This study assessed the effect of halal slaughter and anesthesia pre‐slaughter followed by bleeding on meat quality characteristics of goats. Eleven male Boer cross goats were divided into two groups and subjected to either halal slaughter (HS) or anesthesia with halothane and propofol pre‐slaughter (AS). At pre‐rigor, HS had significantly lower (P < 0.05) muscle pH and glycogen than AS. However, no significant difference was observed in the pH and glycogen content between the treatments on 1, 3 and 7 days post mortem. The drip loss of HS was significantly lower (P < 0.05) than that of AS at all aging periods. Treatment had no effect on sarcomere length, myofibrillar fragmentation index and shear force values, loss of thiol groups and degradation of major myofibrillar proteins. It can be concluded that HS did not have deleterious effect on meat quality traits of goat when compared to AS.  相似文献

Effects of pre‐slaughter showering and ventilation on stress, meat quality and energy metabolism of broilers in summer were investigated. After transport, 84 Arbor Acres broilers were randomly divided into four treatment groups: (i) control group without ventilation and showering (C); (ii) 10 min ventilation without showering (VWS); (iii) 10 min showering without ventilation (SWV); (iv) 5 min showering and then 5 min ventilation (SV). Compared with the control group, plasma lactate dehydrogenase and creatine kinase activities in the other three treatment groups were (P < 0.05) lower; however, the plasma glucose level did not show any significant changes among all the groups. The breast meat in the SV group had significantly (P < 0.05) higher pHu, glycogen content, lower L*, ΔpH, drip loss, cook loss, R‐value and lactate content than the control group; however, there was no significant difference in shear force values among all the groups. In conclusion, this study indicated broilers in the SV group showed a lower stress level and greater meat quality, which suggest that showering and ventilation after transportation may be a good measure to relieve stress caused by transport under high temperature and improve the meat quality of broilers.  相似文献

A total of 120 crossbred [synthetic line x (Large White x Landrace)] pigs (castrated males and females) were used to evaluate the influence of rearing conditions for growing-finishing pigs on growth performance, carcass, stress reactions at slaughter, and meat eating quality. At approximately 35 kg of live weight (LW), littermates were allocated to either a conventional (fully slatted floor, 0.65 m2/pig, considered as control, CON) or an alternative (sawdust bedding with free access to an outdoor area, 2.4 m2/pig, OUT) system, until slaughter at approximately 110 kg of LW. Pigs had free access to standard growing and finishing diets. The trials were conducted in spring, summer, and winter, with each season involving 2 pens of 10 pigs in each system. Compared with the CON, the OUT pigs exhibited a greater growth rate (+10%, P < 0.001) due to their greater feed intake (+0.23 kg/d, P < 0.01), resulting in a greater body weight at slaughter (+7 kg, P < 0.001). The OUT pigs had thicker backfat (+2.4 mm, P < 0.01) and lower lean meat content (- 2.0% points, P < 0.001) than the CON pigs. The OUT system did not (P > 0.10) influence the behavioral activities of pigs during lairage at the slaughterhouse, or the urinary levels of catecholamines and cortisol, and plasma levels of ACTH, cortisol, lactate, creatine kinase, and FFA immediately after slaughter. The OUT pigs had similar (P > 0.10) pH values 30 min postmortem (pH1) in the LM, biceps femoris (BF), and semimembranosus (SM) muscles, similar ultimate pH (pHu) in LM, but lower pHu in SM (- 0.07 unit, P < 0.001) and in BF (- 0.03 unit, P = 0.029). Despite nonsignificant effects of production system on stress reactions at slaughter, assessed by urine and plasma indicators and muscle metabolism at 30 min postmortem, meat from OUT pigs had more LM drip loss after 2 (+1.0%, P = 0.003) and 4 (+1.1%, P = 0.010) d than did meat from the CON pigs. The OUT system slightly increased meat yellowness (b* value) in the LM (+0.7 unit, P = 0.001), BF (+0.5 unit, P = 0.014), and SM (+0.5, unit P = 0.041), whereas redness (a*) and lightness (L*) of the 3 muscles were unaffected (P > 0.07). Intramuscular fat content was greater in the LM (+17%, P = 0.001), BF (+14%, P = 0.004), and SM (+17%, P = 0.003) of the OUT pigs. Outdoor rearing during summer and winter improved meat juiciness, whereas odor, flavor, and tenderness were unaffected (P > 0.10). Influence of rearing conditions on all the other traits studied did not depend on the season.  相似文献

Two hundred and fifty‐day‐old male broiler chicks (Ross 308) were used to investigate the dietary supplementation effects of different levels of 0.0 turmeric rhizome powder (TRP) (free TRP, F.TRP), 0.25 (low TRP, L.TRP), 0.5 (medium TRP, M.TRP) and 0.75% TRP (high TRP, H.TRP) or 50 mg/kg vitamin E (VE) on antioxidant properties of thigh meat in broiler chickens after slaughter. No effect of treatment was observed for the activities of glutathione peroxidase (GPX) and superoxide dismutase (SOD) and total antioxidant status (TAS) in thigh meat (P > 0.05) but all were reduced over time (P < 0.0001). A significant treatment*time interaction was observed for thigh meat GPX activity (P = 0.02). Significant effects of treatment and time were observed for malondialdehyde (MDA) content (P < 0.05). There was no significant difference between the treatments for thigh meat MDA content at slaughter (P > 0.05). Three days after refrigerator storage, MDA content in thigh meat of M.TRP birds was lower than that of F.TRP birds (P < 0.05). Both the M.TRP and VE birds showed a lower MDA content in thigh meat as compared with F.TRP birds 7 days after storage (P < 0.05). In conclusion, dietary consumption of 5 mg/kg TRP can increases the thigh meat shelf‐life storage and quality in broiler chickens after slaughter.  相似文献

A total of 64 5‐month‐old Pietrain pigs were randomly allocated to four treatments with four replicates per treatment according to body weight. The pigs were fed either a standard corn‐soybean meal based control diet (treatments 1 and 2), the standard diet with 1% Lycium barbarum (LB) (treatment 3), or the standard diet with 1% Polygala tenuifolia Willd (PT) (treatment 4). Serum lactic acid and glucose concentrations were increased in stressed pigs (P < 0.05). Addition of the herbs in the diet had no effect on the serum lactic acid concentration, but 1% LB decreased (P < 0.05) serum glucose concentration in the stressed pigs. Pre‐slaughter stress also decreased (P < 0.01) liver glycogen concentration and the decrease could be inhibited by addition of 1% LB in the diet (P > 0.05). Pre‐slaughter stress increased the concentration of maleic dialdehyde (MDA) (P < 0.05) and decreased glutathione peroxidase (GSH‐Px) activity in serum, while dietary 1% LB increased (P < 0.05) the activity of GSH‐Px and decreased the concentration of MDA in the serum. In conclusion, pre‐slaughter stress induces oxidative stress in pigs and dietary supplementation with 1% LB improves antioxidant capacity in stressed pigs before slaughtering.  相似文献

Background

Tail biting is a common welfare problem in pig production and in addition to being a sign of underlying welfare problems, tail biting reduces welfare in itself. The aim of this study was to evaluate the effects of tail biting on different pre and post mortem indicators of stress in slaughter pigs and on carcass and meat characteristics. A total of 12 tail bitten (TB) and 13 control (C) pigs from a farm with a long-term tail biting problem were selected for salivary cortisol analyses before and after transport to the slaughterhouse. After stunning, samples were taken for the analysis of serum cortisol, blood lactate, intestinal heat shock protein 70 (HSP70), and meat quality characteristics. In addition, body temperature immediately after and muscle temperature 35 min after stunning were measured, as well as lean meat percentage and carcass weight.

Results

TB pigs showed a lower cortisol response to the transport-induced stress than C pigs and also had a lower serum cortisol concentration after stunning. HSP70 content in the small intestine was higher in the TB pigs than in C pigs. TB pigs had a considerably lower carcass weight therefore produced a lower total amount of lean meat per carcass than C pigs.

Conclusions

This study suggests that prolonged or repeated stress in the form of tail biting causes a blunted stress response, possibly a sign of hypocortisolism. In addition, it underlines the importance of reducing tail biting, both from an animal welfare and an economic point-of-view.  相似文献

The objective of this study was to create various pH/temp decline rates in hot‐boned bull beef M. longissimus lumborum (LL) through a combination of electrical stimulation (ES) and pre‐rigor holding temperature. The relationship between the pre‐rigor interventions, the activities of µ‐calpain and small heat shock proteins (sHSP), and the impacts on meat product quality were determined. Paired LL loins from 13 bulls were hot‐boned within 40 min of slaughter, immediately ES and subjected to various holding temperatures (5, 15, 25, and 35°C) for 3 hr. The rate of muscle pH decline, sarcomere length, shear force, and proteolysis of muscle proteins were measured. ES‐25°C had a longer sarcomere length compared to non‐electrical stimulation samples. ES‐25°C and ES‐35°C samples had lower shear force values, higher µ‐calpain activity and higher desmin, troponin‐T, and sHSP degradation. The above findings suggest that pH/temp decline rates created in hot‐boned muscle impacted muscle protein proteolysis by increasing the activity of proteases and degradation of sHSP.  相似文献

The experimental materials comprised 44 hybrid [female (Polish Large White x Polish Landrace) x male Duroc] growing-finishing pigs. The animals were randomly divided into two groups: 24 pigs were slaughtered immediately after transport and 20 pigs were slaughtered after a 24-hour rest period in the lairage. The meat content of pork carcasses, carcass dressing percentage, the proximate chemical composition, physicochemical and sensory properties of meat and shear force values were determined. Serum creatine kinase activity and cortisol levels were determined in blood samples collected before transport and during carcass bleeding. Pigs slaughtered immediately after transport, compared with those slaughtered after a 24-hour rest period, were characterized by a higher meat content of the carcass and a higher carcass dressing percentage. Pre-slaughter handling had no effect on pork quality. The incidence of normal-quality meat, partially PSE (pale, soft, exudative) meat and PSE meat was similar in both groups. Chemical analysis showed that the content of dry matter, total protein, fat and minerals in meat was comparable in both groups. As regards the functional properties of the pork, samples from the carcasses of pigs that had rested before slaughter had a higher contribution of the red color component. Meat from pigs slaughtered immediately after transport had more desirable sensory properties. Pre-slaughter resting had a significant effect on those analyzed physiological parameters which were found to be good indicators of pre-slaughter stress. Serum creatine kinase activity and cortisol levels were higher in blood samples collected after transport (during carcass bleeding) than in samples collected before transport, pointing to a strong stress response of animals to pre-slaughter treatment. The decrease in serum cortisol levels in blood samples collected during bleeding from the carcasses of pigs slaughtered after a 24-hour rest period, compared with samples collected from animals slaughtered immediately after transport, suggests that rest before slaughter alleviated stress induced by pre-slaughter handling operations.  相似文献

The aim of this project was to study the effects of feeding system (dry or wet feeding with whey), dietary lysine level and pre-slaughter routines on technological meat quality in entire male, female and castrated male pigs, which were carriers or non-carriers of the RN ? allele. The feeding system only affected the yield of processed meat, resulting in lower Napole yield (87.5% vs 89.4%) for meat of whey fed pigs. Further, lower dietary lysine levels resulted in higher drip loss of the meat compared with high dietary levels (5.3% vs 4.8%). Mixing of unfamiliar pigs prior to slaughter led to meat with lower internal reflectance values (28.3 vs 32.2) and glucose+G-6-P concentrations of the meat juice (46.3 vs 49.7 μmol/ml) compared with pen-wise slaughtering. In comparison with non-carriers, RN ? carriers had significantly lower ultimate pH, shear force values and water-holding capacity. Mixing of non-carrier pigs prior to slaughter gave higher Napole yield compared with those handled pen-wise. Females had lower ultimate pH and higher Napole yield compared with entire males.  相似文献

This study investigated the effects of pre‐slaughter transport during summer and subsequent water shower spray on broiler meat quality and protein characteristics. Arbor Acres broiler chickens (n = 126, 42 days old, mixed sex, 2.5‐3 kg) were randomly categorized into three treatments: (i) control group without transport (C); (ii) 30 min transport (T); and (iii) 30 min transport followed by 10 min water shower spray and 20 min lairage (T/W). Each treatment consisted of six replicates with seven birds each. Ambient temperature was 32‐35°C during transportation. Results indicated that transport during high ambient temperature denatured myosin and sarcoplasmic proteins, led to decreased protein solubility and resulted in glycogen phosphorylase precipitated to the myofibrillar fraction. Furthermore, meat quality in the transport group showed a pale, soft and exudative (PSE)‐like syndrome. Water shower spray during lairage after transport reduced the degree of protein denaturation and lessened the deterioration of meat quality.  相似文献

The effects of heat stress on lipid oxidation and volatile compounds in duck meat were investigated. To simulate heat stress on ducks, room‐temperature was controlled at 25°C, except that a raised temperature of 32°C for 8 hr each day was conducted. After stress for 1 and 3 weeks, respectively, the birds were euthanized and the breast meat was separated to evaluate the changes of lipid oxidation and volatile flavor compounds. Results showed that heat stress significantly increased the lipoxygenase activity and thiobarbituric acid reactive substances, and reduced the contents of free unsaturated fatty acids in duck meat. A total of 85 volatile flavor compounds were detected by gas chromatography‐mass spectrometry. Interestingly, when exposed to heat stress, the volatiles generation in raw duck meat was promoted, which was then inhibited after cooking. These data reveal meat oxidative changes and flavor loss caused by heat stress and provide useful information for potential labels and meat flavor preservation against the negative effects of heat stress.  相似文献

One‐hundred‐twenty crossbred pigs finished at 175–185 days of age were used to investigate the effects of live weights at slaughter on the meat quality, volatile flavor compounds, and sensory attributes of pork meat. Based on the live weights at slaughter, three weight groups (n = 36 per group) were classified as follows: light weight (LW: 100 kg), medium weight (MW: 110 kg), and heavy weight (HW: 120 kg). After slaughter, longissimus dorsi muscle samples were taken and used for the analyses of aforementioned parameters. The HW group had higher fat content and water holding capacity compared to the LW or MW group (< 0.05). The HW group also showed higher levels for majority of unsaturated fatty acids and total polyunsaturated fatty acids than the LW group (p < 0.05). The slaughter weight significantly affected the amounts of 11 among the 47 flavor compounds identified. Significantly higher amounts of fatty acids oxidation‐derived flavor compounds (aldehydes) were found in the HW group than in the other groups. Noticeably, increasing slaughter weight was associated with higher sensorial scores for flavor, juiciness, and acceptance scores (p < 0.05). Based on the obtained results, 120 kg body weight is recommended as the market weight for this commercial breed without compromising the meat quality.  相似文献

To evaluate the performance of the Spanish autochthonous pig breed Chato Murciano under different rearing conditions, a total of 30 castrated male pigs were used. Eighteen pigs were reared in an outdoor system, and sent to slaughter with an average age of 210 days and live weight (LW) of 124.41 kg; and 12 pigs were reared in an indoor system, and slaughtered with 119.58 kg of LW and 236 days old. The pigs reared outdoors showed a better growing rate and final live weight in relation to age, as well as higher hot and cold carcass yields, and superior weights for the most valuable meat cuts, but their morphometric parameters were similar to those of the pigs reared indoors. The rearing system did not affect many of the meat quality traits (intramuscular fat (IMF) content, pH, color, tenderness and cooking loss), but drip losses were higher in the outdoor group. The levels of IMF found in this study in both rearing systems (2.65–3.19%) were notably lower than those from previous studies, probably due to differences in the diet used. The rearing system affected the mineral and fatty acid (FA) composition. The distribution of fatty acids in both groups, with a low Polyunsaturated Fatty Acid (PUFA) content, can be expected to produce good quality processed products.  相似文献

The present study investigated the effect of outdoor rearing and genetic background on behaviour and meat quality traits in heavyweight pigs. Large White and Duroc-sired pigs were reared in groups of 3 castrated males and 3 females, conventionally or in fields, from April to October, in a study with two replicates. Compared to indoor pigs, outdoor pigs were more active and showed a larger range of behaviour suggesting improved welfare from a behavioural point of view. During 5 h of isolation, outdoor pigs were less active and had lower heart rates, and in another test, they reacted less to a non-familiar object (traffic cone). Pigs were slaughtered at 150 kg live weight, half of each treatment group after mixing, short transport, and overnight lairage and half immediately following short transport. Outdoor pigs were less aggressive during pre-slaughter mixing. Ante- and post-mortem glycogen content of the Longissimus lumborum (LL), Semimembranonus (SM) and Semispinalis capitis (SC) muscles depended on slaughter conditions, sire breed, rearing conditions, gender and year of experimentation, sometimes influencing ultimate pH. Effects of rearing on muscle glycogen content and post-mortem pH were stronger during the second year of rearing. Effect of slaughter conditions on glycogen content and ultimate pH depended on fighting levels during pre-slaughter mixing. Outdoor rearing increased muscle redness. Drip and cooking loss were higher in Large White than Duroc-sired pigs. Drip and cooking loss were correlated with early post-mortem and ultimate pH. Thawing loss was correlated with early post-mortem temperature and ultimate pH. Finally, reactivity to isolation had a predictive value as pigs more active during isolation had less skin damage due to fighting during pre-slaughter mixing. In conclusion, despite large effects of year of experimentation, outdoor rearing, sire breed, and slaughter conditions influenced behaviour and muscle characteristics.  相似文献

This study investigated the effects of supplemental Mg, Trp, vitamin C, vitamin E, and herbs on stress responses, skin lesions, and meat quality of slaughter pigs (106.0 +/- 8.6 kg of BW). These 5 supplements were tested in 4 similar experiments. In Exp. 1, 2 treatments were tested: 1) control treatment without supplementation, and 2) supplementation of an herbal product (2.5 g/L of drinking water for 2 d). Eighty-eight pigs per treatment were involved, of which 40 were selected for meat quality measurements (over 4 replicates). The experimental design of Exp. 2 and 3 was the same as Exp. 1, except that in Exp. 2 Mg (3 g/L of drinking water for 2 d) was supplemented and in Exp. 3 Trp (6 g/kg of feed, as-fed basis) was supplemented. In Exp. 4, 3 treatments were tested: 1) control treatment without supplementation, 2) supplementation of vitamin C (300 mg/kg of feed for 21 d, as-fed basis), and 3) supplementation of vitamin E (150 mg/kg of feed for 21 d, as-fed basis). In Exp. 4, 66 pigs per treatment were used, of which 42 were evaluated for meat quality (over 6 replicates). Pigs supplemented with vitamin E ate less than control (P = 0.03) or vitamin C-supplemented pigs (P = 0.03). Pigs were transported to a commercial slaughterhouse and were slaughtered after a lairage period. Blood sampling at slaughter revealed no differences between the control and supplemented pigs in plasma cortisol, glucose, lactate, or creatine kinase concentrations. Pigs provided with Mg (P = 0.002) or Trp (P = 0.04) had lower plasma NEFA concentrations than control pigs, and pigs supplemented with vitamin C had greater concentrations than the control (P = 0.03) or vitamin E-supplemented pigs (P = 0.01). Supplementation of the herbal product increased the frequency of pigs with shoulder (P = 0.05) and loin lesions (P = 0.03), whereas Mg lowered the incidence of loin lesions (P = 0.01). Measurements of pH and temperature in the LM and biceps femoris 45 min postmortem revealed no differences among treatments, and no influence of treatments on LM pH, electrical conductivity, and water holding capacity was observed 48 h postmortem. Compared with the control loins, loins of pigs supplemented with vitamin C (Japanese color scale, L*, and a* value; P < 0.05) or vitamin E (Japanese color scale and a* value; P < 0.03) were redder and less pale, and the loin of vitamin E-supplemented pigs was more yellow (b* value; P = 0.04). Generally, Mg could lower loin damage, whereas vitamin C and vitamin E supplementation resulted in a color improvement of the loin.  相似文献

为了解豫西黑猪屠宰性能、肉品质等遗传性状,以及与河南地方猪确山黑猪间的差异,本研究挑选相同条件下健康的豫西黑猪(120.28 kg±6.96 kg)和确山黑猪(117.80 kg±8.76 kg)各8头,按相关规定开展体尺指标、屠宰性能、肉品质及血液指标测定,即对豫西黑猪与确山黑猪体尺指标(体高、体长、胸围、管围等)、屠宰性能(胴体重、胴体长、皮率、骨率、屠宰率等)、肉品质(肉色、大理石纹、pH、肌内脂肪、粗灰分等)、血液指标(白细胞数、红细胞数、血小板数、血小板压积等)及两种猪肌肉氨基酸含量进行了测定。结果表明,豫西黑猪体长、胴体长、皮率和头重均显著低于确山黑猪(P<0.05),背膘厚、瘦肉率、脾脏重、心脏重和眼肌面积均极显著或显著高于确山黑猪(P<0.01;P<0.05)。在肉品质方面,豫西黑猪大理石纹评分、pH45 min、pH24 h、粗蛋白质及粗灰分含量均显著或极显著低于确山黑猪(P<0.05;P<0.01),但水分和磷含量均显著或极显著高于确山黑猪(P<0.05;P<0.01)。在血液指标方面,豫西黑猪血小板数目和血小板压积均极显著低于确山黑猪(P<0.01),但其他指标与确山黑猪无明显差异(P>0.05)。豫西黑猪精氨酸、缬氨酸和组氨酸含量均显著或极显著高于确山黑猪(P<0.05;P<0.01),甘氨酸含量极显著低于确山黑猪(P<0.01)。综上所述,豫西黑猪和确山黑猪在体尺指标、肉品质及血液指标方面均无明显差异,在屠宰性能方面豫西黑猪稍优于确山黑猪,均可为消费者提供品质优良的猪肉。  相似文献

用红外成像仪对60头肉牛屠宰前的体表温度进行测量,并对新鲜牛肉样品的肌糖元含量进行分析,将测试结果与排酸后的pH进行比较,结果表明:产生高pH肉的肉牛在屠宰前体温明显偏高(χ2χ20.05),而肌糖元含量偏低,但未达到统计学显著水平(P0.05)。  相似文献

研究测定了25头莱芜猪的胴体品质和肉质特性,分析了莱芜猪胴体、肌肉品质随体重(35、40、50、60、70、80、90kg)的变化规律,为确定不同生长阶段的适宜营养水平和上市屠宰体重提供依据。结果表明,莱芜猪自35~90kg瘦肉率在42.43%~55.29%之间,肌肉pH值稳定在6.19~6.52之间,肉色指标优良,大理石纹评分在2.50~4.38之间,肌内脂肪含量在4.51%~19.92%之间;当70kg体重屠宰时,肌肉失水率较低为13.47%,肉色、大理石纹评分较高分别为3.5、3.38,肌内脂肪含量较高为11.54%。胴体和肉质性状间相关程度有强有弱,相关系数有正有负。相同性状间有较强的正相关,相反性状间有较强的负相关。综合分析试验结果认为,莱芜猪以体重70kg作为上市屠宰体重比较合理。  相似文献

In order to study the effect of slaughter weight on carcass traits,meat quality,amino acids and fatty acids in muscle of Jiangkou Luobo pigs,36 Jiangkou Luobo pigs (6 pigs of 60,70,80,90,100 and 110 kg body weight,respectively) were selected to determine carcass quality,meat quality characteristics and nutritious component and analyze their changes with weight.The results showed that before the body weight reaching to 80 kg,the slaughter rate and loineye area were increased fast,the contents of various amino acids were increased obviously.And when the body weight was 80 kg,the fatty acids were rich,including oleic acid and linoleic acid.When the body weight was more than 90 kg,there were excessive fat deposition in porcine somatic and the content of lysine,valine,threonine and other essential amino acids were extremely significant or significant differences (P<0.05;P<0.01).Generally Jiangkou Luobo pigs with the 80 kg body weight had the better carcass traits and meat quality,rich and ideal amino acid and fatty acid composition in muscle,especially had the high content of essential amino acids and flavor amino acid,and suitable proportion of unsaturated fatty acid and saturated fatty acid.Therefore,the reasonable slaughter weight of Jiangkou Luobo pigs was about 80 kg.  相似文献
