气候条件对农产品品质的形成有重要影响,农产品气候品质认证是根据当年天气气候条件特征而展开的农产品品质优劣等级的评价,对提高农产品品牌竞争力有重要意义。随着全国各地特色农产品气候品质认证技术研究的开展,本文以素有"水晶葡萄之乡"的三都县2017年的水晶葡萄为研究对象,参考现有农产品气候品质认证技术,对三都县水晶葡萄展开气候品质认证研究,结果表明:由于葡萄萌芽期、浆果生长期和浆果成熟期较严重的低温和连阴雨导致葡萄酸度偏大,综合水晶葡萄适宜性、当年天气气候状态及种植环境三方面评价2017年度三都县水晶葡萄气候品质等级为优。该方法可以为其它特色农产品的气候品质认证提供参考。 相似文献

就稻米品质形成的生理生化基础及化学调控在水稻生产中的应用现状进行了综述,重点剖析了化学调控剂对碳氮代谢及其相关酶活性、光合作用、干物质运转、籽粒灌浆的调节作用,在分析了目前稻米品质化学调控研究中存在的问题同时,提出了应用系统的观点,从光合生产、籽粒灌浆及相关酶系统特性、物质运转等水稻生产的“源库流”三方面入手,开展化学调控剂对米质作用机理研究,将有可能从根本上揭示米质品质形成规律。同时指出在研究实践中,抓住品质主要制约因素,利用激素间的协同与拮抗作用,开展化学调控剂的复配,将有望改善稻米品质的多个性状指标。 相似文献

在食用农产品与优质、营养紧密挂钩发展的新形势下,涌现了一系列新词汇,“食用农产品特征性品质指标”占据突出地位。食用农产品特征性品质指标的确定对于科学有效的评价食用农产品品质具有指导意义。本文探讨了食用农产品特征性品质指标的定义,并初步从对象确定、消费者调研、文献调研、文献信息提炼、采样指标验证、规格指标和安全指标考虑以及过程纠偏等环节对食用农产品特征性品质指标筛选方法提出了建议。文章旨在引起相关职能部门、产业群体及科研人员的重视,将食用农产品特征性品质指标定义及筛选方法做准、做实,推进食用农产品品质评价体系建立,科学有效评价食用农产品品质,真正服务于食用农产品产业发展。 相似文献

As the development of modern economics and the improvement of the living standard, the consumer demands on food have been turned from quantity to quality. Among many quality factors, volatile flavor quality is one of the most important evaluation indicators of inherent quality of agricultural products, directly determining their acceptability and commercial value. It is of great significance to conduct researches on volatile flavor quality, aiming to develop agricultural products with the high flavor quality. Herein, the current status and development trends of domestic and foreign researches on volatile flavor quality of agricultural products were detailed in this review; the new approaches and techniques used for flavor characteristic identification were expounded emphatically; the latest research progresses in characteristic flavor analysis, biological control techniques for improving flavor quality of agricultural products, application of flavor characteristic analysis in grade classification, production area discrimination, and authentic identification, utilization of intelligent odor detection techniques in flavor quality evaluation, as well as interactions between flavor compounds and matrices, were summarized. Finally, problems in current researches in volatile flavor quality in our country were discussed, and the future trends and focuses in research of volatile flavor quality were prospected. This review would provide guidance and give ideas for future studies on volatile flavor quality evaluation as well as development, utilization and consumption upgrading of high value-added agricultural products. 相似文献

香气作为重要的次生代谢产物,赋予了荔枝独特的风味品质,是评价荔枝果实及其加工品品质的重要指标之一。荔枝香气物质的研究主要集中在挥发性物质的成分和含量鉴定方面,随着检测方法的发展,荔枝果实的香气成分研究也在不断深入,目前主要采用的技术有顶空固相微萃取(HS-SPME)结合气相色谱-质谱联用(GC-MS)等。目前已从荔枝果实中鉴定出萜烯类、酯类、醛类、醇类、酸类、酚类等多种挥发性成分,其中萜烯类为主要呈香物质。根据合成前体物质的不同,香气合成途径可以分为萜类代谢、氨基酸代谢和脂肪酸代谢三大途径,荔枝香气成分的生物合成途径研究目前还较少。综述了国内外对荔枝果实及其加工产品的挥发性物质提取和检测技术,香气物质的种类和成分、合成途径,以及加工工艺和采后处理对其含量的影响。展望了今后荔枝香气物质的研究方向,为荔枝果实风味品质研究提供科学的理论支撑,为荔枝选育优良品种和优质加工品的开发利用提供参考。 相似文献

目的:为提高刺参性腺利用率,制备风味较佳的海鲜风味调味料。方法:以刺参性腺酶解物为研究对象,加入D-木糖和L-半胱氨酸进行美拉德反应,结合低分子质量香味中间体、褐变程度、游离氨基酸、呈味核苷酸和挥发性物质等指标分析刺参性腺酶解物滋味和气味的变化。结果表明:美拉德反应后,鲜味、甜味游离氨基酸含量显著增加(P<0.05),苦味游离氨基酸占比减少;AMP为刺参性腺酶解物中主要的呈味核苷酸,且反应后含量显著下降(P<0.05);关键风味化合物种类和数量均增加,醛类为主要的挥发性风味成分,苯甲醛是反应前后的最主要差异物质,吡嗪、噻吩和2-乙基呋喃是美拉德反应形成的特征性风味物质。结论:刺参肠酶解物/D-木糖/L-半胱氨酸美拉德反应产物具有良好的风味,为高品质调味基料和功能性食品的开发提供应用参考。 相似文献

Under the new situation of the development of edible agricultural products closely linked with high quality and nutrition, a series of new words emerged, among which the “characteristic quality indicators of edible agricultural products” occupied a prominent position. The clarification of the characteristic quality indicators of edible agricultural products has a leading significance for the scientific and effective evaluation of the quality of edible agricultural products. This paper discussed the definition of characteristic quality indicators of edible agricultural products, and preliminarily provided some suggestions on the screening methods of characteristic quality indicators of edible agricultural products from the aspects of object determination, consumer investigation, literature investigation, literature information extraction, sampling index verification, specification index, and health index consideration as well as process correction. The purpose of this paper was to attract the attention of relevant functional departments, industrial groups and scientific researchers, to make the definition and screening methods of characteristic quality indicators of edible agricultural products accurate and practical, to promote the establishment of quality evaluation system of edible agricultural products, to evaluate the quality of edible agricultural products scientifically and effectively, and truly to serve the development of edible agricultural products industry. 相似文献

为科学合理地评价土壤中重金属污染问题,并为土壤污染修复和土地资源可持续利用提供依据,利用文献计量学方法,结合Cite Space软件分析了近25年来国内外土壤重金属污染评价相关领域的研究热点和发展方向的演进,发现人体健康及生态风险评价、重金属在土壤中形态分析及污染源解析等问题受到较为广泛的关注。综合分析了内梅罗综合污染指数法、富集因子法、地累积指数法和潜在生态危害指数法等四种常用的指数评价法在实际评价中的优势与不足,并发现现有的污染指数评价方法侧重土壤重金属超标问题,对农产品质量涉及较少,而土壤和农产品综合质量指数法克服了现有评价方法存在的问题,将土壤重金属污染与农产品品质有机结合,同时考虑到土壤背景值、重金属形态等,可更为全面地评价土壤重金属污染。 相似文献
