Solid state fermentation (SSF) represents a technological alternative for a great variety of cereals and legumes, orcombination of them, to improve their nutritional quality and to obtain edible products with palatable sensorial characteristics. The objective of this work was to find the best conditions of fermentation temperature and time to obtain tempeh from hardened chickpeas (Cicer arietinum L.) applying SSF. Response surface methodology(RSM) was applied over three response variables (phytic acid, in vitro protein digestibility and available lysine) to find best conditions of fermentation to carry out the process. A central composite experimental design with two factors [X1 = temperature (31–36 °C) and X2 = time (48–72 h)] in five levels (2 factorials,2 axial, I central) was used. Spores from Rhizopus stolonifer were suspended in distilled water (1 ×106 spores/mL) and used as starter. According to regression models, minimum and maximum levels of the response variables were 1.24–2.66 mg phytic acid/g ofsample DM, 77.6–83.5% in vitro protein digestibility and2.18–4.63 g available lysine/16 g N. The superposition ofcontour plots of each one of the response variables allowedresearchers to find, graphically, the best conditions for the SSF process: 35.8 °C for 42.7 h.  相似文献

The impact of various starter phosphorus (P) fertilizers on the growth, nutrient uptake and dry‐matter (DM) yield of forage maize (Zea mais) continuously cropped on the same area and receiving annual, pre‐sowing, broadcast dressings of liquid and semi‐solid dairy manures was investigated in two replicated plot experiments and in whole‐field comparisons in the UK. In Experiment 1 on a shallow calcareous soil (27 mg l?1 Olsen‐extractable P) in 1996, placement of starter P fertilizer (17 or 32 kg ha?1) did not benefit crop growth or significantly (P > 0·05) increase DM yield at harvest. However, in Experiment 2 on a deeper non‐calcareous soil (41 mg l?1 Olsen‐extractable P) in 1997, placement of starter P fertilizer (19 or 41 kg P ha?1), either applied alone or in combination with starter N fertilizer (10 or 25 kg N ha?1), significantly increased early crop growth (P < 0·01) and DM yield at harvest by 1·3 t ha?1 (P < 0·05) compared with a control without starter N or P fertilizer. Placement of starter N fertilizer alone did not benefit early crop growth, but gave similar yields as P, or N and P, fertilizer treatments at harvest. Large treatment differences in N and P uptake by mid‐August had disappeared by harvest. In field comparisons over the 4‐year period 1994–97, the addition of starter P fertilizer increased field cumulative surplus P by over 70%, but without significantly (P > 0·05) increasing DM yield, or nutrient (N and P) uptake, compared with fields that did not receive starter P fertilizer. The results emphasized the extremely low efficiency with which starter P fertilizers are utilized by forage maize and the need to budget manure and fertilizer P inputs more precisely in order to avoid excessive soil P accumulation and the consequent increased risk of P transfer to water causing eutrophication.  相似文献

Three promising new improved lines of lima beans (Tpl 1B, Tpl 7A and Tpl 175A) were evaluated for physicochemical properties and cooking quality. The beans varied in seed dimensions and weights with Tpl 1B and Tpl 7A having smaller seed volume than Tpl 175A. Seed coat percentages, leached solids and swelling capacities were within a range of 10.2–19.6% (w/w), 0.44–0.92 g/100 g and 94.0–121.0 g/100 g dry bean, respectively. Cooking times varied between 62 and 81 min without soaking and were reduced by about 34%following a presoaking treatment in water for 12 h at room temperature (28 ± 1 °C). Small seeds absorbed higher amounts of water during soaking and required more cooking time than larger seeds. No significant (p>0.05) difference in cooked texture was found between unsoaked beans cooked for 50 min and soaked beans cooked for 30 min,suggesting that cooking times and cooked texture for all lines were improved through soaking.  相似文献

Three New Zealand grown tomato (Lycopersicon esculentum L.) cultivars, Aranka, Encore, and Flavourine, were analysed for colour (CIELAB L a b values), ascorbic acid, total phenolics, lycopene, and total antioxidant activity (ABTS assay). Colour analyses of the air-dried tomatoes showed that the colour degradation as measured by the L a b values was minimal, and the colour was not significantly different (p < 0.05) between each of the dried cultivars. In general, there was no significant difference (p < 0.01) between the fresh cultivars in terms of antioxidant components or total antioxidant activity. The average values obtained for antioxidant components in the three fresh cultivars were: ascorbic acid, 276 mg/100 g DM, total phenolics, 613 mg gallic acid equivalents (GAE)/100 g dry matter (DM) and lycopene 38 mg/100 g DM. Total antioxidant activity of the fresh cultivars was 2917 μmole Trolox equivalent antioxidant capacity (TEAC)/100 g DM. Following forced air-drying treatment at 42 C for 48 hr, all cultivars showed significant decreases in ascorbic acid, total phenolics and total antioxidant activity, and increases in extractable lycopene contents. This study was undertaken to identify cultivars that would provide the best colour and nutrient contents after commercial air drying.  相似文献

Proximate composition and physicochemical analyses were carried out onthe seed, pulp and extracted oil of sour sop (Annona muricata). Theresults showed that the seed contained 8.5% moisture, 2.4% crudeprotein, 13.6% ash, 8.0% crude fiber, 20.5% fat and 47.0%carbohydrate. The seed also contained 0.2% water soluble ash, 0.79%titratable acidity and 17.0 mg calcium/100 g. The pulp was found tocontain 81% moisture, 3.43% titratable acidity and 24.5%non-reducing sugar. Selected physicochemical characteristics includedrefractive indices of 1.335 for the seed and 1.356 for the pulp, specificgravities of 1.250 for the seed and 1.023 for the pulp, pH values of 8.34for the seed and 4.56 for the pulp, and soluble solids contents of1.5 °Brix for the seed and 15 °Brix for the pulp. Theextracted oil (20.5% yield) had a 60.43% unsaponifiable value,23.54 KOH/g acid value, 100.98 K0H/g saponification value, 1.1 K0H/gperoxide value, 1.464 refractive index, 5.77 pH, 69.5 °Brix soslublesolids and 0.2900 specific gravity.  相似文献

An indigenous food mixture containing rice flour, milk coprecipitate, sprouted green gram paste and tomato pulp (2: 1: 1: 1 w/w) was developed and called a RCGT food mixture. It was autoclaved (1.5 kg/cm2, 15min, 121 °C), cooled and fermented with 2% liquid culture (containing 106 cells/ml broth). Two types of fermentations were carried out i.e. one step single culture fermentation [L. casei or L. plantarum (37 °C, 24 hr.)] and sequential culture fermentation [S. boulardii (25 °C, 24 hr.) +L. casei (37 °C, 24 hr.)]; [S. boulardii (25 °C, 24 hr.) + L. plantarum (37 °C, 24 hr.)]. All fermentations drastically reduced the contents of phytic acid, polyphenols and trypsin inhibitor activity while significantly improving the in vitro digestibilities of starch and protein. Sequential culture fermentations brought about further changes compared to one step single culture fermentation.  相似文献

We aimed to evaluate the effects of chitosan and microbial inoculant addition to sugarcane silage fermentation, gas and effluent losses, chemical composition, in situ dry matter (DM), neutral detergent fibre (NDF) degradation and aerobic stability. A completely randomized design with four treatments (n = 40) was performed. It was arranged in a 2 × 2 factorial scheme with chitosan [0 and 6 g/kg of sugarcane DM—1.66 g/kg of natural matter (NM)] and microbial inoculant (0 and 8 mg/kg on NM). Each g of inoculant contained 3.9 × 1010 UFC/g of Pediococcus acidilactici and 3.75 × 1010 UFC/g of Propionibacterium acidicipropionici. The addition of microbial inoculant increased lactic acid concentration in silos treated with chitosan. Furthermore, chitosan increased pH and tended to increase acetic acid of silage. In contrast, the inoculant decreased pH and acetic acid, besides increasing ethanol concentration. As chitosan addition increased DM recovery, inoculant addition decreased it. Chitosan decreased NDF and acid detergent fibre (ADF) level and increased DM degradation, while inoculant decreased DM content, DM and NDF degradation. In addition, chitosan improved the aerobic stability only in non‐inoculated silos. Thus, chitosan has a positive effect on silage fermentation, reducing fermentative losses, and improving silage chemical composition and degradation. Conversely, the addition of microbial inoculant negatively affected silage DM recovery, chemical composition, and its association with chitosan decreased the aerobic stability when compared to the exclusive use of chitosan.  相似文献

Balanites aegyptiaca Del. kernels were chemically,physically and morphologically characterized. Crude oil (49.0%) andcrude protein (32.4%) were the two major constituents of the kernels.Phytic acid content was relatively high compared to other legumes. Incontrast, antitryptic activities of the kernel flours were very low.Sapogenin contents of the full fat, defatted and testa flours were 1.5, 2.7and 3.0%, respectively. The hardness of the kernel was found to be about10.4 × 105 N/m2, which was somewhat high. The morphologicalstructure of the kernel using a scanning electron microscope revealedthat the protein matrix was embedded in a lake of oil droplets. Oilrecovery, as a function of pressing time, pressure, temperature and particlesize was investigated. With increasing temperature up to 70 °C at 400 bar, for 120 min, an oil recovery of 79.4% wasobtained. Using an expeller at 115 °C, about 85% of thekernel oil was recovered. The reduction of particle size had a negativeeffect on oil recovery under the same conditions. The fatty acidcomposition was not affected by the pressing temperature up to 115 °C. The total amount of the unsaturated fatty acids was found tobe up to 74.8% (50 °C) and 75.1% (115 °C)of the total fatty acids content.  相似文献

Seven accessions of the underutilized legume, Cassia hirsuta L., seeds collected from seven different agroclimatic regions of Tamil Nadu, India, were analyzed for proximate composition, total proteins, protein fractions, mineral profiles and selected antinutritional factors. Crude protein ranged from 15.52 to 20.74%, crude lipid 3.77–7.04%, crude fiber4.68–6.92%, ash 3.98–6.42% and carbohydrates 62.45–70.16%. Energyvalues of the seeds were 1549–1634 kJ/100 g (DM), which are comparable to those of other legumes. Data on seed protein fractions revealed thatglobulins constituted the bulk of the seed protein as in most legumes. Mineralcontents of the seeds showed greater variation. Potassium was the mostabundant mineral (1029–1786 mg/100 g), whereas manganese was low (2.1–2.2 mg/100 g). Antinutritional factors such as total free phenolics,tannins, L-DOPA and lectins were analyzed. The results of the studydemonstrated that the accessions of C. hirsuta seeds collectedfrom Tamil Nadu, India, could be good sources of some important nutrientsfor humans.  相似文献

A good quality wine was produced from African bush mango (Irvingia var.gabonensis). Analysis of the African bush mango juice showed that it contained 3.6% total sugar, 1.09% protein, 4.2° Brix soluble solids (SS) 0.5% ash, 50.24% total solids (TS), 66.7 mg/100 ml ascorbic acid and pH 5.12. The juice ameliorated to 23° Brix was inoculated with 3% (w/v) Baker's yeast (Saccharomyces cerevisiae) and held at 30±2°C for 28 days. SS and pH decreased while titratable acidity (TA) increased with increasing period of fermentation. Fermentation was 110% efficient. The wine produced had 8.12% (v/v) alcohol, 0.78% protein, 6.5% Brix SS, 0.64 g/100 ml TA, and a pH 3.10. Sensory evaluation results showed that there was no significant difference (p=0.05) in colour, mouthfeel, sweetness, flavour and general acceptability, between African Bush mango wine and a reference wine. Bromelia pinguin L. is a plant native to Sinaloa, Mexico, where its fruit is used as food or as a phytotherapeutic agent. The fruits of B. pinguin were characterized and they could be considered as a functional food. These fruits show an average weight of 13.7 g and a yellow color of high luminosity (b* = 43.2, L* = 74.5). The values for acidity (4.6%, as citric acid) and pH (3.7) of B. pinguin fruit are similar to those of citrics. The edible portion is characterized by a high content of vitamin C (126 mg/100 g), ash (10.6 g/100 g d.w.), crude fiber (3.4 g/100 g d.w.), calcium (1290 mg/100 g d.w.), magnesium (500 mg/100 g d.w.), manganese (2.95 mg/100 g d.w.) and it is a good source of zinc (2.8 mg/100 g d.w.). Polar fractions extracted from the pulp fruit showed activity against several genera of human pathogenic-bacteria (Staphylococcus, Streptococcus, Enterococcus, Salmonella, Shigella, Escherichia and Pseudomonas).  相似文献

Overseeded winter annuals in bermudagrass [Cynodon dactylon (L.) Pers.] improve annual dry‐matter (DM) yield and capture nutrients in fields receiving manure application. This study determined the DM and nutrient uptake responses of annual ryegrass (Lolium multiflorum L.), cereal rye (Secale cereale), berseem clover (Trifolium alexandrinum L.) and bermudagrass‐winter fallow to 0, 50, 100 and 150 kg N ha?1 applied approximately 2 months before a single spring harvest, and in addition to swine‐effluent N (258 and 533 kg ha?1 in summer 2000 and 2001, respectively). Under drought conditions in 2000, DM yield at the spring harvest was highest in ryegrass, and summer DM yield of bermudagrass was greater at 100 and 150 kg N ha?1 than 50 kg N ha?1(P < 0·05). The concentration and uptake of N at the spring harvest increased linearly across N rates in both years (P < 0.05). Cover crops differed in N uptake in 2000 (P < 0.01) and values ranged from approximately 141 kg N ha?1 in berseem clover to 86 kg N ha?1 in rye. Per unit of N applied, uptake of N increased by approximately 0·409 kg ha?1 in 2000 and 0·267 kg ha?1 in 2001; uptake of P increased by 0·029 and 0·014 kg ha?1 respectively. In 2000, uptake of P was responsive to N rate and this relationship was significant (P < 0·01) in winter fallow (slope = 0·032) and ryegrass (slope = 0·057). Increased uptake of N and P at the single spring harvest was due mainly to higher concentrations in herbage and not higher DM yield.  相似文献

Studies on the enhancement of the traditional production of Ugba (a protein-rich fermented food) from African oil bean seeds were undertaken by fermenting the bean seeds at different temperatures, relative humidities (RH) and microenvironments. Fermentation was monitored by pH, texture, amino-nitrogen content and the viable cell count of the substrate. The 40 °C, 98% RH or the 130 m high density polyethylene (HDPE) treatment increased the fermentation microflora from ca. 106 CFU/g to ca. 108 CFU/g with high initial changes in pH (5.8–ca. 7.9) and texture (2.0 kg/cm2 to between 1.4 kg/cm2 and 0.9 kg/cm2) in 24 hours. Products with amino-nitrogen contents of between 12.00 mg N/100 g dry matter and 14.00 mg N/100 g dry matter were obtained in 3 days. The cell count of the 30 °C, 80% RH or 70 m treatment increased from 106 CFU/g to ca. 107 CFU/g and the pH increased from 5.8 to about 6.7 with a coincident decrease in the texture value from 2.0 kg/cm2 to about 1.7 kg/cm2 in 24 hours. Products with amino-nitrogen contents between 15.00 mg N/100 g dry matter and 19.2 mg N/100 g dry matter were obtained after 3 days. Changes in the fermentation indicators were not significant at p0.05 (pH and texture) and at p0.01 (amino-nitrogen) after 3 days for the 25 °C, 59.9% RH or 50 m low density polyethylene (LDPE) treatment. Products of fermentation at the combined optimal conditions (80% RH, 35 °C and 70 m HDPE) compared very well with the traditionally fermented products in terms of pH, texture and amino-nitrogen content.  相似文献

Bathua (Chenopodium album) and fenugreek (Trigonella foenum graecum) stored in polyethylene bags and without packaging for 24 or 48 hours in a refrigerator at 5 or 30 °C in polyethylene bags. The fresh leaves were also dried (oven and sun); blanched (5, 10 or 15 min) and cooked in an open pan and a pressure cooker. The processed leaves were analyzed for total and extractable calcium and zinc content. The Ca and Zn content of these leaves varied from 970 to 2230 and 10.50 to 12.30 mg/100 g DM and the percentage HCl-extractability was 80.34 to 83.04 and 82.43 to 83.90, respectively. Non significant effects of drying and storage were observed on total Ca and Zn content and HCl-extractability while blanching and cooking resulted in significant improvement of HCl-extractability of these two minerals. Thus, cooking and blanching are good ways to improve the HCl-extractability of Ca and Zn.  相似文献

The storage stability of melon milk at room (30 ± 2 °C)and refrigeration (10 ± 2 °C) temperatures was determined by analyzing changes in the chemical, microbial andsensory properties of the milk stored for 7 days. Theresults showed that at both storage temperatures, solublesolids and pH of the milk decreased while titratableacidity increased with storage. The standard plate countsincreased appreciably while coliforms were absent in themilk with storage at both storage temperatures. The overallacceptability score of the melon milk dropped duringstorage, the drop being faster at 30 ± 2 °C than at 10 ± 2 °C. The milk samples stored at 30 ± 2 °C and 10 ± 2 °C were acceptable only within one and three days, respectively; thereafter, theywere unacceptable.  相似文献

Spinach (Spinacia oleracia) and amaranth (Amaranthus tricolor) leaves were stored in polyethylene bags and without packing for 24 and 48 hours in a refrigerator at 5 and 30 °C in polyethylene bags. The fresh leaves were also dried (oven and sun); blanched (5, 10 and 15 min) and cooked in an open pan and a pressure cooker. The processed leaves were analysed for total and extractable calcium and zinc content. The Ca and Zn content of these leaves varied from 1320 to 2120 and 11.70 to 12.60 mg/100 g DM and the percentage HCl-extractability was 77.82 to 81.92 and 85.16 to 86.15, respectively. No significant effects of drying and storage were observed on total Ca and Zn content and HCl-extractability while blanching and cooking resulted in significant improvement of HCl-extractibility of these two minerals. Thus, cooking and blanching are good ways to improve the HCl-extractibility of Ca and Zn.  相似文献

A simple multiplicative model using temperature, foliage nitrogen (N) concentration and water status was developed to predict the maximum photosynthetic rate (Pmax) of field‐grown cocksfoot (Dactylis glomerata L.) leaves when none, one, two or all the factors were limiting. The highest Pmax was 27·4 μmol CO2 m–2 s?1 in non‐limited conditions, which was defined as the standardized Pmax value dimensionless (Pmaxs=1). Pmaxs increased 0·058 units per °C from 10°C to the optimum range (19–23°C) (Pmaxs=1) and then declined 0·077 units of Pmaxs per °C from 23 to 31°C. Pmaxs=1 was also measured from 59 to 52 g N kg?1 dry matter (DM) foliage N. Pmaxs then decreased at the rate of 0·115 units per 10 g N kg?1 DM from 52 to 26 g N kg?1 DM, and 0·409 units of Pmaxs per 10 g N kg?1 DM from 26 to 15 g N kg?1 DM. For predawn leaf water potential (ψlp), Pmaxs=1 was measured from ?0·1 to ?1·2 bar but declined linearly at a rate of 0·078 units per bar of ψlp from ?1·2 to ?14·0 bar because of a linear decrease in stomatal conductance. An interaction between low N content (≤20 g N kg?1 DM) and high temperature (>23°C) was also detected. Together, this multiplicative model accounted for 0·82 of the variation in Pmaxs.  相似文献

The effects of sowing date and nitrogen (N) fertilizer on the inter‐specific competition between dallisgrass (Paspalum dilatatum Poir.) and tall fescue (Festuca arundinacea Schreb.) in the humid Pampas of Argentina were investigated in two pot experiments where a constant soil moisture content was maintained. Tall fescue and dallisgrass seeds were sown either in the spring (October 2000) or in the autumn (March 2001) in mixed and mono‐specific stands with 0 or 100 kg N ha?1. In the spring, competition from tall fescue depressed dry‐matter (DM) yield of dallisgrass from 1·53 to 0·36 g DM per plant and tiller number from 9·4 to 3·7 tillers per plant in mixed and in mono‐specific stands, respectively, while tall fescue had 3–4 times higher DM yields in mixed stands. Leaf extension rate (LER) of tall fescue was higher (1·3 mm d?1) than that of dallisgrass (0·53 mm d?1). In the autumn, inter‐specific competition did not affect DM yield of dallisgrass and N fertilizer increased DM yield from 0·53 to 2·07 g DM per plant, tiller number from 6·8 to 14·2 tillers per plant and LER at the beginning of autumn from 1·2 to 2·12 mm d?1 in both species. As temperature decreased, LER was reduced in both species to 0·31 mm d?1 by late autumn. The number of leaves per tiller was not affected by treatment. Nitrogen fertilizer increased N concentration of above‐ground tissues of both species (18 g kg?1 DM in autumn and 20 g kg?1 DM in spring). It was concluded that a productive mixed pasture of dallisgrass and tall fescue can be obtained by sowing early in the autumn. The application of N fertilizer in this season is essential to ensure a high herbage yield and quality.  相似文献

Rice starch suspensions of 10% dry matter (DM) were treated by heat (0.1 MPa at 20–85 °C) or pressure/heat combinations (100–600 MPa at 20, 40 and 50 °C) for 15 min to investigate their gelatinization and rheological characteristics. The maximum swelling index of about 12 g water per gram of DM was obtained by thermal treatment at 85 °C, meanwhile, that of 7.0 g was observed by 600-MPa pressurization at 50 °C. The higher temperatures or pressures resulted in the higher degrees of gelatinization. Furthermore, treatments of 0.1 MPa at 85 °C, 500 MPa at 50 °C and 600 MPa at various temperatures caused complete gelatinization of rice starch. The consistency index (K) and storage modulus (G′) dramatically increased from 70 °C or 400 MPa. The G′ values were higher in pressure-treated samples than those in thermal-treated samples. Therefore, an application of pressure/heat combinations as a processing method to improve the quality of rice starch products would be possible.  相似文献

A total of 1713 samples of silage from commercial farm silos were analysed to investigate the effect of dry matter (DM) content and chemical additives on fermentation as measured by ammonia-N concentration and pH, Increasing DM content without additive use had a major beneficial influence upon fermentation. When silage DM contents were greater than 260 g kg-1 83% of silages were well fermented, with average ammonia-N concentrations of 94 g (kg total N)-1 and pH 4.36. With diminishing DM concentration the proportion of well fermented silages declined. In the DM range 220-260 g kg-1 67% of silages were well fermented with ammonia-N concentrations of 125 g (kg total N)-1 and pH 4.30, in the DM range 180-220 g kg-1 48% were well fermented with ammonia-N at 151 g (kg total N)-1 and pH 4.38 and with DM below 180 g kg-1 no silages were well fermented with ammonia-N concentration of 252 g (kg total N)-1 and pH 4.84. The benefit of chemical additives, albeit at poorly defined and often inadequate rates, was small in comparison to that of increased DM concentration. Below DM concentrations of 180 and 220 g kg-1, the only benefit was that formic acid decreased ammonia-N to 151 g (kg total N)-1 and pH to 4.32 compared with 163 g (kg total N)-1 and pH 4.43 for untreated silages. Within the DM range 220-260 g kg-1 formic acid decreased ammonia-N level to 104 g (kg total N)-1 and pH to 4.07, and there was a slight benefit from using sulphuric acid/formalin which decreased ammonia-N to 117 g (kg total N)-1 and pH to 4.23 compared with 125 g (kg total N)-1 and pH 4.27 for untreated silages. Above 260 g DM kg-1 both formic acid and sulphuric acid/formalin provided a small but consistent decrease in ammonia-N and pH compared with untreated silages. Chemical additive use conferred no other benefit when compared with untreated silage. Calcium formate/sodium nitrite mixtures and acid mixture use provided no benefit in fermentation compared with untreated herbage.  相似文献
