leaves than in stems, and it was highest before flowering, whereas it decreased during maturity. Autumn-sown plants showed higher isoflavone content than early spring-sown plants, especially in late vegetative and early reproductive stages. Genistein 7- O-glucoside was the main isoflavone of leaves and stems in the late vegetative stages of early spring sowing, whereas genistein was the main isoflavone under autumn sowing. Variation among cultivars affected only marginally the total isoflavone content. No isoflavones were detected in seeds.  相似文献

The effects of calcium sulfate concentration in soymilk on the microstructure of tofu and the constitutions of protein in tofu whey were investigated. The firm tofu made with 0.4% CaSO(4).2H(2)O was found to be most uniform and continuous in the microstructure. This tofu gave the maximal tofu yield, maximal solid and protein recoveries, and the best water retention ability. The results of gel electrophoresis and the ratio of amino nitrogen to total organic nitrogen indicated that the low molecular weight proteins in tofu whey were at their lowest when the tofu was made with 0.4% CaSO(4).2H(2)O. The SEM observations suggested that the tofu made with 0.4% CaSO(4).2H(2)O has the most uniform and homogeneous microstructure and, consequently, can most efficiently retain soybean proteins and water in the tofu gel.  相似文献

To estimate the interactions forming in soymilk freeze-gel, lyophilized gel was extracted successively with various solvents. A mixture of urea, sodium dodecyl sulfate (SDS), and 2-mercaptoethanol (2-ME) dissolved the proteins effectively. The thiol-disulfide exchange reactions and hydrophobic interactions were shown to have a complex relation with a three-dimensional network. The addition of SDS or 2-ME resulted in an incomplete gel or no precipitation of soymilk. In our previous paper (Shimoyamada et al. Food Sci. Technol. Res. 1999, 5, 284-288), the significance of precooling to form small, homogeneously distributed ice crystals in soymilk was reported. In this study, precooling was shown to maintain the partially denatured structures of soybean proteins in soymilk that had unfolded due to heat treatment. These phenomena were considered to be other important functions of precooling in freeze-gelation.  相似文献

蛋白粒子zeta电位是衡量豆乳体系稳定性的一个重要指标,而在电位分析前常采用稀释介质对豆乳进行预处理。为了确保zeta电位测定的准确性和科学性,必须选择合适的稀释介质。因此,该研究采用去离子水、豆乳超滤液两种稀释介质分别对豆乳进行稀释,并比较了这2种稀释介质对zeta电位、粒径分布、pH值以及电导率的影响。结果表明,若以去离子水为稀释介质,zeta电位的绝对值会随着稀释倍数的升高而显著增加(*P<0.05),这主要是由于豆乳蛋白胶体粒子发生解聚导致粒径减小,而pH值的升高和电导率的降低则说明豆乳的离子强度显著降低。相比之下,选用豆乳超滤液稀释豆乳时,体系的 zeta 电位、粒径分布、pH值以及电导率都未随稀释倍数的增加而改变(*P>0.05),说明此法能够较好地维持豆乳蛋白粒子的荷电稳定性。由此可知,豆乳超滤液可做为豆乳zeta电位测定的理想稀释介质。  相似文献

通过水浴加热方法研究了豆浆浓度和浆液深度对腐竹产率和成膜速度的影响。结果表明:在豆浆浓度小于5.5%时,腐竹的产率和成膜速度随着豆浆浓度的增加而增加,当豆浆浓度大于5.5%时,腐竹的产率和成膜速度反而随着豆浆浓度增加而降低,同时腐竹的品质也有所下降。控制豆浆浓度为5.5%,腐竹的产率随浆液深度的增加而增大,成膜速度随浆液深度增加而减小,浆液深度在5 cm左右时,腐竹的品质较好。  相似文献

利用近红外光谱技术检测掺假豆浆   总被引:2,自引:1,他引:2  
为了对豆乳内在营养指标及掺假豆乳进行快速检测,试验运用近红外光谱技术,利用偏最小二乘法进行回归分析,分别建立83个真伪豆浆样品的蛋白质和总固形物含量定标模型,并对模型的预测性能进行分析。结果表明:选取主成分数为12和14,蛋白质和总固形物含量的近红外光谱预测值与化学实测值之间的相关系数R分别为0.9756和0.9489,校正均方根误差分别为0.186和0.175,预测集样品的预测值和实测值之间的残差值均较小、接近零,残差之和分别为-0.074和-1.191,说明建立的定标模型可以准确预测豆浆中蛋白质和总固形物含量,且预测性能较好;通过对预测集样品的预测值与豆浆行业标准规定值相比较,确定预测集样品中掺假豆浆的正确判别率为100%,说明建立的蛋白质和总固形物含量定标模型可以应用于掺假豆浆的判别检测,且判别结果准确率高。本试验表明利用近红外光谱技术可实现对豆浆主要品质指标的快速无损检测,也可准确进行真伪豆浆的快速判别,本检测方法可为豆乳行业健康持续发展提供一定的技术支撑。  相似文献

选取两种益生菌(巨大芽孢杆菌和解淀粉芽孢杆菌)分别与化肥和蚓粪配施,研究了蚓粪和益生菌配施对设施蔬菜地土壤化学性状、酶活性及菠菜产量和品质的影响。结果表明:在等养分条件下与单施化肥相比,蚓粪能够显著提高土壤有效磷含量及p H值,降低速效钾、铵态氮含量及EC值,有利于土壤脲酶、蛋白酶和过氧化氢酶活性的提高,有效改善菠菜品质;与单施蚓粪相比,益生菌与蚓粪配施不仅显著提高土壤硝态氮含量、蔗糖酶活性,还增加了土壤EC值,提高了菠菜可溶性糖、蛋白及维生素C含量,且解淀粉芽孢杆菌配施蚓粪还增加了菠菜产量;而益生菌配施化肥对菠菜产量增加和品质改善效果不及益生菌配施蚓粪效果显著。综合比较两种益生菌和蚓粪配施效果,以蚓粪配施解淀粉芽孢杆菌对土壤性状改善和蔬菜产量、品质提高效果最好。  相似文献

豆浆的钙含量相对较低,且具有令人不愉快的豆腥味,限制了豆浆产品的消费需求。该研究以羟基磷灰石(hydroxyapatite, HA)为钙强化剂,研究了钙添加量和均质压力对豆浆粉理化性质、感官评价和挥发性风味物质组成的影响。结果表明:钙的添加会降低豆浆粉粉体的流动性,润湿和分散时间显著(P<0.05)增加;豆浆粉冲调后,剪切黏度增加,口腔摩擦系数明显提高,口感变得稠厚。在1.5%的钙添加量基础上,采用均质处理进一步改善豆浆粉的品质。低压均质(≤60 MPa)改善了豆浆粉的流动性、润湿和分散性。随着均质压力的升高,豆浆粉颗粒的表面变得光滑,坍塌减少,呈现接近球体的形态。当均质压力继续增大至80 MPa时,豆浆粉颗粒形貌略有破损。均质处理能使冲调后豆浆的黏度减小,口腔摩擦系数明显降低,口感变得顺滑。相比未加钙豆浆粉的风味物质种类(26种),钙强化豆浆粉的风味物质种类达35种。相比于未均质钙强化豆浆粉,20 MPa均质处理显著(P<0.05)降低关键性豆腥味物质(正己醛等)检测的含量,且关键性非豆腥味物质(正壬醛、反-2-辛烯醛、反-2-壬烯醛等)得到较好的保留,豆浆粉的色泽、风味、顺滑度和滋味显著(P<0.05)改善,感官评分最高。然而,过高的压力处理(80 MPa)使检测的正己醛含量略有上升,而正壬醛、反-2-壬烯醛的含量显著(P<0.05)下降,劣化了豆浆粉的感官品质,感官评分降低。该研究结果可为钙强化豆浆粉的加工及感官品质改善提供科学依据。  相似文献

Isoflavones occur primarily as glycosides (namely, malonyl-, acetyl-, and non-conjugated beta-glycosides) and a small percentage as the bioactive aglycon. The different chemical structures of isoflavones can dictate their stability during processing. Therefore, our objective was to determine the effects of pH and thermal treatments on conjugated isoflavones with regard to interconversions and loss. Conjugated daidzin and genistin were heated at 25, 80, and 100 degrees C under neutral, acidic, and basic conditions. Changes in isoflavone derivatives were monitored using high-performance liquid chromatography. Along with interconversions, considerable loss in total known isoflavone derivatives was noted for each isoflavone, especially under elevated pH and temperature. The malonylglycosides showed more stability than acetylglycosides, especially under acidic conditions. Overall, loss in isoflavone derivatives was significantly higher for daidzin than for genistin glycoside forms. Our results highlighted the significance of chemical structure with regard to stability, which is a key factor in determining soy processing conditions.  相似文献

不同品种大豆加工豆浆的品质分析及评价模型   总被引:1,自引:1,他引:1  
东北是中国大豆的主产区,也是传统豆制品的重要原料生产基地。为明确该产区大豆原料与其加工制得豆浆的品质、特点,该研究选取47个东北大豆品种为原料,分析其大豆粗脂肪、粗蛋白、钙、磷含量等理化指标,比较其加工豆浆的蛋白浓度、总固形物含量、感官评价、风味物质含量等品质差异。结果得到豆浆质量得率、动力粘度、总固形物、非豆腥味活性与豆腥味活性比值最高的品种分别是吉育102、吉92、吉育70、吉小8号、吉青3号。大豆籽粒理化指标分析结果显示,粗蛋白、粗脂肪、钙、磷含量最高的品种分别为垦丰17、GY07Y16、吉82、杂交豆3号。豆浆的豆腥味与脂肪氧化酶活性、油酸、亚油酸、亚麻酸含量呈显著正相关,脂肪含量与风味活性比呈负相关。利用因子分析法提取出4个因子方程,确定豆浆各项指标在综合品质中所占比重,进一步建立了豆浆品质评价模型,模型系数可以根据加工目的进行相应调整。综合得分最高的5个品种为吉45(9.52)、吉育70(9.43)、吉青1号(9.28)、吉育66(9.27)、吉育102(9.21)。结合对应的大豆理化指标排序发现,豆浆品质是大豆理化成分综合作用的结果,并非蛋白含量越高所得产品越好,脂肪含量高的品种并不适宜加工豆浆。该研究为用于加工豆浆的东北大豆品种分级提供了参考,实现了豆浆品质的综合判别及大豆加工基础数据的分析、整合。  相似文献

采用“311-B”最优混合设计进行田间试验,研究多效唑、乙烯利、细胞分裂素三种生长调节剂的不同配比在龙眼控梢和促花上的效应,通过建立龙眼控梢(y^a)、促花(y^b)三元二次回归模型来寻求出三种生长调节剂在龙眼控梢、促花上的最佳浓度和配比。由回归分析结果得出,在试验条件,多效唑、乙烯利、细胞分裂素对龙眼控梢的最佳浓度和配比分别为:400.00mg/L、150.00mg/L、2.50mg/L,对龙眼促花的最佳浓度和配比分别为:494.97mg/L、185.61mg/L、0.969mg/L。  相似文献

豆浆富含植物蛋白,但由于植物蛋白相较动物蛋白不易被人体吸收。利用产蛋白酶菌株发酵豆浆,可将植物蛋白降解成多肽和氨基酸,提高其消化吸收率。传统农家酱是以大豆为主要原料的传统发酵食品,含有大量能够水解大豆蛋白的优良菌株。该研究从传统农家酱中分离到8株产蛋白酶的芽孢杆菌并用于豆浆处理,处理后豆浆的可溶性肽含量显著提高,其中菌株BJ-20处理效果最显著;氨基态氮含量和水解度也有显著变化,其中BJ-6处理后的豆浆最佳,氨基态氮含量提高了10.87%,水解度为23.49%。同时,处理后豆浆的组织状态得到了明显改善。本研究丰富了豆类发酵菌种库,提高了大豆蛋白利用率,丰富了大豆产品种类,为大豆保健产品开发提供参考及理论支持。  相似文献

Abstract

In Indonesia, stevia (Stevia rebaudiana Bert. M.) is generally grown in mountainous area with relatively steep slopes. Although this plant has low nutrient requirements, soil development on different slope positions may significantly affect plant growth. Therefore, an experiment was conducted to study the effect of slope position on dry weight production of stevia grown on an Inceptisol (Brown Andosol). Slope position was found to have a significant effect on the production of stevia. Dry weight of stevia shoots at each slope position was significantly different with respect to harvesting period. The plants on the lower part of the transect slope tended to yield greater dry matter contents than those in the upper or middle parts of the slope.  相似文献

Some species of the genus Trifolium are well-known for their content of isoflavones, which are natural compounds showing health-promoting activities. Until recently, only a few species of this genus have been characterized with respect to their composition. In the present study, 57 Trifolium species have been analyzed for their contents of isoflavones, phenolic acids, flavonoids, and clovamides. The cluster analysis of experimental data allowed us to identify a number of species, which should be of interest as potential sources of these metabolites. The isoflavone contents of the three species ( T. heldreichianum, T. scabrum, and T. subterraneum) had extremely high amounts of these compounds, reaching 7-9% of dry matter, and the concentration in a number of other species was higher or at least comparable to the amounts occurring in T. pratense, one of the major isoflavone sources for the nutraceutical industry. Several species contained high amounts of all four analyzed groups of phenolics (isoflavones, phenolic acids, flavonoids, and clovamides). These species may also be of great interest as the association of several groups of active molecules is highly desired for effective disease prevention.  相似文献
