ABSTRACT

The effects of melanin-free ink (MFI) and pre-emulsification on gel properties and stability of bigeye snapper surimi gel fortified with seabass oil during refrigerated storage of 10 days were studied. Lipid oxidation as determined by peroxide value (PV) and thiobarbituric acid reactive substances (TBARS) of surimi gel increased as the level of seabass oil increased (P < 0.05). When MFI was incorporated into surimi gel, lower PV was obtained throughout the storage (P < 0.05). Addition of seabass oil pre-emulsified with soy protein isolate (SPI) in the presence of MFI yielded surimi gel with the highest breaking force and could improve oxidative stability during refrigerated storage (P < 0.05). Slight decrease in whiteness was found in surimi gel added with MFI, while those added with MFI along with pre-emulsified seabass oil showed increased whiteness (< 0.05). Addition of MFI did not affect total viable count and psychrophilic bacterial count in surimi gels. Thus, the incorporation of pre-emulsified seabass oil prepared using SPI in conjunction with MFI could improve quality and oxidative stability of gel from bigeye snapper surimi.  相似文献

The effect of frozen storage temperature on quality-related parameters of rainbow trout (Oncorhynchus mykiss) muscle was studied in the interval from ?10 to ?80°C on samples stored for 1 to 18 months. The following quantities were measured: drip loss, water holding capacity and water distribution, color, lipid oxidation (thiobarbituric acid-reactive substances, TBARS), and membrane stability (enzyme activity). No effect of temperature on drip loss, water holding capacity, water distribution, or membrane stability was observed for samples stored below ?20°C, whereas storage at ?40°C or lower compared to ?30°C or higher resulted in a reduced level of secondary lipid oxidation (TBARS). No advantage was gained by using temperatures below ?40°C for frozen storage of trout regarding any of the properties investigated.  相似文献

This study compares how CO2 narcosis and thermal shock affect the physicochemical aspects of Nile tilapia fillets held frozen (?18°C) for up to 6 months. The characteristics of tilapia fillets subjected to CO2 narcosis were those of higher lightness and whiteness and lower redness. The hardness values of fillets of tilapia subjected to thermal shock were lower than those subjected to CO2 narcosis. During frozen storage to both treatments, the drip loss, denaturation of myosin, and lipid oxidation increased, while fillet water holding capacity and hardness decreased. The physicochemical properties of frozen fillets of tilapia stunned by CO2 narcosis were considered more desirable; therefore, the method can be a potential replacement to thermal shock.  相似文献

Surimi was prepared by washing with single washing cycle with cold water (T-1), alkaline saline (0.2% NaHCO3 and 0.15% NaCl; T-2) solution, and with calcium chloride and salt (0.2% CaCl2 and 0.1% NaCl; T-3), respectively, and compared with conventional washed (CW) surimi. T-2 exhibited significantly (p ≤ 0.05) increased moisture content, which correlated with increased yield, pH and also significantly decreased lipid and ash content. A significant (p ≤ 0.05) decrease in expressible moisture content was also observed in T-2, which suggested higher water holding capacity compared to other treatments. Heat-induced surimi gels exhibited highest L* (p ≤ 0.05), followed by surimi in all the treatments. In the case of L*, T-1 showed highest lightness, followed by T-2, which was comparable to CW. The lowest myoglobin content was exhibited by CW surimi (p ≤ 0.05), which is due to repeated washings. T-2 gel showed higher elasticity, texture, and overall acceptability than others (p ≤ 0.05), except for the whiteness. In all the aspects, T-2 was comparable with CW. Washing with one cycle of T-2 solution can not only improve the quality of surimi but can reduce the wastage of water that is released into the environment without further treatment.  相似文献

The technological effect of antioxidant dietary fiber (AODF) from Fucus vesiculosus added to minced horse mackerel (Trachurus trachurus) during frozen storage was tested. Fish mince (FM) samples supplemented with 1 and 2% AODF were compared to AODF-free control. Dietary analysis, antioxidant capacity, total polyphenols content, ferric-reducing antioxidant power (FRAP assay), and free radical scavenging activity (by ABTS assay), water binding capacity, water holding ability, cooking yield, and sensory analyses were carried out just after freezing and during frozen storage. Samples with 1 and 2% of AODF added had lower lipid oxidation than those without AODF, and the total drip (thaw + cooking) was reduced after 3 months of frozen storage. Fish samples supplemented with 1% AODF did not have a different flavor from the control. Samples supplemented with 2% AODF had a different flavor from the control, but this did not impair palatability.  相似文献

Stabilized mince (SM) was made from fresh Pacific whiting mixed with varying levels of sucrose (6 to 12% w/w) including 0.2% w/w polyphosphates. SM samples were maintained in frozen storage and used at different time intervals for surimi production. Comparisons with control surimi made from fresh mince showed that acceptable surimi can be produced from SM stored at -20°C with cryoprotectant levels at 6% w/w sucrose and 0.2% w/w polyphosphates. There was a slight decrease in whiteness in surimi made from the SM samples when compared to the control. Surimi yields from SM were comparable to yields of surimi made from fresh mince.  相似文献

Quality changes of vacuum-packed Atlantic mackerel (Scomber scombrus) fillets during 12 months’ frozen storage at ?27°C and 9 days’ chilled storage at +4°C were evaluated. Freezing at ?27°C preserved the long chain n-3 polyunsaturated fatty acids (LC n-3 PUFAs), both in light and dark muscle, vitamin D, and the low molecular weight metabolites (LMW) (studied by high resolution nuclear magnetic resonance spectroscopy, HR NMR). Protein oxidation took place, especially between 1 and 7 months, decreasing water holding capacity and protein extractability. During chilled storage, no lipid or protein oxidation was observed, but lipolysis increased, and several LMW metabolites relevant for sensory and nutritional quality degraded into non-favorable compounds. The content of biogenic amines was high at day 9 (e.g., 18 mg histamine/100 g), jeopardizing safety. Preservation of mackerel fillets by freezing at ?27°C is thus a better option compared to prolonged chilled storage at +4°C; the quality was well preserved for 12 months’ frozen storage.  相似文献

In this study, gelation characteristics of bighead carp (Aristichthys nobilis) protein isolates prepared by pH shift processing were investigated as compared with those of surimi prepared by conventional wash processing. Results showed that the gel from alkali-aided protein isolate exhibited a higher breaking force than that from conventional washed surimi (p < 0.05). However, the gel from conventional washed surimi had higher whiteness (p < 0.05) and lower expressible moisture (p < 0.05). The rheological study showed that protein isolates exhibited different storage modulus and loss tangent patterns from conventional washed surimi during heating. Acid-aided processing could lead to higher denaturation and dissociation for fish muscle myosin and a coarser gel network from the sodium dodecyl sulfate polyacrylamide gel electrophoresis (SDS-PAGE) pattern and the scanning electron microscopy (SEM). Overall, there is a potential to apply pH shift processing, especially alkali-aided processing, to extract more proteins from bighead carp muscle for the production of surimi-based food.  相似文献

ABSTRACT

Lipid and protein oxidation in catfish (Clarias lazera) surimi during processing and storage were assessed. Catfish surimi were washed in deionized water: M0 (no washing step), M1 (one washing step), and M2 (two washing steps). Lipid, protein, water, and iron contents were determined. M0, M1, and M2 were stored for 0, 1, 4, 7, or 10 days at 4 ± 1°C; at each time point, samples were removed for analyses. Lipid oxidation was assessed by measuring malondialdehyde content. Protein oxidation was assessed by measuring protein solubility and protein sulfhydryl and carbonyl group contents. Based on the results, lipid content, L* and a* (color parameters), and fatty acid content in M1 and M2 were significantly reduced. Lipid oxidation development was faster in M1, and the ranking was as follows: M1 > M2 > M0, with M0 being significantly less oxidized than M1. Increasing the number of washes increased protein oxidation, and the ranking was follows: M2 > M1 > M0. Altogether, lipid and protein oxidation and physicochemical changes occurred simultaneously to different degrees in surimi during various processing and storage conditions.  相似文献

ABSTRACT:   The effects of shrimp head protein hydrolysate (SHPH) from three species of shrimp (northern pink shrimp [ Pandalus eous ], endeavour shrimp [ Metapenaeus endeavouri ], black tiger shrimp [ Penaeus monodon ]) on gel forming ability and protein denaturation of lizardfish surimi during frozen storage at −25°C were evaluated. The quality of lizardfish surimi with 5% (dried matter) of any of the three SHPH or sodium glutamate (Na-Glu) was examined in terms of gel strength, whiteness, Ca-ATPase activity and the amount of unfrozen water, comparing with those of surimi without additive as the control. The residual Ca-ATPase activity and gel strength of surimi with SHPH were higher than those of the control throughout 180 days of frozen storage, regardless of shrimp species. The highest effect was found in surimi with Na-Glu. The gel strength and Ca-ATPase activity found a high positive correlation. The addition of SHPH to surimi also increased the amount of unfrozen water by approximately 1.29–1.36 fold higher than the control, however kamaboko gels of the control was significantly whiter. From these results, freeze-induced denaturation of lizardfish muscle protein could be lessened by the addition of SHPH, resulting in a high gel strength and Ca-ATPase activity.  相似文献

为分析上海销售端扇贝冻品的品质状况及存在的问题,探究市售扇贝冻品的品质评价方法以及冻藏过程中导致其品质劣变的关键因素,本研究依据冰柜温度、冻藏时间、产品形式、包装方式和摆放位置共5种常见影响因素,对上海市售的11种扇贝冻品商品进行采样,测定白度、解冻损失、蒸煮损失、持水力、回复性、内聚性、弹性、咀嚼性、硬度和感官评分共10项品质指标,利用因子分析构建扇贝冻品品质评价模型,并结合多元线性回归分析确定影响扇贝冻品品质劣变的关键因素。结果显示,扇贝冻品10项品质指标之间存在一定相关性,通过因子分析提取了3个因子成分,累计方差贡献率为73.33%,可以代替原有指标来综合评价扇贝冻品的品质,建立了市售扇贝冻品的品质评价模型:f=0.467f1+0.302f2+0.231f3,其中,f1公因子包括弹性、回复性、内聚性、蒸煮损失和持水力,f2公因子包括硬度、白度和咀嚼度,f3公因子包括解冻损失和感官评分;进一步由多元线性回归分析得出,冻藏时间、冰柜温度和产品形式是影响扇贝冻品品质的关键因素,其他2种因素无显著影响。研究表明,基于因子分析和多元线性回归的方法能够较好地进行扇贝冻品的品质评价并分析导致其品质劣变的影响因素。  相似文献

The physicochemical and gel properties of myofibrillar protein (MFP) from sin croaker fish were studied during ice storage for 18 days. Significant changes in the trends of solubility, Ca2+ ATPase enzyme activity, surface hydrophobicity, and water holding capacity of extracted MFP were observed by the 6th day of storage. The Ca2+ ATPase enzyme activity reduced significantly (p < 0.05) by the 6th day of storage. However, sodium dodecyl sulfate-polyacrylamide gel electrophoresis (SDS-PAGE) did not show a remarkable change in the concentration of myosin heavy chain. Surface hydrophobicity increased almost four times from its original value of 18.98 µg; whereas, water holding capacity showed a fluctuating trend during storage. The emulsion capacity of the MFP was in the range of 0.89- to 1.92-mL oil/mg protein during storage. The gel strength value (313.45 g.cm) of heat-induced gel prepared from fresh minced meat decreased significantly (p < 0.05) by the 6th day of ice storage. Texture profile analysis revealed that changes in hardness and gumminess were concurrent to steeply reducing breaking force up to the 6th day. The histological observation showed gradually increasing gaps between muscle fibers. The histological observations and physicochemical quality indicated that the sin croaker fish can be used for producing good quality surimi when stored for up to 6 days in ice.  相似文献

ABSTRACT

The study aimed to evaluate the effects of carrot concentrated protein (CCP) as additive on the functional and textural properties of surimi from striped catfish (Pangasianodon hypophthalmus) during six months of frozen storage (?20°C). The CCP (82.22% crude protein) was used as an additive either a lone or with a synthetic cryoprotectant (sucrose-sorbitol-sodium tri-polyphosphate). Control was made with synthetic cryoprotectant only. Molecular weight of CCP was found to be 36 kDa. After six months, the results revealed that up to 50% of synthetic cryoprotectants could be replaced by CCP during frozen storage of surimi. Biochemical parameters such as protein solubility, Ca2+ATPase activity, and gel strength decreased significantly (p < .05) during storage. Treatment T-3 (CCP 0.5% + 50% of synthetic cryoprotectant) maintained quality of protein significantly superior (p < .05) in respect to denaturation and other functional and sensory attributes compared to all the treatments. The microstructure images of surimi confirmed that addition of CCP modified the ice crystal growth during frozen storage. This study suggests that CCP can be a potential additive to protect protein from denaturation along with partial replacement of chemical cryoprotectants.  相似文献

本研究以鲟鱼(Acipenser sinensis)肉为原料,通过正交实验对鲟鱼鱼糜的漂洗工艺进行了优化,对鱼糜漂洗前后的蛋白质含量及其组成、水分分布、凝胶性能等进行了研究。结果显示,鲟鱼鱼糜的最佳漂洗工艺为:水漂洗1次,盐水漂洗1次,盐的质量分数为0.25%,漂洗时间为1 min。鲟鱼鱼糜经漂洗后,其盐溶性蛋白比例显著升高(P<0.01);鱼糜中的水分受到的束缚力增加,自由度减小,形成了更为致密的凝胶网状结构;破断力、凹陷距离、凝胶强度、持水力、白度等表征凝胶性能和鱼糜品质的指标明显提升。研究表明,采用恰当的漂洗工艺可显著提高鲟鱼鱼糜的品质。  相似文献

Antioxidants have been widely used as additives to provide protection against oxidative degradation of foods by free radicals. The effect of thyme essence (Zataria multiflora Boiss) on the rancidity development in cobia (Rachycentron canadum) fillets during frozen storage was studied. Cobia fillets were treated with thyme essence (250 and 500 ppm) and then stored at??18°C for up to 6 months. Rancidity development was measured by several biochemical indices including free fatty acids (FFA), peroxide value (PV), thiobarbituric acid (TBA), and complemented by sensory analysis (flesh odor, consistency, and appearance). Also, pH and expressible moisture were measured during 6-month storage. Proximate composition was also determined in the first day. TBA, PV, and FFA levels increased in all treatments due to lipid oxidation. Thyme essence showed an antioxidative effect in cobia fillets during frozen storage as indicated by TBA, PV, and FFA levels. Results showed that FFA, primary and secondary oxidation products, expressible moisture (EM), and pH of thyme essence treated samples were significantly lower than those of the control samples (p < 0.05). Thyme essence retarded oxidative changes in frozen cobia fillets, and the best oxidation inhibition was obtained using thyme essence at 500 ppm.  相似文献

ABSTRACT

Ovalipes trimaculatus is a crab recognized as a new resource with fishing value to obtain frozen products. Pasteurization conditions of meat crab at temperatures below 85ºC (60, 72, and 82ºC) were established to achieve better quality attributes in the frozen product. The lethality curves of Staphylococcus aureus and Listeria monocytogenes were measured, and the decimal reduction times (D) and Z values were determined. Heat transfer during the pasteurization process of pouches containing crab meat was simulated using a computational code in finite elements, and the mathematical model was experimentally validated. Thermal histories were coupled to the microbial lethality kinetics of the most heat resistant pathogen microorganism in order to establish pasteurization times necessary for the process system design. The predicted pasteurization conditions were microbiologically validated. The pouches were frozen under industrial conditions and stored at ?22ºC for 1 year. The influence of the type of packaging (vacuum and nonvacuum plastic pouches) on physicochemical and sensory quality parameters of frozen crab meat (color, exudate, lipid oxidation, water holding capacity, and overall acceptability) were analyzed observing better performance under vacuum conditions.  相似文献

The main aim of the present work was to evaluate the effect of dietary butylated-hydroxytoulene (BHT as an antioxidant) and dietary lipid level on flesh lipid quality of Beluga sturgeon during frozen storage. An initial 135-day feeding trial evaluated practical-type diets containing 0 or 250 mg BHT kg?1 with two lipid levels (12 and 24% diet on dry matter basis) in a factorial arrangement. Fillet samples were analyzed fresh or after storage at ?18 ± 1°C for 12 months. Dietary antioxidant supplementation had no significant effect on fat content and fatty acid composition in the studied fish muscle, but increasing the lipid concentration in the feed increased muscle lipid concentration. Lipid oxidation in fish muscle is related to increasing lipid concentration in the feed. In addition, oxidation was reduced for fish fed BHT. Results showed that dietary BHT supplementation can slow down the level of lipid oxidation in Beluga sturgeon muscles during frozen storage, but it had a direct relationship with dietary lipid level.  相似文献

Bay essential oil (BEO) at 0.5 and 1 g/100 g was added to surimi gels fortified with omega (ω)-3 rich oils. Although the fortification resulted in increased (P < 0.05) susceptibility of surimi to lipid oxidation, 0.5 g/100 g BEO significantly reduced TBARS (P < 0.05). Addition of ω-3 rich oil or BEO improved the texture. Color values of the surimi seafood were improved particularly when BEO was added. Sensory properties, water activity, and pH values were generally within the acceptable range. These results suggest that the incorporation of BEO may allow food manufacturers to nutritionally enhance surimi seafood with beneficial ω-3 rich oils.  相似文献

Atlantic salmon contain omega-3 fatty acids, which play important roles in promoting human health but are highly susceptible to oxidation. Chitosan has been shown to have antioxidant properties which could be beneficial in extending the shelf life of Atlantic salmon; however, the effects of chitosan molecular size on oxidation of salmon fillets have not been reported. The primary objective of this study was to evaluate the effects of chitosan coatings on lipid oxidation of Atlantic salmon fillet portions during 5 months frozen storage. The effects of chitosan molecular weight (high molecular weight, low molecular weight, and enzymatically degraded chitosan), concentration (0.5 and 1.0%), and the addition of 1% ascorbic acid to the chitosan coating were evaluated. Chitosan molecular weight significantly affected oxidation as evaluated by propanal levels and changes in L* values of the fillet portions. The chitosan treatment with added ascorbic acid resulted in the lowest propanal levels during 5 months of frozen storage. Manipulation of chitosan molecular weight and incorporation of natural antioxidants into chitosan coatings can provide an effective method of reducing lipid oxidation during extended frozen storage of seafood products.  相似文献
