Two wild (Dioscorea polygonoides and Rajana cordata) and seven cultivated varieties of Jamaican yams (Dioscorea spp.) were analyzed for their proximate composition and the levels of antinutritional factors. The protein level range was 47.8 ± 2.6 to 88.0 ± 2.5 g/kg dry weight. The lowest level was seen in D. cayenensis. The range for the dietary fiber content in the tubers was 16.3 ± 0.7 to 63.5 ± 0.4 g/kg dry weight. The wild yam varieties recorded higher levels. Saponins level was < 600 mg/kg dry weight in all the tubers analyzed except for bitter yam (2962.5 ± 60.5 mg/kg dry weight). Total phenol content ranged from 1.3 ± 0.1 to 79.3 ± 6.1 g/kg while total condensed tannin content ranged from 0.1 ± 0.0 to 26.7 ± 3.8 g/kg dry weight. Samples that showed high levels of phenols also had high levels of condensed tannins. All the samples analyzed contained low levels of lectins and no alkaloids were detected. The levels of antinutritional factors did not clearly delineate the wild varieties from the edible varieties.  相似文献

1979~1984年,在黑龙江省北部黑土地区气象条件、生产水平和栽培条件下,通过田间试验,研究了整薯播种对马铃薯生育和产量的影响。结果表明:整薯播种与传统习惯的切块播种相比,6年期间平产出现频率为2次,一般年份整薯播种比切块播种增产9~12%,在春旱严重的1980年,整薯播种表现出非常突出的抗旱保苗效果。在群体叶面积发展进程上,整薯播种表现早发早衰,切块播种晚发晚表,一般年份光合势前者比后者高9.6%,春旱严重的1980年高82.8%。块茎商品率以112.5克为准时,6年平均整薯播种为74.1%,切块播种为80.0%,两者相差5.9%;以50克为准时,整薯播种为97.3%,切块播种为98.2%,两者相差0.9%。  相似文献

The effects of various home cooking methods on the proximate composition of four potato varieties were investigated. The results revealed significant increases in the dry matter content of tubers during oven-baking and microwave cooking. With one exception, cooking unpeeled tubers in boiling water did not significantly alter their proximate composition. Boiling peeled tubers resulted in a significant decrease in the total ash content. Except for one variety, there was a significant decrease in crude fiber in boiled peeled and oven-baked potatoes. Summary The response of several potato cultivars to salinity levels of 20.5, 34.2 and 51.3 mM NaCl was investigated. Salinity tended to lower the water and the osmotic potentials of leaves and tubers while increasing the content of total soluble solids and of proline; it also increased the content of dry matter in the tubers and reduced tuber yields. Susceptibility to salinity was described by the relative loss of tuber dry weight. ‘Blanka’ tolerated the lowest NaCl level (20.5 mM) and exhibited moderate tolerance to higher levels when exposed to salinity stress for 37 days.before harvest, but was susceptible when exposed to the higher levels for 63 days. Cv. Alpha showed moderate tolerance, loosing up to 15% of tuber dry weight when exposed to salinity levels of 20.5 and 34.2 mM NaCl. Summary We investigated the changes in the content of L-ascorbic acid (L-AA), glucose, fructose, surose and total glycoalkaloids (TGA) during storage of potatoes, cv. Bintje, for 12 weeks at 7,16 and 28°C. The initial amount of L-AA was 8.2 mg/100g fresh weight; after 12 weeks' storage at 7°C it had decreased, while at 16 and 28°C it had increased. The sugar content went up most in potatoes stored at 28°C, but remained below the level at which potatoes taste sweet. The sugar content rose slightly at 16°C, while it decreased in tubers stored at 7°C. The initial TGA content, in equivalent amounts of α-solanine, was 3.6 mg/100 g fresh weight; after 12 weeks' storage it had decreased slightly at all three storage temperatures.  相似文献

Potato processing in India has shown a tremendous growth in the recent past, creating a proportionate increase in demand for processing quality potatoes. Reliable annual demand estimates of processing quality potato tubers in India were not available; hence, the current study was undertaken to provide such estimates. The study was based on a survey of 442 households in the state Maharashtra in India, which was regarded to be representative for India in the consumption of processed potato products. The annual expenditure on potato products during 2006–2007 in Maharashtra was estimated to be INR 5,254 million (€ 93.82 million), which was equivalent to 28,148 Mg of physical processed potato products and 83,333 Mg of processing quality potato tubers (0.38% of national potato production during 2006–2007, i.e. 22.09 million Mg). When the estimates were generalised to a national level, the requirement of processing-quality potato tubers in 2006–2007 was equal to 4.04% of national potato production. The forecasted annual demand of potato products in Maharashtra during 2011–2012 was 75,375 Mg and the corresponding demand of processing quality potato tubers was 230,760 Mg (0.75% of the estimated national potato production during 2011–2012, i.e. 30.89 million Mg). When generalised at national level, the demand of processing quality potato tubers during 2011–2012 was found to be 8% of the estimated national potato production.  相似文献

Summary The glycoalkaloid content in 18 potato varieties grown in Oman was measured by HPLC using peel and flesh tissues. The total glycoalkaloid content of the tubers was found to be variety dependent and varied greatly between the 18 varieties. The total glycoalkaloid in the tubers of seven varieties was within the safe limit of ≤200 mg kg− 1 FW recommended for food safety, whereas the remaining 11 varieties exceeded this upper limit. The principal glycoalkaloids α-chaconine and σ-solanine were present in higher concentration in the peel than in the flesh of all varieties with the former being the principal alkaloid in the peel. The flesh of all of the 18 potato varieties contained total glycoalkaloid levels lower than the upper safety limit. The leaves of the 18 potato varieties were also analyzed for glycoalkaloids. The levels of glycoalkaloids in expanding leaves were higher than that of expanded leaves with the exception of six varieties. The principal glycoalkaloid in expanding and expanded leaves was α-chaconine. No correlation was observed between the glycoalkaloids levels of in the leaves and tubers.  相似文献

The International Potato Center (CIP) and collaborating institutions implemented an intensive research programme over a period of 25–30 years on the use of botanical seed of potato as an alternative way of growing a potato crop. The use of botanical or ‘true’ potato seed (TPS) had many advantages over the use of seed tubers. Potentially, the use of TPS was especially attractive for small-scale farmers in developing countries. The difference of using TPS as compared to using seed tubers meant in many respects the development of a new crop–commodity chain, requiring research on breeding, seed production, agronomy and marketing aspects. This research made it possible to produce potatoes from TPS at commercial scale: it removed a number of important constraints in the uniformity and earliness of the TPS varieties and in seed physiology. Experimentation and adoption by farmers in a wide range of countries showed that the technological advantages of using TPS were only translating in economical benefits as compared to tuber seed when the last one was costly or not available. Since the economic performance of seed tubers is likely to continue to fluctuate, TPS remains an interesting alternative. Study of the use of TPS in various countries could contribute to better understanding of factors that promote or inhibit crop technology innovation. The article gives an overview of the various areas of TPS research in CIP and presents information on the application of TPS technology in several developing countries.  相似文献

Since no attempt has been made so far in India to determine isopropyl N-(3-chlorophenyl) carbamate (CIPC) residues in potatoes, it became necessary to determine its residues in potatoes which are being used for table and processing purposes. Using high-performance liquid chromatography, CIPC residues were determined in peels, peeled tubers and unpeeled tubers periodically during storage at 10–12 °C in commercial cold stores. The highest concentration of CIPC found in potato peels was 20.17 mg/kg fresh wt, whereas in unpeeled and peeled tubers the residue levels were very low ranging from 0.29 to 1.13 and 0.05 to 0.24 mg/kg, respectively. However, all residue levels observed were within the maximum residue level prescribed by the US Environmental Protection Agency. The experiments done to determine the dispersal and concentration of CIPC applied as an aerosol fog with respect to location and time showed that the distribution of CIPC within the cold store was uneven leading to large variations in residue levels in samples drawn from different parts of the store.  相似文献

The tubers of 14 potato varieties were analysed for glycoalkaloids. The level of glycoalkaloids in tubers of all the varieties analysed are within the safe limits for human consumption. The peels of tuber contained about 60–70% of the total glycoalkaloids present in the whole tuber. The levels of glycoalkaloids in leaves and tubers were correlated (r=0.865). There was a significant increase in the content of glycoalkaloids in peels of tubers exposed to sunlight. Glycoalkaloid contents increased at the rate of 1.9mg/100g fresh weight per day in peels of Kufri Jyoti tubers exposed to diffused sunlight.  相似文献

Growth and Tuberization of Hydroponically Grown Potatoes   总被引:1,自引:0,他引:1  
Three hydroponic systems (aeroponics, aerohydroponics, and deep-water culture) were compared for the production of potato (Solanum tuberosum) seed tubers. Aerohydroponics was designed to improve the root zone environment of aeroponics by maintaining root contact with nutrient solution in the lower part of the beds, while intermittently spraying roots in the upper part. Root vitality, shoot fresh and dry weight, and total leaf area were significantly highest when cv. Superior, a medium early-maturing cultivar, was grown in the aeroponic system. This better plant growth in the aeroponic system was accompanied by rapid changes of solution pH and EC, and early tuberization. However, with cv. Atlantic, a mid-late maturing cultivar, there were no significant differences in shoot weight and leaf area among the hydroponic systems. The first tuberization was observed in aeroponics on 26–30 and 43–53 days after transplanting for cvs Superior and Atlantic, respectively. Tuberization in aerohydroponics and deep-water culture system occurred about 3–4 and 6–8 days later, respectively. The number of tubers produced was greatest in the deep-water culture system, but the total tuber weight per plant was the least in this system. For cv. Atlantic, the number of tubers <30 g weight was higher in aerohydroponics than in aeroponics, whereas there was no difference in the number of tubers >30 g between aerohydroponics and aeroponics. For cv. Superior, there was no difference in the size distribution of tubers between the two aeroponic systems. It could be concluded that deep-water culture system could be used to produce many small tubers (1–5 g) for plant propagation. However, the reduced number of large tubers above 5 g weight in the deep-water culture system, may favor use of either aeroponics or aerohydroponics. These two systems produced a similar number of tubers in each size group for the medium-early season cv. Superior, whereas aerohydroponics produced more tubers than aeroponics for the mid-late cultivar Atlantic.  相似文献

本试验采用高淀粉品种晋薯2号、中淀粉品种内薯3号、低淀粉品种紫花白为材料,从播种后至块茎形成期,对种薯中的干物质、淀粉、氮、磷向新生器官的转移进行了研究。其结果表明:出苗前种薯的干物质和淀粉向新生器官转移量和转移速度与种薯淀粉含量成正相关;出苗后各品种转移速度加快,尤其低淀粉品种更快;至块茎形成期,各品种干物质转移率达到80%~83%,品种间差异不大。各品种种薯内氮、磷向新生器官转移的量和速度与种薯淀粉含量亦成正相关;至块茎形成期,各品种氮素的转移率达81.8%~88.1%,磷素的转移率达75%~81.2%。各品种氮素的转移率均高于磷素的转移率。  相似文献

Potato stolbur is a phytoplasmal disease that seriously affects yield and tuber quality in South Eastern Europe, Russia and the Mediterranean areas. In 2007 and 2008, field experiments were carried out to determine stolbur resistance of processing potato cultivars at Sannicolau Mare (Romania) by determining consistency and concentration of reducing sugars (fructose and glucose), sucrose and phytoplasmas in potato tubers. In both years, non-symptomatic potato tubers showed sucrose levels in the range of 3,000 mg kg−1 fresh weight (FW). In contrast, sucrose concentrations were up to 11,820 mg kg−1 FW in 2007 and 19,560 mg kg−1 FW in 2008 in tubers showing severe symptoms. These high values severely affect suitability of tubers for processing as sucrose serves as substrate for the formation of reducing sugars that are the limiting factor in fried potato production for Maillard-related discolouration. The cultivars examined differed considerably in susceptibility to stolbur disease. Whereas cvs. ‘Courage’ and ‘Lady Rosetta’ showed high numbers of diseased tubers and high sucrose concentrations, ‘Lady Claire’ had a lower incidence of symptomatic tubers and lower sucrose concentrations. However, fully resistant cultivars were not observed. Across all cultivars examined, phytoplasmal concentration was significantly higher in symptomatic tubers than in non-symptomatic ones.  相似文献

Earlier harvest of potatoes (Solanum tuberosum L.) can be achieved by different pretreatments of the seed tubers. In factorial field trials in 2008–2010, two different pre-sprouting methods were evaluated: conventional pre-sprouting of tubers and pre-sprouting of tubers with stimulation of adventitious root formation (PR). The results were compared with those for untreated seed tubers stored at 4 °C until planting (control). One variety was included in three trials, and two varieties were included in one trial. The new PR method was intended to give faster development and tuber initiation than conventional pre-sprouting, which can be of value when the growing season is restricted or when early harvest is important. Plant emergence, leaf necrosis (as a measure of maturity) and incidence of late blight were assessed during the growing season. After harvest, tuber fresh weight, size and density were assessed. It was found that pre-sprouting treatments gave on average 7 days earlier emergence compared with the control. Necrosis began earlier in pre-sprouted treatments in all cases except for the late variety Sarpo Mira. In 2008 and 2009 potato late blight struck late, after onset of senescence, but in 2010 it struck earlier and the pre-sprouted treatments proved more susceptible than the control. Total tuber yield was 7–24% higher on average in all pre-sprouted treatments in the different field trials. Tests on time of harvest showed that the advantage for the pre-sprouting treatments was maintained during the season, but the difference with the control decreased with time. When the different pre-sprouted treatments were compared, the new PR method proved to be not better than conventional pre-sprouting.  相似文献

Fungi of the genusFusarium Link isolated in Perú from potatoes (Solanum tuberosum L. subsp.andigena Juz. & Buk.) affected by: i) wilt, ii) dry rot of stored tubers, iii) secondary rot in tubers affected by “cork” disease (potato mop-top virus?), caused dry rot when inoculated to tubers of Renaacimiento variety. The identification of some of theseFusaria suggests thatFusarium solani Snyder & Hansen is associated with wilt and dry rot, andFusarium oxysporum Snyder & Hansen with rot secondary to cork disease. Tubers of eight potato varieties inoculated with fourFusaria representative of those isolated showed a great range in levels of susceptibility to colonization by theseFusaria, Sapa being the most susceptible variety, and Mantaro appearing to be the most resistant. These results suggest that useful levels of resistance toFusarium tuber rot are available in the Peruvian germ-plasm.  相似文献

Marketplace preference for lower pesticide residues in foods has led to research to reduce the residue of chlorpropham (isopropyl N-3-chlorophenyl carbamate; CIPC), a postharvest-applied sprout inhibitor which is widely used around the globe to prevent sprouting of stored potatoes (Solanum tuberosum L.). Ethylene gas, an effective, safe and non-toxic sprout inhibitor used in several countries, sometimes has negative effects on the colour of processed potato products when used alone. Trials were conducted over 3 years using cv. Shepody (French fry) and cv. NorValley (potato chips/crisps) to determine whether a combination of these two sprout inhibitors, at reduced dosages, could inhibit sprouting while maintaining good processing colour. CIPC applied at 0, 0.1, 0.25 and 1.0 times the recommended dosage was combined with 4 μll−1 of ethylene gas applied or no ethylene at all (0 ethylene), for 1 day in 4 days, for 1 day in 2 days or continuously, in a factorial design. Sprout inhibition in both cultivars was excellent at all levels of CIPC application except the 0 rate. In both cultivars, sprouting was inhibited by the continuous ethylene treatment. However, all levels of ethylene exposure except the 0 rate negatively affected processing colour in both cultivars. The darkening was dose dependent, whereby the colour was darkest in continuous ethylene and was less affected by the intermittent exposures. In continuous ethylene, the colour was progressively lighter during storage after initial darkening. Shepody tubers appeared to be more sensitive to ethylene than the NorValley tubers. In Shepody only, colour in the ethylene of 1 day in 4 days treatments was progressively darker with increasing time in storage.  相似文献

Purple- and red-fleshed potatoes (Solanum tuberosum L.) were evaluated for their total anthocyanin (ACY), total phenolic (PHEN), and antioxidant capacity. The ACY and PHEN compounds were distributed throughout the tubers; however, a higher concentration was found at the stem-end than the bud-end. Although ACY and PHEN concentrations in potato peel were 0.9-to 1.6-fold higher than in potato flesh, overall contribution of the peel to ACY and PHEN contents of a potato slice was ~20%. These observations differ from the widespread idea that phytonutrients are mostly accumulated in the peel of tubers. The ACY and PHEN contents of different purple- and red-fleshed potato genotypes ranged from 11 to 174 mg cyanidin-3-glucoside/100 g fresh weight and from 76 to 181 mg chlorogenic acid/100 g fresh weight, respectively, and were genotype and location dependent. High positive correlations between antioxidant capacity and ACY and PHEN suggest that these compounds are mainly responsible for the antioxidant capacity. These results provide useful and important information for potato breeders and researchers in order to increase the antioxidant capacity and functional value of purple- and red-fleshed potatoes for the food and nutraceutical industries.  相似文献

The variability of three well characterized proteinase inhibitors, Inhibitor I, molecular weight 39,000, Inhibitor II, molecular weight 21,000, and Carboxypeptidase Inhibitor, molecular weight 4,100, were determined in apical cortical tissues of individual potato tubers of the Russet Burbank variety. The three inhibitors varied within ± 20% among sixty-five tubers and cumulatively represented about 7% of the total soluble proteins. The inhibitors were highly variable among tubers of 106 clones from randomly chosen varieties. Inhibitor I varied about twelve-fold (60 to 745 μg/ml juice), and Inhibitor II varied about seven-fold (158 to 1,025 μg/ml juice). Carboxypeptidase Inhibitor varied from as low as zero (seven varieties) to over 850 μg/ml tuber juice. With 80 tubers from fourteen varieties of potatoes, a positivecorrelation was found between the concentrations of Inhibitor I and Inhibitor II and total soluble protein. Carboxypeptidase Inhibitor did not correlate well with total soluble protein. The positive correlations of Inhibitors I and II (a correlation coefficient of 0.70) with total soluble protein indicated that the proteinase inhibitors may be excellent markers for genetic studies for selecting high protein potato tuber varieties.  相似文献

The factors affecting potato tuber weight loss were studied by suspending individual tubers of Kennebec, Red Pontiac, and Norgold Russet potatoes in chambers where temperature, relative humidity, and air flow past the tubers could be controlled. The results of a regression analysis indicated that the age of the tubers closely followed by temperature was most highly correlated to weight loss. Tuber weight and relative humidity were next and about equally correlated with weight loss. Air velocity had the lowest correlation coefficient Prediction equations for predicting the weight loss of the potato tubers as a function of the various environmental and potato tuber variables were developed from a step-wise regression analysis program. The standard error for these regression equations was about ±1.5% weight loss from the predicted value The weight loss of the tubers in this experiment are likely higher than bulk stored potatoes because of the greater surface area exposed to air flow. Also, other than temperature, the other variables (air velocity, relative humidity, and potato weight) were relatively uncontrolled and therefore had high variations. A plot of weight loss versus time indicates a non-linear response with greater variation as time increases.  相似文献

Summary A bioassay technique is described for assessing growth-regulatory activities of volatile compounds in the potato. Excised potato shoot-tips (3 mm) were cultured aseptically in an aqueous medium in the dark at 25°C. After 7–12 days in culture, growth rates were measured by the increase in length of the treated shoot-tips. The addition of low concentrations (1 μmol/l) of gibberellic acid (GA3) and kinetin to the culture medium enhanced shoot growth. Known sprout suppressants inhibited growth of shoots in the bioassay. Of those tested 1,4-dimethylnaphthalene was found to be the most potent. The effectiveness of these known suppressants of sprout growth of whole potato tubers in inhibiting growth in the bioassay is presented as evidence of the validity of using this bioassay to detect unknown growth inhibitory volatile compounds evolved by stored potatoes.  相似文献
