This study reports quali-quantitative analyses on isoprenoids, phospholipids, neutral lipids, phytosterols, and proteins in purified plastids isolated from fresh fruits of traditional (Donald and Incas) and high-pigment (Kalvert and HLY-18) tomato cultivars at four ripening stages. In all of the investigated cultivars, lycopene, β-catotene, lutein, and total carotenoids varied significantly during ripening. Chromoplasts of red-ripe tomato fruits of high-pigment cultivars accumulated twice as much as lycopene (307.6 and 319.2 μg/mg of plastid proteins in Kalvert and HLY-18, respectively) than ordinary cultivars (178.6 and 151.7 μg/mg of plastid proteins in Donald and Incas, respectively); differences in chlorophyll and α-tocopherol contents were also evidenced. Phospholipids and phytosterols increased during ripening, whereas triglycerides showed a general decrease. Regardless of the stage of ripening, palmitic acid was the major fatty acid in all cultivars (ranging from 35 to 52% of the total fatty acids), followed by stearic, oleic, linoleic, linolenic, and myristic acids, but their relative percentage was affected by ripening. Most of the bands detected on the SDS-PAGEs of plastid proteins were constantly present during chloroplast-to-chromoplast conversion, some others disappeared, and only one, with a molecular weight of ~41.6 kDa, was found to increase in intensity.  相似文献

为评价不同品种樱桃番茄的风味及营养价值,比较分析了8个品种樱桃番茄的可溶性固形物含量、总糖含量、有机酸含量、糖酸比、Vc含量、氨基酸含量和氨基酸组成。结果表明,红果樱桃番茄品种的部分风味指标(可溶性固形物、总糖、有机酸、Vc)、氨基酸组成及营养价值(总氨基酸、必需氨基酸含量及氨基酸模式谱)优于黄果品种,尤其是红果品种浙樱粉1号和浙樱红1号,其中,浙樱粉1号樱桃番茄可溶性固形物含量、总糖含量、有机酸含量、Vc含量、呈味类氨基酸(鲜味、甜味、芳香类)含量及氨基酸营养价值均处于较高水平。红果樱桃番茄品种之间的总糖含量、Vc含量,以及黄果樱桃番茄品种之间的有机酸含量、总氨基酸含量、必需氨基酸含量和甜味类氨基酸含量等指标均呈现出较低的变异系数。氨基酸营养价值分析表明,缬氨酸和亮氨酸是樱桃番茄的2个主要限制氨基酸。本研究结果为高品质樱桃番茄的品种选育提供了理论指导。  相似文献

采用田间试验,以普通钾肥为对照,研究了缓释钾肥及其与普通钾肥、黄腐酸钾的配施对烤后烟叶质体色素及其降解产物的影响.结果表明:T1(普通钾肥)和T2(缓释钾肥)均不利于降低烤后烟叶叶绿素含量,T2处理两种等级烟叶质体色素降解物质总量均低于T1处理,而T3处理(普通钾肥+缓释钾肥)显著降低了两种等级烟叶叶绿素含量,提高了中部叶质体色素降解物质总量,却降低了上部叶质体色素降解物质总量和类胡萝卜素含量;T4处理(普通钾肥+缓释钾肥+黄腐酸钾)能降低两种等级烟叶叶绿素含量、提高上部叶类胡萝卜素含量,其上部叶质体色素降解物质总量高于其他各处理,中部叶质体色素降解物质总量仅低于T3处理,此外上部和中部叶中分别有12种和8种类胡萝卜素降解产物含量高于其他各处理.故综合看,T4是最优的施钾处理.  相似文献

The aim of this study was to assess whether the nutritional value of cherry tomato can be improved by irrigating plants with diluted seawater (12%; EC = 10 mS/cm in comparison with a control at EC = 4 mS/cm). Berries of cherry tomato cv. Naomi were analyzed at the red-ripe stage for the contents of NADPH and NADP+ as well as for the amounts of the main antioxidants, such as ascorbic acid, lipoic acid, tocopherols, and phenolic acids. As compared to the controls, the fruits of salt-treated plants showed a higher titratable acidity and a higher concentration of reducing sugars. The fruits picked from tomato plants irrigated with diluted seawater produced berries characterized by a higher nutritional value. Following salinity, berries showed higher amounts of vitamin C, vitamin E, dihydrolipoic acid, and chlorogenic acid. It was hypothesized that protocatechuic, vanillic, caffeic, and ferulic acids were utilized to counteract the damaging effects of salinity-induced oxidative stress, allowing tomato fruits to maintain a high reduced status even following salinization.  相似文献

为研究脱落酸(ABA)对番茄果实品质的影响,本研究测定了番茄ABA生物合成缺失突变体notflc及其野生型各成熟时期果实,以及外源100 μmol·L-1 ABA处理后不同天数的番茄果实的外观品质和营养品质。结果表明,内源ABA缺失抑制番茄果实增重并促进果实纵向生长,但对果实硬度无明显影响。同时,内源ABA可影响番茄果实可溶性固形物含量并促进破色期和转色期的还原糖积累。notflc果实中番茄红素、β-胡萝卜素、叶黄素和总类胡萝卜素含量均显著高于其野生型,且外源喷施试验表明,与对照组相比,外源100 μmol·L-1 ABA处理能显著抑制番茄果实中番茄红素、β-胡萝卜素和总类胡萝卜素的积累。综上,ABA在调控番茄果实外观品质方面,可促进番茄果实增重并抑制番茄果实纵向生长;在调控番茄果实营养品质方面,可促进还原糖积累并抑制类胡萝卜素积累。本研究结果为利用ABA调控番茄果实品质提供了一定的理论依据和技术支持。  相似文献

番茄综合营养品质指标构建及其对水肥供应的响应   总被引:13,自引:3,他引:10  
为构建番茄综合营养品质指标,分析其对水肥供应的响应,该文以灌水量和氮、磷、钾肥用量为试验因素,按照四元二次正交旋转组合设计,进行番茄盆栽试验,监测番茄可溶性固形物、可溶性糖、可滴定酸、糖酸比、番茄红素和维生素C 6项单一品质指标,根据主观层次分析法与客观熵权法和基于博弈论的组合赋权法,确定番茄单一营养品质评价指标权重,次序为:番茄红素糖酸比维生素C可溶性糖可溶性固形物可滴定酸;通过近似理想解法,构建番茄果实综合营养品质评价指标。在此基础上,通过回归分析建立番茄综合营养品质与水肥因子的数学模型,分析其对水肥因子的响应关系。结果表明,各水肥因子对番茄综合营养品质的主效应表现为:施磷量施氮量灌水量施钾量。当其他因素为中间水平时,番茄营养品质随灌水量或施氮量的增加呈开口向下的抛物线型变化,随磷肥用量的增加线性增加,随施钾量的增加呈开口向上的抛物线型变化。交互作用表现为,灌水量与施氮量、磷与钾肥用量之间存在显著交互作用。表明灌水量、氮肥用量过高不利于番茄综合营养品质的提高,合理增施磷肥和钾肥可有效提高番茄营养品质。  相似文献

Occurrence of flavonols in tomatoes and tomato-based products   总被引:9,自引:0,他引:9  
The flavonol contents of 20 varieties of tomato fruit were investigated in relation to variety, size, season, and country of origin. Ten commonly consumed tomato-based food products were also assessed. Free and conjugated flavonols were identified and quantified using reversed-phase HPLC. Ninety-eight percent of flavonols detected in tomatoes were found to occur in the skin. Tomatoes contained, primarily as conjugates, quercetin and kaempferol. The main quercetin conjugate was identified as rutin (quercetin 3-rhamnosylglucoside) by LC-MS. The total flavonol content of the different varieties of tomato that were analyzed varied from 1.3 to 22.2 microgram/g of fresh weight (fw). Smaller cherry tomato fruits originating from warm sunny climates, such as Spain and Israel, were found to contain the highest concentration of flavonols. Among the tomato-based products investigated, tomato juice and tomato purée were rich in flavonols, containing 14-16 microgram/mL and 70 microgram/g fw, respectively. In contrast to fresh tomatoes, most tomato-based products contained significant amounts of free flavonols.  相似文献

Fourteen cultivars of cherry tomatoes and four cultivars of high-pigment tomato hybrids were cultivated in southern Italy, and the red-ripe fruits were analyzed for their content in different classes of antioxidants and for their antioxidant activity. Among the different cultivars, significant differences were found between lycopene, beta-carotene, alpha-tocopherol, vitamin C (ascorbic acid and dehydroascorbic acid), and total phenolic and flavonoid contents. LS203 and Corbus appear to be the cultivars with the highest content of lipophilic and hydrophilic antioxidants among cherry tomatoes, respectively. All cultivars of high-pigment tomato hybrids showed an expected exceptionally high lycopene content. Among them, the highest content of lipophilic and hydrophilic antioxidants was found in cv. HLY 13. Hydrophilic and lipophilic antioxidant activities were both significantly influenced by genotype. Such results highlight an existing unexploited variability in tomato germplasm and stress the need to evaluate the biodiversity and to support conventional breeding programs to improve tomato nutritional value.  相似文献

Composed of a marine plant, Zostera sp., eelgrass slabs are a novel organic substrate for soilless cultures used in tomato production. The benefit of using eelgrass slabs for growing tomatoes was assessed by comparing it with coconut fiber slabs in regard to contamination by Pythium spp. and to the antioxidant properties of tomato fruits. First, tomato root contamination by Pythium spp. was studied by direct plate counting, and a molecular comparison of fungal and oomycete communities was conducted using PCR-DHPLC. Second, the antioxidant properties of tomato fruits were analyzed by measuring total phenol and carotenoid contents and by evaluating radical scavenging activity. Compared to plants grown on coconut fiber slabs, those on eelgrass slabs presented a lower rate of Pythium spp. root contamination. Moreover, culture on eelgrass slabs produced fruits with better radical scavenging activity and higher total phenol content compared to controls. Carotenoid content was not affected by the type of substrate. This study highlights the value of detrital leaves of Zostera sp. as a substrate for soilless culture that reduces root contamination and also promotes the production of tomato fruits with better nutritional value.  相似文献

Tomato (Solanum lycopersicum) plants synthesize nutrients, pigments, and bioactive compounds that benefit nutrition and human health. The nature and concentrations of these compounds are strongly influenced by varietal factors such as size and color as well as by processing. To better understand how these factors affect the concentration of nutrients and bioactive compounds, we analyzed 11 Korean tomato varieties grown under the same greenhouse conditions and 13 processed commercial tomato products for free amino acids and amino acid metabolites by HPLC, for individual phenolics by HPLC-MS, for total phenolics by the Folin-Ciocalteu method, for antioxidative activity by the FRAP and DPPH methods, and for cancer cell-inhibiting effects by the MTT assay. We also determined the protein content of the tomatoes by an automated Kjeldahl method. The results show that there is a broad range of bioactive compounds across tomato varieties and products. Small tomatoes had higher contents of bioactive compounds than the large ones. The content of phenolic compounds of processed products was lower than that of fresh tomatoes. Tomato extracts promoted growth in normal liver (Chang) cells, had little effect in normal lung (Hel299) cells, mildly inhibited growth of lung cancer (A549) cells, and first promoted and then, at higher concentrations, inhibited growth in lymphoma (U937) cells. The relationship of cell growth to measured constituents was not apparent. Dietary and health aspects of the results are discussed.  相似文献

为了探究壳寡糖与油菜素甾醇处理对番茄(Solanum lycopersicum L.)果实产量、感官品质、营养品质和风味品质的影响,本试验设置4个处理:对照组(CK)、壳寡糖处理组(0.5 g·L-1COS)、油菜素甾醇处理组(0.5 g·L-1BR)、复合处理组(0.5 g·L-1COS+0.5 g·L-1BR),对开花结果期的番茄植株进行叶面喷施。结果表明,壳寡糖与油菜素甾醇复合处理可以显著提高番茄产量;促进果实着色和软化;协同促进番茄中番茄红素、总胡萝卜素和维生素C的积累,相比CK分别提高88.3%、76.3%和28.6%。此外,二者复合处理可有效提高番茄中可溶性糖(葡萄糖和果糖)的含量,并降低有机酸(苹果酸和柠檬酸)的水平,从而提高番茄糖酸比。本研究结果为设施栽培下番茄产量和品质的提升提供了理论依据。  相似文献

Buckwheat concentrate reduces serum glucose in streptozotocin-diabetic rats   总被引:17,自引:0,他引:17  
The antihyperglycemic effects of chemically synthesized d-chiro-inositol (d-CI), a component of an insulin mediator, have been demonstrated in rats. Buckwheat contains relatively high levels of d-CI: thus, it has been proposed as a source of d-CI for reducing serum glucose concentrations in diabetics. The present study evaluates the effects of a buckwheat concentrate, containing d-CI, on hyperglycemia and glucose tolerance in streptozotocin (STZ) rats. In fed STZ rats, both doses of the buckwheat concentrate (containing 10 and 20 mg of d-CI/kg of body weight) were effective for lowering serum glucose concentrations by 12-19% at 90 and 120 min after administration. Findings from this study demonstrate that a buckwheat concentrate is an effective source of d-CI for lowering serum glucose concentrations in rats and therefore may be useful in the treatment of diabetes.  相似文献

To improve the nutritional value of energy-dense extruded snacks, corn grits were replaced with tomato paste and/or tomato skin powder at ratios of 5, 10, and 20% and extruded to make expanded snack foodlike products. Using a model digestion system, lycopene bioaccessibility and uptake from the snacks into Caco-2 cells were determined. The digestibility of the starch, the main nutrient component of the snacks, was also investigated. While extrusion cooking reduced the lycopene content of the snacks, the proportion of bioaccessible lycopene increased. Lycopene uptake by the Caco-2 cells from the extruded snacks exceeded that of the control in which the lycopene was not extruded, by 5% (p < 0.05). The digestibility of starch in the snacks varied depending on the type of tomato derivative and its concentration. Optimization of the extrusion cooking process and the ingredients can yield functional extruded snack products that contain bioavailable lycopene.  相似文献

  【目的】  研究外源喷施不同浓度猪血蛋白水解物 (PP)对樱桃番茄植株生长和品质的影响,以期为高产优质樱桃番茄生产提供理论参考。  【方法】  以樱桃番茄品种“盆栽红”为试验材料,采用基质栽培,设置3个PP浓度:0 g/L (CK)、1 g/L (PP1)、2 g/L (PP2),在开花期进行叶面喷施,整个生育期共喷施6次。樱桃番茄在第三穗果实完全成熟后收获,分析外源PP对樱桃番茄植株生长、光合作用、养分吸收以及果实品质的影响。  【结果】  PP1和PP2处理不同程度地增加了番茄地上部、根部以及果实中氮、磷、钾含量,显著提高了叶片叶绿素含量、净光合速率 (Pn)、蒸腾速率 (Tr)和气孔导度 (Gs),植株地上部鲜重比CK处理分别增加了18.2%和40.6%,干重分别增加了42.3%和57.4%,且PP2处理的效果好于PP1处理。与CK处理相比,PP2处理番茄的产量、单果重、横径、纵径和硬度分别增加了37.4%、26.6%、16.3%、10.3%和30.8%,并有效改善了果实色泽,提高了樱桃番茄的外观品质。PP2处理有利于樱桃番茄果实中可溶性糖、可溶性蛋白、抗坏血酸和谷胱甘肽的积累,较CK分别增加了24.2%、25.5%、96.6%和30.9%;番茄果实中的总酚、类黄酮和花色素苷含量分别增加18.7%、33.3%和56.2%,DPPH自由基清除能力和铁还原抗氧化能力分别增加了27.7%和29.4%,显著提高了番茄果实的抗氧化活性。  【结论】  外源喷施2 g/L的猪血蛋白水解物能有效改善番茄植株的养分吸收和光合作用,促进植株生长和番茄品质的提升,是一种提高樱桃番茄产量、改善营养和功能性品质的高效有机措施。  相似文献

The reaction kinetics of two heat damage indices, HMF and furosine, were examined in four tomato products with different dry matter contents (10.2, 25.5, 28.6, and 34.5%) over a temperature-time range of 80-120 degrees C and 0-255 min. The reactions followed pseudo-zero order kinetics. E(a) and z-value were, respectively, 139. 9 kJ/mol and 19.2 degrees C for HMF, and 93.9 kJ/mol and 28.4 degrees C for furosine. The analyses of both indices in several samples of commercial and industrial tomato products showed very low levels of HMF (from 1 to 42 ppm) and a lack of correlation between HMF and furosine mainly because of the different evolution of the two indices during storage. The HMF level of a tomato paste sample stored at 25 degrees C decreased from 609 to 17 ppm after 98 days, while furosine increased from 458 to 550 mg/100 g of protein.  相似文献

以辽园多丽和樱桃番茄红玉为试材,采用叶面喷施磷酸二氢钾、葡萄糖及其两者的混合液,研究叶面喷肥对两个品种番茄光合速率及蔗糖代谢的影响。结果表明:叶面喷肥可明显提高番茄叶片中叶绿素的含量及叶片的净光合速率。通过叶面喷肥处理,提高了2个品种番茄果实内果糖和葡萄糖的含量,提高了果实中酸性转化酶和中性转化酶的活力水平,蔗糖合成酶(SS)和蔗糖磷酸合成酶(SPS)活力也得到明显提高。以叶面喷施磷酸二氢钾及其与葡萄糖两者的混合液效果较好,单独喷施葡萄糖效果稍差。表明在叶面喷施葡萄糖、磷酸二氢钾和两者的混合液条件下,果实是通过提高4种酶的活力来提高库强度的。果实库强度增加的同时,相应地促进了同化产物的运转和干物质的积累。  相似文献

The aim of this study was to investigate the effect of different types of tomato processing on contents of lycopene, beta-carotene, and alpha-tocopherol. Samples of tomato sauce, tomato soup, baked tomato slices, and tomato juice were taken at different times of heating, respectively, after each step of production. HPLC was used to analyze contents of carotenoids and vitamin E. Due to the loss of water during thermal processing, contents of lycopene, beta-carotene, and alpha-tocopherol on a wet weight basis increased. On a dry weight basis, contents of lycopene increased or decreased depending on the origin of the tomatoes used, whereas the beta-carotene contents decreased or were quite stable. In contrast to lycopene, beta-carotene isomerized due to thermal processing. The alpha-tocopherol contents significantly rose during short-term heating. The increase was not caused by release of alpha-tocopherol from the seeds containing predominantly gamma-tocopherol and accounting for 2% of total alpha-tocopherol content only.  相似文献

Some parameters involved in cell neutrality (inorganic solute, cation‐anion balance, proline and organic acid contents linked to oxidative respiration, and PEPCase activity) were determined in salinized plant leaves and leaf calli from two tomato species, the wilty mutant Lycopersicon esculentum cv flacca, and the wild relative L. peruvianum. Callus sensitivity was associated to membrane integrity and cell neutrality; while whole plant sensitivity was linked to nutritional unbalance and energy supply, both factors affecting the maintenance of the cell neutrality by means of ion translocation/compartimentalization.  相似文献

A methodology for flavor and composition assessment of processed tomato juice samples was developed using a wide range of commercial processing tomato varieties (Lycopersicon esculentum) grown in Spain and the United States. Fruitiness intensity was found by a trained panel to best describe overall tomato flavor. For two consecutive years, fruitiness intensity was significantly dependent on growing location and variety, and it was consistently linked to increased levels of glucose and reducing sugars and decreased glutamic acid content. Using the same procedure on a population of 176 breeding lines derived from the wild species of Lycopersicon pimpinellifolium, it was shown that tomato fruitiness intensity was significantly correlated to reducing sugars/glutamic acid ratio and glucose and glutamic acid contents. The definition of markers for tomato flavor of processed juice can provide the tomato breeder and processor with reliable analytical tools that can be applied in a straightforward way for the identification of raw materials that can be processed into juice with predictably high or low fruitiness.  相似文献

[目的]了解有机生态型蔬菜栽培基质对番茄生长发育及营养品质的影响,为蔬菜废弃物微生物发酵物在生产上的推广应用提供科学依据。[方法]采用自然条件下室外堆肥、基质研制及温室盆栽试验进行分析研究。[结果]有机生态型基质各配方处理对番茄的株高、展幅、主茎粗、结果数、产量均有明显的促进作用,C处理即配方为蔬菜废弃物∶玉米秸秆∶牛粪∶发酵菌剂,配比为100∶4∶2∶0.25的处理,其番茄的产量较对照增长了97%,该处理番茄的干物质、有机酸、可溶性糖、维生素C等营养品质指标,与对照相比分别增加了41.9%,139.6%,36.8%和18.7%,特别是该处理番茄的可溶性固形物含量比对照增加了57.1%。各配方处理番茄的亚硝酸盐、重金属等有害残留均低于对照,符合国家相关标准规定。[结论]有机生态型基质各配方处理对番茄的生长发育和营养品质均有一定的促进作用。  相似文献
