Whole grains of different cereals have traditionally been prepared with water and heat prior to dehulling, but knowledge of the effect on nutritional properties is limited. The aim of the present study was to investigate if phytate reduction occurred during hydrothermal treatment of whole grains. Wheat, rye, hulled and dehulled barley, hulled oats and naked oats were incubated with either water or acetate buffer (pH 4·8) at 55 °C for 24 h with the exception of oats, which were incubated at 37 °C. Phytate in wheat, rye and barley was reduced by 46–77% when water was used and by 84–99% when acetate buffer was used. The phytate reduction in oats was considerably less, 8–26%, but, after grinding and soaking, phytate was reduced by 72–77% in dehulled oats and by 88–94% in naked oats. Citric acid and citrate buffer was used for pH adjustment in some experiments, and their use resulted in less phytate reduction than when acetate and lactic acid were used. Wet-steeping of naked oats and naked barley in water at 53–57 °C for 20–30 min reduced the bacterial counts by 99·97%, and the addition of acid prevented bacterial growth during the incubations. It was concluded that cereals with reduced phytate content and good hygienic quality can be developed and produced using hydrothermal treatment of whole grains.  相似文献

Bread is consumed all over the world. However, so far, production of large volume bread is only possible with wheat. Alternatives, such as oats, are less suitable but this is partly due to the lack of knowledge about their functionality for other purposes than porridge, which is their most common use. Existing standard tests for the dough making characteristics of wheat flour are not suitable for oat flour, hampering research to optimize oats for bread-making purposes. We therefore set out to develop a test to evaluate oat in relation to mixing and dough making properties using wheat as a model. It was possible to reproduce the profile of various qualities of wheat flour using mixtures of oat flour and gluten in different proportions. Our standard test was based on a dough system composed of 87.2% oat flour and 12.8% gluten and it presented similar properties to a wheat flour with regard to resistance to extension. This dough system was sensitive and reliable (coefficient of variation lower than 10%) for detecting differences among oat cultivars, and it can be used to screen oat varieties and individual oat components in relation to relevant properties for bread-making purposes.  相似文献

Saflufenacil is a new herbicide being developed by BASF for pre-emergence application for broadleaved weed control in maize and other crops. Three field studies were conducted in Ontario, Canada over a 2-year period (2006 and 2007) to evaluate the tolerance of spring cereals (barley, oats, and wheat) to pre-emergence and post-emergence applications of saflufenacil at 50 and 100 g ai ha−1. Saflufenacil pre-emergence caused minimal visible injury (1% or less) at 3, 7, 14 and 28 days after emergence and had no adverse effect on plant height or yield of barley, oats, and wheat. Saflufenacil plus the surfactant Merge (1% v/v) applied post-emergence caused as much as 76, 60, 52 and 35% visible injury in spring cereals at 3, 7, 14 and 28 DAT, respectively. Injury with saflufenacil plus Merge applied post-emergence decreased over time and was generally greater as dose increased. Saflufenacil plus Merge applied post-emergence reduced plant height by as much as 16% and reduced yield of spring barley and wheat by 24 and 13%, respectively, but had no effect on the yield of spring oats. Based on these results, saflufenacil applied pre-emergence at the proposed dose can be safely used in spring planted barley, oats and wheat; however, the post-emergence application of saflufenacil results in unacceptable injury and yield loss. These results are consistent with the proposed pre-emergence use pattern for saflufenacil.  相似文献

There is little information on the response of spring planted barley (Hordeum vulgare L.), oats (Avena sativa L.) and wheat (Triticum aestivum L.) to mesotrione under Ontario environmental conditions. Four field studies were conducted in Ontario, Canada over a two-year period (2008 and 2009) to evaluate the sensitivity of spring planted cereals (barley, oats, and wheat) to pre-emergence (PRE) and post-emergence (POST) applications of mesotrione at 50, 100, and 150 g ai ha−1. Mesotrione applied PRE caused minimal visible injury at 3, 7, 14 and 28 days after emergence (DAE) and had no adverse effect on plant height or yield of barley, oats and wheat. Mesotrione applied POST caused as much 11% injury and reduced plant height as much as 6% in spring planted cereals. Injury was higher in wheat compared to barley or oats. Mesotrione applied POST had no adverse effect on the yield of barley or oats but decreased the yield of wheat as much as 14%. Based on this study, mesotrione applied PRE at 50, 100 or 150 g ai ha−1 can be safely used in spring planted barley, oats, and wheat. Mesotrione applied POST at the proposed dose of 50, 100 or 150 g ai ha−1 can also be safely used in spring planted barley and oats. However, mesotrione applied POST results in unacceptable injury in spring planted wheat.  相似文献

The present paper summarizes the current state of knowledge on cereal phytase that are particular relevant for improving mineral and phosphate bio-availability. Phytases can initiate the hydrolysis of phytate, the main storage form of phosphate in cereals and the major anti-nutritional factor for the bio-availability of micronutrients in human nutrition. The composition and levels of mature grain phytase activity (MGPA) in cereals is of central importance for efficient phytate hydrolysis. The MGPA varies considerably between species. Substantial activity is present in Triticeae tribe cereals like wheat, barley and rye whereas non-Triticeae cereals such as maize and rice have very little MGPA. Recent studies have determined the evolutionary relationships of phytases in Triticeae and non-Triticeae and highlighted the importance of the purple acid phosphatase phytases (PAPhys). In the Triticeae, PAPhys are synthesized during grain development (PAPhy_a) and during germination (PAPhy_b). In non-Triticeae species, only PAPhys that are mainly synthesized during germination were identified. The new knowledge provides new opportunities for modulating the MGPA in Triticeae cereals but also indicates that nutritionally relevant levels of MGPA are unlikely to be achieved in non-Triticeae by conventional breeding. Increasing MGPA in barley via cisgenesis is discussed.  相似文献

The effect of adding ground oats and barley on the ensiling characteristics of autumn-and spring-harvested ryegrass was studied in laboratory scale silos.
The addition of oats or barley at rates of 13 or 53 kg t−1 of grass significantly improved the fermentation of late autumn ryegrass silage in the first year. Ammonia N levels were reduced from over 20% of total N to 11% or less. Similar addition to autumn-cut ryegrass higher in soluble carbohydrate content in the second year also significantly reduced pH and ammonia levels but all silages were well fermented. Addition of cereals to spring-cut ryegrass containing over 20% soluble carbohydrate had no effect on fermentation. Cereal addition increased silage DM and decreased silage fibre content in all experiments.
The results are discussed in relation to the potential advantage of cereal addition in the ensiling of grass crops.  相似文献

A method of growing cereals with no input of N fertilizer was tested. Two experiments are reported in which white clover ( Trifolium repens L.) was used to supply the nitrogen requirements of the cereal. Spring barley, spring oats and winter barley were direct drilled into an established clover crop and grown with the legume as an understorey. The yield of whole crop cereal, for ensilage, and yield of cereal grain were similar to those grown by traditional methods. In the first experiment, clover survived adequately to be used again, but in the second experiment it was killed by a very high slug population. A method of slug control by mob stocking with sheep is discussed. Where clover survived, no weed, insect or disease problems were encountered. The technique offers a possible method of reducing the environmental problems arising from the use of nitrogen fertilizers.  相似文献

In 1977 and 1978 in the field the cereal aphid Sitobion avenae F. (Hemiptera:Aphididae) was a pest on winter wheat (cv. Maris Huntsman), but was rare on winter barley (cv. Maris Otter). The results of laboratory experiments can only partly account for this observation. Alates showed no preference between leaves of wheat and barley, flag leaves of wheat and ears of barley, or ears of wheat and barley, the developmental stages available for colonization in the field. Developmental time, teneral weight, reproductive rate and offspring size of apterae were similar when reared on ears of wheat and barley. However, the proportion that developed into alatae and adult mortality were significantly higher on barley. That aphids fed on the rachis of wheat and the glumes of barley was attributed to differences in the ear structure of the two cereals. The possible role of plant structure in determining the resistance of cereals to aphids in the field is discussed.  相似文献

Meeting demands for increased cereal production in China is a great challenge and this paper provides updated information on cereal production and the potential adaptation of cropping systems to climate change, as well as on progress in improving yield potential and developing molecular markers and GM cereals in China. Maize production and soybean imports are increasing significantly to meet the strong demand for feed by a rapidly growing livestock industry. Extension of the rice and maize growing seasons in northeastern China and improvement of the cropping system through delayed wheat planting have contributed to improving cereal productivity despite changing climatic conditions. Significant improvements in yield potential of rice, maize, and wheat have been achieved. Comparative genomics has been successfully used to develop and validate functional markers for processing quality traits in wheat, and also for developing new varieties. Although transgenic Bt rice and maize, and maize expressing phytase have been developed, their commercialization has not been officially permitted. International collaboration has contributed significantly to cereal production by providing germplasm and improved crop management practices. Full integration of applied molecular technologies into conventional breeding programs and promotion of lower-input technologies, will play a key role in increasing and sustaining future cereal production.  相似文献

A bioeconomic model is described and used to investigate the agronomic and economic consequences of using a range of management strategies for the control of winter wild oats (Avena sterilis L.) in cereal cropping systems representative of central Spain. The results of simulations indicated that growing winter wheat continuously with the annual application of herbicides may be the optimum strategy, resulting in acceptable wild oat populations and maximum economic benefits. However, the practice of wheat monoculture was only a valid option as long as herbicides were applied annually: spraying herbicides in alternate years failed to control wild oats adequately and resulted in major economic losses. The rotation of wheat with a fallow year, with no herbicides applied in either of the two years, may be a satisfactory low-cost alternative when wild oat infestation levels are low, but it is not valid when infestation levels are high. The strategy that combines the use of a fallow year with herbicide application in the wheat year resulted in optimum wild oat control and moderate profitability under all conditions. However, the net returns obtained were substantially lower than in the continuous wheat plus herbicide strategy. The sensitivity of the model to variation in various key parameters was tested: wheat yield level and fixed costs were the two parameters that had the largest effect on model output. Cerealbeta-amylases are perhaps best known in terms of the vital role they play in releasing easily fermentable sugars from cereal grain starch to fuel the production of alcohol by yeast in brewing. The extent to which they have been investigated is indeed largely due to their significance in this economically important industry. However, cerealbeta-amylases are also, or could be, employed in many other aspects of the food industry and the analysis of starch, and they constitute valuable markers in cereal assessment and breeding studies. Quite apart from their practical significance, they are rewarding objects of biochemical and physiological research. They are interesting models for the study of enzyme polymorphism, post-translational modification and the differential expression of isoenzymes. In spite of their often high activitiesin situand all that is known about their generation, they are an enigma in that their physiological function, or even necessity, remains unclear. It has been recently recognised that there are two different categories of cerealbeta-amylases which exhibit different tissue and taxonomic specificities and physiological developmental patterns. The «classical»beta-amylases present at high activities in cereal seeds appear to be limited to the endosperm of the species of the Triticeae tribe of the Festucoideae subfamily of the Gramineae (wheat, barley and rye), whereas all cereals exhibit a different, tissue-«ubiquitous» form of the enzyme which is present at much lower activity levels. The physiological phenomenology and the usage of cerealbeta-amylases are discussed in relation to these two categories of enzyme.  相似文献

Celiac disease (CD) is a chronic inflammatory disease affecting the small intestinal mucosa. The causative agents have been identified as gluten proteins from wheat, barley, and rye, and the only available treatment for CD patients is a lifelong gluten-free diet. Non-gluten containing cereals would be a valuable contribution to the gluten-free diet. In this respect, oats are a good choice. However, commercial lots of oat flakes and flour frequently are contaminated with wheat, barley, and rye, and two studies have reported that some peptides derived from the gluten-like avenin storage proteins of oat can trigger an immune response in some CD patients. In the present study we have initiated the investigation whether all oat varieties contain similar amounts of potentially harmful sequences by biochemical and immunological methods. We confirm that commercial oat preparations are contaminated with other cereals that contain gluten or gluten-like proteins. Moreover, our results demonstrate that contamination-free oat varieties differ in their capacity to stimulate an avenin-sensitive gamma-gliadin specific T cell line derived from a patient with CD, indicative for differences in the two known avenin epitopes among oat varieties, implying that selection and breeding of completely safe oat varieties for all CD patients may be a realistic possibility.  相似文献

This review considers the various immunochemical assays developed for gluten quantification and their feasibility for testing gluten-free food consumed by patients with coeliac disease. The first part concerns the major requirements of these assays: (a) detection of prolamins from the different cereals involved in gluten intolerance (wheat, rye, barley and oats) and avoidance of cross-reactions with prolamins from maize, rice, etc.; and (b) sensitive detection of native proteins as well as those denatured by cooking or other treatments. B-glucan is one of the components that differentiate oats from other cereals and that contribute to the health-related value of oats. However, so far oats cannot easily be applied in bread-like products without loss of product quality. Here we have studied how the content and viscosity of oat β-glucan affect the technological properties of oat dough in both a gluten-free and a gluten-containing system. In both systems, increasing the β-glucan concentration resulted in an increase of dough stiffness and in a reduction of dough extensibility. β-glucan negatively impacted the elastic properties that additional wheat gluten conferred to oat dough. This effect was smaller for medium-viscosity β-glucan than for high-viscosity β-glucan. Interestingly, dough made from low β-glucan flour (<2%) had increased gas retention capacity. Overall, the impact of β-glucan on the properties of oat dough systems was governed by concentration and viscosity, with or without additional wheat gluten. Our findings indicate that β-glucan is a key component that determines the rheology of oat-based dough systems and, with that, the technological functionality of oat in dough systems.  相似文献

In recent decades there has been steady reduction in the rate of increase in cereal yields worldwide. This paper aims to (1) characterise the changes in yield trends of spring (barley, oat and wheat) and winter cereals (rye and wheat) grown in Finland and (2) distinguish between plant breeding achievements and other potential contributors to changes in national yield trends and differences among crops. In this work we used long-term datasets from FAO (FAOSTAT, 2007) (1960–2005) and results from multi-location MTT Official Variety Trials (1970–2005). A mixed model technique was used to divide the yield trends in variety trials into two components: genetic improvements and environmental changes. All trends were characterised using 5 years moving averages. The study period was divided into three agronomically relevant sub-periods: (1) in 1960–1980 agriculture was mechanised and improved basic agricultural practices largely introduced, (2) in 1981–1994 intensified crop management practices were increasingly applied and (3) in 1995–2005 Finland had joined the European Union, which resulted in altered agricultural policies and markets. Plant breeding has successfully increased genetic yield potential of all cereal crops without any indication of reduced rates of improvement. Since 1995 the Finnish national yield trends declined for all crops except wheat, for which the trend levelled-off. The main reasons for this are: cereal production has become less intensive because of (1) application of an environmental programme aimed at increasing the sustainability of agriculture by reducing the environmental load it represents and (2) markedly decreased economic incentives to produce intensively as producer prices for cereals decreased and input prices remained unchanged. National yield trends did not decline because of lack of genetic improvement in yield potential. It is likely that future cereals yield trends will again respond to increasing demand for food, feed, biofuel production and global climate change.  相似文献

The cereal composition of specific foods is always a key factor in the quality and safety of the final product. It is important to introduce new control methods for certain special foods, such as those for coeliac consumers, where the contamination of different cereal species must be accurately determined. Moreover, pasta made from durum wheat is considered superior in several qualitative aspects to that manufactured with bread wheat or a mixture of the two species. This work has been directed toward the development of analytical systems for the qualitative and quantitative detection of specific cereals in food. More specifically, the primary aim of this work has been to develop analytical tools based on end-point and real-time PCR to detect the presence of Triticum species in flour and food. Furthermore, qualitative and quantitative PCR-based methods are proposed to detect hexaploid wheat adulteration in pasta.  相似文献

Volunteer winter cereals are found sporadically in maize (Zea mays L.) fields across southern Ontario. Seven field trials were conducted over a two-year period (2006 and 2007) at four locations to determine the efficacy of five acetolactate synthase (ALS)-inhibiting herbicides for the control of volunteer cereals applied at two post-emergence application timings (2–4 and 4–7 maize leaf tips). The volunteer cereals were a hard red winter wheat (Triticum aestivum L.) (‘Hyland AC Morley’), soft red winter wheat (‘Pioneer 25R47’), soft white winter wheat (‘Pioneer 25W41’), and a autumn rye (Secale cereale L.) (‘FR’) cultivar. Volunteer cereal competition in maize resulted in a yield reduction of up to 44%. Foramsulfuron, nicosulfuron, nicosulfuron/rimsulfuron provided greater than 70% control of the volunteer cereals at 56 days after treatment (DAT), while primisulfuron and rimsulfuron provided greater than 60% control. Volunteer cereal control with early and late application was greater than 82 and 61%, respectively. Hard red winter wheat was the most sensitive to the ALS-inhibiting herbicides with control of 84–93%. Soft red and soft white winter wheat cultivars were intermediate in sensitivity with control of 76–87%, while autumn rye was the least sensitive with control of at 56–71% control at 56 DAT. Maize yields were improved when volunteer cereals were controlled with the use of herbicides compared to the weedy control, but were lower than the weed-free control. Early herbicide application resulted in improved control of volunteer cereals and higher maize yield.  相似文献
