Proximate and mineral composition, seed protein fractions, amino acid composition, fatty acid profiles and antinutritional factors were analysed for the seeds of the tribal pulse,Bauhinia malabarica. The seeds contained higher amount of crude lipid when compared with most of the domesticated pulses. The seeds were rich in minerals like Ca, Mg and Fe. Glutelins (45%) constituted the major seed protein fraction followed by globulins which accounted for about 34%. Cystine and methionine were found to be the limiting essential amino acids; whereas tyrosine and phenylalanine content were fairly high when compared with WHO requirement pattern. The unsaturated fatty acids, oleic acid and linoleic acid, were predominant in seed lipids. Presence of antinutritional substances like total free phenols, tannins, L-DOPA and haemagglutinating activity also were analysed/assayed.  相似文献

Seeds of Teramnus labialis (L.) Spreng.(Fabaceae), used as food by Malayali tribals in theKollihills of Salem District, Tamil Nadu in SouthIndia, were investigated for their nutritional value. These seeds were analyzed for proximate composition,total (true) seed proteins, seed proteinfractions, amino acid composition, fatty acidcomposition, minerals and antinutritional factors. Crude protein, crude fat, ash, and nitrogen freeextracts constituted 22.86%, 6.10%, 4.62%, and,58.15%, respectively, of the seed weight. The caloricvalue of 100 g dry matter of seed material was 378.94kcal. The essential amino acids lysine, leucine +isoleucine, arginine, valine and histidine werepresent in relatively large quantities. Theunsaturated fatty acids constituted more than 60% ofthe crude fat. Concentrations of minerals such aspotassium, magnesium, calcium, and, phosphorus werehigh. Antinutritional factors such as total freephenols, tannins, L-DOPA, hydrogen cyanide andphytic acid were present in minute quantities. Theseantinutritional factors are potentially eliminated using the conventional method of soaking the seeds in water,boiling with water and decanting prior to consumption.  相似文献

Quantitative variation in different fractions of seed proteins and their amino acid levels in populations ofVigna minima (Roxb.) Ohwi and Ohashi and inV. umbellata cv. IC 1568 — the rice bean — were investigated. Globulin I fraction, together with globulin II, constitutes 38 to 54 per cent of the total seed protein. The alkali soluble (glutelin) fraction is the second largest fraction. Both these fractions show broad range of variation, suggesting a broad genetic base. The profiles are population specific; the coastal population, which contains higher seed protein also possesses maximum levels of globulin I and glutelin fraction suggesting its potentiality for breeding lines with high protein content, high nutritive value, and salt tolerance. Protein content is positively correlated with globulin I and glutelin fractions, which are in turn positively correlated with each other. The amino acid profiles are specific not only to the fractions but also to the populations. The range of variation in the levels of all amino acids in different fractions is broad suggesting substantial genetic diversity. The average levels of lysine and sulphur amino acids are high in globulin I and glutelin fractions.  相似文献

Pachyrhizus erosus seeds were analysed for proximate composition, minerals, protein fractions, antinutritional factors, and rotenoids. The seeds showed a high content of proteins, lipids, Fe and Ca, in comparison to other legumes. Glutelins constitute the highest protein fraction, followed by globulins. Antinutritional substances detected as tannins, hemagglutinating activity and trypsin inhibitory activity, were in low concentrations. Seeds were also processed to obtain a flour which showed proper characteristics, good in vitro digestibility, significant rotenoid reduction level and amino acid composition rich in essential amino acids, except methionine.  相似文献

Seeds of two coastal sand dune wild legumes, Canavalia cathartica and Canavalia maritima from the west coast of India were analyzed for their nutritional and antinutritional properties. The seeds contained 35.5 and 34.1% crude protein, 52.8 and 50.5% crude carbohydrates, 1.3 and 1.7% crude lipids and 3.1 and 3.5% ash content, respectively. Among the minerals, potassium was the highest followed by phosphorus. Globulins and albumins constituted the major seed proteins of both plants. Most of the essential amino acids were at adequate levels. Although the crude lipids were below 2%, the unsaturated fatty acids were high. Seeds did not contain tannins and trypsin inhibitors. The levels of total phenolics were low, but showed high hemagglutination activity. The nutritional properties of these seeds have been compared with other Canavalia spp. and wild unconventional or tribal legumes. Overall, the study results suggest that the seeds of C. cathartica and C. maritima possess potential nutritive value particularly higher protein, essential amino acids and low levels of antinutritional factors. These wild legumes are adapted to low nutrient, high saline and drought conditions of the coastal sand dunes; their conservation and domestication are warranted as potential alternative sources of protein.  相似文献

The seed oils ofParkia biglobosa andParkia bicolor (Mimosaceae) have been analysed for their possible edible utility and to provide some physical data on both oils. The fatty acid composition of the oils was identified. Six major fatty acids were identified in the oil ofP. bicolor while five were identified in that ofP. biglobosa by Gas Chromatography (GC) and Gas Chromatography — Mass Spectroscopy (GC — MS). The two oils contained five similar fatty acids in almost the same ratios. Arachidic acid was the most abundant fatty acids (greater than forty per cent) in both oils. Other fatty acids in the oils were behenic, stearic, palmitic and linoleic acids. The sixth fatty acid inP. bicolor was an odd number of carbon atom and un unsaturated fatty acid (C20H37COOH) named bicolargic acid. The oils were also found to be non toxic.  相似文献

In India, the seeds ofCanavalia gladiata andC. ensiformis have traditionally been eaten by the aborigines, but they are less popular among the civilized people. The data on the chemical composition and nutritional quality of these seeds are not readily available. The proximate composition, mineral composition, the contents of total (true) proteins, seed protein fractions, profile of seed protein amino acids and certain antinutritional factors were analysed and reported in the present study. The seeds ofC. ensiformis contain more crude protein, crude lipid and minerals like Na, K, Ca, Mg, P, Fe and Mn than doesC. gladiata. Both albumins and globulins together constitute the major bulk of seed proteins. In both the species ofCanavalia investigated, glutamic acid, aspartic acid, isoleucine+leucine, tyrosine+phenylalanine and lysine are the major amino acids of seed proteins. The presence of certain antinutritional factors (total free phenols, tannins, lectins, L-DOPA, trypsin inhibitor activity) is also reported for both species ofCanavalia.  相似文献

Two germplasms of the tribal pulse,Bauhinia racemosa Lamk. viz., Ayyanarkoil Forest and Mundanthurai Wildlife Sanctuary, were analysed for proximate composition, total (true) seed proteins, seed protein fractions, amino acid composition, fatty acids, minerals and antinutritional factors. Crude proteins, crude lipids, ash and nitrogen free extractives constituted 19.84%, 9.52%, 3.31% and 60.65%, respectively in Ayyanarkoil Forest germplasm; whereas, in Mundanthurai Wildlife Sanctuary germplasm they constituted 19.31%, 8.94%, 3.81% and 61.30%, respectively. The caloric values were found to be 407.64 K Cal (Ayyanarkoil Forest) and 402.90 K Cal (Mundanthurai Wildlife Sanctuary) germplasms. Essential amino acids like isoleucine, tyrosine, phenylalanine and lysine were found to be high in the seed proteins of both the germplasms. The fatty acids, palmitic, oleic and linoleic acids, were found to be relatively higher in the seed lipids of both the germplasms. Both the germplasms seemed to be a rich source of calcium, potassium, magnesium, zinc, manganese and iron. Crude proteins, crude lipids, ash and nitrogen free extractives constituted 30.62%, 9.03%, 5.99% and 42.79%, respectively. The calorific values of 100 g dry matter of seed material is 374.91 kCal. Seeds of thirteen genotypes of cauliflower, four of turnip and seven of radish were analysed for oil content and fatty acid composition. Turnip and radish had higher oil content as compared to cauliflower. Oleic, linoleic + eicosenoic and erucic acids were the major fatty acids in the oils of these seeds. Levels of erucic acid were in the order of radish < turnip < cauliflower. Compared to cauliflower and turnip seeds, radish seeds contained higher amounts of palmitic, oleic, and linolenic + eicosenoic acids and lower amounts of linoleic and erucic acids.  相似文献

Two germplasms of the tribal pulse,Mucuna monosperma Dc. ex Wight, viz., [1] Thirunelly Reserve Forest, Wynaad District (Kerala) and [2] Siruvani Reserve Forest, Coimbatore District (Tamilnadu), were analysed for proximate composition, total (true) seed proteins, seed protein fractionation, amino acid composition, fatty acids, minerals and antinutritional factors. Crude proteins, crude lipids, ash and nitrogen free extractives constituted 23.10%, 4.36%, 3.80%, 61.74%, respectively, in Tamilnadu germplasm; whereas, in Kerala germplasm they constituted 20.13%, 8.99%, 3.60% and 61.69%, respectively. The calorific values of 100 g dry matter of seed material are 408.19 KCal (Kerala) and 378.60 KCal (Tamilnadu) germplasms. Essential amino acids like methionine, cystine, threonine and valine were found to be limiting in the seed proteins of both the germplasms. The fatty acids like lauric acid and palmitic acid are found to be common in both the germplasm seed samples, while linoleic and oleic acids in Kerala germplasm and stearic acid in Tamilnadu germplasm are present. The Tamilnadu germplasm seems to be a rich source of sodium, magnesium, zinc, manganese, copper and iron; whereas the Kerala germplasm seems to be a rich source of phosphorus. Antinutritional substances like total free phenols, tannins, L-DOPA, trypsin inhibitor activity and phytohaemagglutinating activity also were investigated.  相似文献

Both the pericarp and the unripe seeds of the unripe fruits ofGlossonema edule were separately analysed. The crude protein content of the unripe seeds is double that of the pericarp. Investigation of the amino acids of both parts revealed slight quantitative differences with chemical scores of 40, 40 for each of methionine and tryptophan and 65 for lysine. The ratio of essential total: amino acid averages 34.5, compared to a corresponding value of 47.4 for the reference egg proteins. The analysis of the fatty acids showed that the ratio of saturated to non-saturated fatty acids averaged 73:27; palmitic acid makes up 60% of the total fatty acids. The soluble carbohydrate content of the pericarp is slightly higher than the corresponding value in the unripe seeds. Paper chromatography of the free sugars of both parts revealed qualitative differences. The oligosaccharide reffinose was detected in both parts. The ash was analysed for its content in four trace minerals: iron, zinc, manganese and copper.  相似文献

F2-derived lines in F3 from matings between dissimilar parents were studied for inheritance of palmitic (three oat matings), oleic (three additional matings), and linoleic acid content (two matings). Inheritance patterns for palmitic and oleic acids were simple or polygenic, depending upon the mating. Linoleic acid content showed polygenic inheritance in all matings. There was no consistent dominance direction for palmitic acid content. Oleic acid showed interallelic interaction and dominance for low content in one mating and no dominance in two matings; linoleic acid showed no dominance. Heritability values indicate that selection for fatty acid composition of oat oil will require replicated tests in several environments, but progress from selection may be expected for palmitic, oleic, and linoleic fatty acids. Correlations among fatty acids revealed that it may be possible to increase both palmitic and linoleic acid and that increase of either will be accompanied by concomitant decreases in oleic and linolenic acids.Journal paper no. A rapid quantification method for leaf sodium (Na+) and potassium (K+) concentrations was developed using a compact ion meter. Leaf ion concentrations were evaluated for species of Vigna vexillata (L.) A. Rich. after two weeks of treatment with 0–200 mM of sodium chloride. To compare the ion extraction efficiency, extraction solutions of distilled water and ammonium acetate were tested. The ion concentrations of extracts obtained by both solutions were measured using an ion meter, and the values were validated using ion chromatography. For both extraction solutions, the ion meter values were highly correlated with those of the ion chromatograph. However, correlations between ion meter and chromatograph values were largely different for Na+ and K+. The rapid quantification of ion concentrations using an ion meter developed in this study was successfully utilized for evaluating differences in leaf Na+ concentrations, K+ concentrations, and K+/Na+ ratio in species of V. vexillata.  相似文献

The effect of seven levels of Cd2+ viz. 0, 10, 20, 30, 40, 60 and 80 ppm (µg/g soil) supplied as cadmium chloride, on lipid components of sunflower seeds was studied in a pot experiment. The total and neutral lipids decreased while polar lipids (phospho and glycolipids) increased with the increasing levels of Cd2+. Oleic acid and linoleic acids were the major fatty acids in the total, polar and neutral lipid fractions. Oleic acid generally increased while linoleic acid decreased in all the lipid fractions with Cd2+ levels. The neutral lipid fraction had higher levels of palmitic, palmitoleic, stearic and oleic acid as compared to the total and polar lipid fractions. The plant dry weight and seed yield decreased whereas cadmium concentration in seeds increased consistently with increasing Cd2+ levels.  相似文献

The chemical composition of samh seed have been investigated. Proximate analysis showed a composition of 22.25% protein, 5.7% moisture, 5.6% fat, 4.0% ash, 9.7% crude fiber, and the remainder being total carbohydrates. Mineral element analysis revealed that potassium, magnesium, sodium and calcium were present as the major elements. Iron, manganese, zinc and copper were found at lower levels. However, lead was not detected in the samh seeds. Gas-liquid chromatographic analysis of the methylester of the fatty acids of the samh seeds oil revealed the presence of fourteen fatty acids. Linoleic and oleic acids were the principle unsaturated fatty acids. While palmitic acid was the main saturated fatty acid. Amino acid analysis of the samh seeds showed the presence of seventeen amino acids including eight essential amino acids. Glutamic acid, arginine, and aspartic acid were the major amino acids. Cystine and proline were present in trace amounts. These results some of which have not been reported elsewhere indicate the high nutritional potential of Saudi samh seeds. The total aerobic bacterial count and total sporeformers of seeds were 19×107 and 5×104 cfu/g respectively, thus the enterobacteriaceae,B cereus and yeast and molds were 5×102, 1×102 and 7×102 respectively. The seeds were Staph. free and the samh extract had no antimicrobial effect.  相似文献

Two varieties of mesta (Hibiscus sabdariffa) seeds were analysed for their proximate composition. Their protein (18.8–22.3%), fat (19.1–22.8%) and dietary fiber (39.5–42.6%) contents were found to be high. The seeds were found to be a good source of minerals like phosphorus, magnesium and calcium. Their lysine and tryptophan contents were also high. Sulphur containing amino acids were limiting in this seed protein and the chemical score of mesta seed protein was 40 and 57 for AMV-2 and Bhimili-1 varieties respectively. Mesta seed oil is rich in unsaturated fatty acids (70%), of which linoleic acid constituted 44%. Weanling rats were fed with 10% mesta seed protein before and after cooking for 4 weeks. Food intake of animals receiving raw mesta seed diets was significantly lower than those receiving cooked mesta seed diets as well as the casein control diet. Protein and dry matter digestibilities of raw and cooked mesta seed diets were lower than that of casein control diet. Cooking improved the food intake, gain in body weight, dry matter and protein digestibility of mesta seed diets. PER and NPU of cooked mesta seed diets were significantly higher than the corresponding raw diets. These results indicate that cooked mesta seed protein is of relatively good quality.  相似文献

A tuberous sclerotium of the mushroomPleurotus tuber regium was analysed for proximate, amino acid and mineral content. The sclerotium had low protein, ether extract, amino acid and mineral content compared to the pileus of the same mushroom and similar mushrooms. Cystine, methionine, serine, arginine and lysine were exceptionally low. Because the sclerotium is milled with melon seeds in traditional preparation of a vegetable meat-substitute, nutrient intake of a human subject consuming 100 grams of the meat-substitute was compared to intake of one consuming 100 grams of stewed broiler meat. The meat-substitute provided more minerals than broiler meat but only a fraction (40–65%) of the amino acids of broiler meat.  相似文献

The boiled seeds of Abrus precatorius L. are eaten by the residents of the Andaman Islands in India. The seeds were analysed for proximate composition, total (true) protein, seed protein fractions, amino acid profile of seed proteins, minerals and certain antinutritional factors. The seed proteins are rich in most of the essential amino acids, and they are deficient only in cystine and threonine, when compared to the WHO/FAO requirement pattern. Twenty two lines/accessions belonging to 5 species ofCelosia were analysed for their nutritional and antinutritional composition. The nutrient contents, vitamin C varied from 18.8 to 53.6 mg/100 g, carotenoids 9.1 to 15.1 mg/100g, protein 2.1 to 5.9%, while the antinutritional factors, nitrate 0.18 to 0.46% and oxalate 0.98 to 3.93%. Moisture ranged 81 to 89%. Variation of these parameters with leaf position and the amino acids profile of some promising lines was also evaluated.  相似文献
