Wheaten pocket-type flat breads were baked from refined flours fortified to contain iron from ferrous sulphate (FeSO4), hydrogen-reduced elemental iron (Fe) or sodium iron ethylenediaminetetraacetic acid (NaFeEDTA). Individual and group visual detection thresholds were determined by the 3-alternative forced choice (3-AFC) test according to the American Society of Testing and Materials (ASTM) method E-1432. The group visual detection thresholds of FeSO4, NaFeEDTA and Fe in bread were established in samples baked from the corresponding wheat flours fortified with 69.46, 236.82 and 304.97 mg iron/kg flour, respectively. Sensory testing showed that iron-fortified pocket-type flat breads were similar (P < 0.01) to regular bread when baked from flours formulated to contain iron at levels lower by 25% than the group visual detection thresholds of Fe and FeSO4 and two 25% increments lower than the threshold of NaFeEDTA. These findings indicate that iron-fortified pocket-type flat breads, which are sensorially similar to regular bread, baked from flours that contained 52.1, 133.22 and 228.73 mg iron/kg flour as FeSO4, NaFeEDTA and Fe, would provide the segment of the population at the highest risk of iron-deficiency anaemia, specifically women of childbearing age, with 91%, 207% and 346% of their recommended daily intakes for iron, respectively.  相似文献

Wheat flour replacement from 0 to 40% by single tef flours from three Ethiopian varieties DZ-01-99 (brown grain tef), DZ-Cr-37 (white grain tef) and DZ-Cr-387 (Quncho, white grain tef) yielded a technologically viable ciabatta type composite bread with acceptable sensory properties and enhanced nutritional value, as compared to 100% refined wheat flour. Incorporation of tef flour from 30% to 40% imparted discreet negative effects in terms of decreased loaf volume and crumb resilience, and increase of crumb hardness in brown tef blended breads. Increment of crumb hardness on aging was in general much lower in tef blended breads compared to wheat bread counterparts, revealing slower firming kinetics, especially for brown tef blended breads. Blended breads with 40% white tef exhibited similar extent and variable rate of retrogradation kinetics along storage, while brown tef-blended breads retrograded slower but in higher extent than control wheat flour breads. Breads that contains 40% tef grain flour were found to contain five folds (DZ-01-99, DZ-Cr-387) to 10 folds (DZ-Cr-37) Fe, three folds Mn, twice Cu, Zn and Mg, and 1.5 times Ca, K, and P contents as compared to the contents found in 100% refined wheat grain flour breads. In addition, suitable dietary trends for lower rapidly digestible starch and starch digestion rate index were met from tef grain flour fortified breads.  相似文献

The potential of sourdough to improve bread quality of barley and oat enriched wheat breads may depend on the characteristics of the added flour (cereal type, variety, extraction rate). We compared the effect of different barley flours and oat bran (substitution level 40%), unfermented and as sourdoughs (20% of total flour), on composite wheat dough and bread characteristics by combining empirical rheological analyses (DoughLab, SMS/Kieffer Dough and Gluten Extensibility Rig) with small-scale baking of hearth loaves. Whole grain barley flour sourdough increased resistance to extension (Rmax) of the dough and improved the form ratio of hearth loaves compared to unfermented whole grain barley flour. However, sourdough showed little effect on the breads prepared with sifted barley flour or oat bran. The breads made with oat bran showed highest bread volume, lowest crumb firmness and highest β-glucan calcofluor weight average molecular weight (MW). The heat treatment of oat bran inactivated endogenous enzymes resulting in less β-glucan degradation. High MW β-glucans will increase the viscosity of the doughs water phase, which in turn may stabilise gas cells and may therefore be the reason for the higher bread volume of the oat bran breads observed in our study.  相似文献

The substitution of wheat flour with barley flour (i.e. native or pretreated/extruded) reduced the loaf volume. Depending on the barley variety and flour pretreatments, the colour and firmness/texture of the bread loaves were altered. Amongst the barley breads prepared from native flours (at 15% barley flour substitution level), Phoenix had higher loaf volume and lower crumb firmness than Candle. However, amongst the barley breads prepared from extruded flours, CDC-Candle had higher loaf volume and lower crumb firmness than Phoenix. The lower loaf volume and firmer crumb texture of barley breads as compared with wheat bread may be attributed to gluten dilution. Also, the physicochemical properties of barley flour components, especially that of β-glucan, can affect bread volume and texture. β-glucan in barley flour, when added to wheat flour during bread making, could tightly bind to appreciable amounts of water in the dough, suppressing the availability of water for the development of the gluten network. An underdeveloped gluten network can lead to reduced loaf volume and increased bread firmness. Furthermore, in yeast leavened bread systems, in addition to CO2, steam is an important leavening agent. Due to its high affinity for water, β-glucan could suppress the amount of steam generated, resulting in reduced loaf volume and greater firmness. In the present study, breads made with 15% HTHM CDC-Candle flour had highly acceptable properties (loaf volume, firmness and colour) and it indicated that the use of extruded barley flours would be an effective way to increase the dietary fibre content of barley breads.  相似文献

Glycemic responses to most of the conventional breads are high, including breads made of wholemeal flour. Baking technology is known to affect these responses. The aim of the present study was to investigate effects of xylanase enzyme treatment and sourdough fermentation in wholemeal wheat bread baking on postprandial glucose and insulin responses and on in vitro protein digestibility. The wheat breads were made of 100% flour from peeled kernels by a straight dough or sourdough fermentation method, and with or without using xylanase during mixing of dough. Standard white wheat bread was used as a reference. All test bread portions contained 50 g available carbohydrate and were served in random order to eleven insulin resistant subjects. Blood samples for measuring glucose and insulin concentrations were drawn over 4 h. The sourdough wholemeal wheat bread resulted in the lowest postprandial glucose and insulin responses among the four tested breads (treatment × time; p = 0.000 and p = 0.022, respectively). There were differences in solubility and depolymerisation of protein and arabinoxylan among the breads but these did not fully explain the in vivo findings. In conclusion, the health effects of wholemeal wheat bread can be further improved by using sourdough process in breadmaking.  相似文献

This work evaluates rheological properties of dough and quality of bread prepared from the flour of ancient varieties and modern breeding lines of spelt compared to common wheat. Spelt flours of old varieties exhibited similar water absorption; the largest was noted in the STH-8 line flour. Spelt doughs had longer development time and were more stable than wheat dough. The doughs made of old spelt varieties were more resistant to extension than that produced from new lines flours. Of the spelt breads, this of the STH-8 line spelt line had the largest loaf volume but smaller than wheat bread. In addition, spelt doughs had similar porosity; the most porous was the bread baked from the Frankenkorn cv, Schwabenkorn cv and STH-8 line flours. Moreover, the crumb of the bread manufactured from the flours of spelt variety Frankenkorn and the STH 28-4614 line showed the greatest resistance to compression and the smallest compressibility.  相似文献

Breads prepared from 5, 10, and 15% potato peel/white flour, 30% whole wheat flour, and 100% white flour plus two commercial, high fiber, dark breads in fresh and frozen/defrosted forms were evaluated sensorially by both untrained and trained panels. It appears that potato peel can be included in bread for the purpose of increasing dietary fiber without unduly sacrificing quality and acceptability. However, a musty aroma in the breads containing peel possibly influenced their flavor and overall rating scores, roughly in proportion to the amount of peel they contained.  相似文献

为明确不同类型小麦的面粉改良方案,为我国优质面包专用粉的生产提供理论与技术支持,以三个筋力不同的小麦品种宁麦13、扬麦16和郑麦9023为材料,通过洗面筋法提取各供试材料的湿面筋,将其冷冻干燥后按照7%、8%、9%、10%、11%的添加比例与各自面粉进行配比,对配粉的面包烘焙品质、面粉理化性质和面团流变学特性进行了测定分析。结果发现,随着面筋蛋白添加量的提高,配粉的蛋白质、湿面筋、谷蛋白大聚体(GMP)含量和沉降值逐步上升;粘度参数和面团弱化度有所下降;糊化温度和糊化时间呈上升趋势。在同一添加量下,强筋小麦的烘焙品质和面粉理化性质始终优于中筋小麦和弱筋小麦。随着面筋蛋白添加量的提高,面包体积、弹性、回复性、内聚力增大,而硬度、咀嚼性减小,感官品质得到改善。面筋蛋白添加量超过一定范围(宁麦13、扬麦16添加9%,郑麦9023添加8%),面包品质改良效果变缓,且色泽不断加深。综上所述,适量添加面筋蛋白可改变面粉的理化性质,提高其面包烘焙品质;配粉的蛋白质含量为18%左右是最经济的面包烘焙品质改良方案。  相似文献

Whole wheat and maize (corn) flours were supplemented with 10, 20 and 30% levels of a 1:1 mixture of peanut and chickpea flours (PCF). Supplementation increased the protein content of the wheat and maize blends by 20–61%. Significant increases in other proximate constituents as well as K, Ca, P, Fe, Zn and Cu levels and lysine were observed. The chemical score (FAO/WHO, 1973) of wheat flour increased from 53 to 72 and that of maize flour from 49 to 71 with 30% PCF. Biological evaluation of wheat breads (baking time = 7 min at 220°C) at 10% protein level and maize breads (baking time = 15 min at 250°C) at 8% protein level in the diet showed significant (P<0.05) improvement in the protein quality of PCF-supplemented breads as judged by gain in body weight, protein efficiency ratio, net protein ratio, net protein utilization, biological value and utilizable protein (NPU% × protein% ÷ 100) content. A supplementation level of 20% was considered adequate to achieve the desired nutritive benefits.  相似文献

The possibility of using naked barley for food products is gaining popularity due to its dietary fibre content, especially β-glucans. The technological process (dough preparation, fermentation and baking) influences bread quality but also may contribute to degradation or preservation of valuable grain components. The aim of the study was to investigate the effects of different wholemeal barley flour share and bread production method on the quality of bread and non-starch polysaccharides content and solubility.Barley enriched bread contained more both soluble and insoluble dietary fibre and β-glucans, products of 40% barley share contained 67% more total dietary fibre and 160% more β-glucans than control. However, barley incorporation decreased the amount of soluble arabinoxylans. High barley contents contributed to the breads’ volume reduction by 14% and change in their crumb and crust colour. However, barley enriched breads gained higher ratings of taste than wheat bread. Barley sourdough fermentation improved breads’ volume, colour and sensory properties. Sourdough fermentation also resulted in higher concentration of dietary fibre, arabinoxylans and β-glucans. The beneficial effect of barley addition to wheat bread may be successfully enhanced by using barley wholemeal sourdough fermentation.  相似文献

The aim of this study was to evaluate the effect of particle size distribution on composition, properties rheological, pasting, microstructural and baking properties of whole grain wheat flour (WGWF) of three different particles sizes (194.9 μm, 609.4 μm and 830.0 μm). The quantification of free sulfhydryl groups (-SH) of WGWF samples, together with the effects observed in the behavior of the dough and bread showed that particle size influences the functionality of the gluten network in a differentiated way. Firmer and lower breads volume compared to refined wheat flour (RF) were correlated with the quality of the gluten network. In the sample of finer particles, more pronounced adverse effects in quality (dough rheology, bread volume and texture) compared to the medium and coarse particle size sample suggests that the larger contact surface and the increased release of reactive compounds due to cell rupture interact with the gluten-forming proteins changing their functionality.  相似文献

Enteral formulas (EF) are complex food systems which have all the nutrients in their matrix for the complete human nourishment. However, there are components in EF which can interact with minerals, reducing their absorption, and thereof the EF nutritional quality. The effect of soy protein (SP) and Ca content on Fe, Zn, and Ca bioaccessibility and protein digestibility (%DP) was assessed using a response surface design in EF. Tested SP levels were 2.5–5.0 g/100 mL of total protein. Ca levels were adjusted with Ca citrate within a range between 50 and 100 mg/100 mL. SP content negatively influenced %DP and Fe, Zn and Ca bioaccessibility. As SP content increased, mineral bioaccessibility and %DP decreased, probably due to the increased levels of phytic acid and trypsin inhibitors from SP. Ca content only affected %DCa, which had a direct relationship with Ca levels, while did not affect Fe and Zn bioaccessibility or %DP. Since Ca citrate did not impair Fe and Zn bioaccessibility, it could be an appropriate Ca source for EF fortification.  相似文献

The objective of this study was to examine the influence of flour quality on the properties of bread made from pre-fermented frozen dough. The physicochemical parameters of 8 different wheat flours were determined, especially the protein quality was analysed in detail by a RP-HPLC procedure. A standardized baking experiment was performed with frozen storage periods from 1 to 168 days. Baked bread was characterised for specific loaf volume, crumb firmness and crumb elasticity. The results were compared to none frozen control breads. Duration of frozen storage significantly affected specific loaf volume and crumb firmness. The reduction of specific loaf volume was different among the used flours and its behaviour and intensity was highly influenced by flour properties. For control breads wet gluten, flourgraph E7 maximum resistance and RVA peak viscosity were positively correlated with specific loaf volume. However, after 1–28 days of frozen storage, wet gluten content was not significantly influencing specific loaf volume, while other parameters were still significantly correlated with the final bread properties. After 168 days of frozen storage all breads showed low volume and high crumb firmness, thus no significant correlations between flour properties and bread quality were found. Findings suggest that flours with strong gluten networks, which show high resistance to extension, are most suitable for frozen dough production. Furthermore, starch pasting characteristics were also affecting bread quality in pre-fermented frozen dough.  相似文献

The growing interest in the benefits of wholegrain products has resulted in the development of baked products incorporating less utilised and ancient grains such as, millet, quinoa, sorghum and teff. However, addition of wholegrains can have detrimental effects on textural and sensory bread product qualities.Enzymes can be utilised to improve breadmaking performance of wholegrain flours, which do not possess the same visco-elastic properties as refined wheat flour, in order to produce a healthy and consumer acceptable cereal product.The effects of Teff grain on dough and bread quality, selected nutritional properties and the impact of enzymes on physical, textural and sensory properties of straight dough and sourdough Teff breads were investigated.Teff breads were prepared with the replacement of white wheat flour with Teff flour at various levels (0%, 10%, 20%, and 30%) using straight dough and sourdough breadmaking. Different combinations of enzymes, including xylanase and amylase (X + A), amylase and glucose oxidase (A + GO), glucose oxidase and xylanase (GO + X), lipase and amylase (L + A) were used to improve the quality of the highest level Teff breads. A number of physical, textural and sensory properties of the finished products were studied. The nutritional value of breads was determined by measuring chemical composition for iron, total antioxidant capacity, protein, fibre and fat. The obtained results were used to estimates intakes of nutrients and to compare them with DRIs.The incorporation of Teff significantly (P < 0.05) improved dietary iron levels as 30% Teff breads contained more than double the amount of iron when compared to corresponding wheat bread (6 mg/100 g v 2 mg/100 g). Addition of Teff also significantly (P < 0.05) improved total antioxidant capacity from 1.4 mM TEAC/100 g to 2.4 mM TEAC/100 g. It was estimated that an average daily allowance of 200 g of Teff enriched bread would contribute to DRIs in the range of 42-81% for iron in females, 72-138% for iron in males; 38-39% for protein in males, 46-48% for protein in females; and 47-50% of fibre in adults.The major challenge was encountered in producing the highest level of Teff bread with good textural and sensory attributes. Increasing the level of Teff significantly (P < 0.05) increased dough development time, degree of softening, crumb firmness and bitter flavour whilst decreasing the dough stability, specific loaf volume and overall acceptability of the bread. Teff breads produced with the addition of enzyme combinations showed significant improvements (P < 0.05) in terms of loaf volume, crumb firmness, crumb structure, flavour and overall acceptability in both straight dough and sourdough breadmaking.  相似文献

面包逐渐成为中国人营养早餐的选择,但面包中膳食纤维含量较低。燕麦是一种食疗兼备的特色杂粮作物,富含膳食纤维。为拓宽燕麦的应用范围、提高面包的营养价值,以优质强筋小麦品种藁优2018和燕麦粉为材料,研究了燕麦粉对小麦面粉面团流变学特性及淀粉糊化特性的影响,并进行了燕麦面包实验室制作和质构分析。结果表明,随着燕麦粉添加比例的增加,面团吸水率逐渐增加,面团稳定时间和粉质质量指数先减小后增加;面团拉伸能量、拉伸长度、拉伸阻力、最大拉伸阻力均逐渐减小。说明燕麦粉对面团拉伸特性各参数均有弱化作用。在藁优2018小麦面粉中添加10%的燕麦粉,既能保证面包的感官品质,又能满足面包营养最大化。  相似文献

In Poland bread as a staple food both made from wheat and rye flour can be a potential product for future fortification with folic acid. The objective of the study was to examine the effect of fermentation and baking on added folic acid and some endogenous folates stability during breadmaking of rye and wheat breads. Breads were produced using the formulation containing enriched flour with 0.2 mg folic acid/100 g product, baker’s yeast and additionally ascorbic acid for wheat bread and lactic acid for rye bread. Folates were extracted with Hepes/Ches buffer (pH = 7.85) followed by destruction of matrix by amylase and protease and deconjugation with rat serum conjugase. Affinity chromatography (FBP bovine milk) was used to purify and concentrate samples. The folates were separated by HPLC with C18 column and with a combination of fluorescence and UV detection. For both rye and wheat breads there was a decrease of folic acid from flour to bread stage. The total losses depend on baking process and ranged from 12 to 21%. Some changes in the level of different native folate forms during the stage of baking process were also observed.  相似文献

Infrared stabilized rice bran (SRB) substitution to white wheat, wheat bran and whole grain wheat breads at the levels of 2.5, 5.0 and 10.0% was evaluated in terms of proximate composition, crumb color, dietary fiber, texture and sensory attributes. An increasing tendency was observed in crude fat and ash content of the breads. Redness (+a*), yellowness (+b*) chroma and redness (a*/b*) values were increased gradually with the addition of SRB. Crumb color was found to be darker when 10% of SRB was added to the breads. SRB inclusion did not affect the content of soluble dietary fiber while it significantly increased the insoluble and total dietary fiber contents of the breads (p < 0.05). In general, whole grain wheat bread differed from the other bread types in terms of textural behavior. Based on the overall acceptability scores, white wheat and wheat bran breads were sensory accepted up to 10% of flour replacement with rice bran, while substitution levels higher than 2.5% negatively affected the sensory scores of whole grain wheat bread.  相似文献

Bread and flour are most commonly used products in human diet, which makes it susceptible to adulteration, mislabeling and addition of unpermitted amount of different flour types. The objective of this work was to evaluate the potential of employing laser induced breakdown spectroscopy to differentiate different flour types and quantify the white wheat flour addition to rye and oat flour and breads. In the principal component analysis, score plot represents pure flour types with 97.64% of the variance. In the calibration study, the measured coefficient of determination values was 0.989, 0.989, 0.992 and 0.991 for refined wheat flour: rye flour, refined wheat flour: oat flour, breads made with the blend of refined wheat: rye flour and the blend of refined wheat: oat flour, respectively. The limit of detection values were calculated as 3.82, 5.97, 4.59 and 4.92% for refined wheat flour: rye flour, refined wheat flour: oat flour, refined wheat: rye bread and refined wheat: oat bread, respectively.  相似文献

The purpose of this study was to investigate the effects of emulsifiers [sodium stearoyl-2-lactylate (SSL), glycerol mono stearate (GMS-90), di-acetyl tartaric acid esters of monoglycerides (DATEM), S-570, S-1170, S-1670, P-1670] on pita bread quality. Three flour types (soft wheat flour with 10·0% protein, hard red winter wheat flour with 11·6% protein, and hard red spring wheat flour with 14·4% protein) and three emulsifier concentrations (0·25%, 0·50%, 0·75%, flour basis) were used. Pita breads were baked in an air impingement oven. Loaves were scored on the first and second days, and the influence of the more effective emulsifiers on shelf life stability were investigated after 5 days. Analysis of variance indicated that the flour of moderate protein content (11·6%) resulted in the best overall product quality. The high protein flour (14·4%) gave a dough with high water absorption and bread loaves with dark crust color. On the other hand, the low protein flour (10·0%) had low water absorption. The loaves were uniform in texture and thickness for top and bottom layers, and had a light crust color. All emulsifiers improved the tearing quality of the product. The low concentration (0·25%) of SSL, S-1170, S-1670, and S-570 with flour of moderate protein content (11·6% protein) resulted in a good quality pita bread. No significant differences occurred amongst breads containing those emulsifiers for ability to roll and fold and tearing quality after 5 days of storage at room temperature.  相似文献

A long-term (1999–2007) field experiment was conducted to investigate the effects of three nitrogen (N) fertilization rates (0, 130, and 300 kg N/ha) on micronutrient density in wheat grain and its milling fractions. At maturity, grains were harvested and fractionated into flour, shorts, and bran for micronutrient and N analysis. N fertilization increased iron (Fe), zinc (Zn), and copper (Cu) density in wheat grain compared to the control. Increase of N application rate from 130 to 300 kg N/ha, however, did not further increase the three micronutrient densities in grain. Micronutrient concentrations were usually highest in the bran and lowest in the flour. High N application increased Zn and Cu densities in all three milling fractions and increased Fe concentration in shorts and bran but not in flour. N application did not affect the manganese (Mn) concentration in grain. N fertilization changed the proportions of Fe and Cu in flour and bran but did not affect the distribution of Zn. Because N fertilization increased micronutrient accumulation in wheat grain, proper management of N fertilization has the potential to enhance the nutritional quality of this important food.  相似文献
