Influence of six (10, 20, 30, 40, 50 and 60%) levels of bruchids infestation on the contents of selected antinutritional factors-phytic acid, saponins, trypsin inhibitors activity (TIA) of three (chickpea, red gram, and green gram) pulses was studied. Comparisons of infested samples were made with uninfested controls of each pulse. The three antinutritional factors viz TIA, phytic acid and saponins were found to increase with the increase in the level of infestation. All the control pulse values of the phytic acid, saponins and TIA were significantly lower than those of the infested samples. Barring a few exceptions, the differences in the contents of antinutritional factors in pulses infested at different levels were significant (P<0.05).  相似文献

African breadfruit (Treculia africana Decne) seeds were either boiled or roasted and then milled into flour. Chemical composition, functional properties and storage characteristics of raw and treated flours and the effect of partial proteolysis on selected functional properties of the raw flour were determined. Raw flour contained 20.1% crude protein, 2.5% total ash and 13.7% fat. Heat processing significantly (p<0.05) improved in vitro protein digestibility, and water and fat absorption capacities but decreased bulk density, nitrogen solubility, emulsion and foaming properties, trypsin inhibitor, and phytic acid and polyphenol contents of the samples. Boiling proved more effective than roasting for improving protein digestibility, emulsion capacity and foam stability and reducing antinutritional factor levels. Partial proteolysis increased nitrogen solubility, bulk density and water and fat absorption capacities but decreased foam capacity at hydrolysis levels greater than 35%. Fatty acid and peroxide values of the samples increased during storage. Compared to raw samples, heat processed samples had significantly (p<0.05) lower and more acceptable peroxide values and free fatty acid contents and higher and more stable water (3.0 g/g sample) and fat (2.4 g/g sample) absorption capacities.  相似文献

A comparative study was conducted with four improved cowpea (2 pod bug resistant and 2 susceptible) varieties to assess the effect of autoclaving at 105°C under 15 psi for 30 min on their protein quality, as measured by the levels of some antinutritional factors and performance of rats fed the different cowpea diets. Also, the relationships between antinutrients in the cowpeas and protein quality indicators were examined. Results showed that autoclaving completely eliminated trypsin inhibitor, hemagglutinin and HCN, whereas it reduced significantly (p<0.01) the levels of phytic and tannic acids in the cowpeas. In both raw and autoclaved forms, the insect susceptible cowpeas were better (P<0.05) utilized than their resistant counterparts, a condition which was attributable to lower levels of antinutrients in the susceptible varieties. In the raw cowpeas, trypsin inhibitor, hemagglutinin and HCN were significant variables affecting cowpea protein utilization, while in autoclaved samples, tannic and phytic acids were important though nonsignificant (P>0.05) factors. It was concluded that autoclaving at the above temperature and time improved the protein quality of the insect susceptible more than the insect resistant cowpea varieties.  相似文献

The effects of cooking treatments (boiling, autoclaving and microwavecooking) and germination on the nutritional composition and antinutritionalfactors of chickpeas were studied. Cooking treatments and/or germinationcaused significant (p < 0.05) decreases in fat, total ash, carbohydratefractions, antinutritional factors, minerals and B-vitamins. Germination wasless effective than cooking treatments in reducing trypsin inhibitor,hemagglutinin activity, tannins and saponins; it was more effective inreducing phytic acid, stachyose and raffinose. Cooking treatments andgermination decreased the concentrations of lysine, tryptophan, totalaromatic and sulfur-containing amino acids. However, cooked andgerminated chickpeas were still higher in lysine, isoleucine and totalaromatic amino acid contents than the FAO/WHO reference. The lossesin B-vitamins and minerals in chickpeas cooked by microwaving weresmaller than in those cooked by boiling and autoclaving. Germination resultedin greater retention of all minerals and B-vitamins compared to cookingtreatments. In vitro protein digestibility, protein efficiency ratio andessential amino acid index were improved by all treatments. The chemicalscore and limiting amino acid of chickpeas subjected to the varioustreatments varied considerably, depending on the type of treatment. Basedon these results, microwave cooking appears to be the best alternative forlegume preparation in households and restaurants.  相似文献

Five greengram varieties, viz. Mg 161, M3, Co2, Pusa 8793 and Pusa baisakhi, were analyzed for phytic acid, tannic acid and trypsin activity. In India, the seeds ofCanavalia gladiata andC. ensiformis have traditionally been eaten by the aborigines, but they are less popular among the civilized people. The data on the chemical composition and nutritional quality of these seeds are not readily available. The proximate composition, mineral composition, the contents of total (true) proteins, seed protein fractions, profile of seed protein amino acids and certain antinutritional factors were analysed and reported in the present study. The seeds ofC. ensiformis contain more crude protein, crude lipid and minerals like Na, K, Ca, Mg, P, Fe and Mn than doesC. gladiata. Both albumins and globulins together constitute the major bulk of seed proteins. In both the species ofCanavalia investigated, glutamic acid, aspartic acid, isoleucine+leucine, tyrosine+phenylalanine and lysine are the major amino acids of seed proteins. The presence of certain antinutritional factors (total free phenols, tannins, lectins, L-DOPA, trypsin inhibitor activity) is also reported for both species ofCanavalia.  相似文献

Seeds of the tribal pulse,Mucuna gigantea, were analysed for proximate composition, total (true) seed proteins, seed protein fractionation, amino acid composition, minerals and antinutritional factors. Crude proteins, crude lipids, ash and nitrogen free extractives constituted 30.62%, 9.03%, 5.99% and 42.79%, respectively. The calorific values of 100 g dry matter of seed material is 374.91 kCal. The essential amino acids, leucine +isoleucine, are present in relatively large quantities. The seeds are rich in minerals like K, Ca, Mg and Fe. Antinutritional substances like total free phenols and tannins, trypsin inhibitor activity and haemagglutinating activity also were investigated.  相似文献

The effect of blanching on the antinutritional content was studied in cabbage, turnip, collard, sweetpotato and peanut leaves. All the vegetables contained various amounts of phytic acid, tannic acid and/or oxalic acid. Tannic acid was found in largest amounts ranging from 1266.00 mg/100 g in cabbage to 491.00 mg/100 g in sweetpotato. Phytic acid content ranged from 0.31 mg/100 g in sweetpotato to 3.97 mg/100 g in collard. Oxalic acid was in trace amounts in cabbage and turnip; but high concentrations were found in sweetpotato (469.67 mg/100 g) and peanut greens (407.00 mg/100 g). Levels of both tannic acid and phytic acid were significantly (p<0.05) reduced by conventional and microwave blanching methods while oxalic acid levels were not significantly (p<0.05) reduced in most of the treatments by either of the blanching methods. In general, blanching is recommended as an effective method for reducing the antinutritional factors in green vegetables, however, further investigation on the heating times for both conventional and microwave blanching methods has been suggested.  相似文献

为了最大程度降低豆浆中抗营养因子含量的同时保证品质优良,以干豆制浆为对照,利用不同浸泡介质(水、柠檬酸溶液、NaHCO_3溶液)及不同浸泡条件,探究前处理工艺条件以及介质的改变对豆浆中抗营养因子及营养品质的影响。结果表明:浸泡处理能有效降低豆浆中胰蛋白酶抑制因子活性和植酸含量,但不同介质对不同抗营养因子的效果不同。经浸泡处理后的胰蛋白抑制因子的最低活性为30.88±1.35 TIU·mg-1,相对于未处理组降低了54%;植酸最低含量为3.46±0.15 mg·mL-1,相对于未处理组降低了77.4%;而经浸泡处理后的单宁含量却显著上升(P<0.05)。从降低胰蛋白酶抑制因子活性的效果来看,NaHCO_3>水>柠檬酸;从降低单宁含量的效果来看,柠檬酸>NaHCO_3>水;从降低植酸含量的效果来看,柠檬酸>水>NaHCO_3。除抗营养因子外,豆浆的品质指标也发生了显著变化,NaHCO_3浸泡组的总体品质最优,除了个别品质指标(蛋白质含量)与水浸泡组相比差异不显著(P>0.05),其它品质成分含量均显著高于水浸泡组,而柠檬酸浸泡组的品质为3组中最差。选取NaHCO_3溶液作为浸泡介质进行正交工艺优化,当浸泡温度为25℃,浸泡时间为16 h,浸泡豆水比为1∶4,NaHCO_3浓度为0.45%时,豆浆的抗营养因子的去除效果最好,品质最优。  相似文献

Tepary bean (Phaseolus acutifolius var. latifolius), a native North American legume adapted to arid/semiarid lands was partially evaluated as a potential food source for people of African and Middle Eastern regions. To indicate the acceptability of these pulses, traditional Nigerian and Saudi Arabian foodstuffs were formulated with teparies substituted for beans commonly used in these regions. Organoleptic evaluation of these food products by students native to the area of recipe origin indicated the dishes to be moderately to highly acceptable. Chemical analyses of this species revealed tepary beans to be very similar in proximate composition, amino acid profile and content of various minerals to other grain legumes (cowpeas, chickpeas and fava beans) of the African/Middle Eastern region. Protein contents of tepary samples averaged 23.0%, whereas protein quality was found limiting in sulfur amino acids. Laboratory examination of raw tepary samples for antinutritional factors uncovered levels of flatulent oligo saccharides, trypsin inhibitors and phytic acid commonly associated with grain legumes. However, lectin assays revealed greater agglutination associated with tepary composites than in fava, chickpea and cowpea samples. All bean samples were simmered resulting in fully cooked materials which exhibited low levels of nutritional antagonists. Raw and cooked samples of cultivars ofLens esculenta (Lentils),Pisum sativum (peas),Phaseolus vulgaris (beans),Phaseolus aureus (navy beans)Cicer arietnum (gram), andLathyrus sativus (dhal) as well as precooked commercial products were analysed for amino acids, trypsin inhibitor activity and in vitro protein digestibility. Of the fifteen samples used in the study one lentil sample, one pea sample, two gram samples and one sample of khesari dhal were from Bangladesh, one gram sample was from Sri Lanka. The other samples were obtained either in shops in Norway or from an industrial firm. The latter were also obtained precooked and dried. The two samples obtained in shops were used with hull and dehulled.Neither cooking by a Bangladeshi household procedure nor industrial precooking and drying had any effect on the amino acid contents of the samples.Cooking and precooking reduced the trypsin inhibitor activity of the raw samples more when the original activity was high then when it was low. The inhibitor activity was similar between samples after cooking.Cooking and precooking and drying increased the in vitro protein digestibility in all samples except in the lentils in which the digestibility was reduced.In the raw samples protein digestibility was negatively correlated with the trypsin inhibitor activity.  相似文献

Chick pea seeds of twenty eight varieties were analysed for alpha amylase inhibitor activity (AIA) using salivary amylase. The effects of heat treatment and germination on the activity of the antinutritional factor was investigated. Heat treatment and germination decreased the activity of amylase inhibitor. Chick pea meal was also subjected to UV irradiation and pressure cooking. These treatments decreased alpha amylase inhibitor activity. The amylase inhibitor activity decreased as the days of germination increased and negligible inhibitor activity was observed on the 6th day of germination.  相似文献

Two germplasms of the tribal pulse,Mucuna monosperma Dc. ex Wight, viz., [1] Thirunelly Reserve Forest, Wynaad District (Kerala) and [2] Siruvani Reserve Forest, Coimbatore District (Tamilnadu), were analysed for proximate composition, total (true) seed proteins, seed protein fractionation, amino acid composition, fatty acids, minerals and antinutritional factors. Crude proteins, crude lipids, ash and nitrogen free extractives constituted 23.10%, 4.36%, 3.80%, 61.74%, respectively, in Tamilnadu germplasm; whereas, in Kerala germplasm they constituted 20.13%, 8.99%, 3.60% and 61.69%, respectively. The calorific values of 100 g dry matter of seed material are 408.19 KCal (Kerala) and 378.60 KCal (Tamilnadu) germplasms. Essential amino acids like methionine, cystine, threonine and valine were found to be limiting in the seed proteins of both the germplasms. The fatty acids like lauric acid and palmitic acid are found to be common in both the germplasm seed samples, while linoleic and oleic acids in Kerala germplasm and stearic acid in Tamilnadu germplasm are present. The Tamilnadu germplasm seems to be a rich source of sodium, magnesium, zinc, manganese, copper and iron; whereas the Kerala germplasm seems to be a rich source of phosphorus. Antinutritional substances like total free phenols, tannins, L-DOPA, trypsin inhibitor activity and phytohaemagglutinating activity also were investigated.  相似文献

Five wildPhaseolus vulgaris beans were compared with five cultivatedPhaseolus vulgaris beans in proximate composition, total (true) protein, amino acid composition, and toxic and antinutritional factors. The wild beans contained more protein (25.5% vs. 21.7%), ash (5.15 vs. 4.15%), crude fiber (7.08% vs. 5.04%) compared to cultivated beans while the former contained less fat (0.56 vs. 0.89%) and carbohydrates (61.64 vs. 68.05%). Sulfur amino acids were found to be limiting in both groups of bean as expected; however, the cultivated beans had a higher content of the limiting amino acids. Therefore, the cultivated beans showed a better amino acid profile than the wild beans. Toxic factors were not found in either type of bean; the determinations included saponins, alkaloids, and cyanogenic glycosides. The antinutritional factors investigated were hemagglutinins (lectins) and trypsin inhibitors. The wild beans presented a higher content of trypsin inhibitors (28 TUI per mg) and lectins (9.6) than the cultivated beans did (21 TUI per mg and 7 respectively). From the chemical point of view, domestication seems to be positive; however, the better protein nutritive quality of the cultivated beans should be further confirmed by biological assays.  相似文献

The effects of dry heat (roasting) and moist heat (boiling) on in vitro protein digestibility, protein fractions and other chemical properties of African breadfruit (Treculia africana Decne) seed that affect their utilization as a source of human food were investigated. Chemical analyses showed that the crude protein and fat contents of the unprocessed (raw) seeds were 20.1% and 13.7%, respectively. The level of phytic acid in the raw seed (1.19 mg/g) was lower than the levels found in some commonly consumed pulses in Nigeria. Albumin and globulin protein fractions were found to be the major seed proteins of African breadfruit seed, constituting 67.8% of the total protein of the raw seed. There were no significant (p<0.05) differences between crude protein, ash and fat contents of the raw and heat processed samples. Boiling proved more effective than roasting for improving protein digestibility and for reducing the levels of trypsin inhibitor, phytic acid and polyphenols of the samples. The complete removal of these antinutrients, however, would require a more severe heat treatment of the seed, which in turn would profoundly reduce the nutritional value and availability of proteins, as demonstrated by the low values obtained for in vitro protein digestibility, protein fractions and protein extractability.  相似文献

Pachyrhizus erosus seeds were analysed for proximate composition, minerals, protein fractions, antinutritional factors, and rotenoids. The seeds showed a high content of proteins, lipids, Fe and Ca, in comparison to other legumes. Glutelins constitute the highest protein fraction, followed by globulins. Antinutritional substances detected as tannins, hemagglutinating activity and trypsin inhibitory activity, were in low concentrations. Seeds were also processed to obtain a flour which showed proper characteristics, good in vitro digestibility, significant rotenoid reduction level and amino acid composition rich in essential amino acids, except methionine.  相似文献

Seeds from seven species of wild legumes of the South India were analyzed for proximate composition, mineral profiles, amino acid profiles of total seed protein, in vitro protein digestibility, and certain antinutritional factors to assess their potential as alternative sources of protein crops. The major findings of the study were as follows: crude protein ranged from 20.3 to 35.0%, crude lipid 3.1–9.6%, crude fiber 5.9–12.1%, ash 2.7–5.1%, and carbohydrates 49.2–61.8%. Minerals viz., sodium, potassium, calcium, magnesium, phosphorus, iron, copper, zinc, and manganese occurred in the range 42.9–135.9, 556.2–1639.5, 304.5–572.2, 174.9–686.7, 98.4–947.8, 3.6–16.4, 0.2–1.2, 2.0–30.0, and 1.0–3.9 mg/100 g seed flour, respectively. Profiles of amino acids of total seed proteins detected in the present study revealed that levels of valine, phenylalanine, tyrosine, isoleucine, and histidine of all the seven wild legume seed samples, threonine of Canavalia ensiformis and C. gladiata, leucine of Mucuna pruriens var. pruriens, and lysine of Cassia floribunda and C. obtusifolia were found to be higher than FAO/WHO (1991) requirement pattern. The in vitro protein digestibility of the legumes under study ranged from 63.39 to 83.32%. Antinutritional factors such as total free phenolics ranged from 0.41 to 5.96%, tannins from 0.04 to 0.60%, L-DOPA from 1.34 to 8.37% and trypsin inhibitor activity from 13.48 to 65.43 TIU/mg protein. The detected antinutritional factors probably have little nutritional significance if the seeds are properly processed.  相似文献

The effects of heat treatments on the proximate composition, energy content, and levels of some antinutritional factors in brown and marble-colored African yam bean (AYB) seed flours were investigated. In raw brown and marble-colored AYB seed flours; moisture content, dry matter, crude protein, crude fat, ash, total carbohydrate and caloric value did not differ significantly at the 5% level. Autoclaving and cooking slightly increased the moisture level. Crude protein, crude fat, and ash contents were decreased by autoclaving and were further decreased by cooking. The decrease was not, however, considerable for the AYB that is not eaten raw and whose full nutritional potential as a legume can be derived only when heat treated, as previous reports have indicated for legume seeds.The levels of the toxicants were generally higher in the raw brown AYB compared to the marble-colored, and were generally reduced by both autoclaving and cooking. In the most commonly available and consumed marble-colored AYB, autoclaving at 121 °C, 15 psi for 20 min decreased cyanogenic glycosides by 46%, oxalate by 48.9%, tannin by 15.0%, saponin by 14.8% and trypsin inhibitors by 61.3% while cooking for 3.5 hours in tap water decreased these toxic factors by 66.5%, 70.3%, 72.2%, 48.7%, and 86.0%, respectively.The results indicate that for raw samples, varietal difference did not significantly affect nutrient composition though the toxicants were generally higher in the brown AYB than the marble-colored. Autoclaving decreased both nutrient value and the level of toxicants in the two seed types; values were further reduced by cooking. Of the toxicants, trypsin inhibitor was found to be the most heat-labile and of the heat treatment methods, cooking to tenderness is recommendable.  相似文献

Phytic acid, saponin and polyphenol contents in grains of various varieties of black gram (Vigna mungo) Mung bean (Vigna radiata L.) amphidiploids ranged from 697 to 750, 2746 to 2972 and 702 to 783 mg/100 g, respectively. Domestic processing and cooking methods including soaking, ordinary and pressure cooking of soaked and unsoaked seeds, and sprouting significantly lowered phytic acid, saponin and polyphenol contents of the amphidiploid seeds. Soaking for 18 h removed 31 to 37% of the phytic acid; the extent of removal was higher with long periods of soaking. Saponins and polyphenols were relatively less affected. Loss of the antinutrients was greater when soaked instead of unsoaked seeds were cooked. Pressure cooking had a greater effect than ordinary cooking. Antinutrient concentrations declined following sprouting; the longer the period of germination the greater was the reduction.  相似文献

The boiled seeds of Abrus precatorius L. are eaten by the residents of the Andaman Islands in India. The seeds were analysed for proximate composition, total (true) protein, seed protein fractions, amino acid profile of seed proteins, minerals and certain antinutritional factors. The seed proteins are rich in most of the essential amino acids, and they are deficient only in cystine and threonine, when compared to the WHO/FAO requirement pattern. The antinutritional factors (total free phenols, tannins, trypsin inhibitor activity and haemagglutinating activity) were also investigated.  相似文献
