The sensory and analytical characteristics of five rose sparkling wines manufactured by the traditional method have been determined. Moreover, the changes that take place in the nitrogen and volatile fraction of the wines during the second fermentation and the aging with the yeasts have been studied. Each of these wines was made from a single industrial rose base wine of the Garnacha Tinta variety, with five selected yeasts strains. The base wine had a low content in free amino acids, 16 mg/L, and the yeast consumed more peptides than free amino acids during second fermentation. From the application of the two-way analysis of variance, yeast strain, and aging time factors to the data of volatile compounds, it has been found that most of the differences between these sparkling wines are due to the aging time. It has been verified that these rose sparkling wines have foam of good quality and that the grape variety Garnacha Tinta is suitable for the production of rose sparkling wines.  相似文献

For the first time, the potent but unstable antioxidative diterpene carnosic acid could be enriched from an aqueous extract of rosemary (Rosmarinus officinalis L.) by isoelectric focused adsorptive bubble chromatography. Enrichment of carnosic acid in the foam was influenced by the pH value and the flow rate of the foam-forming gas. Efficiency was highest with diluted samples at pH 4. Under these conditions, the conversion of carnosic acid to carnosol was negligible. Transfer of carnosic acid to the foam from a standard solution in the presence of saponin as surfactive substance was similar to that from the aqueous rosemary extract.  相似文献

An analytical method for the determination of free amino acids in ciders is reported. It is based on high-performance liquid chromatography with an automatic precolumn derivatization with o-phthaldehyde and 3-mercaptopropionic acid and diode array detection. The method was applied to monitor the amino acids during second fermentation of sparkling ciders. This paper reports the influence of yeast strains and aging time on the amino acid composition of sparkling ciders. The application of principal component analysis enables the ciders to be differentiated on the basis of the two factors considered (yeast strain and aging time). The first principal component, which accounts for 58% of the total variance, achieved the separation according to aging time with serine, glycine, alanine, valine, ornithine, leucine, and lysine as the most important variables. The second principal component, accounting for 28% of the explained variance, is closely related to aspartic acid and asparagine and separates the samples according to the yeast strain.  相似文献

The influence of fatty acids (free and bound as ethyl esters) on wine foaming was studied in different white wines and the corresponding sparkling wines. Moreover, from three of these wines the foam formed by CO(2) injection was separated, and two fractions were then obtained: foam wine (FW) and remainder wine (RW). In these fractions and the sparkling wines produced from them, foam properties and fatty acids were also determined. The free fatty acids C8, C10, and C12 were negatively correlated with foamability (HM), whereas the ethyl esters of hexanoic, octanoic, and decanoic acids were positively related to HM. The value of HM was directly proportional to the ratio of esterified to unesterified fatty acids. This was confirmed by the changes that occur in the esterification ratio during the second fermentation and aging. No influence was observed on either the Bikerman coefficient or the stability time of foam.  相似文献

Five mutants (obtained by UV mutagenesis) and the parent strain were selected to produce sparkling wines following the traditional or champenoise method. The wines were aged with the yeast for 9 months, with samples being taken each month for analytical and sensory determinations. The wines elaborated with mutant strain IFI473I demonstrated an accelerated release of protein, amino acids, and polysaccharides. An analysis of the secreted polysaccharides revealed that mannose was the major sugar present. The effects of the products released by yeasts on the foaming properties of the wines were determined by both sensory and instrumental analysis. In all cases, the wines elaborated with mutant strain IFI473I showed improved foaming properties as compared to wines fermented without this strain. Similar results were obtained at a decreased aging time of 6 months, thereby confirming the capacity of IFI473I strain to carry out an accelerated autolysis. These results demonstrate that mutant strain IFI473I can significantly reduce production times of high-quality sparkling wines.  相似文献

为了找出使冷冻面团和馒头综合品质较稳定的酵母产品,采用动态流变仪和F3发酵仪对低糖型国光高活性干酵母(1#)、英联马利苹果即发高活性干酵母(2#)、品一高活性干酵母(3#)、高糖型马利即发高活性干酵母(4#)、高糖型丹宝利即发高活性干酵母(5#)和耐高糖安琪高活性干酵母(6#)冷冻面团冻藏35 d过程中的流变学特性和发酵特性进行研究,并对由此面团制作馒头的质构、色泽、比容和感官品质进行分析。结果表明:不同市售酵母冷冻面团在不同冻藏时间下的流变学特性和发酵特性不同。不同酵母冷冻面团制作馒头后硬度、弹性、回复性、咀嚼性、亮度、红度、黄度、比容和感官品质分别差异显著,不同冻藏时间下同种酵母冷冻面团馒头的质构、色泽、比容和感官品质也分别差异显著。6种酵母在冻藏35 d内,1#和2#酵母冷冻面团的发酵活力始终较大,6#酵母冷冻面团的发酵特性参数始终最稳定;1#、5#和6#酵母冷冻面团的弹性模量与黏性模量较大,其中面团流变学特性最稳定的是5#;1#和6#酵母冷冻面团制作馒头的感官品质较好的同时,比容较高,色泽品质较好,质构品质也较好。因此整个冻藏期间,使冷冻面团和馒头综合品质较好较稳定的是1#,其次是6#。研究结果为冷冻面团馒头工业化生产中酵母的选择提供参考。  相似文献

The moderate consumption of alcoholic beverages has been associated with protection against the development of coronary heart disease. Although alcohol itself can help prevent coronary heart disease through a number of mechanisms, red wine appears to offer protection above and beyond that attributable to alcohol alone. Red wine is a complex fluid containing grape, yeast, and wood-derived phenolic compounds, the majority of which have been recognized as potent antioxidants. The aim of this study was to investigate the major phenolic contributors to the antioxidant activity of wine. To this end, four wines were followed during the first 7-9 days of vinification. Individual phenolic compounds were quantified by HPLC, and antioxidant activity was determined by electron spin resonance spectroscopy. The extraction of the phenolics was found to be influenced by vinification procedure, grape quality, and grape variety. Although fermenting wines reached a total phenolic content comparable to that of a bottled wine after 9 days of vinification, the antioxidant activity was significantly lower than that of a finished wine. This suggests that the larger polyphenolic complexes and condensation products that appear during aging make a sizable contribution to the overall antioxidant activity of red wines.  相似文献

The foam properties of sparkling wines (Cava) made from two red autochthonous grape varieties, Trepat and Monastrell, and coupages, including different percentages of them, were studied during second fermentation and aging. The effect of second fermentation on foam gave the highest decreases when the base wines had the highest foam values, while gave the lowest decreases or even increases for the base wines with the lowest foam characteristics. However, the greater the HM and Sigma of the base wine, the greater the foam values of the sparkling wine. Base wine determinations for quality control in cellars could provide information about future sparkling wine foaming. Acidity parameters, ethanol, sulfur, and polysaccharides contents were correlated to foam characteristics in the sparkling wines. In terms of color and foaming, wines made from the red varieties Trepat and Monastrell blended with white variety wines could be appropriate for elaborating "blanc de noirs" sparkling wines.  相似文献

为获得快速酿造水蜜桃酒的专用酵母菌株,生产优质水蜜桃酒,以水蜜桃自然发酵醪为筛菌原料,通过TTC显色法与杜氏小管法初筛;再经耐酒精能力、发酵速度与产酒能力以及发酵液风味分析与感官评定三级复筛,获得了优质高效的酿酒酵母菌PY01(Saccharomyces cerevisiae PY01);并以初始pH值、主发酵温度、酵母接种量为自变量,以酒精度为响应值作酿酒工艺的响应面优化。结果表明,PY01菌株发酵水蜜桃酒最适发酵参数为初始pH 值3.9,发酵温度26℃,酵母接种量6.2%。在此条件下发酵可得到酒精度为12.78% vol,总糖含量为6.71 g·L-1,风味纯正,口感醇厚,典型性的半干型水蜜桃发酵酒。本研究结果为水蜜桃发酵酿酒产业菌种的选择与工艺优化提供了基础。  相似文献

To evaluate the influence of stone content on spirit quality from stone fruit, cherry and plum mashes were prepared and fermented with a commercial and a diploid laboratory yeast strain. Fermentation parameters such as sugar content and ethanol production were followed. Despite an initial lag phase in cherry spirits, both yeast strains performed similarly, as substantiated by the determination of specific flavor compounds, ethyl carbamate, and methanol in the mashes and after distillation. The spirits produced were subjected to sensory analyses by trained panels of at least 25 judges. Although mashes retaining the stones could be clearly distinguished from those where the stones had been removed, no significant preference could be attributed to either spirit, indicating that qualities added by the presence of stones during fermentation are largely a matter of personal taste. Interestingly, the yeast strain used for fermentation seemed to have little influence on the spirit quality.  相似文献

Volatile compounds have been determined in control dry sherry wines and those supplemented with gluconic acid, which were inoculated with the Schizosaccharomyces pombe 1379 (ATCC 26760) yeast strain. These compounds were grouped, according to volatiles exhibiting the identical odor quality, into nine groups of the same odor character (aromatic series) as a way of establishing the aroma profile for the studied wines. Control and supplemented wines showed changes in the balsamic, spicy, roasty, and fruity aromatic series, and tasters judged the aroma as typical of wines subjected to biological aging. This fission yeast may be used as a treatment to reduce gluconic acid contents in wines obtained from rotten grapes, making feasible the incorporation of these wines into the biological aging process. In addition, this procedure may also help to accelerate the traditional biological aging in sherry winemaking due to the contribution of some specific compounds by S. pombe to the wine.  相似文献

Proteins have proven to play a major role in the stabilization of foam in Champagne wines despite their low concentration that ranges from 4 to 20 mg/L. The aim of this study was to evaluate the effect of fining on total protein and grape invertase contents of champenois base wines and their foaming properties. Data showed that fining and especially the use of bentonite at doses ranging from 10 to 50 g/hL leads to a significant decrease in the total protein content of wines together with that of the grape invertase content, with such a decrease being very detrimental to the foaming properties of the treated wines in terms of foam height (HM) and foam stability (HS). Only a slight decrease in the total protein content, in the grape invertase concentration, and in the foam quality of wines was observed when using casein (10 and 20 g/hL) or bentonite combined with casein (both at 20 g/hL). Our study thus clearly establishes the good correlation existing between the wine protein concentration and its foaming properties. A remarkable correlation was observed between the decrease in the grape invertase content and the total protein content of wines, following bentonite treatments, suggesting that the grape invertase (which represents at least 10-20% of the wine proteins) follows a similar behavior upon fining to other proteins of Champagne wines, despite the high molecular mass and the highly glycosylated structure of this particular protein. Moreover, the decrease in total protein and grape invertase contents of wine after fining with bentonite was found to be correlated with a decrease in the foaming properties of the corresponding wines (with respectively R(2) = 0.89 and 0.95).  相似文献

Wine aging on yeast lees is a traditional enological practice used during the manufacture of wines. This technique has increased in popularity in recent years for the aging of red wines. Although wine polyphenols interact with yeast lees to a limited extent, such interactions have a large effect on the reactivity toward oxygen of wine polyphenolic compounds and yeast lees. Various domains of the yeast cell wall are protected by wine polyphenols from the action of extracellular hydrolytic enzymatic activities. Polysaccharides released during autolysis are thought to exert a significant effect on the sensory qualities of wine. We studied the chemical composition of polyphenolic compounds remaining in solution or adsorbed on yeast lees after various contact times during the simulation of wine aging. The analysis of the remnant polyphenols in the wine indicated that wine polyphenols adsorption on yeast lees follows biphasic kinetics. An initial and rapid fixation is followed by a slow, constant, and saturating fixation that reaches its maximum after about 1 week. Only very few monomeric phenolic compounds remained adsorbed on yeast lees, and no preferential adsorption of low or high polymeric size tannins occurred. The remnant condensed tannins in the wine contained fewer epigallocatechin units than the initial tannins, indicating that polar condensed tannins were preferentially adsorbed on yeast lees. Conversely, the efficiency of anthocyanin adsorption on yeast lees was unrelated to its polarity.  相似文献

The release of lipids during the aging of sparkling wines in contact with yeast can influence wine sensory attributes and, especially, foam characteristics. Model systems allow study of the autolysis process in a reasonable period of time compared to natural conditions, at which it can last several months. In this paper, the release of the different classes of lipids during the autolysis of three commercial yeast strains in a model wine medium has been monitored. Due to the absence of accurate quantitative methods, an HPLC method for separating and quantifying the different neutral and polar yeast lipid classes was developed. Lipids were eluted through a YMC PVA-Sil column with a complex solvent mixture. Detection was carried out with a light-scattering detector. The yeasts were suspended in the model wine buffer and incubated at 30 degrees C for up to 12 days. A release of triacylglycerols, 1,3-diacylglycerols, 2-monoacylglycerols, free fatty acids, sterol esters, and sterols was observed over the first 2 days, a period that corresponded to the maximum loss of yeast viability. A decrease in most of these lipids was observed from day 2, possibly indicative of the release of yeast hydrolytic enzymes due to the breakdown of the cell wall. Phospholipids were not detected in any of the autolysates. The mean lipid content in the autolysates as a percentage of the total lipid content in the yeasts was 8.6% for sterol esters, 3.8% for sterols, 2% for triacylglycerols, and <2% for 1,3-diacylglycerols and free fatty acids.  相似文献

The accumulation of heavy metals (HMs) in soils is the most often cited potential risk of compost application. As the ecological effects of metals are related to mobile fractions rather than to total concentrations in the soil, we measured the total (aqua regia–extractable) HM concentrations, the readily available water‐soluble and the potentially bioavailable LiCl‐extractable fraction of soil HMs in a field experiment after 10 y with total applications of 95, 175, and 255 t ha–1 biowaste compost (fresh matter). Total soil concentrations of Cd, Cr, Cu, Ni, and Pb in the compost treatments were not significantly higher than in the unfertilized control. Total Zn concentrations increased in the treatment with the highest application rate, as expected from the calculation of the Zn load in the composts. In the mobile fractions, as measured in soil saturation extract and LiCl extract, Cd and Pb were not detectable. Concentrations of Cr, Ni, and Zn were in the range published for unpolluted soils in other studies and did not show any differences according to treatment. Easily exchangeable Cu (in LiCl extract) was increased with compost fertilization, most probably due to complexation with low‐molecular organic complexants. Except for Cd and Zn, the results of the mobile HM fractions in the soil were in good agreement with plant HM concentrations. In conclusion, fertilization with high‐quality biowaste compost at such rates and after 10 y of application gives no cause for concern with regard to both total HM concentrations and available HM fractions.  相似文献

A capillary sieving electrophoretic method for protein analysis and molecular weight determination was used to characterize ciders from Asturias, northern Spain. The total protein content (Bradford method) and the foam parameters (Bikerman method) were also analyzed to complete this characterization. The polypeptide profile, based on the molecular weight, together with exploratory and classification techniques, that is, principal component analysis (PCA) or linear discriminant analysis (LDA), allowed ciders to be differentiated on the basis of their foam assessment and the apple juice extraction technology used in the cidermaking process. In addition, the application of correlation analysis, that is, canonical correlations (CCA) or partial least-squares (PLS), revealed that the proteins with higher molecular weight were more relevant with respect to cider foamability. PLS analysis also provided a mathematical equation that is able to predict the stabilization time of foam from the polypeptide profile of the cider, because this is the foam parameter most influenced by these compounds.  相似文献

The development of strawberry aroma aftersmell after consumption in aqueous and milk model systems was followed. A recently developed sensory approach was used to seize the qualitative, quantitative, and temporal aspects of aroma profile development. The results obtained from sensory evaluation were then correlated to analytical data, obtained by means of intraoral aroma detection using the buccal odor screening system (BOSS). A clear correlation was found between the sensory persistence of single odor impressions and the intraoral detectability of odorants by BOSS. For the strawberry aroma mixture it could be shown that BOSS is capable of selecting those odorants of a complex aroma mixture that elicit a certain aftersmell impression developing after a certain period of time in the oral cavity. Also, the changes in in vivo odorant persistence depending on changes in food matrix composition could be directly followed by means of BOSS.  相似文献

This paper aims to investigate the possibility of oxidation of the flavor active constituents of champagne wines during the critical steps of the extraction for analytical purposes and to estimate its consequences on the extract's aroma characteristics. The investigation uses conventional sensory and GC/O analyses. Triangle and similarity sensory tests carried out on champagne samples and on their extracts show that the absence of antioxidants implies a deterioration of the aroma quality. Conversely, the use of 2-tert-butyl-4-methoxyphenol (BHA) as antioxidant gives an extract with an odor judged to be more similar to the original odor of the champagne. The alteration in the odor of the unprotected extracts is explained, from GC/O and GC/MS analyses, as three types of uncontrolled reactions. These are, first, the chemical oxidation of the fusel alcohols and the amino acids; second, the oxidation of sensitive flavor compounds such as enolic lactones and monoterpenic alcohols; and, third, the hydrolysis of fatty acid esters and saturated gamma-lactones. A systematic use of BHA during flavor extraction is therefore advisable, in particular when oxidation phenomena such as wine aging are under study.  相似文献
