试验旨在分析研究乌珠穆沁草原饲养澳大利亚黑安格斯肉牛肌内脂肪酸含量和组成,为今后该品种的饲养改良、杂交繁育及肉品质的提高提供科学的基础数据.试验采集7头体重为(500±38)kg澳大利亚黑安格斯肉牛的里脊、臀肉、肩肉、眼肉、上脑、胸肉和米龙等不同部位肉样,采用简单高效脂肪酸提取方法,用气相色谱仪测定脂肪酸组成与含量,并与FAO/WHO推荐值比较,进行脂肪酸营养价值分析.结果表明黑安格斯肉牛不同部位牛肉中饱和脂肪酸(SFA)含量由多到少顺序为里脊、上脑、眼肉、肩肉、胸肉、臀肉及米龙,皆以棕榈酸和硬脂酸含量为主;单不饱和脂肪酸(MUFA)中油酸含量最高;检出的多不饱和脂肪酸(PUFA)多为亚油酸和亚麻酸;臀肉P/S和M/S最高,n-3/n-6 PUFAs比值达到0.85,接近FAO/WHO推荐值.以上结果表明乌珠穆沁草原饲养的黑安格斯肉牛的肉质风味良好,有较高的营养价值.  相似文献

试验旨在分析乌珠穆沁草原饲养的黑安格斯牛肌肉氨基酸组成及其营养价值,为该品种的饲养、杂交繁育及肉品质评价提供基础数据。采集7头体重为500 kg±38 kg黑安格斯肉牛的里脊、臀肉、肩肉、眼肉、上脑、胸肉和米龙等部位肉样,测定其氨基酸含量与组成,并用FAO/WHO氨基酸模式进行营养价值分析。结果显示样品中水分平均含量68.73%,低于国家标准;粗脂肪平均含量为30.56%。并检测出17种氨基酸,鲜味、甜味和苦味氨基酸含量丰富,其与总氨基酸(TAA)含量的比值分别为25.8%、32.7%和41.6%。必需氨基酸(EAA)含量、EAA/TAA、EAA/NEAA及EAA评分均超过FAO/WHO氨基酸模式。在所有测定样品中,眼肉、里脊和上脑氨基酸含量较高,氨基酸组成丰富。综上所述,乌珠穆沁草原饲养的黑安格斯牛肉氨基酸组成丰富,含量较高,能够满足人体营养需要,属于优质蛋白质。  相似文献

This experiment was aimed to analyze the amino acids composition and nutrient value of Black Angus raised in Ujinmqin grassland and provide basic data for feeding,cross breeding,and meat quality evaluation.Highrib,tenderloin,ribeye,nates meat,topside,shoulder clod and brisket samples were collected from seven Australian imported Black Angus raised in Ujinmqin grassland with 500 kg?38 kg body weight.The content and composition of amino acids were determined and then nutritent value were analyzed using FAO/WHO amino acids pattern.The results showed that the moisture and crude fat of samples were 68.73% and 30.56%.There were total 17 kinds of amino acids were determined in the samples and UAA,SAA and BAA were abundant.The ratios of these three abundant amino acids to total amino acid (TAA) were 25.8%,32.7% and 41.6%,respectively.The EAA content,EAA/TAA,EAA/NEAA and the EAA scores were all higher than FAO/WHO amino acids pattern.The amino acids content of ribeye,tenderloin and highrib were higher than that of other parts of muscle.In conclusion,the meat of Black Angus raised in Ujinmqin grassland had abundant composition and high content of amino acids,which were able to provide enough nutrient elements for human beings.  相似文献

【目的】试验旨在研究中草药饲料添加剂对延边黄牛不同部位牛肉营养成分、重金属及抗生素残留、风味物质含量的影响。【方法】选用100头健康且体重相近的27月龄延边黄牛,随机分为2组,每组50头。对照组饲喂基础饲粮,试验组在基础饲粮中添加0.2%中草药饲料添加剂。预试期10 d,正试期90 d。试验结束后,每组随机选择10头牛进行屠宰,取胸肉、眼肉、西冷、上脑和里脊5个部位肌肉样,测定牛肉中常规营养成分、剪切力、肉色、氨基酸、脂肪酸、重金属、抗生素、风味物质等指标。【结果】与对照组相比,饲粮中添加中草药饲料添加剂对牛肉常规营养成分粗蛋白质、粗脂肪、粗纤维、钙和磷含量均无显著影响(P>0.05),可以增加牛肉中总氨基酸含量及鲜味氨基酸、甜味氨基酸和苦味氨基酸的总含量,并提高牛肉中棕榈油酸和亚麻酸含量,但差异均不显著(P>0.05);试验组延边黄牛胸肉剪切力显著降低(P<0.05),眼肉和里脊部位的红度值显著提高(P<0.05),西冷、眼肉和胸肉中氮氧化合物和无机硫化物类等芳香化合物的含量均显著降低(P<0.05)。试验组与对照组牛肉中均未检测到重金属和抗生素残留。【...  相似文献

Crossbred steers (n = 136) were used to assess breed differences in growth performance, carcass characteristics, fatty acid composition (total lipids and phospholipids), and palatability attributes of longissimus muscle. A multiple regression model was applied to crossbreeding data to estimate genetic differences between Simmental and Red Angus at the same level of backfat finish (10 mm). Simmental spent 71 more (P < 0.001) days on feed to acquire the same degree of backfat thickness as Red Angus, had heavier (P < 0.001) slaughter weights, larger (P = 0.002) longissimus muscle area, and increased (P = 0.023) lean yield. Average daily gain did not differ (P = 0.297) between breeds. Simmental were less (P = 0.012) efficient in converting feed to gain than Red Angus. Generally, there were few breed differences in palatability attributes for longissimus and semitendinosus muscles, with the exception of increased (P < 0.05) beef flavor scores for Simmental beef vs Red Angus beef across both muscles. For total lipids, concentrations of myristoleic acid (14:1), palmitoleic acid (16:1), and vaccenic acid (18:1n-7), along with n-6 to n-3 fatty acid (n-6:n-3) ratio, were greater (P < 0.05) in Simmental than Red Angus. In contrast, concentrations of margaric acid (17:0), eicosapentaenoic acid (20:5n-3), and total n-3 polyunsaturated fatty acids (n-3 PUFA) were greater (P < 0.05) in Red Angus than Simmental. For phospholipids, Simmental had lower (P < 0.05) amounts of 20:5n-3, docosahexaenoic acid (22:6n-3), and n-3 PUFA, with a greater (P = 0.017) n-6:n-3 ratio. Activity of delta9-desaturase enzyme in the conversion of palmitic acid (16:0) to 16:1 was greater (P = 0.001) in total lipids from Simmental as compared with Red Angus. A genetic basis for fatty acid differences is suggested, although the biological and practical significance needs to be demonstrated.  相似文献

随着消费者健康意识的提高,越来越多的研究关注提高家养动物肉产品中多不饱和脂肪酸(PUFA)含量,尤其是n-3长链脂肪酸和共轭亚油酸(CLA)在羊、牛、猪肉肌内脂中的含量。研究结果表明通过添加鱼油或鱼粉能提高动物肉中n-3长链脂肪酸含量。富含亚麻油酸(LNA)的日粮能提高肉中LNA、二十碳五烯酸(EPA)和二十二碳五烯酸(DPA)水平,但大部分对肌肉中二十二碳六烯酸(DHA)水平没有影响。然而,在日粮中添加鱼油或鱼粉大部分能提高动物肌肉中DHA含量。大部分研究中提高n-3脂肪酸含量的同时n-6脂肪酸含量下降,这主要归因于试验组日粮中n-6脂肪酸降低。这样刚好可以使肉中两者比例更合理,但对多不饱和脂肪酸与饱和脂肪酸比例没什么影响。饲喂反刍动物富含n-3脂肪酸日粮(亚麻籽或加草料)、鱼油或富含LA的浓缩料可提高肌肉中c9t11CLA含量。牛肉、羊肉中c9t11CLA在总脂中含量介于0.2~1.0 g/100 g,不随营养因素提高到更高。相对应的,在单胃动物日粮中添加混合CLA油则显著提高CLA含量。  相似文献

Seven nonlactating mature Angus cows (4 to 10 yr old) were used to examine the effects of fish meal supplementation on plasma and endometrial fatty acid composition. Cows were fed a corn silage-based diet supplemented with either fish meal, a rich source of the n-3 fatty acids, eicosapentaenoate and docosahexaenoate (n = 3; 5.1% of dietary DM), or corn gluten meal (n = 4; 8.5% of dietary DM) for approximately 64 d. Cows were given 25 mg of PGF2alpha (i.m.) on d 11 and 25 of supplementation to synchronize estrous cycles. On d 18 postestrus of the second estrous cycle, cows were slaughtered, and caruncular endometrium was dissected from uteri immediately after slaughter. Jugular blood samples were collected immediately before supplementation was initiated (d 0) and at 7-d intervals for 35 d of the study. Plasma eicosapentaenoic and docosahexaenoic acids did not differ between treatment groups on d 0 (P > 0.10); however, these fatty acids were greater in cows supplemented with fish meal over the first 35 d of supplementation compared with cows supplemented with corn gluten meal (P < 0.05). Endometrial docosahexaenoic acid did not differ (P = 0.12), whereas eicosapentaenoic acid was greater (P < 0.05) in cows supplemented with fish meal than in cows supplemented with corn gluten meal. These results indicate that dietary fish meal alters plasma and endometrial n-3 fatty acid composition in beef cows.  相似文献

The objectives of this study were to determine the nutrient composition of grass-fed beef in the United States for inclusion in the USDA National Nutrient Database for Standard Reference, and to compare the fatty acid composition of grass-fed and conventionally fed (control) beef. Ground beef (GB) and strip steaks (SS) were collected on 3 separate occasions from 15 grass-fed beef producers that represented 13 different states, whereas control beef samples were collected from 3 regions (Ohio, South Dakota, and Texas) of the United States on 3 separate occasions. Concentrations of minerals, choline, vitamin B(12), and thiamine were determined for grass-fed beef samples. Grass-fed GB samples had less Mg, P, and K (P < 0.05), and more Na, Zn, and vitamin B(12) (P < 0.05) than SS samples. Fat color, marbling, and pH were assessed for grass-fed and control SS. Subjective evaluation of the SS indicated that grass-fed beef had fat that was more yellow in color than control beef. Percentages of total fat, total cholesterol, and fatty acids along with trans fatty acids and CLA were determined for grass-fed and control SS and GB. Grass-fed SS had less total fat than control SS (P = 0.001), but both grass-fed and control SS were considered lean, because their total fat content was 4.3% or less. For both GB and SS, grass-fed beef had significantly less (P = 0.001 and P = 0.023, respectively) content of MUFA and a greater content of SFA, n-3 fatty acids, CLA, and trans-vaccenic acid than did the control samples. Concentrations of PUFA, trans fatty acids, n-6 fatty acids, and cholesterol did not differ between grass-fed and control ground beef. Trans-vaccenic acid (trans-11 18:1) made up the greatest concentration of the total trans fats in grass-fed beef, whereas CLA accounted for approximately 15% of the total trans fats. Although the fatty acid composition of grass-fed and conventionally fed beef was different, conclusions on the possible effects of these differences on human health cannot be made without further investigation.  相似文献

试验旨在研究相同营养水平日粮对不同杂交肉牛生产性能及肉品质的影响.以10月龄10头西杂、10头夏杂、6头安杂牛为试验材料,以美国NRC肉用小公牛营养需要为饲养标准,进行255 d强度育肥试验,试验后进行屠宰及肉质分析.测定三种杂交牛的日增重、胴体重、屠宰率、牛肉脂肪酸、粗蛋白质、氨基酸等含量,并进行差异比较.结果发现各分析指标在各组间虽有差异,但均未达显著水平,综合分析后认为安格斯杂交牛的育肥效果最好,其次是西门塔尔杂交牛,最后是夏洛来杂交牛.  相似文献

To search for an index for chemical composition related to superior taste in Japanese Black beef, we conducted panel tests and analyzed the chemical composition of seven beef brands. Thirty‐five sirloin beefs from five heifers were used in this study, sold under seven beef brands graded as more than A4 on the Japanese Meat Grade scale. The chemical composition analyses assessed both raw and roasted meat, the latter of which was roasted under the same conditions as those used for the panel test. Results of the panel test and chemical composition analyses revealed that fatty acid composition, sugar content, adenosine triphosphage (ATP)‐related compounds, amino acid composition and odor composition in the sirloin meat differed among beef brands. Furthermore, the correlations of chemical compositions between roasted and raw meat were significantly high. Sugar content and ATP‐related compounds in roasted meat were significantly correlated with the item ‘overall evaluation’ of the panel test. ATP‐related compounds, such as inosinic acid, carnosine and taurine, in roasted and raw meat were correlated significantly with the item ‘umami intensity’ of the panel test. These results suggest that the composition of these components is important for an index related to the overall evaluation of beef.  相似文献

Oleic acid (18:1n‐9) is the most abundant fatty acid in bovine adipose tissue. Because most of the lipid in bovine muscle is contributed by intramuscular adipocytes, oleic acid also is the predominant fatty acid in beef. In many species, the concentration of oleic acid in adipose tissue is dictated by the average concentration of oleic acid in the diet, but in ruminant species such as beef cattle, oleic acid is hydrogenated largely to stearic acid by ruminal microorganisms. In these species, the concentration of oleic acid in adipose tissue is dependent upon the activity of Δ9 desaturase, encoded by the stearoyl coenzyme A desaturase (SCD) gene. Expression of the SCD gene is essential for bovine preadipocyte differentiation, and desaturase gene expression and catalytic activity increase dramatically as adipose tissue mass increases after weaning. Feeding a hay‐based diet to American Wagyu steers to a typical Japanese bodyweight endpoint (650 kg) markedly stimulated desaturase enzyme activity as well as the accumulation of both oleic acid and intramuscular lipid, but the increase in oleic acid and intramuscular lipid was much less in hay‐fed Angus steers. Increasing the concentration of oleic acid improves the palatability and healthiness of beef, and Korean Hanwoo and Japanese Black (and American Wagyu) seem especially well adapted to accumulate oleic acid in their adipose tissue.  相似文献

The influence of fish oil (highly unsaturated) and beef tallow (highly saturated) with vitamin E (100 IU/kg) supplementation on the antioxidant status of broiler chicken cockerels was investigated. Chicks were fed a control diet with no added fat, 40 g/kg each of fish oil and beef tallow diets, respectively, from 11 to 42 days of age. Tocopherol concentration and the rate of lipid peroxidation, thiobarbituric acid reactive substance (TBARS) in liver, fatty acid composition of the liver lipids, blood serum total antioxidant status (TAS), and reduced glutathione (GSH) content were determined. Vitamin E supplementation of the diet increased liver alpha-tocopherol content in chicks regardless of the type of dietary fat. Fish oil diet resulted in higher liver TBARS value while beef tallow diet showed lower values compared to the control diet. Vitamin E supplementation reduced liver TBARS as well as serum GSH, and raised serum TAS for all diets. Serum GSH was the same for vitamin E supplemented diets regardless of the fat supplement. Fish oil diets resulted in a significant increase in hepatic lipid n-3 PUFA content. A significant positive correlation was found between liver TBARS and n-3 PUFA content. No relationships were established, however, between liver TBARS and n-6 PUFA or saturated fatty acids. The results suggest that feeding oils rich in n-3 PUFA increases tissue concentration of these fatty acids, consequently increasing tissue lipid peroxidation and reducing the antioxidative status of broiler chickens. Supplementing high levels of vitamin E with such oils may increase tissue oxidative stability. Serum TAS or GSH may be used as a measure of antioxidative status in chickens.  相似文献

In this study, meat quality traits were compared between squabs from two pigeon breeds: one Chinese indigenous breed, the Shiqi (SQ) meat‐type pigeon, and an imported breed, the white king (WK) meat‐type pigeon. Breed differences were detected in the content of intramuscular fat (IMF) in the breast muscle. SQ squabs had significantly higher IMF content than the WK birds. The shear force value (an objective measure of meat tenderness) of SQ birds was also relatively lower than that of the WK squabs. Further analysis of fatty acids profile revealed that SQ squabs exhibited significant advantage in the synthesis of polyunsaturated fatty acids, while WK squabs were significantly higher in the sum of monounsaturated fatty acids. Breast muscle in the SQ squabs was also significantly higher in the ratio of polyunsaturated fatty acids to saturated fatty acids, as well as the sum of omega 6 fatty acids. Variability of expression levels of functional genes in relation to fat accumulation and meat tenderness was analysed by qRT‐PCR. Gene expression analyses showed that the hepatic expression of LPL (lipoprotein lipase), FABP4 (fatty acid‐binding protein 4), and CAPN2 (calpain‐2) were significantly higher in the SQ squabs. In the breast muscle tissue, the FABP3 (fatty acid‐binding protein 3) and CAPN2mRNA abundance was significantly higher in SQ squabs. Our results suggested that these differentially expressed genes might be candidate genes used in the programmes of targeted selection for squabs with higher IMF content, tender meat, and more favourable fatty acids composition.  相似文献

Genetic parameters were estimated to investigate the relationships between meat quality traits and fatty acid composition from 11 855 Japanese Black cattle. The meat quality traits included beef marbling score (BMS), beef color score, firmness of beef (FIR), texture of beef (TEX) and beef fat color score (BFS). The data on fatty acid composition included oleic acid and monounsaturated fatty acids (MUFA) contents, the ratio of MUFA to saturated fatty acids (MUS) and the ratio of elongation. The heritability estimates for meat quality traits ranged from moderate (0.30) to high (0.72). The strong genetic correlations between them were useful for simultaneous genetic improvement. In addition, high heritability estimates of fatty acid composition, ranging from 0.60 to 0.63, indicated that they could also be improved genetically. The genetic correlations of fatty acid composition with BMS, FIR and TEX were weak and negative. In contrast, positive and stronger genetic correlations were found between BFS and fatty acid composition, in particular, related to the level of unsaturation (0.77 and 0.79 for MUFA and MUS, respectively). This implies that improving the level of unsaturation makes fat darker (more yellow) and thus requires balancing with BFS.  相似文献

Five beef cattle management regimens were evaluated for their effect on meat quality, fatty acid composition, and overall palatability of the longis-simus dorsi (LD) muscle in Angus cross steers. A 98-d growing phase was conducted using grass silage with or without supplementation of growth promotants (Revalor G and Rumensin) or soybean meal. Dietary treatments in the finishing phase were developed with or without supplementation of growth promotants based on exclusive feeding of forages with no grain supplementation, or the feeding of grain:forage (70:30) diets. Growth promotants increased (P < 0.01) shear force and tended (P = 0.06) to increase toughness of the LD muscle due to limited postmortem proteolytic activity (lower myofibrillar fragmentation index value; P = 0.02). Grain feeding increased DM and intramuscular fat content (P = 0.03 and P = 0.05, respectively) in the LD but decreased the sensory panel tenderness score (P = 0.01). We proposed that stearoyl-CoA desaturase (SCD) activity dictates fatty acid composition of adipose tissue and muscle in beef cattle, regardless of ruminal or hepatic fatty acid hydrogenation or desaturation. Twelve Angus steers were assigned to a calf-fed (CF) group and slaughtered at weaning (8 mo of age; n=4), 12 mo of age (n=4), or 16 mo of age (n=4). Twelve steers were assigned to a yearling-fed (YF) group and slaughtered at 12 mo of age (n=4), 16 mo of age (n=4), and 17.5 mo of age (n=4; 525 kg, market weight). Data were analyzed based on time on the corn-based finishing diet, with terminal age as a covariate, and orthogonal polynomial contrasts were tested on the main effects of treatment group and time on the finishing diet. Fatty acids from duodenal digesta, plasma, liver, LM, and subcutaneous and intramuscular adipose tissue were measured, and SCD gene expression was measured in intramuscular and subcutaneous adipose tissues. In duodenal digesta, palmitic and linoleic acids increased by 100% over the sampling period, α-linolenic acid decreased over the sampling period, and trans-vaccenic acid was greater in YF than in CF steers (all P < 0.01). The proportion of α-linolenic acid decreased over time in all tissues, including liver. The SCD index (ratio of SCD fatty acid products to SCD fatty acid substrates) increased over time in LM and in intramuscular and subcutaneous adipose tissues. The SCD:glyceraldehyde 3-phosphate dehydrogenase mRNA ratio was virtually undetectable at the initial sampling periods in subcutaneous adipose tissue of YF and CF steers, and it increased over time (P < 0.01). The SCD index and SCD:glyceraldehyde 3-phosphate dehydrogenase ratio were greater in intramuscular adipose tissue of CF steers than in that of YF steers. The SCD index did not change over time in liver and decreased over time in duodenal digesta. We conclude that, unlike essential fatty acids, the SFA and MUFA composition of adipose tissue is regulated by adipose tissue fatty acid desaturation, with little contribution from hepatic or duodenal fatty acids.  相似文献

The objective of this trial was to determine if daily supplementation of flaxseed for 85 d to steers finished on grasslands of the northern Great Plains would influence growth and carcass characteristics or the fatty acid profile, tenderness, and sensory characteristics of beef steaks. Eighteen Angus yearling steers (initial BW 399 ± 21 kg) were randomly divided into 3 groups. Steers in treatment 1 (FLX; n = 6) received a daily supplement of ground flaxseed (0.20% of BW), whereas steers in treatment 2 (CSBM; n = 6) received a daily supplement of ground corn and soybean meal (0.28% of BW), with contents of CP and TDN being similar to the supplement for FLX. Control steers (CONT; n = 6) were not supplemented. Treatments were given to each individual steer in side-by-side stalls and were fed from mid-August to November 7, 2007, the day before slaughter. All steers grazed growing forage from early May through the first week of November. Growth rate of steers fed FLX was 25% greater (P < 0.01) than that of steers fed CONT, but was similar (P = 0.45) to that of steers fed CSBM. No differences were observed for carcass characteristics (P ≥ 0.14), tenderness (Warner-Bratzler shear force; P ≥ 0.24), or sensory attributes (P ≥ 0.40) except for a slight off-flavor detected in steaks from steers fed FLX compared with CONT (7.4 vs. 7.8, respectively, with 8 indicating no off-flavor and 1 indicating extreme off-flavor; P = 0.07) and CSBM (7.9; P = 0.01). The n-3 fatty acids α-linolenic acid and eicosapentaenoic acid were 62 and 22% greater, respectively, in beef from steers fed FLX compared with those fed CONT (P < 0.001). The ratio of n-6 to n-3 fatty acids was smaller (P < 0.001) in beef from steers fed FLX compared with the ratios in beef from steers fed CONT and CSBM. Daily supplementation of flaxseed to steers grazing growing vegetation on the northern Great Plains may improve growth rate and enhance the n-3 fatty acid profile of the steaks.  相似文献

The fatty acid composition of adipose tissue in beef has been recognized as an important trait because of its relationship with beef quality, including favorable beef flavor and tenderness. Over the last decade, we have tried to identify the genes responsible for the fatty acid composition in cattle, and have found the following. (i) Genetic polymorphism of stearoyl‐CoA desaturase (SCD) is one of the responsible genes associated with fatty acid composition. The average effects of gene substitution of the SCD type A gene on the monounsaturated fatty acid (MUFA) percentage and the melting point of intramuscular fat were approximately +1.0% and ?1.0°C, respectively. (ii) Intron polymorphism of sterol regulatory element binding protein–1 (SREBP‐1) also affected MUFA. (iii) No effect of SCD or SREBP‐1 genotypes on any representative carcass traits of Japanese Black in the field population was observed. (iv) Additional genetic markers adipocytes fatty acid binding protein 4 (FABP4) and liver X receptor α also affected the fatty acid composition. (v) SCD and FABP4 significantly affected fatty acid composition in Holstein steers. These findings will bring new insight into the fat‐related carcass traits of beef cattle and will thus contribute to the beef industry.  相似文献

The objective of this study was to compare fatty acid weight percentages and cholesterol concentrations of longissimus dorsi (LD), semitendinosus (ST), and supraspinatus (SS) muscles (n = 10 for each) of range bison (31 mo of age), feedlot-finished bison (18 mo of age), range beef cows (4 to 7 yr of age), feedlot steers (18 mo of age), free-ranging cow elk (3 to 5 yr of age), and chicken breast. Lipids were analyzed by capillary GLC. Total saturated fatty acids (SFA) were greater (P < 0.01) in range bison than in feedlot bison and were greater (P < 0.01) in SS of range beef cattle than in feedlot steers. Muscles of elk and range bison were similar (P > 0.05) in SAT. In LD, polyunsaturated fatty acids (PUFA) were highest (P < 0.01) for elk and range bison and lowest (P < 0.01) for feedlot steers within each muscle. Range bison and range beef cows had greater (P < 0.01) PUFA in LD and ST than feedlot bison or steers, respectively. Range-fed animals had higher (P < 0.01) n-3 fatty acids than feedlot-fed animals or chicken breast. Chicken breast n-6 fatty acids were greater (P < 0.01) than for muscles from bison, beef, or elk. Elk had higher (P < 0.01) n-6 fatty acids than bison or beef cattle; however, range-fed animals had higher (P < 0.01) n-6 fatty acids than feedlot-fed animals in ST. Conjugated linoleic acid (CLA, 18:2cis-9, trans-11) in LD was greatest (P < 0.01) for range beef cows (0.4%), and lowest for chicken breast and elk (mean = 0.1%). In ST, CLA was greatest (P < 0.01) for range and feedlot bison and range beef cows (mean = 0.4%) and lowest for elk and chicken breast (mean = 0.1%). Also, SS CLA was greatest (P < 0.01) for range beef cows (0.5%) and lowest for chicken breast (0.1%). Mean total fatty acid concentration (g/100 g tissue) for all muscles was highest (P < 0.01) for feedlot bison and feedlot cattle and lowest (P < 0.01) for range bison, range beef cows, elk, and chicken. Chicken breast cholesterol (mg/100 g tissue) was higher (P < 0.01) than LD and ST cholesterol, which were lowest (P < 0.01; 43.8) for range bison and intermediate for the other species. Cholesterol in SS was highest (P < 0.01) for feedlot bison and steers, which were similar to chicken breast (mean = 61.2 vs 52.8 for the mean of the other species). We conclude that lipid composition of bison muscle varies with feeding regimen, and range-fed bison had muscle lipid composition similar to that of forage-fed beef cows and wild elk.  相似文献
