Freshwater fishes contain long chain omega-3 and omega-6 polyunsaturated fatty acids (PUFAs) of highest nutritional value. PUFAs in fish are susceptible to oxidative damage during processing and subsequent storage. Sardines (Rastrineobola argentea) are an important fish species of Lake Victoria, constituting 72.3% of the total landings by weight on the Tanzanian side of the lake. Fatty acid profiles and lipid oxidation status of sun-dried, deep-fried, and smoked sardines were investigated. Lipid oxidation was assessed by peroxide value, thiobarbituric acid reactive substances (TBARS), and free fatty acids. Fatty acids were analyzed by gas chromatography with flame ionization detector. The three omega-3 PUFAs: docosahexaenoic acid (C22:6n-3), docosapentaenoic acid (C22:5n-3), and eicosapentaenoic acid (C20: 5n-3) contributed 57–60, 63, and 38% of PUFAs in sun-dried, smoked, and deep-fried sardines, respectively. Lipid oxidation reactions were more pronounced in sardines dried on sand and rocks, with TBARS values 97.87 and 84.18 µmolMDA/kg, respectively. The polyene index was significantly lower (p < 0.05) in deep-fried sardines, indicating lower retention of PUFAs in the product. Lake Victoria sardines are a rich source of omega-3 PUFAs. PUFAs in sun-dried sardines are prone to oxidative damage. Smoking resulted in relatively higher retention of omega-3 fatty acids in products.  相似文献

Changes in the fatty acid composition of 13 bled and blast-frozen U.S. West Coast albacore tuna (Thunnus alalunga) were determined following custom-canning and 5 weeks of canned storage. In accordance with typical custom-canning procedures, no additional packing materials were used, and the product did not undergo a precooking step. Raw albacore tuna was found to be rich in n-3 polyunsaturated fatty acids (PUFAs), with an average of 9.1% (% wt of total fatty acids) EPA and 33.8% DHA. Canning and short-term storage did not cause major fluctuations in the fatty acid profiles of the albacore tuna, with no significant changes in the total fractions of saturated fatty acids (30–31%), monounsaturated fatty acids (19%), PUFAs (50%), or n-3 PUFAs (46–47%). On a tissue weight basis, U.S. West Coast albacore tuna was found to contain high levels of total n-3 PUFAs, with 3.3 g/100 g tissue in raw tuna and 4.0–4.1 g/100 g tissue in products that were canned and stored for 5 weeks.  相似文献

Proximate composition, amino acid, fatty acid composition, and contaminants (As, Cd, Hg, and Pb) of the kisslip cuttlefish Sepia lycidas were determined and compared with the recommendations and maximum allowed levels. The ratio of essential amino acids (EAA) to nonessential amino acids (NEAA) was 0.82. All of the amino acid scores were > 100, except for valine (93), and the highest essential amino acid score was obtained for tryptophan (327). The fatty acids profile was dominated by polyunsaturated fatty acids (PUFA; 45.01% of total fatty acids), and docosahexaenoic acid (DHA; 24.54% of total fatty acids) was the dominant fatty acid. S. lycidas was rich in n-3 PUFA, and the ratio of n-3/n-6 PUFA was 2.48. Regarding contaminants, As, Cd, and Pb concentrations in S. lycidas were 2.2, 0.28, and 0.02 mg kg?1, respectively. The fatty acid compositions of wild female northern pike (Esox lucius L.) and their principle prey species were compared to assess the extent to which pike modify the relative abundance of dietary fatty acids during assimilation and to indicate the optimum dietary content of essential fatty acids (EFAs) for pike. Only minor differences existed between the estimated whole body fatty acid composition of pike and diet fatty acid composition as calculated from the contribution of each prey species to the pike's diet. Saturated fatty acids comprised a slightly higher percentage of diet lipids (25% wt) than of pike lipids (21% wt) whereas monounsaturated fatty acids were less abundant in diet lipids (26% wt) than in pike (29% wt). Percentages of total polyunsaturated fatty acids (PUFAs), n - 3 fatty acids, and n - 6 fatty acids were approximately 43, 30, and 13% wt respectively and differed by less than 1% wt between pike and diet lipids. Among individual PUFAs, the largest differences occurred in 20:5 (n-3) and 22:6(n-3) which comprised, on average, 9.6 and 14.7% wt respectively of diet lipids and 5.9 and 18.3% wt respectively of pike lipids. The close similarity in fatty acid composition between pike and their diet suggests that pike may have limited abilities to elongate and desaturate 18 carbon PUFAs and may require specific long chain PUFAs in the diet. The n-3 PUFA content of the pike's natural diet may exceed the minimum EFA requirements of better studied species such as rainbow trout and turbot.  相似文献

The lipid content and fatty acids profile of different tissues of Holothuria tubulosa and H. polii were analyzed to assess the suitability of the central Mediterranean species as a potential marine resource for fatty acids, in particular omega-3 polyunsaturated fatty acids (n-3 PUFAs). Simultaneously, their important indices for human health were evaluated. Gonad and respiratory tree had the highest lipid content, while the body had the lowest values. The results showed significant differences between species and among the different portions analyzed. Internal tunic and longitudinal muscle of H. tubulosa exhibited the highest PUFA proportion (55.3 and 46.4%, respectively). Eicosapentaenoic acid (EPA, C20:5n-3) and arachidonic acid (ARA, C20:4n-6) were the most abundant PUFAs in both species, with a favorable n-3/n-6 ratio in all tissues. The atherogenic and thrombogenicity indices and hypocholesterolaemic/hypercholesterolaemic fatty acid ratio suggested the high-quality of this food, similar to the nutritional values of most popular fish.  相似文献

为探索磷对生长期草鱼肌肉常规营养组成和理化特性,肌肉中游离氨基酸、呈味核苷酸和游离脂肪酸组成的影响,实验选择初始体质量为[(256.22±0.60) g]的健康草鱼540尾,随机分为6组,每组3个重复,分别饲喂含有效磷0.95 (基础饲料组,未添加)、2.46、3.96、5.68、7.10和8.75 g/kg的饲料60 d。结果显示,饲料中适宜水平有效磷显著提高了生长期草鱼肌肉蛋白质、水分、羟脯氨酸、∑氨基酸、∑鲜味氨基酸(UAAs)、∑甜味氨基酸(SAAs)、肌苷酸(IMP)、∑不饱和脂肪酸、∑多不饱和脂肪酸(PUFA)含量以及pH0 h和pH12 h,而肌肉剪切力、组织蛋白酶B和L活性、乳酸、饱和脂肪酸(SFA)含量显著降低。此外,当饲料中有效磷水平分别增加到3.96和5.68 g/kg时,生长期草鱼肌肉IMP和∑呈味氨基酸(UAAs+SAAs)的滋味活性值(TAV)分别达到最大值。适宜水平有效磷还显著提高了生长期草鱼肌肉PUFA/UFA及n-3 PUFAs/n-6 PUFAs比值。研究表明,适宜水平有效磷提高了生长期草鱼肌肉蛋白质含量、肌肉嫩度、系水力和pH值,增加肌肉呈味氨基酸...  相似文献

Long-chain polyunsaturated fatty acids of n-3 family (n-3 LC PUFAs) are physiologically essential compounds required for normal growth and development of animals, including humans. The ability of fish species to synthesize n-3 LC PUFAs varies significantly across different trophic levels. We have studied fatty acid (FA) content (mg/g of wet weight) and level (% of total FAs) in the brain, liver, heart, intestine, female and male gonads, muscle, and adipose tissues of commercially important wild freshwater Baikal grayling. Additionally, FA content and level of Baikal grayling juveniles have been studied. In all tissues of Baikal grayling, some LC PUFAs, namely, 24:5n-3 and 24:6n-3 (C24 PUFAs), have been found. These FAs are the intermediate products in the synthesis of docosahexaenoic acid (DHA, 22:6n-3) by the Sprecher pathway. The levels of C24 PUFAs in tissues differed significantly: the highest levels of C24 PUFAs were found in adipose tissue and the lowest values in the gonads of females, liver, brain, and head of juveniles. According to the dynamics of DHA and C24 PUFAs, the maximum rate of DHA synthesis is achieved in brain of Baikal grayling, while the lowest rate of DHA synthesis probably occurs in adipose tissue. Although all studied tissues had differences in the number of FAs and their levels, 16:0, 18:1n-9, 16:1n-7, 20:5n-3, and DHA dominated. Male gonads contained an extremely high level of furan FAs — presumably beneficial substances for human health. Additionally, the nutritional value of the tissues of Baikal grayling as a source of n-3 LC PUFAs for humans has been estimated.

为了探究中华绒螯蟹自身脂肪酸合成能力,采用RACE技术,克隆获得中华绒螯蟹ELOVL6 c DNA序列全长(Gen Bank accession:KT779219)。该序列全长2247 bp,包括235、873和1139 bp的5'非编码区(5'-UTR)、开放阅读框(ORF)和3'非编码区(3'-UTR),编码290个氨基酸(AA),具有ELOVL家族的全部特征:6个跨膜区、高度保守的组氨酸簇HXXHH、多个保守区以及内质网滞留信号KXKXX。分析发育树表明,ELOVL2与ELOVL5聚为一支,ELOVL6聚为另一支,其中中华绒螯蟹ELOVL6与其他节肢动物ELOVL6聚为一支,与凡纳滨对虾聚为一小支。采用异源表达方法研究ELOVL6编码的蛋白质对脂肪酸的作用,GC-MS结果显示,转基因的酵母培养物C16:0和C16:1n-7含量下降,而C18:0和C18:1n-9的含量升高,同时有新产物C18:1n-7产生。通过荧光定量PCR(q PCR)技术研究ELOVL6基因在中华绒螯蟹不同组织及不同脂肪源喂养下的表达情况,显示该基因在肠道、胃、心脏、肝胰腺、胸神经节、肌肉、眼柄、鳃和脑神经节9个组织均有表达,其中在肝胰腺中表达量最高,显著高于其他组织;在不同脂肪源饲喂的结果中,肝胰腺、肌肉、卵巢和精巢4个组织中均有表达,并且各组织在全鱼油组饲喂下表达量最低,其中用全豆油组饲喂后,肝胰腺中的表达情况显著升高,明显高于全鱼油组和鱼油豆油混合组。以上结果综合表明,中华绒螯蟹中ELOVL6能够催化C16的饱和及C16的单不饱和脂肪酸延长,同时受到饲料中不同脂肪源的一定影响,这为探究中华绒螯蟹PUFA合成途径及脂肪酸调控机制提供了依据。  相似文献

Proximate composition, cholesterol, and fatty acid content of brown shrimp (Crangon crangon L. 1758) harvested from the Sinop region of the Black Sea in Turkey was determined. Crude protein, lipid, moisture, and ash contents were 18.47 ± 0.09 g/100 g, 0.95 ± 0.05 g/100 g, 79.21 ± 0.01 g/100 g, and 1.39 ± 0.01 g/100 g, respectively. Cholesterol content was 173.56 ± 0.24 mg/100 g. Fatty acid composition was 33.04% saturated (SFAs), 22.17% monounsaturated (MUFAs), and 29% polyunsaturated (PUFAs). Among the SFAs, palmitic acid (C16:0) was predominant at 20.69% of the total fatty acid composition. Oleic acid (C18:1) was the predominant MUFA (14.25%), and the highest PUFAs were eicosapentaenoic acid (EPA, C20:5n-3) and docosahexaenoic acid (DHA, C22:6n-3), contributing 41% and 32% to the total PUFA content of the lipids, respectively. Thrombogenicity (TI) and atherogenicity (AI) index values were 0.31 and 1.34, respectively. The highest essential amino acids were leucine, lysine, valine, and isoleucine; while the highest levels of non-essential amino acids were aspartic acid, glutamic acid, glycine, and alanine, respectively.  相似文献

为了解不同季节不同鱼类不同组织中的不同脂肪酸含量,科学地指导鱼类膳食消费,本实验研究了冬夏两季,采集自上海市场常见的5种经济鱼类:大黄鱼(海洋肉食性),银鲳(海洋杂食性),日本鳗鲡(淡水肉食性),莫桑比克罗非鱼(淡水杂食性),草鱼(淡水草食性),分别检测鱼背部肌肉、腹部肌肉、尾部肌肉、肝脏和腹腔脂肪组织的脂肪含量和脂肪酸绝对含量。结果显示,5种鱼肌肉脂肪酸谱存在显著差异,并与各自的生活环境及食性均有关系;在鱼的腹腔脂肪或肝脏中,饱和脂肪酸(SFAs)和单不饱和脂肪酸(MUFAs)含量较高,且与组织脂肪含量密切相关;而多不饱和脂肪酸(PUFAs)、n-3系多不饱和脂肪酸(n-3 PUFAs)和n-6系多不饱和脂肪酸(n-6 PUFAs)含量较低,且与组织脂肪含量关系不大;大黄鱼和银鲳各肌肉组织中的n-3 PUFAs、二十碳五烯酸(EPA)和二十二碳六烯酸(DHA)含量以及n-3/n-6值高于莫桑比克罗非鱼和草鱼,并与组织脂肪含量呈正相关;冬季草鱼腹部肌肉、莫桑比克罗非鱼尾部肌肉以及日本鳗鲡和银鲳的肝脏中的n-3 PUFAs含量较夏季高。研究表明,脂肪酸组成与物种、食性、水域环境以及季节温度和组织部位均有关系。从补充n-3 PUFAs摄入的角度分析,日本鳗鲡、大黄鱼和银鲳营养价值高于莫桑比克罗非鱼和草鱼,冬季鱼类的营养价值高于夏季。  相似文献

The pearl oyster Pinctada fucata is cultured for pearl production in China, but its germplasm is degenerated. Thus, lipid and fatty acids were investigated in P. fucata based on different tissues, body sizes and condition indexes using GC–MS to provide a lipidomic baseline for evaluation of breeding variety in terms of physiology. The major fatty acids over all samples included saturated (C16:0 and C18:0), monounsaturated [C16:1(n-7), C18:1(n-7) and C18:1(n-9)], and polyunsaturated fatty acids [arachidonic acid: C20:4(n-6), EPA: C20:5(n-3) and DHA: C22:6(n-3)]. Relative percentages of lipid contents of the mantle and visceral mass were, respectively, 40.75 and 42.03 %, significantly higher than adductor muscle (14.48 %) and gill (17.15 %). Fatty acid analysis showed that there were 15 types of fatty acids in adductor muscle, 17 types in mantle and gill, respectively, and 19 types in visceral mass. Meanwhile, total fatty acids, SFA, MUFA and PUFA were the highest in visceral mass (P < 0.05). Yet the lipid contents and fatty acid compositions showed no significant differences between body sizes or condition indexes based on visceral mass. The observations above suggested that visceral mass and mantle are the major tissues for P. fucata to store lipids and thus are important candidate tissues for lipidomic study.  相似文献

Abstract

Coho salmon (Oncorhynchus kisutch) fillets were processed using five different methods (smoking, canning, freezing, acidifying, and salting) to evaluate the effect of preservation choice on the quality of polyunsaturated fatty acids (PUFA). Salmon preserved by smoking, canning, or freezing retained higher values of total fatty acids, including n-3 PUFAs such as eicosapentaenoic acid and docosahexaenoic acid. Salting and acidifying (pickling) treatments resulted in a significant decrease in PUFAs. The results of this study are intended to provide direction for handling and storage of salmon to retain the maximum levels of high-value n-3 PUFAs.  相似文献

Marine bivalves offer a potentially important source of long-chained polyunsaturated fatty acids (PUFA) for human health supplements. Lipid extracts from individual New Zealand green-lipped mussels (NZGLM) were analyzed as fatty acid methyl esters (FAME) by gas chromatography to assess geographical and seasonal differences between large (86 ± 1 mm) male and female and small (44 ± 1 mm) mussels. PUFAs dominated in spring and summer, comprising ∼ 50% of total fatty acids. Moreover, the commercially important n-3 fatty acids, 20:5n-3 (eicosapentaenoic acid, EPA) and 22:6n-3 (docosahexaenoic acid, DHA) together accounted for 70-79% of total PUFAs in spring and summer. During winter there was a marked decrease in condition and total n-3 PUFAs and a concomitant increase in saturated fatty acids in mussels, suggesting they had already spawned, had increased metabolic demands and limited PUFA-rich phytoplankton as food. While total n-3 content was not significantly different, there were geographical differences in individual n-3 fatty acids. Mussels collected from the cooler waters of Stewart Island had greater levels of 20:5n-3 (EPA), while those collected in Marlborough had greater concentrations of 22:6n-3 (DHA), which was attributed mainly to differences in phytoplankton composition. Total n-3 content and the condition index varied seasonally with greater concentrations of n-3 PUFAs, especially EPA, recorded in large mussels in spring, coincident with spring diatom blooms. Total PUFA levels and condition indices remained high in summer. There was no significant difference in condition indices, total n-3 content, DHA or EPA levels between large male and female mussels. Conversely, large mussels had significantly greater amounts of n-3 PUFAs than small mussels at Marlborough Sounds, while small mussels had marginally greater total n-3 concentrations than large mussels at Stewart Island. Taken together, these results suggest that the NZGLM offers a potentially important source of n-3 PUFAs for human health supplements. Our findings suggest that optimal harvesting conditions occur in spring when mussel condition and n-3 content peak for large mussels. Although DHA and EPA levels varied geographically, total n-3 content was not significantly different between sites, which implies that harvesting mussels for n-3 extracts would be driven more by logistical considerations.  相似文献

为全面了解中华绒螯蟹(Eriocheir sinensis)可食率和品质差异,对秋季不同时期上市的中华绒螯蟹可食率和品质进行了比较。在种植了伊乐藻(Elodea nuttallii)的池塘中,按照生态健康养殖的方法,养殖中华绒螯蟹扣蟹至成蟹。采用解剖和生化组成分析等方法探究秋季不同时期中华绒螯蟹的可食率、常规营养成分、脂肪酸和游离氨基酸组成及其含量。结果表明:(1)不论是雌体还是雄体,9月和10月肝胰腺指数(HSI)和性腺指数(GSI)均存在显著性差异(P<0.05),出肉率(MY)、总可食率(TEY)和肥满度(CF)则无显著性差异(P>0.05)。仅HSI指标9月高于10月,其余指标均是10月较高。(2)9月和10月常规营养成分无显著差异项(P>0.05)较多,但雌体肝胰腺中水分、总脂,性腺中总脂,肌肉中水分和粗蛋白含量存在显著性差异(P<0.05);雄体性腺中粗蛋白、总脂、灰分,肌肉中总脂含量存在显著性差异(P<0.05)。(3)9月和10月成蟹肝胰腺中仅1种脂肪酸含量差异显著(P<0.05),占比为1/52,其余脂肪酸含量均无显著差异(P>0.05);性腺中仅2种脂肪酸显著差异(P<0.05),占比为2/52,其余均无显著性差异(P>0.05);肌肉中11种脂肪酸显著差异(P<0.05),占比为11/52,其余均无显著差异(P>0.05)。(4)9月和10月成蟹性腺中1种游离氨基酸显著差异(P<0.05),占比为1/52,其余均无显著性差异(P>0.05);肌肉中仅雄体牛磺酸(Tau)、丙氨酸(Ala)和亮氨酸(Leu)差异显著(P<0.05),占比为3/52,其余均无显著性差异(P>0.05)。综上所述,中华绒螯蟹10月GSI、MY、TEY和CF高于9月,常规营养成分存在一定差异,性腺中脂肪酸和游离氨基酸含量差异较小,而肌肉中脂肪酸含量差异较大。整体上10月中华绒螯蟹可食率和品质要优于9月。  相似文献

The proximate composition of the whole body and the fatty acid composition of the liver, muscle, eye and brain of wild and cultured rohu (Labeo rohita) were analyzed. The cultured species was found to have significantly (P < 0.05) higher lipid contents than its wild counterpart. The saturated (SFA) and monounsaturated (MUFA) fatty acid contents were significantly higher in the cultured species, whereas the n-6 and n-3 polyunsaturated fatty acid (PUFA) levels were higher in the wild species. Fatty acids C16:0 and C18:1 n-9 were the principal fatty acids of the SFAs and MUFAs, respectively, identified in the analyses. Docosahexaenoic acid, eicosapentaenoic acid, and arachidonic acid were the predominant PUFAs in both groups, and all three were found to be present at significantly (P < 0.05) higher levels in the wild species. Erucic acid (C22:1 n-9), which was the predominant fatty acid (30.76%) in the feed, was detected only at low levels in muscle (0.30%), liver (1.04%) and eye (1.28%) of cultured fish tissue.  相似文献

The aim of the study was to investigate the effects of the diets that contain safflower oil and fish oil as lipid sources, on growth, feed conversion and body composition in turbot (Psetta maxima). Two iso-nitrogenous and iso-lipidic diets (55 % protein and 14 % lipid) were prepared that include 100 % fish oil (FO group) and 100 % safflower oil (SFO group) for turbots with average weight of 62.21 ± 1.28 g, and fish were fed with these diets for 104 days. At the end of the experiment, the weight gain, specific growth rate and feed conversion ratio were the highest in SFO group than in FO group (p < 0.05). Fatty acid composition of fish body reflected the fatty acid composition determined in the experimental diets. The amounts of palmitic acid (PA; C16:0), oleic acid (OA; C18:1n-9), linoleic acid (LA; C18:2n-6) and docosahexaenoic acid (DHA; C22:6n-3) were dominant fatty acids in fish body. It was confirmed that the usage of safflower oil instead of fish oil in turbot feed did not generate any negative effects on growth, feed conversion and the values regarding the growth performance.  相似文献

After 42 days feeding on either a Huayi formulated diet (HY) or trash fish (TF), the meat quality of Chinese mitten crab, Eriocheir sinensis, was compared. The meat yield of males (25 vs. 22%) was higher, but the total edible yield was lower than that of the females (p < 0.05). The proximate composition of both genders fed two diets was similar (p > 0.05), and there was no significant difference in the total collagen content of the meat (0.2–0.30%) between both dietary treatments and genders (p > 0.05). The diets had no significant effects on free amino acid content of the meat, while gender significantly affected the contents of some amino acids, such as taurine and glycine. Crabs fed TF had significantly lower contents of 20:5n-3 as well as higher arachidonic acid (ARA)/eicosapentaenoic acid (EPA) value compared with those of same sex crabs fed HY (p < 0.05). There were no significant dietary effects on a range of sensory traits evaluated by panelists, neither in female nor in male crabs. These results suggested no negative effects of formulated diet HY on the meat quality compared to trash fish. Therefore, diet HY could be used to replace the trash fish for fattening mitten crabs.  相似文献

The nutritional values of edible gonad, hepatopancreas and muscle tissues from normal and precocious adult male Chinese mitten crabs (Eriocheir sinensis) were investigated herein. The results showed that the average weight and meat yield (MY) of normal crabs were significantly higher than those of precocious crabs, while the hepatopancreas indexes (HSI) and gonadosomatic indexes (GSI) had no significant differences. Precocious and normal crabs had greater protein and lipid contents, respectively, and the differences were mainly reflected in gonads and hepatopancreas. While assessing the amino acid profiles, both precocious and normal crabs could be high‐quality protein sources, particularly the precocious crabs which showed higher levels of essential amino acids. In fatty acid profiling experiments, precocious crabs revealed higher EPA, ∑n‐3 polyunsaturated fatty acids (PUFA) and ∑n‐3/∑n‐6 ratios than normal crabs; however, DHA and ∑n‐6 PUFA contents were considerably lower. Additionally, contents of nutritious minerals K and Ca in precocious crabs were significantly higher than those in normal crabs, while Zn and Fe were significantly lower. In short, our data indicated that precocious Chinese mitten crabs are also a nutritious food, and even in some respects their nutritional value is higher than normal crabs.  相似文献

In this study, we aimed to determine the basic food components, fatty acids and amino acids, and variations in these components with months in goldband goatfish (Upeneus moluccensis) that fishing from Gulf of Antalya. As a result of the analyzes, the crude fat values were determined between 1.43 and 3.78%, and the crude protein values were determined between 20.79 and 22.16%. The most abundant fatty acids were determined: palmitic acid (C16:0), stearic acid (C18:0), palmitoleic acid (C16:1c9), oleic acid (C18:1c9), linoleic acid (C18:2n-6), eicosatrienoic acid (C20:3n-3), arachidonic acid (C20:4n-6), eicosapentaenoic acid (C20:5n-3), docosapentaenoic acid (C22:5n-6), and docosahexaenoic acid (C22:6n-3). The most abundant amino acids were determined lysine and leucine, aspartic acid, glutamic acid, alanine, and glycine. The differentiations of essential nutrient components, fatty acids, and amino acids were found generally significant (P < 0.05).

A study with varying dietary inclusion levels (1, 5, 10, 15 and 20 g kg?1) of docosahexaenoic acid (DHA; 22:6n-3) was conducted with post-smolt (111 ± 2.6 g; mean ± S.) Atlantic salmon (Salmo salar) over a 9-week period. In addition to the series of DHA inclusion levels, the study included further diets that had DHA at 10 g kg?1 in combination with either eicosapentaenoic acid (EPA; 20:5n-3) or arachidonic acid (ARA; 20:4n-6), both also included at 10 g kg?1. An additional treatment with both EPA and DHA included at 5 g kg?1 (total of 10 g kg?1 long-chain polyunsaturated fatty acids, LC-PUFA) was also included. After a 9-week feeding period, fish were weighed, and carcass, blood and tissue samples collected. A minor improvement in growth was seen with increasing inclusion of DHA. However, the addition of EPA further improved growth response while addition of ARA had no effect on growth. As with most lipid studies, the fatty acid composition of the whole body lipids generally reflected that of the diets. However, there were notable exceptions to this, and these implicate some interactions among the different LC-PUFA in terms of the fatty acid biochemistry in this species. At very low inclusion levels, DHA retention was substantially higher (~250 %) than that at all other inclusion levels (31–58 %). The inclusion of EPA in the diet also had a positive effect on the retention efficiency of DHA. However, EPA retention was highly variable and at low DHA inclusion levels there was a net loss of EPA as this fatty acid was most likely elongated to produce DHA, consistent with increased DHA retention with additional EPA in the diet. Retention of DPA (22:5n-3) was high at low levels of DHA, but diminished with increasing DHA inclusion, similar to that seen with DHA retention. The addition of EPA to the diet resulted in a substantial increase in the efficiency of DPA retention; the inclusion of ARA had the opposite effect. Retention of ARA was unaffected by DHA inclusion, but the addition of either EPA or ARA to the diet resulted in a substantial reduction in the efficiency of ARA retention. No effects of dietary treatment were noted on the retention of either linolenic (18:3n-3) or linoleic (18:2n-6) acids. When the total n-3 LC-PUFA content of the diet was the same but consisted of either DHA alone or as a combination of EPA plus DHA, the performance effects were similar.  相似文献
