NIR spectroscopy was used to assess textural parameters (maximum shear force and cutting energy) in intact green asparagus. At the same time, two commercially available spectrophotometers, which differ primarily in terms of measurement principles, were evaluated: a scanning monochromator (SM) of 400–2500 nm and a combination of diode array and scanning monochromator (DASM) of 350–2500 nm. A total of 468 green asparagus spears cv. ‘UC-157’ were used to obtain calibration models based on reference data and NIR spectral data. Both instruments provided good precision for maximum shear force, with r2 values between 0.55 and 0.67 and standard error of cross-validation (SECV) ranging from 7.81 to 8.43 N, and also for cutting energy (r2 = 0.60–0.74; SECV = 0.06–0.07 J). The results obtained suggest that NIR spectroscopy is a promising technology for predicting intact green asparagus quality in terms of texture. They also show that the two spectrophotometers tested provided a similar degree of accuracy for texture measurements in intact green asparagus.  相似文献

Visible (Vis)/near infrared (NIR) spectroscopy is an excellent technique for non-destructive fruit quality assessment. This research was focused on evaluating the use of Vis/NIR spectroscopy for measuring soluble solids content (SSC) of intact ‘Cuiguan’ pears (Pomaceae pyrifolia Nakai cv. Cuiguan) on-line. Also, the effect of fruit moving speed on SSC measurements was investigated. Diffuse transmission spectra were collected using a fiber spectrometer equipped with a 3648-element linear silicon CCD array detector in the wavelength range of 345–1040 nm, and all sample spectra were collected three times at different fruit moving speeds of 0.3 m s?1, 0.5 m s?1 and 0.7 m s?1. Spectral pre-processing such as derivative, standard normal variate transformation (SNV) and multiplicative scatter correction (MSC) was used before calibration. Partial least squares (PLS) and least squares support vector machines (LS-SVM) were used to develop calibration models for SSC. The results show that fruit moving speed has few effects on spectra and model performance at a fruit moving speed of 0.3–0.7 m s?1. At 0.5 m s?1, the best model for SSC was PLS regression coupled with original spectra, its coefficient of determination (R2) and root mean square error of prediction (RMSEP) being 0.916% and 0.530%, respectively.  相似文献

Chlorophyll fluorescence is a promising technique for postharvest quality research, and reported studies were mainly based on the fluorescence kinetic analysis method, which has not been quite satisfactory for measuring fruit quality. This paper reports on using a hyperspectral imaging technique for measurement of laser-induced fluorescence from apple fruit for predicting multiple fruit quality parameters. A continuous wave blue laser (408 nm) was used as an excitation source for inducing fluorescence in apples. Fluorescence scattering images were acquired from ‘Golden Delicious’ apples by a hyperspectral imaging system at the instance of laser illumination (0 min) and after 1, 2, 3, 4, and 5 min of illumination. The hyperspectral fluorescence image data were represented by mean, maximum, and standard deviation spectra. Standard tests were performed on measuring fruit skin and flesh color, firmness, soluble solids content, and titratable acid. A hybrid method of combining principal component analysis and neural network modeling was used for developing prediction models to predict fruit quality parameters for each of the six illumination time periods. Fluorescence emission decreased steadily during the first 3 min of illumination and was stable within 5 min. The 0-min fluorescence prediction models had somewhat poorer prediction results for individual quality parameters except skin hue than did the models of longer illumination time. The differences were minimal in the model prediction results from the fluorescence data at 1, 2, 3, 4 or 5 min of illumination. Overall, excellent predictions were obtained for apple skin hue with the correlation coefficient of prediction of 0.94. Relatively good predictions were obtained for fruit firmness, skin chroma, and flesh hue with values for the correlation coefficient being equal to or greater than 0.74 for 1 min of illumination or longer times, and poorer correlations were found for soluble solids content, titratable acid, and flesh chroma. Hyperspectral laser-induced fluorescence imaging is potentially useful for assessing selected quality parameters of apple fruit and further research is needed to improve fluorescence measurement for better prediction of fruit quality.  相似文献

The feasibility of optical coherence tomography (OCT) for imaging histological changes associated with the development of a progressive rind breakdown (RBD) disorder of ‘Nules Clementine’ mandarin (Citrus reticulate Blanco.) was investigated. The investigation utilised fruit with different levels of the disorder, carefully selected from a batch of fruit stored for eight weeks at 8 ± 0.5 °C. Images of healthy and RBD-affected intact mandarin fruit were acquired using a Thorlabs OCT system based on a broadband 930 nm source. OCT provided high resolution 2D images of fruit rind to a depth of about 1.1 mm. Immediate and non-destructive acquisition of images showing histological and microstructural features in intact rind tissues was demonstrated. The oil glands stayed intact in unaffected fruit and gradually collapsed in RBD affected fruit. At advanced stages of the disorder, the collapsed oil glands became increasingly deformed and flattened. The study showed that OCT is a promising technique for immediate, real-time and non-destructive acquisition of images showing histological and microstructural rind features of ‘Nules Clementine’ mandarin fruit.  相似文献

Chlorophyll fluorescence, VIS/NIR spectroscopy as well as biospeckle and backscattering at 635 nm, 690 nm, 830 nm, and 1060 nm, were used to detect changes in apples stored for 7 d (20 °C), either intact or subjected to high hydrostatic pressures: 100 MPa, 150 MPa and 200 MPa. Biospeckle at 635 nm, 690 nm and 830 nm, and backscattering at 690 nm, 830 nm and 1060 nm showed a high potential for determining changes during storage of intact fruit, while chlorophyll fluorescence, VIS/NIR spectroscopy and backscattering measured at 830 nm, and 1060 nm were appropriate to detect changes in fruit subjected to high hydrostatic pressures. Spectral measurements of apples treated with 150 and 200 MPa showed mainly textural changes and, during post-pressure storage, changes in chemical composition. Decrease in physiological activity and increased rates of enzymatic processes in pressure-treated apples may be responsible for the inability of biospeckle to detect pressure-induced changes.  相似文献

A simple and rapid method was developed for quantitative determination of juiciness in peach flesh based on the absorption of free juice with ordinary absorbent paper after a flesh sample is squeezed by two metallic rolling cylinders. Juiciness data were compared with trained panel determinations on three peach cultivars kept at 4 °C and 90% RH for 7, 14 and 21 d plus a ripening period at 20 °C and 65% RH until the flesh reached 19.6 ± 9.2 N. There was a high correlation between panel judgment and paper absorption (r2 = 0.75 in ‘Elegant Lady’, 0.77 in ‘O’Henry’ and 0.93 in ‘Ross’). A sub-sample of the juiciest and the mealiest fruit also were sorted after 14 and 21 d in cold storage. ‘Ross’, a non-melting peach cultivar, did not develop flesh mealiness during any evaluation period. During storage, there was a reduction in juiciness reaching 15% less after 21 d. Mealy fruit were exclusively observed with melting cultivars exposed to cold storage. The proposed method for determining juice content is easily executed and shows a high association with human perception of juiciness and mealiness in peach.  相似文献

Apples can be stored for long time under controlled temperature and atmosphere conditions, and therefore, non-destructive and rapid tools are required to assess fruit quality and to monitor changes during the postharvest period. The aim of this study was to evaluate the feasibility of NIR spectroscopy to optimize postharvest apple management and to follow changes in fruit quality during storage. An FT-NIR system operating in diffuse reflectance in the range 12,500–3600 cm−1 was used to evaluate the physico-chemical (dry matter, soluble solids, colour and firmness) and some nutraceutical characteristics (total phenolics, total flavonoids and antioxidant activity) of ‘Golden Delicious’ apples, which were stored for about six months at 1 °C in controlled atmosphere, over two subsequent years. Spectral data were elaborated by PLS regression and LDA classification techniques. Good correlation models between spectral data and chemical and physical parameters were obtained for soluble solids, a* colour coordinate and firmness (0.81 < R2 < 0.90 in calibration and 0.79 < R2 < 0.89 in cross validation). Even higher correlation values (0.89 < R2 < 0.95 in calibration and 0.86 < R2 < 0.92 in cross validation) were obtained for indexes correlated to the antioxidant capacity of apples. The classification technique Linear Discriminant Analysis was applied to spectral data, in order to discriminate apples on the basis of storage time. Average correct classification was higher than 93% in validation and close to 100% in calibration, indicating high potential of NIR spectroscopy for the estimation of storage time of apple lots.  相似文献

This work aimed at studying the feasibility of time-resolved reflectance spectroscopy (TRS) to nondestructively detect internal browning (IB) in ‘Braeburn’ apples through the development of classification models based on absorption (μa) and scattering (μs′) properties of the pulp.This research was carried out in two seasons: in 2009, apples were measured by TRS at 670 nm and in the 740–1040 nm spectral range on four equidistant points around the equator, whereas in 2010 apples were measured by TRS at 670 nm and at 780 nm on eight equidistant points.The values of the absorption coefficients measured in the 670–940 nm range increased with IB development. On the contrary, μs′780 was higher in healthy fruit than in IB ones. The μa780 also significantly increased with IB severity, showing high values when IB affected the pulp tissues compared to the core ones. Also μa670 changed with IB development, but it was not able to clearly discriminate healthy fruit from IB ones because its value was also affected by the chlorophyll content of the pulp.The absorption and scattering coefficients were used as explanatory variables in the linear discriminant analysis in order to classify each apple tissue as healthy or IB; then the models obtained were used for fruit classification. The best classification performance was obtained in 2010 using μa780 and μs′780 and considering the IB position within the fruit: 90% of healthy fruit and 71% of IB fruit were correctly classified. By using all the μa measured in the 670–1040 nm range plus the μs′780, IB fruit classification was slightly better while healthy fruit classification was worse. The better result of 2010 was due to the increased number of TRS measurement points that allowed better exploration of the fruit tissues. However, the asymmetric nature of this disorder makes detection difficult, especially when the disorder is localized in the inner part of the fruit (core) or when it occurs in spots. A different TRS set-up (position and distance of fibers, time resolution) should be studied in order to reach the deeper tissue within the fruit in order to improve browning detection.  相似文献

‘Pink Lady®’ apples were harvested at commercial maturity, treated with three different agrochemical products, and stored at 1 °C under either air or controlled atmosphere conditions (2 kPa O2 + 2 kPa CO2 and 1 kPa O2 + 1 kPa CO2) for 13 and 27 weeks, followed by 4 weeks storage in air at 1 °C. Diphenylamine, folpet and imazalil contents in both the skin and flesh were simultaneously determined after cold storage plus simulated marketing periods of 1 and 7 d at 20 °C. After 27 weeks plus 7 d, diphenylamine and folpet levels in apple skin were lower for fruit stored in low O2 (2 kPa) or air than for those kept under ultra-low O2 (1 kPa). An additional storage period of 4 weeks in air reduced diphenylamine and folpet contents in whole apples stored for 13 weeks in the low O2 controlled atmosphere. For imazalil, the same result was obtained in apple skins stored for 27 weeks under an ultra-low O2 controlled atmosphere. Differences in diphenylamine and folpet contents were found for skin and flesh samples throughout the simulated marketing period, but there were observable differences in imazalil contents only for flesh samples.  相似文献

Tomato (Lycopersicon esculentum L.) fruit are an important source of antioxidant (mainly pigment) compounds, as well as lycopene, β-carotene, ascorbic acid and polyphenols. Differentiation of the final product in the market requires an accurate evaluation of these value-adding compounds. Because of this, we have undertaken a comparison of the spectral characterisation of the tomato fruit surface pigments from the immature to over-ripe stage, using spectroscopy techniques based on visible fluorescence emission upon excitation in the same or ultraviolet spectral regions. The aim was to verify the spectral band for optimal conditions for fruit harvesting using non-destructive techniques. The pattern of pigment composition changed markedly during ripening and showed progressive disappearance of chlorophyll with a concomitant increase in carotenoids until the fully ripe stage. The main fluorescence spectral features belonging to anthocyanins, flavonoids, carotenoids and chlorophyll a after excitation of skin tomato pigments at different laser wavelengths was identified. In comparing, the fluorescence spectral ratios at the excitation wavelength λexc = 266 nm, significant differences were obtained for the spectral ratios of chlorophyll/flavonoids and carotenoids/chlorophyll. Positive correlation coefficients were found for the carotenoids/flavonoids (0.780) ratios and negative ones for the carotenoids/chlorophyll ratios (−0.513).Analysis of fluorescence resulted in determination of the most useful laser radiation for remote non-invasive measurements with laser-induced fluoresence (LIF): for the ripening stage, λexc = 266 nm was the optimal laser wavelength, since the induced fluorescence spectra obtained appeared to differ with the physiological stage of the fruit.  相似文献

‘Galia’ (Cucumis melo var. reticulatus L. Naud. cv. Galia) fruit were harvested at the three-quarter slip stage and treated with 1 μL L−1 1-methylcyclopropene (1-MCP) at 20 °C for 24 h. The fruit were processed and stored as fresh-cut cubes and intact fruit for 10 d at 5 °C. Ethylene production of fresh-cut cubes was approximately 4–5-fold higher than intact fruit at day 1. Afterward, the ethylene production of fresh-cut cubes declined significantly whereas that of intact fruit remained relatively constant at about 0.69–1.04 ng kg−1 s−1. 1-MCP delayed mesocarp softening in both fresh-cut and intact fruit and the symptoms of watersoaking in fresh-cut fruit. Continuously stored fresh-cut cubes and cubes derived from intact fruit not treated with the ethylene antagonist softened 27% and 25.6%, respectively, during 10 d storage at 5 °C while cubes derived from 1-MCP-treated fruit softened 9% and 17%, respectively. Fresh-cut tissue from 1-MCP-treated fruit exhibited slightly reduced populations of both total aerobic organisms and Enterobacterium, although the differences did not appear to be sufficient to explain the differences in keeping quality between 1-MCP-treated and control fruit. Based primarily on firmness retention and reduced watersoaking, 1-MCP treatment deferred loss of physical deterioration of fresh-cut ‘Galia’ cubes at 5 °C by 2–3 d compared with controls.  相似文献

A study was conducted to evaluate a non-destructive method able to predict Magness–Taylor (MT) penetrometric firmness of blood oranges, potentially applicable for on-line selection. The method consisted of multivariate modelling of non-destructive penetrometric measurements performed on intact oranges with a 11.3 mm diameter probe by digital dynamometric equipment. The tests were carried out on 366 blood oranges (Citrus sinensis (L.) Osbeck cv. Tarocco); 60 were used as a control group to verify the non-destructive nature of the tests. Four test factors were used on the fruit: two different levels of non-destructive deformation (1 and 3 mm), at two different deformation speeds (5 and 30 mm s?1). In order to obtain the reference parameter (MT firmness), a destructive penetrometric test followed each non-destructive deformation on the same fruit (deformation of 20 mm at 1 mm s?1). The force–deformation curves of the non-destructive tests were elaborated to calculate different texture parameters (max force, elasticity, work). These parameters with raw curve data (force values for constant deformation steps) were used, after autoscaling pre-processing, as X-block datasets in supervised multivariate modelling (partial least squares) to predict MT firmness values. Among the test factors used, the 30 mm s?1 speed and 3 mm deformation provided the best overall prediction of MT firmness. This comprised an r value of 0.76 and standard error of prevision (SEP) of 2.99 N for a MT firmness mean value of 35.65 N (8.4%). The time needed to apply the selected deformation may lead to a sorting speed of about 10 fruit per second, representing an acceptable value for commercial application.  相似文献

In order to develop practical sea freight and marketing options for high quality red capsicums, we have investigated washing treatments that can minimize deterioration when fruit are subsequently stored under high humidity packaging conditions, at cool (6–8 °C) and warm (20 °C) temperatures. In small-scale trials using vented plastic bags to provide high humidity, fruit washed with unheated high-pressure water (517 kPa) had reduced incidence of flesh rots and deterioration of the calyx and stem compared to controls (unwashed or passed through a commercial packing line) or hot water drenched fruit (55 °C for 30 s) following a high humidity storage regime of 2 weeks at 6–8 °C and a further 14 d at 20 °C. In a more extensive trial where 5 kg boxes of fruit were used as replicates, washing with high-pressure water, packing in unperforated plastic box-liners and storing at 6–8 °C for 2 weeks, then 21 d at 20 °C resulted in 84% acceptability. In contrast, acceptability of fruit treated in a commercial packing line stored under regular (uncontrolled humidity) conditions or inside box liners (high relative humidity) declined rapidly at 20 °C after 2 weeks cool storage, with final acceptabilities of 10% and 39% after 21 d, respectively. We conclude that high-pressure water washing is an effective cleaning step, permitting high humidity to be used to prevent shrivel during cool-storage and subsequent ambient conditions, while minimizing the incidence of flesh rots or calyx/stem deterioration. Extended capsicum quality in high humidity at room temperature suggests that (a) cool-storage during transport to some markets may not be necessary if fruit are cleaned to a high standard and (b) fruit could remain within a box liner right up until the product is displayed on the supermarket shelves.  相似文献

The effect of MAP on extending storage life and maintaining fruit quality was studied in ‘Doyenne du Comice’ (Pyrus communis L.) pears at Hood River and Medford, Oregon. Control fruit packed in standard perforated polyethylene liners started to show senescent core breakdown and lost the capacity to ripen at 20 °C after 4–5 months of cold storage in Hood River and after 5.25–6 months in Medford. LifeSpan® L257 MAP achieved steady-state atmospheres of 15.8% O2 + 3.7% CO2 in Hood River and 15.7–17.5% O2 + 3.8–5.7% CO2 in Medford. MAP inhibited ethylene production, ascorbic acid degradation and malondialdehyde accumulation, and extended storage life for up to 6 months with maintenance of fruit flesh firmness (FF) and skin color without commercially unacceptable level of physiological disorders. After 4, 5 and 6 months at −1 °C, MAP fruit exhibited climacteric-like patterns of ethylene production and softened to proper texture with desirable eating quality on day 5 during ripening at 20 °C. After 6 months at −1 °C plus 2 weeks of simulated transit conditions, MAP fruit maintained FF and skin color and had good eating quality at transit temperatures of 2 and 4.5 °C (10.1–11.5% O2 + 4.8–5.2% CO2), but reduced FF substantially and developed internal browning disorder at 7.5 and 20 °C (3.2–7.2% O2 + 7.9–9.5% CO2). The storage life of ‘Doyenne du Comice’ pears with high eating quality could be increased by up to 2 months when packed in MAP as compared with fruit packed in standard perforated polyethylene liners.  相似文献

Postharvest 1-MCP can maintain fruit quality and inhibit development of superficial scald, a physiological storage disorder found in apple fruit, but the extent of the inhibition can vary by cultivar. In this study, we investigated whether multiple applications of 1-MCP, which are now permitted by a label modification of the commercial 1-MCP product, SmartFresh™, might improve scald control. ‘Cortland’ and ‘Delicious’ apples were untreated, treated on the day of harvest with the antioxidant inhibitor of scald, diphenylamine (DPA), or with 1 μL L−1 1-MCP at different intervals after harvest. Treatment times (days) were 1, 4, 7, 1 + 4, 4 + 7, 1 + 4 + 7, 7 + 14, 7 + 28, 7 + 42, and 7 + 84. Internal ethylene concentrations (IECs), flesh firmness, and accumulations of α-farnesene and conjugated trienols (CTols) were measured at harvest, at the time of treatment, and at intervals during air storage at 0.5 °C for up to 36 weeks. Scald was completely inhibited by DPA and all 1-MCP treatments in ‘Delicious’. However, effective control of scald in ‘Cortland’ was obtained with 1-MCP treatments within the first 4 days of harvest, either alone or in combination. Scald control with delayed 1-MCP treatments resulted in poorer scald control that was comparable to that obtained with DPA. IECs and α-farnesene accumulation were similar in untreated and DPA treated fruit, but inhibited by 1-MCP. However, differences among 1-MCP treatments became more evident with increasing storage periods. Inhibition of IECs and α-farnesene accumulation was greater in fruit treated on days 1, 4, 1 + 4, 4 + 7, 1 + 4 + 7, than on day 7 alone. A second application of 1-MCP on day 14 to fruit treated on day 7 increased inhibition of IECs, α-farnesene and CTol accumulations, but increasing delays before the second 1-MCP treatment resulted in progressively less inhibition of these factors. Similar effects of treatment on IECs, α-farnesene and CTol accumulations were found for both cultivars, even though no scald was detected in treated ‘Delicious’ apples. The results indicate that initial 1-MCP treatments should be applied to faster ripening cultivars such as ‘Cortland’ within a few days of harvest.  相似文献

We present a segmented partial least squares (PLS) prediction model for firmness of ‘Rocha’ pear (Pyrus communis L.) during fruit ripening under shelf-life conditions. Pears were collected from three different orchards. Orchard I provided the pears for model calibration and internal validation (set 1). These were transferred to shelf-life in the dark at 20 ± 2 °C and 70% RH, immediately after harvest. External validation was performed on the pears from the other two orchards (sets 2 and 3), which were stored under different conditions before shelf-life. Fruit was followed in the shelf-life period by visible/near infrared reflectance spectroscopy (Vis/NIRS) in the range 400–950 nm. The correlation between firmness and the reflectance at some wavelength bands was markedly different depending on ripening stage. A segmented partial least squares model was then constructed to predict firmness. This PLS model has two segments: (1) unripe and ripening/ripe pears (high firmness); (2) over-ripe pears (low firmness). The prediction is done in two steps. First, a full range model (full model) is applied. When the full model prediction gives a low firmness value, then the over-ripe model is applied to refine the prediction. The full model is reasonably significant in regression terms, robust, but allows only a coarse quantitative prediction (standard deviation ratio, SDR = 2.48, 1.50 and 2.40 for sets 1, 2 and 3, respectively). Also, RMSEP% = 139%, 91% and 56%, indicating large relative errors at low firmness values. The segmented model improved moderately the correlation, and the values of RMSEC, RMSEP and SDR; it improved significantly the RMSEP% (29%, 55% and 31%), providing an improvement of the relative prediction errors at low firmness values. This method improves the ordinary PLS models. Finally, we tested whether chlorophyll alone was enough for a predictive model for firmness, but the results showed that the absorption of chlorophyll alone does not explain the performance of the PLS models.  相似文献

In this study, X-ray computed tomography (CT) coupled with image analysis techniques was investigated for non-destructive characterization and quantification of internal structure of intact pomegranate fruit (cv. Shani-Yonay). X-ray tomograms of intact fruit were acquired using a V|Tome|X L240 commercial X-ray CT system based on X-ray radiation generated from a source voltage of 200 kV with the electron current set at 100 μA. Two-dimensional (2D) radioscopic images were acquired with a microfocus direct X-ray tube and used to reconstruct three-dimensional (3D) images to quantify volumes occupied by air space, albedo, and arils, using image processing software. The calculated volumes for these fruit fractions were 7.82 ± 1.09, 167.29 ± 16.54, and 182.11 ± 17.04 mL, estimated to contribute 2.22, 46.86 and 50.92% of total fruit volume, respectively. Destructive validation data were similar to non-destructive data, with volumes for albedo and arils of 166.08 ± 14.69 and 170.58 ± 14.25 mL, respectively, contributing 46.07 and 47.32% of total fruit volume. The remaining 6.61% of total fruit volume tested destructively could be due to the presence of air space and calyx. This work has demonstrated the capability of X-ray CT with image analysis as a useful non-destructive technique to study the quantity and distribution of edible and non-edible portions of pomegranate fruit.  相似文献

UV-C inactivation kinetic data of Penicillium expansum on intact and wounded pear disks were determined. P. expansum conidia (0.5 mL, 1.6 × 107 CFU/mL) were spot inoculated onto intact and wounded pear tissue with skin (excised disks), treated with UV-C doses ranging 0.101–3.06 kJ/m2 at 23 °C and surviving conidia were enumerated. Changes in selected physicochemical parameters and sensory quality following UV-C treatment of whole pears were determined immediately after treatment, and 4 and 8 weeks of storage at 4 °C. A greater UV-C intensity was required for similar inactivation levels of P. expansum populations on wounded pear disks (3.1 kJ/m2 for 2.7 log reduction) compared to intact pear disks (1.7 kJ/m2 for 2.8 log reduction). No significant difference in % weight loss, or soluble solids content and texture was observed between UV-C treated and untreated pears. However, browning was observed on UV-C treated pear surfaces after 4 and 8 weeks along with changes in flavor and texture. An increase in consumer preference was noticed for the untreated control pears after 4 weeks storage.  相似文献

Low temperatures induce physiological disorders in peach, but the effect of cold storage on the sensory quality of the fruit before it is damaged by chilling injury syndrome remains unclear. To evaluate the cold storage effect on the sensory quality two peach cultivars (’Royal Glory’ and ‘Elegant Lady’) and two nectarines (’Ruby Diamond’ and ‘Venus’) were harvested at a standardized firmness level and subjected to quality evaluations and sensory analysis at harvest and after storage at 0 °C for 35 d. For both time points, a supplementary ripening followed such that homogeneous flesh firmness and suitability for consumption was achieved.The fruit segregation through the Durofel firmness (DF), evaluated using a non-destructively method (Durofel device), allowed the formation of a uniform group of fruit in terms of flesh firmness (FF), showing scores between 45.1 and 55.9 N. The average FF in fruit ripened immediately after harvest was 22.9 N and 25.6 N in fruit ripened after cold storage for 35 d.The “acceptability” of fruit is highly correlated with “aroma”, “sweetness”, “juiciness”, “texture” and “flavor”. Only the “acid taste” parameter had no significant correlation with “acceptability” or with the other parameters evaluated.It is possible to conclude that the sensory quality and acceptability of peach and nectarine are characteristic of each cultivar and change, depending on the time elapsed after harvest. In general, it was confirmed that nectarine cultivars have a more consistent quality than peach cultivars.  相似文献
