Chlorophyll fluorescence is a promising technique for postharvest quality research, and reported studies were mainly based on the fluorescence kinetic analysis method, which has not been quite satisfactory for measuring fruit quality. This paper reports on using a hyperspectral imaging technique for measurement of laser-induced fluorescence from apple fruit for predicting multiple fruit quality parameters. A continuous wave blue laser (408 nm) was used as an excitation source for inducing fluorescence in apples. Fluorescence scattering images were acquired from ‘Golden Delicious’ apples by a hyperspectral imaging system at the instance of laser illumination (0 min) and after 1, 2, 3, 4, and 5 min of illumination. The hyperspectral fluorescence image data were represented by mean, maximum, and standard deviation spectra. Standard tests were performed on measuring fruit skin and flesh color, firmness, soluble solids content, and titratable acid. A hybrid method of combining principal component analysis and neural network modeling was used for developing prediction models to predict fruit quality parameters for each of the six illumination time periods. Fluorescence emission decreased steadily during the first 3 min of illumination and was stable within 5 min. The 0-min fluorescence prediction models had somewhat poorer prediction results for individual quality parameters except skin hue than did the models of longer illumination time. The differences were minimal in the model prediction results from the fluorescence data at 1, 2, 3, 4 or 5 min of illumination. Overall, excellent predictions were obtained for apple skin hue with the correlation coefficient of prediction of 0.94. Relatively good predictions were obtained for fruit firmness, skin chroma, and flesh hue with values for the correlation coefficient being equal to or greater than 0.74 for 1 min of illumination or longer times, and poorer correlations were found for soluble solids content, titratable acid, and flesh chroma. Hyperspectral laser-induced fluorescence imaging is potentially useful for assessing selected quality parameters of apple fruit and further research is needed to improve fluorescence measurement for better prediction of fruit quality.  相似文献

We compared the instrumental and sensory quality characteristics of blueberry fruit from ten highbush (Vaccinium corymbosum L.) cultivars, Chanticleer, Weymouth, Hannah's Choice, Duke, Bluecrop, Coville, Berkeley, Bluegold, Elliott and Lateblue and two rabbiteye (Vaccinium virgatum Aiton) cultivars, Coastal and Montgomery, grown in New Jersey. Cultivars varied in sensory intensity and acceptability scores. Highbush cultivars, Coville and Hannah's Choice, scored highest among the cultivars in sensory scores for intensity of blue color, juiciness, sweetness and blueberry-like flavor and for acceptability of appearance, color, fruit size, sweet/tart balance, flavor and overall eating quality. In contrast, rabbiteye cultivars, Coastal and Montgomery, and the highbush cultivars, Elliott and Weymouth, scored lowest among the cultivars in sensory scores for intensity of bursting energy, skin toughness, texture during chewing, juiciness, and blueberry-like flavor and for acceptability of appearance, color, fruit size, flavor and overall eating quality. Analytical quality characteristics of surface color, size, compression firmness, soluble solids content (SSC), pH, titratable acidity (TA), SSC/TA ratio, and aromatic volatile concentration also varied among cultivars, but no instrumental measurement adequately predicted consumer acceptability scores. The overall eating quality of blueberry fruit was best correlated with flavor scores followed by sensory scores for intensity of juiciness, bursting energy and sweetness and for acceptability of appearance.  相似文献

The effect of cultivar, season, shelf-life and origin on the accuracy of near infrared (NIR) calibration models for the soluble solids content (SSC) and firmness of apple was studied based on a large spectral data set based on approximately 6000 apple fruit from different cultivars, origins, shelf-life exposure time and seasons. To interpret the variance in the spectra with respect to biological variability, functional analysis of variance (FANOVA) was used. From the FANOVA analysis it was concluded that the effects of cultivar, origin and shelf-life exposure time on the NIR spectra were all significant. The largest differences in the spectra were found around the water absorption peaks (970, 1170 and 1450 nm). External validations using independent data sets showed that the accuracy of the models increased considerably when more variability was included in the calibration data set. In general the RMSEP for predictions of the SSC were in the range 0.6–0.8 °Brix, while for Magness Taylor firmness it was 5.9–8.8 N, depending on the cultivar. It was shown that atypical data can lead to large validation errors. It is, therefore, important to collect a calibration data set which is sufficiently representative for future samples to be analyzed with the developed calibration models and to develop simple procedures for model adaptation during practical use.  相似文献

Postharvest decay, caused by various fungal pathogens, is an important concern in commercial blueberry production, but current options for managing postharvest diseases are limited for this crop. Four plant essential oils (cinnamon oil, linalool, p-cymene, and peppermint leaf oil) and the plant oil-derived biofungicides Sporan (rosemary and wintergreen oils) and Sporatec (rosemary, clove, and thyme oils) were evaluated as postharvest biofumigants to manage fungal decay under refrigerated holding conditions. Hand-harvested Tifblue rabbiteye blueberry fruit were inoculated at the stem end with conidial suspensions of Alternaria alternata, Botrytis cinerea, Colletotrichum acutatum, or sterile deionized water (check inoculation) and subjected to biofumigation treatments under refrigeration (7 °C) for 1 wk. Sporatec volatiles reduced disease incidence significantly (P < 0.05) in most cases, whereas other treatments had no consistent effect on postharvest decay. Sensory analysis of uninoculated, biofumigated berries was performed utilizing a trained sensory panel, and biofumigation was found to have significant negative impacts on several sensory attributes such as sourness, astringency, juiciness, bitterness, and blueberry-like flavor. Biofumigated fruit were also analyzed for antioxidant capacity and individual anthocyanins, and no consistent effects on these antioxidant-related variables were found in treated berries. Because of limited efficacy in reducing postharvest decay, negative impacts on sensory qualities, and failure to increase antioxidant levels, the potential for postharvest biofumigation of blueberries under refrigerated holding conditions appears limited.  相似文献

Abscission or retention of ripening fruit is a major component of seed dispersal strategies and also has important implications for horticultural production. Abscission-related traits have generally not been targeted in breeding efforts, and their genetic bases remain mostly unknown. We evaluated 144 Malus accessions representing wild species, domestic cultivars, and hybrids for abscission-related traits. We found that seasonal timing of fruit abscission in wild species and hybrids showed a broad distribution similar to that seen for domestic cultivars, and that internal ethylene concentration at the time of abscission varied by over three orders of magnitude. Wild species, domestic cultivars, and hybrids all included representatives that showed abscission of fruit prior to substantial production of ethylene, as well as accessions that retained fruit for a significant period of time following ethylene production. For all accessions that retained fruit, fruit removal resulted in abscission of the pedicel, and exogenous ethylene promoted abscission, suggesting that the abscission zone was functional. Our results suggest important roles for mechanisms independent of fruit ethylene production in abscission.

The internal sub-cellular physiological changes associated with ripening and mealiness in apples were investigated with novel two-dimensional NMR relaxation and diffusion techniques. It is shown that two-dimensional relaxometry reveals more subtle physiological changes than hitherto observed with conventional one-dimensional relaxometry. In particular it is shown that the T1 of the peak associated with the cell wall in mealy apples is much longer than that of fresh apples. These changes could, perhaps, be exploited in the development of on-line NMR sensors of fruit quality.  相似文献

Environmental variance components associated with year, tree, and harvest date were estimated for fruit softening after harvest in apple (Malus × domestica Borkh.) to determine their relative importance and design optimum sampling strategies to discriminate genotypes in apple breeding. Fruit were stored after harvest under 20± 2 C and 80± 5%RH. Softening was evaluated by adapting the change in firmness during storage to a linear regression and defining the regression coefficient as the softening rate. Environmental variances associated with genotype × year interaction, among trees, year × tree interaction, and among harvest dates were all very small, namely, 2.7, 0.1, 5.2, and 5.7%, respectively, to the total variance obtained from the analysis of variance for the softening rate. The variance associated with genotype, at 57.3%, was very large. On the basis of the number of fruit necessary for firmness measurements, two times harvest is an efficient strategy to determine a genotype mean for the softening.  相似文献

Stochastic modeling provides a useful tool in managing biological variation in the postharvest chain. In the current study, the fruit-to-fruit variability in the postharvest firmness of apples was modeled. Apples from three cultivars (‘Jonagold’, ‘Braeburn’, and ‘Kanzi’) were harvested at different levels of maturity, and stored at different temperatures and controlled atmosphere (CA) conditions. By using a kinetic model describing firmness breakdown as a function of time, temperature, controlled atmosphere conditions and endogenous ethylene concentration, the main stochastic variables were identified as the initial firmness and the rate constants for firmness breakdown and ethylene production. Treating these variables as random model parameters, the Monte Carlo method was used to simulate the propagation of the fruit-to-fruit variability in flesh firmness within a batch of apples during storage under different CA conditions and subsequent shelf-life exposure. The model was validated using independent data sets from apples picked in a different season. The model developed in this study can be used to predict the probability of having apples of certain firmness after long term storage for different scenarios of temperatures and CA conditions.  相似文献

A number of studies have shown that responses of apple fruit to 1-methylcyclopropene (1-MCP) vary considerably among cultivars. This study was designed to determine if cultivars show differences in accumulation of gaseous 1-MCP. Apple fruit were placed in 1.76 L jars that were sealed and injected with 20 μL L−1 1-MCP. After 12 h, samples of intercellular atmosphere were removed and analyzed for 1-MCP concentration. Accumulation of internal gaseous 1-MCP varied markedly among cultivars, ranging from 0.14 ± 0.06, 0.22 ± 0.03, and 0.77 ± 0.30 in ‘Redcort’, ‘McIntosh’, and ‘Empire’, respectively, to 2.10 ± 0.28, 3.33 ± 0.13, and 6.93 ± 0.35 μL L−1 in ‘Gala’, ‘Cameo’, and ‘Honeycrisp’, respectively. Accumulation of gaseous 1-MCP was reduced an average of 51% in fruit treated with Sta-Fresh 8711 fruit wax. The role of the epidermis in modulating 1-MCP ingress was determined by measuring gaseous 1-MCP accumulation in fresh-cut tissue. Fresh-cut cortical tissue rapidly depleted headspace 1-MCP (>95%) over a 1-h exposure yet accumulated negligible quantities of internal gaseous 1-MCP. By contrast, cortical tissue treated with ascorbic acid or hypotaurine, or aged for several hours prior to exposure to 1-MCP, showed reduced consumption of headspace 1-MCP and high accumulation of internal gaseous 1-MCP. Levels of internal 1-MCP in cortical tissue from the cultivars generally paralleled those for intact fruit, ranging from 0.23 ± 0.07, 0.37 ± 0.18 and 1.09 ± 0.14 μL L−1 in ‘Empire’, ‘McIntosh’ and ‘Redcort’, respectively, to 2.40 ± 0.71, 4.55 ± 0.15, and 6.24 ± 0.85 in Gala’, ‘Cameo’, and ‘Honeycrisp’, respectively. Although commercial fruit wax influences gaseous 1-MCP accumulation, the comparable accumulation patterns in unwaxed whole and fresh-cut apple fruit suggest that epidermal tissue/native waxes alone do not account for cultivar differences.  相似文献

This study aimed to investigate the effect of chitin on the antagonistic activity of Rhodosporidium paludigenum against Penicillium expansum, the cause of blue mold in apple fruit, and the possible mechanisms involved. Our results showed that biocontrol efficacy and population growth of R. paludigenum were greatly enhanced when it was harvested from nutrient yeast dextrose with added chitin (NYCB) medium compared with that harvested from nutrient yeast dextrose (NYDB) medium. The ability of R. paludigenum produced in NYCB to induce resistance to blue mold in apple fruit was significantly enhanced. The enhanced disease control efficacy was correlated with higher levels of polyphenoloxidase (PPO) and superoxide dismutase (SOD) activities in apple fruit treated with R. paludigenum. Moreover, the SOD and catalase (CAT) activities of R. paludigenum were stimulated by cultivating in NYCB, while malondialdehyde (MDA) accumulation in the yeast cells was suppressed. These results indicated that adding chitin to normal media might be an effective method to improve the antagonistic activity of R. paludigenum and the active oxygen metabolism of R. paludigenum might be closely related to the biocontrol activity of the yeast.  相似文献

The effect of pulsed light at increasing fluence (17.5, 52.5, 105.0 and 157.5 kJ/m2) was studied with reference to germicidal efficiency and changes in fresh-like appearance of sliced apple. Independent of fluence, viable counts and inoculated bacteria were reduced by 1 and 3 logs respectively. Fluence significantly affected weight loss, colour and sensory attributes of apple slices during storage at 6 °C. Pulsed light at 17.5 kJ/m2 resulted in apple slices comparable to the untreated samples, with limited quality changes. By contrast, at higher fluence, apple slices underwent dehydration and browning due to loss of cell integrity. Exposure to high fluence treatments was also associated with negative changes in the flavour profile of sliced apple during storage.  相似文献

Sensory evaluation as a selection tool in apple breeding   总被引:4,自引:1,他引:3
Several conventional sensory methods were adapted to provide aprocedure that is suitable for screening apple (Malus × domestica) breeding selections for dessert quality. Trained judges were presented with randomized coded samples (apple slices) and asked to rate them on 0 to 9 bipolar hedonic (liking) scales for texture and flavour, and 0 to 9 unipolar intensity scales for skin toughness, crispness, hardness, juiciness, aroma, sweetness and sourness. Appearance liking was rated on coded samples of five whole apples, using the 0 to 9 hedonic scale. A minimum panel size of eleven judges was generally sufficient to obtain statistical discrimination of one point on the 0 to 9 scales. Panel mean scores for breeding selections relative to standards have been consistent from panel to panel and year to year. A subset of selections and cultivars was rated for appearance and taste by consumers in blind taste tests. In-house panel findings were comparable to consumer ratings for taste and appearance liking, with a few exceptions in appearance. Panel mean scores for texture and flavour liking were regressed on texture and flavour components. Crispness accounted for about 90% of the variation in texture liking. Juiciness, aroma, sweetness and sourness were all important to flavour liking, but their relative importance changed from year to year and in total accounted for only about 60% of variation in flavour liking. Perceived sweetness and sourness were better predictors of liking than analytical measurements of soluble solids and titratable acidity. Formal sensory evaluation can be used successfully for screening breeding selections, and may provide more reliable data than the opinions of only one or two people.  相似文献
