Zein films plasticized with oleic acid have been considered potentially useful for biodegradable packaging applications. However, moisture was found to affect their tensile and gas barrier properties. We investigated the effects of two converting processes, fusion lamination and coating with drying oils, on tensile properties and gas permeability of zein films. Zein films were laminated to 4-ply sheets in a Carver press and coated with tung oil, linseed oil, or a mixture of tung and soybean oils. Tensile properties and permeability to water vapor, oxygen, and carbon dioxide were measured according to ASTM methods. Laminated films were clearer, tougher, and more flexible, and had a smoother finish than nontreated sheets. Lamination decreased O(2) and CO(2) permeability by filling in voids and pinholes in the film structure. Coating increased tensile strength and elongation and decreased water vapor permeability. Coatings acted as a composite layer preventing crack propagation and increasing film strength. They also formed a highly hydrophobic surface that prevented film wetting.  相似文献

The total free radical scavenger capacity (RSC) of 57 edible oils from different sources was studied: olive (24 brands of oils), sunflower (6), safflower (2), rapeseed (3), soybean (3), linseed (2), corn (3), hazelnut (2), walnut (2), sesame (2), almond (2), mixture of oils for salad (2), "dietetic" oil (2), and peanut (2). Olive oils were also studied according to their geographical origins (France, Greece, Italy, Morocco, Spain, and Turkey). RSC was determined spectrophotometrically by measuring the disappearance of the radical 2,2-diphenyl-1-picrylhydrazyl radical (DPPH(*)) at 515 nm. The disappearance of the radical followed a double-exponential equation in the presence of oils and oil fractions, which suggested the presence of two (fast and slow) groups of antioxidants. RSC was studied for the methanol-soluble phase ("methanolic fraction", MF) of the oil, the fraction nonsoluble in methanol ("lipidic fraction", LF), and the nonfractionated oil ("total oil"; TF = MF + LF). Only olive, linseed, rapeseed, safflower, sesame, and walnut oils showed significant RSC in the MF due to the presence of phenolic compounds. No significant differences were found in the RSC of olive oils from different geographical origins. Upon heating at 180 degrees C the apparent constant for the disappearance of RSC (k(T)) and the half-life (t1/2) of RSC for MF, LF, and TF were calculated. The second-order rate constants (k2) for the antiradical activity of some phenolic compounds present in oils are also reported.  相似文献

Zein films prepared by resin were coated with either flax oil or tung oil and cured by UV- or gamma-radiation. Coated zein films were then evaluated for tensile and water barrier properties. Film microstructure was examined by transmitted light microscope. Tensile strength, elongation, and toughness of oil-coated samples increased substantially with respect to uncoated films. Flax oil coated samples showed an increase in elongation of 300%. It was suggested that oil coatings fill in pinholes and cracks existing in zein films, affecting their mechanical properties. Water vapor permeability also decreased statistically for coated film (except for tung oil coated-UV treated films), suggesting water vapor transfer was controlled by film hydrophobicity and microstructure. Moreover, the liquid water transmission rate of coated films was at least 10 times slower than for control films. Examination of film microstructure revealed that flax oil coatings had uniform coverage and smooth finish, which explained their high elongation, low water vapor permeability. Tung oil coatings cured under UV light showed patterns of intertwined dark and light regions, which may be caused by cross-linking and drying at different times. The oriented structures were found when tung oil coatings were cured by gamma-radiation.  相似文献

This study evaluates the effects of replacing beef tallow added to rabbit feeds (3% w/w) by different doses (0%, 1.5% and 3% w/w) of n-6- or n-3-rich vegetable fat sources (sunflower and linseed oil, respectively) and alpha-tocopheryl acetate supplementation (0 and 100 mg/kg) on the fatty acid composition, alpha-tocopherol content, and oxidation levels [assessed by analyzing thiobarbituric acid (TBA) and lipid hydroperoxide values] in rabbit meat. We also measured these parameters after cooking and refrigerated storage of cooked rabbit meat. Both dietary alpha-tocopheryl acetate supplementation and the dose and source of fat added to feeds influenced meat fatty acid composition, modifying the n-6/n-3 ratio, which was more nutritionally favorable when linseed oil was used. Furthermore, the addition of linseed oil and the supplementation with alpha-tocopheryl acetate enhanced long-chain PUFA biosynthesis. However, the addition of 3% linseed oil increased meat oxidation, and although it was reduced by dietary supplementation with alpha-tocopheryl acetate in raw meat, this reduction was not as effective after cooking. Therefore, dietary supplementation with 1.5% linseed oil plus 1.5% beef tallow and with alpha-tocopheryl acetate would be recommended to improve the nutritional quality of rabbit meat.  相似文献

Two stable isotope dilution assays were developed for the quantitation of acrolein in fats and oils using [(13)C(3)]-acrolein as the internal standard. First, a direct GC-MS headspace method, followed by an indirect GC-MS method using derivatization with pentafluorophenyl hydrazine, was established. Analysis of six different types of oils varying in their pattern of fatty acids showed significant differences in the amounts of acrolein formed after heating at various temperatures and for various times. For example, after 24 h at 140 °C, coconut oil contained 6.7 mg/kg, whereas linseed oil was highest with 242.3 mg/kg. A comparison of the results showed that the extent of acrolein formation seemed to be correlated with the amount of linolenic acid in the oils. Although the acrolein concentrations were lowered in all six oils after frying of potato crisps, linseed and rapeseed oil still contained the highest amounts of acrolein after frying. By applying both methods on different thermally treated fats and oils, nearly identical quantitative data were obtained.  相似文献

研究日光温室番茄果实直径以及茎秆直径微变化在不同天气状况的变化规律以及其与分根区交替灌溉(alternate partial rootzone irrigation,APRI)以及固定部分根区滴灌(fixed root-zone drip irrigation,FDI)条件下不同根区土壤含水量的关系,可为根据茎秆直径和果实直径微变化指导部分根区灌溉决策提供理论依据。该研究利用LPS-05MD植物生理监测系统对日光温室APRI和FDI处理下盛果期的果实直径与茎秆直径的微变化进行了连续观测。结果表明:晴天番茄果实直径以及茎秆直径微变化幅度较阴天显著(P0.05)。在盛果期,番茄果实直径日增长量(maximum daily increase of fruit diameter,MDIFD)与土壤水分含量关系不密切(R2=0.30,P=0.164),然而MDIFD随着日平均太阳辐射强度的增加而显著增大(R2=0.64,P=0.018);盛果期APRI和FDI处理下茎秆直径日最大收缩量(maximum daily stem shrinkage,MDS)与参考作物蒸发蒸腾量(ET0)存在显著线性正相关(R2=0.38,P0.0001);APRI处理MDS与ET0比值(MDS/ET0)随着根区平均土壤含水量的增加而线性增加,并且MDS/ET0与干燥侧(R2=0.59,P0.01)以及湿润侧土壤含水量(R2=0.88,P0.001)均呈现极显著线性相关关系(P0.01),且以湿润侧的关系极显著(P0.001);FDI处理下,MDS与ET0比值(MDS/ET0)随着湿润侧根区平均土壤含水量的增加而显著线性增加(R2=0.61,P0.001),而MDS/ET0与干燥侧土壤含水量无显著线性相关关系(R2=0.02,P=0.64)。该研究揭示了APRI以及FDI处理下日光温室条件下果实直径和茎秆直径微变化的机制,可为该灌溉方式下科学灌溉制度的建立提供依据。  相似文献

The microbiological contamination of raw plant materials is common and may be adequately reduced by radiation processing. This study evaluated the effects of gamma- and e-beam ionizing radiations (25 kGy) on three plants used as food or as medicinal products (Thymus vulgaris L., Eucalyptus radiata D.C., and Lavandula angustifolia Mill.) as well as their effects on extracted or commercial essential oils and pure standard samples. Comparison between irradiated and nonirradiated samples was performed by GC/FID and GC/MS. At the studied doses, gamma and e-beam ionizing radiation did not induce any detectable qualitative or quantitative significant changes in the contents and yields of essential oils immediately after ionizing radiation of plants or commercial essential oils and standards. As the maximum dose tested (25 kGy) is a sterilizing dose (much higher than doses used for decontamination of vegetable drugs), it is likely that even decontamination with lower doses will not modify yields or composition of essential oils of these three plants.  相似文献

Fish oils extracted from marinated herring (frozen and unfrozen) byproducts and maatjes herring byproducts were evaluated on their chemical and sensory properties. The obtained crude oils had very low content of copper (<0.1 mg/kg oil), and iron values were 0.8, 0.1, and 0.03 mg/kg oil, respectively, for oil from maatjes and frozen and fresh byproducts. For the maatjes oil, a much lower value was found for alpha-tocopherol compared to the other oils. Storage stability results showed that the oils behave differently. Secondary oxidation products were measured for fresh oil, while for the maatjes and frozen byproducts' oil, tertiary oxidation products were detected. Over storage time, the maatjes and frozen byproducts' oils became more intense in odor, correlating positively at the end with sensory attributes of train-oil, acidic, marine and fishy. The best correlation between sensory and chemical analyses was found for FFA and fishy off-odor (r = 0.781).  相似文献

The qualitative and quantitative composition of the essential oil from black, green, and white pepper was determined by using a simultaneous distillation and extraction micromethod for oil isolation and gas chromatography (GC)/flame ionization detection (FID) and GC/mass spectrometry (MS) analysis techniques. The most abundant compounds in pepper oils were (E)-beta-caryophyllene (1.4-70.4%), limonene (2.9-38.4%), beta-pinene (0.7-25.6%), Delta-3-carene (1.7-19.0%), sabinene (0-12.2%), alpha-pinene (0.3-10.4%), eugenol (0.1-41.0%), terpinen-4-ol (0-13.2%), hedycaryol (0-9.1%), beta-eudesmol (0-9.7%), and caryophyllene oxide (0.1-7.2%). Green pepper corn obtained by a sublimation drying method gave more oil (12.1 mg/g) and a much higher content of monoterpenes (84.2%) in the oil than air-dried green pepper corn (0.8 mg/g and 26.8%, respectively). The oil from ground black pepper contained more monoterpenes and less sesquiterprnes and oxygenated terpenoids as compared to green and white pepper oils. After 1 year of storage of pepper samples in a glass vessel at room temperature, the amount of the oils isolated decreased, the content of terpenes decreased, and the amount of oxygenated terpenoids increased. Differently from other pepper samples, 1 year storage of green pepper corn raised the oil amount more than twice of both drying methods.  相似文献

采用静态堆码方式对中药六味地黄丸粉进行辐照杀菌研究。结果表明,在垂直于辐照源轴线方向不同距离处的药品堆积厚度与辐照剂量率之间呈显著负相关( p< 001) ,相关系数 r = - 09947 。辐照工艺技术的改变会不同程度地影响杀菌效果,提高产品总体吸收剂量均匀度,是保证杀菌效果的主要因素。六味地黄丸粉中杂菌的 D10 值为217k Gy 。经100 k Gy 剂量辐照后的六味地黄丸粉,没有发生质量改变,其主要药效成分含量没有变化。  相似文献

采用60Co γ射线对甘薯进行辐照预处理,考察辐照、热风温度和切片厚度对其干燥特性和表面温度的影响,同时对不同剂量辐照的甘薯样品进行了显微观察和水分活度测定。结果表明,甘薯的干燥速率和表面温度随着辐照剂量的升高而升高。当干基含水率为150%时,辐照剂量为0、2、5、8和10kGy的样品干燥速率分别为1.92、1.97、2.05、2.28和3.12%/min,表面温度分别为48.5℃、46.3℃、44.5℃、42.2℃和41.5℃;热风温度越高,切片越薄,辐照后甘薯失水速率越大。热风温度为85℃的样品比热风温度为65℃的样品干燥时间缩短170min,切片厚度为3mm的样品比切片厚度为7mm的样品干燥时间缩短了228min;辐照后的甘薯细胞壁变薄出现断裂,液泡破裂,水分活度也随辐照剂量的升高而增大。辐照剂量为0、2、5、8、10kGy的样品水分活度分别为0.92、0.945、0.958、0.969、0.979。辐照对甘薯热风干燥速率表面温度和水分活度等有显著影响,为进一步研究甘薯辐照与热风干燥结合加工工艺提供理论基础。  相似文献

从 5 6套输液器分离得到 3 0 3 2株分离菌 ,系统地研究了输液器上污染微生物的辐射抗性。用辐射处理获得了较高抗辐射的微生物 98株 ,测定了它们的辐射抗性D10 。分离菌株的D10 是在 0 8~ 4 0kGy之间 ,主要集中在 1 2~ 1 6kGy。D10 ≤1 6kGy占全部污染菌的 99%。所有辐射筛选菌株是革兰氏阳性菌 ,其中 84株是Bacillussp .,1 4株是micrococcussp .。在输液器外壁获得了 1株桔红色的菌株 ,其D10 为 4 0kGy。  相似文献

Edible films, as carriers of antimicrobial compounds, constitute an approach for incorporating plant essential oils (EOs) onto fresh-cut fruit surfaces. The effect against Escherichia coli O157:H7 of oregano, cinnamon, and lemongrass oils in apple puree film-forming solution (APFFS) and in an edible film made from the apple puree solution (APEF) was investigated along with the mechanical and physical properties of the films. Bactericidal activities of APFFS, expressed as BA50 values (BA50 values are defined as the percentage of antimicrobial that killed 50% of the bacteria under the test conditions) ranged from 0.019% for oregano oil to 0.094% for cinnamon oil. Oregano oil in the apple puree and in the film was highly effective against E. coli O157:H7. The data show that (a) the order of antimicrobial activities was oregano oil > lemongrass oil > cinnamon oil and (b) addition of the essential oils into film-forming solution decreased water vapor permeability and increased oxygen permeability, but did not significantly alter the tensile properties of the films. These results show that plant-derived essential oils can be used to prepare apple-based antimicrobial edible films for various food applications.  相似文献

为探索适宜的杏仁热风干燥温度,以热烫去皮处理后的湿杏仁为试验材料,研究了热风干燥不同温度对杏仁及其油脂的感官、理化和营养品质的影响。结果表明,经热烫去皮、干燥处理后可以得到颜色较浅的杏仁油,有利于提高杏仁油的感官品质,但会造成杏仁油过氧化值显著升高(P0.05),油酸、亚油酸、十七碳烯酸、二十碳一烯酸等不饱和脂肪酸的比例和甾醇含量降低,棕榈酸、棕榈油酸、硬脂酸、十七碳烷酸、二十碳烷酸、二十碳一烯酸的比例和总生育酚含量升高,对杏仁油的理化特性和营养品质产生影响。但不同脂肪酸及其伴随物种类、不同温度处理变化幅度不同。随着干燥温度的提高,干燥速率逐渐加快,杏仁及杏仁油的颜色逐渐加深,杏仁油亮度下降,酸价略有升高,但不同干燥温度之间差异不显著(P0.05);过氧化值呈上升趋势,且80℃以上干燥处理显著高于40℃和60℃干燥处理(P0.05);总不饱和脂肪酸、油酸、亚油酸、十七碳烯酸、二十碳烷酸的比例及β-生育酚、δ-生育酚及总生育酚含量总体呈下降趋势,棕榈油酸、棕榈酸、硬脂酸的比例和β-谷甾醇、总甾醇含量总体呈升高趋势。低温干燥有利于提高杏仁油中生育酚含量,而提高干燥温度则有利于杏仁油中植物甾醇含量的提高。尤其是干燥温度为80℃以上时,杏仁油的品质变化加快。因此,为提高杏仁油理化与营养品质,杏仁脱皮后的干燥宜在80℃以下的较低温度条件下进行。研究结果可为杏仁干燥和高品质杏仁油加工提供参考。  相似文献

Olive oil fluorescence is related to oil composition. Here it is shown that the natural clustering of different types of commercial Spanish olive oils depends on their fluorescence excitation-emission matrices (EEMs). Fifty-six commercial samples of olive oil (29 virgin olive oils, 20 pure olive oils, and 7 olive-pomace oils) were used. The clustering method was hierarchical agglomerative clustering using the Euclidean distance as a similarity measure and the average linkage. Two spectral ranges were considered (which either contained the fluorescence peak of the chlorophylls or did not), and various methods for preprocessing the fluorescence spectra were compared. The oils were clearly distinguished using the unfolded EEMs measured between lambda(ex) = 300-400 nm and lambda(em) = 400-600 nm. The optimal preprocessing was normalization of the unfolded spectra followed by column autoscaling. Also shown are the advantages of using second-order data (EEMs) instead of first-order data (a single fluorescence spectrum) for each sample.  相似文献

Ionizing radiation is an effective processing technology for pathogen inactivation on various foods. However, the generation of off-odor is a concern for some irradiated meats. This study was conducted to investigate volatile sulfur compounds of precooked ready-to-eat turkey breast as functions of radiation dose and subsequent storage. Precooked turkey breast was exposed to 0, 1, 2, 3, 4, and 5 kGy of gamma radiation and stored for 14 days at 5 degrees C. Volatile sulfur compounds were extracted using solid phase microextraction (SPME), followed by gas chromatographic separation and pulsed flame photometric detection. Irradiation dramatically increased concentrations of hydrogen sulfide, sulfur dioxide, methanethiol, and dimethyl disulfide. The rate of increase was higher at low doses (0-2 kGy) than at higher doses of 3-5 kGy. Carbon disulfide was the only volatile sulfur compound that was reduced by irradiation. Concentrations of all volatile sulfur compounds decreased in both irradiated and nonirradiated samples stored at 5 degrees C.  相似文献

亚麻籽油和辅酶Q10都具有水中溶解度低、稳定性差、生物利用度低等缺点。将亚麻籽油和辅酶Q10(coenzyme Q10,CoQ10)同时负载于乳液中,可解决两者的应用瓶颈。使用阿拉伯胶为乳化剂,采用高压均质法制备复配亚麻籽油和CoQ10乳液。采用动态光散射、透射电子显微镜、体外模拟消化、体外释放、稀释稳定性、冻融稳定性、离子强度稳定性、光稳定性和加速氧化稳定性方法对所制备乳液的理化性质进行表征。结果显示,制备的乳液平均粒径为(284±5.6) nm,多分散指数(polydispersity index,PDI)为0.112±0.025,为均匀分散的球形液滴。制备的乳液在模拟小肠液中消化,和亚麻籽油、CoQ10混悬液相比,乳化后亚麻籽油的消化速率和CoQ10的生物可给率明显提高。乳液中CoQ10的释放表现出缓释效果。制备的乳液具有较好的稀释和冻融稳定性。Na^+和Ca^2+会造成乳液Zeta电位的下降,对乳液稳定性影响较大。乳液载体化后CoQ10的光稳定性得到了提高。CoQ10对亚麻籽油具有较好的保护作用。  相似文献

Methylcellulose (MC)-based films were prepared by solution casting from its 1% aqueous suspension containing 0.25% glycerol. Trimethylolpropane trimethacrylate (TMPTMA) monomer (0.1-2% by wt) along with the glycerol was added to the MC suspension. The films were cast and irradiated from a radiation dose varied from 0.1 to 10 kGy. Then the mechanical properties such as tensile strength (TS), tensile modulus (TM), and elongation at break (Eb) and barrier properties of the films were evaluated. The highest TS (47.88 PMa) and TM (1791.50 MPa) of the films were found by using 0.1% monomer at 5 kGy dose. The lowest water vapor permeability (WVP) of the films was found to be 5.57 g·mm/m(2)·day·kPa (at 0.1% monomer and 5 kGy dose), which is 12.14% lower than control MC-based films. Molecular interactions due to incorporation of TMPTMA were supported by FTIR spectroscopy. A band at 1720 cm(-1) was observed due to the addition of TMPTMA in MC-based films, which indicated the typical (C═O) carbonyl stretching. For the further improvement of the mechanical and barrier properties of the film, 0.025-1% nanocrystalline cellulose (NCC) was added to the MC-based suspension containing 1% TMPTMA. Addition of NCC led to a significant improvement in the mechanical and barrier properties. The novelty of this investigation was to graft insoluble monomer using γ radiation with MC-based films and use of biodegradable NCC as the reinforcing agent.  相似文献

In olive oils, relationships between oxidative stability, glyceridic composition, and antioxidant content were investigated. Lipid matrices, obtained by purification of olive and high-oleic sunflower oils, were spiked with hydroxytyrosol, alpha-tocopherol, and mixtures of them and then subjected to oxidation in a Rancimat apparatus at 100 degrees C. At the same concentration of antioxidants, induction time (IT) decreased as the unsaturation rate of the matrix increased, but only fair correlations were found with fatty acid composition. Oxidative susceptibility (OS(TAG)) was calculated as a function of the relative oxidation rate of the triacylglycerols, and a linear relationship-IT (h) = (a + b)OS(TAG)-between induction time and this parameter showed a good correlation coefficient (r > 0.990, p < 0.001). In the case of matrices with a single antioxidant, origin ordinate (a) and slope (b) can be calculated as a function of the antioxidant concentration. In matrices spiked with mixtures of hydroxytyrosol and alpha-tocopherol, a simple relationship between the coefficients a and b and the concentration of antioxidants cannot be established because additive and subtractive effects occur depending on the relative concentrations of both antioxidants. However, approximate values for these coefficients can be obtained, allowing the estimation of the oil stability. In various olive oils, an acceptable agreement was found between the IT experimentally determined and that calculated from the oil composition. These results confirmed that the Rancimat stability of olive oils mainly depends on triacylglycerol composition and concentrations of o-diphenols and alpha-tocopherol.  相似文献

为了综合评价胡麻资源苗期耐盐性,筛选出合理的胡麻苗期耐盐性鉴定指标,为胡麻耐盐育种和栽培提供基础理论依据,采用300 mmol/L的NaCl溶液对10份胡麻资源进行苗期胁迫处理,分析胁迫对幼苗存活率、株高、地下部干重、地上部干重、生长速率、丙二醛、脯氨酸、叶绿素、超氧化物歧化酶和过氧化物酶等10项指标的影响,结合相关性、主成分、聚类和回归分析方法进行综合评价。结果表明,轮选1号、R40、DYMS和陇亚10号具有相对较强耐盐性。筛选出生长速率和过氧化物酶2个鉴定指标为胡麻苗期耐盐能力鉴定的关键指标,以这2个筛选指标计算出的耐盐性预测值与综合评价计算出的综合Z值之间极显著相关(R2=0.982 2**),表明该鉴定结果具有较高的准确性。将10份胡麻资源的苗期与萌发期耐盐性鉴定结果对比发现,胡麻萌发期与苗期的耐盐性具有不完全的一致性。  相似文献
