The objective of this study was to investigate the changes in muscle fiber bundles of cattle of different breeds during growth. Different numbers of muscle fibers are surrounded by connective tissue to form bundles macroscopically visible as meat fibers or meat grain, a common meat quality trait. To determine the influence of breed and age on morphological characteristics of muscle fiber bundles, 4 cattle breeds with different growth impetus and muscularity were reared and slaughtered under experimental conditions. German Angus, a typical beef cattle; Galloway, a smaller beef type; Holstein Friesian, a dairy type; and double-muscled Belgian Blue, an extreme type for muscle growth, were used. Between 5 and 15 bulls of each breed were slaughtered at 2, 4, 6, 12, or 24 mo of age, and slices of semitendinosus muscle were removed. Muscle structure characteristics were determined by computerized image analysis. During growth, the muscle cross-sectional area enlarged (P < 0.001) about 5-fold in double-muscled Belgian Blue bulls and about 4-fold in the other breeds. This was a result of the enlargement (P < 0.001) of primary bundles and muscle fibers. The bundle size was similar (P > or = 0.15) in bulls of German Angus and Galloway in all age groups and was doubled (P < 0.001) in double-muscled Belgian Blue animals from 4 mo of age on. The Holstein Friesian bulls had the smallest (P < 0.001) muscle fiber bundles at 24 mo of age. The number of muscle fibers per bundle and the number of bundles per muscle remained nearly constant (P > 0.05) during growth. This supports the existing view that the structure of the muscle is already fixed in prenatal life. The double-muscled Belgian Blue bulls showed a more than 2.5-fold greater (P < 0.001) number of muscle fibers per primary bundle compared with the other breeds investigated. The larger muscle fiber bundles led to a smaller amount of connective tissue per muscle area in double-muscled cattle. The coarser grain of meat in double-muscled Belgian Blue bulls and in older animals was not related to greater shear force values.  相似文献

The objective of this study was to investigate the growth- and breed-related changes of muscle fiber characteristics in cattle and their importance to meat quality. Four cattle breeds with different growth impetus and muscularity were reared and slaughtered under experimental conditions. German Angus as a beef type, Galloway as a hardy type, Holstein Friesian as a dairy type, and double-muscled Belgian Blue as an extreme type for muscle growth were used. Between 5 and 17 bulls of each breed were slaughtered at 0, 2, 4, 6, 12, 18, and 24 mo of age. Muscle fiber traits were determined and classified by computerized image analysis, and several measures of meat quality were also determined, including shear force value, meat color, and i.m. fat content. The postnatal growth of semitendinosus muscle in cattle was characterized by a nearly 10-fold increase of muscle fiber area from birth to 24 mo of age. In the first few months after birth, a transformation of type IIA fibers into IIB fibers was found, whereas type I fibers were nearly unaffected by age. The apparent total muscle fiber number of semitendinosus muscle did not increase during postnatal life. These results confirm that the fiber number is determined in embryonic development. Throughout the study, the double-muscled Belgian Blue (BBDM) bulls had almost twice the fiber number of the other breeds, emphasizing a more extensive hyperplasia of muscle fibers during embryonic development in BBDM compared with the other three breeds. The apparent number of type I fibers was, however, not affected by breed, which suggests that the additional fibers found in BBDM postnatally were type IIB and IIA fibers. We did not find significant differences in muscle fiber total number, muscle fiber type frequencies, or meat quality characteristics among breeds, with the exception of BBDM. Having pooled the four breeds, paler meat was related to a higher frequency of type IIB fibers, a lower area of type IIA and type I fiber, and a higher total muscle fiber number. These findings based on data of double muscling give us some hints for biological causes for the variation of meat quality. Further investigation, in particular within each breed, is necessary to identify the superior fiber traits for bovine meat production.  相似文献

The deposition of fat in muscle, recognized by the consumer as marbling, is an important meat quality trait. The objective of the study was to provide additional insights into the quantitative extent of marbling by means of computer image analysis. Fifty-one F(2) generation German Holstein and Charolais crossbreed cattle, 18 mo of age, were used to determine relationships among marbling traits, adipocyte size, and the amount of adipose tissue in different depots. Differences were recorded among the size of i.m. adipocytes in different groups of marbling flecks, divided according to the location in the muscle cross-section and to the size of the marbling flecks. The results showed positive correlation between i.m. adipocyte size and the weight of s.c. fat, intestinal fat, omental fat, and perirenal fat (r = 0.50, 0.61, 0.70, and 0.63, respectively, P < 0.001). The i.m. adipocyte size was correlated with i.m. fat content, number of marbling flecks, proportion of marbling fleck area, and total length of marbling flecks (r = 0.71, 0.44, 0.62, and 0.55, respectively, P < 0.01). The number of marbling flecks was also correlated with i.m. fat content, proportion of marbling fleck area, and total length of marbling flecks (r = 0.58, 0.62, and 0.91, P < 0.01, respectively). The ventral marbling flecks had a 5-fold larger fleck area, 4-fold more adipocytes, and larger adipocytes (P < 0.001). Larger marbling flecks contained larger adipocytes (P < 0.001). Moreover, compared with the small marbling flecks, there was a 48-fold larger fleck area and 26-fold more adipocytes in the large marbling flecks. The results indicate that i.m. fat deposition increases concurrently with the other fat depots but is still independent. Furthermore, the i.m. fat is preferentially deposited in the ventral area of LM. Although the i.m. adipocyte size has an important effect on the traits of marbling flecks, cell number plays a greater role in i.m. fat deposition than cell size.  相似文献

Growth and testicular development between 7 and 15 mo of age were evaluated in bulls produced by mating sires of six breeds (Hereford, Angus, Belgian Blue, Brahman, Boran, and Tuli) to Angus, Hereford, and MARC III (four-breed composite) cows. At 12 mo of age, Angus- and Hereford-sired bulls had the heaviest body weight (P < 0.08 to 0.001), whereas Brahman- and Belgian Blue-sired bulls were intermediate, and Boran- and Tuli-sired bulls weighed the least. Bulls sired by European breeds grew more rapidly after weaning (P < 0.01) than did Brahman-, Boran-, and Tuli-sired bulls, and these differences in growth rate were maintained through 15 mo of age, indicating that offspring of heat-adapted sire breeds (Brahman, Boran, and Tuli) have lower postweaning rates of gain, particularly during winter months, than do offspring of nonheat adapted sire breeds. Testis size was smaller initially (P < 0.01) and remained smaller in offspring of heat-adapted sire breeds through yearling age. By 15 mo of age, testis size was largest (P < 0.06 to 0.001) in Angus-sired bulls and had become similar among Hereford-, Brahman-, Boran- and Belgian Blue-sired bulls but remained smaller (P < 0.02 to 0.001) in Tuli-sired bulls. Thus, offspring of heat-adapted sire breeds had delayed testicular development compared with that of nonheat adapted sire breeds, particularly through yearling age. At puberty, Angus-sired bulls were 23 to 82 d younger (P < 0.05 to 0.001) than all other sire breeds except Hereford, and Brahman-sired bulls were older at puberty (P < 0.05 to 0.001) than were bulls of all other sire breeds except Boran. Testis size at puberty was quite similar among breeds of bulls (scrotal circumference = 27.9 +/- 0.1 cm) despite large breed differences in age, body weight, and hip height. Thus, measurement of yearling testis size was a reliable indicator of age at puberty among widely divergent breeds of bulls. In addition, the lower postweaning rates of gain and the smaller and slower testicular development in offspring of heat-adapted sire breeds should be noted by cattle producers considering use of such breeds in crossbreeding and breed improvement programs.  相似文献

Understanding mechanisms that regulate growth and reproduction are important for improving selection strategies in cattle. In this study, Angus, Brangus, and Brahman bulls (n = 7 per breed) of similar age were selected from a group of 65 weanlings. Bulls were evaluated after weaning (i.e., approximately 6 mo of age) for 112 d for serum concentrations of metabolic hormones and glucose, growth, and reproductive traits. Performance data and blood sera were collected on d 0, 28, 56, 84, and 112. Sera were also collected in periods from d 50 to 59 (56D) and 103 to 112 (112D). Angus bulls were heavier (P < 0.05) throughout the study than Brahman bulls and were heavier than Brangus bulls on d 56, 84, and 112. Initial and final BW for Angus, Brangus, and Brahman bulls were 292.7, 260.6, and 230.4 and 468.3, 435.6, and 350.7 +/- 12 kg, respectively. Conversely, Brahman bulls had greater hip height (P < 0.05) than Brangus, and Brangus were taller (P < 0.05) than Angus. Angus bulls had the greatest (P < 0.05) scrotal circumference (SC) and Brahman bulls the least. Mean SC across days was 31.5, 29.7, and 25.0 +/- 0.6 cm for the three respective breeds. Serum testosterone was greater (P < 0.01) in Angus and Brangus bulls (10.0 and 8.9 +/- 1.4 ng/mL) than in Brahman bulls (4.0 +/- 1.4 ng/mL) throughout the study. After d 112, 100, 86, and 57% of the Angus, Brangus, and Brahman bulls passed a breeding soundness exam (P = 0.51). Serum concentrations of IGF-I and leptin were greater (P < or = 0.06) in Angus bulls on d 56, 84, and 112 than in Brangus and Brahman bulls. Serum concentrations of GH (P < 0.08) and glucose (P < 0.03) were greater in Brangus bulls than in Angus or Brahman bulls throughout the study. Prediction analyses suggested that serum concentrations of leptin could be used to predict (P < or = 0.08) BW and SC (R2 > 0.82) in the 56D and 112D periods among these breeds. Leptin was also useful in predicting (P < or = 0.09) serum concentrations of GH and testosterone in the 112D period (R2 > 0.32). Residual correlation analyses with the effect of breed removed suggested that leptin was correlated (r > or => 0.53, P < 0.05) with both SC and serum testosterone. Angus and Brahman cattle differ in phenotype, level of adiposity, and rate of sexual development. Data herein suggest that these characteristics could be due to varying mechanisms by which metabolic hormones such as leptin, GH, and(or) IGF-I are regulated.  相似文献

Marbling is an important criterion for beef quality grading in many countries. The purpose of the current study was to utilize the natural genetic variation to identify major metabolic indicators of marbling in cattle differing in genotypes. Rectus abdominis (RA, oxidative), semitendinosus (glycolytic), and longissimus thoracis (LT, oxido-glycolytic) muscles were taken from steers of different genotypes that expressed high [Angus, n = 16; and crossbred (Angus x Japanese Black), n = 10] or low (Limousin, n = 12) levels of marbling in their meat. Muscles from Angus and crossbred steers were characterized, as expected, by a greater triacylglycerol (TAG) content (P < 0.001) and also by greater protein contents of fatty acid-binding protein specific for heart and muscles (H-FABP; P < 0.001 for RA and P < 0.05 for LT muscle) or for adipocytes (A-FABP; P < 0.001 for RA and LT muscles). Moreover, oxidative enzyme activities (beta-hydroxyacyl-CoA dehydrogenase, citrate synthase, isocitrate dehydrogenase, cytochrome-c oxidase) were greater (P < 0.01 to 0.001) in the 3 muscles studied, whereas glycolytic enzyme activities (phosphofructokinase and lactate dehydrogenase) were lower (P < 0.001) in RA muscle in Angus and crossbred steers compared with Limousin steers. Significant correlations were observed between TAG content and H- and A-FABP protein contents, and oxidative (r > or = +0.55, P < 0.001) or glycolytic enzyme activities (r > or = -0.47, P < 0.001), when the 3 genotypes and muscles studied were considered as a whole. In addition, A-FABP protein content and some oxidative enzyme activities were significantly correlated with TAG content independently of the genotype and muscle effects. In conclusion, A-FABP protein content, as well as oxidative enzyme activities, may be used as indicators of the ability of steers from extreme genotypes to deposit intramuscular fat.  相似文献

Twelve 3/4 Angus (Angus) and 12 Wagyu-cross (1/2 Wagyu x 1/2 Angus) (Wagyu) heifers were weaned at 180 d of age and grazed on endophyte-infected tall fescue for 16 mo before entering the feedlot as 2-yr-olds. Twelve 3/4 Angus heifer calves and 12 Wagyu-cross heifer calves from the following year's calf crop were weaned at 142 +/- 4.1 d of age, immediately adjusted to an 80% concentrate diet, and finished as calves. All heifers were fed a common finishing diet until an estimated 50% of their respective group would grade USDA low Prime or better based on ultrasound predictions. Ultrasound measurements of s.c. and i.m. fat depots were recorded at 60-d intervals throughout the finishing period. Heifers finished as calves had higher (P = 0.02) marbling scores at any given fat thickness and gained more efficiently (P < or = 0.01) at any given marbling score than heifers finished as 2-yr-olds. Gain:feed decreased quadratically (P < or = 0.05) as 12th-rib fat thickness increased for Angus and Wagyu heifers. Gain:feed decreased linearly (P < or = 0.01) for Wagyu calves and quadratically (P < or = 0.01) for Angus calves as 12th-rib fat thickness increased. However, these differences in slope were not different (P = 0.34) as a result of breed among heifers finished as calves. Marbling score increased linearly (P < or = 0.01) as 12th-rib fat thickness increased for Angus and Wagyu heifers finished as 2-yrolds or as calves. However, Wagyu heifers, regardless of age at feedlot entry, had a higher marbling score (P < or = 0.05) at any given 12th-rib fat thickness than Angus heifers. Finishing early-weaned heifers as calves as opposed to 2-yr-olds results in i.m. fat deposition during a period of more efficient growth. Additionally, including Wagyu genetics into the breeding of early-weaned heifers finished as calves or as 2-yr-olds results in higher marbling scores at any 12th-rib fat thickness.  相似文献

A bilateral hip lameness has been found in young beef bulls of the Hereford, Aberdeen Angus, Galloway and Charolais breeds in the United Kingdom, North America and Australia. The incidence is usually small and sporadic, but up to half of the male animals on one farm may be affected clinically by the time they are one year old. Clinical lameness begins at three months to two years old, and very occasionally up to three years of age; some calves are obviously affected at birth. Aberdeen Angus cattle tend to be affected earlier than other breeds. Clinical evidence of the condition is almost entirely confined to the male.  相似文献

Breeding experiments were conducted in 1984, 1985 and 1986, using Angus and Galloway bulls and cows that were obligatory heterozygotes for alpha-mannosidosis. Sixty-nine calves were born in the herd of which 16 were diagnosed as cases of alpha-mannosidosis. The clinical and pathological findings in eight Angus cross Angus, four Galloway cross Angus, and four Galloway cross Galloway calves affected with alpha-mannosidosis are reported. Thirteen calves displayed neurological signs in the early neonatal period. Three Galloway cross Galloway calves were stillborn. The severity of disease caused death or necessitated euthanasia within the first week of life of 10 affected calves. Three Angus cross Angus calves survived 40, 80 and 210 days. These findings illustrate significant variation in the phenotypic expression of alpha-mannosidosis both within and between the breeds.  相似文献

The enlarged muscles of certain breeds of cattle, such as the Belgian Blue, have been shown to result from a marked increase in the number of normal sized muscle fibers. Originally insulin-like growth factors (IGFs) were implicated in this myofiber hyperplasia, as IGFs have been shown to stimulate myoblast proliferation as well as maintain fiber differentiation. Recently it has been reported that mice lacking a myostatin gene, a member of the TGFbeta superfamily, have enhanced skeletal mass resulting from increased muscle fiber number and size. Mutations in this gene have been found in double-muscled cattle, indicating that myostatin is an inhibitor of muscle growth. Myostatin is expressed early in gestation and then maintained to adulthood in certain muscles. Myostatin expression in bovine muscle is highest during gestation when muscle fibers are forming and some of the myogenic regulatory factors have elevated expression over the same period as myostatin. Molecular expression of the IGF axis does not differ between Belgian Blue and normal muscled cattle, and IGF-II mRNA is increased throughout formation of secondary fibers in both breeds. However, myostatin and MyoD expression in muscle differ between normal and hypertrophied muscle cattle breeds. This evidence strongly suggests that lack of myostatin is associated with an increase in fiber number which then results in a marked increase in potential muscle mass in double-muscled cattle.  相似文献

实验旨在了解安格斯牛、利木赞牛和西门塔尔牛与务川黑牛杂交一代的产肉性能和肉品质。随机选取24月龄安务F1、利务F1、西务F1和务川黑牛公牛各3头,测定其屠宰性能和肉品质指标。结果表明:3种牛对务川黑牛杂交改良效果显著(P<0.05),屠宰率、肉骨比以利务F1牛最高,胴体重、净肉重、净肉率以安务F1牛最高,眼肌面积以西务F1牛最高;利务F1牛的熟肉率最高,安务F1牛的剪切力最低,肉色L45min、a45min、b45min值以西务F1牛色泽最亮,安务F1牛肉粗脂肪含量显著低于务川黑牛,利务F1牛肉与务川黑牛肉大理石纹都为3级,安务F1和西务F1牛肉大理石纹则为2级;系水力、滴水损失、水分、蛋白质、pH在不同杂交组合之间差异不显著。综合产肉性能和肉品质考虑,建议选择利木赞牛和安格斯牛作为务川黑牛杂交改良的父本进行推广。  相似文献

The percentage of MUFA to total fatty acids of beef differs among intermuscular, intramuscular, and subcutaneous fat even within an individual cow. Our objective was to investigate the variation of the percentage of MUFA by geometric and sectional change of marbling flecks in rib eye. Longissimus muscles of 8 Japanese Black steers from a common sire and a common maternal grand sire were used. Three slices (1 from rib roast and 2 from sirloin) from each animal were selected for analysis. Five marbling flecks from each slice were randomly taken to obtain the percentage of MUFA using gas chromatography. High-quality digital images of all slices were taken with a mirror-type camera. The area and location of each marbling fleck were calculated by image analysis. The marbling flecks were categorized by area [small <0.4 cm(2), medium 0.4 to 2.0 cm(2), large >2.0 cm(2)], by location (dorsal and ventral), and by slice section through the LM (front, middle, and back). The effects of classification according to the area, location, and slice section were statistically significant (P < 0.05) for the percentage of MUFA. Least squares means of the percentage of MUFA for marbling flecks of sizes small, medium, and large were 56.8, 58.4, and 60.2%, respectively, indicating that larger marbling flecks had greater MUFA (P < 0.05). Those of dorsal, ventral, front, middle, and back were 59.1, 57.8, 55.4, 59.9, and 60.1%, respectively. The percentages of MUFA of the marbling flecks located in the dorsal part were greater than those in the ventral part (P < 0.05). The percentages of MUFA from middle and back were greater than those from front (P < 0.01). We suggest that the area, location, and slice section of marbling would be the determining factors for the percentage of MUFA of marbling.  相似文献

Angus bulls (n = 20) from three pure-bred herds in Georgia were acquired to determine the impact of selecting sires based on phenotypic yearling ultrasound intramuscular fat percentage (UIMF) or UIMF EPD on marbling score of steer progeny. Each year in each herd, pairs of bulls were selected to create large differences based on their age adjusted phenotypic yearling UIMF measurements. The average UIMF, weighted by number of progeny per sire, was 3.75% (SD = 1.10%) and 1.70% (SD = 0.53%) for high UIMF (HU) and low UIMF (LU) bulls, respectively. All available ultrasound measurements collected in the purebred co-operator herds were combined with other ultrasound records collected by the American Angus Association for the computation of genetic values for ultrasound fat thickness, ribeye area, and intramuscular fat percentage. Each year bulls were randomly mated to 14 to 30 commercial Angus females. Carcass weight, fat thickness at the 12th rib, ribeye area at the 12th rib, marbling score, yield grade, and quality-grade measurements were collected on 188 steer progeny. Carcass data were linearly adjusted to 480 d of age at slaughter. Steer progeny sired by HU bulls had higher age-adjusted marbling score and quality grade (P < 0.05), and smaller age-adjusted ribeye area (P < 0.05) than steer progeny sired by LU bulls. No significant differences between phenotypic UIMF lines were found for age-adjusted fat thickness (P = 0.84) and yield grade (P = 0.33) in the steer progeny. The regression of age-adjusted carcass marbling score and quality grade of the steer progeny on ultrasound intramuscular fat percentage EPD of the sires produced highly significant regression coefficients of 90.50 and 49.20, respectively. Thus, yearling Angus bulls selected for high-phenotypic UIMF and UIMF EPD can be expected to produce steer progeny with significantly higher amounts of marbling and quality grade. It also appears that marbling can be increased without corresponding increases in external fat thickness and yield grade.  相似文献

本研究旨在对肉用西门塔尔牛与杂交和牛两试验群体进行肉质性状比较,以期为肉品质性状遗传机制剖析及优质肉牛培育提供理论指导。收集肉用西门塔尔牛与杂交和牛两试验群体肉质性状表型数据,包括眼肌面积、剪切力、系水力、pH、肉色、脂肪颜色和大理石花纹等指标,进行相关性及差异性分析,从而综合评价两群体的肉品质。结果显示,两群体的脂肪颜色、系水力及剪切力呈现两两正相关;肉色与脂肪颜色、pH呈正相关,且肉色与pH呈显著相关(P < 0.05),而系水力与pH、肉色和大理石花纹呈负相关。在两试验群体间,和牛杂交群体的大理石花纹、眼肌面积、pH性状表现为极显著优于肉用西门塔尔牛(P < 0.01)。从性别比较来看,肉用西门塔尔牛母牛在大理石花纹、pH、剪切力等性状上极显著或显著优于公牛(P < 0.01;P < 0.05);而和牛杂交群体母牛的肉色和剪切力性状表现为显著或极显著高于公牛(P < 0.05;P < 0.01)。总体而言,和牛杂交群体的肉质性能优于肉用西门塔尔牛;群体内比较表明,肉用西门塔尔牛群体母牛肉质性能优于公牛,而和牛杂交群体母牛肉质性能低于公牛。  相似文献

In order to study the incidence and causes of dystocia and perinatal calf mortality in double-muscled cattle, straight and reciprocal matings between double-muscled and normal cattle were made in three breeding seasons. A total of 348 matings resulted in 247 calvings in the four mating types. The frequency of normal calvings or calvings requiring slight assistance was higher among normal cows mated to double-muscled or normal bulls compared with that of double-muscled cows mated to double-muscled bulls (94% vs 78%, P < 0.05). In general the incidence of dystocia was higher among the double-muscled than the normal cows (19% vs 6%, P < 0.05). Calf birth weight, dam weight at calving, and condition score were not shown to contribute significantly to the differences in the frequencies of dystocia. A higher incidence of dystocia was found in the mating type which frequently gave rise to phenotypically muscular calves (DM × DM). The height, width, and area of pelvic opening were significantly smaller (P < 0.05) in the double-muscled than in the normal cows, indicating that the higher incidence of dystocia and perinatal mortality in double-muscled cattle can be attributed, at least partially, to the smaller area of pelvic opening in the double-muscled cattle.  相似文献

The objective of this study was to assess the association of SNP in the thyroglobulin gene, including a previously reported marker in current industry use, with marbling score in beef cattle. Three populations, designated GPE6, GPE7, and GPE8, were studied. The GPE6 population sampled breeds that could be used as alternative germplasm sources in beef cattle production, including Wagyu, Swedish Red and White, Friesian, and Norwegian Red. The GPE7 population sampled 7 popular beef cattle breeds used in temperate climates of the United States: Angus, Charolais, Gelbvieh, Hereford, Limousin, Red Angus, and Simmental. The GPE8 population sampled Bos indicus-influenced breeds used in subtropical regions of the country and subtropical and tropical regions of the world, including Beefmaster, Bonsmara, Brangus, and Romosinuano. Evaluation of 6 SNP in the thyroglobulin gene, including 5 newly described variations, showed no association (P > 0.10) with marbling score in these populations, except a tendency (P < 0.10) for an association with the previously described marker in GPE6. Closer examination of the GPE6 data revealed that the source of the tendency was an association (P < 0.02) with marbling in animals of Wagyu inheritance. Animals having Wagyu background and inheriting the TT genotype had a greater marbling score (599 +/- 20) than those inheriting the CC (540 +/- 10) or the CT (541 +/- 11) genotype. No association was detected with any other carcass trait for this marker in the 3 populations. Furthermore, none of the 5 newly described markers in the gene displayed an association with marbling score. The data indicate that markers at the thyroglobulin gene may be a useful predictor of marbling performance for producers raising Wagyu-based cattle. This work investigated the metabolic basis for the variability of carcass and i.m. adiposity in cattle. Our hypothesis was that the comparison of extreme breeds for adiposity might allow for the identification of some metabolic pathways determinant for carcass and i.m. adiposity. Thus, 23- to 28-mo-old steers of 3 breeds, 2 with high [Angus or Japanese Black x Angus (J. Black cross)] and 1 with low (Limousin) i.m. and carcass adiposity, were used to measure activities or mRNA levels, or both, of enzymes involved in de novo lipogenesis [acetyl-coA carboxylase, fatty acid synthase (FAS), glucose-6-phosphate dehydrogenase (G6PDH), malic enzyme], circulating triacylglycerol (TAG) uptake (lipoprotein lipase), and fatty acid esterification (glycerol-3-phosphate dehydrogenase), as well as the mRNA level of leptin, an adiposity-related factor. In a first study, enzyme activities were assayed in the s.c. adipose tissue (AT), the oxidative rectus abdominis, and the glycolytic semitendinosus muscles from steers finished for 6 mo. Compared with Angus or J. Black cross, Limousin steers had a 27% less (P = 0.003) rib fat thickness, and 23 and 29% less (P < or = 0.02) FAS and G6PDH activities in s.c. AT. In rectus abdominis and semitendinosus, the 75% less (P < 0.001) TAG content was concomitant with 50% less (P < 0.001) G6PDH activity. In a second study, enzyme activities plus mRNA levels were assayed in an oxido-glycolytic muscle, the longissimus thoracis (LT), in the i.m. AT dissected from LT, and in s.c. AT from the same Limousin steers and from Angus steers finished for 10 mo. Compared with Angus, the 50% less (P < 0.001) rib fat thickness in Limousin contrasted with the 1.1- to 5.8-fold greater (P < or = 0.02) mRNA levels or activities, or both, of acetyl-coA carboxylase, G6PDH, lipoprotein lipase, and glycerol-3-phosphate dehydrogenase in s.c. AT. Conversely, the 90% less (P < 0.001) TAG content in Limousin LT was concomitant to the 79 and 83% less (P < or = 0.002) G6PDH activity and leptin mRNA level. Such differences could arise from a greater number of adipocytes in LT from Angus steers because no difference was found between Limousin and Angus for G6PDH activity and leptin mRNA in i.m. AT. We conclude that FAS and G6PDH in s.c. AT could be involved in differences in carcass adiposity, but this relationship disappeared when the fatness increased strongly. Leptin and G6PDH are related to the expression of marbling whatever the body condition and thus could be relevant indicators of marbling in beef cattle.  相似文献

Studies were conducted in an attempt to establish a relationship between fatty acid-binding protein (FABP) activity and marbling score in bovine longissimus muscle. Longissimus muscle was obtained from four 20-mo-old Charolais-Hereford crossbred heifers, three 16-mo-old Angus steers, and four 18-mo-old Angus steers. Immediately after slaughter, longissimus muscles were removed for the extraction of FABP. Supernatant (S104) fractions containing 41.3 to 144 mg of protein (depending on animal group) were eluted over Sephadex columns, and elution fractions were analyzed for the binding of radiolabeled palmitoyl-coenzyme A (CoA). Specific activities of FABP were 23, 32, and 101 nmol palmitoyl-CoA bound/mg protein for the Charolais-Hereford, 16-mo-old Angus, and 18-mo-old Angus cattle, respectively. These preliminary results suggested that longissimus muscle FABP activity was positively correlated with marbling score. To test specifically for this possibility, longissimus muscle was obtained at slaughter from each of four Wagyu steers, Angus heifers and Braford heifers. Marbling scores taken at the 12th-13th rib junction were Sm45, Sm43, and SI50 for the Wagyu, Angus, and Braford cattle, respectively. Interfascicular adipose tissue was exhaustively removed from sections of the 5th to 8th thoracic region of the longissimus muscle to eliminate any contribution of adipose tissue to FABP activity. For each animal, 300 mg of the S104 were eluted over Sephadex columns. Specific activities for the Wagyu, Angus, and Braford longissimus muscle FABP were 3.1, 3.8, and 3.9 pmol palmitoyl-CoA bound/mg protein, respectively, and were not different (P greater than .05) among the three animal groups.(ABSTRACT TRUNCATED AT 250 WORDS)  相似文献

Carcass (n = 854) and longissimus thoracis palatability (n = 802) traits from F1 steers obtained from mating Hereford, Angus, and MARC III cows to Hereford or Angus (HA), Tuli (Tu), Boran (Bo), Brahman (Br), Piedmontese (Pm), or Belgian Blue (BB) sires were compared. Data were adjusted to constant age (444 d), carcass weight (333 kg), fat thickness (1.0 cm), fat trim percentage (21%), and marbling (Small00) end points. Results presented in this abstract are for age-constant data. Carcasses from BB- and HA-sired steers were heaviest (P < 0.05) and carcasses from Bo- and Tu-sired steers were lightest (P < 0.05). Adjusted fat thickness was greatest (P < 0.05) on carcasses from HA-sired steers and least (P < 0.05) on carcasses from BB- and Pm-sired steers. Numerical USDA yield grades were lowest (P < 0.05) for carcasses from Pm- and BB-sired steers and highest (P < 0.05) for carcasses from HA- and Br-sired steers. Marbling scores were highest (P < 0.05) for carcasses from HA- and Tu-sired steers and lowest (P < 0.05) for carcasses from Br-, BB-, and Pm-sired steers. Longissimus thoracis from carcasses of HA-, Pm-, and Tu-sired steers had the lowest (P < 0.05) 14-d postmortem Warner-Bratzler shear force values. Carcasses from HA-sired steers had longissimus thoracis with the highest (P < 0.05) tenderness ratings at 7 d postmortem. Longissimus thoracis from carcasses of Br- and Bo-sired steers had the highest (P < 0.05) Warner-Bratzler shear forces and the lowest (P < 0.05) tenderness ratings at 7 d postmortem. Adjustment of traits to various slaughter end points resulted in some changes in sire breed differences for carcass traits but had little effect on palatability traits. Carcasses from BB- and Pm-sired steers provided the most desirable combination of yield grade and longissimus palatability, but carcasses from HA-cross steers provided the most desirable combination of quality grade and longissimus palatability. Tuli, a breed shown to be heat-tolerant, had longissimus tenderness similar to that of the non-heat-tolerant breeds and more tender longissimus than the heat-tolerant breeds in this study.  相似文献

The objective of this study was to characterize breeds representing diverse biological types for postweaning growth and carcass composition traits in terminal crossbred cattle. Postweaning growth and carcass traits were analyzed on 434 steers and 373 heifers obtained by mating F1 cows to Charolais sires. Maternal grandsires represented Hereford, Angus, and MARC III (1/4 Hereford, 1/4 Angus, 1/4 Pinzgauer, and 1/4 Red Poll) dams to Hereford or Angus (British Breeds), Norwegian Red, Swedish Red and White, Wagyu, or Friesian breeds. Breed groups were slaughtered serially in each of 2 yr (2002 and 2003). Postweaning ADG, slaughter weight, hot carcass weight, dressing percentage, percentage Choice, LM area, marbling score, USDA yield grade, fat thickness, retail product yield (percentage), retail product weight, fat yield (percentage), fat weight, bone yield (percentage), and bone weight were analyzed. Maternal grandsire breed was significant (P < 0.05) for all traits except dressing percentage, percentage Choice, and LM area. Marbling score for animals with Norwegian Red, Wagyu, Swedish Red and White, British Breeds, and Friesian inheritance was 550, 544, 532, 530, and 515, respectively (SEM = 8). Retail product weight for these animals was 224, 211, 227, 223, and 223 kg, respectively (SEM = 2 kg). Maternal granddam breed was not significant for any of the traits analyzed. Grandsire breed effects can be optimized by selection and use of appropriate crossbreeding systems.  相似文献
