Wheat has great potential to make inroads into starch markets with the advent of partial waxy and waxy starches of diverse composition and properties. The majority of isolated starch utilized in food applications is chemically modified to improve starch properties according to the intended use. Therefore, it is critical to understand factors that affect wheat starch reactivity. This work investigated the relative reactivities of normal, partial waxy, and waxy wheat starches and their respective A‐ and B‐type starch granule fractions. Native starch isolated from four closely related soft wheat lines (normal, partial waxy, and full waxy) was modified through 1) substitution (propylene oxide analog) and 2) cross‐linking (phosphorus oxychloride) reactions to generate both types of modified starch products for each wheat line. Characterization of the unmodified starch fractions confirmed compositional differences among the cultivars and their respective granule types. In cross‐linking reactions, B‐type granules were slightly more reacted than A‐type granules for all cultivars, while the waxy starch generally exhibited higher reactivity compared with normal and partial waxy starches. For the substituted starches, no differences in reactivity were observed among the cultivars or between the two granule types. 相似文献

In this study, the functional properties of A‐ and B‐type wheat starch granules from two commercial wheat flours were investigated for digestibility in vitro, chemical composition (e.g., amylose, protein, and ash content), gelatinization, retrogradation, and pasting properties. The branch chain length and chain length distribution of these A‐ and B‐type wheat starch granules were also determined using high‐performance anion exchange chromatography (HPAEC). Wheat starches with different granular sizes not only had different degrees of enzymatic hydrolysis and thermal and pasting properties, but also different molecular characteristics. Different amylose content, protein content, and branch chain length of amylopectin in A‐ and B‐type wheat starch granules could also be the major factors besides granular size for different digestibility and other functional properties of starch. The data indicate that different wheat cultivars with different proportion of A‐ and B‐type granular starch could result in different digestibility in wheat products. 相似文献

Eight soft spring wheat (Triticum aestivum L.) genotypes representing the four granule bound starch synthase I (GBSSI) classes were evaluated with respect to flour/starch characteristics and pasting behaviors. Native starch was isolated from genotype straight‐grade flours (94.8–98.1% of starch recovered) to approximate the starch populations of the parent flours. As anticipated, amylose characteristics varied among the genotypes according to GBSSI class and accounted for the primary compositional difference between genotypes. Total (TAM), apparent (AAM), and lipid‐complexed (LAM) amylose contents ranged from 1.0–25.5 g, 0.7–20.4 g, and 0.3–5.6 g/100 g of native starch, respectively, and gradually decreased with the progressive loss of active Wx alleles. In addition, genotype flour total starch (FTS) and A‐type starch granule contents, which ranged from 81.7–87.6 g/100 g of flour (db) and 61.6–76.8 g/100 g of native starch (db), respectively, generally decreased with an increase in waxy character in parallel with amylose characteristics, as likely secondary effects of Wx gene dosage. Though amylose characteristics predominantly accounted for the majority of genotype flour pasting properties, FTS content and ratios of A‐ to B‐type granules also exhibited significant influence. Thus, loss of one or more Wx genes appeared to induce measurable secondary effects on starch characteristics and properties. 相似文献

Granule size distribution of wheat starch is an important characteristic that can influence its chemical composition, which in turn may affect its functionality. The granule size distribution and chemical composition of soft wheat starches were characterized and compared and relationships among those properties were identified. Thirty-four starch samples from 12 soft wheat cultivars grown in the eastern half of the United States were examined. Granule size distribution was characterized using a laser light-scattering technique. Amylose and phospholipid contents were determined using colorimetric procedures. A clear trimodal distribution of granule sizes was shown by 26 out of 34 starch samples: small granules with diameters <2.8 μm, midsize granules with diameters of 2.8–9.9 μm, and large granules with diameters >9.9 μm. Volume% distribution of granules within the three size classes had ranges of 9.7–15.2% (small), 13.4–27.9% (medium), and 57.9–76.9% (large). Highly significant differences were seen among the cultivars for volume% of granules within the ranges of 9.9–18.5 μm and 18.5–42.8 μm. Cultivar specific surface area means also differed. The environment affected granule size distribution, with some cultivars exhibiting more variation than others. Pioneer 2555 was the least variable, whereas Pioneer 2550 and Geneva were the most variable cultivars. Mean total amylose (TAM), apparent amylose (AAM), and lysophospholipid (LPL) values varied significantly among cultivars. TAM was positively correlated with the volume% of granules of 9.9–18.5 μm. LPL was negatively correlated with mean starch granule diameter and positively correlated with specific surface area of granules, indicating smaller granules tended to have higher lipid contents. Results suggest that significant differences exist in granule size distribution of soft wheat starches and affect starch chemical composition. Data also suggest it is possible that lipid is preferentially associated with the biosynthesis of small starch granules. 相似文献

Some mutant wheat lines with low‐amylose content were grown in a field and greenhouse (15 or 20°C) to compare apparent amylose content and starch pasting properties. The apparent amylose content of flour and starch increased and starch pasting parameters as measured by a Rapid Visco Analyser (RVA) changed in the greenhouse (at cool temperatures) during seed maturation. Densitometric analysis of the protein band separated by electrophoresis suggested that the increase in amylose content by cool temperature was related to the amount of Wx‐D1 protein. This data suggests that the Wx‐D1 gene was responsible for these changes. In wheat starch from Tanikei A6099 and Tanikei A6598 at 15°C, the value of final viscosity and total setback was higher than that from the field. In wheat starch from Tanikei A6599‐4 (waxy mutant with stable hot paste viscosity), the peak viscosity temperature was higher and time maintained >80% of the peak was shorter at 15°C than that from the field. Genetic analysis using doubled‐haploid (DH) lines from a combination of Tanikei A6599‐4 and Kanto 118 (low‐amylose line) showed that apparent amylose content increased and the starch pasting curve and properties changed in waxy progenies similar to Tanikei A6599‐4. 相似文献

Starches were isolated from 12 soft wheat (Triticum aestivum L.) cultivars and were characterized for waxy (Wx) allelic expression, thermal pasting characteristics, and starch granule size. Gels were produced from the thermally degraded starches and were evaluated using large deformation rheological measurements. Data were compared with cultivar kernel texture, milling characteristics, starch chemical analyses, and flour pasting characteristics. Larger flour yields were produced from cultivars that had larger starch granules. Flour yield also was correlated with lower amylose content and greater starch content. Harder starch gels were correlated with higher levels of amylose content and softer kernel texture. The cultivar Fillmore, which had a partial waxy mutation at the B locus, produced the highest peak pasting viscosity and the lowest gel hardness. Softer textured wheats had greater lipid‐complexed amylose and starch phosphorus contents and had less total starch content. Among these wheats of the soft market class, softer textured wheats had larger starch granules and harder textured wheats had smaller starch granules. In part, this may explain why soft wheats vary in texture. The smaller granules have larger surface area available for noncovalent bonding with the endosperm protein matrix and they also may pack more efficiently, producing harder endosperm. 相似文献

Physical properties of resistant starch (RS) were examined in a range of barley genotypes to determine the contribution of starch and seed physical characteristics to the RS component. Thirty‐three barley genotypes were studied, which varied significantly in their RS, amylose, and starch contents and grain yield. From 33 genotypes, 13 exhibiting high RS were selected for detailed physicochemical analysis of starch. In high‐RS varieties, granule size and number were unimodal, compared with normal starches from a reference genotype, which showed a bimodal distribution. Principal component analysis (PCA) showed that a higher content of granules <15 µm was positively correlated with RS and amylose content, whereas the proportion of granules 15–45 µm was negatively correlated with the RS and amylose contents. Physical fractionation of starches by centrifugation into different population sizes demonstrated that size alone is not an accurate indicator of the population of A‐type and B‐type granules within a given genotype. PCA also showed that large 15–45 µm granules were positively correlated with seed thickness and that thousand grain weight was positively correlated with seed width. High‐RS and high‐amylose genotypes showed variation in overall yield and starch content, with some genotypes showing yield comparable to the reference genotype. Analysis of amylopectin chain length distribution showed that high amylose or RS content was not associated with a higher proportion of amylopectin long chains when compared with either waxy or reference (normal) barley genotypes. This study highlights useful markers for screening barley genotypes with favorable starch characteristics. 相似文献

Nowadays in Argentina, cookies, crackers, and cakes are made of flour obtained from bread wheat with additives or enzymes that decrease the gluten strength but increase production costs. The present research work aims to study the relationship between flour physicochemical composition (particle size average [PSA], protein, damaged starch [DS], water soluble pentosans [WSP], total pentosans [TP], and gluten), alkaline water retention capacities behavior, solvent retention capacities profile (SRC) and cookie‐making performance in a set of 51 adapted soft wheat lines with diverse origin to identify better flour parameters for predicting cookie quality. Cookie factor (CF) values were 5.06–7.56. High and significant negative correlations between sucrose SRC (–0.68), water SRC (–0.65), carbonate SRC (–0.59), and CF were found, followed by lactic SRC that presented a low negative but significant correlation (r = –0.35). The flour components DS (r = –0.67), WSP (r = –0.49), and TP (r = –0.4) were negatively associated to CF. PSA showed a negative correlation with CF (r = –0.43). Protein and gluten were the flour components that affected cookie hardness, but no significant correlation were found with pentosan or DS content. A prediction equation for CF was developed. Sucrose SRC, PSA, and DS could be used to predict 68% of the variation in cookie diameter. The cluster analysis was conducted to assess differences in flour quality parameters among genotypes based on CF. Clusters 1 and 4 were typified by lower CF (5.70 and 5.23, respectively), higher DS, pentosan content, and SRC values. Dry waxy wheat starch granules were heat‐treated at 120°C for 5 hr, and then shaken vigorously in a biphasic system of oil and water. Non‐heat‐ treated starch remained in the aqueous phase, whereas the heat‐treated starch granules showed a strong oil‐binding ability that was lost by trypsin treatment. This result showed that the starch granule surface protein changed from hydrophilic to hydrophobic due to the heat treatment. The presence of starch granule surface protein was ascertained by staining with fluorescamine and fluorescence microscopic observation. Heat‐treated waxy wheat starch granules were incubated with a 25% KI/10% I2 (w/v) solution, which produced “ghosts” (exterior and interior) structures. The exteriors stained red‐brown, whereas the interiors stained black‐brown. Sonication (20 kHz for 255 sec) followed by centrifugation separated the structures, which were then shaken vigorously in an oil and water system. Only the exterior ghosts exhibited a remarkable emulsification property, which disappeared after trypsin treatment. The ghosts from unheated control granules did not show emulsification. The presence of protein in the exterior ghost fraction was further substantiated by fluorescamine treatment. No protein was detectable in the interior fraction with this dye. From these results, we suggest that the ghost fraction of the waxy wheat starch contained the starch granule surface protein that was made hydrophobic by heat treatment. Also, the nature of the induced emulsification property of the exterior fraction (ghosts) and the oil‐binding ability of the heat‐treated waxy wheat starch granules coincided. Both were due to the hydrophobic nature of the same starch granule surface protein, which showed that the ghosts were the swollen form of the outer region of the waxy starch granule. 相似文献

Twelve hard winter wheat flours with protein contents of 11.8–13.6% (14% mb) were selected to investigate starch properties associated with the crumb grain score of experimentally baked pup‐loaf bread. The 12 flours were classified in four groups depending on the crumb grain scores, which ranged from 1 (questionable‐unsatisfactory) to 4 (satisfactory). Flours in groups 1, 2, 3, and 4 produced breads with pup‐loaf volumes of 910–1,035, 1,000–1,005, 950–1,025, and 955–1,010 cm3, respectively. Starches were isolated by a dough handwashing method and purified by washing to give 75–79% combined yield (dry flour basis) of prime (62–71%) and tailing (7–16%) starches. The prime starch was fractionated further into large A‐granules and small B‐granules by repeated sedimentation in aqueous slurry. All starches were assayed for weight percentage of B‐granules, swelling power (92.5°C), amylose content, and granular size distribution by quantitative digital image analysis. A positive linear correlation was found between the crumb grain scores and the A‐granule sizes (r = 0.65, P < 0.05), and a polynomial relationship (R2 = 0.45, P < 0.05) occurred between the score and the weight percentage of B‐granule starch. The best crumb grain score was obtained when a flour had a weight percentage of B‐granules of 19.8–22.5%, shown by varietal effects. 相似文献

The starch of wheat (Triticum aestivum L.) flour affects food product quality due to the temperature-dependent interactions of starch with water during gelatinization, pasting, and gelation. The objective of this study was to determine the fundamental basis of variation in gelatinization, pasting, and gelation of prime starch derived from seven different wheat cultivars: Kanto 107, which is a partial waxy mutant line, and six near-isogenic lines (NILs) differing in hardness. Complete pasting curves with extended 16-min hold at 93°C were obtained using the Rapid Visco Analyser (RVA). Apparent amylose content ranged from 17.5 to 23.5%; total amylose content ranged from 22.8 to 28.2%. Starches exhibited significant variation in onset of gelatinization. However, none of the parameters measured consistently correlated with onset or other RVA curve parameters that preceded peak paste viscosity. Peak paste viscosity varied from 190 to 323 RVA units (RVU). Higher peak, greater breakdown, lower final viscosity, negative setback, and less total setback were associated with lower apparent and total amylose contents. Each 1% reduction in apparent or total amylose content corresponded to an increase in peak viscosity of about 22 and 25 RVU, respectively, at 12% starch concentration. Of the seven U.S. cultivars, the lower amylose cultivars Penawawa and Klasic were missing the granule-bound starch synthase (GBSS; ADPglucose starch glycosyl transferase, EC 2.4.4.21) protein associated with the Waxy gene locus on chromosome 4A (Wx-B1 locus). Kanto 107 was confirmed as missing both the 7A and 4A waxy proteins (Wx-A1 and Wx-B1 loci). The hardness NIL also were shown to be null at the 4A locus. Apparent and total amylose contents of prime starch generally corresponded well to the number of GBSS proteins; although the hardness NIL tended to have somewhat higher amylose contents than did the other GBSS 4A nulls. We concluded that reduced quantity of starch amylose due to decreased GBSS profoundly affects starch gelatinization, pasting, and gelation properties. 相似文献

Plastids in the coenocytic endosperm of young wheat caryopses were mostly in the form of pleomorphic proplastids with a few of the plastids containing small starch granules. Following cellularization of the coenocytic cytoplasm, the outer one or two endosperm cell layers became meristematic and continued to divide until about 14 days after flowering (DAF). During the first week of endosperm development, newly divided cells had plastids that were pleomorphic in shape, while subaleurone cells interior to the meristematic region contained amyloplasts that contained a single‐size class of starch granules (incipient A‐type starch granules). The pleomorphic plastids exhibited tubular protrusions that extended a considerable distance through the cytoplasm. Amyloplasts in cells interior to the meristematic region did not exhibit protrusions. Both subaleurone and central endosperm cells had amyloplasts that exhibited protrusions at 10–12 DAF, and some of the protrusions contained small starch granules (incipient B‐type starch granules). Protrusions were not observed in endosperm amyloplasts at 14 DAF. Two sizes of starch, large A‐type and smaller B‐type granules were present within the cells, however. Amyloplast protrusions were numerous again at 17 DAF in both subaleurone and central endosperm cells; at 21 DAF, a third size class of small C‐type starch granules was observed in the cytoplasm. Amyloplasts in the endosperm of wheat apparently divided and increased in number through protrusions because binary fission typical of plastid division was never observed. Protrusions were observed in the coenocytic cytoplasm, in dividing cells, in subaleurone and central endosperm cells at 10–12 DAF, and in subaleurone and central endosperm cells at 17 DAF. The results suggest that there are three sizes of starch granules produced at specific times during wheat endosperm development. 相似文献

Flour gluten, pasting, and mixogram characteristics of 12 hard winter wheat cultivars grown in six counties in Kansas were analyzed using the Glutomatic System, a Rapid Visco-Analyser, and MIXSMART computer software, respectively, to investigate their relationships with breadmaking. Gluten contents and hydration amounts had significant correlations with water absorption. In addition, gluten parameters were significantly correlated to kernel hardness. One of the most difficult challenges in mixograph usage is to find the optimum water absorption of a given flour. Flour protein contents (FP) and near-infrared hardness scores or FP and gluten parameters could predict mixograph water absorptions, showing R2 values of 0.842 or 0.814, respectively, by multiple regression analysis. For our set of 72 wheat samples, computer-analyzed mixograph parameters were significantly correlated to conventional parameters. Computer-analyzed mixograph midline peak times and bandwidths at 6 min were highly correlated to conventional mixograph mix times and mixing tolerances, respectively. Flour pasting temperatures complemented FP in predicting loaf volumes. The ratios of FP to pasting temperatures had a significant curvilinear relationship with loaf volumes showing an R2 of 0.725. 相似文献

选用近年来黄淮麦区大面积推广种植的小麦品种和新育成高代品系为材料,采用近红外(NIR)、面筋仪、粉质仪、快速粘度分析仪(RVA)和凝胶色谱(SE-HPLC)方法等对蛋白品质指标及淀粉糊化参数进行分析,分析各品质参数间的关系及其与面包烘焙品质的关系。结果表明,谷蛋白大聚体(GMP)、SDS(十二烷基硫酸钠)-沉降值、湿面筋指数、弱化度与多数蛋白品质指标间存在正向0.01或0.05水平相关,GMP、SDS-沉降值、湿面筋指数、干面筋含量、面粉蛋白含量、麦谷蛋白含量、形成时间、稳定时间均与面包烘焙品质间达0.01水平正相关,湿面筋含量与面包体积和评分间分别达0.01和0.05水平正相关;醇溶蛋白含量及弱化度与面包体积和评分间分别达0.05和0.01水平负相关。吸水率与糊化温度、最终粘度、回生值间达0.01水平负相关,形成时间与峰值粘度和稀澥值间达0.05水平正相关,GMP与糊化温度间达0.05水平负相关。各品质参数对面包体积的作用大小依次为湿面筋指数>弱化度>形成时间>湿面筋含量>糊化温度等,对面包评分的作用大小依次为麦谷蛋白>稳定时间>醇溶蛋白>面粉蛋白含量>吸水率等。小麦品质测试指标间有着广泛的相关性,湿面筋指数、弱化度和麦谷蛋白、稳定时间是反映面包烘焙品质的重要指标;早代可进行GMP或SDS-沉降值测定,中高代可进行面筋仪、粉质仪测定;在品质测试过程中应重视湿面筋指数、弱化度的重要性,小麦粉淀粉品质对面包品质的影响也应引起关注。 相似文献

In search of a way to improve the nutritional profile of noodles, we prepared them with various mixtures of durum wheat flour and isolated plantain starch, and tested their proximal composition. Cooked noodles were assessed for in vitro starch digestibility, indigestible fraction content, and predicted glycemic index. The protein content declined with the addition of plantain starch. Both total starch (TS) level and the content of starch available for digestible enzymes (AS) decreased as the plantain starch level increased, a pattern that may be related to increased starch lixiviation during cooking of noodles containing plantain starch. There was an inverse pattern for resistant starch (RS). RS content in control (durum wheat flour) noodles was ≈50% lower than in the samples containing plantain starch. The soluble indigestible fraction (SIF) content in all samples was higher than the insoluble counterpart (IIF). The total indigestible fraction varied according to the wheat substitution level. Although the hydrolysis index (HI) and predicted glycemic index (pGI) of plantain starch noodles were moderate and decreased as the plantain starch proportion rose. These composite noodles exhibited higher indices than the control sample, a phenomenon that may also be dependent on the product physical structure. Results indicate that in spite of the increased starch digestion rate, plantain starch noodles are a better source of indigestible carbohydrates than pure wheat starch pasta. 本试验以水稻胚乳糖质突变体Sug-11与其野生型对照中花11为材料,利用扫描电镜、激光散射粒度分析仪、差示扫描量热分析仪和X-射线衍射图谱等方法,对两者稻米淀粉粒的形态结构、粒径分布、晶体结构和酶解抗性及其糊化过程中的热力学参数变化进行比较分析,揭示胚乳糖质稻米淀粉的理化特征,为稻米品质改良和功能稻米的开发提供理论依据.结果表明,胚乳糖质突变体Sug-11的稻米淀粉粒径分布呈单峰状正态分布,与野生型对照相比其稻米淀粉平均粒径值(6.48 μm)显著降低,大型淀粉粒(粒径大于8μm)比例(21.63%)显著减少,而小型和中型淀粉粒比例则明显增多,扫描电镜下Sug-11的淀粉粒结构更接近于籽粒灌浆过程胚乳尚未完全充实时的淀粉粒形态结构特点;突变体Sug-11的淀粉粒酶解抗性与野生对照相比显著下降,其抗性淀粉含量的下降幅度接近50%,同时,Sug-11除具有相对较低的淀粉糊化温度外,其淀粉粒糊化过程的热焓值(△H)也显著降低.Sug-11糖质突变体的淀粉晶体类型与野生对照相同(A型淀粉晶体),其淀粉粒的相对结晶度(35.3%)略低于对照,两者间的差异主要表现在诸尖峰的相对强度比值和相对结晶度上,而20°2θ/18°2θ的尖峰相对强度比值则高于其野生对照;糖质突变对稻米淀粉的化学组分(成)、膨胀势和溶解度也产生了十分显著的影响,突变体Sug-11的淀粉溶解度显著高于野生对照,而淀粉膨胀势和表观直链淀粉含量则显著低于野生对照材料. 相似文献

Recently, we reported the development of an enzymatic corn wet‐milling process that reduces or eliminates sulfur dioxide requirements during steeping, considerably reduces steep time, and produces starch yields comparable to that of conventional corn wet‐milling. The best results so far, using the enzymatic corn wet‐milling procedure, were achieved when a particular protease enzyme (bromelain) was used. In this study, pasting properties and surface characteristics of starch obtained from six different enzyme treatments (three glycosidases [β‐glucanase, cellulase, and xylanase] and three proteases [pepsin, acid protease, and bromelain]) using the enzymatic corn wet‐milling procedure were evaluated and compared with those from starch obtained using the conventional corn wet‐milling procedure. Significant effects from enzymatic milling were observed on all the three starch pasting properties (peak, shear thinning, and setback). The setback viscosities of starch from all enzyme treatments were significantly lower compared with those of the control sample, indicating that starch polymers from enzymatic corn wet‐milling do not reassociate to the same extent as with the control. Comparison between bromelain treatment and the control sample showed that starch samples obtained from bromelain treatment are very similar to control starch in water‐binding capacity, molecular breakdown, and time to swell when cooked in water. Significant effects from enzymatic milling were observed on the surface characteristics of starch granules. The glycosidase treatments, especially the β‐glucanase samples, showed holes in the starch granules. No visual differences were observed in starch granules between bromelain and control samples. 相似文献

Starch granule composition and amylopectin structure affect starch digestibility, an important factor influencing wheat grain utilization for human food consumption. Six bread wheat cultivars with four belonging to the Canada Western Red Spring (CWRS) and two Canada Prairie Spring Red (CPSR) market classes were analyzed for the relationship between their grain constituents and in vitro enzymatic hydrolysis of starch. CPSR cultivars had higher starch and amylose concentrations compared with CWRS cultivars, which had a higher protein concentration. Starch granule size distribution did not differ among the genotypes, except AC Foremost, which had significantly (P < 0.05) higher volume percent of B‐type starch granules (≈15%) and lower volume percent of A‐type starch granules (≈9%) compared with other cultivars. Fluorophore‐assisted capillary electrophoresis revealed a lower content of R‐IV (DP 15–18, ≈6%) and a higher content of R‐VII (DP 37–45, ≈7%) chains in the CPSR cultivars compared with the CWRS cultivars. Starch in vitro enzymatic hydrolysis showed that compared with CWRS cultivars, the two CPSR cultivars had reduced amounts of readily digestible starch and higher amounts of slowly digestible starch and resistant starch. Consequently, the two CPSR cultivars also showed lower hydrolysis indexes in grain meal as well as extracted starch. CPSR cultivars, with higher starch and amylose concentrations, as well as a higher content of long chains of amylopectin, showed a reduced starch in vitro enzymatic hydrolysis rate. 相似文献

Pup‐loaf bread was made with 10, 30, and 50% substitution of flour with wheat starch phosphate, a cross‐linked resistant starch (XL‐RS4), while maintaining flour protein level at 11.0% (14% mb) by adding vital wheat gluten. Bread with 30% replacement of flour with laboratory‐prepared XL‐RS4 gave a specific volume of 5.9 cm3/g compared with 6.3 g/cm3 for negative control bread (no added wheat starch), and its crumb was 53% more firm than the control bread after 1 day at 25°C, but 13% more firm after 7 days. Total dietary fiber (TDF) in one‐day‐old bread made with commercial XL‐RS4 at 30% flour substitution increased 3–4% (db) in the control to 19.2% (db) in the test bread, while the sum of slowly digestible starch (SDS) plus resistant starch (RS), determined by a modified Englyst method, increased from 24.3 to 41.8% (db). The reference amount (50 g, as‐is) of that test bread would provide 5.5 g of dietary fiber with 10% fewer calories than control bread. Sugar‐snap cookies were made at 30 and 50% flour replacement with laboratory‐prepared XL‐RS4, potato starch, high‐amylose (70%) corn starch, and commercial heat‐moisture‐treated high‐amylose (70%) corn starch. The shape of cookies was affected by the added starches except for XL‐RS4. The reference amount (30 g, as‐is) of cookies made with commercial XL‐RS4 at 30% flour replacement contained 4.3 g (db) TDF and 3.4 g (db) RS, whereas the negative control contained 0.4 g TDF and 0.6 g RS. The retention of TDF in the baked foods containing added XL‐RS4 was calculated to be >80% for bread and 100% for cookies, while the retention of RS was 35–54% for bread and 106–113% for cookies. 相似文献

Jet milling is a fluid energy impact‐milling technique generally used for the ultrafine reduction of higher value materials. The efficiency of jet milling combined with air classification appears very efficient to separate starch from other wheat flour aggregate components and to produce wheat starch with very low residual protein content. Indeed, residual protein content of the starch‐rich fraction can be reduced to <2% db with a series of successive grinding and air classification operations. Lipid and pentosan contents were also reduced in the starch‐rich fraction. Nevertheless, jet milling cannot eliminate grinding differences observed between different types of wheat. Wheat hardness continues to have an effect on milling and classification yields and on the composition of air classification fractions. To obtain starch‐rich fraction with only 2% protein content, hard wheat flour required a series of at least five grinding steps, whereas only three steps are necessary for soft wheat flour. Under these conditions, hard wheat flours give 24% mass yield with 12% starch damage compared with 39% yield and a low starch damage content (6.4%) for soft wheat flour. These results highlight new prospects for the development of cereal flours, especially soft wheat flours. 相似文献
