The processing of potatoes into chips is expanding in China. There is a need for new processing cultivars that are well-suited for the local ecological environment. Eleven potato varieties were bred from hybridization and backcrossing between the local cultivated potato varieties (Solanum tuberosum L.) and wild potato species. Lines from different wild species’ germplasms showed that the ability to accumulate reducing sugars was significantly different during low temperature storage (4 °C). A correlation analysis was conducted to determine the correlation coefficient among reducing sugars, acid invertase, free amino acids, chip colors and the content of acrylamide after storage at room and low temperatures. The lines 0706-116, 0737-6 and 0726-205 had low levels of reducing sugars, acrylamide content and acceptable chip colors for potato chip processing. The results indicated that the transfer of wild species’ processing traits into local cultivars by hybridization and continuous backcrossing is an effective potato breeding method and that the wild germplasm resources S. phureja and S. chacoense are suitable for improving the processing traits of local varieties.  相似文献

Breeding progress for potato chip quality in North American cultivars   总被引:1,自引:0,他引:1  
Forty-four potato cultivars, released in the period between 1876 and the present were grown concurrently in field trials, stored simultaneously in three different environments, then evaluated for chip quality. They represented cultivars historically used and/or bred for potato chip production. Quality factors measured were tuber solids, chip color, reducing sugar levels, sucrose levels, and percent of defect-free chips. Tuber solids tended to increase in the late period cultivars, but trends were erratic. The release of Lenape marked the beginning of an increase in tuber solids that has continued to the present. There was a significant trend for lower reducing sugars and better chip color that corresponded to increasingly later cultivar release dates. Since about 1960, progress toward lower reducing sugars and better chip color has been constant, regardless of whether tubers were stored at 4.4 C, stored at 4.4 C and reconditioned, or stored at 10 C. Late period cultivars tended to have a greater percentage of defect-free chips in comparison to those released earlier, with most of the improvement coming during the last few years. This study provided evidence that potato breeders have made significant progress in developing cultivars with good chip quality. Whole meal flours from several Triticum subspecies and cropped in two different years were scored for carotenoid content as well as for CIE L*, a* and b* coordinates by a colorimeter and a spectrophotometer, and for colour (R, G, B, I), heterogeneity and texture parameters by image analysis to assess the power of the different approaches to discriminate the groups. The results demonstrate that the colour coordinates L* a* b*, and R, G, B, I are not determined by carotenoid content only. However multivariate approaches considering the absorbance spectra or the carotenoid content along with colour coordinates allowed a good separation of species and, in general, of subspecies. On the contrary, the GLMC image data did not lead to a clear discrimination among species and subspecies.  相似文献

The suitability of potatoes for processing into potato chips is dependent on chip color, and internal and external defects. Concentrations of reducing sugars, and more specifically glucose, have been used as a quantitative indicator of acceptability of potato for chipping. The research reported here investigated the correlation between sugar concentrations and chip color, and the variability of sugar concentrations between samples and sample locations. Three potato storage research bins, each with an independent air handling and control system, were located inside of commercial potato storage bins. Snowden potatoes were harvested in the fall of 1992 and stored at different temperatures in the bins through late March, 1993. The potatoes were sampled bi-weekly during the storage period, and the samples were analyzed for sugar concentrations (sucrose and glucose) using a YSI model 2700 sugar analyzer.1 The results indicated that a Snowden potato sample with a glucose concentration less than 0.0075%2 (fresh weight basis) will have a 90% probability of having an acceptable Snack Food Association color score of 1.5 or lower. Lower numbers indicate whiter chips which are generally preferred by chip producers. Similarly, a sample with a glucose concentration of 0.01% will have a 90% probability of having a color of 2 or lower. Based on tubers sampled from four heights within the storage bins, samples from the top of a potato bin will provide a representative sample as long as recommended storage procedures are followed, and potato pulp temperatures are similar throughout the storage.  相似文献

Three New Zealand grown tomato (Lycopersicon esculentum L.) cultivars, Aranka, Encore, and Flavourine, were analysed for colour (CIELAB L a b values), ascorbic acid, total phenolics, lycopene, and total antioxidant activity (ABTS assay). Colour analyses of the air-dried tomatoes showed that the colour degradation as measured by the L a b values was minimal, and the colour was not significantly different (p < 0.05) between each of the dried cultivars. In general, there was no significant difference (p < 0.01) between the fresh cultivars in terms of antioxidant components or total antioxidant activity. The average values obtained for antioxidant components in the three fresh cultivars were: ascorbic acid, 276 mg/100 g DM, total phenolics, 613 mg gallic acid equivalents (GAE)/100 g dry matter (DM) and lycopene 38 mg/100 g DM. Total antioxidant activity of the fresh cultivars was 2917 μmole Trolox equivalent antioxidant capacity (TEAC)/100 g DM. Following forced air-drying treatment at 42 C for 48 hr, all cultivars showed significant decreases in ascorbic acid, total phenolics and total antioxidant activity, and increases in extractable lycopene contents. This study was undertaken to identify cultivars that would provide the best colour and nutrient contents after commercial air drying.  相似文献

小麦面粉和鲜面片色泽及 Psy-A1 Ppo-A1 等位变异检测   总被引:1,自引:0,他引:1  
为研究小麦面粉和鲜面片色泽及其与两个色泽相关基因等位变异之间的关系,以我国主要麦区17个大面积推广品种及1个优异品系为材料,进行面粉和鲜面片色泽分析和 Psy-A1 、 Ppo-A1 基因等位变异检测。结果表明,扬麦18、泛麦5号、扬麦9号、平安7号、扬麦20面粉和鲜面片色泽均比较好,亮度高,黄度低,携有优异等位变异;川麦42是优异的低黄度种质资源,但亮度需提升。面粉和鲜面片的L~*值间、a~*值间、b~*值间均呈极显著正相关,L~*值与a~*、b~*值均呈极显著负相关,a~*值和b~*值无显著相关性。 Psy-A1主要引起鲜面片a~*值和b~*值显著变化;对a~*值的效应表现为 Psy-A1b Psy-A1a ;对b~*值的效应表现为 Psy-A1b Psy-A1a ; Ppo-A1 对面粉及鲜面片的b~*值、鲜面片放置2 h和4 h的L~*值有显著影响;对b~*值的效应表现为 Ppo-A1b Ppo-A1a ;对L~*值的效应表现为 Ppo-A1b Ppo-A1a 。4个等位变异组合仅对鲜面片黄度b~*值有极显著影响, Ppo-A1a/ Psy-A1a 基因型最高,其他三种基因型差异不显著。因此,改良小麦面粉和面制品色泽应注意淘汰 Ppo-A1a / Psy-A1a 基因型,高世代需加强面制品色泽的筛选鉴定。  相似文献

为给新疆春小麦籽粒性状和磨粉品质的遗传改良提供理论依据,对386份新疆春小麦材料(55个地方品种、207个自育材料和124个引进材料)的籽粒性状与磨粉品质及其关系进行了研究。结果表明,不同来源春小麦材料的籽粒性状和磨粉品质各有优劣。386份供试材料的千粒重为37.48 g,容重为737.76 g·L~(-1),籽粒硬度为54.71,粒径为2.88 mm,籽粒蛋白含量为15.95%,出粉率为53.06%,灰分为0.54%,L~*值为96.86,a~*值为-1.16,b~*值为9.83。整体而言,籽粒蛋白质含量、L~*值较高;籽粒硬度较低,a~*值和b~*值较高,三者的变异系数较大,分别为22.26%、25.86%和15.67%,具有较好的改良潜力。籽粒性状与磨粉品质关系密切,其中千粒重、粒径与灰分含量呈极显著负相关,籽粒硬度、籽粒蛋白含量与灰分含量呈显著正相关,千粒重、粒径与L~*值呈显著负相关,与a~*值呈显著正相关,籽粒硬度与a~*值呈显著负相关,容重、粒径与b~*值呈显著或极显著正相关。昌春3号、伊春4号、中作8131、新春26号、新春33号等可用于新疆春小麦籽粒性状和磨粉品质改良的优选品种(系)。  相似文献

通过对不同贮藏温度下马铃薯块茎的还原糖含量及加工品质色泽指数的测定,筛选出在简易库房贮藏条件下(4~10℃)适于加工的品种为国引l、11、13、2、12号,这些品种经过3个月的低温贮存还原糖积累水平较低(<0.5%),色泽指数小(<20),加工品质好.冷贮(0~2℃)和冷贮一回暖(15~17℃)处理结果表明,冷贮导致块茎中还原糖含量大幅度提高,色泽指数显著增大.而经过回暖处理后,还原溏含量下降,色泽指数变小,但不同的品种经不同的处理时间回暖效果不一。国引1、2号经过30天的回暖处理,加工品质达到商业要求.  相似文献

The affirmation of acrylamide as a probable carcinogen by the European Food Safety Authority has reinforced the need to lower acrylamide content in fried potato products. Selected for low reducing sugars and acrylamide-forming potential, recently released cultivars ‘Alpine Russet’, ‘Dakota Trailblazer’, and ‘Ivory Crisp’ were evaluated for their processing quality when grown with varying nitrogen (N) fertilizer regimes. The objective of this study was to determine the effects of N fertilizer rate (34, 135, 202, 269 and 336 kg ha?1) on tuber glucose and acrylamide concentration following processing of new cultivars relative to standard cultivars ‘Russet Burbank’ and ‘Snowden’ at harvest, and after 3, 6 and 9 months of storage at 7.2 °C over 2 years. Glucose and acrylamide responses to N rate were similar for chip cultivars, which linearly decreased in 2011, and quadratically increased then decreased in 2012 with increasing N rate. The N rate effect on French fry glucose concentration varied by cultivar and either decreased or did not respond to elevated N rate. Glucose and acrylamide concentrations of chip cultivars generally increased during storage, with a dramatic increase in ‘Snowden’ resulting from senescence sweetening after 9 months of storage. Environmental conditions significantly affected glucose and acrylamide responses of French fry cultivars to storage time. Glucose and acrylamide concentrations of all French fry cultivars generally increased during storage in 2011. In contrast, glucose concentrations of French fry cultivars were stable or increased, while acrylamide concentrations generally decreased during storage in 2012. The relationship between chip color and glucose concentration was significant, but differed by year. Glucose and acrylamide concentrations of French fry and chip cultivars were significantly correlated (R2?=?0.52 and 0.66, in 2011 and 2012, respectively). Generally, acrylamide in fried potato products can be minimized by using low reducing sugar cultivars supplied with a N fertilizer rate that optimizes yield and quality during growing seasons with minimal environmental stress.  相似文献

Summary The reducing sugar content and chip colour were studied in diploid potatoes bred for superior table and chipping quality. The reducing sugar content in the tubers of 119 diploid clones was estimated before and after cold storage (4–6°C) in the years 1987–1991, and reducing sugar and chip colour were determined in 1990 and 1991 for 36 clones. Thirty two clones had a significantly lower reducing sugar content after cold storage than cv. Mila. The year of evaluation, storage temperature and genotype significantly affected the reducing sugar content.  相似文献

A study was conducted to develop a process for producing sweet potato chips. Sweet potato tubers sliced to 0.5 by 0.5 cm size were dehydrated at 70°C for various times (0, 90, 105, 120, 135, 150, 165 min). Determination of the moisture content of the dehydrated chips and sensory evaluation of the dehydrated and fried chips were carried out to establish optimum dehydration time and moisture which corresponded to optimum quality. Blanching the slices in water and 1% sodium metabisulfite solution respectively prior to the dehydration significantly (P>0.05) improved the color and general acceptability of the chips over those immersed in water. The process development resulted in about 26 to 76% decrease in the ascorbic acid content of the chips. Significant changes also occurred in the total and reducing sugars of the chip following partial dehydration.  相似文献

为了探讨新疆冬小麦品种Pins基因等位变异对小麦磨粉品质和新疆拉面加工品质的影响,对109份新疆冬小麦品种的籽粒硬度及其Pins基因等位变异、磨粉品质和新疆拉面加工品质进行测定,初步分析了新疆冬小麦品种资源籽粒硬度Pins基因的分布规律以及不同 Pins基因等位变异对籽粒硬度、磨粉品质和新疆拉面加工品质的影响。结果表明,新疆冬小麦品种属硬质麦类型,Pins基因型以 Pina-D1a Pinb-D1b Pina-D1a/ Pinb-D1b为主, Pins突变类型及Pins突变基因型组合类型小麦的籽粒硬度均显著高于野生型, Pinb-D1a基因型小麦的籽粒硬度最低,L*值和a*值最高,b*值最低; Pinb-D1ab基因型小麦的吸水率最高。不同Pins基因型组合中,野生型小麦的籽粒硬度、b*值和吸水率最低; Pina-D1a/ Pinb-D1aa的出粉率最高, Pina-D1a/ Pinb-D1ab的灰分含量最低,吸水率最高。Pins基因及其基因型组合对新疆拉面加工品质无直接影响,主要通过对灰分、面粉色泽和吸水率等磨粉品质的作用对新疆拉面产生间接影响。优质新疆拉面品种中,Pinb基因突变对新疆拉面加工品质的影响大于Pina基因突变,育种中应优先选择Pinb 基因突变型材料,其中 Pina-D1a/ Pinb-D1b可以作为重点选择的基因型组合。  相似文献

为明确安徽大田生产环境下软质小麦籽粒和终端产品品质表现,评价优质软麦品种的加工适用性,本研究选取该区当前推广种植的24个软质小麦品种,对其籽粒和面粉的主要品质性状及其制品南方馒头和曲奇饼干的品质进行差异性、相关性分析,并以美国软白麦近五年的主要品质性状平均值为理想指标进行灰色关联度比较。结果表明,供试材料的硬度、面粉色泽b*、湿面筋含量、面团形成时间、稳定时间等籽粒品质性状变异系数较大,而容重、面粉L*值和吸水率变异系数较小。南方馒头品质性状中,白度差异最小,比容差异最大;曲奇饼干品质性状中,感官评分变异系数较大,饼干直径均值和变异系数都较小。蛋白质含量、湿面筋含量、稳定时间均符合弱筋标准(GB/T 17320-2013)的样品数为0。相关分析表明,容重、降落值、面粉L*、b*、白度与大部分性状间相关性不显著;籽粒硬度与水SRC和乳酸SRC均呈显著正相关,与湿面筋含量和面粉a*值均呈显著负相关。蛋白质含量与面粉a*值等7个指标均呈显著正相关,与面粉b  相似文献

Upland culture of nine varieties at Ivory Coast resulted in decreases in grain weight, brown and milled rice translucency, Chroma meter L* of rough rice, Chroma meter L* and b* of milled rice, milled rice protein, and Amylograph peak viscosity, and in increases in total phenolics of hull and brown rice, and Chroma meter a* of rough, brown, and milled rice of 5 to 8 of the varieties as compared with irrigated culture. 为掌握近年来关中地区小麦品质状况,以2008-2010年从关中地区3市9县(区)抽取的253个大田生产小麦样品为实验材料,对其品质进行了全面检测分析。结果表明,2009年小麦籽粒品质和磨粉品质较差,籽粒硬度、L*值、a*值、b*值在年度间差异显著。总体来讲,关中地区小麦的蛋白质品质较好,且比较稳定,受环境条件影响较小;而淀粉品质受环境的影响较大,3年间淀粉峰值黏度、破损值、回生值均有显著差异;粉质参数和拉伸参数在不同年度的差异较小,比较稳定。  相似文献

为了解种子颜色目测法和色差计法对小麦穗发芽抗性的鉴定效果,利用这两种方法对1 018份小麦材料种子颜色进行测定,并分析了色差计量指标L~*、a~*、b~*及a~*/b~*、b~*/a~*、a~*/L~*、b~*/L~*值与种子颜色和穗发芽抗性的关系。结果表明:(1)红粒小麦a~*、a~*/b~*和a~*/L~*的均值均显著高于白粒小麦,其他指标均值显著低于白粒小麦;(2)a~*/b~*和b~*/a~*值与种子颜色相关性强,相关系数分别为-0.934和0.941,其线性回归方程可用于判断小麦种子颜色;(3)红粒小麦的穗发芽抗性显著高于白粒小麦,但不同红粒品种之间穗发芽抗性差异很大,变异系数为122.36%;(4)种子颜色及a~*/b~*和b~*/a~*值与穗发芽抗性相关性强,相关系数分别为0.854、-0.831和0.835;其次是a~*/L~*值与穗发芽抗性的相关性,其相关系数为-0.735;(5)目测法获得的种子颜色可解释穗发芽抗性72.9%的变异,色差计参数可解释穗发芽抗性72.5%的变异,但在单独分析时,色差计参数对红粒和白粒小麦穗发芽抗性分别仅能解释11.4%和8.7%的变异。总之,色差计法测量种子颜色,可以作为目测法判别小麦种子颜色的补充方法,用于种子颜色定性和定量比较分析。尽管红粒小麦比白粒小麦抗穗发芽,但鉴于红粒小麦品种(系)间穗发芽抗性差异很大,仍需进行穗发芽抗性鉴定。  相似文献

Progenies from crosses of ND860-2, a low reducing sugar clone, with two potato cultivars (Trent and Onaway), differing in reducing sugar content, as well as the progenies of the parents selfed, were examined for reducing sugar content. Tubers were assessed after storage at 12 C for 10 weeks (regular storage) and 4 C for 10 weeks followed by reconditioning at 20 C for two weeks (reconditioning). After regular storage, all seedling progenies had relatively high frequencies of low reducing sugar segregates (i.e., equal or less than those of ND860-2 clone). After reconditioning, a high frequency of seedlings with low reducing sugars was observed in the progeny from ND860-2/Trent (46.7%), however, they were also found in the progeny from ND860-2/Onaway (6.7%). Results of this study suggested that progenies from crosses involving ND860-2 would segregate for low reducing sugar content regardless the reducing sugar level of the other parent.  相似文献

Two days of chilling (exposure to 1 C) had no detectable effect on chip color or sugar content of potato (Solanum tuberosum L.) tubers. Four days of chilling led to increases in sugars if potatoes were stored at 10 C or 19 C for 3 to 4 days after chilling ended. Longer chilling gave increases in sugars by the end of the chilling period, and returning tubers to 10 C or 19 C magnified the response. Glucose and fructose gave similar increases from chilling treatments, except that glucose levels were consistently greater. Sucrose was increased by chilling, but the response pattern did not always resemble that of the reducing sugars. Twenty-seven days of storage at 19 C after chilling lowered levels of reducing sugars late in the storage season but not in December. Cultivars differed in response to chilling. Kennebec tubers accumulated far more reducing sugars but much less sucrose than did Norchip tubers. Storage at 19 C after chilling lowered the sucrose content of Kennebec and Monona while raising that of Norchip.  相似文献

Cultivars of sweet (Rio, M81E and Della) and forage sorghums (Tato and Thor) were planted in Northeast Mexico in order to estimate optimum harvesting time, sugar production, biomass composition and ethanol yields. The juices were characterized in terms of sugar composition, free amino nitrogen (FAN) and phenolics and then yeast (Saccharomyces cerevisiae)-fermented into ethanol. The cultivars yielded different volumes of sweet juice and total sugars. They also had different optimum harvesting times. Glucose was the most abundant sugar in raw juices, followed by fructose and sucrose. FAN concentration ranged from 19 to 36 mg L−1 therefore, nitrogen supplementation was required for adequate fermentation. After 18 h fermentation, there were no differences in efficiencies among cultivars but the sweet sorghums yielded more ethanol Ha−1 compared to the two forage sorghums (approximately 1000 L Ha−1 versus 770 L Ha−1). Della was the cultivar with the highest productivity with 1051 L Ha−1 ethanol produced after the first cut.  相似文献

Summary Reducing sugar and sucrose contents of potato tubers (Solanum tuberosum L.) from six cultivars were monitored both during the growing season and after a four months storage period at 10°C. Significant correlations were found between tuber sugar contents (sucrose, reducing and total) measured at harvest and the reducing sugar content after storage. Similarly, in five of the six cultivars, the sucrose loss and the corresponding reducing sugar gain during storage were significantly correlated.  相似文献
