In the present study, four high-pressure (HP) treatments (100, 200, 300, and 400 MPa) of 9 min duration were evaluated to assess their effect on the lipid fraction (fat-soluble vitamins and fatty acid profile) of an orange juice-milk and a vegetable beverage. After HP treatment, nonsignificant changes in vitamin D(2) and D(3) contents were observed for both beverages. An increase in vitamin E activity was observed in HP beverages when pressures >100 MPa were applied, mainly due to an increase in α-tocopherol content. Only a small reduction in fat content was found for the orange juice-milk beverage, but no changes were observed for the vegetable beverage. A significant decrease in SFA levels was observed in HP-treated (300-400 MPa) orange juice-milk. With regard to MUFA, a significant increase in oleic acid (C(18:1)) was found in both liquid foods. Nonsignificant differences in the PUFA profiles were observed after HP processing.  相似文献

Twenty-one volatile compounds were identified for the first time by GC-MS in umbu-caja and in camu-camu, plus 30 volatile compounds were identified in ara?a-boi samples. Terpenic compounds predominated among the volatile compounds in these fruit samples, with the major compounds being identified as cis-beta-ocimene and caryophyllene in the northeastern fruit; alpha-pinene and d-limonene were the most abundant volatile compounds in the headspace of the Amazonian fruit camu-camu. Sesquiterpenes were the most abundant compounds in the ara?a-boi sample, with germacrene D presenting a higher relative percentage. The chemical class of esters predominated in the cupua?u sample. Ethyl butyrate and hexanoate were the major compounds in the headspace of this Amazonian fruit.  相似文献

Berries and seeds of two subspecies (ssp. sinensis and mongolica) of sea buckthorn (Hippopha? rhamnoides L.) were compared in terms of triacylglycerols, glycerophospholipids, tocopherols, and tocotrienols. The berries of ssp. mongolica contained less oleic acid (4.6 vs 20.2%, p < 0.001) and more palmitic (33.9 vs 27.4%, p < 0.01) and palmitoleic (32.8 vs 21.9%, p < 0.05) acids in triacylglycerols than those of ssp. sinensis. The proportions of linoleic acid (32.1 vs 22.2%, p < 0.01, in berries; 47.7 vs 42.7%, p < 0.05, in seeds) and palmitic acid (21.1 vs 16.4%, p < 0.001, in berries; 17.0 vs 14.1%, p < 0.05, in seeds) in glycerolphospholipids were higher in ssp. mongolica than in ssp. sinensis, and vice versa with oleic acid (4.3 vs 18.5% in berries, 10.0 vs 22.2% in seeds, p < 0.001). A higher proportion of alpha-linolenic acid was also found in the glycerophospholipids of ssp. sinensis berries (16.2 vs 10.1%, p < 0.001). alpha-, beta-, gamma-, and delta-tocopherols constituted 93-98% of total tocopherols and tocotrienols in seeds, and alpha-tocopherol alone constituted 76-89% in berries. The total contents of tocopherols and tocotrienols varied within the ranges of 84-318 and 56-140 mg kg(-1) in seeds and whole berries, respectively. The seeds of ssp. mongolica were a better source of tocopherols and tocotrienols than those of ssp. sinensis (287 vs 122 mg kg(-1), p < 0.001). The compositional differences between the two subspecies should be considered when the berries are bred and exploited for nutritional purposes.  相似文献

The possible adverse effects on health of diet-derived advanced glycation endproducts (AGEs) and advanced lipoxidation endproducts (ALEs) is of current interest. This study had the objective of determining the effects of the addition of AGE/ALE inhibitors and different types of sugar and cooking oil on Nε-(carboxymethyl)lysine (CML) and Nε-(carboxyethyl)lysine (CEL) formation in model foods (sponge cakes). The cake baked using glucose produced the highest level of CML (2.07±0.24 mmol/mol lysine), whereas the cake baked using fructose produced the highest concentration of CEL (25.1±0.15 mmol/mol lysine). There were no significant differences between CML concentrations formed in the cakes prepared using different types of cooking oil, but significant differences (P<0.001) were observed between the cakes prepared using different proportions of cooking oil. The cakes containing oil generated greater concentrations of CML than sucrose. α-Tocopherol and rutin did not inhibit CML and CEL formation. In contrast, ferulic acid and thiamin, thiamin monophosphate, and thiamin pyrophosphate reduced CML and CEL formation.  相似文献

The fruit of Arazá (Eugenia stipitata McVaugh) native to the Colombian Amazon is considered a potentially economically valuable fruit for the Andean economy due to its novel and unique taste. The fruit has an intense yellow color, but its chemical composition and properties have not been well studied. Here we report the identification and quantitation of carotenoids in the ripe fruit using high performance liquid chromatography (HPLC) with photodiode array detector (PDA) and atmospheric pressure chemical ionization (APcI) mass spectrometry (MS/MS). The qualitative carotenoid profile of the fruit according to maturity stage was also observed. Furthermore, antioxidant activity of the peel and pulp were assessed using the ferric reducing ability of plasma (FRAP), 2,2'-azino-bis(3-ethylbenzothiazoline-6-sulfonic acid) (ABTS), and 1,1-diphenyl-2-picrylhydrazyl (DPPH) methods, in addition to chemical indexes and total phenolic content. Multiple carotenoids were identified in the peel and pulp including four xanthophylls (free and esterified as their mono and diesters) and two carotenes. One of the xanthophylls was tentatively identified as zeinoxanthin, while the others were identified as lutein, zeaxanthin, and β-cryptoxanthin. Carotenes included α-carotene and β-carotene. The total carotenoid content was significantly higher in the peel (2484 ± 421 μg/100 g FW) than in the pulp (806 ± 348 μg/100 g FW) with lutein, β-cryptoxanthin, and zeinoxanthin as the major carotenoid components. The unique carotenoid composition of this fruit can differentiate it from other carotenoid-rich fruits and perhaps be useful in authentication procedures. Overall, results from this study suggest that Colombian Arazá may be a good edible source of carotenoids important in retinal health as well as carotenoids with provitamin A activity. Therefore, Arazá fruit can be used as a nutraceutical ingredient and in production of functional foods in the Colombian diet.  相似文献

The objective of this study was to understand the respective impact of ripening stage, temperature, and irradiance on seasonal variations of tomato fruit quality. During ripening, concentrations in reducing sugars, carotenes, ascorbate, rutin, and caffeic acid derivates increased, whereas those in titratable acidity, chlorophylls, and chlorogenic acid content decreased. Fruit temperature and irradiance affected final fruit composition. Sugars and acids (linked to fruit gustative quality) were not considerably modified, but secondary metabolites with antioxidant properties were very sensitive to fruit environment. Increased fruit irradiance enhanced ascorbate, lycopene, beta-carotene, rutin, and caffeic acid derivate concentrations and the disappearance of oxidized ascorbate and chlorophylls. Increasing the temperature from 21 to 26 degrees C reduced total carotene content without affecting lycopene content. A further temperature increase from 27 to 32 degrees C reduced ascorbate, lycopene, and its precursor's content, but enhanced rutin, caffeic acid derivates, and glucoside contents. The regulation by light and temperature of the biosynthesis pathways of secondary metabolites is discussed.  相似文献

Anthocyanins from blackberries are natural dietary pigments. The aim of this study was to investigate the occurrence of anthocyanins in fruits of wild Norwegian blackberries and three blackberry ( Rubus fruticosus L.) cultivars and to report the complete identification of cyanidin 3-O-β-(6″-(3-hydroxy-3-methylglutaroyl)glucopyranoside), 5. This new pigment is most probably the same pigment that has previously been reported to occur in various blackberry samples as cyanidin 3-dioxalylglucoside. All of the examined blackberry samples contained in similar relative proportions the 3-glucoside (1), 3-rutinoside (2), 3-xyloside (3), and 3-O-β-(6″-malonylglucoside) (4) of cyanidin and 5. The absolute amounts of 1-5 in the wild Norwegian blackberries were 249, 18, 10, 24, and 22 mg of cyanidin 3-glucoside equivalents/100 g of fresh weight, respectively.  相似文献

Ariidae catfish species are numerically abundant along the coast of Brazil. Their benthic habits and broad spectrum diets make them good potential candidates for sub-lethal biomonitoring studies. In this study, we assess the levels of various metal contaminants (Pb, Cd, Hg, Cu and Zn) in the muscle tissues of two Ariidae species, Cathorops spixii and Genidens genidens, from three sites in S?o Paulo State, Southeast Brazil: two polluted sites in the Santos-S?o Vicente estuary and a relatively unpolluted site in the Cananéia estuary. The Zn levels observed in the polluted areas in the Santos-S?o Vicente estuary were similar to those obtained for Ariidae from the reference site in Cananéia. The concentrations of Hg and Cu in the muscle tissue of both fish species were higher in individuals from the Santos-S?o Vicente than those from the Cananéia estuary. Both Ariidae species were observed to accumulate the Cu, Zn and Hg in their tissues; however C. spixii showed a more stable response suggesting its potential utility as a bioindicator species. The Zn and Cu concentrations probably reflect normal levels without a significant influence of anthropogenic contamination. The levels of Cd and Pb in muscle tissue of C. spixii and G. genidens were relatively low, but the PCA indicated the presence of the levels of these metals in the reference area (thereby supporting the need for monitoring in Cananéia estuary). The detection of Hg in fish from Santos-S?o Vicente and from the unpolluted site (Cananéia) is of particular concern as scientists frequently use this area as a reference site for biomonitoring studies on the Southwest coast of Brazil.  相似文献

The physiological significance of 5-(3',4'-dihydroxyphenyl)-γ-valerolactone, an important metabolite derived from the catabolism of flavan-3-ols by gut microbiota, has been often overlooked due to the lack of the commercial standard. In the present work, this metabolite has been chemically synthesized, and its analytical parameters and antioxidant capacity have been determined in comparison to other chemical analogues [isomer 3-(3',4'-dihydroxyphenyl)-δ-valerolactone and γ-valerolactone] and other structurally related compounds [(+)-catechin, (-)-epicatechin, and 3-(3,4-dihydroxyphenyl)-propionic acid]. The synthesized compound was also used to perform a targeted analysis in samples collected during the in vitro fermentation of a grape seed flavan-3-ol extract with human fecal microbiota from three healthy volunteers. The time-course formation of 5-(3',4'-dihydroxyphenyl)-γ-valerolactone revealed large interindividual differences among volunteers, with concentrations ranging from 3.31 to 77.54 μM at 10 h of fermentation. These results are further discussed in view of the scarce reports quantifying 5-(3',4'-dihydroxyphenyl)-γ-valerolactone in in vitro fermentation studies, and pharmacokinetic and intervention studies.  相似文献

1,3-β-Glucans are a class of natural polysaccharides with unique pharmacological properties and the ability to form single- and triple-helical structures that can be formed into resilient gels with the application of heat and humidity. The pharmacological capabilities of 1,3-β-glucans include the impartation of tumor inhibition, resistance to infectious disease, and improvements in wound healing. Curdlan is a linear 1,3-β-glucan that has been used extensively to study the nature of these helical structures and gels, and Curdlan sulfates have found ongoing application in the inhibition of HIV infection. 1,3-β-Glucan gels have been used in food science as stabilizers and encapsulating agents, in nanoscience as scaffolds to build nanofibers and nanowires, and in drug delivery to form nanoparticles and create helical micelles encapsulating polynucleotides. 1,3-β-Glucans are beginning to have enormous significance due to their dual nature as structure-forming agents and pharmacological substances, and research is especially focused on the application of these polymers in animal nutrition and drug delivery.  相似文献

The effects of silicon (Si) (0, 1, and 2 mM) and sodium chloride (NaCl) salinity (0, 20, and 40 mM) on the yield, photosynthesis, and ion content in strawberry grown in hydroponics were investigated. Salinity caused a reduction in leaf area and plant biomass, regardless of Si supplement. Leaf area in Si1Na20 treatment was 37% higher than that of Si0Na20 treatment. Salinity at 20 mM concentration had a 25% yield reduction in absence of Si, corresponding to no reduction in the yield in the presence of Si compared with the Si treatment without salinity. The highest reduction of photosynthetic rate (Pn) was observed in Si1Na40 treatment; however, in the presence of Si, there was no reduction in the Pn rate at 20 mM NaCl concentration. An obvious positive relationship was found between potassium/sodium (K/Na) and Pn rate. Within each Si concentration, the increased salinity increased Na concentration in the leaf tissue. However, when Si was supplied to the salinity treatments Na concentration was significantly lower than that of the similar treatments without Si. Supplement of Si to the nutrient solution increased the Si concentration in the roots, and old and young leaves. A clear negative relationship (r= 0.71) was found between Si and Na concentration in the leaves. Salinity (NaCl40) increased the proline level 2.5-fold in the absence of Si, corresponding to no changes the proline level in the presence of 1 mM Si concentration compared with the Si treatment without salinity. The salinity (40 mM) increased the electroleakage by 50% compared with 0 mM NaCl treatment in the absence of Si supplement. Findings from this study lead to the conclusion that Si supplement to the nutrient solution ameliorated the deleterious effect of salinity on the strawberry growth; these effects were attributed to an enhanced K/Na ratio and the reduction in Na content and electroleakage ability in the leaf tissue.  相似文献

Lettuce, spinach and chicory are generally considered the main leafy vegetables, while a fourth group denoted by ‘minor leafy vegetables’ includes, amongst others, rocket salad, lamb’s lettuce, asparagus, artichoke and rhubarb. Except in the case of lettuce, central crop databases of leafy vegetables were lacking until recently. Here we report on the update of the international Lactuca database and the development of three new central crop databases for each of the other leafy vegetable crop groups. Requests for passport data of accessions available to the user community were addressed to all known European collection holders and to the main collection holders located outside Europe. Altogether, passport data of 17,530 accessions from a total of 129 collections were collected. The four separate databases were made available on line via a common entry page accessible at http://documents.plant.wur.nl/cgn/pgr/LVintro/. Based on a literature study, an analysis of the gene pool structure of the crops was performed and an inventory was made of the distribution areas of the species involved. The results of these surveys were related to the contents of the newly established databases in order to identify the main collection gaps. Priorities are presented for future germplasm acquisition aimed at improving the coverage of the crop gene pools in ex situ collections.  相似文献

The aim of this in situ study was to investigate the fatty acid (FA) composition and content in roots and shoots of Lolium perenne and Trifolium repens, grown under heavy metal stress (Cd, Pb, Zn). The composition of FA was quite similar for the two plants and the two organs; main FA were palmitic acid (C16:0), oleic acid (C18:1), linoleic acid (C18:2) and linolenic acid (C18:3). For both plants, the major FA that characterized the roots was C18:2 whereas C18:3 was the prominent FA in shoots. For the first sampling (S1), in the roots of L. perenne and T. repens, polyunsaturated fatty acids (PUFA) were affected by metal contamination while, in the second sampling (S2), PUFA were affected in the shoots of the two plants. This alteration of PUFA was well correlated with the bioaccumulation factor of metals which decreased in roots and increased in shoots with the time. Moreover, a positive correlation was found between the PUFA decrease and the malondialdehyde (MDA) content, indicating the occurrence of a lipid peroxidation induced by the metal stress.  相似文献

ε-Polylysine (ε-PL) is a food-grade cationic antimicrobial that is highly effective against a range of food pathogens and spoilage organisms. In compositionally complex environments, like those found in most foods and beverages, the antimicrobial activity of cationic ε-PL is likely to be impacted by its interactions with anionic components. The purpose of this study was to characterize the interactions between cationic ε-polylysine and an anionic biopolymer (high methoxyl pectin, HMP) using isothermal titration calorimetry (ITC), microelectrophoresis (ME), and turbidity measurements. ITC and ME measurements indicated that ε-PL bound to pectin, while turbidity measurements indicated that the complexes formed could be either soluble or insoluble depending on solution composition. Ionic strength and pH were also shown to affect the interactions significantly, highlighting their electrostatic origin. This study demonstrates that ε-PL can form either soluble or insoluble complexes with anionic biopolymers depending on the composition of the system. Our study provides basic knowledge that will facilitate the more rational application of ε-PL in complex food systems.  相似文献

Tunnel cultivation of berries is increasing on a global basis, and suitable management techniques are being studied for growing berry crops in a protected environment. Soil mulching and irrigation are among the techniques that significantly affect plant growth and yield. Tunnel cultivation is often limited to growing single cultivars, and little attention has been paid to the effects of growing several cultivars in the same tunnel. There are indications that crop yield and quality might benefit from cross-pollination. In this study, the effects of artificial self- and cross-pollination were studied in 15 strawberry and 6 red raspberry cultivars grown in a protected environment in a greenhouse. Four strawberry cultivars benefited from cross-pollination and one required it. In the case of raspberries, self- and cross-pollination had no effect on yield and fruit quality. In conclusion, particular berry cultivars are better suited to tunnel cultivation.  相似文献
