An experiment was conducted to determine prediction equations that used readings for total body electrical conductivity (TOBEC) in the model for estimation of total fat-free lean and total fat weight in the pork carcass. Ultrasound measurements of live hogs were used to select 32 gilts that represented a range in weight, muscling, and fatness. The TOBEC readings were recorded on warm carcass sides, chilled carcass sides, and the untrimmed ham from the left carcass side. Physical dissection and chemical analyses determined fat-free lean and fat weight of the carcass. All of the ham tissues were analyzed separately from the remainder of the carcass tissues to incorporate ham measurements for prediction of total fat-free lean and total fat weight in the entire carcass. Prediction equations were developed using stepwise regression procedures. An equation that used a warm carcass TOBEC reading in the model was determined to be the best warm TOBEC equation (R2 = 0.91; root mean square error = 0.81). A three-variable equation that used chilled carcass TOBEC reading, chilled carcass temperature, and carcass length in the model was determined to be the best chilled TOBEC equation (R2 = 0.93; root mean square error = 0.73). A four-variable equation that included chilled carcass side weight, untrimmed ham TOBEC reading, ham temperature, and fat thickness beneath the butt face of the ham in the model was determined to be the best equation overall (R2 = 0.95; root mean square error = 0.65). The TOBEC and the fat-free lean weight of the ham are excellent predictors of total carcass fat-free lean weight.  相似文献

Conjugated linoleic acid (CLA) is a collective term for a group of positional (c8, c10; c9, c11; c10, c12, and c11, c13) and geometric (cis,cis; cis,trans; trans,cis; and trans,trans) isomers of octadecadienoic acid (linoleic acid) with conjugated double bond system. Dietary CLA increased the ratio of saturated fatty acid (SFA) and decreased unsaturated fatty acid (USFA) in the egg yolk and CLA sources for fat improved the color stability possibly by inhibition of lipid oxidation and oxymyoglobin oxidation in beef patties. Also dietary CLA reduced purge loss in pork loin, it could be due not only to high intramuscular fat content but also to stability of cell membrane lipids assumed by the observed delay in lipid oxidation for CLA. Cholesterol content in egg yolk was significantly decreased by a supply of dietary CLA for 5 weeks feeding. Dietary CLA and storage of CLA eggs increased the firmness of hard-cooked egg yolk and the texture of yolks from hard-cooked CLA eggs was rubbery and elastic and yolk were more difficult to break using an Instron. The eggs produced by hens fed CLA were hard and were characterized by a reddish yolk when cooled to 4 °C for 10 weeks. Several studies have determined the antioxidant property of CLA. The oxidative reactions could influence CLA concentrations by either causing the formation of linoleic acid radicals, which in turn could be converted to CLA by hydrogen donors, or causing the oxidative destruction of the conjugated double-bond system of CLA.  相似文献

We investigated conjugated linoleic acid (CLA) supplementation administered to heavy pigs, assessing carcass characteristics, meat quality, and sensory characteristics of dry-cured (Parma) ham. Thirty-six pigs, averaging 97 kg BW, were assigned randomly to three feeding groups in which diets were supplemented with either 0, 0.25, or 0.5% (as-fed basis) of a CLA preparation containing 65% CLA isomers. All pigs were slaughtered at 172 kg BW. No (P > 0.05) differences were observed in dressing percentage, loin and ham weight, or pH and color of longissimus and semimembranosus muscle. Tenth-rib backfat thickness tended to be lower (P < 0.10) in carcasses from CLA-fed pigs. The oxidative stability of longissimus muscle was greater (P < 0.05) in pigs fed CLA than control, but only at the longer (300 min) oxidation time. Acetyl-CoA carboxylase activity in adipose tissue of CLA-fed pigs was less (P < 0.05) than that of pigs fed diets devoid of supplemental CLA. Composition of ham fat was markedly affected (P < 0.01) by dietary CLA, with higher saturated fatty acids, lower monounsaturated fatty acids, and higher CLA in the fat of CLA-fed pigs regardless of supplementation level. Although melting quality was improved (P < 0.05), most sensory characteristics and the chemical composition of dry-cured hams were not (P > 0.05) affected by incorporation of CLA. Results indicated that dietary CLA alters lipid metabolism, producing lower concentrations of monounsaturated fatty acids and increased concentrations of CLA isomers in the fat of heavy pigs. Moreover, supplementing diets with CLA produced only minimal improvements in Parma ham sensory traits and had no appreciable effects on fresh pork quality.  相似文献

1. The aim of this work was to compare conjugated linoleic acid (CLA) concentrations in chickens supplemented with 4 American Tissue Culture Collection (ATCC) bacterial strains, Lactobacillus plantarum, Lactobacillus lactis, Lactobacillus casei and Lactobacillus fermentum, and 4 isolates of Lactobacillus reuteri from camel, cattle, sheep and goat rumen extracts.

2. Micro-organisms were grown anaerobically in MRS broth, and 106 CFU/ml of bacteria were administered orally to mixed-sex, 1-d-old broiler chickens weekly for 4 weeks and to 23-week-old layer hens weekly for 6 weeks.

3. The 4 strains were evaluated for their effects on synthesis of CLA in hen eggs and broiler meat cuts.

4. Administration of pure Lactobacillus and isolated L. reuteri strains from camel, cattle, goat and sheep led to significantly increased CLA concentrations of 0.2–1.2 mg/g of fat in eggs and 0.3–1.88 mg/g of fat in broiler chicken flesh homogenates of leg, thigh and breast.

5. These data demonstrate that lactic acid bacteria of animal origin (L. reuteri) significantly enhanced CLA synthesis in both eggs and broiler meat cuts.  相似文献

To evaluate milk production and milk fatty acid (FA) composition and conjugated linoleic acid (CLA) content, 75 Sicilo-Sarde ewes were used on three dietary treatments during 89 days. Two groups were conducted on rotational grazing in separate pastures of green barley grass (GB group) or perennial ryegrass (RG group) and receiving daily 300 g of concentrate/ewe. A third group was conducted in feedlot (FL group) on oat hay and silage and receiving 500 g of the same concentrate per ewe per day. Milk production did not differ among GB and RG pasture treatments (617 ml/day) but it was higher (p < 0.01) than FL one (363 ml/day). Milk fat and protein content were higher for ewes in FL than for ewes raised on both pasture treatments (88.8 and 56.7 vs. 74.5 and 54 g/kg for fat and protein, respectively). However, fat and protein yields were higher for pasture groups than FL one. The palmitic, oleic, miristic, stearic, and caprinic acids were dominant for all regimens. Short-chain FA (C4:0–C10:0) did not differ among all treatments. The medium chain FA content was significantly higher in milk fat from FL group. Conversely, the long chain ones increased for grazing groups. Milk from pasture groups had a higher C18:3 proportion than that from FL sheep (4.5 vs. 2.7 g/1000 g). The CLA content was significantly (p < 0.001) higher for grazing groups than for FL one (7.3 and 10.3 for GB and RG, respectively, vs. 2.4 g/1000 g for FL). Pasture-based diets increased the concentrations of long-chain unsaturated FA and desirable FA in milk fat.  相似文献

Conjugated linoleic acid (CLA) was supplemented to crossbred growing-finishing barrows (n = 60) at 0.75% of the total diet. Pigs were randomly assigned to the CLA or control diets based on stress genotype (negative, carrier, or positive). Gain:feed was higher for CLA diet animals (350 g/kg feed) than for control diet animals (330 g/kg feed) independent of genotype (P < 0.05). No differences were observed for ADG for the diets (P = 0.71) or genotype classes (P = 0.40). Postmortem pH was lower (P < 0.01) by 3 h for CLA-supplemented pigs, with no differences in ultimate pH. No differences (P = 0.16) were observed for ultimate pH between the three genotypes. Conjugated linoleic acid-supplemented pigs exhibited less 10th rib fat depth (2.34 cm vs 2.84 cm) and last rib fat depth (2.46 cm vs 2.72 cm) than control pigs (P < 0.05). Loin muscle area (LMA) was not affected (P = 0.18) by CLA supplementation, but LMA was different (P < 0.02) for genotype; positive genotype carcasses had the largest LMA (45.02 cm2) and negative carcasses had the smallest LMA (36.44 cm2). Carrier carcasses were intermediate for LMA (40.76 cm2). Subjective scores for color were not affected (P = 0.98) by CLA but color was different (P < 0.01), with scores of 1.50, 2.40, and 3.1 for positive, carrier, and negative genotypes, respectively. Subjective marbling scores were increased (P < 0.03) in all genotypes with CLA supplementation. Subjective firmness scores were higher (P < 0.06) for CLA-supplemented pigs and were highly correlated (0.89) to marbling scores. The L* values were higher (P < 0.01) for stress-positive pigs at 24 h postmortem. Also, L* values were higher (P < 0.01) for CLA-fed pigs over 7 d of shelf storage. Sensory characteristics were not different with CLA supplementation for tenderness (P = 0.24), juiciness (P = 0.35), or flavor intensity (P = 0.14). This study showed that LMA was increased with stress-carrier and stress-positive genotypes, but lean color was negatively affected with the presence of the stress gene. Conjugated linoleic acid supplementation improves feed efficiency, decreases backfat, and improves pork quality attributes of marbling and firmness of the longissimus muscle. Furthermore, there is seemingly no interaction between the stress-genotype status of pigs and the subsequent effect of CLA on their growth and performance.  相似文献

1. A trial was conducted to investigate the effects of dietary conjugated linoleic acid (CLA) concentration on performance parameters, carcase composition, thiobarbituric acid reactive substances (TBARS) and fatty acid composition in leg and breast muscle and serum lipoprotein concentrations. 2. A total of 128 male chickens were allocated to 4 dietary treatments (0, 1, 2 and 3% CLA) and given a standard starter diet from d 1 to d 21 and a finisher diet from d 22 to d 42. Breast and leg muscles were stored at 4 degrees C for 1, 3 or 7 d. Fatty acid composition, TBARS and pH were determined in muscles. 3. Weight gain and feed conversion ratio were positively influenced by dietary CLA level. CLA isomer concentration in muscles increased linearly (P < 0.01) as dietary CLA increased. Addition of CLA to feeds significantly increased saturated fatty acid (SFA) and polyunsaturated fatty acid (PUFA) and decreased (P < 0.01) monounsaturated fatty acid (MUFA) in leg and breast tissues. 4. Muscle pH decreased with duration of refrigerated storage. TBARS values were significantly (P < 0.01) influenced by dietary CLA and storage time. CLA increased total cholesterol, LDL-cholesterol and HDL-cholesterol, but reduced triglycerides in the plasma of broilers.  相似文献

An experiment was conducted to determine the efficacy of dietary conjugated linoleic acid (CLA) as a growth promotant in weanling swine. Weanling pigs (n = 192; 7.6 kg and 29 d of age) were randomly assigned to four treatments that were arranged as a 2 x 2 factorial. Concentrations of dietary CLA (0 or 0.6%) and antibiotics (+/-) constituted the main effect variables. Dietary CLA treatments consisted of a 1% addition of an oil containing 60% CLA isomers or 1% soybean oil, and dietary antibiotic treatments were antibiotics or no antibiotics. The experimental diets were fed for 9 wk in four phases (1, wk 1; 2, wk 2 and 3; 3, wk 4 through 6; and 4, wk 7 through 9), after which all pigs were fed identical medicated diets for the duration of the finishing phase. Live weights were recorded at wk 17 postweaning and at marketing to determine any residual effects of dietary treatments on finisher ADG and days to market. Medicated diets fed during phases 1 and 2 contained 55 mg carbadox/kg; during phase 3 contained 299 mg tilmicosin/kg; and during phase 4 contained 110 mg tylosin and 110 mg sulfamethazine/kg. Pigs fed medicated diets had higher overall ADG than pigs fed unmedicated diets for wk 0 through 9 (P < 0.03). Gain:feed (G:F) was greater for pigs fed medicated diets than for pigs fed unmedicated diets during phase 1 (P < 0.03) and for the duration of the nursery phase (P < 0.03). There were no effects of CLA on ADG, ADFI, or G:F. There were no residual effects of nursery CLA or antibiotics on finisher ADG and days to market. Blood samples collected from a subset of pigs (n = 72) at the completion of phases 2, 3, and 4 were assayed for serum IGF-I and antibody concentrations to porcine reproductive and respiratory syndrome virus (PRRSV) and Mycoplasma hyopneumoniae. There was a tendency for pigs fed medicated diets to have greater IGF-I concentrations than pigs fed unmedicated diets at the completion of phase 4 (P < 0.06). Pigs fed CLA had greater antibody titers (P < 0.02) to Mycoplasma hyopneumoniae at d 63 than pigs fed diets without CLA. These results indicate that feeding 0.6% dietary CLA did not enhance growth performance in weanling swine and that the use of dietary antibiotics can increase production efficiency in nursery pigs. Furthermore, there were no interactions between CLA and dietary antibiotics on the variables addressed in this study.  相似文献

Early-weaned pigs (n = 64) averaging 5.3 +/- 0.3 kg and distributed into two environments (dirty and clean) were used to evaluate effects of conjugated linoleic acid (CLA) on growth performance, immune competence, and empty body composition. A factorial (2 x 4) arrangement within a split-plot design, with four littermate pigs as the experimental unit for the environment, pig within litter as the experimental unit for dietary treatment, and d-0 body weight used as covariate, were used in data analysis. Diets were formulated to contain CLA at 0, 0.67, 1.33, or 2% and to exceed the NRC (1988) nutrient needs of pigs. Animals were given ad libitum access to feed for 7 wk in three phases (I, 1 to 2; II, 3 to 5; and III, 6 to 7 wk). Within phases, diets were isocaloric and isonitrogenous. In Phase I, as dietary CLA concentration increased, ADG and ADFI decreased linearly (P < 0.05 and P < 0.02, respectively). In Phase II, upon adaptation to dietary CLA supplementation, ADG increased quadratically (603, 623, 622, and 548 g/d; P < 0.01), ADFI decreased linearly (873, 840, 867, and 717 g/d; P < 0.02) and gain:feed ratio tended to increase linearly (691, 742, 715, and 763; P < 0.07). In Phase III, no differences in growth performance were attributed to either dietary or environmental treatments. The poor health status associated with the dirty environment induced a growth suppression; pigs in the clean room had a greater cumulative ADG (P < 0.01) and ADFI (P < 0.01) than pigs in the dirty room. In Phase I, lower plasma urea nitrogen levels observed in pigs found in the dirty room (P < 0.03) indicated a lower protein intake caused by a lower ADFI. The effects of dietary CLA on peripheral phenotypic profiles of lymphoytes did not appear until d 42. However, as indicated by the growth suppression of pigs in the dirty room, the negative effects of the environmental challenge on pig health and growth had already appeared during phase I. On d 42, CLA induced a linear increase in percentages of CD8+ lymphocytes (21.7, 22.3, 28.0, and 32.7%; P < 0.001). These data suggest that a 42-d dietary CLA supplementation preceding a disease challenge could have prevented disease-associated growth suppression. Also, CLA-mediated amelioration of particular infectious diseases will depend on which CD8+ T cell subset (i.e., CD8alphaalpha-immunoregulatory or CD8alphabeta-cytotoxic) is most influenced by dietary CLA supplementation.  相似文献

A study of the effects of conjugated linoleic acid (CLA) on the belly firmness and fatty acid composition of genetically lean pigs was conducted. From 75 to 120 kg live weight, 30 gilts were allowed ad libitum access to a corn-soybean meal diet supplemented with either 1% CLA oil (CLA-60) or 1% sunflower oil (SFO) or were fed the sunflower oil-supplemented diet restricted to the amount consumed by pigs fed the CLA-60 diet (RSFO). Conjugated linoleic acid oil consists of 60% positional and geometric isomers of CLA. Pigs fed SFO exhibited higher average daily gains (0.98 vs 0.80 kg/d, P < 0.01) than RSFO-fed pigs, but there were no effects of dietary treatment on feed intake or feed efficiency. Dietary treatment did not affect (P > 0.05) backfat thickness or longissimus muscle area. Bellies of gilts fed CLA-60 were subjectively evaluated to be firmer (2.91 vs 2.43 or 2.07 +/- 0.13, P < 0.01) than those of SFO- or RSFO-fed gilts, respectively. The longissimus muscle of gilts fed CLA-60 contained more saturated fatty acids (39.77 vs. 36.04 or 36.73 +/- 0.74%, P < 0.001) and less unsaturated fatty acids (60.23 vs 63.96 or 63.27 +/- 0.74%, P < 0.001) than that of gilts fed SFO or RSFO, respectively. The belly fat of gilts fed CLA-60 contained more saturated fatty acids (44.45 vs. 37.50 or 36.60 +/- 0.46%, P < 0.001) and less unsaturated fatty acids (54.78 vs. 61.75 or 62.47 +/- 0.46%, P < 0.001), resulting in lower iodine values (57.69 vs 66.37 or 65.62 +/- 0.91, P < 0.001) than that of gilts fed SFO or RSFO, respectively. Gilts fed CLA-60 accumulated more CLA in the longissimus muscle (0.55 vs 0.09 or 0.09 +/- 0.03%, P < 0.01) and belly fat (1.56 vs. 0.13 or 0.13 +/- 0.15%, P < 0.001) than did gilts fed SFO or RSFO, respectively. Dietary treatment did not affect (P > 0.05) 24-h pH, drip loss or subjective quality evaluations of the longissimus muscle. The effect of supplemental CLA to improve belly firmness is of practical significance and may provide a nutritional solution to carcass fat and belly firmness problems, thereby enhancing the overall value of extremely lean carcasses.  相似文献

Grain soybean meal diets, either with 2% of a conjugated linoleic acid (CLA) preparation or with 2% rapeseed oil (control), were tested in 2 × 40 pigs, Pietrain × (Landrace × Large White), each group with 20 female in the live weight range 23.5–117.0 kg and 20 male-castrated pigs in the live weight range 23.5–110.6 kg. The CLA-content of the preparation amounted to 54.0% cis / trans + trans / cis , 8.7% cis/cis and 32.7% trans / trans isomers. Daily weight gain, feed intake and feed : gain ratio were not influenced by the diets tested. The carcass lean increased significantly from 57.2% of the control group to 58.7% in the CLA group (p   < 0.05). The male-castrated showed a stronger CLA effect than the female pigs – not only was the carcass lean significantly increased by 2%, but backfat thickness was significantly decreased by 2.8 mm, i.e. minus 11% (as compared with barrows of the control). The meat of CLA-fed pigs had a higher conductivity. A CLA effect on further meat quality characteristics (pH 45 min post-mortem, impedance, colour criteria, intramuscular fat, drip loss, frying loss, shear force, sensory attributes) could not be detected. Three levels (0, 1 and 2%) of conjugated linoleic acid (CLA) were combined with two levels (low and high) of monounsaturated fatty acids (MUFA) for pig feeding. Productive, carcass and meat quality traits were studied. Large White ♂ × Landrace × Large White ♀ gilts (= 288) weighting 70 kg were randomly allotted to 6 different feeding treatments and fed to a final average weight of 107 kg. Loins were taken from 48 animals (8 animals randomly selected from each treatment). No differences due to dietary CLA, MUFA or CLA × MUFA interaction were found on average daily gain, average daily consumption, feed conversion ratio, carcass yield, backfat thickness, loin weight, loin pH and loin colour. A significant increase in intramuscular fat content (= 0.010) and in saturated fatty acids (SFA) (< 0.001), and a decrease in MUFA (= 0.001) and desaturase indices were found as consequence of dietary CLA, regardless the MUFA level. Therefore, dietary CLA, MUFA and their interaction did not influence productive and carcass traits of pigs. However, the use of CLA for swine feeding increased the intramuscular fat content and modified the fatty acid profile, regardless the MUFA level of the diets.  相似文献

The effect of breed and diet on insulin response to glucose challenge and its relation to intramuscular fat deposition was determined in 36 steers with 12 each of greater than 87% Wagyu (referred to as Wagyu), Wagyu x Limousin, and Limousin breeds. Weaned steers were blocked by weight into heavy, medium, and light calves and placed in six pens with two pens per weight type and with two steers of each breed per pen. Three pens with steers from each weightclass were fed backgrounding and finishing diets for 259 d, while the other three pens were fed the same diets where 6% of the barley grain was replaced with sunflower oil. Prior to initiation of the finishing phase of the study the intravenous glucose tolerance test (VGTIT) was conducted in all steers. Once steers were judged as carrying adequate 12th-rib fat, based on weight and days on feed, they were harvested and graded and samples of the longissimus muscle were procured for determination of fat content and fatty acid composition. Dietary oil improved (P = 0.011; 0.06) ADG and feed conversion efficiency of steers during the latter part of backgrounding and only ADG during early part ofthe finishing period. Generally percent kidney, pelvic, and heart fat was the only adiposity assessment increased (P = 0.003) by dietary oil. The IVGTT results indicated that insulin response to intravenous glucose was lower in Limousin steers than in Wagyu steers. Dietary oil decreased (P = 0.052) fasting plasma insulin concentration in Wagyu steers compared with Limousin steers. The correlation coefficients among the IVGTT measures and intramuscular fat content or marbling score were less than 0.4, and only a negative trend existed between fasting insulin and USDA marbling scores. However, the carcasses of the Wagyu steers graded US Choice, and 66% of the Wagyu carcasses graded US Prime, which were substantially better than the quality grades obtained for the carcasses from the other breed types. Dietary oil did not affect muscle fat content but increased (P = 0.01) conjugated linoleic acid (CLA) concentrations by 339%. Results indicated that IVGTT measures were not appropriate indices of marbling potential in cattle and that dietary oil can enhance CLA content of beef.  相似文献
