The effect of a humidified flow of ozone-enriched air applied cyclically (4 ± 0.5 μL L−1 of O3 for 30 min every 3 h) on metabolic behaviour and sensorial and microbial quality of whole and fresh-cut ‘Thomas’ tomatoes stored up to 15 days at 5 °C was examined. The application of O3 initially stimulated the respiration rate in a way similar to a stress, although after 2 days, the metabolic activity decreased to a rate lower than that of control (air flow). In O3-treated whole and sliced tomatoes a higher sugar (fructose and glucose) and organic acid (ascorbic and fumaric) content was found. The kind of cut (whole or slices) did not affect the sensitivity of tomato to O3. In whole tomatoes, O3 maintained the tissue firmer than in control fruit while no influence was found on slices. The O3 treated fruit retained a good appearance and overall quality in slices but experienced a reduced aroma. Also, O3 substantially reduced microbial counts, being more noticeable on bacteria (1.1–1.2 log10 units) than on fungi (0.5 log10 units). This effect was higher when the storage time was longer and when a higher O3 level (7 μL L−1) was used. O3 did not cause any damage or off-flavour in slices or whole tomatoes. In conclusion, the assayed O3 treatment can be useful for maintaining quality and reducing microbial populations in whole and sliced tomato.  相似文献

In this study, important quality properties such as firmness, sugar and acid levels were measured and analysed in tomatoes harvested from three greenhouses during a five month period and stored at 16 °C for over 20 days. Tomatoes were harvested from three identical, neighbouring, greenhouses which were either conventionally ventilated (open greenhouse) or mechanically cooled (semi-closed greenhouses). Sugar and acids levels were hardly affected by greenhouse type. Compared to the open greenhouse, semi-closed greenhouses produced heavier and less mature (firmer) fruit at the commercial harvesting stage based on colour. Fruit maturity differences could be linked to the vertical temperature gradient and to CO2 levels in the different greenhouses. This indicates that CO2 levels and temperature affect the synchronisation between colour and firmness maturity at harvest. The acceptance period, i.e., the time period both tomato colour and firmness are considered acceptable by consumers, will likely be positively affected when growers switch from conventionally ventilated to semi-closed production systems. Additional to greenhouse effects also effects of the harvest month were observed. The sugar to acid ratio was highest and glucose to fructose ratio was lowest in July, the month with the highest irradiance, irrespective of greenhouse type. The estimated value for the maximum firmness (Fmax) varied from 17.9 N in August to 31.2 N in June. This monthly variation in Fmax explains an important part of the variation found in the postharvest behaviour of tomatoes. Interestingly, the monthly variation in Fmax showed the same trend as found for the monthly initial sugar levels. It might be hypothesised that the monthly variation in glucose and fructose levels causes variation in that part of firmness that is generated by cell turgor. The monthly variation in Fmax, sugar and acid levels could not be linked to climate conditions and remains to be elucidated.  相似文献

Pulsed light (PL) is a nonthermal food technology with a potential as postharvest decontamination strategy for fruit and vegetables. The feasibility of PL in extending shelf-life of food products while assuring appropriate quality is still under investigation. The effect of pulsed light (PL) on surface decontamination (natural and inoculated microorganisms), physical (colour, texture and weight) and nutritional quality (ascorbic acid and major carotenoids) was investigated in red-ripe tomatoes during 15 days of storage at 20 °C. The application of PL treatments at fluences of 2.68 and 5.36 J/cm2 reduced microbial loads during storage of whole tomatoes. One log10 reduction on the microflora present in both skin and peduncle scar parts of the tomato was obtained with a fluence of 4 J/cm2. Fluences of 2.2 J/cm2 allowed a 2.3 log10 reduction of Saccharomyces cerevisiae inoculated onto the tomato surface. Softening, increased loss of weight, and wrinkles on the tomato surface appeared after 3 days on PL treated tomato fruit. Ascorbic acid levels remained unchanged during storage. Total lycopene, α-carotene and β-carotene contents and lycopene isomerisation percent were higher in tomato extracts prepared with fresh tomato fruit treated with a high PL dose of 30 J/cm2. An increase in the bio-accessibility of lycopene was observed in hot-break purees prepared with fresh tomatoes treated at 5.36 J/cm2 and stored 15 days. In conclusion, PL treatment of fresh tomato would result in a reduction in microbiological contaminants without compromising the nutritional value; but it did induce some appearance defects.  相似文献

The effect of treatment with diphenylamine (DPA) and duration of postharvest storage of whole apple fruit on the responses of fresh-cut apple slices to elevated CO2 storage atmospheres has been investigated. On the day of harvest, ‘McIntosh’, ‘Empire’ and ‘Delicious’ apples were untreated or dipped in DPA, and were held at 0.5 °C overnight or for 6 weeks before slicing. Slices were then stored at 0, 15, 30, 45 or 60% CO2 in 1% O2 (balance N2), atmospheres. Color, firmness and accumulation of acetaldehyde, ethanol and ethyl acetate of the slices were measured. Generally slices were lighter (higher L* values) when stored in elevated CO2 atmospheres, but atmosphere and DPA effects varied by cultivar and were affected by pre-slice storage time. Slices prepared from stored fruit were softer compared with slices prepared at harvest. Slice firmness was not affected consistently by CO2 or DPA concentration, whether they were prepared at harvest or after storage. The effects of increasing CO2 concentration on acetaldehyde and ethanol accumulations were variable, being affected by cultivar and storage period. DPA treatment did not affect acetaldehyde accumulation of any cultivar, or ethanol accumulation of slices prepared from fruit at harvest. However, DPA-treated ‘Empire’ and ‘Delicious’ apples stored before slicing accumulated less ethanol compared with untreated fruit. Storage of apples before processing increased the accumulation of fermentation volatile compounds by cut apples under storage atmosphere conditions.  相似文献

为研究不同采收成熟度对番茄贮藏品质的影响,以“普罗旺斯”番茄品种为试验材料,分别采收处于绿熟期、变色期、红熟前期、红熟中期和红熟后期的果实,18℃下贮藏。试验结果表明,绿熟期采收的番茄贮藏到完熟期时腐烂率比其它处理高0.87~1.19倍,失重率高1.13~3.62倍,番茄红素低20.1%~25.6%。变色期采收的番茄贮藏期较长,贮藏到红熟后期和完熟期,失重率最低,腐烂率较低,还原糖、糖酸比、蛋白质、维生素C和番茄红素均处于高位值,即营养和风味均较佳。红熟前期和红熟中期采收的番茄贮藏期相对较短,贮藏至完熟期时各项营养指标和风味指标均处于较高水平。红熟后期采收的番茄贮藏期最短,贮藏至完熟期时各项营养指标和风味指标均处于较高水平,腐烂率最低,失重率居中。结论:用于长时间贮藏的番茄应该以采收变色期的果实为宜,用于短时间贮藏的番茄,则以采收红熟前期和红熟中期的果实为好,用于鲜食的番茄可以采收红熟后期的果实。绿熟期采收的果实不利于贮藏。  相似文献

Tomatoes are the most important vegetable, globally as well as in Germany. Outdoor tomato production is seriously impaired due to increasing infections with evolving late blight (Phytophthora infestans) populations. Within organic agriculture, research is being conducted to develop regionally adapted and open pollinated cultivars of outdoor tomatoes with late blight field resistance. In the present experiment, three crosses, including wild, cocktail, and beefsteak tomatoes, were selected for field resistance against late blight in F2 at one location per cross. The comparison of positive and negative selection in F3 revealed the selection of single F2 plants to be efficient in all three crosses. F2 selection has proved to be a robust and efficient tool for breeding programs. The correlated response to selection in other traits, including yield, fruit weight, days to maturity, harvest period, and plant height, depended on the cross. It was evident that selection for desired traits combined with field resistance against late blight is promising, even in wide crosses. The most undesired attribute of wild tomatoes is the formation of shoots on leaves and in inflorescences. No correlation was observed between field resistance and shoot formation, allowing the selection of genotypes with improved field resistance and yield, but without morphological disadvantages.  相似文献

The aim of this study was to increase the understanding of chlorophyll breakdown and lycopene synthesis at a quantitative level in Solanum lycopersicum fruit. To accomplish this, a kinetic model is proposed describing the transition from chloro- to chromoplast. Remittance VIS spectroscopy was used to assess chlorophyll and lycopene levels non-destructively in cocktail and round type tomatoes. Tomatoes were stored at constant temperatures between 4 and 24 °C, or at a stepwise changing temperature between 4 and 16 °C. Chlorophyll and lycopene levels were measured repeatedly over time and used to calibrate a kinetic model that describes how an autocatalytic enzyme system links chlorophyll breakdown to lycopene synthesis, including breakdown of lycopene precursor and lycopene itself. Increasing storage temperatures increased the reaction constant for lycopene synthesis more than that of chlorophyll breakdown for both tomato types. The reaction constants describing chlorophyll breakdown and lycopene synthesis were considerably larger, and the estimated enzyme levels lower for the round type. This allows round tomatoes to quickly resume lycopene synthesis after a cold storage period when enzyme levels are low. Lycopene breakdown was established for the round type while the cocktail type showed lycopene precursor breakdown. Chlorophyll breakdown and lycopene synthesis, as affected by storage temperature and tomato type, is covered well by the model for both tomato types. We hypothesise that the postulated enzyme system, responsible for the direct link between chlorophyll breakdown and lycopene synthesis, is due to STAY-GREEN proteins. Remittance VIS spectroscopy is, in combination with a parameter estimation tool, suited to screen tomato genotypes for intended colour transformation performance, or as tool in chloroplast to chromoplast transition studies.  相似文献

Quality of fresh-cut carambola (Averrhoa carambola L.) is related to many chemical and biochemical variables especially those involved with softening and browning, both influenced by storage temperature. To study these effects, a multivariate analysis was used to evaluate slices packaged in vacuum-sealed polyolefin bags, and stored at 2.5 °C, 5 °C and 10 °C, for up to 16 d. The quality of slices at each temperature was correlated with the duration of storage, O2 and CO2 concentration in the package, physical chemical constituents, and activity of enzymes involved in softening (PG) and browning (PPO) metabolism. Three quality groups were identified by hierarchical cluster analysis, and the classification of the components within each of these groups was obtained from a principal component analysis (PCA). The characterization of samples by PCA clearly distinguished acceptable and non-acceptable slices. According to PCA, acceptable slices presented higher ascorbic acid content, greater hue angles (°h) and final lightness (L-5) in the first principal component (PC1). On the other hand, non-acceptable slices presented higher total pectin content, PPO activity in the PC1. Non-acceptable slices also presented higher soluble pectin content, increased pectin solubilisation and higher CO2 concentration in the second principal component (PC2) whereas acceptable slices showed lower total sugar content. The hierarchical cluster and PCA analyses were useful for discriminating the quality of slices stored at different temperatures.  相似文献

This paper reports the development of image processing methods for the detection of superficial changes related to quality deterioration in ready-to-use (RTU) leafy spinach during storage. The experiment was performed on spinach leaves stored at 4.5 °C for 21 days (Set 1) and at 10 °C for 9 days (Set 2). Regarding Set 1, 75 units were evaluated beginning at time zero and after 7, 14, and 21 days of storage (treatments t1.0, t1.1, t1.2, and t1.3, respectively). In the case of Set 2, 24 samples were measured at time zero and after 3, 6, and 9 days (treatments t2.0, t2.1, t2.2, and t2.3, respectively). Multispectral images were acquired using a 3-CCD camera centered at the infrared (IR), red (R), and blue (B) wavelengths. Opportune combinations of these bands were calculated using virtual images, and a non-supervised classification was performed. A large number of spinach leaves belonging to Set 2 showed injuries due to the effects of in-pack condensation; thus, an image algorithm was developed to separate these defective leaves before applying the classification. For Set 1, Set 2 and all the calculated virtual images, the classification procedure yielded two image-based deterioration reference classes (DRCs): Class A, including the majority of the samples belonging to t1.0 and t1.1 (Set 1) and to t2.0 and t2.1 (Set 2) treatments and Class B, which comprised mainly the samples belonging to t1.2 and t1.3 (Set 1) and to t2.2 and t2.3 (Set 2) treatments. An internal validation was performed, and the best classification was obtained with the virtual images based on R and B bands. For each sample, camera classification was evaluated according to reference measurements (visible (VIS) reflectance spectra and CIE L*a*b* coordinates); in all cases, VIS reflectance values corresponded well with storage days, and Classes A and B could be considered homogenous with regards to L* and a* values. Taken together, these results confirmed that a vision system based on R and B spectral ranges could constitute an easy and fast method to detect deteriorating RTU packed spinach leaves under different refrigeration conditions.  相似文献

Hexanal vapour and intact tomatoes were used as models to assess the opportunities for control of Botrytis cinerea rots by controlled release of organic vapours. Hexanal vapour concentrations in the ranges 5–270 μL L−1 were applied continuously or as a single dose at the start of storage. The postharvest microbiological, physiological and quality attributes of control and hexanal treated tomatoes were investigated during storage for 7 days at 20 ± 1 °C and ∼99% RH. Continuous hexanal exposure effectively suppressed grey mould with the minimum inhibitory concentration (MIC) being 40–70 μL L−1; the single-dose treatment showed minimal antifungal activity. During continuous exposure at the MIC the fruit respiration rate was increased ∼50% and reddening was slowed. No clear trend was observed in ethylene production and treated fruit did not differ from the controls in firmness or mass loss. The controlled release of low concentrations of hexanal vapour into a packaging headspace appears a feasible mechanism for prolonging tomato storage life.  相似文献

The use of a heterologous fruit microarray system to identify differentially expressed genes between strawberry cultivars with different responses to 20 kPa CO2 (balance air) during storage has been evaluated. Specifically, a tomato cDNA microarray containing approximately 12,000 ESTs (representing 8700 unigenes) was hybridized with strawberry cDNA populations to compare gene expression differences between two cultivars: ‘Jewel’, a cultivar that accumulates acetaldehyde and ethanol in response to elevated CO2 during storage, and ‘Cavendish’ that does not accumulate these compounds under the same storage conditions. A set of 80 tomato gene sequences gave differential hybridization signals between the two strawberry cultivar probes when they were stored in CO2 for 48 h, suggesting homologous strawberry genes with differential expression. Within each cultivar, when RNA from fruit stored in air was compared with that from fruit stored in CO2, 168 sequences suggested differential expression in ‘Jewel’, but only 51 were differentially expressed in ‘Cavendish’ fruit. Strawberry genes with putative homologies to enzymes involved in cell wall metabolism, ethylene action and stress were implicated by the tomato array. This research not only demonstrates the usefulness of using a heterologous microarray platform from a model species (tomato) to study a complex process in strawberry, a crop of economic importance, for which genomic resources are still limited, but also provides a foundation for investigating the molecular basis of responses to elevated CO2 during strawberry postharvest storage.  相似文献

Summary A RAPD marker, linked to the Tm-2 agene engendering TMV resistance in tomatoes, was identified. The validity of the RAPD marker was corroborated by screening several tomato varieties, and correctly identifying those which carried Tm-2 a, as well as by F2 segregation analysis. There is a need to develop alternative harvest indexes for black skinned plums. The aim of this research was to analyze and compare the most commonly used indexes for deciding the harvest date for Japanese plum, and evaluate the effectiveness of new approaches for studying maturation. The ripening process was monitored on-tree and during postharvest in a non-destructive way, through the absorbance of chlorophyll (IAD), the compression strength of the intact fruit, and the traditional parameters associated with ripening. Fruit were harvested at commercial ripeness and “tree-ripe”, and were stored for 10 d at 22 °C and 75-80% RH. The IAD decreased during the last phase of development of the fruit on-tree, and it was related to the common indexes used for plums. ‘Angeleno’ showed a decrease of the IAD 24% lower than that observed for ‘Autumn beaut’. The IAD versus time showed the highest coefficients of determination when compared with the soluble solids concentration (SSC), flesh firmness, hue (H°) and chroma (C*) of the skin. The compression strength of the intact fruit was associated with flesh firmness, and to a lesser extent with the SSC for ‘Angeleno’, whereas for ‘Autumn beaut’ higher correlations for both the SSC and flesh firmness were observed. The C* of the skin on ‘Autumn beaut’ showed an erratic change during ripening; by contrast, for ‘Angeleno’, this index showed a clear trend. During postharvest it was observed that for ‘Angeleno’ fruit picked at commercial ripeness, the rate of change of the IAD was practically the same as observed on-tree, while for ‘Autumn beaut’ the rates of change on-tree and at postharvest were 0.075 IAD d−1 and 0.024 IAD d−1, respectively. For the “tree-ripe” fruit, the rate of change was practically the same for both cultivars. Similar trends were observed for the compression strength.  相似文献

Low temperature storage alters tomato textural properties, resulting in unusual changes in firmness, while ripening during cool storage can confound these chilling-induced textural changes. Inconsistent results have been reported related to chilling-induced alteration in tomato texture. The effects of chilling on tomato texture were investigated using fruit stored at 2.5 or 6 °C (chilled) or 20 °C (non-chilled) for 27 d before transfer to 20 °C. Given that many factors influence the firmness of chilling-injured tomato and different measurement methods indicate different characteristics of tomato texture, the present study employed a range of textural measurement techniques in order to interpret chilling-induced textural changes in tomatoes during long term storage. Analysis of data from a range of textural methods indicated that storage at 6 °C mainly induced loss of turgor whereas 2.5 °C induced loss of tissue integrity along with turgor loss. Plotting textural changes against colour as an indicator of ripening allowed a clearer definition of chilling-induced textural change.  相似文献

Sesquiterpene carboxylic acids (SCA) from Lycopersicon hirsutum f. typicum Humb, & Bonpl, accession LA 1777 confer host‐plant resistance to Helicoverpa zea (Boddie) and Spodoptera exigua (Hübner), two Lepidopteran (Noctuidae) insect pests of the cultivated tomato. L. esculcntum Mill. Hybrids were made between LA 1777 and two accessions of insect‐susceptible tomatoes that do not produce SCA, L. hirsutum LA 1033 and the L. L. esculentum cultivar Chico III, F2 and backcross progeny of both crosses were evaluated for variation in amounts of total SCA in replicated field and greenhouse plantings. Analysis of variance of total SCA in a set of F2 plants of the cross LA 1033 × LA 1777 demonstrated significant variation in SCA attributable to genotype, environment and their interaction. Segregation for high levels of SCA in the populations suggests polygenic inheritance. Broad sense heritability was 0.84, which indicates that phenotypic selection for plants with high SCA is feasible in a backcross‐breeding programme for the introgression of SCA‐mediated insect resistance into tomato cultivars.  相似文献

This article studies the efficacy of an edible coating based on Aloe vera gel at four different concentrations (0, 1, 5, 15% (v/v)) in maintaining the quality of fresh-cut kiwifruit. The kiwifruit slices were packaged under passive atmosphere and stored at 4 ± 1 °C. Quality attributes such as colour and texture (firmness and texture profile analysis), titratable acidity, total soluble solids, pectin content, microbial load and sensory parameters were evaluated during storage. In general, Aloe vera coating reduced respiration rates and microbial spoilage in sliced kiwifruit. After seven days of storage, the mesophilic load dropped by approximately one logarithmic unit for slices coated with 15% and 5% Aloe vera. Total pectin depolymerization was also lower in the treated samples and the texture of the uncoated samples deteriorated more rapidly than the treated slices during storage. Furthermore, due to the atmospheric composition and the microbial load, the quality of the control samples declined after six days of storage. Our results show that an Aloe vera coating improved the quality of stored kiwifruit slices. The best results obtained in the instrumental texture profile and in the preference panel test were with the 5% coating, indicating that this may be a healthy alternative coating for fresh-cut kiwifruit.  相似文献

Coating of tomato fruit with gum arabic has been found to delay the ripening process and maintain the antioxidant capacity. Gum arabic in aqueous solutions of 5, 10, 15 and 20% was applied as an edible coating to green-mature tomatoes which were stored at 20 °C and 80–90% RH for 20 days. Fruit coated with 10% gum arabic delayed the ripening process by slowing down the rate of respiration and ethylene production and also maintained total antioxidant capacity, lycopene content, total phenolics and total carotenoids during storage as compared to the uncoated control and fruit treated with 5% gum arabic concentration. The results suggest that by using 10% gum arabic as an edible coating, the ripening process of tomatoes can be delayed and the antioxidant can be preserved for up to 20 days during storage at 20 °C without any negative effects on postharvest quality.  相似文献

The agene of the corky root disease of Dutch glasshouse tomatoes is a non-sporulating fungus of the group Mycelia sterilia. The breeding programme for corky root resistance is based on the resistance derived from Lycopersicum glandulosum. To test the best way of backcrossing we made backcrosses in all possible combinations between tomato, triploid F 1 hybrid (tomato × Lycopersicum glandulosum) and Lycopersicum glandulosum. Our experiments showed that the shortest way from the wild resistant Lycopersicum back to the commercial type of the tomato possessing the desired resistance was backcrossing the F 1 triploid hybrid to Lycopersicum glandulosum.  相似文献

Severe outbreaks of bipartite begomoviruses (family Geminiviridae) have been observed on tomatoes after the introduction of the whitefly Bemisia tabaci (biotype B) in Brazil. The Lycopersicon esculentum line ‘TX 468-RG’ was identified as one of the best sources of broad-spectrum resistance to species comprising the tomato-infecting Begomovirus complex in Brazil. The genetic basis of resistance to one Begomovirus isolate was investigated using populations from the cross between ‘TX 468-RG’ (P1) and the susceptible line ‘Ohio 8245’ (P2). Parental lines, F1, backcross (BC) to P1 and BC to P2 and F2 generations were inoculated at the two true-leaf stage using 20 viruliferous whiteflies per plant. Assessment was done two weeks after inoculation based upon visual analysis of symptom expression. The ratio of resistant to susceptible plants closely fit to a single recessive gene (locus) model. The sequence analysis indicated that the Begomovirus isolate used in this assay was closely related to the bipartite Tomato chlorotic mottle virus. Therefore, this gene/locus, was tentatively named tcm-1 (tomato chlorotic mottle virus resistance-1). This locus has been transferred to distinct tomato cultivars and levels of resistance similar to that of ‘TX 468-RG’ were observed in advanced (F8 and F9) generations. In addition, breeding lines carrying the tcm-1 locus were also resistant to other Brazilian bipartite tomato-infecting Begomovirus species.  相似文献
