Forty-eight Suffolk x white-faced ram and wether lambs approximately 5, 7, or 9 mo of age were slaughtered to evaluate the effects of age and gender on difficulty of pelt removal, pelt damage, and leg damage. A commercial belt-type pelt puller and a scale that recorded force required to remove the pelt from the thickest part of the legs was used as lambs hung suspended from their front legs. Rams required more force (P less than .05) to remove the pelt than wethers, and the difference between genders became larger as age increased. Neither pelt damage due to grain crack nor leg damage judged by amount of fell and fat removed by the pelt puller changed with age. Rams possessed thicker pelts (P less than .05) than wethers; this plus a greater amount of collagen crosslinking in ram skins could be responsible for the slightly smaller amount of grain crack observed in ram pelts. Factors involved in difficulty of pelt removal in ram lambs included age, splenius weight, and overall maturity. Difficulty of pelt removal in wether lambs was best predicted by including age and splenius weight in the model. These data tend to support packers' common practice of discounting rams over 5 mo of age because rams develop masculine characteristics and become harder to dress with increasing age.  相似文献

In two separate 2 x 2 factorial arrangements, 69 male, crossbred lambs were allotted randomly to the following treatments: 1) nonimplanted (NI) rams, 2) implanted (I) rams, 3) NI wethers, and 4) I wethers. In Trial 1, 36 lambs were allotted to treatment groups at birth (n = 9) and I lambs were implanted with 12 mg of zeranol between 1 and 3 d of age and again at weaning (average age of 62 d). Lambs were slaughtered at three time-constant end points of 78, 93, and 107 d on feed postweaning (average age of 155 d). Rams grew faster postweaning, were more efficient in their feed conversion, were heavier at slaughter, and had lower numerical yield grades than did wethers (P less than .05). Implanted lambs tended (P = .08) to grow faster and were (P less than .05) more efficient in their feed conversion than NI lambs. Rams produced heavier (P less than .05) trimmed subprimal shoulders, loins, and legs and had (P less than .05) a higher percentage of their carcass weight in the subprimal shoulder than did wethers. During Trial 2, NI rams (n = 8), I rams (n = 8), NI wethers (n = 8), and I wethers (n = 9) were allotted to treatment groups, and I lambs were implanted at average ages of 14, 55, and 98 d. Thirty-five zeranol-implanted (I) and nonimplanted (NI) ram and wether lambs representing four treatments (implanted rams [IR], nonimplanted rams [NIR], implanted wethers [IW], and nonimplanted wethers [NIW]) were evaluated for meat palatability and muscle collagen characteristics. Rib (longissimus muscle, LM) chops from I lambs were juicier (P less than .05) than rib chops from NI lambs. Chops from IR lambs had more (P less than .05) detectable connective tissue and lower myofibrillar and overall tenderness scores than chops from NIR, IW, or NIW lambs. Warner-Bratzler shear (WBS) values tended to be higher (P = .06) for LM chops from rams than for those from wethers, but WBS values for Biceps femoris (BF) chops were similar (P greater than .05) for rams and wethers. Implanting did not affect (P greater than .05) WBS values. Rams had more (P less than .05) LM heat-labile (soluble, SC), nonheat-labile (insoluble, IC), and total collagen (TC) and a higher (P less than .05) percentage of SC (SC/TC) than did wethers. Soluble collagen, TC, and percentage of SC for the BF were higher (P less than .05) and IC tended (P = .09) to be higher in chops from rams than in those from wethers. Implanting did not affect (P greater than .05) collagen amount or solubility. Serum nonprotein hydroxyproline (NPHP) was higher (P less than .05) in rams than in wethers throughout the feeding period and tended (P = .05) to be higher at slaughter. Fifty wethers and 51 spring-born rams were divided into five groups and slaughtered at different seasons of the year at average ages of 271, 361, 459, 557 or 652 d to determine the age and season at which differences in secondary sex characteristics could be detected. Serum testosterone concentrations and testes weights were low in January when the rams were 271 d of age and again in April at 361 d of age. By July, at 459 d of age, testosterone concentrations and testes weights had peaked and then decreased the following November at 557 d and February at 652 d. In contrast with plasma testosterone concentrations and testes weights, buckiness scores, splenius to semimembranosus or semitendinosus muscle ratios, splenius muscle weights and neck and shoulder percentages were not seasonal. All of these measures increased significantly up to July and continued to increase slowly, but not significantly, thereafter. Muscle color and texture scores and rib eye color scores tended to increase in a linear manner for both rams and wethers as age increased. Subcutaneous fat from rams was yellower and softer than that from wethers over all age groups. Ram fat firmness did not change (P greater than .05) with age, and the only significant change in ram fat color was between the groups at 271 and 361 d of age. Overall, season of year coupled with higher levels of serum testosterone was related to initial development of secondary sex characteristics in ram lambs.  相似文献

The objectives of this experiment were to assess effects of animal age and castration on activities of calpain I, calpain II, and calpastatin in sheep skeletal muscle. Ten newborn male lambs (2.9 kg), six weaned wethers (23.2 kg), six weaned rams (22.2 kg), six market wethers (55.4 kg), and six market rams (60.2 kg) were slaughtered and samples of biceps femoris were taken for assay of calpain I (micromolar calcium-dependent proteinase), calpain II (millimolar calcium-dependent proteinase), and calpastatin. Preweaning weight gain was similar for rams and wethers; however, postweaning ram growth exceeded (P less than .05) that of wethers. Ram biceps femoris weights at market were greater than those of wethers (P less than .05). Irrespective of age or gender, activity of calpain II was two- to threefold greater than that of calpain I. Muscle calpastatin activity was severa fold higher than calpain I and II activities. Activities of calpains and calpastatin declined (P less than .05) between birth and weaning. A portion of these losses were due to a dilution effect caused by accumulation of muscle proteins. Neonatal attenuation of calpain activities may underlie age-related attenuation of fractional rates of muscle protein degradation. Although ram muscle growth exceeded that of wethers, no differences (P greater than .05) in activities of muscle calpains or calpastatin were detected between these two groups at weaning or at market weight. Hence, castration did not influence lamb muscle growth by altering muscle calpain or calpastatin activities.  相似文献

Concentration and maturation of collagen and serum concentrations of hydroxyproline and testosterone were determined in growing rams and wethers to characterize developmental changes in collagen associated with a representative testicular steroid. Groups of eight rams and eight wethers were slaughtered at 12, 18, 24 and 30 wk of age. Concentrations of collagen in longissimus, supraspinatus and infraspinatus muscles and serum hydroxyproline were greater (P less than .05) in rams than in wethers at all ages. Collagen stability, as measured by collagen solubility and thermal shrinkage temperature, was greater (P less than .05) in wethers than in rams. Differences in collagen stability and serum hydroxyproline concentration indicated that collagen synthesis and turnover were more rapid in rams than in wethers. Serum hydroxyproline decreased (P less than .05) and collagen solubility decreased (P less than .05) with age, indicating that collagen turnover was occurring most rapidly in 12-wk-old lambs and that collagen maturation was predominant in 24- to 30-wk old lambs. Testosterone parameters measured in rams were unrelated within groups to collagen characteristics, possibly reflecting the high variability in testosterone secretion and the slow development of collagen. However, rams as young as 12 wk of age were under the influence of testosterone, and differences in collagen between rams and wethers were apparent at that time.  相似文献

Administration of growth promotants with estrogenic activity via hastening closure of the growth plate could have an economic impact on lambs because closure results in ovine carcasses being classified as yearlings. Twelve wether lambs approximately 12 mo old were given silastic implants filled with estradiol-17 beta and allotted randomly to be slaughtered 30, 60, 90, or 220 d after implantation to determine time of growth plate closure in relation to date of implanting. Seven comparable wethers not implanted served as controls. Four wethers implanted at 2 mo of age and slaughtered 220 d later also were included. Implanted wethers had serum concentrations of estradiol averaging 13.9 pg/ml over the 220-d implant period; controls averaged 2.7 pg/ml. Estradiol implants increased carcass maturity scores but fat deposition was not altered. Growth plate widths decreased (P less than .05) as wethers grew older and implants were in place for longer periods of time. Metacarpal growth plates in 12-mo-old lambs were completely ossified 220 d after implanting, but control wethers and wethers implanted at 2 mo maintained growth plate widths. Neither metacarpal nor metatarsal bone lengths differed (P less than .05) between control and implanted wethers. Growth plate ossification was not complete until 570 d of age in implanted lambs, even though bone length had stopped increasing by 408 d. Therefore, even though estradiol and other growth stimulants with estrogenic activity increase rate of ossification of the metacarpal growth plate, bone length or mature size is not limited.(ABSTRACT TRUNCATED AT 250 WORDS)  相似文献

One hundred twenty ewe and wether lambs were fed high (76% TDN, 12.3% crude protein) or low (70.6% TDN, 16.1% crude protein) energy diets and slaughtered at average ages of 261, 356 or 469 d. High planes of nutrition for lambs at 356 or 469 d of age resulted in heavier carcasses, thicker fat depth and higher flank streaking scores compared to lambs fed low planes of nutrition. Rib bone, break joint and overall maturity scores were not influenced (P greater than .05) by diet. Metacarpal and metatarsal bones from lambs fed high planes of nutrition were slightly longer and heavier and required more force to break (P less than .05) compared with bones from lambs fed low planes of nutrition. The majority of the ewes fed high or low planes of nutrition had fused growth plates and possessed spool joints by 469 d; none of the wethers had spool joints. An additional 27 wethers were slaughtered at an average of 480, 578 or 662 d. Rib bone, break joint and overall maturity scores were not different (P greater than .05) for animals fed the high or low energy diets, but bone weight and shaft break force values were higher for those fed high energy diets. At 662 d of age, only 20% of the wethers on each dietary regimen possessed fused growth plates. Experiments were conducted to investigate biological variables that influence fat accretion in growing ram lambs. Carcass composition and adipose tissue development were measured in Columbia-sired ram lambs from 32.0 to 73.9 kg body weight. Five or six ram lambs were slaughtered every 2 mo, from 4 to 10 mo of age. The percentage of carcass fat-free dry matter decreased with age from 30.9 to 27.5% (P less than .05), while the percentage of carcass fat increased from 17.7 to 33.4%. Similarly, offal fat-free dry matter decreased with age (from 24.5 to 21.5), and there was nearly a threefold increase in the percentage of offal fat (P less than .05 for both measures). Subcutaneous adipocyte diameter and lipogenesis in vitro increased from 4 to 6 mo of age, and did not increase further with age. A bimodal distribution of adipocytes was apparent in the 4-mo-old lambs, but was not observed in any other age group. The presence of glucose in incubation media stimulated acetate incorporation into fatty acids in vitro in adipose tissue from 8- and 10-mo-old lambs. However, glucose did not affect the rate of lipogenesis from lactate. The data indicate early, rapid increases in carcass fat accretion, which corresponded to similar increases in lipogenesis and lipogenic enzyme activities.  相似文献

Two trials examined genetic and environmental influences on muscle fiber type proportions. Trial 1 compared Polypay and Coopworth x Polypay male lambs either left intact or castrated early, mid or late in growth. Trial 2 compared Hampshire-sired lambs (females, early castrate wethers and late castrate wethers) from Suffolk x Coopworth dams and whiteface x Coopworth dams. Half the lambs in each trial were raised from weaning to 52 kg slaughter weight in drylot; the other half were reared to 41 kg on pasture before being finished in drylot. Analysis of longissimus tissue samples revealed no significant differences among rams, wethers and ewes in proportions of muscle fiber types. Early castration increased the proportion of alpha red fibers in Trial 1 (P less than .01) but not in Trial 2. Polypay lambs had a higher proportion of beta red fibers (P less than .05) than the Coopworth x Polypay lambs, but no differences were seen between the genotypes of Trial 2. Single-born lambs in Trial 1 had a 6% higher proportion of alpha white fibers (P less than .05) than twin-born lambs; however, this difference was not detected in Trial 2. Drylot lambs had a higher proportion of beta red fibers than pasture-reared lambs, the difference being 5% (P less than .01) in Trial 2. Muscle fiber type proportions were not found to be related to growth rate and carcass fatness, and no evidence of differential fiber transformation was found in this trial.  相似文献

Effects of Dorset, Finnsheep, Romanov, Texel, and Montadale breeds for performance as sires were estimated in the initial phase of a comprehensive evaluation of these breeds as contributors to sheep crossbreeding systems. Objectives were to evaluate the effects of ram breed, ewe breed, season of mating, and two-way interactions. Rams from the five breeds were single-sire-mated with ewes from two breed types to produce lambs over a 3-yr period. Ewes were assigned to one of three distinct 35-d mating seasons initiated each year in August, October, and December. A different sample of six rams per breed was used each year across all three seasons, and each ram was penned with ewes of both breeds. Traits evaluated and number of ewe records were conception rate and litter weaning weight per ewe exposed (n = 3,261) and number born, litter birth weight, average birth weight, number weaned, and litter weaning weight per ewe lambing (n = 2,751). Ram breed and ewe breed interacted (P < .01) for conception rate and litter weaning weight per ewe exposed, implicating mating preferences, particularly of Romanov rams. In mixed groups of ewes exposed to Romanov rams, conception rate was 12.7% lower and litter weight weaned was 8.4 kg lower in the ewe breed presumably less preferred for mating by the rams. On a per ewe exposed basis, Romanov-sired litters produced either the largest or the smallest values for litter weaning weight, depending on the breed of ewe. Effects of ram breed on number born and litter birth weight interacted (P < .05) with season of mating. The largest litters within each ram breed were associated with the October mating season. Montadale and Romanov rams sired larger and heavier litters from August matings than from December matings, whereas the opposite was true for Dorset-sired litters. Texel- and Finnsheep-sired litters were similar in size and weight from August and December matings. Breed of ram differences affected per ewe lambing productivity measurements (P < .01). Differences between ram breeds for ewe productivity were noted, with increased number born and improved survival of crossbred progeny to weaning for Romanov-sired litters. These results may have implications for using these ram breeds as sires in different crossbreeding systems. Structured mating systems or the creation of new composite populations involving these breeds could be used to match the resources, environment, and market of specific production situations.  相似文献

Multiparous Suffolk and Suffolk-cross ewes were randomly allotted to treatments within breed and year to measure effects of ram exposure, during transition from anestrus to breeding activity, on reproductive performance. Treatments were: 1) ewes joined with two mature vasectomized Rambouillet rams for 15 d before breeding (DC), 2) ewes maintained across a net wire fence from two vasectomized rams for 15 d before breeding (FC) and 3) ewes maintained approximately 400 m away from rams (NC). At the end of the 15 d, all ewes were placed in one pasture and mated to three fertile Suffolk rams during a 34-d breeding season. A total of 96 Suffolk and 177 Suffolk-cross ewes was utilized during the 3-yr experiment. A greater (P less than .05) prebreeding ovulation percentage was observed in DC and FC than in NC ewes. Mating and lambing occurred approximately 6 d earlier for DC or FC ewes than for NC ewes. A similarly designed experiment was conducted using Suffolk and Suffolk-cross ewe lambs allotted to treatments within breed and year to measure effects of ram exposure during the natural breeding season, but prior to breeding. Treatment differences were not detected (P greater than .05) for date of first observed estrus, date of lambing, percentage of ewes lambing in the first 17 d of the lambing season, number of lambs born per ewe lamb exposed or number of lambs born per ewe lamb giving birth.  相似文献

A 60-d trial was conducted to determine effects of A1-citrate and citric acid on tissue mineral composition in wether lambs. Eighteen crossbred, yearling wether lambs equipped with ruminal cannulas were fed a diet containing low (.12%) Mg and high (2.87%) K (DM basis) and were allotted to three treatments: 1) control; 2) 2,000 micrograms A1 as A1-citrate/g of diet DM and 3) citric acid equivalent to the citrate in treatment 2. Treatments were administered in 200 ml of deionized water twice daily in divided doses via ruminal cannula. At the end of 60 d, wethers were slaughtered and samples of rib and tibia bone, liver, kidney, brain, spleen, pancreas, parathyroid and pituitary gland were analyzed for mineral concentration. Concentrations of A1 increased (P less than .05) in rib, tibia, liver, kidney, spleen and pituitary gland and tended to increase in brain (P less than .13) in wethers treated with A1-citrate compared to citric acid. Magnesium was decreased in rib (P less than .01) and tended to be decreased in pituitary gland (P less than .15), whereas Ca tended to be decreased in pancreas (P less than .07), kidney (P less than .11) and parathyroid (P less than .10) by A1-citrate treatment compared to citric acid. Potassium decreased (P less than .01) in liver, Fe increased (P less than .05) in kidney, Zn decreased in pituitary (P less than .05) and tended to decrease in pancreas (P less than .10) due to A1-citrate but not citric acid.(ABSTRACT TRUNCATED AT 250 WORDS)  相似文献

Carcass data from more than 4,400 Southdown x Romney ewe and wether lambs collected over a 16-yr period were analyzed for the effects of sex, rearing status, and growth rate. Ewe lambs grew more slowly than wethers and had .78 kg less carcass weight at the same age. The carcass weight advantage for wethers was nearly all caused by heavier fat-free weight. Based on fat depths, the fat on ewe lambs was distributed in more anterior and ventral parts of the carcass relative to wether lambs. Lambs reared as twins had 1.73 kg less carcass weight and correspondingly reduced carcass measurements compared with lambs reared as singles. Sex and rearing status interacted for some traits. However, in no case was a significant sex difference reversed in single- and twin-related lambs. Growth rate effects were determined by regressing average change in carcass measurements on average carcass weight gain over a 5-wk period. When carcass weight remained constant over a 5-wk period, fat weight increased by .12 kg, fat-free weight and muscle measurements decreased, and bone lengths increased. For each kilogram of increase in 5-wk carcass weight gain, the marginal increase in fat weight was .41 kg and that of fat-free weight was .59 kg. At the average 5-wk carcass weight gain of 1.4 kg, fat and fat-free gains were As carcass weight gain increased above 1.4 kg, fat-free gain exceeded fat gain.  相似文献

To evaluate terminal-sire breeds, harvest BW, prefabrication carcass measurements, and organ weights were evaluated over 3 yr for 518 crossbred wether lambs (ovis aries). Lambs were produced by single-sire matings of 22 Columbia, 22 USMARC-Composite (Composite), 21 Suffolk, and 17 Texel rams to adult Rambouillet ewes. Lambs were raised to weaning under an extensive western rangeland production system and finished in a feedlot on a high-energy finishing diet. Wethers were randomly assigned to be harvested at an average BW of 54.4, 61.2, or 68.0 kg and then transported to The Ohio State University abattoir for harvest. Wether BW was recorded before transport (off-test BW) and before harvest. Prefabrication carcass measurements and organ weights were recorded either after harvest or after an approximate 24-h chill. At comparable numbers of days on feed, Suffolk-sired lambs had heavier (P < 0.01) off-test BW, harvest BW, HCW, chilled carcass weight (CCW), and kidney weights than lambs sired by the other breeds. Suffolk-sired lambs had more (P < 0.01) kidney-pelvic fat than did Columbia-sired lambs; Composite- and Texel-sired lambs were intermediate and did not differ (P > 0.06) from the other crossbred lambs. Texel- and suffolk-sired lambs had larger lm area and greater conformation scores than Columbia-sired lambs (P < 0.03). Texel-sired lambs had greater (P < 0.01) body wall thickness, quality grades, and leg scores than Columbia-sired lambs. Composite- and Suffolk-sired lambs did not differ from each other or from lambs sired by any other breed for body wall thickness (P > 0.18) and were intermediate for quality grades and leg scores. Sire breed did not affect (P > 0.05) shipping shrink, dressing percentage, pelt weight, liver weight, and fat depth. Adjusting data to a comparable off-test BW or CCW modified sire breed rankings for some measurements. Texel-sired lambs were equal or superior to lambs sired by other breeds for HCW, CCW, dressing percentage, pelt weight, LM area, quality grade, and leg and conformation scores. However, Texel-sired lambs also had values for kidney-pelvic fat weight, fat depth, and body wall thickness that were equal to or greater than those of lambs sired by the other breeds, indicating increased fatness at comparable BW. Producers can use these results to select terminal-sire sheep breeds that will complement their production system and improve market lamb value.  相似文献

Ram lambs were selected from a total of 1206 lambs in 8 industry Coopworth ram breeding flocks. Eight rams were selected randomly (one from each flock), 8 were selected on the basis of a low live weight-adjusted ultrasonic backfat thickness (lean) and 8 for a high post-weaning growth rate (PW gain). Rams from a Coopworth line specially selected and bred for low ultrasonic backfat (lean selection) were also included in the progeny test in which the rams were single sire mated to 1.5 year old Coopworth ewes. Birth and weaning weights were recorded for a total of 474 female and 371 male progeny. The males (progeny of 31 sires) were slaughtered between January and April at an average hot carcass weight (HCW) of 12.56 kg and carcass growth and carcass fatness parameters recorded. The carcass composition data were analysed using the allometric equation by covariance on HCW. The adjusted mean values of carcass water content were significantly higher for the progeny of the lean selection rams (7.58 kg) than forthe other 3 sire classes (7.49, 7.46 and 7.41 for the lean, PW gain and controls respectively) indicating that they were leaner. Other indicators of carcass fatness also revealed marked differences between the sire classes. There were also marked effects of slaughter date with lambs slaughtered earlier being leaner (after adjustment for HCW) than lambs slaughtered later in the season. The results indicate that selection of sires on the basis of ultrasonic backfat thickness or post weaning live weight gain can be expected to result in the production of leaner lamb carcasses.  相似文献

Relationships of implanted testosterone, dihydrotestosterone and estradiol-17 beta to collagen degradation and intramuscular collagen concentration and stability were determined. Intramuscular collagen content, solubility and shrinkage temperature and serum hydroxyproline were analyzed in groups of six rams, wethers, and wethers implanted with various levels of testosterone or dihydrotestosterone and groups of 10 rams, wethers and wethers implanted with estradiol-17 beta, dihydrotestosterone or a combination of these two steroids. Intramuscular collagen content in both experiments was higher (P less than .05) in muscles of rams than in muscles of wethers. Administration of the highest level of testosterone to wethers raised (P less than .05) total and insoluble intramuscular collagen to concentrations noted in rams. Administration of the testosterone metabolite, dihydrotestosterone, to wethers had no effect on intramuscular collagen. Administration of estradiol-17 beta to wethers tended to raise concentrations of intramuscular collagen so that they were no longer lower (P less than .05) than those in rams. Collagen stability as measured by solubility and thermal shrinkage temperature did not differ among rams, wethers or implanted wethers (P greater than .05). Increases in collagen accretion due to hormone administration were observed to be the result of increases in the insoluble portion of the intramuscular collagen (P less than .05).  相似文献

Seasonal availability of lamb in the Western United States contributes to a large fluctuation in lamb supply and value. However, alternatives to fall marketing may not be practical unless palatability traits are acceptable. A 3-yr study was conducted to investigate 1) the effects of slaughter age (7 to 8; 10 to 11; or 14 to 15 mo) on carcass and palatability characteristics of wethers fed an 80% barley diet (Exp. 1); and 2) the effects of finishing on range or on an 80% barley diet on carcass and palatability traits of 14- to 15-mo-old wethers (Exp. 2). In Exp. 1, no differences (P = .27) were detected in flavor intensity or longissimus muscle area among slaughter age groups, but fat depth was greater (P < .05) for 7- to 8-mo-old wethers than for 10- to 11- or 14- to 15-mo-old wethers. Year x slaughter age interactions were detected (P < .10) for hot carcass weight, Warner-Bratzler shear value, body wall thickness, and percentage kidney fat. Hot carcass weight was greater (P < .05) for 14- to 15-mo-old wethers than for both groups of younger wethers in yr 1, did not differ (P = .53) among slaughter ages in yr 2, and was greater (P < .05) for 10- to 11- than for 14- to 15-mo-old wethers in yr 3. Warner-Bratzler shear values did not differ (P > .10) among slaughter ages in yr 1 and 3, but shear values for 14- to 15-mo-old wethers were greater (P < .05) than for both younger slaughter age groups in yr 2. Percentage kidney fat was lower (P < .05) for 14- to 15- than for 7- to 8-mo-old wethers in all years. In Exp. 2, flavor intensity of the meat did not differ (P = .35) between finishing systems, but longissimus muscle area was greater (P = .02) for range-finished wethers than for wethers fed an 80% barley diet. Year x finishing treatment interactions were detected (P < .10) for shear values, body wall thickness, percentage kidney fat, and fat depth. Shear values were greater (P = .10) for range-finished wethers than for wethers fed an 80% barley diet in yr 1, but did not differ (P > .55) in yr 2 and 3. Body wall and fat measurements were greater (P < .10) for wethers fed an 80% barley diet than for range-finished wethers in all years except yr 3, when fat depth did not differ (P = .47). Overall, slaughtering wethers fed an 80% barley diet or range-finished wethers at older ages produced acceptable carcasses with desirable meat palatability traits.  相似文献

Histological properties from the longissimus (LD) and semimembranosus (SM) muscles of 51 wether and ewe lambs from Hampshire rams and two ewe genetic types (SR, 1/2 Suffolk and 1/2 Rambouillet, and FS, 1/2 Finnish Landrace and 1/2 Southdown) and three slaughter live weights (32, 41 and 50 kg) were compared. Fibers in both muscles were classified as beta R (red), alpha R (intermediate) or alpha W (white). All LD muscle fiber types from FS ewe lambs increased in diameter from 32 to 41 kg, but decreased in diameter from 41 to 50 kg. Also, this quadratic effect with slaughter weight was found in alpha R and alpha W fibers from the SM muscle of FS wether and ewe lambs. However, diameters of alpha R and alpha W fibers from SR wether and ewe lambs and beta R fibers from SR ewe lambs increased linearly in the SM muscle with increasing slaughter weight. As slaughter weight increased, the proportion of alpha R fibers decreased in both the LD and SM muscles for SR wether and FS wether and ewe lambs. Concurrent with the increase in slaughter weight and decrease in alpha R fiber percentage, the proportion of alpha W fibers increased in the LD muscle of SR wether lambs, the SM muscle of SR ewe lambs and both muscles of FS wether and ewe lambs. Genetic type and sex groups, except SR ewe lambs, support the theory of transformation of alpha R to alpha W fibers with increasing slaughter weights. Fat-cell diameters increased in both muscles of SR wether and FS ewe lambs with increasing slaughter weights. Increases in fat traits of lamb carcasses were related to increases in red-fiber size. Alpha red fiber numbers were inversely related (P less than .05) to alpha W fiber numbers in both the LD and SM muscles (r = -.83 and -.79). The proportion of alpha R to alpha W fibers might be used as an indicator of physiological maturity for lambs.  相似文献
