The Malaysian freshwater prawn Macrobrachium rosenbergii was used for nutritional, bacteriological and sensory evaluations. Prawns were refrigerated (0 ± 1°C) and divided into two groups named T1 and T2 corresponding to permeable and impermeable (O2/CO2) packaging, respectively, in order to evaluate their shelf life. The percent composition ensured its high nutritional value, and consumer testing showed that acceptability was close to ideal, with good purchase intent. The type of treatment did not significantly influence the parameters assessed, and the shelf life was established as 150 h. The mesophilic bacteria count was the determining factor for quality assessment. Total volatile basic nitrogen and pH were not good parameters for evaluating quality, whereas the biogenic amines, especially agmatine, appeared to be appropriate quality parameters.  相似文献

Physicochemical changes of Japanese cockle foot parts occurring during cooking and cold storage at 4°C for 10 days were examined. Raw samples decreased in weight by 27% during cooking at 85°C for 15 s. Both raw and cooked samples decreased in weight to the same extent of 22–23% during the 10-day cold storage. The levels of ATP and related compounds, as well as those of free amino acids, were higher in raw than in cooked samples, although the former were found by sensory evaluation to have a stronger fishy odor. Raw samples started to decrease in ATP content after 5 days of cold storage, showing K' values of 18 and 42% after 5 and 7 days, respectively. The L* value in the Hunter scale color evaluation increased during the cold storage of raw samples, revealing a gradual disappearance of its original purple–gray color. Meanwhile, the L* value of cooked samples remained constant during the cold storage. The tensile strength of cooked samples was significantly higher than those of both raw samples before and after the cold storage, indicating increased toughness by cooking.  相似文献

ABSTRACT

The on-farm trials of rotational rice-prawn farming in a semi-deep water area in the Mekong Delta of Vietnam was carried out in six rice fields (0.7–1.0 ha) to evaluate the production and economic efficiency of using low and high cost feed on prawn culture in paddies at different densities. Two stocking densities of 4 and 5 PL/m2 were investigated. Two treatments of feed types (pellets only or a combination of pellets, trash fish, and snail meat) were applied at stocking 4 PL/m2. At the treatment of 5 PL/m2, prawns were fed a combination of pellets, trash fish, and snail meat. Prawns were stocked in the mid-April and harvested in mid‐November before the next dry season rice crop. Rice farming was started 3 to 5 days after prawn harvesting. By cull harvesting during the culture period, final mean weights of prawn ranged from 47.2 to 57.2 g/prawn and the male:female ratio at harvesting was 2.5:1.0. The prawn yield of treatment 5 PL/m2 was highest (630 ± 22 kg/ha). Net profits in treatments using the combination of pellets, trash fish, and snail meat were 861 ± 193 US$/ha to 1,019 ± 25 US$/ha for the prawn crop and 1,393 ± 71 US$/ha to 1,576 ± 180 US$/ha for the whole system (prawn crop + dry rice crop) and significantly higher than in treatment using pellet only (P < 0.05). Prawns fed on pellets or a combination of pellets and snail meat both offer similar results in terms of production and economics. The dry rice crop offered high cost benefit ratio (2.29–2.33) with low operating cost (414–434 USD/ha) and it made a better use in sustainable rice fields through the rotational rice-prawn system.  相似文献

The aim of the study was to quantify the shelf life and quality characteristics of puffer fish, Lagocephalus guentheri, fillets on chilled storage at 2 ± 1°C. The puffer fish muscle contains 16.14% protein, 80.76% moisture, 0.99% ash, and 0.17% fat. The mouse bioassay proved the absence of tetradotoxin in muscle, liver, skin, and gonads of the fish. The polyunsaturated fatty acid to saturated fatty acid (P/S) ratio of puffer fish was found to be 1.3, with n-3 to n-6 ratio of 3.27. The puffer fish had hypocholesterolemic/hypercholesterolemic ratio (H/H) value of 2.68, artherogenicity index of 0.43, and thrombogenicity index of 0.29. Beheaded and deskinned fishes were filleted and were studied for 10 days of chilled storage. The physical, chemical, sensory, and microbiological parameters showed significant (p < 0.05) changes during the entire storage period. While the hydrolytic rancidity was significantly correlated to springiness, gumminess, and chewiness of fillets, the peroxide value (PV) correlated with the color attributes and pH. The hardness of the samples decreased significantly and was evident in both sensory and instrumental analysis. With storage time, the yellowness of the fillets increased steadily. The results of this study can help in improving processing, preservation, and marketing aspects and enhance the utility of puffer fish.  相似文献

To understand biochemical characteristics, storage stability, and freshness indicators of white shrimp (Litopenaeus vannamei), changes in extractable nitrogenous compounds, microbial count, and sensory rating of white shrimp during storage at 25 and 4°C were investigated. Free amino acids showed a slow increase during storage at 25°C, but no obvious change was found at 4°C. Adenosine triphosphate (ATP) and adenosine diphosphate (ADP) were found at initial stage and decreased rapidly after storage. Both inosine 5′-monophosphate (IMP) and adenosine monophosphate (AMP) increased and then decreased during storage. Inosine, hypoxanthine, and the K-value gradually increased with time. The levels of total volatile basic nitrogen (TVB-N), NH3, and trimethylamine (TMA) of white shrimp increased with storage time at 25 and 4°C. The TVB-N, NH3, TMA, inosine, hypoxanthine, and K-value could be considered as freshness indicators of white shrimp during storage. However, the total plate count did not corroborate the acceptability recommended limits for white shrimp during storage. The sensory evaluation, associated with TVB-N, TMA, and K-value, showed the quality was unacceptable after 6 h storage at 25°C and 7 days at 4°C.  相似文献

Pacific ocean perch stored under vacuum, 100% CO2 or air at -3°C and 3°C was subjected to sensory, trimethylamine (TMA), color, microbial and volatile analyses. Unpleasant sensory attributes, TMA and microbial content were negatively correlated to overall quality, and Hunter 'L' value increased with storage time. Principal factor analysis of sensory data resulted in three factors that accounted for 71% of the variance, with factor 1 (53%) mainly related to poor quality attributes. Volatiles analyzed by the dynamic headspace technique included alkanes, alkenes, aldehydes, aromatics and alcohols. Canonical variate analysis on volatile compounds separated excellent and poor quality fish samples, while good and medium samples were grouped together.  相似文献

Biological characteristics and culture methods were investigated for the spot prawn, Pandalus platyceros Brandt. Ovigerous adults were caught in the local fishery; six of these produced 2 628 to 4 669 larvae. The larval period ranged from 26 to 35 days (9.5–12.0°C). Maximum larval survival was about 70%, with mortalities being most frequent during ecdysis. The relation of wet weight (g) to carapace length (mm) for the first 26 months was calculated as log W = ?3.0843 + 2.9308 log L. Prawns showed good survival between 9.5 and 21.0°C. Mortality increased sharply when temperatures exceeded 21.0°C. Salinities below 22‰ resulted in a sharp increase in mortality.A diet of brine shrimp nauplii sufficed for newly hatched larvae. Growth was enhanced when larvae were fed a unicellular algal supplement (Phaeodactylum tricornutum), although mortality was somewhat higher. Larvae progressed rapidly to foraging on larger brine shrimp and diced foods. Six-month-old spot prawns raised on a squid diet averaged 3.4 g, and at 1 year the mean weight was 6.3 g. A feeding experiment, incorporating 12 diets, disclosed that highest growth rates and best food conversion ratios were achieved on a combined California seamussel and giant red sea urchin diet. However, the best growth rate achieved was considered marginal for mariculture.It was concluded that unless the growth rate could be accelerated by other food formulations or culture techniques, a monoculture system for mass cultivation would not be feasible. Long‐term cryopreservation of the giant freshwater prawn, Macrobrachium rosenbergii, spermatophores using glycerol (Gly) and ethylene glycol (EG) as cryoprotective agents (CPAs) was studied. The tolerance of sperm to cryopreservation was evaluated on the basis of sperm survival and fertilizing ability. The survival of the sperm was determined by trypan blue staining, while the fertilizing ability was assessed from artificial insemination of the cryopreserved spermatophores. The rates of embryo survival on day 5 after spawning and of spermatophores capable of producing embryos survived to hatching were determined. Storage of spermatophores at ?20°C without CPA for a short period of up of 1–5 days decreased the sperm survival significantly and did not preserve fertilizing ability. Preservation at ?20°C in the presence of 10% or 20% Gly or of 10% or 20% EG offered a simple and efficient short‐term storage up to 10 days. For a long‐term storage, cryopreservation in the presence of 20% EG at ?196°C was more efficient than at ?20°C. High sperm survival rates and high fertilizing ability were recorded from those cryopreserved at ?196°C for up to 150 days. High sperm survival rates with moderate levels of fertilizing ability were obtained from those cryopreserved at ?20°C for not more than 30 days. The results indicate that preservation at ?196°C with 20% EG is a suitable procedure for long‐term storage of the giant freshwater prawn spermatophores.  相似文献

High pressure processing (HPP) can shuck (open) shellfish, saving labor while conferring food safety and yield benefits. Mostly male New Zealand Greenshell? mussels (Perna canaliculus) were HPP-shucked (3 min at 500 MPa, 30°C) and assessed during 6-days’ ice storage (0°C) for cooked yield, color, and texture compared with heat processed (1 min at 70°C) and untreated samples. HPP-treated mussels had improved yields but lost more weight during ice storage. Male mussels from all treatments became darker with ice storage. HPP-treated mussels had firmer adductor muscles, while their guts required higher maximum force but less energy to puncture them.  相似文献

Volutharpa ampullacea perryi (false abalone) meats were water cooked at 75–100°C for 5–60 min, and the changes in weight loss, pH, color, in vitro digestibility, texture, microstructure, and sensory characteristics were investigated. The weight rapidly decreased in the initial cooking and decreased slightly with the extension of both heating temperature and time. Obvious differences in color were found compared between the raw and cooked meats with respect to ΔL*, Δa*, and Δb* values. Digestibility was significantly improved with the thermal treatments. Textual properties, such as hardness, springiness, chewiness, and resilience, improved with the increasing of thermal intensity, but reduced with overcooking, and the variations were further confirmed by the scanning electron microscopy analysis. The samples boiled at 90–95°C for 10–15 min and 100°C for 5–10 min acquired better acceptance in the sensory evaluation. The complex relationship among cooking conditions and physicochemical and histological characteristics of meat as well as the consumer perceptions was illuminated by the principal components regression analysis. These results could provide useful information for quality control in V. a. perryi meat cooking.  相似文献

Fish and fish products are characterized for having a short shelf life. Nonthermal processing techniques such as high hydrostatic pressure (HHP) have increasingly been employed to extend shelf life of food products. The aim of this study was to evaluate changes on flesh physicochemical spoilage parameters (pH, total volatile bases (TVB-N), trimethylamine (TMA), thiobarbituric acid (TBA), and color) of palm ruff (Seriolella violacea) fillets in pre- and post-rigor conditions, subjected to two different HHP conditions: 450 MPa and 550 MPa, for 3 and 4 min each. Unpressurized and pressurized fillets were kept in chilled storage (4 ± 1°C) for 26 days to assess the effect of HHP on shelf life. pH and TBA values increased after HHP treatment and with storage time for both unpressurized and pressurized samples. This is attributable to pressure-induced lipid oxidation. Lightness (L*) values increased with pressure, where fish fillets had a cooked appearance. TMA and TVB-N values decreased after HHP treatment compared to the unpressurized samples, showing that HHP treatment is an efficient method to maintain the quality of palm ruff fillets. There was no clear difference between pre- and post-rigor in the parameters evaluated.  相似文献

This study reports the changes in fatty acids, taste, and microstructure of cooked southern king crab meat (Lithodes santolla) during storage at 0°C for 10 days and at ?20°C for 90 days. At the end of both storage times, the iodine value decreased by 16.5%, while 83.5% of the initial fatty acid quality remained unchanged. The polyene ratio decreased by 32% at 0°C and 35.9% at ?20°C, whereas the atherogenic and thrombotic indices remained at values that do not represent any risk to human health. Free amino acids that contribute to taste (taste activity value, TAV > 1) were: glycine and alanine (sweetness), arginine (bittersweetness), and histidine (bitterness). The bittersweet taste imparted by arginine (initial TAV = 16.4) was prevalent even at the end of frozen storage (TAV = 7.9). The umami taste was elicited by disodium 5′-adenosine monophosphate (AMP) nucleotide. The equivalent umami concentration in g MSG/100 g meat changed from 0.031 to 0.045 in refrigerated samples and to 1.6 in frozen samples. A loss of the original fibrous structure of the meat was evidenced during both treatments. Refrigerated samples presented a disintegrated and homogeneous texture at 10 days, while freezing formed a spongy tissue at 90 days.  相似文献

The aim of this study was to investigate the effects of freezing and frozen storage on protein functionality and texture of squid (Loligo vulgaris), octopus (Octopus vulgaris), and cuttlefish (Sepia officinalis) muscles. Squid, octopus, and cuttlefish samples were cut into pieces of 4 × 4 cm. These pieces were packed in polyethylene bags. The bags were frozen in a blast freezer at ?45°C until the thermal center reached ?18°C. Frozen samples were stored in a deep freezer at ?18°C for 30 days. After freezing and during frozen storage, total soluble protein and water holding capacity decreased and total free amino acid and cooking loss increased in all cephalopod muscles. According to instrumental texture analysis results, freezing and frozen storage affected textural characteristics of squid and cuttlefish but not of octopus. Sensory hardness and chewiness values of all cephalopods increased after freezing, but elasticity values did not change. There were no significant differences between storage days in hardness values of squid and octopus. However, significant differences in hardness values of cuttlefish were observed between the 1st day of storage and the last day.  相似文献

Three case studies of ammonia autointoxication of the common carp (Cyprinus carpio L.) are described. In the first case, carp yearlings with a full digestive tract were transferred during the growing period from pond water (22°C) to tap water (17°C). In the second case, marketable carp were transferred from the fishing ground of a pond (18°C) to a storage pond (10–12°C). Harvest was performed in late September when the fish were still ingesting natural feed. In the third case, marketable carp after storage for 1 month were transferred to storage ponds with markedly lower water temperature. Stress because of harvest and handling also occurred in this case. In all cases, highly increased concentrations of ammonia were found in the blood plasma of the fish (mean ± SD 1760 ± 350 μmol L−1 in the first case, 870 ± 540 μmol L−1 in the second case, and 880 ± 150 μmol L−1 in the third case). Highly congested, dark-red coloured, oedematous gills were observed for all specimens. We can avoid similar cases of ammonia autointoxication by protection of fish from sudden changes of temperature during rearing, harvesting, and handling.  相似文献

We examined the effects of salinity stress and ammonia stress on alteration of the haemocyte count, phenoloxidase activity, expressions of immune‐related genes including prophenoloxidase (proPO), crustin, heat shock protein 70 (HSP70), and expressions of stress‐responsive neurohormone (Bur‐α and Bur‐β) in the thoracic and abdominal ganglia of giant river prawn Macrobrachium. These parameters of prawn that subjected to salinity stress (transferred from 0‰ to 5‰ and 10‰), and subjected to ammonia‐nitrogen (ammonia‐N) stress (transferred from 0 to 0.262 mg/L and 0.786 mg/L) were examined after 0, 3, 6, 24, 72 and 168 hr respectively. During the initial period of 3, 6 and 24 hr, granulocyte haemocyte (granular and semi‐granular hemocyte) count and PO activity significantly decreased, while expressions of Bur‐α and Bur‐β significantly increased. After 24 hr, granulocyte haemocyte count and PO activity significantly increased, whereas expressions of Bur‐α and Bur‐β significantly decreased. The expressions of proPO, crustin and HSP70 were significantly downregulated in the prawn that subjected to salinity stress and ammonia‐N stress at all time periods of 3–168 hr. In conclusion, changes in the granulocyte haemocyte count of M. rosenbergii following salinity stress and ammonia‐N stress are closely associated with the changes of Bur‐α and Bur‐β expressions.  相似文献

The effect of high pressure (HP) treatment (at 100, 270, and 435 MPa for 5 min at 25°C) on microbiological (total viable count and total psychrotrophic count), physical (color, texture, and drip loss), and microstructural characteristics of black tiger shrimp (Penaeus monodon) during storage at 2°C for 35 days was investigated. Pressure treatment increased drip loss, maintained low microorganisms level, imparted cooked appearance to the muscle, and resulted in improved texture. Results of scanning electron microscopy revealed more compact structure in treated samples, confirming the results of texture profile analysis. Pressure treatment of 435 MPa was most effective in preserving the quality of shrimp.  相似文献

Changes in biochemical and sensory attributes of chub mackerel (Scomber japonicus) fillets during storage treated by immersion in a 12% NaCl brine with or without 0.2% liquid smoke were investigated. Brine-treated chub mackerel fillets were packaged in modified atmosphere or under vacuum and were stored at 4°C. The brined fillets were stored and evaluated raw and after heat treatment as cooked samples. Fish fillets were assessed organoleptically to determine acceptability and by measuring the pH, oxidation levels (TBARS test), and total volatile basic nitrogen (TVBN). Fillets treated in brine with liquid smoke exhibited similar pH and significantly lower TBARS and TVBN values (p < 0.05). The combination of the use of brines containing liquid smoke and subsequent vacuum packaging produced the lowest TBARS and TVBN values and resulted in extended acceptability.  相似文献
