The nutritional value of three pale seeded and one dark seeded variety ofAmaranthus caudatus was studied by chemical analyses and in balance experiments with growing rats. Effects of processing: popping, toasting and flaking were also examined. The pale seeds contained about 14% protein, 10% fat, 2.5% ash, 64% starch and 8% of dietary fibre. The black seeds had a much higher content of fibre (16%). The concentration of essential amino acids were high. Lysine ranged from 5.2–6.0 g/16 g N in the grains, and the limiting amino acids were leucine followed by valine or threonine. The grains contained small amounts of tannin (0.3%) and heat-labile protease inhibitor activity, at levels typical of common cereal grains. Digestibility of protein in the pale seeds was high (87%) and quite unaffected by processing. Protein digestibility of the black seeds was lower, and the digestibility was further reduced by toasting. The biological value of the protein was similar in all products, and very high. The content of minerals varied among varieties and was also affected by processing. Phytate: zinc molar ratios were high in most products, and rats fed the amaranth samples with the lowest zinc contents were in negative zinc balance. In general, femur zinc concentrations were rather low. However, amaranth is an unconventional crop which deserves further attention. 相似文献

Amino acid supplementation studies with young rats were carried out using raw and processed amaranth grain (A. cruentus) of dark- and cream- or light-colored seeds. The results of various studies repeatedly indicated that threonine is the most limiting amino acid in raw and processed, dark and cream-colored grain. Protein quality as measured either as NPR or PER was improved by threonine addition alone or with other amino acids and decreased liver fat to values similar to those measured with casein. This finding contradicts the reports that state that leucine, determined by chemical score, is the most limiting amino acid. Leucine addition alone or with other amino acids did not improve protein quality. The study confirmed cream-colored grain to be nutritionally superior to dark grain and that properly processed grain, light- or dark-colored, has higher protein quality than raw grain.INCAP Publication I-1525 相似文献

In this study, fortified and unfortified grain amaranth seed flour diets and a FeSO4-fortified casein diet (used as a control) were evaluated for their iron (Fe) bioavailability. NaFeEDTA, ferrous fumarate, and FeSO4-fortified grain amaranth were fed to growing Sprague-Dawley weaning male rats. Iron intake, hemoglobin iron (HbFe) gain, Fe availability, total iron binding capacity (TIBC), serum iron, non-haem liver iron and red bloodcell volume (RBV) were determined, and the values were compared with those of the FeSO4-fortified casein diet control. Ferrous fumarate fortified diets gave consistently high values for all these parameters, compared with consistently low values for the amaranth diet without iron fortification.Relative biological values (RBVs) were 0.40, 1.55, 1.75, 1.67 and 1.00 for animals fed on an unfortified amaranth diet, and diets fortified with NaFeEDTA, ferrous fumarate, FeSO4 and casein fortified with FeSO4, respectively. Using FeSO4-fortified casein as control, ferrous fumarate gave a superior RBVs (1.75 vs. 1.00). The RBVs, of the unfortified cereal diets were 40% that of the control, perhaps suggesting low iron absorption from the amaranth cereal. Based on the results of this study, amaranth cereal can be considered an ideal food vehicle for iron fortification. The iron fortification of choice is ferrous fumarate. 相似文献

Maize and amaranth forages, produced during the wet season, have the potential to bridge the gap in forage supply to ruminants during the dry season in Nigeria. In two growing seasons (2006 and 2007), effects of intercropping and fertilizer application on dry matter (DM) yield and chemical composition of forages, and land use efficiency, were studied in two experiments. The digestibility of sun‐dried or ensiled maize, amaranth or maize–amaranth mixtures was measured using West African dwarf sheep in a third experiment. Maize showed a higher response to fertilizer application than amaranth or maize–amaranth mixtures. With fertilizer application, DM yield varied significantly (P < 0·05) between species and intercropped mixtures. Dry matter yield ranged from 7·1 (amaranth) to 12·6 t ha?1 (maize) in 2006 and 6·9 (amaranth) to 11·3 t ha?1 (70:30 maize–amaranth population mixture) in 2007. Crude protein (CP) concentration of whole plants ranged from 99·0 (maize) to 227·0 g kg?1 DM (amaranth). Dry matter digestibility values of sun‐dried maize, sun‐dried maize:amaranth 50:50 mixture, sun‐dried amaranth, ensiled maize, ensiled maize:amaranth 50:50 mixture and ensiled amaranth were 0·718, 0·607, 0·573, 0·737, 0·553 and 0·526 respectively. Intercropping increased forage yield and land use efficiency compared to amaranth but had no yield advantage over maize. Although DM digestibility of maize was higher than that of amaranth or the maize:amaranth mixture, digestible CP yield ha?1 was higher with amaranth in the cropping mixture, showing that amaranth could complement maize in systems where CP is the limiting factor to livestock production. 相似文献

This study was conducted to determine the chemical composition and nutritive value of Prangos ferulacea, a plant found in the Mediterranean and Middle‐east regions, where it is used as animal fodder. Samples of mature plants were collected from S.E. Turkey. Metabolizable energy (ME) values were estimated from in vitro gas production measurements and from chemical composition. ME concentrations of the whole plant, leaves and stems were estimated to be 12·2, 11·9 and 12·7 MJ kg?1 dry matter (DM) respectively, which compares favourably with high‐quality forages commonly used in ruminant feeding. The DM degradability of the whole plant, leaves and stems increased up until 48 h of in situ incubation, 866, 915 and 784 g kg?1 DM respectively, but changed little between 48 and 72 h. In vitro DM and organic matter digestibility of the whole plant, leaves and stems were 0·769 and 0·806, 0·773 and 0·790, and 0·740 and 0·840 respectively. The results show that P. ferulacea may be regarded as a high‐energy forage, but further research is needed on its intake characteristics and the levels of animal performance that can be achieved from its inclusion in the diet. 相似文献

Food lectins are known to affect the absorption of nutrients in experimental animals and altered morphology of the intestinal mucosa due to prolonged feeding of lectins is suggested to be the cause. However, toxic symptoms appear in humans immediately after consumption of lectin rich foods and the mechanism of this immediate action is not known. This study reports the immediate effect of Concanavalin A (Con A) and Phaseolus vulgaris lectin (PHA-P) on the absorption of Ca2+ and sucrose in rat intestine and the possible role of lectin-membrane interactions in the process. Calcium absorption was lowered by Con A, and this was observed to be due to Con A interacting with the intestinal mucosal membrane. Similarly, sucrose absorption was also altered, probably due to Con A binding the intestinal mucosal membrane. On the other hand PHA-P did not have any effect on either sucrose or calcium absorption. Results indicate that the effect on intestinal nutrient absorption depends on the type of lectin used (and its concentration) as well as the type of nutrient, besides the duration of exposure of intestinal mucosa to the lectin. 相似文献

Four selections of three amaranth species were used in the study:A. cruentus (US Rodale 82S-1034),A. hypochondriacus (US Rodale 81S-1024).A. caudatus (Cusco, Peru CAC-2002) andA. cruentus (GUA-17). These were fertilized with levels of 0, 30, 60 and 90 kg/ha of a 12-24-12 fertilizer formulation applied to experimental plots 3×4m2 in four replications. The harvested grain was used for protein and fat analysis, and for protein quality evaluations on raw and on heat processed samples.A. cruentus (US) andA. hypochondriacus flowered at 43–44 days at 60 and 43cm, respectively,A. caudatus (Peru) at 51 days and 65cm, andA. cruentus (Gua) at 50 days and 80cm height. Days at harvest varied from 100 to 129 days at heights of 125 to 180cm. Yield of grain fromA. hypochondriacus (US) andA. cruentus (Gua) was higher than forA. cruentus (US) andA. caudatus, but did not differ for each pair. although not influencing yield, the application of fertilizer increased protein content forA. caudatus (Peru) from 12.35 to 14.50%; but not the protein content of the other selections. The fat content was affected differently in all four selections. The application of fertilizer did not affect protein quality either in raw or processed grain. On the other hand, processing increased protein quality, food intake, and animal performance significantly most clearly seen withA. cruentus (US) andA. caudatus (Peru) and to a lesser extent forA. hypochondriacus (US) andA. cruentus (Gua)). Excellent winter hardiness, persistence and nutritive value of both kura clover (Trifolium ambiguum M. Bieb.) and reed canarygrass (Phalaris arundinacea L.) suggest that intercropping these species could substitute for lucerne (Medicago sativa L.). The dry matter (DM) yield and nutritive value of herbage, and silage characteristics of kura clover‐reed canarygrass (KC‐RCG) herbage, were compared to those of lucerne over two growth cycles near Arlington, WI, USA. First and second growths of lucerne and KC‐RCG herbage were sampled four times at 1‐week intervals and ensiled for 100 d. Yield of DM of the KC‐RCG was 0·23–0·57 greater than that of lucerne on sampling dates in the first growth cycle, with no differences in DM yield in the second growth cycle. The pH of lucerne silage was lower than that of KC‐RCG silage in the first growth, and the opposite occurred in second growth, which was attributed to maturity differences and the proportion of kura clover in the mixture. Lactate concentration was lower in KC‐RCG than lucerne silages in both growth cycles. The lucerne and KC‐RCG silages had similar in vitro DM digestibility except for the final sampling date in the first growth cycle when neutral‐detergent fibre concentration of KC‐RCG herbage exceeded 550 g kg?1 DM. Crude protein concentration was greater in lucerne silage than in KC‐RCG silage in both growth cycles. Overall, differences in nutritive value and silage fermentation between the two herbages were minimal across growth cycles. These results suggest that a KC‐RCG sward is a viable alternative to lucerne in northern environments of the USA where lucerne production may be limited by winter injury or edaphic factors. 相似文献

Low cost weaning mixtures were prepared by mixing (i) malted pearl millet (Penicitum typhidium L), roasted amaranth (Amaranthus sp.); roasted green gram (Vigna radiata); jaggery and (ii) malted barley (Dehusked barley); roasted amaranth grain; roasted green gram; jaggery in proportion 60204045 wt/wt and were nutritionally evaluated. Both the blends had a nutrient composition within the range prescribed by the Indian Standard Institute (ISI) for processed weaning foods. The processing of grains resulted in lower levels of phytic acid, polyphenols and saponins and higher in vitro protein digestibility than those of the raw grains used for preparing mixtures. The objective of this study was to calculate, prepare and evaluate the Protein Efficiency Ratio (P.E.R.) and Net Protein Utilization (N.P.U.) of two infant formulas made with amaranth (Amaranthus cruentus). Both formulas were formulated to match a previously developed and tested soy-oats infant formula. No significant differences were found between the three formulas with respect to corrected Protein Efficiency Ratio (P.E.R.) and Net Protein Utilization (N.P.U.) values. Spinach (Spinacia oleracia) and amaranth (Amaranthus tricolor) leaves were stored in polyethylene bags and without packing for 24 and 48 hours in a refrigerator at 5 and 30 °C in polyethylene bags. The fresh leaves were also dried (oven and sun); blanched (5, 10 and 15 min) and cooked in an open pan and a pressure cooker. The processed leaves were analysed for total and extractable calcium and zinc content. The Ca and Zn content of these leaves varied from 1320 to 2120 and 11.70 to 12.60 mg/100 g DM and the percentage HCl-extractability was 77.82 to 81.92 and 85.16 to 86.15, respectively. No significant effects of drying and storage were observed on total Ca and Zn content and HCl-extractability while blanching and cooking resulted in significant improvement of HCl-extractibility of these two minerals. Thus, cooking and blanching are good ways to improve the HCl-extractibility of Ca and Zn. 相似文献

Grain amaranth (Amaranthus hypochondriacus), Yercaud local variety, was soaked overnight and germinated for 192 h taking the soaked grains as the zero time (0 h) sample. The changes in the activities of - and -amylases, starch, sugar, protein and lysine contents during germination are reported. Activity of -amylase was high in the 0 h soaked grains, while -amylase activity was high in 72 h germinated grains. The joint action of the amylases resulted in a decrease of starch content from 0 to 192 h in germinated grains and an increase in total sugars during the initial period of germination.Protein nitrogen was found to decrease from 48 h to 192 h accompanied by an increase in free amino acid and non-protein nitrogen contents. Total lysine content was found to be increased by 31% in 24 h germinated grain amaranth. Protein fractionation of raw, soaked and 24 h germinated grain amaranth showed that the distribution of different types of proteins varied during germination of the grains. An increase of water soluble protein content was noticed in 24 h germinated grains. 相似文献

Growth rate, proportion of leaf and stem and nutritive value of sown tropical perennial grasses have not previously been documented for the dryland, frost‐prone summer‐dominant rainfall region of eastern Australia. An experiment was conducted in northern inland New South Wales with Chloris gayana (Rhodes grass) cv. Katambora and Digitaria eriantha (digit grass) cv. Premier, and compared to Sorghum bicolor ssp. bicolor x S. bicolor ssp. drummondii (forage sorghum). The grasses were harvested every 2 or 6 weeks and fertilized at five rates of nitrogen (N; 0–300 kg N ha?1) over two growing seasons (September–May), 2006–2007 and 2007–2008. Growing season rainfall was below median for both years of the experiment and growth rate was highly variable, reflecting variable rainfall. Sorghum generally had the highest growth rate. Digit grass generally had higher growth rates than Rhodes grass, was more responsive to growing season rainfall, commenced growth earlier and had a longer growing season. Nitrogen application extended the growing season of both perennial grasses. Growth response to N application was minimal when rainfall was low and response following significant rainfall was higher for fertilized than unfertilized grasses. In general, the proportion of green leaf was greater than green stem, although the proportion of stem increased when defoliation interval increased. Nutritive value of the perennial grasses was higher in leaf than stem and declined during the growing season. Differences between the grasses were slight, but indicated that fertilized digit grass defoliated at 2‐week intervals had higher growth rate and nutritive value than Rhodes grass. 相似文献

The changes in chemical composition of hay of kikuyu grass ( Pennisetum clandestinum ) harvested at 50, 70 and 90 d of regrowth, and its effect on intake, digestibility, fermentation and microbial protein synthesis in the rumen (Experiment 1) and oxygen uptake by portal-drained viscera (PDV) (Experiment 2) were evaluated. The experiments were carried out with Polwarth × Texel crossbreed lambs with a mean live weight (s.e.m.) of 35(3·0) kg housed in metabolic cages. Organic matter (OM), neutral-detergent fibre (NDF) and nitrogen (N) intake, as well as rumen ammonia-N concentration, decreased linearly with age of regrowth ( P < 0·05). Acid-detergent fibre (ADF) and indigestible NDF intakes were similar for all treatments. Apparent digestibility of organic matter (OM), NDF and N, as well as true digestibility of OM, microbial protein synthesis in the rumen, N retention, pH of rumen fluid and sugars, amino acids and peptide concentrations in rumen fluid were similar for all treatments. Age of regrowth also did not affect the kinetics of passage of the particulate phase through the digestive tract nor oxygen uptake by PDV. Heat production by PDV represented an average of 0·039 of digestible energy (DE) intake. Increasing the age of regrowth of kikuyu grass from 50 to 90 d did not affect digestibility nor the efficiency of DE use by PDV tissues of lambs but it reduced the nutritive value of the hay due to a lower intake of OM. 11 samples of oats from the 2005 crop of the field experiment carried out in RSD Lipnik were examined. Naked grain oats were represented by a standard Polar cultivar and 5 strains (STH 6102, STH 6856, STH 7146, STH 7256, STH 1692), whereas husked grains were represented by a standard Bohun cultivar and 4 strains (STH 684, STH 688, STH 729, STH 840). The examined naked grain oats differ considerably from husked grain oats in their chemical composition. A statistically significantly higher content of protein (P ≤ 0.05), a higher level of fat (P ≤ 0.01) and a lower value of crude fibre (P ≤ 0.01) were observed in the grains of naked oats compared with the husked grains. The protein of oats is characterised by a favourable amino acid composition of high quality protein which can be confirmed by the EAAI values. The first amino acid limiting the nutritive value of protein was lysine in nearly all oat samples. The characteristic feature of the Polar cultivar was isoleucine deficit. The positive nutritive values for oat grains, in particular those for naked oat grains, make it possible to use them as food for humans and feed for monogastric animals. 相似文献

Sainfoin (Onobrychis viciifolia) is a temperate legume that contains condensed tannins (CT), i.e., polyphenols that are able to bind proteins and thus reduce protein degradation in the rumen. Few studies have investigated the relation between plant phenology, CT characteristics and nutritive value of sainfoin. In this study we investigated differences among three sainfoin varieties (Esparcette, Ambra and Villahoz) that were of different geographical origin, and which were cultivated at the same site over the course of two growth cycles and compared with a tannin‐free legume, lucerne (Aubigny). Plants were harvested on nine dates in the first and four dates in the second growth cycle. Phenological stages were analysed for leaf‐to‐whole‐plant ratio, nitrogen (N), organic matter digestibility (OMd) by the pepsin‐cellulase method, cell‐wall concentration, N solubility (solN) plus CT concentration, biological activity and structures. Leaf‐to‐whole‐plant, cell‐wall concentration, N of sainfoin and lucerne were closely related to the phenological stage. Although sainfoin developed earlier than lucerne, its pepsin‐cellulase digestibility was higher than or close to lucerne. Esparcette had the lowest OMd, N and solN and the highest CT concentration. CT concentration, proportion of prodelphinidins (PD) and mean degree of polymerization (mDP) increased with the phenological stage (or plant maturity), and these parameters were associated with lower biological activity of CT. Sainfoin varieties differed in their relationships between phenological stages, nutritional parameters and CT characteristics. The results demonstrated that sainfoin can be a valuable alternative forage legume to lucerne. 相似文献

Red clover (Trifolium pratense) and lucerne (Medicago sativa) are among the most common legume species used for ruminant feeding systems. Besides the greater nutritive quality and first-year ley yield compared to lucerne, red clover decreases its yield over the years. However, under unfavourable soil conditions the persistency of lucerne can be compromised, not performing as expected. This study compared yield and chemical composition of eight lucerne cultivars and one tetraploid red clover cultivar, with similar growth capacity as lucerne, replicated over two years. In the second year, four lucerne cultivars and the red clover cultivar were analysed for crude protein (CP) fractions, dry matter and neutral detergent fibre (NDF) digestibility. A randomized block design was used with three field blocks per cultivar for the multiple comparisons within each year. There were differences in DM yield, concentrations of CP and NDF and CP fractions among the lucerne cultivars, but the differences were inconsistent between years and between growth cycles within year. The red clover cultivar had lower CP and NDF concentrations than a majority of the lucerne cultivars, and greater in vitro organic matter digestibility compared to all of the lucerne cultivars. Also, the red clover cultivar had greater rumen undegradable-to-degradable CP ratio but confirmed its lower yield persistency compared to the lucerne cultivars. 相似文献

Barley was milled into flours with extraction rates between 100 and 69%. The nutritive value of the flours was studied by chemical analyses and in balance trials with growing rats. The concentration of essential nutrients decreased when the extraction rate was lowered. The protein content in the 69% extraction flour was reduced to 82% of that in whole barley. Lysine (g/16 g N) decreased from 3.30 in whole barley to 2.82 in the most refined flour, however, the biological value was not significantly affected by the degree of milling. The content of minerals was reduced to 40% of that in whole barley, but only rats fed refined flours were able to maintain their femur zinc concentration. Factors present in the outer part of the kernel interfere strongly with utilization of zinc; and it appears that phytate is not solely responsible for the adverse effects on zinc utilization. In rats fed whole barley, femur zinc could be maintained and protein utilization improved by zinc supplementation. It could be concluded that unless barley is milled into refined products, or zinc is supplied from external sources, zinc utilization is adversely affected and protein utilization is limited by a poor zinc status. 相似文献
