Isoproteinous diets containing 1% cholesterol and 10% fibre derived from plant foods namely,peepalbanti (Ficus religiosa),barbanti (Ficus bengalensis),gullar (Ficus glomerata),teent (Capparis decidua) andkhejri beans (Prsopsis cineria) or pure cellulose, were fed to rats for 40 days. Effect of incorporation of these whole plant parts on feed intake, weight gain, feed efficiency ratio (FER), dry matter digestibility (DMD) and true protein digestibility (TPD) in weanling rats was studied. Their inclusion did not affect the weight gain significantly whereas all other parameters were influenced to a varying extent. Foods rich in lignin had relatively lower FER, DMD and TPD whereas cellulose and pectin rich foods had higher DMD and TPD.  相似文献

Nutrient composition of eight commonly consumed spices of South India was analysed. Spices analysed were red chillies (Capsicum annum), black pepper (Piper nigrum), coriander seeds (Coriandrum sativum), cumin seeds (Cuminum cyminum), garlic (Allium sativum), asafoetida (Ferula foetida), dry ginger (Zingiber officinale) and ajowan (Carum copticum). The nutrients analysed were proximate principles, minerals, starch, sugars, dietary fibre components, tannins, phytic acid, enzyme inhibitors and amino acids. Dry ginger, ajowan and asafoetida had high calcium (1.0–1.5%) and iron (54–62 mg/100 g) levels. The tannin content of spices was also high (0.9–1.3% DM). Dietary fibre ranged from 14–53%. Spices had appreciable amounts of essential amino acids like lysine and threonine. A survey revealed the average per capita consumption of spices to be 9.54 g and at that level, the nutrient contribution from spices ranged from 1.2 to 7.9% of an average adult Indian male's requirement for different nutrients.  相似文献

The bile acid binding to undigestible fibre has a significance on bile acids excretion. This was known to result in lowering blood cholesterol (for the use of cholesterol in bile acid formation) as well as reducing the colorectal cancer risk (through decreased formation of secondary bile acids). Compared to the model fibres Solka floc and carboxymethylcelulose (CMC), the investigated fibre fractions of lentils, broad beans and butter beans, were found to bind more cholic acid and chenodeoxycholic acid under conditions simulating the small intestine.  相似文献

Dietary fibers were prepared as alkali- and acid-insoluble fractions with chemical phosphorylation from Tossa jute (Corchorus olitorius), defatted soybean (Glycine max), and Shiitake (Lentinula edodes). The dietary fiber fractions treated with alkaline solution containing sodium metaphosphate had the lower protein content and higher total dietary fiber content than those of the preparations without phosphorylation. Alkaline extraction followed by phosphorylation led to a 1.5-fold increase in the water holding capacity of dietary fiber compared with no phosphorylation, whereas the binding capacity to bile acids of dietary fiber was almost the same. The alkali- and acid-insoluble extraction with phosphorylation provided an efficient preparation of water-insoluble dietary fiber with high-water holding capacity from various food sources.  相似文献

Thirteen non-conventional foods including fruits, leaves and grains consumed in various parts of the Indian subcontinent were analysed for their nutritional value. Khejri beans (Prsopsis cineria), Pinju (Capparis decidua) and Kachri (Cucumis species) contained considerable amounts of protein (15–18%). Kachri was rich in fat (13%). Bhakri (Tribulus terristris), Gullar (Ficus glomerata) and Peehl (Salvadora oleoides) were found to be rich sources of calcium; Gullar contained about 15 times the amount of calcium present in wheat. Phosphorus content of Santhi (Boernavia diffusa), Khejri beans, Bhakri, Pinju and Lehsora (Cordia dichotoma) were noticeable. Zinc was present in high amounts in Peepalbanti (Ficus religiosa) and Gullar; as was iron in Santhi and Bhakri and manganese in Santhi. Besides iron, zinc and calcium, Pinju contained appreciable amounts of -carotene and vitamin C. However, Santhi contained high amounts of oxalic acid.  相似文献

Cassava (Manihot esculenta Crantz) leaves contained a high level of crude protein (29.3–32.4% dry weight) compared to a conventional vegetable,Amaranthus (19.6%). Ash was 4.6–6.4% in cassava leaf samples but 13.1% dry weight inAmaranthus. Dietary fibre was very high in all samples (26.9–39% dry weight) while HCN-potential was low (5.1–12.6 mg/100 g dry weight). Tannin was the highest in IITA red cassava leaves (29.7 mg/g) and the lowest inAmaranthus vegetable. In vitro digestibility was very low in oven dried samples (15.6–22.7%). Blanching increased protein content (exceptAmaranthus) and in vitro protein digestibility but decreased ash, minerals, dietary fibre and tannin, while HCN-potential was unchanged. Grinding reduced both HCN-potential and tannin by 84 and 71% respectively while oven drying only reduced the HCN content marginally. Preference studies showed that the highest percentage of respondents (25.3%) preferredAmaranthus vegetable, followed by Celosia (17.5%), Talinum (12.4%), garden egg (11.5%), with cassava leaves as the least (0.5%). Organoleptic evaluation rated cassava leaf soup inferior toAmaranthus in terms of appearance, colour and texture but equal in terms of taste and flavour and overall acceptability.  相似文献

Nutrient composition of five minor millets produced and consumed in dry land regions and tribal areas of Andhra Pradesh, India, was evaluated. The millets analysed were Italian millet (Setaria Italica), French millet (Panicum miliaceum), Barnyard millet (Echinachloa colona), Kodo millet (Paspalum scrobiculatum) and little millet (Panicum miliare). The nutrients analysed were proximate principles, amino acids, fibre components, calcium, Phosphorus and Iron. Protein and energy were evaluated by true digestability (TD), biological value (BV), net protein utilization (NPU) and digestible energy (DE) in rats. The protein content was higher and lysine content lower, when compared to major millets. Dehusked millets had lower total dietary fibre (TDF) and tannin. The TD of protein ranged between 95.0 to 99.3, whereas the BV was between 48.3 and 56.5. All the millets were poor sources of calcium, phosphorus and iron, with the exception of french millet.  相似文献

The intake of Dietary Fibre (which is defined as the sum of lignin and the polysaccharides not hydrolysed by the endogenous secretions of the human digestive tract) is derived from the plant cell walls in the diet and other non-structural polysaccharides either present naturally in foods, or derived from polysaccharide food additives such as gums or algal polysaccharides. The composition of this complex mixture, its chemical and physical properties, and therefore, the physiological effects associated with its ingestion, will vary according to the foods making up in the diet. While techniques for the measurement and characterisation of dietary fibre still call for a considerable amount of methodological development it is possible to obtain reliable estimates for the major components and the overall composition of these components. These show that in fruits and vegetables the total dietary fibre content (on a fresh weight basis) lies between 2 and 5 g/100 g with peas and beans being an exception in having higher contents. The dietary fibre in cereals varies with the cereal and the reate of extraction used; for example, wholemeal wheat flours contain between 12 and 15 g/100 g whereas white wheat flour (72% extraction) contains between 3 and 4 g/100 g. Wheat bran and related products have much higher contents. The proportion of the dietary fibre present as cellulose does not show great variablility but lignin is extremely variable. Fruits and vegetables contain very small amounts of lignin unless they have lignified seeds or special lignified tissues. The non-cellulosic polysaccharides of fruits and vegetables are characteristically rich in uronic acids (from pectic substances) and arabino-galactans. In cereals β-glucans and arabino-xylans predominate and wheat bran and wholemeal wheat and rye flours are particularly rich in arabino-xylans. The amounds and composition of the dietary fibre in foods commonly forming the diet eaten in the United Kingdom will be reviewed and their contribution to the diet as a whole will be discussed. Changes in the pattern of food consumption in the United Kingdom in the past century will be discussed in relation to the effects that these have had on the consumption of dietary fibre.  相似文献

Values (%) for true digestibility of crude protein and individual amino acids in 20 selected foods were determined by the rat balance (fecal) method. The products were fed as the sole source of protein in diets containing 8% crude protein (N × 6.25). Lowest true protein digestibility values (79–84) were obtained for pinto beans, kidney beans and lentils; intermediate values (89–92) were obtained for chick peas, beef stew, skim milk (over heated), rolled oats, whole wheat cereal, and pea protein concentrate; and highest values (94–100) were obtained for sausage, macaroni-cheese, rice-wheat gluten cereal, skim milk, tuna, soy isolate, peanut butter, chicken frankfurters, beef salami, casein and casein + methionine. In animal foods, peanut butter and soy isolate, the differences between true digestibility of crude protein and most individual amino acids were less than 5%. However, the values for true digestibility of methionine and cystine were up to 44% lower than those of crude protein in pinto beans, kidney beans, lentils, chick peas and pea concentrate. In these legumes, digestibility of crude protein was not a good predictor of digestibility of the limiting amino acids.  相似文献

The chemical composition of different varieties of field beans (Vicia faba L.), cowpeas (Vigna unguiculata), groundnuts (Voandzeia subterranea), and sorghum (Sorghum vulgare) were determined. Nutrients analysed in these materials included amino acids, starch, sugar, fibre, minerals and antinutritional factors. All the materials were further tested in balance trials with rats; true protein digestibility (TD), biological value (BV), net protein utilization (NPU) and digestible energy (DE) were evaluated. Based on the chemical analyses as well as on the biological data, the nutritive value of plant materials between species as well as between varieties within species differed considerably. Therefore, more quality evaluation studies along with plant breeding programmes are needed to select the most promising varieties from the nutritional point of view.  相似文献

Protein, energy and mineral utilization were examined in growing rats fed cooked, dry legume seeds in combination with polished rice. The legumes tested included 3 varieties of common beans, black, white and brown (Phaseolus vulgaris), lentils (Lens esculenta) and peas (Pisum sativum). The rice:legume mixtures (1:1 N ratio) were the only dietary sources of protein, Zn, Fe and Cu. The rice:black bean mixture was also tested at a 4:1 N ratio. Nutrient utilization was studied by balance trials and mineral utilization was further assessed by tissue analyses. True protein digestibility (TD) and energy digestibility of the rice:legume (1:1) mixtures were high. Biological value (BV) varied only little but was lowest in the rice:lentil mixture. The rice:brown bean mixture had the lowest amount of utilizable protein (UP). The (1:1) rice:legume mixtures did not adversely affect Fe status, as measured by liver Fe content and blood hemoglobin and hematocrit, or Cu status, as measured by liver Cu content and plasma ceruloplasmin. However, femur zinc content indicated a sub-optimal Zn status. Increasing the dietary N from rice in combination with black beans resulted in a substantial improvement of BV, NPU and Zn status of the animals but had a negative effect on UP and Fe status of the rats.  相似文献

A cholesterol-free diet containing dried powder of Jew's mellow leaves, persimmon leaves or sweet potato leaves respectively at 5% level as dietary fiber was fed to male Sprague-Dawley rats for about one month. The experiment was conducted twice except for sweet potato leaves. In the groups fed the diet mixed with powders of any of the three different dried green leaves, the hepatic cholesterol concentration significantly decreased. Such lowering was not observed in serum cholesterol concentration compared with the control (cellulose) group. A significant increase in fecal weight was observed in all the groups fed the green leaf samples. All the dried green leaves increased fecal excretion of bile acids per gram or per day compared with the control group in both experiments, but only the dried Jew's mellow leaves showed an increased excretion of neutral sterols. These results suggest that lowering of hepatic cholesterol by powdered green leaves is not necessarily due to the same factor, but to the increased fecal excretion of bile acids due to inhibited enterohepatic circulation in animals given these samples.  相似文献

Dietary fiber and bioactive compounds are widely used as functional ingredients in processed foods. The market in this field is competitive and the development of new types of quality ingredients for the food industry is on the rise. Opuntia ficus-indica (cactus pear) produces edible tender stems (cladodes) and fruits with a high nutritional value in terms of minerals, protein, dietary fiber and phytochemicals; however, around 20% of fresh weight of cladodes and 45% of fresh weight of fruits are by-products. The objective of this study was therefore to determine the nutritional value of by-products obtained from cladodes and fruits from two varieties of Opuntia ficus-indica, examining their dietary fiber and natural antioxidant compound contents in order to obtain quality ingredients for functional foods and increase the added value of these by-products.  相似文献

Locally available cereals and pulses such as rice (Oryza sativa), kangini (Setaria italica), sanwak (Echinochloa frumentacea), green gram (Vigna radiata) and jaggery were used to formulate three weaning foods. Cereal, pulse and jaggery were mixed in the ratio of 70:30:25. Roasting was the main processing technique used in the formulation of these weaning foods. The developed weaning foods had 5.06 to 5.68 g moisture, 10.28 to 13.71 g protein, 2.91 to 3.77 g ash, 1.08 to 1.87 g fat, 14.42 to 14.98 mg iron, 1.03 to 1.27 g crude fibre, and 357 to 374 Kcal. The weaning foods had a nutrient composition within the range prescribed by the Indian Standard Institute for processed weaning foods. The study indicated that the weaning foods obtained from locally available food stuffs have the potential of being produced locally, adaptable for household consumption and can be good substitute for commercial formulae.  相似文献

The effect of processing on chemical composition and protein quality of three legumes was studied. The species analyzed were beans (Phaseolus vulgaris), Tórtola and Coscorrón varieties; lentils (Lens esculenta), Laird variety; and chick peas (Cicer arietinum), California-INIA variety. The legumes were soaked in a solution of Na2 EDTA at 0.03% for 16 h and cooked for a predetermined period for each species. They were dried in a tray drier with cross currents of air flowing at a speed of 10 m/min until the residual mositure content was 8%. The water activity in the resulting products ranged from 0.574 to 0.587, thus completely assurring no microbial activity. No important changes were observed in the legumes protein, fat, or fibre contents after processing. The soaking solution was effective in reducing the phytic acid content from 2.99 to 1.64 mg/100 g in the Tórtola beans, which had the highest acid value prior processing. In all the species the heat treatment reduced the activity of the trypsin inhibitors by at least 50%. Cooking and drying significantly increased protein digestibility in all the legumes studied, with chick peas showing the most dramatic increase: from 54.7% pre-processing to 94.9% post-processing. With regard to Net Protein Ratio (NPR), chick peas had a value of 4.03, followed by Tórtola beans (3.29), Coscorrón (3.09) and lentils (2.61). The NPR value for the casein diet was 4.20.  相似文献

This study compared the levels of antinutritional components and cytotoxic effect of extracts, from tepary (Phaseolus acutifolius) and common (Phaseolus vulgaris) beans. Antinutritional factors were evaluated by determining their effect on the viability of epithelial cells isolated from rat small intestine. The protein and carbohydrates content were similar in all the genotypes studied (20 and 60%, respectively). Common beans presented higher content of trypsin inhibitors, tannins and lectins than tepary beans. There was not a significant correlation between tannins and cooking time. However, water absorption and cooking time correlated significantly (p < 0.05). Considerable variation was observed in lectin activity (1302–18161 Ul/mg) of extracts from different beans. Tannins, lectins, trypsin inhibitors and fat content differed between bean varieties whereas protein content was similar. The percent cellularity on rat epithelial cells was significantly different among protein extracts from different bean cultivars and ranged between 53.5% and 87.4% (p < 0.05). These results suggest that the incorporation of tepary beans in the diet would not alter the current nutritional contribution of common beans or introduce adverse toxic effects. The agronomic characteristics of tepary beans make them attractive for cultivation. However, the harder to cook phenomenon may be a limiting factor that needs further consideration.  相似文献

We studied the potential of an animal model to predict nonheme iron absorption in humans and tested a feasible and easy technique of dosing59Fe to evaluate bioavailability of dietary nonheme iron. Plant diets containing about 20 ppm or 75 ppm iron were the nonheme iron sources with ferrous sulfate (75 ppm) as a reference. Radioiron was administered by (a) gavaging in water, 1 h after a meal; (b) mixing with the meal; and (c) making a slurry with the meal and gavaging. No significant differences were found (P0.05) in59Fe absorption among the three methods of administering radioiron. Absorption of59Fe was similar to apparent iron absorption for all diets tested, whether the animals consumed the same diet as that of the test meal or a different diet. A high correlation (r=0.88) obtained between the apparent iron absorption and59Fe iron absorption for different dosing techniques, indicates that extrinsic iron tag administered by any of these methods is valid to measure nonheme iron absorption. Apparent iron absorption values determined by rats fed 20 ppm or 75 ppm dietary iron from plant sources were similar to reported values for humans. It is concluded that the normal adult rat is an appropriate model to study iron bioavailability of human foods when iron status, maturity, iron intake relative to requirement, and method of measurement are similar to the human situation.  相似文献

The effect of heating and fortification with lysine on the protein quality of five minor millets namely Italian millet (S. Italica), French millet (Panicum miliaceum), Barnyard millet (Echinochloa colona), Kodo millet (Paspalum scrobiculatum) and Little millet (Panicum miliare) was carried out. The N content of the millets ranged from 1.69 to 2.76 per cent. Proximate composition and dietary fibre was estimated. A reduction of 19–25 in TD and increase of 4–18 in BV was observed on auto-claving and both the differences were significant (P<0.05) in all millets. However, heat processing did not have a pronounced effect on DE. Fortification with lysine at 0.6 g/100 DM increased both the BV and NPU. Although both heat processing and lysine fortification improved protein utilisation, the effect of fortification was comparatively more than heating.  相似文献

The seeds ofVigna aconitifolia andVigna vexillata were analysed for proximate composition, minerals, seed protein fractions, amino acids, fatty acids, and antinutritional factors. Both the pulses were found to be rich sources of proteins and minerals like Ca, Mg, Fe, Zn, and Mn.Vigna aconitifolia seeds exhibited fairly high levels of crude lipid. The most limiting essential amino acids in both the pulses were the sulphur-amino acids, cystine, and methionine. Threonine inV. aconitifolia and phenylalanine and tyrosine inV. vexillata occurred in higher quantities when compared with WHO/FAO requirement pattern. Oleic acid and palmitic acid inV. aconitifolia and linoleic acid and palmitic acid inV. vexillata lipids were found to be the predominant fatty acids. The tannin content of both the pulses was negligible compared with the domesticated legumes. The other antinutritional factors like total free phenols, L-DOPA and haemagglutinating activity were also analysed/assayed.  相似文献

Dietary intake of whole-grain foods is associated with a decreased risk of chronic diseases such as diabetes, obesity and heart disease. In addition to dietary fibre, various phytochemicals have been suggested to contribute to the health effects of whole grain products. This review focuses on phenolic compounds in rye (Secale cereale L.), which is one of the major bread grains in Europe. Data on phenolic concentrations in rye grain and foods, their bioavailability to tissues and effects in vivo, and their potential contributions to health are presented. Phenolic compounds in rye, such as phenolic acids, alkylresorcinols and lignans, are concentrated in the outer layers of the grain. Phenolic acids are the major phenolic compounds in whole grain rye (103–300 mg/100 g grain), ferulic acid being the most abundant. Rye lignans are present at concentrations of 2 mg/100 g grain and had been shown to be converted by the intestinal microflora to the mammalian lignans enterodiol and enterolactone in human intervention studies. Alkylresorcinols (36–320 mg/100 g grain), which have been found to be incorporated into human erythrocyte membranes, are of particular interest due to their potential use as biomarkers of the intake of rye and wheat.  相似文献
