The results of traditional (incision) and risk-based (visual) postmortem inspection procedures were compared on groups of approximately 30,000 pigs. The performance characteristics used as a basis for comparison included the non-detection rates of grossly detectable abnormalities, the microbiological contamination rates of carcases and boned product, the association of reactive lymph nodes with carcase condemnation and the achievement of 'finished product standards' for 'wholesomeness'. It was estimated that 6 per cent of all cases of abscessation and 28 per cent of all cases of arthritis were undetected by the traditional method, and the comparable figures for the risk-based procedure were 19 per cent and 39 per cent. However, when the rates of contamination of undetected abnormalities with foodborne hazards and other carcase contamination parameters were taken into account, it was concluded that both inspection systems were likely to result in a very similar level of consumer protection. Any increase in potential exposure to foodborne hazards in the abnormalities undetected by risk-based inspection would be insignificant in comparison with the potential exposure to foodborne hazards resulting from contaminated 'normal' lymph nodes and carcase surfaces. There were no statistically significant differences between the two procedures in the contamination rates of pre-chill carcases or boned retail products with Salmonella and Yersinia species.  相似文献

Foodborne zoonoses have a major health impact in industrialised countries. New European food safety regulations were issued to apply risk analysis to the food chain. The severity of foodborne zoonoses and the exposure of humans to biological hazards transmitted by food must be assessed. For meat, inspection at the slaughterhouse is historically the main means of control to protect consumers. However, the levels of detection of biological hazards during meat inspection have not been established in quantitative terms yet. Pork is the most frequently consumed meat in Europe. The aim of this study was to provide elements for quantifying levels of risk for pork consumers and lack of detection by meat inspection. Information concerning hazard identification and characterisation was obtained by the compilation and statistical analysis of data from 440 literature references. The incidence and severity of human cases due to pork consumption in Europe were assessed in order to calculate risk scores. A ratio of non-control was calculated for each biological hazard identified as currently established in Europe, i.e. the incidence of human cases divided by the prevalence of hazards on pork. Salmonella enterica, Yersinia enterocolitica and Campylobacter spp. were characterised by high incidence rates. Listeria monocytogenes, Clostridium botulinum and Mycobacterium spp. showed the highest severity scores. The three main high risk hazards involved in foodborne infections, Y. enterocolitica, S. enterica and Campylobacter spp. are characterised by high non-control ratios and cannot be detected by macroscopic examination of carcasses. New means of hazard control are needed to complement the classical macroscopic examination.  相似文献

A total of 126 lamb carcases, of which 80 were jaundiced and 46 were grossly normal at routine meat inspection, were examined. Two specific diseases were demonstrated to be associated with jaundiced carcases. Eperythrozoon infection was demonstrated in 65% of jaundiced, and 12% of non-jaundiced carcases from jaundice-affected lots, but not in 5 normal carcases from unaffected killing lots. Copper poisoning was demonstrated in 2 of the jaundiced carcases. Infection with Eperythrozoon ovis was therefore the condition most commonly associated with, and presumably the major cause of jaundice in these lamb carcases. Copper poisoning was a less common cause of jaundice.  相似文献

Postmortem inspection of carcases and offal has been a cornerstone of consumer protection in the red-meat industry for over a century. In 2011, there began strong moves to reform the traditional process of meat inspection applied to cattle, sheep and goats in Australia. A major motivation was the widespread acceptance that organoleptic inspection does little to control the most important hazards in meat products - microbial pathogens derived from gut flora. The watershed reforms in international trade provided another incentive by encouraging the application of a risk-based approach to food safety, which allows for the discontinuation of processes that do not enhance public health outcomes. As well, there was a strong imperative to ensure that resources allocated to quality assurance delivered maximum economic benefit for both consumers and processors. This review discusses how the role of meat inspection is likely to evolve into the future under the influence of these forces. It summarises how the current system was derived through repeated modification over time, mainly to satisfy the requirements of trading partners. Major developments are summarised, focusing especially on how the inclusion of particular organoleptic techniques was initially justified and the relevance of these to modern meat production. Overall, analysis of past and present practices suggests that in the future both public health and efficiency will be better served by strategically integrating the most effective elements of traditional organoleptic inspection with information from the preslaughter period and the use of modern technology for rapid and accurate detection of hazards.  相似文献

文章通过问卷访问调查的方法,分析北京、上海以及广州消费者猪肉消费习惯以及对猪肉品质特征的考量。笔者分析发现,在生鲜猪肉的购买地点上,北上广消费者有着不同的消费习惯。北京消费者主要在超市购买猪肉,而广州消费者主要在农贸市场购买猪肉。在猪肉品质的考量上,北上广消费者均对猪肉卫生安全最为敏感,其次是猪肉的新鲜程度,最后是价格和口感。但各个城市对猪肉品质特征的偏好也有明显的差异。笔者发现,北京消费者更加偏好食品卫生安全,上海的消费者比较重视猪肉的口感,而广州消费者比较重视新鲜程度。此外北上广消费者在肉类食品消费结构上有显著的差异。北京消费者的猪肉和羊肉消费量相对较高,上海消费者牛肉消费量相对较高,而广州消费者鸡肉消费量相对较高。  相似文献

Nham is a traditional Thai fermented pork sausage. The major ingredients of Nham are ground pork meat and shredded pork rind. Nham has been reported to be contaminated with Salmonella spp., Staphylococcus aureus, and Listeria monocytogenes. Therefore, it is a potential cause of foodborne diseases for consumers. A Hazard Analysis and Critical Control Points (HACCP) generic model has been developed for the Nham process. Nham processing plants were observed and a generic flow diagram of Nham processes was constructed. Hazard analysis was then conducted. Other than microbial hazards, the pathogens previously found in Nham, sodium nitrite and metal were identified as chemical and physical hazards in this product, respectively. Four steps in the Nham process have been identified as critical control points. These steps are the weighing of the nitrite compound, stuffing, fermentation, and labeling. The chemical hazard of nitrite must be controlled during the weighing step. The critical limit of nitrite levels in the Nham mixture has been set at 100-200 ppm. This level is high enough to control Clostridium botulinum but does not cause chemical hazards to the consumer. The physical hazard from metal clips could be prevented by visual inspection of every Nham product during stuffing. The microbiological hazard in Nham could be reduced in the fermentation process. The critical limit of the pH of Nham was set at lower than 4.6. Since this product is not cooked during processing, finally, educating the consumer, by providing information on the label such as "safe if cooked before consumption", could be an alternative way to prevent the microbiological hazards of this product.  相似文献

A decontamination trial on the effectiveness of hot water or acidified sodium chlorite (SANOVA) treatment on Salmonella spp., Escherichia coli and Total Viable Count (TVC) was undertaken on pork carcases prior to primary chilling in two large pork abattoirs in Australia using belly-strip excision sampling. A total of 123 samples from Abattoir A and 400 samples from Abattoir B were cultured and analysed. Test pigs were selected from herds with a known high level of on-farm Salmonella infection. At Abattoir A, Salmonella spp. were not isolated from carcases. The prevalence of E. coli on control carcases was 92.9% compared with 9.8% for hot water and 12.5% for SANOVA treated carcases. The mean log(10) E. coli concentration for control carcases was 0.89 cfu/gram, compared with -0.83 cfu/gram from hot water and -0.75 cfu/gram from SANOVA treated carcases. The mean log(10) TVC for control carcases was 4.06 compared with 1.81 cfu/gram for hot water and 2.76 cfu/gram for SANOVA treated carcases. At Abattoir B, the prevalence of Salmonella on control carcases was 16% compared with 2.7% for hot water and 7.0% for SANOVA treated carcases. The prevalence of E. coli on control carcases was 69.3% compared with 22% for hot water and 30% for SANOVA treated carcases. The mean log(10) E. coli concentration for control carcases was 0.45 cfu/gram, compared with -0.65 cfu/gram from hot water and -0.60 cfu/gram from SANOVA treated carcases. The mean log(10) TVC for control carcases was 3.00 cfu/gram compared with 2.10 cfu/gram for hot water and 2.53 cfu/gram for SANOVA treated carcases. The reductions in prevalence and mean log(10) concentrations in the present trial were all found to be statistically significant and indicate that carcases decontamination with either hot water or SANOVA are effective risk management options immediately available to the pork industry.  相似文献

All 37 fetuses of 3 laparotomized pregnant sows at 86, 92, and 93 days of gestation were inoculated intramuscularly through the uterine wall with porcine circovirus type 2 (PCV-2). The sows were allowed to farrow, and blood and tissue samples were collected from their piglets before and after suckling colostrum. Thirteen fetuses from 2 sows at 90 and 103 days of gestation were used as controls. Of the 37 PCV-2 inoculated fetuses, 24 were grossly normal and 13 were mummified, stillborn, or weak-born at farrowing. Infection with PCV-2 was demonstrated in various tissues of grossly normal and abnormal fetuses by virus isolation, polymerase chain reaction, and immunohistochemical methods. Antibodies specific to PCV-2 were also detected from the sera or thoracic fluids of abnormal fetuses and unsuckled normal pigs. No evidence of PCV-2 infection was found in any control fetuses. The present results confirm previous findings that PCV-2 can infect late-term swine fetuses and may cause reproductive abnormalities.  相似文献

OBJECTIVE: A field trial was conducted to evaluate the effectiveness of on-farm antemortem inspection performed by Australian pig producers in terms of proficiency in detecting unhealthy animals (suspects), the impact on food safety and animal welfare outcomes. ANIMALS: A total of 64 trial groups of market pigs (n= 10,703) were dispatched from 20 herds to three abattoirs in three states. PROCEDURE: All producers and abattoir antemortem inspectors were trained in antemortem inspection prior to the trial using a standardised set of antemortem criteria. Study 1 consisted of three comparisons: on-farm versus abattoir antemortem inspections on the same pigs, transport effects in suspect and normal pigs, and meat rejection and carcase disposition in suspect and normal pigs. Study 2 compared Salmonella spp status of suspect and normal pigs. Studies 3 and 4 were conducted to assist the interpretation of the results of on-farm versus abattoir inspection. Antemortem inspection results of three producers and one abattoir antemortem inspector were compared with those of a reference inspector (Gold Standard). RESULTS: Of the pigs examined, 2.12% (95% CI: 1.84%, 2.42%) were classified as suspect at on-farm antemortem inspection compared to only 0.14% at abattoir antemortem inspection. Forty one percent of pigs classified as suspect on-farm had locomotor problems (arthritis, lameness and foot abscess). Compared to normal pigs, suspect pigs had a relative risk of 67.7 (P < 0.0001) of suffering transport injuries. Meat rejection amounted to the equivalent of 9.68% of suspect carcases, compared to the equivalent of 0.35% of normal carcases. The isolation of Salmonella species from caecal content from 20.9% of 67 suspect pigs and 18.8% of 133 control pigs (two matched healthy pigs from the same batch for each suspect pig) were not significantly different. When compared with the reference inspector on-farm, three producers classified abnormalities in 2,495 pigs with high specificity (0.98), acceptable sensitivity (0.82) and kappa (0.57). CONCLUSIONS: With training, producer sensitivity in antemortem inspection may be high and more proficient than abattoir antemortem inspection. Use of producer inspections may have benefits for animal welfare and chain efficiency, but not food safety.  相似文献

This study was to identify the risk factors for Salmonella spp. contamination of Senegalese chicken carcases during slaughtering. One hundred and twenty traditional slaughterhouses were studied from January 2000 to December 2002 in and around Dakar. A questionnaire was answered by the slaughterers, and samples of breast skin were taken to assess the Salmonella status of chicken carcases. Results showed that 43.3% of the batches were contaminated with Salmonella, indicating Salmonella Hadar and Salmonella Brancaster as the two main serovars. Salmonella contamination of the carcases after slaughtering was related to contamination of the live birds. Feed withdrawal before slaughtering and thorough cleaning and disinfection procedures decreased the risk of contamination. One individual worker for each slaughtering stage was also associated with a decreasing risk of contamination. Using scalding water for plucking the chicken carcases increased contamination risk. These results will help slaughters to produce safer products for local consumers.  相似文献

Meat hygiene is an important instrument of preventive public health since the end of the nineteenth century. The methods used during ante-mortem and post-mortem inspection are partly quite traditional. This is in particular true for the identification of parasites in meat. The aim of this review was to present facts on aetiology, prevalence and importance of meat-borne parasitic hazards. The capacity and the limits of the ante-mortem and post-mortem inspection for the identification of parasitic hazards are considered. Further, suggestions for the improvement of the meat hygiene are given. Cysticercosis, Toxoplasmosis and Sarcocystosis are exposed in detail. With regard to Cysticercosis, the integration of serological methods in the inspection procedure could result in a tenfold improvement of diagnostical sensitivity. With regard to Toxoplasmosis, it is obvious that meat containing Toxoplasma-cysts may reach the consumer, as animals infected with Toxoplasma gondii can neither be recognised in the ante-mortem inspection nor in the meat inspection. Systematical serological investigations on farm level would allow an appropriate judgement during meat inspection and minimize the consumer exposure to this parasite. Further, reliable methods for the detection of Toxoplasma-cysts have to be developed. With regard to Sarcocystosis, the compulsory inspection of the muscle surfaces to recognise a "massive infection with Sarcocystis" is very doubtful in its interpretation. There is a need for suitable microscopic, serological and molecular biological methods for the detection of Sarcocystis-species and reliable informations on the seroprevalence of the parasite in slaughtering animals.  相似文献

Omphalophlebitis, generally referred to as navel ill, is a common post-mortem meat inspection finding in very young calves slaughtered in New Zealand, and a gross pathological, histopathological and bacteriological evaluation of 147 carcasses condemned for this condition at routine post-mortem meat inspection was undertaken. Localised lesions restricted to the umbilicus alone were present in 29.9% of cases. The majority of cases included gross pathological change in the umbilical vessels and other tissue sites beyond the umbilicus. Most hepatic nodes were grossly normal but histological examination revealed that 61.5% of nodes from other than localised cases of navel ill were hyperplastic. However, there was little difference in the prevalence of hyperplastic hepatic nodes from cases of localised navel ill (21.4%) compared with normal calves (15.9%). Despite the wide range of bacteria isolated from umbilical lesions, Salmonella typhimurium recovered from the navel, liver and hepatic nodes of a single extended case of navel ill was the only isolation of known public health importance. Given the separation of cases of navel ill into different gross pathological, histopathological and microbiological categories, current meat inspection judgments whereby all calves with navel ill are condemned should be revised. In particular, routine condemnation of the carcass and viscera in all cases of localised navel ill (lesions restricted to the umbilicus alone) should be reassessed.  相似文献

Regulatory authorities are facing increasing challenges with respect to the newly-recognised public health risks associated with meat products. Meat inspection resources should be allocated according to their maximum ability to reduce food-borne hazards, rather than according to the classical rules of meat inspection. Scientific evaluation of routine post-mortem inspection procedures for each class of livestock, introduction of the Hazard Analysis Critical Control Point approach to process control, on-line testing for microbiological hazards and residues, and effective management of production, processing and inspection data are central to this process. The meat inspection system that has evolved in New Zealand reflects a response to non-scientific forces such as market requirements and industrial practices rather than scientific discipline. In the future, the daily routine of meat inspectors will be extended well beyond their current slaughterfloor responsibilities, and veterinarians will require specialist skills. Science should be the basis for international food regulation and policy concepts such as equivalence or mutual acceptance are achievable on this basis.  相似文献

This study evaluates the occurrence of Salmonella in pork carcasses and in some risk tissues (ileum, ileocolic and mandibular lymph nodes and tonsils), that can be involved in Salmonella contamination during slaughter. Salmonella was identified in 27 (26.7%) pigs and in 13 (12.9%) carcasses. From these positive carcasses, 69.2% presented the same serotype as that identified in the corresponding pig, which emphasize the pigs importance as a source of Salmonella during the slaughter, suggesting that measures should be taken at the level of pig production in order to reduce the slaughtering of Salmonella-positive animals. The highest value of Salmonella occurrence was reached in the ileocolic lymph nodes (18.8%) and in the ileum (13.9%), representing Salmonella potential faecal source during pork processing at the abattoir. In these samples, a high level of Salmonella was observed in the ileocolic lymph nodes in comparison with the ileum. The mandibular lymph nodes (12.9%) also presented a higher occurrence in comparison with the tonsils (9.9%). These results indicate that the lymph nodes analysis could be more sensitive in the detection of Salmonella than the closer drainage tissue. Otherwise, the presence of Salmonella in the lymph nodes indicates lymphatic spread of the organism, which reflects an increased risk of pork contamination. These results also indicate that, in order to achieve a better control of Salmonella contamination during the slaughter process, it is important to consider the improvement of the evisceration practices and the tonsils as well the extraction of mandibular lymph nodes after slaughter.  相似文献

Cysticercus bovis was detected at meat inspection in 2.16 per cent of 102,087 carcases of cattle from Matabeleland Province, slaughtered in Bulawayo during a period of 11 months. Lightly infested (detained) carcases accounted for 95 per cent of those with cysticercosis. The head was the only site affected in 58.4 per cent of the detained carcases, the shoulder in 20.1 per cent and the heart in 7.9 per cent. In more heavily infested (condemned) carcases 81.1 per cent had at least three sites affected. The incidence of cysts was highest in older male animals but in younger animals it was highest in cows. In the detained carcases an average of 1.5 cysts were found, of which 76 per cent were live and 24 per cent dead. Condemned carcases had more than 58 cysts on average, of which 98 per cent were live and 2 per cent dead. Live cysts were more common in older cattle and dead cysts were more common in younger animals. The incidence of C bovis in carcases of cattle originating from communal areas was 3.2 per cent compared with 1.6 per cent in those originating from commercial farms.  相似文献

Revised procedures for the post-mortem inspection of cattle and pigs at Australian abattoirs were developed as minimum national requirements. Comparative trials of current and revised procedures were conducted at 3 and 4 Australian abattoirs for pigs and cattle respectively. Residual pathological changes after inspection and removal of lesions from heads, carcases or viscera were recorded by an evaluation team with the data used to determine relative effectiveness. For cattle, there was no significant difference between current and revised procedures. Although it had been proposed to eliminate routine incision of cervical lymph nodes for pigs, it was found necessary to retain this procedure. The data also revealed a significant variation in detection of pathology between abattoirs for both species. Parasitic conditions accounted for the greatest proportion of undetected lesions in both species for both current and revised procedures. These comprised mainly fascioliasis in cattle and ascariasis in pigs. The former was associated with the study being conducted in eastern Australia. Chronic interstitial nephritis was also a common undetected lesion, reinforcing the need for intensified inspection of kidneys. However, such residual pathology was considered to be of only limited significance to human health. The revised procedures and findings are discussed in the context of animal and human health and of the importance of the meat industry to Australian exports. Some attention has been given to specific conditions likely to be affected by the proposals including tuberculosis, bovine cysticercosis, fascioliasis, porcine arthritis and salmonellosis. Sixteen 6-month-old pigs were exposed to transmissible gastroenteritis (TGE) virus by placing them in close contact with piglets infected at 1 week of age. Fourteen of the older pigs were slaughtered between 1 and 5 d after exposure to infection and their carcases dressed in simulated abattoir conditions. Samples of muscle, bone marrow and carcase lymph nodes were stored at -25 degrees C for at least 30 d and then homogenised and fed to groups of 1-week-old and 3-week-old pigs. Four of 12 one-week-old pigs died and TGE virus was isolated from intestinal contents of one of these. All pigs of both age groups developed neutralising antibody to TGE virus over the ensuing 4 w. The results indicate that carcases from pigs infected with TGE virus can represent a source of infection for susceptible pigs given access to them.  相似文献
