Carrot slices were subjected to one of the following experiments prior to deep-frying: (A) dehydration/rehydration, (B) soaking in different antioxidants, and (C) fermentation with/without blanching. There were no significant differences (P > or = 0.05) in carotenoid contents among carrot chips treated with/without dehydration. Soaking in sodium metabisulfite resulted in the highest carotenoid content and lightness (L), redness (a), and yellowness (b) values among the antioxidant treatments. Fermentation without blanching significantly decreased (P < 0.05) carotenoid content, vitamin A activity, and fat content. Dehydration and fermentation with blanching significantly increased (P < 0.05) the lightness (L), redness (a), and yellowness (b) values of the chips. Dehydration/rehydration, but not antioxidant and fermentation, significantly decreased (P < 0.05) the water activity of the chips. The textural values of carrot chips prepared using sodium metabisulfite, without dehydration and without fermentation, were the lowest among other treatments which suggests the crispiest. Carrot chips prepared using sodium metabisulfite, without dehydration and without fermentation, had the highest carotenoid content and retention, and the highest overall acceptability score.  相似文献

OBJECTIVE: To validate a 171-item semi-quantitative food-frequency questionnaire (FFQ) for measurement of nutrient intake in an intervention trial based on walnut supplementation. DESIGN AND SETTING: Free-living adults from Southern California were randomly assigned to either an intervention (walnut-supplemented) or a control diet. The prescribed 6-month intervention was > or = 28 g of walnuts per day for the walnut-supplemented group and > or = 2 g of walnuts per day for the control group. Participants provided at least six 24-hour dietary recalls and completed a self-administered FFQ. SUBJECTS: Eighty-seven adults aged 30-72 years (48 females, 39 males). RESULTS: Our findings from validation (by correlation with six diet recall measures) of the measurement of 32 nutrients by the FFQ are as follows. We found significant positive correlations (corrected for measurement error) between the FFQ and diet recalls for total energy (r = 0.34), total carbohydrate (r = 0.42), vegetable protein (r = 0.43), total fat (r = 0.51), polyunsaturated fat (r = 0.77), total fibre (r = 0.60), linoleic acid (r = 0.78) and alpha-linolenic acid (r = 0.79) - the last nutrient being an excellent nutrient biomarker of the intervention (walnut supplementation). Significant positive correlations were also found for vitamin C (r = 0.96) and certain minerals (r = 0.46-0.80 for calcium, phosphorus, magnesium, iron and potassium). Uncorrected correlations were also high (r>0.40) for retinol, beta-carotene, folate and alcohol. Both diet recalls and FFQ showed a similar significant difference in alpha-linolenic acid content between the walnut-supplemented and control diets. CONCLUSIONS: The FFQ demonstrated good relative validity in the estimation intake of some of the major nutrients in a dietary intervention trial and was a particularly valid estimate of an important nutrient biomarker of walnut supplementation.  相似文献

OBJECTIVE: To determine the serum levels of three lipid-soluble antioxidants (retinol, beta-carotene and alpha-tocopherol) in pregnant women attending an antenatal clinic (ANC) in Gondar, Ethiopia. DESIGN: A cross-sectional study involving laboratory determination of serum levels of retinol, alpha-tocopherol and beta-carotene using high-performance liquid chromatography and questionnaire-based assessment of socio-economic status. SETTING: ANC of a university teaching hospital. SUBJECTS: Three hundred and twenty-two healthy pregnant women in their third trimester, who attended the ANC. RESULTS: Mean serum levels of retinol, alpha-tocopherol and beta-carotene were found to be 1.23+/-0.5, 25.5+/-0.9 and 0.21+/-0.09 micromol l(-1), respectively. The prevalence of vitamin A deficiency (<1.05 micromol l(-1)) among pregnant women was 38.5%. Women having low retinol (vitamin A) levels were highly likely to live in earth-floored and mud-walled houses, and less likely to own a house and to have a latrine. CONCLUSION: The study shows that serum levels of lipid-soluble antioxidants were low among ANC attendees in northern Ethiopia. It also indicates that some socio-economic factors (such as poor housing standard) are associated with vitamin A deficiency.  相似文献

Wheat cultivars, representing three winter and three spring wheats were grown in western Canada with six levels of nitrogen fertilizer and flours were prepared from them with an extraction rate of 65%. Using a chromameter, flour color and the color of uncooked white noodle sheets made from these flours with different resting times were assessed. The cooked noodle sheet color was also assessed. While protein content initially declined with added nitrogen and increased with further nitrogen addition, brightness (L*) of flour decreased and redness (a*) and yellowness (b*) increased. Positive correlation coefficients of flour brightness with particle size index (PSI) were also observed. Flour redness (a*) and yellowness (b*) were also affected by flour moisture content, whereas L* values were not significantly correlated with moisture contents. For the uncooked white noodle sheet, as protein content increased brightness decreased but there was an increase in a* and b* values. Thus, the L* value for noodle sheets was negatively correlated with the a* and b* values. The percentages of monomeric protein and soluble glutenin in flour were equal to or better than protein content in relation to most noodle sheet color characters. Uncooked noodle sheet brightness decreased, while redness and yellowness increased with rest time. In general, uncooked white noodle sheets prepared from different wheat flours can be ranked in terms of brightness and yellowness within each level of nitrogen fertilization.  相似文献

Antioxidant activities of seven phenolic agents against Fe(2+)-induced lipid oxidation were compared with alpha-tocopherol, beta-carotene, and vitamin C in human erythrocyte membrane ghosts and liposome systems. The antioxidant activity of five test flavonoids followed the order catechin > epicatechin > rutin > quercetin > myricetin in both systems (p < 0.05), which was negatively correlated with their partition coefficients. The antioxidant interaction of these phenolic agents with alpha-tocopherol, beta-carotene, or vitamin C in inhibiting Fe(2+)-induced lipid oxidation was examined. Synergistic effects were present in the combinations of alpha-tocopherol plus caffeic acid, catechin, or epicatechin as well as in all combinations of vitamin C plus phenolic antioxidants. On the basis of the stronger individual and combined effects present in caffeic acid, catechin, and epicatechin, the application of these three phenolic agents with or without alpha-tocopherol, beta-carotene, and vitamin C may provide stronger protective benefits against lipid oxidation, which may be helpful for oxidation-related diseases prevention.  相似文献

Genotypic variation in composition and antioxidant activity was evaluated using 25 cultivars, 5 each of white-flesh nectarines, yellow-flesh nectarines, white-flesh peaches, yellow-flesh peaches, and plums, at the ripe (ready-to-eat) stage. The ranges of total ascorbic acid (vitamin C) (in mg/100 g of fresh weight) were 5-14 (white-flesh nectarines), 6-8 (yellow-flesh nectarines), 6-9 (white-flesh peaches), 4-13 (yellow-flesh peaches), and 3-10 (plums). Total carotenoids concentrations (in microg/100 g of fresh weight) were 7-14 (white-flesh nectarines), 80-186 (yellow-flesh nectarines), 7-20 (white-flesh peaches), 71-210 (yellow-flesh peaches), and 70-260 (plums). Total phenolics (in mg/100 g of fresh weight) were 14-102 (white-flesh nectarines), 18-54 (yellow-flesh nectarines), 28-111 (white-flesh peaches), 21-61 (yellow-flesh peaches), and 42-109 (plums). The contributions of phenolic compounds to antioxidant activity were much greater than those of vitamin C and carotenoids. There was a strong correlation (0.93-0.96) between total phenolics and antioxidant activity of nectarines, peaches, and plums.  相似文献

Maize has been targeted for biofortification with provitamin A carotenoids through traditional breeding. Two studies were conducted in gerbils to evaluate factors that may affect provitamin A activity. Maize diets had equal theoretical concentrations of vitamin A (VA) assuming 100% bioefficacy. Study 1 ( n = 57) varied the ratio of beta-cryptoxanthin and beta-carotene but maintained the same theoretical VA. Study 2 ( n = 67) varied lutein and zeaxanthin. Other treatments were oil, VA, or beta-carotene doses. Serum and livers were analyzed for VA and carotenoids. In study 1, total liver VA did not differ among the maize groups. In study 2, total liver VA of the VA and maize groups were higher than controls ( P < 0.05). Conversion factors were 2.1-3.3 mug beta-carotene equivalents to 1 mug retinol. Twice the molar amount of beta-cryptoxanthin was as efficacious as beta-carotene and the proportion of beta-cryptoxanthin or xanthophylls did not appreciably change the VA value of biofortified maize.  相似文献

This study investigated the suitability of mid‐infrared diffuse reflectance Fourier transform (MIR‐DRIFT) spectroscopy, with partial least squares (PLS) regression, for the determination of variations in soil properties typical of Italian Mediterranean off‐shore environments. Pianosa, Elba and Sardinia are typical of islands from this environment, but developed on different geological substrates. Principal components analysis (PCA) showed that spectra could be grouped according to the soil composition of the islands. PLS full cross‐validation of soil property predictions was assessed by the coefficient of determination (R2), the root mean square error of cross‐validation and prediction (RMSECV and RMSEP), the standard error (SECV for cross‐validation and SEP for prediction), and the residual predictive deviation (RPD). Although full cross‐validation appeared to be the most accurate (R2 = 0.95 for organic carbon (OC), 0.96 for inorganic carbon (IC), 0.87 for CEC, 0.72 for pH and 0.74 for clay; RPD = 4.4, 6.0, 2.7, 1.9 and 2.0, respectively), the prediction errors were considered to be optimistic and so alternative calibrations considered to be more similar to ‘true’ predictions were tested. Predictions using individual calibrations from each island were the least efficient, while predictions using calibration selection based on a Euclidian distance ranking method, using as few as 10 samples selected from each island, were almost as accurate as full cross‐validation for OC and IC (R2 = 0.93 for OC and 0.96 for IC; RPD = 3.9 and 4.7, respectively). Prediction accuracy for CEC, pH and clay was less accurate than expected, especially for clay (R2 = 0.73 for CEC, 0.50 for pH and 0.41 for clay; RPD = 1.8, 1.5 and 1.4, respectively). This study confirmed that the DRIFT PLS method was suitable for characterizing important properties for soils typical of islands in a Mediterranean environment and capable of discriminating between the variations in soil properties from different parent materials.  相似文献

The change in the carotenoid and bioantioxidant content of tomato as a function of varietal and technological factors was investigated in the present work. No great differences were found between cultivars for fresh consumption (salad tomatoes) and those for processing in ascorbic acid content. The concentration of ascorbic acid ranged between 14.6 and 21.7 mg/100 g fresh weight of ripe tomato fruit. Processing cultivars contained higher amounts of tocopherols, particularly alpha-tocopherol than tomatoes for fresh consumption. Significant differences could be obtained between the examined varieties with regard to carotenoid concentration. The different tomatoes varied not only in the total carotenoid content but also in the qualitative distribution of some pigments such as lycopene, beta-carotene and lutein. During heat-based processing, ascorbic acid, tocopherols, and carotenoids showed different role and response. Ascorbic acid, alpha-tocopherol quinone, and beta-carotene were the most susceptible components toward thermal degradation.  相似文献

The purpose of this investigation was to report on the total phenolics, anthocyanins, and oxygen radical absorbance capacity (ORAC) of strawberry, peach, and apple, the influence of dehydration and ascorbic acid treatments on the levels of these compounds, and the effect of these treatments on fruit color. Results showed that fresh strawberry had the highest levels for total phenolics [5317.9 mg of chlorogenic acid equivalents (CAE)/kg], whereas lower levels were found in fresh apple and peach (3392.1 and 1973.1 mg of CAE/kg, respectively), and for anthocyanins (138.8 mg/kg), whereas lower levels were found in fresh apple and peaches (11.0 and 18.9 mg/kg, respectively; fresh strawberry had an ORAC value of 62.9 mM/kg Trolox equivalents. The fresh apple and peach were found to have ORAC values of 14.7 and 11.4 mM/kg of Trolox equivalents, respectively. The color values indicated that the addition of 0.1% ascorbic acid increased the lightness (L) and decreased the redness (a) and yellowness (b) color values of fresh strawberry, peach, and apple, sliced samples, and the puree made from them. Also, results showed that dehydration is a good method to keep the concentrations of total phenolics and anthocyanins and ORAC values at high levels.  相似文献

The development of accurate calibration models for selected soil properties is a crucial prerequisite for successful implementation of visible and near infrared (Vis‐NIR) spectroscopy for soil analysis. This paper compares the performance of calibration models developed for individual farms with that of general models valid for three farms in three European countries. Fresh soil samples collected from farms in the Czech Republic, Germany and Denmark were scanned with a fibre‐type Vis‐NIR spectrophotometer. After dividing spectra into calibration (70%) and validation (30%) sets, spectra in the calibration set were subjected to partial least squares regression (PLSR) with leave‐one‐out cross‐validation to establish calibration models of soil properties. Except for the Czech Republic farm, individual farm models provided successful calibration for total carbon (TC), total nitrogen (TN) and organic carbon (OC), with coefficients of determination (R2) of 0.85–0.93 and 0.74–0.96 and residual prediction deviations (RPD) of 2.61–3.96 and 2.00–4.95 for the cross‐validation and independent validation respectively. General calibration models gave improved prediction accuracies compared with models of farms in the Czech Republic and Germany, which was attributed to larger ranges in the variation of soil properties in general models compared with those in individual farm models. The results revealed that larger standard deviations (SDs) and wider variation ranges have resulted in larger R2 and RPD, but also larger root mean square errors of prediction (RMSEP). Therefore, a compromise solution, which also results in small RMSEP values, should be found when selecting soil samples for Vis‐NIR calibration to cover a wide variation range.  相似文献

Orange-fleshed, non-netted honeydew ( Cucumis melo L.) is a relatively new melon in the marketplace and has shown a lot of potential as an alternative to netted muskmelons (cantaloupes), which are often prone to surface contamination by enteric bacteria. Orange-fleshed honeydew is a cross between orange-fleshed cantaloupe and non-netted, green-fleshed honeydew. This glasshouse study investigated the nutritional profile (phytonutrient and sugar contents) in different tissues of mature orange-fleshed honeydew melon fruit. The equatorial mesocarp of ripe fruit was segmented into hypodermal (subpeel), outer, middle, and inner (near the seed cavity) tissues and then assayed for total sugars, mineral nutrients, phytonutrients, total proteins, and enzymatic antioxidant activities. The concentrations of soluble solids, sucrose, total sugars, beta-carotene, and 5-methyltetrahydrofolic acid increased in an inward direction from the subpeel mesocarp tissues toward the seed cavity. The activities of ascorbate peroxidase, catalase, and superoxide dismutase also increased in an inward direction. The concentrations of calcium, iron, magnesium, manganese, and sodium all decreased in the inward direction. When expressed on a dry weight basis, the concentrations of ascorbic acid, boron, copper, fructose, glucose, phosphorus, potassium, and zinc were higher in the subpeel region compared to the inner mesocarp tissues, but the reverse was true when data were expressed on a fresh weight basis. These data reveal that there is considerable variation in sugars, minerals, and phytonutrients across the mesocarp regions and that expressing the data on a fresh or dry weight basis can alter interpretations of the nutritional significance and health benefits of fruit. The data also confirm that orange-fleshed honeydew melon can be a rich source of many human health-related nutrients.  相似文献

The presence of the oxidized and reduced forms of ubiquinones Q(9) and Q(10) was determined in commercial extra virgin olive and seed oils, where the amounts of alpha- and gamma-tocopherols and beta-carotene were also quantitated. Very high concentrations of ubiquinones were found in soybean and corn oils. Furthermore, the total antioxidant capability of each oil was evaluated by measuring total radical-trapping antioxidant parameters (TRAP) in tert-butyl alcohol and using egg lecithin as the oxidizable substrate. These values decreased in the order sunflower > corn > peanut > olive; the highest TRAP, which was found in sunflower oil, was related to the very high amount of alpha-tocopherol. Olive oil, because of the low content of alpha-tocopherol, exhibited a TRAP value approximately one-third that of sunflower oil. TRAP values of corn and soybean oils, in which low amounts of alpha-tocopherol but very high contents of gamma-tocopherol and reduced ubiquinones were present, were intermediate. gamma-Tocopherol exhibited a poor ability of trapping peroxyl radicals in tert-butyl alcohol. This behavior was probably due to the effects of the solvent on the rate of hydrogen abstraction from this phenol.  相似文献

The objectives of this study were to investigate the effects of dietary fat (6% lard and sunflower and olive oil) and supplementation of alpha-tocopheryl acetate or beta-carotene on vitamin E content and lipid oxidation in raw, cooked, and chilled-stored broiler leg meat. Vitamin E increased its tissue level, reducing lipid oxidation. The oxidative stability of leg meat tended to decrease with dietary sunflower oil. Effects of beta-carotene on vitamin E levels and oxidation depended on dietary fat and its concentration in feed, decreasing vitamin E, mainly at 50 ppm. beta-Carotene at 15 ppm acted as antioxidant in fresh and cooked meat in the sunflower and olive oil diets. However, in stored meat, beta-carotene at 50 ppm increased TBARS, probably due to a decrease in vitamin E content and direct prooxidant effects per se. It is suggested that the antioxidant effect of beta-carotene requires the presence of vitamin E in tissues.  相似文献

The antioxidant activities of astaxanthin and related carotenoids have been measured by employing a newly developed fluorometric assay. This assay is based on 4,4-difluoro-3,5-bis(4-phenyl-1, 3-butadienyl)-4-bora-3a,4a-diaza-s-indacene (BODIPY 665/676) as an indicator; 2,2'-azobis-2,4-dimethylvaleronitrile (AMVN) as a peroxyl radical generator; and 6-hydroxy-2,5,7, 8-tetramethylchroman-2-carboxylic acid (Trolox) as a calibrator in an organic and liposomal media. By employing this assay, three categories of carotenoids were examined: namely, the hydrocarbon carotenoids lycopene, alpha-carotene, and beta-carotene; the hydroxy carotenoid lutein; and the alpha-hydroxy-ketocarotenoid astaxanthin. The relative peroxyl radical scavenging activities of Trolox, astaxanthin, alpha-tocopherol, lycopene, beta-carotene, lutein, and alpha-carotene in octane/butyronitrile (9:1, v/v) were determined to be 1.0, 1.0, 1.3, 0.5, 0.4, 0.3, and 0.2, respectively. In dioleoylphosphatidyl choline (DOPC) liposomal suspension in Tri-HCl buffer (pH 7.4 at 40 degrees C), the relative reactivities of astaxanthin, beta-carotene, alpha-tocopherol, and lutein were found to be 1.00, 0.9, 0.6, and 0.6, respectively. When BODIPY 665/676 was replaced by 4,4-difluoro-5-(4-phenyl-1,3-butadienyl)-4-bora-3a, 4a-diaza-s-indacene-3-undecanoic acid (BODIPY 581/591 C(11)) as an indicator, astaxanthin showed the highest antioxidant activity toward peroxyl radicals. The relative reactivities of Trolox, astaxanthin, alpha-tocopherol, alpha-carotene, lutein, beta-carotene, and lycopene were determined to be 1.0, 1.3, 0.9, 0.5, 0.4, 0.2, and 0.4, respectively.  相似文献

  【目的】  探讨施用氯化钾对脐橙叶片营养、果实产量及品质的影响,分析土壤和植株中氯元素含量与积累状况。  【方法】  以9年生纽荷尔脐橙为试材,于2018—2019年连续进行了两年田间试验。脐橙果园土壤一个为酸性、一个为碱性。氯化钾年施用量处理为250 g/株 (T1)、500 g/株 (T2)、1000 g/株 (T3),以硫酸钾556 g/株为对照 (CK)。在果实成熟期,测定了春梢和秋梢叶片中的N、P、K、Ca、Mg、Cl元素和相对叶绿素含量,测产并取样测定了果实品质及Cl–含量,在施肥后测定了0—20和20—40 cm土壤中的Cl–含量。  【结果】  1) 施用不同量氯化钾后果皮、果肉中氯元素含量没有显著变化,土壤和叶片中氯元素含量显著增加。T1处理在酸性土中氯元素含量较碱性土中多,与CK相比,T1处理酸性土中氯元素含量平均增加50.20%,而碱性土增加28.02%;T2处理氯元素含量在酸性土与碱性土中相差不大;T3处理氯元素含量在碱性土中大于酸性土中,与CK相比,酸性土增加79.70%,碱性土增加99.36%。2)T1处理下,在酸性土上脐橙春、秋梢叶片氯元素含量较CK分别增加了21.9%和8.0%,在碱性土上分别增加25.5%和12.7%;T2处理下,在酸性土上分别增加51.9%和45.0%,碱性土上分别增加33.3%和19.3%;T3处理下,在碱性土上分别增加109.7%和98.7%,而在酸性土上分别增加63.8%和58.0%。施用氯化钾后叶片中相对叶绿素、氮和钙元素含量没有显著变化,钾和部分磷元素含量随氯化钾施用量的增多呈增加趋势,镁元素含量略有下降。3) 施用氯化钾对果实产量、单果重、亮度、黄色度、可溶性固形物和可滴定酸含量均没有显著影响,部分果实红色度在施用氯化钾代替硫酸钾后显著提高,维生素C含量随氯化钾浓度的增高有增加趋势。  【结论】  短期施用氯化钾对果实中氯元素含量无显著影响,土壤和叶片中氯元素含量则显著增加,但均处在安全阈值以内。短期施用氯化钾对柑橘果实产量及品质无显著不良影响,叶片营养受影响较小,因此,酸、碱性土壤脐橙园短期内施用适量的氯化钾代替硫酸钾是可行的。  相似文献

Abstract

In this study, the effect of different levels of nitrogen (N) and potassium (K) fertilizers on vegetative fresh bulb yield, quality and biochemical attributes of sweet fennel were investigated in spring 2017 and 2018. Treatments consisted of 0, 50, 100, or 150?kg ha?1 of N and K in a randomized complete block design with three replications. Results showed that, the bulb fresh yield increased with application of N and K in both years, while the higher level of K had significant adverse effect in first year. Results also showed that sweet fennel bulb treated by N and K exhibited higher vitamin C, total phenols and flavonoid contents, and antioxidant capacity, especially in first year. In both years, alone or combined application of N and K increased total soluble solids (TSS) content as compared to control, and this effect was more pronounced in 2017 season. Macronutrient contents of bulb including magnesium (Mg), phosphorus (P), K, N, and calcium (Ca) were significantly enhanced by NK fertilizer, however an alone application of K decreased Ca and Mg nutrient contents. Therefore, to improve fresh bulb yield, quality and antioxidant capacity in sweet fennel, 150?kg ha?1 K and 100?kg ha?1 N is recommended.  相似文献

beta-Carotene and six xanthophylls (lutein, neoxanthin, violaxanthin, luteoxanthin, cryptoxanthin, and echinenone) have been identified and semiquantitatively or quantitatively determined in musts and port wines for the first time. An HPLC method was developed and compared with that of one based on thin layer cromatography with scanning densitometry. The most abundant carotenoids present in red grape varieties are beta-carotene and lutein. In wines, significant quantities of violaxanthin, luteoxanthin, and neoxanthin were found. This study was done with berries (skin and pulp), musts, and fortified wines. Some experiments were performed to follow carotenoid content from grapes to wines. Although the levels of beta-carotene and lutein found in fortified wines were lower than those found in musts, other xanthophylls, such as neoxanthin, violaxanthin, and luteoxanthin, exist in appreciable amounts in young ports.  相似文献

A rapid method for quantitative determination of beta-carotene, including cis-isomers, in dried mango has been developed. Applicability of available methods to dried products was limited because of formation of artifacts caused by extraction and preparation. The analytical procedure was based on the extraction of carotenoids from dried mango mesocarp using a mixture of methanol and acetone/hexane, allowing the separation of disturbing fibers. No saponification was required. Furthermore, carotenoid determination by HPLC on a C30 stationary phase was achieved. This method was applied to determine beta-carotene and its stereoisomers in fresh, dried, and solar-dried mango slices of four cultivars. Drying resulted in a complete and partial degradation of xanthophylls and all-trans-beta-carotene, respectively. Isomerization was shown to depend on the drying process. Whereas conventionally dried mangoes were characterized by elevated amounts of 13-cis-beta-carotene, solar-dried mango slices contained additional amounts of the 9-cis-isomer. Calculation of vitamin A values was based on the real amount of the beta-carotene stereoisomers and ranged from 113 to 420 and from 425 to 1010 RE/100 g for fresh and dried mango slices, respectively.  相似文献

Garlic (Allium sativum L.) is an essential part of Polish, Ukrainian, and Israeli cuisine. The aim of this investigation was to compare the changes in bioactive compounds, proteins, and antioxidant potentials in fresh Polish, Ukrainian, and Israeli garlic samples after subjection to cooking temperature. Dietary fiber and essential trace elements were comparable. The antioxidant potentials were determined by four scavenging methods using beta-carotene, 1,1-diphenyl-2-picrylhydrazyl (DPPH), nitric oxide (NO), and 2,2'-azinobis(3-ethylbenzothiazoline-6-sulfonic acid) diammonium salt (ABTS(*)(+)) radical cation with K(2)S(2)O(8) or MnO(2) assays. Polyphenols, tocopherols, proteins, and antioxidant potentials were higher in Polish garlic, but not significantly (P > 0.05). The SDS- and native-PAGE electrophoretic patterns of all three fresh garlic samples were without significant differences. Most of the proteins were in the molecular mass range of 24-97 kDa, and the more intensive major bands were concentrated at 50 and 12 kDa. The 50 kDa protein nearly disappears and the intensity of the 12 kDa lectin bands slightly decreases during cooking. It was observed that the bioactive compounds, antioxidant potential, and proteins in garlic decrease significantly after 20 min of cooking at 100 degrees C (P < 0.05). In conclusion, (a) the bioactive compounds, electrophoretic patterns, and antioxidant potential of fresh Polish, Ukrainian, and Israeli garlic samples are comparable; (b) garlic samples subjected to 100 degrees C during 20 min preserve their bioactive compounds, antioxidant potential, and protein profile and are comparable with fresh garlic; and (c) fresh garlic should be added to dishes cooked at 100 degrees C in the last 20 min of the cooking process.  相似文献
