本文通过对成都麻羊的系统研究。揭示了该羊皮张品质优异、肉用性能好、繁殖力强、较早熟、乳脂含量高,但泌乳力低,没有毛用价值。应归属于普通肉用山羊品种。建议充分利用其早熟、高繁殖力、乳脂率高等优良遗传性状。  相似文献

The aim of the study was to compare the certain carcass and meat quality traits and also fatty acid composition of goat kids from indigenous breeds (Gokceada and Hair Goat) and dairy breeds (Saanen and Maltese). A total 40 male kids from Saanen, Gokceada, Maltese and Hair Goat breeds were collected from commercial farms after weaning. Kids were finished for 56 days with grower concentrate and alfalfa hay in the sheepfold until slaughter. Higher mean values were found for Saanen kids in terms of slaughter weight, hot carcass weight and real dressing compared with Maltese, Hair Goat and Gokceada kids under the same intensive conditions. On the other hand, there were no significant differences between breeds in terms of instrumental meat quality traits, except meat colour. Meat from Gokceada and Hair Goat kids had higher lightness and Hue angle values than Saanen kids after 24 h of blooming. High meat redness values were observed for Saanen kids after 0 and 1 h of blooming. Panellist appreciated cooked meat from Saanen and Maltese kids in overall acceptability. If the fatty acid composition of meat was taken into consideration, kids from Saanen and Gokceada breeds displayed better values, because of the lower ?SFA percentage and higher desirable fatty acids (C18:0?+?ΣMUFA?+?ΣPUFA) percentage than Maltese and Hair Goat kids. Our results indicate that male kids for Saanen which is dairy breed could be assessable for quality goat meat production.  相似文献

开发一种新型的适合大众口味的高营养奶制品。以山羊奶为主要原料,以适量的猕猴桃汁和白砂糖等作为辅料,通过工艺改进和配方优化,加工一种新型山羊奶制品。得出猕猴桃奶豆腐的加工工艺为:原料乳(制作奶皮子后的脱脂乳)→杀菌→添加发酵剂→自然凝乳→切割→排乳清→升温搅拌→保温搅拌→静置→排乳清→切碎→压榨→成形→冷藏。配方为:鲜羊奶75%,猕猴桃汁17%,白砂糖8%,再加入少量的甜味剂和调味剂。研制的猕猴桃奶豆腐既有羊奶的乳香、猕猴桃的酸甜,同时更富于其更全面的营养物质。  相似文献

近年来,高通量测序技术的规模化应用及生物信息技术的普及,极大地推动了家畜基因组学的发展,实现了分子育种标记全基因组水平的快速、精准定位,为全基因组选择育种奠定了重要基础。数千年来的驯化和选择,形成了用途多样的山羊品种,如乳用、皮用、绒用及肉用等,为人类提供了丰富的生产和生活资料。国内外学者采用高通量测序技术对山羊的遗传多样性及生产性能的遗传机制进行了研究,以期找到与山羊种质特性相关的基因,从而为山羊的遗传改良提供新的标记。作者对近五年来基于高通量测序技术研究山羊的遗传多样性和产绒、产奶、繁殖等生产性状的研究进展进行了综述,以期为评估山羊优良种质特性和与生产性状相关的优异基因定位的工作提供参考。  相似文献

Recently, the widespread use of high-throughput sequencing technology and the development of bioinformatics have been greatly contributed to the development of farm animal genomics. Whole genome-wide analysis can facilitate the fine mapping of the molecular markers related to the production traits quickly and accurately, thus providing an important theoretical basis for genome selection breeding. Several thousand years of domestication and artificial selection produce many modern goat breeds with high production of milk, fiber, and meat, which become abundant production and living materials for human populations. Researchers have studied the genetic diversity and molecular mechanisms of production traits in goats using high-throughput sequencing technology, in order to identify candidate genes related to the excellent germplasm reliable markers for genetic improvement. In this review, we summarized the five-year research progress on the genetic diversity and production traits of goats including fiber, milk production and reproduction traits, mainly based on high-throughput sequencing technology. This paper provides a reference for the evaluation of the excellent goat genetic resources and the investigation of production trait related genes.  相似文献

The aim of study was to investigate the effect of genotype on carcass measurements and meat quality characteristics of purebred Hair Goat, Saanen × Hair Goat (F1 and B1) kids under an intensive production system. In total, 24 kids were slaughtered at the age of approximately 133 days. Kids were fattened for 56 days immediately after weaning. Hot carcass weights were 6.78, 7.61 and 7.02 kg and dressing percentages were 49.71, 49.27 and 48.78%, respectively ( P  > 0.05). Differences between genotypes for carcass measurements and indexes were not significant. Effect of genotype on pH measurements, drip loss, water holding capacity, cooking loss and Warner Bratzler shear force values were not significant. Meat lightness values at 0 h, 1 h and 1 day after cutting were higher in crossbred kids than Hair Goat kids ( P  < 0.05). Redness value was significantly higher in meat samples of Hair goat kids at 0 h, 1 h and 1 day measurements ( P  < 0.05). Kid genotype had no significant effect on meat sensory characteristics, except tenderness. Panelists gave lower scores for meat tenderness to F1 and B1 crosses compared to purebred Hair Goat kids. In conclusion, higher meat lightness values of crossbred kids, at particularly B1 level, might have a positive effect on the consumer choices.  相似文献

产肉是山羊的主要性能。世界的山羊增长率虽然比其它反刍家畜快,但山羊肉仍不能满足日益增长的人口的需要,我国也不例外。因此特别需要加快山羊肉生产的发展。我国山羊肉的生产是分散在农村的。在生产山羊肉时,需要注意山羊的胴体重。总的可食率和总的有商品价值率。了解山羊肉的营养价值才能更好地发展和利用山羊肉。山羊肉是一种高蛋白、低能量的食品。山羊肉蛋白质中的各种必需氨基酸含量充足,其含量占氨基酸总量的一半左右。与理想蛋白质所含的必需氨基酸相比,有四种氨基酸含量接近理想蛋白,其余的也都相差不大。蛋白质的生物价虽不如黄牛,但比水牛高。山羊脂肪的沉积主要在内脏,皮下脂肪比较少。肉中所含的脂肪酸,以不饱和脂肪酸为多,不饱和脂肪酸对人的营养有好处。亚油酸是人体摄入能量所必需的。山羊肉的胆固醇含量也较低。肌肉中Ca的含量比牛肉少,而P的含量却比牛肉多,特别是小肠中的P含量几乎是牛的五倍。维生素B1和B2的含量山羊肉也比牛肉高  相似文献

The aim of current study was to review breeding progress and update information on genetic strategies in Iranian buffaloes. Iranian buffalo is one of the vital domestic animals throughout north, north-west, south and south-west of Iran with measurable characteristics both in milk and meat production. The species plays an important role in rural economy of the country due to its unique characteristics such as resistance to diseases and parasites, having long productive lifespan and showing higher capability of consuming low-quality forage. In Iran, total production of milk and meat devoted to buffaloes are 293,000 and 24,700 tons, respectively. Selection activities and milk yield recording are carrying out by the central government through the Animal Breeding Centre of Iran. The main breeding activities of Iranian buffaloes included the estimation of genetic parameters and genetic trends for performance traits using different models and methods, estimation of economic values and selection criteria and analysis of population structure. Incorporating different aspects of dairy buffalo management together with improved housing, nutrition, breeding and milking, is known to produce significant improvements in buffalo production. Therefore, identifying genetic potential of Iranian buffaloes, selection of superior breeds, improving nutritional management and reproduction and developing the education and increasing the skills of practical breeders can be useful in order to enhance the performance and profitability of Iranian buffaloes.  相似文献

This paper deals with the effects of structural, governmental and socio-economic conditions linked to small ruminant production, especially goat production. The number of small ruminants in Turkey fell from almost 51,530 in 1990, to 31,761 in 2007. In 1990, the number of small ruminants started to decrease due to structural, genetic and economic reasons such as a lack of state support policies, high costs of inputs, poor performance of local breeds, socio-economic conditions, and migration. In Turkey, the socio-economic and geographical structure make small ruminant production an important profession; it is also a significant source of income in rural regions. 35% of red meat and 12% of milk production is obtained from small ruminants. Although, Turkey has the highest goat population among its border and EU countries, ranks low with milk production. Reasons for the present situation are well evaluated; changes and tendencies in sheep and goat production as well as milk and meat production that are examined and associated with the population of Turkey are widely discussed. In addition, in order to improve the present situation, some technical and structural suggestions are mentioned.  相似文献

研究了四川5个地方山羊品种及波尔山羊乳上皮黏蛋白MUC1的遗传多态性。结果显示,山羊乳MUC1表现出丰富的多态性,共检测到22种基因型和9个等位基因,编码的蛋白质分子量范围为205~278ku,明显高于普通乳牛;MUC1的等位基因、基因型及其分布存在品种间差异;山羊乳MUC1基因杂合度较大,遗传变异程度高;根据乳MUC1等位基因频率对6个山羊品种进行了聚类分析,结果能较好地反映各品种间的亲缘关系。  相似文献

Research has been conducted as part of the Small Ruminant Collaborative Research Support Program (SR-CRSP) on evaluation of genetic resources and methods of effecting genetic improvement of small ruminants in the participating countries. In Kenya, the focus has been on development of a dual-purpose goat for milk and meat production in farming areas, utilizing two locally adapted breeds, Galla and East African, and two imported dairy breeds, Anglo-Nubian and Toggenburg, into a single stock. That research now has reached the stage of field testing. In Morocco, the performance of a highly prolific breed of sheep, the D'Man, and of a less prolific but larger breed, commonly raised under extensive management, the Sardi, and of their F1, F2 and backcross progeny has been evaluated for several reproduction and growth traits. Prolificacy of the D'Man was transmitted additively, but there was favorable heterosis for age at puberty, fertility and growth rate, resulting in substantial heterosis in total performance. In Indonesia, a high degree of variability in prolificacy in sheep appears to be due to segregation of a gene with large effect on ovulation rate, similar in some respects to the Booroola gene. In Peru, work has involved evaluation of effectiveness of current selection programs and estimation of phenotypic and genetic parameters, in unimproved and improved types of sheep, with a limited amount of work also on alpacas. Fiber production is the principal economic trait in alpacas. There also has been work on evaluation of hair sheep in Brazil, Kenya and Indonesia.  相似文献

Three surveys and a sensory evaluation of goat meat were conducted in Japan to examine the current needs and future possibilities of goat meat consumption. The experimental results of the present study lead us to conclude the following: (i) improving the smell of goat meat and combining the sale of goat meat with recipes may increase goat meat demand among housewives; (ii) it seems to be difficult to disseminate Okinawa goat cuisine to non‐Okinawa residents because of the typical odor of goat meat, which is unlikely to be preferred by the public; (iii) the “chewiness” of goat meat is rated highly by young participants according to a sensory evaluation, and loin meat is rated highly compared with hind leg meat; and (iv) there is a rapidly increasing interest and a tremendous purchasing drive towards goat meat among university students. However, these facts call for further investigation of the goat meat demand in Japan. The following three further experiments are needed to solve this issue: (i) breeding to improve the taste of goat meat; (ii) expanding the marketing of goat meat combined with the invention of Japanese‐style goat recipes and tie‐in sales supermarkets; and (iii) implementing further sensory analyses to compare goat meat with other meat and carrying out market analysis in Japan.  相似文献

肉质风味是味觉和嗅觉感知的感官印象,其根本是由肉中的代谢物质的含量及复杂的化学过程所决定。随着代谢物质测定技术的不断进步,肉中代谢物质的含量对肉品质的影响也越来越受到关注,肉中代谢物质含量也逐渐成为研究及育种工作的热点,进而挖掘出了很多调控代谢物质的候选基因。本文综述了畜禽肉中代谢物质的种类、形成风味的代谢物质化学反应、代谢物质对肉品质的影响以及代谢物质遗传调控。旨在阐明肉中代谢物质对肉质风味形成的调控机制,为畜禽肉质风味的改良提供理论基础和研究思路。  相似文献

保护动物品种的多样性,不仅对维护家畜的环境适应能力来说是非常关键的,还关系到未来动物生产模式的建立和完善。调查结果表明,现在世界山羊育种形势呈现一个矛盾的现象:一方面,发达国家通过完善的选育组织对山羊的乳用、肉用及毛用性能进行改进;另一方面,在一些落后的地方,山羊的产品还都用于农牧民的自身消耗。当前山羊育种情况如下,少数山羊经过了充分的选育过程并具有某些特点和特性;而大多数山羊尚未经过系统、完善的选育。通过分析山羊选育的现状,作者提出了一些建议,可以更有效的开发这一物种的遗传潜质。  相似文献
