Pea (Pisum sativum), faba bean (Vicia faba) and soybean (Glycine max) seeds were characterized, and protein isolates were prepared following an isoelectric point precipitation procedure. Soybean seeds showed the highest protein content (36.7%) and carbohydrate was the major constituent in the pea (59.4%) and the faba bean seeds (52.1%). Protein contents were higher than 80% in all the protein isolates. The amino acid contents in the protein isolates were, in general, higher than those in their own starting seeds. The antinutritional factor contents were reduced after the protein isolate preparation. The highest reductions achieved for tannins were 95% in the faba bean protein isolate, and for phytates (45%) and trypsin inhibitor activity (46%) in the pea protein isolate. Haemagglutinating activity was not detected in any of the protein isolates. Minimum solubility values were observed at a pH range between 4.0 and 6.0, and maximal solubilities were obtained at basic pH values. The faba bean protein isolate showed the highest water and oil absorption capacities, and the best gelling properties. The soybean protein isolate had the best foam expansion capacity. Thus, the protein isolates had an improvement in some of the characteristics compared to their original seeds with lower contents in tannins, phytates and haemagglutinating activity, but had weak functional properties.  相似文献

大豆中主要的抗营养因子是胰蛋白酶抑制剂,在其它食用豆中也有存在。供试大豆中胰蛋白酶抑制剂活性(TIA)最高(20.30~26.30TIU/g),菜豆次之(2.93~6.41TIU/g),蚕豆、豌豆为2.01~2.87及1.66~2.38TIU/g。大豆中抑制剂活性与粗蛋白及粗脂肪之间存在显著负相关。测定结果表明:国内选育的不含SBTI—A_2基因大豆材料,抑制剂总活性为17.40TIU/g,低于其栽培品种亲本21.20~21.60TIU/g。  相似文献

Abstract

The effects of soil amendment with oilseed-rape residue (OSRR) and chicken manure (CM) on the growth and nitrogen (N) uptake of faba bean (Vicia faba L.) were assessed in a pot experiments with Italian ryegrass (Lolium multiflorum Lam.) as a reference crop. A 15N isotope dilution method was used to estimate the amount of N derived from the residue (OSRR and CM) and from atmosphere through N2 fixation in the plants. Dry weights (DW) of shoots and whole plants were heaviest in the plants grown on the soil amended with CM (CM plants) followed by the plants grown on the soil amended with OSRR (OSRR plants) and control plants in this order. There were significant differences (p<0.05) in dry weight between CM, OSRR and control plants. DW of roots was also increased by amendment with either CM or OSRR in faba bean, but it was decreased in ryegrass. The amount of total N in both roots and shoots were increased by application of either CM or OSRR in both faba bean and ryegrass. The amount of N2 fixed by faba bean cultured on 1.2 kg soil amended with 10g residue (CM or OSRR) was 85.9 mg pot-1 but total N in faba bean derived from OSRR and CM was 192 and 374 mg pot-1, respectively. The percentage of N derived from atmosphere to total N in faba bean plants ranged from 15.9 to 26.5%. The amount of N taken up by faba bean and ryegrass plants from CM were larger than those from OSRR by 81.0 and 54.3%, respectively. Soil N balance was calculated as the difference between the amount of N applied (including fixed) and taken up by the plants. The N balance of soil amended with OSRR after cultivation of faba bean was 72.2% higher than that of the soil amended with CM, and that after cultivation of ryegrass was 89.9% higher.  相似文献

Two faba bean cultivars (317/99/81 and Giaz/402) obtained from Shambat Research Station in Northern Sudan, were used for this study. Investigation showed that the tannin contents of untreated seeds were 0.077% and 0.067% for cultivars 317/99/81 and Giza/402. In vitro protein digestibility values were 80.68% and 81.48% for the two cultivars, respectively. The extractable tannin content of the faba bean cultivars was markedly reduced by imbibing water or Na2CO3 solution into whole seeds and incubating them at 30°C for 1, 3, 6, 12 or 24 hours, or at 100°C for 5, 10 or 20 minutes. The extent of reduction depended on time, temperature, and Na2CO3 concentration; the percent tannin extracted and percent in vitro protein digestibility increased with time or Na2CO3 concentration, while application of high temperature reduced the time.  相似文献

Potato purée and wheat flour were blended at ratio of 7:1 w/w with 2 parts per weight of soybean protein concentrate (SPC) and/or faba bean-protein micellar mass (PMM). Two snack foods were formulated and deep fried. Spices, onion, parsley and chicken stock were added to the aforementioned two recipes to formulate meat ball analogues. Data revealed good acceptability of all products. Moreover, they can be considered as a good source for some essential amino acids; protein (26%); lipids (20%); carbohydrates (48%) and minerals. The in vitro digestibility ranged between 61.0% and 66.9%.  相似文献

以大豆(黄豆)、绿大豆、黑大豆、黑小豆、蚕豆、绿豆、赤豆、刀豆、芸豆、饭豆、麻豇豆、花豇豆、豌豆、小扁豆、鹰嘴豆等为原料,采用清除[DPPH·]自由基和猪油体系的抗氧化试验来测定其抗氧化特性,为食用豆类功能特性的开发利用提供参考.结果表明:刀豆、黑小豆、花豇豆清除[DPPH·]自由基的能力明显强于其他豆类,鹰嘴豆、绿大豆、黄大豆清除自由基能力较弱.刀豆、芸豆、饭豆的提取液能显著延长猪油氧化的诱导时间,表现出很强的抗猪油氧化能力,赤豆、蚕豆、花豇豆的抗猪油氧化能力则相对较弱.  相似文献

The effect of different heat treatments on inactivation of trypsin inhibitor and hemagglutinin of winged bean was investigated. Trypsin inhibitor extracted from winged bean meal was stable at 60 °C for 60 min. At 80 °C, the activity of the extracted inhibitor decreased by 25% within 5 min, and continued to decline gradually to a loss of 45% of activity after 30 min. When the extracted inhibitor was incubated at 100 °C, it exhibited a triphasic pattern of inactivation. The winged bean extract incubated at 60 °C lost 60% of its hemaggluinating activity within 30 min. At 80 °C, there was a complete loss of activity within 5 min. The microwave treatment to winged bean meal had no effect on trypsin inhibitor or hemagglutinating activities in the meal. However, infrared treatment to winged bean seeds for 60 seconds was effective in destroying most of the trypsin inhibitor and hemagglutinating activities. Autoclave treatment (120 °C at 15 lb pressure) for 10 min inactivated trypsin inhibitor and hemagglutinin in winged bean meal almost completely. Cooking of presoaked beans in boiling water for 30 min was effective in destroying most of the trypsin inhibitor and hemagglutinating activities.  相似文献

The grain legume (pulse) faba bean (Vicia faba L.) is grown world-wide as a protein source for food and feed. At the same time faba bean offers ecosystem services such as renewable inputs of nitrogen (N) into crops and soil via biological N2 fixation, and a diversification of cropping systems. Even though the global average grain yield has almost doubled during the past 50 years the total area sown to faba beans has declined by 56% over the same period. The season-to-season fluctuations in grain yield of faba bean and the progressive replacement of traditional farming systems, which utilized legumes to provide N to maintain soil N fertility, with industrialized, largely cereal-based systems that are heavily reliant upon fossil fuels (=N fertilizers, heavy mechanization) are some of the explanations for this decline in importance. Past studies of faba bean in cropping systems have tended to focus on the effect of faba bean as a pre-crop in mainly cereal intensive rotations, whereas similar information on the effect of preceding crops on faba bean is lacking. Faba bean has the highest average reliance on N2 fixation for growth of the major cool season grain legumes. As a consequence the N benefit for following crops is often high, and several studies have demonstrated substantial savings (up to 100–200 kg N ha−1) in the amount of N fertilizer required to maximize the yield of crops grown after faba bean. There is, however, a requirement to evaluate the potential risks of losses of N from the plant–soil system associated with faba bean cropping via nitrate leaching or emissions of N2O to the atmosphere as a consequence of the rapid mineralization of N from its N-rich residues. It is important to develop improved preventive measures, such as catch crops, intercropping, or no-till technologies, in order to provide farmers with strategies to minimize any possible undesirable effects on the environment that might result from their inclusion of faba bean in cropping system. This needs to be combined with research that can lead to a reduction in the current extent of yield variability, so that faba bean may prove to be a key component of future arable cropping systems where declining supplies and high prices of fossil energy are likely to constrain the affordability and use of fertilizers. This will help address the increasing demand by consumers and governments for agriculture to reduce its impact on the environment and climate through new, more sustainable approaches to food production. The aims of this paper are to review the role of faba bean in global plant production systems, the requirements for optimal faba bean production and to highlight the beneficial effects of faba bean in cropping systems.  相似文献

Integrated disease management options (two sowing dates, three fungicides and 3–6 faba bean genotypes) in managing Ascochyta blight affecting faba bean were evaluated for three cropping seasons (2006/07–2008/09) in northern Syria for their effects on disease parameters, seed infection and dry seed yield. The combined results of the three seasons on disease parameters showed that sowing dates significantly affected final disease severity and area under the disease progress curve (AUDPC); faba bean genotypes significantly affected final disease severity, rate of disease development and AUDPC. The highest AUDPC (255% days) was observed in early than late planted (168% days) faba bean genotypes. The mean AUDPC of faba bean genotypes ranged from 189% days on genotype 1053–1325 to 234% days on ILB-1814. Only faba bean genotypes and fungicides showed significant interactions in affecting final disease severity and AUDPC. Fungicide sprays significantly affected mean percent pod infection and rate of disease development but not mean percent seed infection. Faba bean genotypes showed significant differences in dry seed yield and the yield ranged from 1.7 t ha−1 in cv. Ascot to 2.4 t ha−1 in faba bean genotype 945-105. Improved varieties with Ascochyta blight resistance are not currently released and available for farmers in northern Syria and the integration of early planting (November–December) with one foliar fungicide spray at vegetative stage can help to reduce Ascochyta blight severity, pod and seed infections. Chlorothalonil and azoxystrobin are widely used fungicides to manage Ascochyta blights on food legumes in many countries and one of them could be used depending on their availability and costs to managing faba bean Ascochyta blight in Syria and other Mediterranean type environments.  相似文献

Faba bean (Vicia faba L.) is a protein-rich legume seed well adapted to most climatic areas of Europe and widely used for feed and food. Even if the seed is generally recognized to be of good nutritional value, existing genetic variability for seed composition offers possibilities for improvement of this trait by breeding. Four major quality types must be distinguished according to the presence or absence of tannins in the integuments and of vicine (V) and convicine (C) in the cotyledons. The nutritional value of diets containing varying amounts of different faba bean cultivars characterized by high or low levels of tannins, and high or low levels of vicine + convicine (VC), has been examined in monogastric animals and ruminants. Low-tannin content generally results in higher protein and energy digestibility for monogastric animals and low VC content has a positive effect on laying hen and broiler production performances. V and C, inactive precursors of divicine and isouramil are redox compounds potentially toxic to human carriers of a widespread genetic deficiency of the erythrocyte (red blood cell, RBC) enzyme glucose-6-phosphate dehydrogenase (G6PD). Ingestion of faba beans by these deficient individuals may cause a severe, potentially lethal hemolytic anemia (favism). The mechanism of action of divicine and isouramil in the G6PD-deficient RBC is discussed.  相似文献

The response of faba bean Vicia faba (Giza 2 variety) towards soaking conditions differed greatly since the absorbed quantities of water (either by the whole or the decorticated forms) are a function of their chemical constituents. On the other hand, 28.45% of the total vicine (vicine + convicine) present in the whole faba bean samples was extracted after soaking for 72 h at room temperature. Subsequently, other soaking mediums, i.e., 0.5% sodium carbonate and/or 1% acetic acid were used in an attempt to increase the level of vicine elimination. Percentage removal of total vicine in whole faba bean was higher in the acidic (61.31%) than the alkaline (38.40%) medium under the conditions tested, i.e., at room temperature for 72 hours. The rates of vicine + convicine elimination in decorticated faba bean for the acidic acid and alkaline soaking media were 78.46 and 79.13%, respectively. The solubility ratio of total vicine relative to soaking solutions (H2O:Na2CO3:Acetic acid) was 1:1.35:2.16 in the whole broad bean and 1:2.41:2.39 in the decorticated samples. The residual amounts of total vicine (78.33% and 77.27%) present after stewing under normal and under pressure cooking conditions could be expected to be decreased to 30.33% for the former and 29.92% for the later after 72 h of soaking. Regression analysis was used to estimate the theoretical zero point of vicine elimination from faba bean through soaking in 1% acetic acid.  相似文献

Crosses among inbred lines from different Mediterranean-type faba bean gene pools appear promising for the production of high yielding synthetic varieties. The purpose of the present study was to (1) describe the genetic diversity of Greek faba bean local populations, using Inter-Simple Sequence Repeats (ISSRs), and (2) classify the local populations and compare the classification results with those derived from morphological/agronomic data. Four ISSR primers were used on 57 bulked samples of 20 faba bean local populations, five minor-type and 15 Mediterranean-type populations. A total of 192 DNA bands were obtained, of which 190 were polymorphic. Analysis of molecular variance (AMOVA) revealed high levels of within population genetic variation. Based on Nei's standard genetic distances, both cluster analysis using unweighted pair-group method with arithmetic mean (UPGMA) and principal coordinate analysis (PCoA) separated four minor-type populations from the Mediterranean-type populations. The Mediterranean-type populations were further classified into two clusters, with the resultant groups being less diverse than the initial Mediterranean-type gene pool. Mantel test showed that the ISSR markers classification using Nei's genetic distances was statistically different from that derived from morphological/agronomic data using Manhattan distances. Conclusively, the present study supported the suggestion that Mediterranean-type faba beans can be subdivided into at least two different germplasm pools. The groups studied are promising for the production of synthetic varieties.  相似文献

Faba bean phenolic compounds encompassed phenolic acids, flavonols, proanthocyanidins and anthocyanins. Roasting faba beans for 120 min decreased the total phenolic, flavonoid and proanthocyanidin contents by 42, 42 and 30 %, respectively. Roasting beans for 120 min decreased the 2,2-diphenyl-1-picrylhydrazyl radical scavenging activity, total equivalent antioxidant capacity and ferric reducing antioxidant power by 48, 15 and 8 %, respectively. High performance liquid chromatography-post column derivatisation revealed the generation of new phenolic compounds as a result of roasting. Antioxidant mechanism of bean less-polar phenolic compounds was largely based on free radical scavenging activity. The bean phenolic compounds with reducing capability were heat stable. Roasted faba bean extracts (70 % acetone, v/v) were fractionated into relatively polar and non-polar fractions; the latter contributed the majority of the antioxidant capacity. The extracts from beans with different seed coat colours differed in their phenolic compositions, which suggest different levels of potential benefits to health. Although roasting initially lowers the bean antioxidant capacity, prolonged roasting at 150 °C for 60 min and longer causes generation of new phenolic compounds and an increased antioxidant capacity. The findings encourage a wider ultilisation of faba beans for human foods particularly in baked/roasted products.  相似文献

Intercropping of grain legumes with cereals may offer several advantages over sole crops for forage production and is commonly used, particularly in low‐input agriculture. Faba bean (Vicia faba L.), oat (Avena sativa L.) and triticale (×Triticosecale Wittmack) sole crops as well as the intercrops of faba bean with each of the above cereals, in three seeding ratios (75:25, 50:50 and 25:75), were compared for dry‐matter (DM) yield, nitrogen (N) concentration, chlorophyll content, growth rate and plant height in a 2‐year field experiment. Triticale sole crop and faba bean intercrops with triticale provided higher DM yield than faba bean sole crop and the intercrops of faba bean with oat. Growth rates of faba bean, oat and triticale in mixtures were lower than those in sole crops. Faba bean plants were taller in the intercrops than in the sole crop at 3 weeks after tillering (WAT), whereas at 6 WAT, the trend was different as faba bean plants in the sole crop were taller than in the intercrops. N concentration was higher for the cereals when faba bean was included in the mixture. Crude protein (CP) concentration was the highest in faba bean sole crop followed by the faba bean intercrops with oat. However, triticale sole crop and faba bean mixtures with triticale provided higher CP yield than all other crops because of their highest DM yield. Thus, mixtures of faba beans with triticale could be a promising alternative for increased forage production because of their capacity for high DM and protein yields.  相似文献

Chocolate spot incited by Botrytis fabae is a serious faba bean disease of worldwide distribution. The increasing interest in sustainable tools for disease control, together with the lack of sufficient levels of genetic resistance triggered our interest in the use of intercropping as a tool for the management of this disease. The effect of intercropping on chocolate spot severity was studied in field experiments performed in Egypt, the Palestinian Territories, Spain and Tunisia, in which a susceptible faba bean cultivar was grown as a monocrop or with two mixed species intercrops of either barley, oat, triticale, wheat, pea or common vetch, or with three mixed species intercrops of wheat and berseem clover. Chocolate spot was significantly reduced when faba bean was intercropped with cereals, but not when intercropped with legumes. Suppressive effects can be ascribed to a combination of host biomass reduction, altered microclimate and physical barriers to spore dispersal.  相似文献

The adverse effects of sea water salinity on number of nodules, nitrogen content, nitroginase activity, Chlorophyll a and b content, proline accumulation and protein pattern of faba bean plants (Vicia faba commercial cultivar Nubaria 1) were investigated. Faba bean plants were irrigated with sea water at 20, 25, 30, 40 and 50% concentrations and inoculated with rhizobial isolate ARC307 or with gamma rays treated isolates namely; ARC1, ARC2, ARC3, ARC4, ARC5, ARC6 and ARC7. Nodules number, nitrogen content, nitroginase activity and chlorophyll a and b content parameters were decreased by increasing sea water salinity with all used isolates, while proline accumulation parameter increased. At the same time, ARC2 isolate showed the highest values for these parameters above all isolates including the parental isolate ARC307 at all studied concentrations except for proline accumulation parameter, it was the least. Therefore, ARC2 considered as a promising isolate for salt tolerance. Salinity enhanced the occurrence of particular novel proteins in faba bean plants infected with ARC2 isolate.  相似文献

Effect of soybean (Glycine max) on serum level of some sex hormones: testosterone, follicle stimulating hormone (FSH), luteinizing hormone/interstitial cell stimulating hormone (LH/ICSH), estradiol and prolactin in male rats was investigated. Twenty male albino rats of 12 weeks old with similar body weights were assigned to four groups of 5 rats each and treatment with soybean meal at 100, 200 and 300 mg kg(-1) body weight, respectively daily for 8 weeks. Blood samples collected through cardiac puncture were assayed for levels of hormones. There were dose-dependent effects of the soybean meal on the serum concentration of the hormones. The treatment significantly reduced the levels of testosterone and FSH in the serum while it significantly increased the levels of estradiol, LH/ICSH and prolactin. The results show that soybean (Glycine max) had strong capability to disrupt hormonal functions. Hence, its indiscriminate use could increase the risk of infertility in males.  相似文献

Sesame products (sesame meal, roasted and autoclaved sesame meal, sesame protein isolate and concentrate) were added to Red wheat flour to produce blends at protein levels of 14, 16, 18 and 20 percent. Dough properties were studied using a Brabender Farinograph. Loaves were prepared from the various blends using the straight dough procedure and then evaluated for volume, crust and crumb colour, crumb texture, flavour and overall quality. The water absorption, development time and dough weakening were increased (p<0.05) as the protein level increased in all blends; however, dough stability decreased. Sesame products could be added to wheat flour up to 18 percent protein level (sesame protein isolate) and up to 16 percent protein level (other sesame products) without any observed detrimental effect on bread sensory properties. No significant differences (p>0.05) were recorded in loaf volume between control and breads containing sesame protein isolate (up to 18 percent protein level) and either autoclaved sesame meal or sesame protein concentrate (up to 14 percent protein level). Addition of sesame products increased the content not only of protein but also minerals and total essential amino acids, especially lysine. The addition also improved in-vitro protein digestibility.  相似文献

以大豆未成熟子叶为外植体,研究合丰25、吉林35、吉育91对未成熟子叶体细胞胚诱导率的影响,并探讨3种基因型大豆未成熟子叶对草甘膦的耐性。结果表明:3种基因型的愈伤组织诱导率均为100%,体细胞胚诱导率为53.95%~72.12%,平均胚数吉育91高于其它2种基因型。3种基因型的体细胞胚诱导率在草甘膦浓度间存在差异,在大豆以未成熟子叶为受体转基因时,诱导体细胞胚胎发生的草甘膦筛选浓度为2.5~5.0 mg.L-1。  相似文献

Weanling male rats (45–60 g) were used to compare the supplemental effects to rice protein of bean or crayfish protein. Rats were fed various combinations of rice plus bean (B) or crayfish (C) to provide 1.6 g N/100 g of the daily diet for 28-day growth studies and a 7-day N balance period. Five different diets were fed. Six rats were assigned to each diet on the basis of body weight. Combinations of R:B of 80:20 and of R:C of 80:20 produced food intake, weight gain, PER, N intake, digested and retained N; and liver weight values that were comparable. However, increasing C to 30% of the dietary protein led to reduced value for food intake, weight gain, PER, N intake, digested and retained N, BV, NPU, and liver weight when compared with values obtained when B was increased to 30% (P<0.05). The results appear to indicate that, above a certain level of supplementation, brown bean protein is superior to crayfish as a supplement to rice protein.  相似文献
