The objective of this trial was to determine if daily supplementation of flaxseed for 85 d to steers finished on grasslands of the northern Great Plains would influence growth and carcass characteristics or the fatty acid profile, tenderness, and sensory characteristics of beef steaks. Eighteen Angus yearling steers (initial BW 399 ± 21 kg) were randomly divided into 3 groups. Steers in treatment 1 (FLX; n = 6) received a daily supplement of ground flaxseed (0.20% of BW), whereas steers in treatment 2 (CSBM; n = 6) received a daily supplement of ground corn and soybean meal (0.28% of BW), with contents of CP and TDN being similar to the supplement for FLX. Control steers (CONT; n = 6) were not supplemented. Treatments were given to each individual steer in side-by-side stalls and were fed from mid-August to November 7, 2007, the day before slaughter. All steers grazed growing forage from early May through the first week of November. Growth rate of steers fed FLX was 25% greater (P < 0.01) than that of steers fed CONT, but was similar (P = 0.45) to that of steers fed CSBM. No differences were observed for carcass characteristics (P ≥ 0.14), tenderness (Warner-Bratzler shear force; P ≥ 0.24), or sensory attributes (P ≥ 0.40) except for a slight off-flavor detected in steaks from steers fed FLX compared with CONT (7.4 vs. 7.8, respectively, with 8 indicating no off-flavor and 1 indicating extreme off-flavor; P = 0.07) and CSBM (7.9; P = 0.01). The n-3 fatty acids α-linolenic acid and eicosapentaenoic acid were 62 and 22% greater, respectively, in beef from steers fed FLX compared with those fed CONT (P < 0.001). The ratio of n-6 to n-3 fatty acids was smaller (P < 0.001) in beef from steers fed FLX compared with the ratios in beef from steers fed CONT and CSBM. Daily supplementation of flaxseed to steers grazing growing vegetation on the northern Great Plains may improve growth rate and enhance the n-3 fatty acid profile of the steaks.  相似文献

The aim was to evaluate the effect of different rates of weight gain during the backgrounding on animal performance and carcass and meat characteristics of steers finished in feedlots. Thirty-six Angus steers, 12 ± 2 months of age, were backgrounded during 91 days on Aruana grass pasture (Panicum maximum cv. Aruana) managed under different stocking rates to achieve three different weight gains: HIGH ADG (average daily gain)—no feed restriction (ADG = 0.846 kg); MEDIUM ADG—moderate feed restriction (ADG = 0.456 kg); and LOW ADG—high feed restriction (ADG = 0.154 kg). To ensure the difference in ADG, we offered 0.7% live weight of concentrate feed in the HIGH treatment and a better forage supply in the MEDIUM treatment. After the backgrounding, the animals were finished in feedlot. There was no effect of the previous performance on the animals' performance in the feedlot. The LOW presented higher weight (218.9 vs. 207.9 kg) and hot (54.0% vs. 51.3%) and cold (53.5% vs. 50.5%) carcass yield than the MEDIUM, besides presenting meat with less cooking losses (15.0% vs. 18.2%), marbling (7 vs. 4.0 points), palatability (7.1 vs. 6.3 points), juiciness (7.2 vs. 6.4 points), tenderness (7.1 vs. 6.3 points), and lower shear force (5.78 vs. 8.75 kg) than HIGH. LOW ADG steers stay longer in the finishing phase but presented in general better quality carcass and meat than those with MEDIUM or HIGH during the backgrounding.  相似文献

Sixty-eight Angus-based steers (224 +/- 7.6 kg of BW) were used to evaluate the effects of a prolonged dietary vitamin A restriction on marbling and immunocompetency. Steers were allotted randomly to 1 of 2 treatments: LOW (no supplemental vitamin A) and HIGH (diet supplemented with 2,200 IU of vitamin A/kg of DM). Diets contained 60% high-moisture corn, 20% roasted soybeans, 10% corn silage, and 10% of a protein supplement. Steers were penned and fed individually. For the first 141 d, steers were program-fed to achieve a gain of 1.1 kg/d. The last 75 d of the experiment, steers were offered feed for ad libitum intake. At slaughter, serum and liver samples were taken to determine their retinol content. To evaluate immunocompetency, 10 steers per treatment were selected randomly on d 141 and received an ovalbumen vaccine, and 21 d later, the steers were revaccinated. On d 182, blood samples were taken from the vaccinated steers to determine serum antibody titers by ELISA. Steers were slaughtered after 216 d on feed. Carcass characteristics were determined, and LM samples were taken for composition analysis. Subcutaneous fat samples were taken for fatty acid composition analysis. Performance (ADG, DMI, and G:F) was not affected by vitamin A restriction (all P > 0.10). Hot carcass weight, 12th-rib fat, and yield grade did not differ between LOW and HIGH steers (all P > 0.10). Marbling score (LOW = 574 vs. HIGH = 568, P = 0.79) and i.m. fat (LOW = 5.0 vs. HIGH = 4.7% ether-extractable fat, P = 0.57) were not increased by vitamin A restriction. Serum (LOW = 18.7 vs. HIGH = 35.7 mug/dL, P < 0.01) and liver (LOW = 6.3 vs. HIGH = 38.1 mug/g, P < 0.01) retinol levels were lower in LOW steers compared with HIGH steers at slaughter. Response to ovalbumin vaccination was not affected by vitamin A restriction (LOW = 13.1 vs. HIGH = 12.8 log(2) titers, P = 0.60). Slight changes in the fatty acid profile of s.c. fat of the steers were detected. A greater proportion of MUFA (LOW = 41.7 vs. HIGH = 39.9%, P = 0.03) and fewer SFA (LOW = 47.1 vs. 48.7, P = 0.03) were observed in vitamin A-restricted steers. This suggests that vitamin A restriction may affect the activity of desaturase enzyme (desaturase activity index, LOW = 46.9 vs. HIGH = 44.9, P = 0.01). Feeding a low vitamin A diet for 216 d to Angus-based steers did not affect performance, marbling score, or animal health and immunocompetency. Slight changes in the fatty acid profile of s.c. fat were observed, suggesting that vitamin A restriction may have affected desaturase enzyme activity.  相似文献

The objective of this study was to determine the relationships between birth-weight-associated modifications in histological or chemical muscle characteristics and meat quality traits in pigs. At 68 d of age, Pietrain x (Large White x Landrace) female littermates were allocated into 2 groups on the basis of low birth weight (LW = 1.05 +/- 0.04 kg; n = 15) or high birth weight (HW = 1.89 +/- 0.02 kg; n = 15). Pigs were reared in individual pens with free access to a standard diet up to slaughter at approximately 112 kg of BW. During the growing-finishing period, LW and HW pigs had a similar daily feed consumption, whereas G:F was lower (P = 0.009) for LW pigs than for HW littermates. At final BW, LW pigs were 12 d older (P < 0.001) than HW littermates. Estimated lean meat content, relative proportions of loin and ham in the carcass, and weights of LM and semitendinosus muscle (SM) were decreased (P < 0.05) in LW pigs compared with HW pigs. Conversely, the LW pigs exhibited a fatter carcass, greater activity levels of fatty acid synthase and malic enzyme in backfat (n = 15 per group), and enlarged subcutaneous adipocytes (n = 8 per group) compared with the HW pigs. Similarly, lipid content was increased by 25% (P = 0.009), and mean adipocyte diameter was 12% greater (P = 0.008) in the SM from LW pigs compared with that from HW pigs, whereas lipid content did not vary in the LM of either group. Mean myofiber cross-sectional areas were 14% greater in the LM (P = 0.045) and the SM (P = 0.062) of LW pigs than of HW pigs. Conversely, the total number of myofibers was less (P = 0.003) in the SM of LW vs. HW pigs. There were no differences between groups for glycolytic potential at slaughter and rate and extent of postmortem pH decline in both muscles, as well as for LM drip losses. A trained sensory test panel judged the roast loin meat to be less tender (P = 0.002) in LW pigs relative to HW pigs. Scores for juiciness, flavor, flouriness, and fibrousness of meat did not differ between groups. Overall, negative but somewhat low correlation coefficients were found between LM tenderness score and ultimate pH (r = -0.36; P = 0.06) and between LM tenderness and mean cross-sectional area of myofibers (r = -0.34; P = 0.07). This study demonstrates a lower tenderness of meat from pigs that had a LW, partly as a result of their enlarged myofibers at market weight.  相似文献

We investigated the effects of conjugated linoleic acid (CLA) supplementation on growth, feed efficiency, carcass characteristics, meat quality, lipogenesis, and lipid metabolism in rabbits. One hundred forty-four New Zealand White rabbits, half males, half females, age 55 d, mean 1.8 kg BW, were randomly assigned to three weight- and sex-balanced feeding groups in which conventional pelleted diets were supplemented with 0, 0.25, or 0.5% of a CLA preparation. The CLA preparation contained 65% CLA isomers. Twelve rabbits (six males and six females from each group) were slaughtered at each of three slaughtering trials (2.5, 2.8, and 3.1 kg BW, or 76, 90, and 104 d of age). Conjugated linoleic acid supplementation did not influence growth performance (P > or = 0.05) or carcass characteristics but reduced perirenal fat at heavier slaughtering weights (P = 0.09 at 2.8 kg BW; P < 0.01 at 3.1 kg BW). Conjugated linoleic acid reduced acetyl-CoA-carboxylase (CBX) activity in liver (P < 0.05) and adipose tissues (P < 0.01) but did not influence malic enzyme (ME) or glucose-6-phosphate dehydrogenase activity. Significant differences were found between sex in interscapular fat (P < 0.05) for CBX, in perirenal (P < 0.01) and interscapular (P < 0.05) fat for ME, and a tendency (P = 0.070) in liver for glucose-6-phosphate dehydrogenase. The oxidative stability of longissimus lumborum muscle was increased at the higher level of supplementation (P < 0.05). Conjugated linoleic acid reduced (P < 0.05) triglycerides and total cholesterol in plasma with a trend to increased serum leptin (P = 0.06). Plasma triglycerides were higher in males than females (P < 0.01) and plasma leptin tended to be higher in females (2.57 vs. 2.13 ng/ml, P = 0.06). It is concluded that dietary CLA reduced carcass fat in rabbits slaughtered at 2.8 kg or above and altered lipid metabolism to produce lower concentrations of serum triglycerides and total cholesterol and higher concentrations of leptin.  相似文献

Crossbred heifers (n = 120; 265 kg, SD = 37) were fed individually (84 d) to determine the effect of supplement type, concentration, and frequency on intake and performance and to estimate the energy value of dry distillers grains plus solubles (DDGS) in a high-forage diet. Treatments were arranged in a 3 x 2 x 2 factorial, with 3 supplements, 2 concentrations, and 2 frequencies of supplementation. Supplements including dry-rolled corn (DRC), DRC with corn gluten meal (DRC + CGM), and DDGS were fed at 0.21% (LOW) or 0.81% (HIGH) of BW daily and were provided daily (DAILY) or 3 times weekly (ALT). Heifers were fed to consume grass hay (8.7% CP) ad libitum. Individual DMI, diet composition, BW, and ADG were used to calculate energy values for DDGS and DRC. Supplement type, concentration, frequency, and interactions were tested using the MIXED procedure of SAS, with BW included as a covariate. Supplement x concentration interactions for gain (P = 0.01) and G:F (P < 0.01) were detected. Short-chain fructooligosaccharides (FOS) were supplemented to the diets of nine quarter horses ranging in age from 489 to 539 d with initial BW averaging 400.6 +/- 21.2 kg. The objectives of this study were to determine the effects of dietary FOS on the fecal responses in terms of pH, the microbial population, and VFA concentrations. The horses were used in a 3 x 3 replicated Latin square design, fed according to NRC requirements, and their individual diets were supplemented with no FOS (CON), 8 g of FOS/d (LOW), or 24 g of FOS/d (HIGH) over three 10-d feeding periods. On the last 3 d of each 10-d feeding period, a single fecal sample was collected between 0730 and 0930. Fecal pH decreased linearly (P = 0.01) from 6.48 with the CON diet to 6.38 with the HIGH diet, but there was no change (P = 0.19 for linear effect) in fecal consistency among treatments. A quadratic effect (P < 0.01) was observed for fecal Escherichia coli population, but no difference (P = 0.88 for linear effect) was found in fecal Lactobacilli enumeration among treatments. The presence of fecal Bifidobacteria was unable to be confirmed and was therefore not reported. Fecal acetate concentrations increased linearly (P = 0.03), with means of 2.13, 2.18, and 2.52 mg/g of wet feces for CON, LOW, and HIGH treatments, respectively. Similarly, fecal propionate concentrations increased linearly (P = 0.01), with means of 0.58, 0.64, and 0.73 mg/g for CON, LOW, and HIGH treatments, respectively. Fecal butyrate concentrations also increased linearly (P = 0.02), with means of 0.40, 0.46, and 0.54 mg/g for CON, LOW, and HIGH treatments, respectively. Total VFA (P = 0.01) and lactate (P = 0.02) concentrations increased linearly, with total VFA means of 3.47, 3.69, and 4.25 mg/g for CON, LOW, and HIGH treatments, respectively, and lactate means of 0.36, 0.41, and 0.47 mg/g for CON, LOW, and HIGH treatments, respectively. A restriction/realimentation feeding strategy was applied to pigs to increase the age at market weight and final ADG, modify protein and lipid deposition rates at carcass and muscle levels, and thereby improve eating quality of the pork. A total of 126 Duroc x (Large White x Landrace) pigs (females and castrated males) were used. At the average BW of 30 kg, within litter and sex, pairs of littermates (blocked by BW) were randomly assigned to ad libitum (AL) feeding during growing (30 to 70 kg of BW) and finishing (70 to 110 kg of BW) periods (AL, n = 56), or restricted feeding at 65% of the ADFI of the AL pigs, on a BW basis, during the growing period and AL feeding during finishing (compensatory growth, CG; n = 56). In each feeding regimen, 15 pigs were slaughtered at 70 kg of BW, and 41 pigs were slaughtered at 110 kg of BW. Additionally, 14 pigs were slaughtered at 30 kg of BW to calculate tissue deposition rates. The CG pigs showed decreased ADG (-35%, P = 0.001) during growing but increased ADG (+13%, P = 0.001) during finishing (i.e., compensatory growth) due to greater (P = 0.001) ADFI and G:F. Hence, CG pigs were 19 d older at 110 kg of BW than AL pigs. The CG pigs were leaner at 70 kg of BW than AL (e.g., 11.7 vs. 13.5 mm of average backfat thickness for CG and AL pigs, respectively, P = 0.023), whereas the differences were reduced at 110 kg of BW (20.6 vs. 21.0 mm of average backfat thickness for CG and AL pigs, respectively, P = 0.536). At 70 kg of BW, intramuscular fat (IMF) content of LM did not differ between CG and AL pigs (1.25 vs. 1.49%, respectively, P = 0.118), whereas CG pigs had less IMF in LM at 110 kg of BW (2.19 vs. 2.53% for CG and AL pigs, respectively, P = 0.034). Feeding regimen influenced the composition of weight gain. From 30 to 70 kg of BW, feed restriction reduced (P = 0.001) lean and adipose tissue deposition at the carcass level and protein and lipid deposition at the muscle level. From 70 to 110 kg of BW, the CG feeding strategy increased (P = 0.016) deposition of adipose but not of lean tissue at the carcass level. However, lipid and protein deposition at the muscle level were not affected. Thus, realimentation promoted deposition of subcutaneous fat over IMF. Feeding regimen hardly affected technological meat quality at 110 kg of BW. The CG feeding strategy decreased (P = 0.014) the meat juiciness score in relation to the decreased IMF but did not influence other sensory traits. Elevated IMF content and improved pork quality might be achieved by modifying the onset or duration of the restriction and realimentation periods.  相似文献

The objectives of this experiment were to determine the effects of 2 different breeds (BR), Boer and Kiko, and 4 post-weaning harvest ages (HA; Days 0, 29, 56, and 85) on growth, carcass traits, blood metabolites, and lipogenic gene expression. Forty-eight goat (Capra hircus) kids (BW = 23.9 ± 1.50 kg; 3 to 4 mo) were used in a 2 × 4 factorial arrangement of treatments. Goats were stratified by BW within BR and randomly assigned to 4 HA. Kids were born between March 15 and April 7 to purebred does, and were represented by at least 3 purebred sires within each BR. They were fed a grain/hay (80:20) diet once per day. At designated HA, randomly pre-assigned goats (n = 6) from each BR were transported to the Meat Science Lab at Mississippi State University, Starkville, MS, and were harvested. There were no interactions (P > 0.10) between BR and HA. Boer tended (P = 0.08) to have greater initial BW, final BW (P = 0.05), and G/F ratio (P = 0.05). Although the 80:20 grain/hay diet was reinforced by adjusting DMI, both BR had similar total DMI, Boer kept that ratio, while Kiko consumed more (P = 0.001) hay (70:30, grain/hay) and had more (P = 0.001) DMI when expressed as g/kg BW. Boer tended to have greater transportation shrink (P = 0.07), HCW (P = 0.08), and cold carcass weights (CCW; P = 0.08), with greater (P = 0.001) carcass fat. No differences (P > 0.10) were observed in carcass shrink, dressing percentage, 12th rib fat thickness, and LM area between the 2 BR. When expressed as percentage empty BW, carcass bone was similar (P = 0.25), whereas muscle percentage (P = 0.02) was greater for Kiko and fat percentage was greater (P = 0.001) for Boer. Fat as a percentage of CCW remained relatively similar (P > 0.10) for both BR for the 2nd and 3rd HA. Differences were more evident (P = 0.01) at the 4th HA. Boer reached targeted harvest weight (29 kg) at the 3rd HA, while fat deposition continued (P = 0.01) during the 4th HA. Breed had no effect (P > 0.10) on meat color (L*, a*, b*) but HA affected (P = 0.001) all color values. Boer had similar 3-hydroxyl-3-methylglutaryl-CoA synthase mRNA abundance, but was greater (P < 0.03) in acetyl CoA carboxylase compared with Kiko. There was no difference (P = 0.52) in total serum fatty acids (FA, mg/mL) between the 2 BR. As animals aged, their total serum FA increased (P < 0.05) and changed to an undesirable profile. Kiko had a greater (P = 0.02) percentage of muscle and less (P = 0.001) fat in the carcass. We concluded that different BR might need different harvest endpoints and feed input according to consumer acceptability.  相似文献

Reproductive efficiency of broiler breeder hens declines with age. Whereas careful feed management can maximize BW uniformity at housing, there is variability in how rate of lay and flock behavioral dynamics will interact with subsequent growth during the breeder phase. This study characterized differences in carcass and reproductive morphology in end-of-cycle commercial broiler breeder hens based on BW, feather coverage, and footpad condition, and we discuss the potential implications of the findings. At 62 wk of age, 537 hens were studied from an original flock of 3,800. Birds were sorted into subgroups based on BW, feather score, footpad score, and whether they were in laying condition when dissected. The average flock BW was 3.56 kg, with means of 2.86, 3.56, and 4.20 kg for the low (LOW), standard (STD), and high (HIGH) BW groups, respectively. A higher proportion of birds from the STD (85%) and HIGH (81%) groups still had a fully formed reproductive tract compared with birds of the LOW (59%) group. The LOW birds in laying condition had a smaller ovary than the STD or HIGH birds. The ovary condition of birds in laying condition was not related to feather coverage. As feather coverage improved, final hen BW increased, demonstrating a potential role of feather coverage in growth efficiency or of BW in level of mating activity. Birds that received a feather score of 5 (complete back feather coverage) and had a normal reproductive tract made up 14.7% of this flock. It is likely that many of these birds were mating very infrequently or possibly not mating, which has implications for maintenance of flock fertility. Some may also have been returning from a molt. Footpad condition was not related to body size. External traits such as BW, feather score, and footpad score can provide insight into flock reproductive condition and male:female interaction.  相似文献

This trial evaluated the effects of various dietary calcium and nonphytate phosphorus (nPP) feeding regimens on the growth and bone integrity of Nicholas 700 toms from 2 to 19 wk of age. After a 2-wk common brooding period, 24 to 25 poults/pen were allocated to 8 pens/treatment. Crumbles were fed from 2 to 5 wk of age and pellets were fed from 5 to 19 wk of age in a 3-wk phase program. Dietary calcium was kept at a 1.8:1 ratio with nPP for all diets. Diet 1 (LOW) was formulated to provide NRC recommendations for each phase change, ending with 0.25% nPP from 17 to 19 wk of age. Diet 2 (MED) nPP levels averaged 0.06 percentage units higher than the LOW diet. Diet 3 (HIGH) averaged 0.10 percentage units higher nPP than the MED diet. Diet 4 (VHIGH) averaged 0.10 percentage units higher nPP than the HIGH diet. Body weight was decreased (P < 0.01) by the LOW diet compared with all other treatments throughout the trial. By 8 wk of age, BW was lower (P < 0.001) when the MED diet was fed compared with the HIGH and VHIGH diets. Feed:gain was worsened (P < 0.02) by the LOW diet, compared with the HIGH and VHIGH diets, throughout the entire trial. The incidences of leg problems and spontaneous bone fractures were increased (P = 0.001) when the LOW diet was fed compared with the other diets. The increase in litter phosphorus (P = 0.001) was directly proportional to increases in dietary nPP. The HIGH and VHIGH diets resulted in the best growth performance and skeletal integrity.  相似文献

Isonitrogenous amounts of two protein sources differing in rumen degradation rate and in lipid composition were fed to sheep with or without a rapidly fermentable cereal grain. The effects on intake, carcass leanness, and muscle fatty acid (FA) composition were examined. Thirty-eight crossbred wether lambs (9 mo, 35 to 48 kg) were allocated by stratified randomization to six treatment groups: 1) basal diet of alfalfa hay:oat hay (20:80) ad libitum = basal; 2) basal + lupin (358 g DM/d) = lupin; 3) basal + fish meal (168 g DM/d) = fish meal; 4) basal + barley (358 g DM/d) = barley; 5) basal + barley + lupin (179 + 179 g DM/d) = barley/lupin; or 6) basal + barley + fish meal (179 + 84 g DM/d) = barley/ fish meal. Lambs were fed individually. Dietary treatments were imposed for 8 wk, and the supplements were offered at 2-d intervals. Daily feed intake and weekly BW of lambs were recorded. At the end of the feeding period lambs were slaughtered after an overnight fast. Hot carcass weight (HCW) and fat depth (GR; total fat and muscle tissue depth at 12th rib, 110 mm from midline) were recorded. At 24 h postmortem samples of longissimus thoracis (LT) and longissimus lumborum (LL) muscles were taken from chilled (4 degrees C) carcasses for the assessment of FA composition and meat tenderness, respectively. Lambs fed lupin or fish meal with or without barley had heavier slaughter weights (P < 0.004) and HCW (P < 0.001) than lambs fed basal or barley when initial BW was included as a covariate. The lupin diet also resulted in heavier carcasses (P < 0.05) than the fish meal or barley/fish meal diets. With GR as an indicator, fish meal and barley/ fish meal diets produced leaner carcasses (P < 0.01) than lupin and barley/lupin lambs. Long-chain n-3 FA content [20:5n-3 (P < 0.001), 22:5n-3 (P < 0.003), and 22:6n-3 (P < 0.001)] in the LT muscle were substantially higher with the fish meal and barley/fish meal diets, whereas muscle total n-6 FA was increased (P < 0.003) by lupin and barley/lupin compared with all other diets. Thus, increased muscle long-chain n-3 FA content occurred without an increase in fatness measured as GR, whereas increased muscle n-6 FA content was associated with an increase in carcass fatness. Under these circumstances, a reduction in carcass fatness had no effect on meat tenderness measured as Warner-Bratzler shear force.  相似文献

Residual feed intake (RFI) is defined as the difference between the observed feed intake and that expected based on requirements for maintenance and production. A divergent selection was conducted during 4 generations in Large White male pigs to produce low and high RFI lines. The present study aims at determining the influence of this selection on biochemical and histological traits of skeletal muscle, and relating these changes to correlated effects on growth, carcass composition, and meat quality traits. At 8 d preslaughter, biopsies from the LM were taken in the fed state on 14 females from each RFI line fed ad libitum. Animals were slaughtered at 107.8 ± 8.0 kg of BW without any previous fasting. Samples of LM, semimembranosus (SM), biceps femoris (BFM), and rhomboideus muscles were taken at both 30 min and 24 h postmortem. Myofiber typing was only assessed in LM. Low RFI pigs ("efficient") had leaner carcasses with greater muscle content (P < 0.001), less backfat thickness (P < 0.001), and less intramuscular fat content in all 4 muscles (P < 0.01 to P = 0.04). Their greater muscle content was associated with hypertrophy of all fast-twitch fibers. Glycogen content in all glycolytic muscles (i.e., LM, SM and BFM), was greater in low than high RFI pigs. The greater accumulation of glycogen in LM of low RFI pigs was specifically located in the fast-twitch glycolytic IIBW fibers, which correspond to fibers containing IIb, IIb + IIx, or IIx myosin heavy chains. The difference in muscle glycogen content between RFI line pigs was more significant in the living animals (P = 0.0003) than at 30 min postmortem (P = 0.08). This was associated with a decreased ultimate pH (P = 0.001), and greater lightness of color (P = 0.002) and drip loss (P = 0.04) in LM of low than high RFI line pigs, suggesting that selection for reduced RFI may impair some meat quality traits, such as water-holding capacity. Pigs from the low RFI line exhibited a greater (P = 0.02) percentage of IIBW fibers in LM and tended (P < 0.10) to have less lipid β-oxidative capacity in LM, SM, and BFM. In contrast, no difference (P > 0.10) between lines was found for citrate synthase and lactate dehydrogenase activities, mitochondrial activity, and expression of genes coding for uncoupling proteins 2 and 3. Differences between RFI pigs in plasma leptin, cortisol, and thyroid hormone concentrations are presented and discussed. In conclusion, selection for low RFI influenced muscle properties in a way favoring muscle mass, but likely impairing meat quality.  相似文献

Twelve Angus x Hereford heifer calves (233 kg) were fitted with abomasal infusion cannulas and used to study N and endocrine responses to abomasally infused arginine (Arg). Heifers were allotted randomly to three treatment groups and received continuous abomasal infusions (2 liters/d) of water (CON) or Arg solutions providing .33 g Arg.HCl/kg BW (LOW) or .50 g Arg.HCl/kg BW (HIGH) each day. A 12-d dietary adjustment period preceded a 7-d infusion and collection period. Each calf received 4,544 g DM/d of a basal diet in equal portions at 0600, 1200, 1800 and 2400. Calves were housed in individual metabolism crates and fitted with urinary bladder catheters for total excreta collection. On d 1 and 5, blood samples were collected at 15-min intervals for 8 h between 1200 and 2000. Single samples were obtained at 1400 on remaining days. The infusion of Arg increased the quantity of N retained by heifers (P less than .01) and the percentage of total N retained (P less than .10); however, no differences were observed between LOW and HIGH heifers. Increased (P less than .01) urinary N excretion by Arg heifers was associated with greater (P less than .05) quantities of urinary urea N and ammonia N. Blood urea N and serum Arg concentrations were highest (P less than .05) in Arg heifers, whereas total serum AA concentrations were lower (P less than .05) in Arg heifers than in CON heifers. Serum glucose and insulin concentrations were not affected (P greater than .10) by treatment. Characterization of somatotropin (STH) profiles revealed that amplitude and frequency of STH pulses were not affected (P greater than .10) by treatment, whereas mean (P less than .10) and basal (P less than .05) STH concentrations were elevated in HIGH compared to LOW heifers on d 1 and 5. The similar N retention responses of LOW and HIGH heifers and similar STH profiles of CON and LOW heifers suggest that the stimulatory effect of the HIGH dose on STH secretion occurred only after tissue N requirements had been satisfied.  相似文献

Muscle fat stores at slaughter partly determine the dietetic and sensory quality traits of pork meat. Nutritional strategies during the growing-finishing period are able to modify intramuscular fat content; however, the underlying mechanisms remain largely unknown. The objective of this study was to determine some of the cellular, biochemical, and molecular bases of muscle fat content variation in response to feeding regimen in pigs. Crossbred pigs of 30 kg BW were allocated to three feeding groups: free access ([C], n = 10) to a standard diet (3.25 kcal of DE/kg, 9.5 g of lysine/kg), standard diet at 75% of the spontaneous voluntary intake ([FR], n = 10), or both low protein and energy intakes ([PR], n = 10) in order to get the same growth rate as the FR pigs and the same body composition as the C pigs. At slaughter (110 kg BW), FR and PR pigs were 30 d older than C pigs (P < 0.001). In agreement with the protocol, carcass adiposity was similar in PR and reduced (P < 0.01) in FR pigs compared with C animals. Lipid content in longissimus lumborum muscle was reduced by 25% in FR pigs and increased by 40% in PR pigs compared to C pigs (P < 0.001). Commensurate variations in the diameter of muscle adipocytes were observed between the three feeding groups (P < 0.001). The muscle activities of malic enzyme and glucose-6-phosphate dehydrogenase, generating reduced nicotinamide adenine dinucleotide phosphate for fatty acid synthesis, were depressed (P < 0.05) in both FR and PR groups, compared to the C group. The expression level of the sterol regulatory element binding protein that was chosen as the putative candidate at the molecular level was not modified by the feeding regimen. No variations in the oxidative enzyme markers were denoted, whereas lactate dehydrogenase activity was reduced by 13% (P < 0.05) in PR group compared to other groups. In conclusion, moderate long-term feed restriction results in decreased lipogenic capacity of muscle adipocytes and intramuscular fat content. In contrast, the reduction of both protein and energy intakes more likely results in an imbalance between multiple aspects of muscle energy metabolism, in favor of intramuscular fat accretion.  相似文献

Dietary selenium influences the Se content in edible muscle of beef cattle. Limited data are available to describe the effects that feeds naturally high in Se have on production, carcass characteristics, and Se distribution in terminal tissues. Therefore, 43 crossbred steers (BW = 351 +/- 24 kg) were stratified by BW and assigned to one of four dietary treatments: Se adequate (CON; n = 12), Se provided as high-Se wheat (WHT; n = 9), high-Se hay (HAY; n = 11), or sodium selenate (SEO; n = 11). Daily selenium intake for WHT, HAY, and SEO diets was 65 microg/kg BW, whereas it was 9.5 microg/kg BW for CON. Diets were similar in ingredient composition (25% wheat, 39% corn, 25% grass hay, 5% desugared molasses, and 6% wheat middling-based supplement; DM basis), isonitrogenous and isocaloric (14.0% CP, 2.12 Mcal NEm/kg DM and 1.26 Mcal NEg/ kg DM), and offered once daily (1500) individually to steers in a Calan gate system for 126 d. At the end of the trial, steers were slaughtered; carcass data were recorded; and samples of the liver, kidney, spleen, semitendinosus, and hair were collected for Se analysis. Intake of DM, G:F, and ADG did not differ (P > 0.13). No differences (P > 0.12) were noted for hot carcass weight, organ weights, longissimus muscle area, back-fat thickness, marbling scores, or quality and yield grade. Kidney, pelvic, and heart fat tended to be higher (P = 0.06) in CON and WHT compared with SEO and HAY steers (2.9, 2.4, 2.5, 2.9 +/- 0.2% for CON, SEO, HAY, and WHT, respectively). Selenium concentrations in all tissues collected differed (P < 0.003) due to treatment. Distribution of Se to the kidney, spleen, and hair were similar with CON < SEO < HAY < WHT (8.40, 10.05, 10.86, 12.89 +/- 0.26 ppm for kidney; 2.00, 2.60, 3.82, 5.16 +/- 0.09 ppm for spleen; 1.80, 4.00, 5.93, 10.54 +/- 0.56 ppm for hair; P < 0.01). The distribution of Se in liver and muscle (DM basis) differed from that in other tissues, with CON < HAY < SEO = WHT (2.33, 6.56, 9.91, 10.79 +/- 0.80 ppm; P < 0.01) and CON = SEO < HAY < WHT (1.33, 1.55, 3.32, 4.41 +/- 0.18 ppm; P < 0.01), respectively. When providing dietary Se at supranutritional levels, source of Se did not affect production or carcass characteristics, but it altered the distribution and concentration of Se throughout the tissues of finishing beef steers.  相似文献

The aim of this study was to investigate whether dietary protein intake of gilts during gestation below (50%) or above (250%) recommendations affects body composition, carcass and meat quality, and properties of skeletal muscle and subcutaneous adipose tissue (SCAT) in offspring at d 83 and 188 of age. German Landrace gilts were fed isoenergetic gestation diets (~13.7 MJ of ME/kg) containing a low (LP, 6.5%; n = 18), an adequate (AP, 12.1%; n = 20), or a high (HP, 30%; n = 16) protein content from mating until farrowing. Within 48 h of birth, offspring were cross-fostered to sows fed a standard diet. On d 83 of age, no effects of the LP diet on BW and body composition were detected, whereas HP pigs showed a slight growth delay (P = 0.06) associated with increased relative weights of small intestine (P < 0.01) and brain (P = 0.08), and reduced relative thymus weight (P < 0.01). On d 188 of age, BW was not different among the dietary groups. However, the carcass of LP pigs contained less (P = 0.01) lean and more (P = 0.07) fat compared with AP and HP pigs, which was only pronounced in pigs originating from large litters (P < 0.05). Like skeletal muscles (P = 0.06), the heart muscle weighed less (P = 0.02) in LP than AP pigs. Compared with AP pigs, LP pigs exhibited a fewer (P = 0.09) total number of myofibers in semitendinosus muscle plus LM both at d 83 and 188 of age, whereas total muscular DNA was less (P = 0.02) at d 188 only. The mRNA abundance of IGF2 measured on d 188 was reduced in SCAT (P = 0.03) and LM (P = 0.07) of LP compared with AP pigs. No changes in muscular fiber type frequency, capillary density, or creatine kinase activity, as well as SCAT adipocyte size and number, were observed at either stages of age. Meat quality characteristics remained unchanged at d 83, whereas Warner-Bratzler shear force value in LM was decreased (P = 0.03) in LP compared with AP pigs on d 188 of age. The results suggest that the maternal LP diet impairs prenatal myofiber formation, reduces the potential of postnatal lean growth related to reduced IGF2 mRNA expression and myonuclear accumulation, and consequently changes carcass quality toward reduced lean proportion and improved tenderness at market weight. In contrast, except for a slight transient growth delay, excess dietary protein during gestation seems to have little effect on the fetal programming of postnatal muscle and adipose tissue phenotype of the progeny.  相似文献

The 4 yr productivity of 25% (QF; n = 533) and 50% (HF; n = 531) Finnsheep ewes exposed to either Suffolk or Columbia rams in one of three production systems was monitored to test the effects of system, terminal sire breed, maternal line, and their interactions on annual market lamb production. Ewe lambs and yearlings were randomly assigned to either a high-input accelerated lambing system (HIGH), a high-input annual system (MED), or a low-input annual system (LOW). Nursery facilities were available for weak lambs or those born in triplet or more births for the HIGH and MED but not for the LOW systems. Accelerated lambing protocol required early weaning. Sex-adjusted lamb weaning weights were corrected to within-system mean ages of 42 d for HIGH and 70 d for MED and LOW. The HIGH ewes weaned 1.55 lambs per year compared with 1.46 for MED and 1.18 for LOW (P less than .01). However, because of early weaning, HIGH yielded the lowest weight of weaned lamb per year. The MED ewes weaned 5.9 and 11.1 more kilograms of lamb per year than the LOW and HIGH ewes, respectively (P less than .01). The HIGH system may be economically feasible if young lambs could be inexpensively grown to feeder or market lamb weight. The HIGH ewes did not, however, increase lamb numbers in proportion to increased exposures compared with the annual systems. Breed-group effects for ewe productivity (kilogram of lamb weaned per ewe per year) were consistent across management systems, although some interactions among breed group and system were present for components of productivity. Suffolk rams yielded an advantage of 1.6 kg of weaned lamb per exposure over Columbia rams (P less than .05) due to a 3% better lamb survival (P less than .01) and heavier weaning weight, especially in the LOW system. The HF ewes weaned .1 more lambs per exposure than QF ewes (P less than .01); .06 of the lambs were nursery-reared. However, lambs from HF ewes had a 2% lower survival rate (P less than .05) and were 1.4 kg lighter at weaning (P less than .01), so overall productivity among HF and QF ewes was similar.  相似文献

The objective of the study was to test the hypothesis that birth weight (BtW) influences growth, carcass characteristics, meat quality, and postmortem (pm) proteolysis differently when pigs originate from small (S) or large (L) litters. Swiss Large White barrows (60) used in this study originated from 20 litters with either less than 10 (S) or more than 14 (L) piglets born per litter. Within each of the S and L litters, 3 barrows were selected at birth: the lightest (L-BtW), the heaviest (H-BtW), and the one with a BtW nearest to the average BtW of the litter (M-BtW). The BW and total feed intake of the individually penned pigs were determined weekly. At slaughter, carcass characteristics were assessed. Meat quality traits were determined in the LM and dark portion of semitendinosus muscle. Titin, nebulin, desmin, and integrin proteolysis were evaluated by SDS-PAGE and Western blot technique, and mu - and m-calpain activities were monitored using casein zymography. Litter size affected BtW of L-BtW and M-BtW but not of H-BtW barrows (BtW x litter size interaction; P = 0.07). From weaning to slaughter, L-BtW barrows grew slower (P < 0.01), ingested less feed (P < 0.01), and were less efficient (P < 0.01) than H-BtW and M-BtW barrows. The objectives of this study were to determine the effects of finishing lambs on concentrate (C) or by grazing ryegrass forage (F) to slaughter end weights of 52 (N) or 77 kg (H) on carcass characteristics and organoleptic properties. This experiment included 64 Targhee x Hampshire lambs (average BW = 24 +/- 1 kg) in a 2 x 2 x 2 factorial arrangement of treatments to compare wethers vs. ewes, C vs. F, and N vs. H slaughter weights. No interactions (P > 0.10) were observed between gender and other main effects. Hot carcass weight and dressing percent were greater (P < 0.001) for C- than for F-fed lambs. Backfat thickness also was greater (P < 0.001) for lambs fed C than for those fed F. Moreover, USDA lean quality score and USDA yield grades were higher (P < 0.001) for C- than for F-fed lambs, as well as for lambs slaughtered at H vs. N market weights. There was a higher (P < 0.005) incidence of off odors and off flavors in cooked muscle from F- vs. C-fed lambs, and also from H vs. N slaughter-weight lambs. The heavy C-fed lambs had juicier (P < 0.001) meat than other treatment combinations. Cooked meat from C-fed lambs received higher (P < 0.001) overall acceptability scores. Concentrate-finished lambs produced fatter carcasses and more palatable meat than forage-finished lambs; however, forage finishing allowed for slaughter at heavier weights without excessive fat deposition.  相似文献
