Data on 135 young bulls from a two-breed group diallel experiment involving double-muscled (DM) and normal (N) cattle were analyzed to obtain estimates of heterosis, maternal and direct effects for carcass traits. When carcass traits were adjusted to a constant age at slaughter (398.5 d), significant positive heterosis was observed for slaughter and carcass weights, carcass length and s.c. fat thickness. Maternal effect was relatively unimportant for the traits studied. The progeny of N sires and DM straightbreds were heavier at slaughter and had higher carcass weight, s.c. fat thickness and carcass length (P less than .01), whereas DM-sired progeny and DM straightbreds had higher dressing percentage (P less than .05) and cutability (P less than .01). Heterosis was significant for all the 10-11-12th rib joint dissection traits except for percentage of muscle. Although there was negative heterosis for percentage of bone, there was positive heterosis for rib joint weight, fat weight and percentage, muscle weight and muscle:fat and muscle:bone ratios. For direct effect and straightbred differences, N-sired progeny and N straightbreds, respectively, had significantly larger values for rib joint weight, fat weight and percentage and bone weight. The DM-sired progeny and DM straightbreds had larger values for percentage of muscle, muscle:fat and muscle:bone ratios. When the carcass and dissection traits were adjusted to a constant carcass (303.7 kg) and rib joint (4,812 g) weight, respectively, the results were similar to those observed on age constant basis except for rib eye area, for which DM-sired progeny and DM straightbreds had larger values.  相似文献

To investigate the predicted regression model for beef carcass yield and percentage of Liaoyu White cattle,60 cattles were slaughtered and determined 10 indicators about beef carcass yield and percentage,including carcass weight (X1),the 5th rib thickness (X2),product of 5th to 6th rib eye width and height (X3),5th to 6th rib eye area (X4),the 12th rib thickness (X5),product of 12th to 13th rib eye width and height (X6),12th to 13th rib eye area (X7),the weight of kidney,heart and diaphragm fat (X8),hind leg circumference (X9) and thigh muscle depth (X10).Then correlation and regression analysis between 10 indicators and beef carcass yield and percentage were taken using SPSS 19.0.The results showed that the correlation were the highest between X1 and beef carcass yield,X8 and beef carcass yield percentage.Besides,there were two credible regression model for beef carcass yield of Liaoyu White cattle:① Beef carcass yield (product of 12th rib eye width and height)=0.809X1+0.158X6+0.857X8-13.967 (R2=0.986);② Beef carcass yield (12th rib eye area)=0.779X1+0.318X7+0.933X8-17.779 (R2=0.990).  相似文献

为了快速且准确的预测辽育白牛胴体产肉量,进而建立完善的胴体分级体系,本试验对60头辽育白牛进行屠宰胴体分割试验,分别测量了胴体重(X1),第5肋侧厚度(X2),第5~6肋眼肌宽高乘积(X3),第5~6肋眼肌面积(X4),第12肋侧厚度(X5),第12~13肋眼肌宽高乘积(X6),第12~13肋眼肌面积(X7),肾脏油、心脏油和膈肌油之和(X8),后腿围(X9)和大腿肌肉厚(X10)等与产肉量、产肉率相关的10项指标,利用SPSS 19.0软件对数据进行相关分析和线性回归分析。结果显示,X1、X8与产肉量和产肉率相关性最强,依此推导出2个可信度高、实践中方便应用的产肉量预测方程:①产肉量(眼肌宽高乘积)=0.809X1+0.158X6+0.857X8-13.967 (R2=0.986);②产肉量(眼肌面积)=0.779X1+0.318X7+0.933X8-17.779 (R2=0.990)。  相似文献

One side of each of 20 lamb carcases was dissected into muscle, bone and fat. The other side of each lamb was cross-sectioned at 11 sites. Photographs of cross-sections were scanned with an image analyser (“Classimat”) to measure muscle, bone and fat at each site.Estimations of composition of the carcase were compared with the dissection yield.With the results of all 11 scans available in stepwise multiple regressions, 86%, 73% and 98% of the variation in the weight of muscle, bone and fat respectively was explained; and 99%, 37% and 91% respectively of the variation in percentage muscle, percentage bone and percentage fat was explained.With the results of five selected scans available in stepwise multiple regressions, 70%, 73% and 86% of the variation in the weight of muscle, bone and fat respectively was explained; and 89%, 37% and 91% of the variation in percentage muscle, percentage bone and percentage fat was explained.It is concluded that the technique could be developed as a useful method of assessing the composition of carcases of groups of experimental animals.  相似文献

This study investigated the carcase composition of Taiwan simulated native chickens at different stages of growth. The results indicated that the carcases of male chickens exhibited significantly larger protein mass and water mass than those of females during weeks 7 to 20; as was the ash mass during weeks 8 to 20. However, the fat mass of the carcases of female chickens was larger than that of males during weeks 14 to 20. Separate regression equations were derived for the relationship between protein mass, fat mass, ash mass and water mass and both carcase weight and age of both male and female chickens.  相似文献

Data collected from steer and bull progeny, fed to a constant final feedlot weight over 11 yr, were used to estimate heterosis in post-weaning feedlot growth and carcass traits in two-way and three-way rotational crossing systems and a breed composite from crossing Hereford, Angus and Charolais breeds. Steer and bull progeny from matings of beef x Brown Swiss-cross sires and dams also were compared with the straight beef breeds and beef crosses. Growth traits evaluated were initial weight on test, 112-d weight, total feedlot average daily gain and total days from initial to final weight. Carcass traits included hot carcass weight, dressing percentage, rib eye area, 12th-rib fat thickness, kidney, pelvic and heart fat, yield grade and marbling score. Heterosis estimates for calves of all crossing systems were significant for initial and 112-d weight and for saving of days in the feedlot, but not for average daily feedlot gain. Heterosis estimates were small and nonsignificant for most carcass traits except for fat traits in specific crosses. Males from Hereford and Angus sires mated to Angus x Hereford dams had higher (P less than .10) backfat than did the parental average. Male progeny from Charolais ranked higher (P less than .10 to P less than .01) than calves from Hereford and Angus sires for most growth traits. Progeny from Charolais sires were more desirable (P less than .10 to P less than .01) for traits related to cutability, but they had less (P less than .05 to P less than .01) marbling than calves of Angus sires.(ABSTRACT TRUNCATED AT 250 WORDS)  相似文献

This study was conducted to validate the 9-11th rib cut to estimate the chemical composition of the carcass and of the empty body weight (EBW) of Zebu cattle. Nineteen Zebu steers with initial body weight of 266.5±32.2 kg were used. Four steers were slaughtered at the beginning to compose the reference group; three were fed at maintenance level, and the remaining were allotted to different planes of nutrition (5.0%, 35.0% and 65.0% concentrate levels in the diets, DM basis). The 9-11th rib cuts and half of the carcasses were dissected and the weights of fat, muscle and bone tissue were recorded. The components fat, muscle and bone tissue from the 9-11th rib cut and from the half carcass were sampled and chemical analysis of fat, protein, water, ash and minerals determined. The 9-11th rib cut satisfactorily estimated the physical composition of the carcass, but not the chemical composition. The 9-11th rib cut appropriately estimated the chemical composition of the carcass in terms of protein, water, ash and macro mineral content. For the percentage of fat and Ca, an over- and underestimation of 7.84% and 13.34%, respectively, were detected. Regression equations were fitted to estimate the percentage of fat and Ca in the carcass, and that of protein, water and ash in the whole empty body.  相似文献

Commercial slaughter steers (n = 329) and heifers (n = 335) were selected to vary in slaughter frame size and muscle thickness score, as well as adjusted 12th rib fat thickness. After USDA carcass grade data collection, one side of each carcass was fabricated into boneless primals/subprimals and minor tissue components. Cuts were trimmed to 2.54, 1.27, and .64 cm of external fat, except for the bottom sirloin butt, tritip, and tenderloin, which were trimmed of all fat. Four-variable regression equations were used to predict the percentage (chilled carcass weight basis) yield of boneless subprimals at different fat trim levels (.64, 1.27, and 2.54 cm) as influenced by sex class, frame size, muscle score, and adjusted 12th rib fat thickness. Carcass component values, total carcass value, carcass value per 45.36 kg of carcass weight, and live value per 45.36 kg of live weight were calculated for each phenotypic group and external fat trim level. Carcass fatness and muscle score had the most influence on live and carcass value (per 45.36 kg weight basis). Carcasses with .75 and 1.50 cm of fat at the 12th rib were more valuable as the trim level changed from 2.54 cm to .64 cm; however, for carcasses with 2.25 cm of fat at the 12th rib, value was highest at the 2.54 cm trim level. Value was maximized when leaner cattle were closely trimmed. There was no economic incentive for trimming light-muscled or excessively fat carcasses to .64 cm of external fat.  相似文献

Controlling microbial contamination on beef and lamb meat during processing   总被引:2,自引:0,他引:2  
SUMMARY The microbiological quality of carcases, meat and environmental surfaces was evaluated in commercial boning rooms processing beef and lamb. There was considerable variation in the level of microbial contamination on both carcases and meat, with counts ranging from less than 20 to 108/cm2 on carcases and to 2 times 107/cm2 on meat. The level of microbial contamination on meat was influenced by the level of carcase contamination at boning and by the boning process itself. Carcase contamination was the major determinant of microbiological quality, as more than 70% of carcases had microbial counts greater than 103/cm2. Cutting boards were a major source for microbial dissemination during boning, particularly when carcase counts were less than 103/cm2. If carcases were heavily contaminated, the contamination of processing surfaces was irrelevant in determining microbial loads on meat. Where carcase contamination was at low to moderate levels, the contribution of the boning process to the contamination on meat assumed increased significance. Under these conditions, improved sanitation of cutting surfaces in the boning room resulted in a significant reduction in microbial contamination on the surface of meat. These results can form the basis for ensuring that improvements made in carcase management before boning, to improve microbiological quality, will be preserved through attention to cutting board hygiene during boning.  相似文献

本试验旨在探讨玉米加工利用的适宜方法,以提高玉米的利用效率。选用120头利木赞杂交阉牛(590 kg±10 kg),随机分为4组,分别饲喂蒸汽压片(A)、粉碎后过七目筛(B)、十目筛(C)和十四目筛(D)的玉米型日粮,研究日粮玉米不同加工方法对阉牛育肥性能的影响。结果表明,玉米不同加工方式对肉牛的生产性能和大多数胴体指标都没有显著影响(P>0.05)。蒸汽压片玉米组的胴体产肉率高于十目筛组,骨重低于十目筛组(P<0.05)。十四目筛组的高档肉块比例和上脑重显著高于其它3个处理组,牛柳重显著低于其它处理组,七目筛组西冷重高于十目筛组(P<0.05)。养殖效益则以十目筛组阉牛最高。  相似文献

Angus bulls (n = 20) from three pure-bred herds in Georgia were acquired to determine the impact of selecting sires based on phenotypic yearling ultrasound intramuscular fat percentage (UIMF) or UIMF EPD on marbling score of steer progeny. Each year in each herd, pairs of bulls were selected to create large differences based on their age adjusted phenotypic yearling UIMF measurements. The average UIMF, weighted by number of progeny per sire, was 3.75% (SD = 1.10%) and 1.70% (SD = 0.53%) for high UIMF (HU) and low UIMF (LU) bulls, respectively. All available ultrasound measurements collected in the purebred co-operator herds were combined with other ultrasound records collected by the American Angus Association for the computation of genetic values for ultrasound fat thickness, ribeye area, and intramuscular fat percentage. Each year bulls were randomly mated to 14 to 30 commercial Angus females. Carcass weight, fat thickness at the 12th rib, ribeye area at the 12th rib, marbling score, yield grade, and quality-grade measurements were collected on 188 steer progeny. Carcass data were linearly adjusted to 480 d of age at slaughter. Steer progeny sired by HU bulls had higher age-adjusted marbling score and quality grade (P < 0.05), and smaller age-adjusted ribeye area (P < 0.05) than steer progeny sired by LU bulls. No significant differences between phenotypic UIMF lines were found for age-adjusted fat thickness (P = 0.84) and yield grade (P = 0.33) in the steer progeny. The regression of age-adjusted carcass marbling score and quality grade of the steer progeny on ultrasound intramuscular fat percentage EPD of the sires produced highly significant regression coefficients of 90.50 and 49.20, respectively. Thus, yearling Angus bulls selected for high-phenotypic UIMF and UIMF EPD can be expected to produce steer progeny with significantly higher amounts of marbling and quality grade. It also appears that marbling can be increased without corresponding increases in external fat thickness and yield grade.  相似文献

Angus-cross steers (n = 198; 270 kg; 8 mo) were used in a 3-yr study to assess the effects of winter stocker growth rate and finishing system on 9-10-11th-rib composition, color, and palatability. During the winter months (December to April), steers were randomly allotted to 3 stocker growth rates: low (0.23 kg/d), medium (0.45 kg/d), or high (0.68 kg/d). At the completion of the stocking phase, steers were allotted randomly within each stocker growth rate to a high concentrate (CONC) or to a pasture (PAST) finishing system. All steers were finished to an equal time endpoint to minimize confounding due to animal age. At the end of the finishing phase, steers were transported to a commercial packing plant for slaughter and a primal rib (NAMP 107) was removed from 1 side of each carcass. The 9-10-11th-rib section was dissected into lean, fat, and bone, and LM samples were analyzed for palatability and collagen content. Hot carcass weight and 9-10-11th-rib section weight were greater (P = 0.01) for high than low or medium. Winter stocker growth rate did not alter 9-10-11th rib composition. The percentage of fat-free lean, including the LM and other lean trim, was greater (P = 0.001) for PAST than CONC. Total fat percentage of the 9-10-11th-rib section was 42% lower (P = 0.001) for PAST than CONC due to lower percentages of s.c., intermuscular, and i.m. fat. The percentage of total bone in the 9-10-11th-rib section was greater (P = 0.001) for PAST than CONC. Finishing beef cattle on PAST increased (P = 0.001) the percentage of lean and bone and reduced (P = 0.001) the percentage of fat in the carcass based on published prediction equations from 9-10-11th rib dissection. Stocker growth rate did not influence the objective color scores of LM or s.c. fat. Longissimus muscle color of PAST was darker (lower L*; P = 0.0001) and less red (lower a*; P = 0.002) than CONC. Juiciness scores were greater (P = 0.02) for CONC than PAST. Initial and overall tenderness scores as well as Warner-Bratzler shear force values did not differ (P > or = 0.28) among finishing systems. Beef flavor intensity was lower (P = 0.0001) and off-flavor intensity greater (P = 0.0001) for PAST than CONC. Total collagen content was greater (P = 0.0005) for PAST than CONC; however, there were no differences in percentage soluble or insoluble collagen. Growth rate during the winter stocker period did not influence rib composition, color, or beef palatability. Finishing steers on forage reduced fat percentages in the rib and LM without altering tenderness of beef steaks.  相似文献

1. Unlike mammals, uricotelic species, such as the duck, cannot synthesise endogenous arginine (Arg). This study was conducted to test the hypothesis that dietary L-Arg supplementation might regulate body fat deposition in ducks without affecting their fast growth rate. 2. A total of 160 21-d-old male and female White Pekin ducks were assigned randomly to two treatments: a non-supplemented control and supplementation at 10 g/kg L-Arg of a maize and soybean meal-based diet. 3. The 3-week feeding trial showed that the addition of L-Arg had no significant effect on feed intake, but significantly increased body weight gain by 5·2 %, breast muscle weight relative to live body weight by 9·9%, carcase crude protein content by 9·2%, ether extract content in breast muscle by 11·9%. Arg supplementation significantly decreased skin with fat and abdominal fat pad contents by 7·6% and 4·9% respectively and the ether extract content of carcase by 7·2%. 4. The results of this study indicate that a diet with 10 g/kg supplemental L-Arg could reduce the fat deposition of carcase and abdominal adipose cell size (diameter and volume), enhance intramuscular fat in breast muscles, as well as increase muscle and protein gain. The decreased fat depot in the carcase may be attributed to a reduction of hepatic lipogenic enzyme activity.  相似文献

The performance, intake, feed efficiency, and carcass traits of beef cattle from different gender profile were assessed. Fifteen animals (five steers, five spayed heifers, and five intact heifers) with ±250 kg of initial body weight were randomly assigned in individual pens and fed the same diet for 106 days. At the end of the trial, all the animals were slaughtered and the pH, temperature, and weight of the carcass were recorded. The right side of each carcass was then separated into chuck, shoulder, flank sirloin, and round for evaluation of commercial cuts yield. The left carcass sides were ribbed between the 12th and 13th ribs where the rib eye area and fat thickness measurements were taken. The 9th–11th rib section was removed from the left half carcass and then dissected into muscle, fat, and bones in order to estimate carcass composition. Gender had no effect (P > 0.05) on performance, intake, digestibility of dry matter and all the nutrients evaluated, feed efficiency, and carcass characteristics. It can be concluded that steers and heifers (spayed or not) have the same potential to produce beef. From a productive and welfare standpoint, there is no reason to spay heifers.  相似文献

Hot carcasses from 220 steers (progeny of Hereford or Angus dams mated to Angus, Charolais, Galloway, Gelbvieh, Hereford, Longhorn, Nellore, Piedmontese, Pinzgauer, Salers, or Shorthorn sires) were used to develop equations to estimate weights and percentages of retail product (RP) and trimmable fat (TF) yields. Independent variables examined were 1) 12-13th rib fat probe (12RFD), 2) 10-11th rib fat probe (10RFD), 3) external fat score (EFS), 4) percentage of internal fat estimated hot (H%KPH), 5) hindquarter muscling score (HQMS), and 6) hot carcass weight (HCW). Right sides of the carcasses were fabricated into boneless retail cuts, trimmed to .76 cm of subcutaneous and visible intermuscular fat, and weighed. Cuts were trimmed to 0 cm of subcutaneous and visible intermuscular fat and reweighed. Multiple linear regression equations containing 12RFD, EFS, H%KPH, and HCW accounted for 95 and 89% of the variation in weight of total RP at .76 and 0 cm of fat trim, respectively. When weights of RP from the four primal cuts (.76 and 0 cm of fat trim) were the dependent variables, equations consisting of 12RFD, EFS, H%KPH, and HCW accounted for 93 to 84% of the variation. Hot carcass equations accounted for 83% of the variation in weight of total TF at both .76 and 0 cm of fat trim. Furthermore, equations from hot carcass data accounted for 54 and 51% of the variation in percentage of total RP and 57 and 50% of the variation in percentage of RP from the four primal cuts at .76 and 0 cm of fat trim, respectively. Hot carcass prediction equations accounted for 72% of the variation in percentage of total TF at both fat trim levels. Hot carcass equations were equivalent or superior to equations formulated from chilled carcass traits.  相似文献

1.?The aim of the present study was to evaluate the yield and tissue composition of carcases from White Ko?uda® ganders (males) and geese (females), and to determine the relationships between body measurements and carcase tissue composition.

2.?The experiment was carried out on 200 geese (100 males and 100 females) reared to 14 weeks of age and then fed with oats for the next 3 weeks. Live body weight and body dimensions, slaughter yield, weight and percentage of muscles and skin with fat in carcase were measured and correlation coefficients were calculated between body measurements and slaughter values and carcase tissue composition.

3.?White Ko?uda® geese reared to 17 weeks of age were characterised by high body weight (6705 g) and good muscle yield (29·9%). Males had greater body weight, musculature and fatness than females. Sternum length and breast circumference, width and depth were good indicators of carcase muscle weight in 17-week-old geese.

4.?Negative coefficients of correlation between sternum length and weight of skin with subcutaneous fat indicate that increased selection pressure in pedigree flocks of geese on sternum length should be paralleled by reduced carcase fatness in these birds.  相似文献

One hundred twenty crossbred beef steers averaging 377 kg were used in a 2 x 4 factorial experiment to determine the dose-response effects of recombinant bovine somatotropin (rbST) implants on growth performance and carcass characteristics. The implant dosages were 0 (sham), 40, 80, or 160 mg/wk administered s.c. in the tailhead region on a weekly basis throughout the experiment. The steers were fed a high-concentrate diet, which contained either a degradable (DP; soybean meal) or an escape (EP; corn gluten and blood meal) protein source. No dietary protein effect or dietary protein x rbST level interactions were detected. Recombinant bST decreased both DMI (P less than .10) and feed/gain (P less than .05) in a linear dose-dependent manner. Dosage of rbST did not significantly affect (P greater than .10) ADG or final weight of the steers. Recombinant bST decreased backfat depth (P less than .10), marbling score (P less than .05), and quality grade (P less than .10) and increased yield grade (P less than .10) in a linear dose-dependent manner. Soft tissue composition of the 9-10-11th rib section was altered (P less than .01) by rbST administration in a linear dose-dependent manner. The percentage of protein in the rib section was increased by 9.4% and fat was decreased by 11.8% at the 160 mg/wk rbST level compared with the sham-implanted steers. Three experienced persons evaluated 158 carcasses 24 h postmortem for USDA yield grade (YG) and quality grade factors, nine subcutaneous (SC) fat indicators, and four intermuscular (IM) fat indicators. Forty sides (YG 1.1 to 3.8) were selected for determination of chemical composition, two measures of cutability, and total IM fat from the round, loin, rib, and chuck. The IM fat estimates at the 12th rib, rib-plate juncture, and 5th rib were correlated with percentage of chemical fat (r = -.72, -.70, and -.55, respectively). Simultaneous consideration of YG factors accounted for 61% of the variation in chemical fat. Substituting the IM fat estimate at the 12th rib for adjusted fat thickness (AFT) in the equation explained 60% of the variation in percentage of chemical fat. An equation containing two IM fat estimates, marbling score and longissimus muscle area explained 68% of the variation in chemical fat. Simultaneous consideration of the YG factors accounted for 59% of the variation in boneless, closely trimmed (6 mm SC fat and no IM fat) retail cuts from the round, loin, rib, and chuck. Substituting the IM fat estimate at the 12th rib for AFT in the equation accounted for 65% of the variation. These data from a fairly uniform set of steer carcasses show that percentage of chemical fat and cutability can be reliably predicted from IM fat estimates and other traits that can be visually estimated on hot-fat trimmed carcasses.  相似文献

1. The roux plumage sex-linked recessive gene may be used for early sexing of Japanese quail in crossbreeding production systems with wild-type and roux lines. However, associated effects of the gene on carcase and meat composition need to be assessed. 2. Quail carcases from pure Line K males and females (100% K), a heavy meat line which was used as the recipient line for the introgression of the roux gene, and from same-age roux or wild-type females from the second generation of introgression (75% K) were dissected. The effects of sex, line and plumage colour on carcase components and on protein and lipid contents of various tissues were estimated. 3. Expected sex differences in carcase weights were obtained, with marginally higher values for females. However, weights of parts and carcase yield (ratio of empty carcase weight without head, neck and feet over live body weight) were similar for both sexes in pure Line K which had a 68% carcase yield. Lipid contents in leg meat were higher in males (3.1%) than in females (2.7%). 4. The roux gene did not seem to have any major impact on carcase parts or composition. However, in roux birds, leg skin was marginally higher in lipids and pectoralis major lower in proteins than in wild-type ones.  相似文献
