为了提高葡萄加工副产物的综合利用率,以巨峰葡萄为原料,分离葡萄皮和籽中的游离酚与结合酚,采用HPLC法分析其组成及含量,并通过DPPH和FRAP法比较其体外抗氧化活性。结果表明,葡萄皮游离酚以儿茶素为主,籽游离酚以儿茶素和表儿茶素为主;葡萄皮和籽中结合酚均以绿原酸和表儿茶素为主;4种多酚均表现出明显的抗氧化活性,其活性大小为籽游离酚皮游离酚皮结合酚籽结合酚。本研究结果为葡萄加工副产物资源的合理利用提供了数据支持。  相似文献

Cookies were produced from different sorghum flours to determine their potential as vectors of antioxidants. Different sorghum cultivars and their flour extraction rates were evaluated for their effects on phenolic content and antioxidant activity of the cookies. Consumer acceptance of the sorghum cookies was compared with that of wheat flour cookies. For each sorghum cultivar, cookies of 100% extraction rate flours had two to three times more total phenolics compared with those of 70% extraction rate flours, while antioxidant activity was 22–90% higher. Cookies of the condensed tannin sorghum had two to five times more phenolics compared with those of condensed tannin‐free sorghum. Antioxidant activity was 145–227 μMol Trolox equivalents (TE)/g in cookies of condensed tannin sorghum compared with 10–102 μMol TE/g in those of condensed tannin‐free sorghum. The sorghum flours had slightly higher phenolic content and antioxidant activity values than their corresponding cookies. Cookies of the red tannin‐free sorghum flours (PAN 8564/8446) were equally liked as wheat flour cookies, except for texture. However, cookies of condensed tannin sorghum were least accepted compared with wheat flour cookies despite their high antioxidant activity.  相似文献

The effectiveness of extracting free and bound phenolic compounds and antioxidant activities from air‐classified corn bran was evaluated by various extracting methods. Free phenolic contents and antioxidant activities decreased significantly with increasing particle sizes for all methods used in the study. Also, the oil, protein, and ash contents were noticeably decreased with increasing particle sizes. By contrast, bound phenolic content and antioxidant activities increased with increasing particle sizes. Free phenolic contents were much lower than those of bound phenolic contents for the same fraction. The free antioxidant activities were similar to bound antioxidant activities for the same fraction. It suggests that some phenolic compounds may not exhibit antioxidant activity, and some antioxidant activities were not extractable or released during alkaline extraction. Considerable higher free antioxidant activities were found in both direct and double extractions when compared to the single neutral extraction using samples <30 μm. Similar free antioxidant activities were observed for directed extraction and double extraction. For corn bran fractions, the direct method may be suitable for free phenolic content and antioxidant activity, while the sequential method may be proper for bound phenolic content and antioxidant activity.  相似文献

Edible beans are among the most important grain legumes consumed by humans. To provide new information on the antioxidant phenolics of edible beans, the antioxidant capacity, total phenolic content (TPC), and total flavonoid content (TFC) in both soluble and bound fractions of 42 edible beans from China were systematically evaluated, with main phenolic compounds identified and quantified in 10 beans possessing the highest TPC. Edible beans contained a wide range of total antioxidant capacity and TPC generally comparable with common grains, fruits, and vegetables, and their bound fractions had significant antioxidant capacity, TPC, and TFC. Red sword bean was found for the first time to show extremely high total antioxidant capacity (ferrous[II] at 235 ± 13.2 μmol/g and Trolox at 164 ± 10.5 μmol/g) and TPC (1767 ± 58.3 mg of GAE/100 g). Phenolic compounds such as catechin, ferulic acid, gallic acid, p‐coumaric acid, and protocatechuic acid were widely detected in selected beans. A positive correlation was found between antioxidant capacity (ferric‐reducing antioxidant power [FRAP] and Trolox equivalent antioxidant capacity [TEAC] values) and TPC, with correlation coefficient r = 0.974 (FRAP value versus TPC) and r = 0.914 (TEAC value versus TPC). Therefore, beans with high antioxidant capacity and phenolic content can be valuable sources of dietary natural antioxidants for the prevention of oxidative stress‐related chronic diseases.  相似文献

Wheat contains phenolic compounds concentrated mainly in bran tissues. This study examined the distribution of phenolics and antioxidant activities in wheat fractions derived from pearling and roller milling. Debranning (pearling) of wheat before milling is becoming increasingly accepted by the milling industry as a means of improving wheat rollermilling performance, making it of interest to determine the concentration of ferulic acid at various degrees of pearling. Eight cultivar samples were used, including five genotypes representing four commercial Canadian wheat classes with different intrinsic qualities. Wheat was pearled incrementally to obtain five fractions, each representing an amount of product equivalent to 5% of initial sample weight. Wheat was also roller milled without debranning. Total phenolic content of fractions was determined using the modified Folin‐Ciocalteau method for all pearling fractions, and for bran, shorts, bran flour, and first middlings flour from roller milling. Antioxidant activity was determined on phenolic extracts by a method involving the use of the free radical 2,2‐diphenyl‐l‐picrylhydrazyl (DPPH). Total phenolics were concentrated in fractions from the first and second pearlings (>4,000 mg/kg). Wheat fractions from the third and fourth pearlings still contained high phenolic content (>3,000 mg/kg). A similar trend was observed in antioxidant activity of the milled fractions with ≈4,000 mg/kg in bran and shorts, ≈3,000 mg/kg in bran flour, and <1,000 mg/kg in first middlings flour. Total phenolic content and antioxidant activity were highly correlated (R2 = 0.94). There were no significant differences between red and white wheat samples. A strong influence of environment (growing location) was indicated. Pearling represents an effective technique to obtain wheat bran fractions enriched in phenolics and antioxidants, thereby maximizing health benefits associated with wheat‐based products.  相似文献

为了提高蚕豆加工副产物的综合利用率,筛选天然多酚抑菌剂的功能原料,本试验以5种不同颜色蚕豆种皮为研究对象,比较不同颜色蚕豆种皮中酚类物质的含量、组成及抑菌活性的差异,初步探讨蚕豆种皮中发挥抑菌活性的多酚物质种类。结果表明,5种不同颜色蚕豆种皮中总酚含量为165.94~8 487.62 mg·100g-1,总黄酮含量为11.26~209.01 mg·100g-1,花色苷含量为1.08~65.64 mg·100g-1。紫红蚕豆种皮总酚、花色苷含量最高,黑蚕豆总黄酮含量最高。没食子酸和原儿茶酸为蚕豆种皮中的主要酚酸物质,儿茶素、杨梅素、根皮素及槲皮素为主要的黄酮类物质,矢车菊素、矢车菊素-3-葡萄糖苷、飞燕草素和飞燕草素-3-葡萄糖苷为主要花色苷类物质,且深色蚕豆种皮具有较的高酚类物质含量。抑菌活性结果表明,深色蚕豆种皮对大肠杆菌和沙门氏菌的抑制能力较强,且总酚、总黄酮含量与沙门氏菌抑菌活性呈显著正相关(P<0.05),而花色苷含量与大肠杆菌抑菌活性呈显著正相关(P<0.05),没食子酸及矢车菊素是发挥抑菌作用的主要物质。综上,深色蚕豆种皮含有丰富的酚类化合物,且具有较高的抑菌活性,本研究为蚕豆种皮综合加工利用提供了一定的理论基础。  相似文献

为了能够更好地将发芽荞麦用作制备功能食品的原料,本研究采用理化指标不同的电解水制备荞麦芽,考察荞麦的发芽率及芽长、总酚含量、DPPH和ABTS自由基清除能力,以及铁离子还原力在发芽期间的动态变化,并分析各处理组发芽第7天荞麦芽中游离酚和结合酚种类和含量。结果表明,在7 d观测期内,电解水有利于荞麦发芽及生长。不同评价方法测定荞麦芽抗氧化能力的结果显示,pH值11.13电解水处理组发芽1~3 d荞麦芽总酚含量及抗氧化水平均显著高于对照组(P<0.05),而pH值3.21、pH值5.02和pH值9.02电解水处理组发芽5~7 d荞麦芽总酚含量及抗氧化水平均显著高于对照组(P<0.05)。各处理组荞麦芽中主要的游离酚均为绿原酸,且电解水处理组荞麦芽游离绿原酸含量均显著高于对照组(P<0.05)。自来水处理组荞麦芽主要结合酚为香豆酸,而电解水处理组荞麦芽主要结合酚为咖啡酸。本研究结果为电解水应用于功能性荞麦芽的制备提供了理论依据。  相似文献

不同石榴品种果实酚类物质及抗氧化活性研究   总被引:2,自引:0,他引:2  
为探明石榴不同栽培地区和不同品种间酚类物质含量分布特征,筛选抗氧化能力强的功能型优良品种,以山东、云南、新疆和四川地区8个主栽石榴品种的成熟期果实为试材,利用常规品质分析方法和高效液相色谱技术,对其果实品质、酚类物质和抗氧化能力进行分析。结果表明,石榴品种间果实各品质指标存在显著差异,其中,喀什甜单果质量、可溶性糖和维生素C含量最高,甜绿籽固酸比最高,泰山红可溶性固形物含量最高,红玛瑙可滴定酸含量最高。不同石榴品种果皮中酚类物质含量与抗氧化能力均最高;果汁次之,种子最低。喀什甜果皮和红玛瑙种子中酚类物质含量和DPPH自由基清除率均最高;果汁中花青苷含量和DPPH自由基清除率分别在千籽红和大青皮甜中最高,安石榴苷、没食子酸、鞣花酸、总黄酮和总酚含量在红玛瑙中最高;果皮中安石榴苷含量(平均为135.00 mg·g-1)占总酚的48.94%,是石榴果实中最主要的酚类物质。果实品质指标间、果实品质与酚类物质间存在一定的相关性,安石榴苷、没食子酸、鞣花酸、花青苷、总黄酮和总酚间互为正相关,各指标与DPPH自由基清除率均正相关。红玛瑙、喀什红和千籽红果实的综合品质佳,富含酚类物质,是值得推广和开发利用的优良品种。研究结果为石榴加工产品的研发和新品种选育提供了理论依据。  相似文献

In the present study, bioprocessing with eight microbial strains including Bacillus species, yeasts, and filamentous fungi was evaluated for its potential to improve the phenolic acid composition and antioxidant activity of wheat bran. The soluble free and soluble conjugated fractions of ethanolic extracts of the treated bran samples were compared for their total phenolic contents, phenolic acid composition, and in vitro antioxidant activities. In general, total phenolic content in the soluble free fraction increased significantly, accounting for 241.11 ± 1.25 μg of gallic acid equivalents (GE)/g (Rhizopus oryzae), 230.50 ± 1.05 μg of GE/g (Mucor circinelloides), and 230.19 ± 1.02 μg of GE/g (Saccharomycopsis fibuligera). The phenolic acid composition, especially of the soluble free fraction, was improved most by S. fibuligera (hydroxybenzoic, vanillic, syringic, and trans‐ferulic acids), M. circinelloides (chlorogenic acid), and R. oryzae (protocatechuic, trans‐coumaric, and benzoic acids). Comparatively, bioprocessing exhibited less effectiveness on conjugated phenolic acid composition. Fermented wheat bran displayed enhanced reducing capacity, superoxide anion radical scavenging activity, and 1,1‐diphenyl‐2‐picrylhydrazyl radical scavenging activity in comparison with the nonfermented sample. The antioxidant activity was significantly correlated to the total phenolic content.  相似文献

Sorghum bran (SB) is a good source of phenolic compounds with high antioxidant capacity that increases the antioxidant activity (AOX) of tortillas prepared with extruded nixtamalized corn flour. The objective of this research was to study the effects of bran addition (0, 5, or 10%) before (ENBESB) or after (ENAFSB) extrusion, in the features and composition of baked tortillas in terms of total phenolic compounds (TPC), AOX, color (L , a , b, hue, chroma, and E value), and tortilla firmness. It was possible to retain more than 81.8 and 89.9% of TPC and AOX, respectively, in ENBESB‐10% flour. Tortillas prepared with ENAFSB‐10% flour retained more than 92 and 76% of TPC and AOX, respectively, compared with ENBESB. However, tortillas elaborated with ENAFSB flour showed a higher firmness and lower flexibility than counterparts produced from ENBESB. The use of extrusion to produce nixtamalized corn flours and the strategy of adding the SB to the corn meal before extrusion were essential to retain TPC and AOX and, additionally, to enhance texture of tortillas.  相似文献

Experiments were conducted to determine the relationship, if any, between lipase activity and the metabolism of lipids during malting (germination) of oat (Avena sativa L.) seed. During the course of malting, concentration of the free fatty acid fraction increased markedly at the expense of the neutral lipid fraction (predominantly triacylglycerides), while the initially high lipase activity (most of which is located in the surface layers of the grains) decreased by ≈40%. The fatty acid compositions of total and neutral lipid fractions were stable during malting, but there were marked changes in the free fatty acid and phospholipid fractions. In a comparison among 12 hulled and hull-less genotypes, there were no significant regressions between the quantitative changes in lipid fractions and lipase activities. Brief treatments with chemicals or hot H2O that partially or completely inhibited lipase activity had various effects on subsequent quantitative changes in lipid fractions, but these changes were not consistent with the inhibitions in lipase activity observed. It was concluded that the degradation in triacylglycerides and increase in free fatty acids observed during oat malting were not controlled by the level of total lipase activity. Rather, it was suggested that oat may have another lipase present in the cells where the oil bodies are located that hydrolyzes triacylglycerides from the oil bodies during germination. Further research is needed to substantiate this hypothesis.  相似文献

The phytochemicals in fruits have been shown to be major bioactive compounds with regard to health benefits. Bacaba ( Oenocarpus bacaba Mart.) is a native palm fruit from the Brazilian savannah and Amazon rainforest that plays an important role in the diet of rural communities and is also a source of income for poor people. This paper reports the characterization and analyses of phenolics from bacaba fruit extract. The total phenolic content of bacaba fruit amounted to 1759.27 ± 1.01 mg GAE/100 g, the flavonoid content was 1134.32 ± 0.03 mg CTE/100 g, and the anthocyanin content was 34.69 ± 0.00 mg cyn-3-glc/100 g. The antioxidant activity was evaluated through different assays [ORAC, FRAP, DPPH, TEAC, and cellular antioxidant assay (CAA) assays] and revealed a significant antioxidant capacity for bacaba in comparison to the data available in the literature. The assignment of the phenolic compounds using HPLC-DAD-MS(n) was based on the evaluation of their UV-vis absorption maxima (λ(max)) and mass spectral analyses, and 14 compounds were tentatively identified. The results suggest that bacaba fruits are a promising source of phenolics.  相似文献

Whole‐grain‐based diets have been suggested to reduce the incidence of cardiovascular disease and colon cancer. Phenolic compounds, most of which are present in the wheat bran, may be one of the factors contributing to whole‐grain health benefits. We measured the free, bound, and total phenolic content and antioxidant activity in the bran of 51 wheat cultivars belonging to eight Western Canadian spring wheat market classes grown in a replicated trial at Saskatoon, Saskatchewan, Canada. The free phenolic (extracted with 80% v/v aqueous ethanol) content ranged from 854.1 ± 265.1 to 1,754.9 ± 240.3 μg/g of bran gallic acid equivalent (GAE). Saponification followed by a liquid‐liquid solvent extraction released bound phenols ranging from 2,304.9 ± 483.0 to 5,386.1 ± 927.5 μg/g of bran GAE, contributing 66–82% of the total wheat bran phenolic content. Total phenolic content ranged from 3,406.4 ± 32.3 to 6,702.7 ± 19.6 μg/g of bran GAE, with the average being 5,197.2 ± 804.9 μg/g of bran GAE. Antioxidant activity ranged from 11.86 ± 2.59 to 20.12 ± 0.51%, while the overall average was 15.6 ± 2.2%. Based on varietal means, antioxidant activity correlated with free, bound, and total phenolic content (r = 0.8, P < 0.05).  相似文献

Corn grain production could be affected by several fungal pathogens responsible for the production of mycotoxins. The aims of this study were to determine the evolution of phenolic acids and total antioxidant activity (TAA) during kernel development and to evaluate their potential protective role in minimizing mycotoxin contamination in six corn genotypes (four open‐pollinated varieties and two hybrids) characterized by a wide array of kernel traits. TAA and free and cell wall‐bound phenolics showed significant differences among corn genotypes at different stages of development, with the highest values found at the beginning of kernel development. Ferulic, p‐coumaric, and caffeic acids were the main cell wall‐bound phenolic acids during kernel development, whereas chlorogenic acid was the main free phenolic acid. A significant negative correlation was observed between deoxynivalenol contamination at harvest maturity and free phenolic acids and TAA at the beginning of kernel development, whereas no significant correlation was observed with fumonisin contamination. In conclusion, free phenolic acids are evidently involved in the resistance mechanism toward deoxynivalenol contamination, whereas their role toward fumonisin contamination was not elucidated under field conditions, implying that components other than phenolic acids may be responsible for this latter type of resistance.  相似文献

Tef, Eragrostis tef (Zucc.) Trotter, is a cereal crop originated and diversified in Ethiopia, where it is used to produce a range of food products. This study aimed to profile and quantify the phenolic composition and antioxidant potential of seven tef grain varieties. Soluble and bound phenolics ranged from 37 to 71 and from 226 to 376 mg of gallic acid equivalent/100 g dry basis (db), and soluble and bound flavonoid contents varied between 36 and 64 and between 113 and 258 mg of catechin equivalent/100 g db, respectively. Protocatechuic, vanillic, syringic, p‐coumaric, sinapic, ferulic, and rosmarinic acids, catechin, and naringenin were detected at least in three of the varieties studied. The dominant phenolic compounds were catechin, rosmarinic acid, and ferulic acid in the soluble extracts, whereas ferulic, rosmarinic, and p‐coumaric acids were the dominant ones in the bound extract. Gallic, caffeic, and salicylic acids were not detected in any of the varieties studied. The majority (>84%) of tef grain phenolics were found in bound form, contributing >84% of total 2,2‐diphenyl‐1‐picrylhydrazyl antioxidative capacity and >80% of total ferric reducing antioxidant power. These results clearly demonstrated the differences in phenolic profile among tef grain varieties. These results are relevant for developing healthy and nutritious tef‐based food products.  相似文献

为了探究墨鱼缠卵腺糖蛋白(CGG)的抗氧化活性及抑菌活性,本试验通过测定CGG的超氧阴离子自由基清除率、DPPH自由基清除率、羟基自由基清除能力、小鼠体内过氧化氢酶(CAT)活性及谷胱甘肽过氧化物酶(GSH-PX)活性等研究CGG体内外抗氧化活性,并通过抑菌试验探讨了CGG的抑菌活性。结果表明,随着CGG浓度的增大,超氧阴离子自由基清除率从17.51%增加至55.84%,DPPH自由基清除率从5.7%增加至19.5%,羟基自由基清除能力从10.38%增加至57.94%;与对照组相比, 低、中、高剂量组小鼠体内的CAT 活性分别提高了21.91%、126.29%、135.63%,GSH-PX活性分别提高了2.04%、24.69%、28.13%。抑菌试验结果表明,当CGG浓度为14 mg·mL-1时,大肠杆菌(Escherichia coli)、金黄色葡萄球菌(Staphylococcus aureus)、假单胞菌(Pseudomonadaceae)的抑菌圈分别为15.7、13.6、12.5 mm,MIC分别为1.25、7、7 mg·mL-1,MBC分别为14、28、14 mg·mL-1。综上表明,CGG具有一定的抗氧化和抑菌活性,但抑菌效果较弱。本研究结果为墨鱼缠卵腺的合理利用提供了一定的理论基础,同时对提高水产资源利用率有一定的参考价值。  相似文献

Buckwheat (Fagopyrum esculentum), a highly nutritious pseudocereal rich in bioactive compounds, is principally cultivated in central and eastern European countries. Buckwheat groats and husks of 10 cultivars were subjected to nutritional composition analysis and in vitro starch digestibility determination. Significant genetic variation was detected in buckwheat groats for 1,000‐kernel weight (16.5–39.8 g), protein content (10.2–17.9%), soluble dietary fiber (1.4–3.4%), insoluble dietary fiber (2.3–8.6%), total dietary fiber (3.6–10.6%), free phenolics (4.5–17.1 mg of gallic acid equivalent [GA]/g), and total phenolics content (6.8–20.7 mg of GA/g). The buckwheat husks exhibited large differences between cultivars in protein content (3.0–6.5%), bound phenolics (6.7–26.1 mg of GA/g), and total phenolics content (32.4–58.6 mg of GA/g), which was 1.5–8 times higher than in the groat. Cooked and cooled buckwheat groats exhibited lower starch digestibility and greater resistant starch content than raw buckwheat groats. Buckwheat cultivars with unique nutritional composition, such as Co901 and Ta‐1, were identified for future breeding.  相似文献

为探讨紫菜多糖功能活性,采用超声波辅助纤维法提取分离紫菜多糖(PP),研究PP的抗氧化活性及其对小鼠体外免疫调节的影响。结果表明,PP经Cellulose DEAE-52柱层析得到7个组分PP1、PP2、PP3、PP4、PP5、PP6和PP7,得率分别为5.18%、11.21%、17.15%、19.88%、4.77%、3.02%和1.24%。选取PP和2个主要组分(PP3,PP4)进行抗氧化及小鼠体外免疫调节作用研究,发现PP、PP3和PP4均能有效清除DPPH·和·OH,抑制小鼠肝组织的脂质过氧化,对Fe~(2+)和H_2O_2诱导的肝组织过氧化物损伤具有保护作用,能减少线粒体肿胀和红细胞溶血的发生。此外,PP3和PP4不仅具有直接及协同丝裂原刀豆蛋白A(ConA)刺激淋巴细胞增殖的作用,还具有双向免疫调节的作用。本研究结果为进一步探讨紫菜多糖功能活性及其作用机制奠定了基础。  相似文献

Effects of hydrothermal treatments (steaming, roasting) of oat grain on β-glucan extractability and rheological properties were tested on oat cultivars with low (Robert) and high (Marion) β-glucan content. Steaming of grain reduced the amount of β-glucan that could be extracted, compared with raw or roasted grain, but the extracts from steamed grain had much greater viscosity. Increased extraction temperatures increased the amount and the average relative molecular mass (M r) value of β-glucan extracted. In boiling water extractions, the average M r values among raw, roasted and steamed oat samples were equivalent, but extracts from steamed oat grain had significantly higher intrinsic viscosity than the extracts from roasted or raw oat grains. β-glucan solutions purified from steamed grain extracts were very viscous and highly pseudoplastic, as described by the power law equation. Oat β-glucan from steamed samples were more viscoelastic than β-glucan from roasted or raw oat samples. Because viscous properties of β-glucan from boiling water extracts are influencedhydrothermal treatments without affecting polymer molecular weight, polymer interaction with the solvent must be affected. Steaming may disrupt intramolecular cross-linkings in native β-glucan, allowing a linear chain configuration to generate greater viscosity.  相似文献

Plant phenolics and tocopherols content were determined in light and wholegrain buckwheat and wheat flour. Antioxidant activity of flours were comparatively assessed by scavenging activity on 1,1‐diphenyl‐2‐picrylhydrazyl (DPPH), hydroxyl (OH), and superoxide anion (O2•–) radicals, reducing activity, and chelating activity on Fe2+. Rutin, quercetin, and ferulic acid were quantified in both buckwheat flours, while ferulic acid was quantified in wholegrain wheat flour. Significantly higher content of phenolics and tocopherols was found in buckwheat than in wheat flours. Tocopherols in buckwheat flours were present in the order: γ‐ > α‐>> δ‐tocopherol, and in wheat flours: α‐ > γ‐ >> δ‐tocopherol. Buckwheat flours possessed better scavenging abilities on DPPH, OH and O2•– radicals, as well as better reducing activity, while wheat flours showed better chelating activity on Fe2+, according to IC50 values. Results suggest the possibility of improving the antioxidant properties of wheat‐based food products through addition of buckwheat flour.  相似文献
