Trimethylamine-N-oxide (TMAO) degrades to dimethylamine (DMA) and formaldehyde, which cause a decline in fish quality. Suppression of DMA formation in frozen surimi was investigated using croaker, lizardfish, and walleye pollock. The leaching process in surimi processing was shown to reduce not only the TMAO, iron, and taurine content, but also to reduce unidentified factors that accelerate DMA formation in lizardfish muscle; in contrast, unidentified factors that suppress DMA formation were reduced in croaker and pollock muscle. Sucrose, used as a cryoprotectant, was shown to decrease DMA formation in vitro, likely due to the reduction in freezing-induced concentration of solutes. The effects of pH on DMA formation were different in minced frozen meat among the three species. DMA formation was not observed in croaker when the pH varied between 6 and 8. On the other hand, DMA was elevated in lizardfish under acidic conditions, and DMA formation in pollock was maximal when the pH of the meat was neutral. Thus, the suppression of TMAO degradation by surimi processing results from the removal of TMAO, iron, and reductants from fish meat; sucrose also reduces DMA formation. Furthermore, unidentified factors in croaker, lizardfish, and pollock meat substantially affect DMA formation.  相似文献

Abstract

Biological condition factors and proximate composition of hoki (Macruronus novaezelandaie) white muscle, dark muscle and liver vary considerably between individual fish and with season. Seasonal changes in the gonads and liver were correlated with concomitant changes in proximate composition of white muscle, dark muscle and liver. In white muscle there was an inverse relationship between protein and moisture content, while in dark muscle and the liver the inverse relationship was between lipid and moisture. These seasonal changes in proximate composition can be related to hoki's breeding cycle and have a direct effect on yields, quality and storage stability of products made from hoki.  相似文献

Ecosystem‐based fisheries management requires the development of physical and biological time series that index ocean productivity for stock assessment and recruitment forecasts for commercially important species. As recruitment in marine fish is related to ocean condition, we developed proxies for ocean conditions based on sea surface temperature (SST) and biometric measurements of chum salmon (Oncorhynchus keta) captured in the walleye pollock (Gadus chalcogrammus) fishery in the eastern Bering Sea in three periods (July 16–30, September 1–15 and September 16–30). The main purpose of this paper was to evaluate Pacific salmon (Oncorhynchus spp.) growth as a possible indicator of ocean conditions that, in turn, may affect age‐1 walleye pollock recruitment. Marine growth rates of Pacific salmon are the result of a complex interplay of physical, biological and population‐based factors that fish experience as they range through oceanic habitats. These growth rates can, therefore, be viewed as indicators of recent ocean productivity. Thus, our hypothesis was that estimated intra‐annual growth in body weight of immature and maturing age‐4 male and female chum salmon may be used as a biological indicator of variations in rearing conditions also experienced by age‐0 walleye pollock; consequently, they may be used to predict the recruitment to age‐1 in walleye pollock. Summer SSTs and chum salmon growth at the end of July and September explained the largest amount of variability in walleye pollock recruitment indicating that physical and biological indices of ocean productivity can index fish recruitment.  相似文献

In 2003, the Alaska walleye pollock industry reported product quality issues attributed to an unspecified parasite in fish muscle. Using molecular and histological methods, we identified the parasite in Bering Sea pollock as Ichthyophonus. Infected pollock were identified throughout the study area, and prevalence was greater in adults than in juveniles. This study not only provides the first documented report of Ichthyophonus in any fish species captured in the Bering Sea, but also reveals that the parasite has been present in this region for nearly 20 years and is not a recent introduction. Sequence analysis of 18S rDNA from Ichthyophonus in pollock revealed that consensus sequences were identical to published parasite sequences from Pacific herring and Yukon River Chinook salmon. Results from this study suggest potential for Ichthyophonus exposures from infected pollock via two trophic pathways; feeding on whole fish as prey and scavenging on industry‐discharged offal. Considering the notable Ichthyophonus levels in pollock, the low host specificity of the parasite and the role of this host as a central prey item in the Bering Sea, pollock likely serve as a key Ichthyophonus reservoir for other susceptible hosts in the North Pacific.  相似文献

Walleye pollock Theragra chalcogramma is the most popular fish in Korea, often being used in a variety of food delicacies. However, since 2000, production of walleye pollock from distant-water fishing has been rapidly decreasing, and its domestic production is slowly dying out. Therefore, supply of walleye pollock to the Korean market has become heavily dependent on imports. Based on the supply–demand situation of walleye pollock in the Korean market and analyses of its production and markets, it can be undoubtedly predicted that there is a large potential for consumption of walleye pollock. From past records of walleye pollock consumption, Korea’s potential walleye pollock consumption can be estimated to be around 500,000 tons. However, it seems that the prospect of supplying such a high demand is not very bright.  相似文献

Information on the annual variability in abundance and growth of juvenile groundfish can be useful for predicting fisheries stocks, but is often poorly known owing to difficulties in sampling fish in their first year of life. In the Western Gulf of Alaska (WGoA) and Eastern Bering Sea (EBS) ecosystems, three species of puffin (tufted and horned puffin, Fratercula cirrhata, Fratercula corniculata, and rhinoceros auklet, Cerorhinca monocerata, Alcidae), regularly prey upon (i.e., “sample”) age-0 groundfish, including walleye pollock (Gadus chalcogramma, Gadidae) and Pacific cod (Gadus microcephalus, Gadidae). Here, we test the hypothesis that integrating puffin dietary data with walleye pollock stock assessment data provides information useful for fisheries management, including indices of interannual variation in age-0 abundance and growth. To test this hypothesis, we conducted cross-correlation and regression analyses of puffin-based indices and spawning stock biomass (SSB) for the WGoA and EBS walleye pollock stocks. For the WGoA, SSB leads the abundance of age-0 fish in the puffin diet, indicating that puffins sample the downstream production of the WGoA spawning stock. By contrast, the abundance and growth of age-0 fish sampled by puffins lead SSB for the EBS stock by 1–3 years, indicating that the puffin diet proxies incoming year class strength for this stock. Our study indicates connectivity between the WGoA and EBS walleye pollock stocks. Integration of non-traditional data sources, such as seabird diet data, with stock assessment data appears useful to inform information gaps important for managing US fisheries in the North Pacific.  相似文献

Representative commercial lots of surimi produced from the New Zealand fish species hoki (Macruronus novaezelandiae) and Southern blue whiting (Micromesistius australis) were compared to that of Alaska pollock (Theragra chalcogramma) on the basis of functional properties and composition. Parameters studied included gelling response to preincubation and cooking for various times and to the addition of water and starch as well as frozen stability at -8°C. There were few species-related differences in response to the various treatments, although differences in absolute values of rheological parameters were noted. Surimi from the three species should be interchangeable with few or no modifications needed in the operating procedures of food manufacturers.  相似文献

ABSTRACT

Our objective was to produce a unique feed ingredient from underutilized walleye pollock (Theragra chalcogramma) and pink salmon (Oncorhynchus gorbuscha) testes. Protein content in meals from both species (72% and 80%, respectively) were above the values found in high quality herring meals (~70%), but both were poor in some essential amino acids, e.g., methionine. Additionally, both were good sources of the amino acid taurine (1.7 and 2.2% of meal, respectively). Pollock meal was very rich in phospholipids (82% of total lipids) and in DHA (28 mg/g meal) and EPA (18 mg/g meal), indicating potential as an ingredient in larval starter diets. The purine contents in both pollock and salmon testes meals were more than 10 times the concentrations found in other fish byproducts or commercial fishmeals. The high concentrations of purines found in these testes, especially in the salmon meal, make it an ideal candidate for an immune system stimulant when added to dietary formulations.  相似文献

ABSTRACT:   Purified trimethylamine- N -oxide demethylase (TMAOase)from walleye pollack muscle is a thermostable protein that was notinactivated after heating at 80°C for 30 min.The heated enzyme was electrophoresed in the same manner as fornative enzyme. Circular dichroism (CD) spectra for purified enzymechanged reversibly in the temperature range of 10–80°C.As the enzyme was still active at 80°C, the CD spectralchange did not directly relate to enzyme activity. TMAOase activity inthe myofibrillar fraction decreased sharply above 30°C,but was extracted and recovered from the heated myofibrillar fraction,suggesting that the activity seemed to be interrupted and apparently inactivateddue to the thermal alteration of myofibrillar proteins or some unknownfactors. The complicated profile found in dimethylamine (DMA) formationfrom trimethylamine- N -oxide (TMAO) in walleye pollack muscleduring heating consisted of both enzymic and non-enzymic processes.Most DMA was produced enzymatically below 40°C and interruptedabove 40°C. Therefore, DMA and trimethylamine was formednon-enzymatically at high temperatures regardless of the presenceof native enzyme. A new, simple and easy purification method wasproposed based on the thermostable nature of the enzyme.  相似文献

Myosin was isolated from two types of muscle, ordinary and dark muscles, of three species of fish living in sea water. The compositions of light chains were visualized by sodium dodecylsulfate-polyacrylamide gel electrophoresis (SDS-PAGE), and the mechanochemical activity was examined by in vitro motility and ATPase assays. Ordinary muscle myosin of either species had three species of light chain, whereas dark muscle myosin had another two species of light chain judged by SDS-PAGE. Sliding velocity of ordinary muscle myosin was in the range of 4.92–6.89 μm/S, whereas that of dark muscle myosin was in the range of 3.07–4.25 μm/s. Therefore, ordinary muscle myosin showed 1.26–1.95 times higher sliding velocity than dark muscle myosin in either species. The ratios of Vmax of actin-activated Mg2+-ATPase activity of ordinary to dark muscle myosins were correlated quite well to the ratios of sliding velocity. Activity of ordinary muscle myosin was comparable to that of mammalian fast muscle myosin, but that of dark muscle myosin was twice of that of mammalian slow muscle myosin. These results may reflect the essential role of fish dark muscle myosin always used in slow cruising.  相似文献

In this paper, we examine the structure and change of the walleye pollock industry from a marketing and distribution perspective. Our focus is not only on industrial internationalisation, but also on local industry and community utilisation of walleye pollock. This is a subject of interest because its diverse utilisation has the potential to promote industrial management as well as the livelihood of local communities. We reason that Japan’s weakness in marketing, distribution and price setting of walleye pollock is largely due to its lack of competitiveness in the world market. Given the rapid decline of walleye pollock utilisation by local industry and society, it is of critical importance to take steps towards a long-term solution considering the rapid decline of walleye pollock use by our local industry and society. Our analysis indicates that Japan’s walleye pollock industry is inherently resilient, with diverse commodity chains, business flexibility and traditional food culture. However, as local industry and community have been reducing use of walleye pollock over time, there is a need to restore and reactivate the local society.  相似文献

The southwestern Pacific coast of Hokkaido is the main spawning ground for the Japanese Pacific stock of walleye pollock Theragra chalcogramma. A commercial gillnet fishery targeting spawning adult pollock in this area mainly operates from October to January to coincide with the migration of adult pollock from the feeding ground. Given the results of acoustic surveys, and changes in the proportion of the monthly total catch that was monthly walleye pollock caught by the commercial gillnet fishery, it is thought that the timing of walleye pollock spawning migration to the Donan area varies among years and that the pollock catch of the gillnet fishery clearly reflects changes in pollock abundance in this area. A time series of interannual variability in catch data from 1980 to 2005 suggested that adult pollock migrated and concentrated on their spawning ground later in the 1980s and after 2000 than in the 1990s. Such decadal-scale shifts are presumably caused by climatic changes (e.g., in water temperature) in the Oyashio region. These shifts affect the gillnet fishery through differences in monthly unit prices of pollock and changes in the formation of fishing grounds. These scientific findings can aid the establishment of rules for more efficient walleye pollock resource management under the total allowable catch system.  相似文献

ABSTRACT

Changes in volatile compounds in dark and ordinary muscle of yellowtail during 2 days of refrigerated storage at 5°C were investigated. Twenty-seven compounds were identified in ordinary muscle and 39 in dark muscle during 2 days of storage at 5°C. Thirteen compounds at Day 0 of storage and 29 compounds at Day 2—such as 2,3-pentadione, 1-penten-3-ol, (Z)-2-penten-1-ol, and (E,Z)-2,4-heptadienal—identified in the dark muscle showed significantly higher values compared to ordinary muscle. Levels of thiobarbituric acid-reactive substances (TBARS) in dark muscle were significantly higher than those in ordinary muscle throughout 2 days of storage period, and a significant increase in TBARS occurred in just dark muscle at Day 2 of storage. In ordinary muscle, viable cells remained at the same order of magnitude as their initial values for 2 days. Eight aldehydes in ordinary muscle and 25 volatile compounds in dark muscle increased significantly without microbial action prior to increase in TBARS during short-term cold storage. Principal component analysis of the volatile compounds in dark and ordinary muscle was able to differentiate between different storage time samples of same muscle type as well as different muscle samples of same storage time.  相似文献

Imitation crab meat, first developed in Japan, is very popular in restaurants in Paris, appearing as “surimi” on the menu. Today, more than 300,000 tons of imitation crab meat are produced in modern imitation crab meat plants in North America, Europe, and Russia, and the term “surimi” has gained acceptance internationally. The term “surimi” originally referred to frozen surimi, an intermediate material for fish paste products. Frozen surimi was developed from walleye pollock, in Japan, in 1959, marking the beginning of the use of intermediate material for aquatic food products. As intermediate food materials such as wheat flour and starch paved the way for the modernization of the agricultural food industry and the industrialized production of agricultural food, so the development of frozen surimi made worldwide production of imitation crab meat possible, and paved the way for the modernization of the aquatic food industry and the industrialized production of aquatic food based on the results of chemical and technical research. Two major developments, namely frozen surimi and imitation crab meat, promoted the use of walleye pollock and led to innovation in aquatic food production technology.  相似文献

Acoustic trawl surveys were conducted in 2000 and 2001 in two troughs located off the eastern coast of Kodiak Island in the Gulf of Alaska as part of a multiyear, multidisciplinary experiment to examine the influence of environmental conditions on the spatial distribution of adult and juvenile walleye pollock (Theragra chalcogramma) and capelin (Mallotus villosus). Continuous underway sea surface temperature samples and water column profiles collected in 2000 and 2001 showed the presence of a sharp shelf‐break front in Chiniak Trough and a mid‐trough front in Barnabas Trough. At distances <22 km from shore, the water column was well mixed, whereas a well‐defined mixed layer was present beyond approximately 22 km from shore. Satellite drifter tracks in Barnabas Trough entered along the upstream edge of the trough and appeared to follow the frontal boundary across the middle portion of the trough. A storm in 2001 weakened stratification and cooled surface water temperature by 1.6–2.1°C. Wind mixing associated with the storm event mixed subsurface chlorophyll a to the surface and enhanced nutrients in the surface waters. The storm event revealed spatial partitioning of summer production in Barnabas Trough, with production concentrated in regions inside the mid‐trough front. In contrast, post‐storm summer production was distributed throughout Chiniak Trough. The spatial distribution of walleye pollock and capelin differed and appeared to be related to differences in habitat characteristics. Acoustic survey data identified four acoustic sign types: age‐1 pollock, adult pollock, capelin, capelin–age‐0 pollock mix. The spatial distribution of these four sign types appears to be influenced by the oceanographic and topographic features of the two troughs. Adult pollock were broadly distributed throughout Chiniak Trough, whereas adult pollock were aggregated on the coastal side of the frontal system in Barnabas Trough. In 2000, capelin occurred with age‐0 pollock. In Chiniak Trough, capelin were most abundant along steep topographic gradients at the edges of the trough and in a deep region near Cape Chiniak, whereas the capelin–age‐0 mix (2000) or capelin (2001) concentrations were observed in slope water intrusions over the outer shelf in Barnabas Trough. Results suggest that habitat selection of walleye pollock and capelin are controlled by different processes. Capelin distributions appear to be limited by oceanographic conditions while other factors appear to be more important for pollock.  相似文献

Interannual variability in growth of walleye pollock, Theragra chalcogramma, was examined. Adult walleye pollock were collected from the central Bering Sea (Aleutian Basin) from 1978 to 1999. Average fork lengths were found to be approximately 47 cm during the 1970–80s, this increased to 56 cm in the late 1990s. Age was determined for 4805 individuals using the otolith break and burn method. Ages ranged from 5–23 years and the year classes of 1978 and 1989 were dominant in the 1980s and the 1990s, respectively. Fish had significantly larger length-at-age in the 1990s compared to the 1970–80s, and interannual variability in age–length relationship was clearly observed. Taking into consideration a recent decrease of the walleye pollock biomass in the central Bering Sea, density-dependent growth was supported as one possibility of the growth variability. At the same time, we could not rule out the possibility that oceanographic variability affected the growth of walleye pollock in the area.  相似文献

We review the stock assessment strategies and management procedures for walleye pollock Theragra chalcogramma in Japan. In Japan, walleye pollock is classified into 4 stocks. Because biological data, fishing conditions, etc. are different for each stock, the stocks are assessed by different methods. Harvest strategies aiming at stock recovery are proposed for the Northern Japan Sea stock and the Nemuro Strait stock, which are currently in poor condition. For the Japanese Pacific stock and the Southern Okhotsk Sea stock, which are in good condition, harvest strategies for current fishery operations are proposed. In Japan, fisheries co-management has traditionally been carried out, and in recent years a total catch limitation system called the total allowable catch, a resource recovery plan, and a resource management plan have also been implemented. Although a plan is devised that accounts for the stock conditions of walleye pollock, it is also necessary to consider socioeconomic factors, ecosystem factors, and so on. However, we consider that the main focus of stock management for walleye pollock will still be maintaining fishing pressure at an appropriate level, which includes regulating fish size and price during the fishing season.  相似文献

There was a strong association among concentrations of microzooplankton prey sampled from the walleye pollock, Theragra chalcogramma , larval habitat, gut contents of larvae, and their nutritional condition. Subsequently, hypothesized survival potentials linked to food availability were validated by independently determined mortality rates. We present evidence that a significant number of walleye pollock larvae were starving in 1991 but that fewer were starving in 1992. At some stations where prey levels were anomalously low in 1991, up to 40% of the larvae were in poor condition. There appears to be a 2-week period after first feeding when walleye pollock are vulnerable to starvation.  相似文献

A study of common minke and Bryde's whales was conducted in the western North Pacific in the 2000 and 2001 summer seasons to estimate prey selection of cetaceans as this is an important parameter in ecosystem models. Whale sighting and sampling surveys and prey surveys using quantitative echosounder and mid‐water trawl were carried out concurrently in the study. Biomasses of Japanese anchovy, walleye pollock and krill, which were major prey species of common minke and Bryde's whales, were estimated using an echosounder. The results suggested that common minke whale showed prey selection for Japanese anchovy while they seemed to avoid krill in both the offshore and coastal regions and walleye pollock in the continental shelf region. Selection for shoaling pelagic fish was similar to that in the eastern North Atlantic. Bryde's whale showed selection for Japanese anchovy in August 2000 and July 2001, while it showed prey selection for krill in May and June in 2001.  相似文献

ABSTRACT:   Variations in trawl dimension, bottom contact, and catch with differing warp lengths during walleye pollock surveys conducted by the Fisheries Research Agency were examined. The ratio of warp length to fishing depth (scope ratio) was set at 2.5, 3.0 and 3.5 at depths of 110 m. At a 2.5 scope ratio, the net mouth shape and footgear contact fluctuated, as the trawl door did not contact the bottom. Footgear contact was complete when the scope ratio was 3.0 or more. Walleye pollock, sculpins and flatfishes were the main catch in all tows, and the catch increased with scope ratio. There was no difference in the length frequency of walleye pollock ( n  = 300) captured at 2.5 and 3.0 scope ratio. However, the length frequency at 3.5 was significantly different from that of other scope ratios. These results suggest that at a scope ratio of 3.0 or more, the trawl door will not leave the bottom at any depths. To compliment echo surveys for walleye pollock, a 3.0 scope ratio would be optimal, since the catch data for a 3.5 scope ratio was dissimilar from that of scope ratios.  相似文献
