Carcass measurements from 1,664 steers from the Germ Plasm Utilization project at U.S. Meat Animal Research Center were used to estimate heritabilities (h(2)) of, and genetic correlations (r(g)) among, 14 carcass traits adjusted to different endpoints (age, carcass weight, and fat thickness): HCW (kg), dressing percent (DP), adjusted fat thickness (AFT, cm), LM area (LMA, cm(2)), KPH (%), marbling score (MS), yield grade (YG), predicted percentage of retail product (PRP), retail product weight (RPW, kg), fat weight (FW, kg), bone weight (BNW, kg), actual percentage retail product (RPP), fat percent (FP), and bone percent. Fixed effects in the model included breed group, feed energy level, dam age, birth year, significant (P < 0.05) interactions, covariate for days on feed, and the appropriate covariate for endpoint nested (except age) within breed group. Random effects in the model were additive genetic effect of animal and total maternal effect of dam. Parameters were estimated by REML. For some traits, estimates of h(2) and phenotypic variance changed with different endpoints. Estimates of h(2) for HCW, DP, RPW, and BNW at constant age, weight, or fat thickness were 0.27, -, and 0.41; 0.19, 0.26, and 0.18; 0.42, 0.32, and 0.50; and 0.43, 0.32, and 0.48, respectively. Magnitude and/or sign of r(g) also changed across endpoints for 54 of the 91 trait pairs. Estimates for HCW-LMA, AFT-RPW, LMA-YG, LMA-PRP, LMA-FW, LMA-RPP, and LMA-FP at constant age, weight, or fat thickness were 0.32, -, and 0.51; -0.26, -0.77, and -; -0.71, -0.89, and -0.66; 0.68, 0.85, and 0.63; -0.16, -0.51, and 0.22; 0.47, 0.57, and 0.27; and -0.44, -0.43, and -0.18, respectively. Fat thickness was highly correlated with YG (0.86 and 0.85 for common age and weight) and PRP (-0.85 and -0.82 for common age and weight), indicating that selection for decreased fat thickness would improve YG and PRP. Carcass quality, however, would be affected negatively because of moderate r(g) (0.34 and 0.35 for common age and weight) between MS and AFT. Estimates of h(2) and phenotypic variance indicate that enough genetic variation exists to change measures of carcass merit by direct selection. For some carcass traits, however, magnitude of change would depend on effect of endpoint on h(2) and phenotypic variance. Correlated responses to selection would differ depending on endpoint. 相似文献

Our objectives were to estimate genetic parameters for carcass traits and evaluate the influence of slaughter end point on estimated breeding values (BV). Data provided by the American Simmental Association were divided into three sets: 1) 9,604 records of hot carcass weight (CW) and percentage retail cuts (PRC), 2) 6,429 records of CW, PRC, and marbling score (MS), and 3) 1,780 records of CW, PRC, MS, fat thickness (FT), and longissimus muscle area (LMA). Weaning weights (WW) from animals with carcass data and from their weaning contemporaries were used. Data were analyzed with a multiple-trait animal model and REML procedures to estimate genetic parameters and BV on an age-, CW-, MS-, or FT-constant basis. The model for carcass traits included fixed contemporary group and covariates for breed, heterozygosity, and slaughter end point and random additive direct genetic and residual effects. Weaning weight was preadjusted for founder effects, direct and maternal heterosis, age of dam, and age of calf. The model for WW included fixed contemporary group and random additive direct genetic, maternal genetic, maternal permanent environment, and residual effects. Heritabilities from data set 1 were 0.34 for CW and 0.25 for PRC on an age-constant basis and 0.25 for PRC on a CW end point. Heritabilities for data set 2 were 0.35, 0.24, and 0.36 for CW, PRC, and MS, respectively, on an age-constant basis. Data set 2 heritabilities were 0.25 for PRC and 0.34 for MS on a CW-constant basis and 0.33 for CW and 0.25 for PRC at a constant MS end point. Heritabilities on an age-constant basis for data set 3 were as follows: CW, 0.32; PRC, 0.09; MS, 0.12; FT, 0.10; and LMA, 0.26. Heritability estimates for data set 3 on a CW-, MS-, and FT-constant basis were similar to those on an age-constant basis. Heritabilities were 0.12 for PRC, 0.12 for MS, 0.14 for FT, and 0.22 for LMA on a CW-constant basis; 0.30 for CW, 0.09 for PRC, 0.10 for FT, and 0.28 for LMA at a constant MS end point; and 0.33, 0.17, 0.13, and 0.29 for CW, PRC, MS, LMA on a FT-constant basis. Genetic correlations among traits varied across groups and end points but suggested that it should be possible to select for improved lean yield without sacrificing quality grade. Correlations were calculated among BV computed at different end points. Adjustment to various end points resulted in some changes in BV and reranking of sires, especially for PRC; however, the number of records available had a larger influence than slaughter end point. 相似文献

Partial carcass dissection data from 1,031 finished crossbred beef steers were used to calculate heritabilities and genetic correlations among subcutaneous, intermuscular, and body cavity fat percentage and marbling score adjusted to slaughter age-, HCW-, fat depth-, and marbling score-constant endpoints. Genetic correlations were also calculated among these fat partitions with live growth and ultrasound traits evaluated in yearling beef bulls (n = 2,172) and steer carcass measurements. Heritabilities of the different fat partitions ranged from 0.22 (marbling score-constant body cavity fat) to 0.46 (HCW-constant marbling score). Genetic correlations between subcutaneous fat and intermuscular fat (rg = 0.16 to 0.32) and between intermuscular fat and body cavity fat (rg = 0.38 to 0.50) were more highly associated than subcutaneous fat and body cavity fat (rg = -0.08 to 0.05), indicating that fat depots are not under identical genetic control. Adjusting fat depots to different end points affected the magnitude but usually not the sign of the genetic correlations. Bull postweaning gain was associated with intermuscular (-0.24 to -0.35), body cavity (-0.24 to -0.29), and marbling fat (-0.24 to -0.39) in steers. Bull hip height was associated with body cavity (-0.20 to -0.29) and marbling fat (-0.20 to -0.47) in steers. Bull ultrasound fat depth was associated with subcutaneous (0.11 to 0.29), intermuscular (0.05 to 0.36), body cavity (0.27 to 0.49), and marbling fat (0.27 to 0.73) in steers. Bull ultrasound intramuscular fat percentage was associated with subcutaneous (-0.22 to -0.44) and intermuscular fat (-0.06 to 0.31) in steers. Bull ultrasound LM area was associated with body cavity (-0.25 to -0.31) and marbling fat (-0.25 to -0.30) in steers. Ultrasound LM width measurements were negatively correlated with subcutaneous fat (rg = -0.09 to -0.18), intermuscular fat (rg = -0.53 to -0.61), body cavity fat (rg = -0.63 to -0.69), and marbling score (rg = -0.75 to -0.87) at slaughter age-, HCW-, and fat depth-constant endpoints; correlations were generally lower at a marbling score-constant end point (rg = 0.07 to -0.49). Ultrasound indicator traits measured in seedstock may be useful in altering fat partitioning in commercial beef carcasses. 相似文献

Sources of individual plus maternal effects on lamb mortality were studied in data collected at the U.S. Meat Animal Research Center from 1980 to 1985 for paternal and maternal breeds lambing yearly and for maternal breeds lambing at 8-mo intervals. Records included 16,881 lambs born. Breeds included were Finnsheep (F), Dorset (D), Rambouillet (R), Suffolk (S), Targhee (T), Composite 1 (C1 = F/2, D/4, R/4), Composite 2 (C2 = F/2, S/4, T/4), and Composite 3 (C3 = Columbia/2, S/4, Hampshire/4), Traits analyzed were perinatal, postnatal, and total mortality to 60 d of age and postnatal respiratory, digestive, starvation, injury, and other or unknown causes of mortality. The least squares analyses included breed, year, sire within breed-year, sex, linear and quadratic season and age of dam covariates (Model 1), plus litter size (Model 2), plus birth weight (Model 3), and significant two-way interactions. Age of dam, litter size, and birth weight all had important, often quadratic, effects that differed among breeds. Models 1, 2, and 3, respectively, reduced variation by 8, 10, and 16% for perinatal, 7, 8, and 12% for postnatal, and 9, 11, and 20% for total mortality. In Model 1, breed means ranged from 3.5 to 16.2% for perinatal, 7.2 to 21.1% for postnatal, and 16.7 to 32.8% for total mortality. Respiratory and starvation problems were major causes of postnatal mortality. Heterosis for lamb survival retained in composites was 9% for C1 and 18% for C2. Crossfostering techniques were used to evaluate breed prenatal, breed postnatal and heterosis effects in Duroc and Yorkshire swine. Traits analyzed for these effects were: age adjusted to 104 kg (DAYS), backfat adjusted to 104 kg (AJBF), average daily gain (ADG), weight/day of age (WDA), unadjusted backfat (BF) and weight at 154 d (WT154). Breed prenatal (genetics and prenatal maternal) effects were important for BF and WT154 (P less than .10). Pigs gestated by Duroc dams tended to be fatter and weigh more at 154 d than pigs from Yorkshire dams. Breed postnatal effects were important only for AJBF (P less than .05). Pigs reared by Duroc nurses were fatter than pigs reared by Yorkshire nurses. Prenatal dam x postnatal nurse interaction effects were important for BF (P less than .10) and AJBF (P less than .05). Heterosis values were -10.2, 8.0, 13.7, 13.6, 14.1 and 7.7% for DAYS, AJBF, ADG, WDA, WT154 and BF, respectively. Differences between purebred and crossbred pigs were larger when purebred and crossbred pigs were reared in the same litter than when reared separately. These data suggest that intra-litter competition between purebred and crossbred pigs may have a detrimental effect on postweaning growth for purebred pigs. 相似文献

The aim of this study was to estimate the non‐additive genetic effects of the dominance component of heterosis as well as epistatic loss on semen traits in admixed Swiss Fleckvieh, a composite of Simmental (SI) and Red Holstein Friesian (RHF) cattle. Heterosis is the additional gain in productivity or fitness of cross‐bred progeny over the mid‐purebred parental populations. Intralocus gene interaction usually has a positive effect, while epistatic loss generally reduces productivity or fitness due to lack of evolutionarily established interactions of genes from different breeds. Genotypic data on 38,205 SNP of 818 admixed, as well as 148 RHF and 213 SI bulls as the parental breeds were used to predict breed origin of alleles. The genomewide locus‐specific breed ancestries of individuals were used to calculate effects of breed difference as well as the dominance component of heterosis, while proxies for two definitions of epistatic loss were derived from 100,000 random pairs of loci. The average Holstein Friesian ancestry in admixed bulls was estimated 0.82. Results of fitting different linear mixed models showed including the dominance component of heterosis considerably improved the model adequacy for three of the four traits. Inclusion of epistatic loss increased the accuracy of the models only for our new definition of the epistatic effect for two traits, while the other definition was so highly correlated with the dominance component that statistical separation was impossible. 相似文献

The purpose of this study was to determine and describe the effects of slaughter age (at constant weights) on pre- and post-weaning growth rate and carcass traits of unselected steer and heifer progeny from a crossbred beef herd. The data were obtained from 340 heifers and 377 steers weaned at 305 days of age and fed a high-energy post-weaning diet. Heifers and steers were slaughtered at individual unshrunk weights of 420 and 470 kg, respectively, and divided into slaughter age classes based on 25-day intervals. There were differences (P < 0.01) between slaughter age classes for all growth traits including 305-day (weaning) weight, post-weaning daily gain, days on feed, and weight/day. Mean 305-day weight of steers in the youngest slaughter age class (347.8 kg; 376–400 days of age) was 28% greater than the mean of steers in the oldest age class (272.2 kg;>501 days of age). The youngest steer class averaged 63% more for daily gain than the oldest steer class (1.462 vs. 0.894 kg); the corresponding value for heifers was 64%. Post-weaning time in the feedlot ranged from 84.7 days for the youngest steer to 215.6 for the oldest steer class. Calculations based on mean differences between age classes in 305-day weight, daily gain and days on feed indicated that variability in weaning weight and in daily gain were of similar importance in determining slaughter age. Marbling score was greater (P < 0.01) for older steer classes, but was not different in the heifer data. Fat thickness of the oldest steer class was 25% more than the youngest steer class (1.89 vs. 1.51 cm); the corresponding percent in heifers was 30%. With the exception of differences in untrimmed rib and chuck percents in steers (P < 0.05), and rib specific gravity in heifers (P < 0.05), carcass quantity traits were essentially unaffected by slaughter age class when marbling score and fat thickness were included as continuous independent variables. The effects of gender and slaughter weight on the growth performance, carcass traits, and meat quality characteristics of heavy pigs 总被引:5,自引:0,他引:5
Crossbred pigs (n = 192) from Piétrain x Large White sires mated to Landrace x Large White dams, with a mean BW of 75 +/- 1.3 kg, were used to investigate the effects of gender and slaughter weight (SW) on growth performance, carcass characteristics, and meat quality. Pens of pigs (eight pigs/pen) were assigned randomly to one of six treatments arranged in a 2 x 3 factorial design with two genders (barrows or gilts) and three SW (116, 124, or 133 kg). Each treatment was replicated four times. Over the entire trial, barrows had higher (P < 0.001) ADFI (as-fed basis) and ADG than gilts; however, gilts had higher (P < 0.05) gain-to-feed ratios (G:F) than barrows. Barrows had lower (P < 0.01) dressing percents than gilts and produced fatter (P < 0.001) carcasses that had lower trimmed shoulder (P < 0.10) and ham (P < 0.001) yields than gilts. There was a trend for the semimembranosus muscle (SM) from barrows to have a higher (P < 0.10) 45-min pH than that of gilts, but 24-h pH was 0.11 pH unit higher (P < 0.01) in the SM of barrows than gilts. Gender had no (P > 0.10) effect on the moisture and lipid content of the longissimus muscle (LM), nor did gender affect (P > 0.10) LM color, myoglobin content, or thaw loss percentage. However, the LM from barrows had lower (P < 0.05) cooking loss percentages and tended to have lower (P < 0.10) shear force values than the LM from gilts. Pigs slaughtered at 116 kg had higher (P < 0.05) ADG than pigs slaughtered at 124 and 133 kg. Daily feed intake (as-fed basis) was not (P > 0.10) different among SW; however, pigs slaughtered at 116 and 124 kg had higher (P < 0.001) G:F than those slaughtered at 133 kg. Dressing percent, backfat depth, carcass length, and ham and shoulder weights increased (P < 0.001) as SW increased from 116 to 133 kg. The initial (45-min) pH of the SM from pigs slaughtered at 133 kg was higher (P < 0.05) than from pigs slaughtered at 116 or 124 kg; however, 24-h pH was not (P > 0.10) affected by SW. The LM from pigs slaughtered at 133 kg was darker (lower L* values; P < 0.001), redder (higher a* value; P < 0.01), and had more (P < 0.001) myoglobin than the LM of pigs slaughtered at 116 and 124 kg. Barrows and gilts of this particular crossbreed can be used to produce acceptable quality fresh pork when slaughtered at 116 kg; however, increasing SW to 124 kg, or more, decreased live pig performance and carcass leanness without any additional benefits to pork quality attributes. 相似文献

Effects of dietary fat and sire breed on puberty, weight, and reproductive traits of F1 beef heifers

Prepubertal F1 heifers (n = 246; from crossbred dams bred to either Hereford [H], Limousin [L], or Piedmontese [P] sires) were fed 1.9% (LF) or 4.4% (HF) dietary fat from 254+/-4 d of age until they reached puberty or the breeding season started. Safflower seeds (37% oil with 79% linoleic acid) were the added fat source. Blood samples and backfat thickness measurements were obtained from 60 randomly selected heifers representing the sire breeds and diets studied. In addition, five H-sired heifers from both diets were serially bled at 28-d intervals. Total gain, ADG, body condition score, and backfat thickness were affected by sire breed (P < 0.001) but not diet. Backfat thickness was affected (P < 0.01) by the diet x time on feed interaction. Diet did not affect pubertal age (P > 0.10) but tended (P = 0.08) to affect the percentage of heifers pubertal by the beginning of breeding (June 4). Sire breed effects on puberty age at beginning of breeding, percentage pubertal at the beginning of breeding, and puberty age during the entire study were all highly significant. The effect of the diet x sire breed interaction on percentage of heifers pubertal at beginning of breeding (P < 0.05) was 74.4 vs 76.3% in H-sired, 69.8 vs 60.5% in L-sired, and 76.2 vs 97.6% in P-sired heifers (LF vs HF, respectively). Number of AI services per pregnancy and final pregnancy percentage were not affected by diet or the diet x sire breed interaction. Diet affected progesterone (P < 0.05) and cholesterol (P < 0.001) concentrations, and sire breed tended to affect (P = 0.06) cholesterol concentrations. The effect of the diet x time on feed interaction on cholesterol concentrations was highly significant. There were no effects of diet or sample period on insulin or growth hormone concentrations in serially collected blood samples. We conclude that effects of supplemental dietary fat may be breed-dependent and hypothesize that a feeding period of approximately 60 d duration may be more appropriate than the 162 d used in this study. 相似文献

Data (n = 1,746) collected from 1985 through 1995 on Korean Native Cattle by the National Livestock Research Institute of Korea were used to estimate genetic parameters for marbling score, dressing percentage, and longissimus muscle area, with backfat thickness, slaughter age, or slaughter weight as covariates. Estimates were obtained with REML. Model 1 included animal genetic and residual random effects. Model 2 was extended to include an uncorrelated random effect of the dam. Model 3 was based on Model 1 but also included sire x region x year-season interaction effects. Model 4 combined Models 2 and 3. All models included fixed effects for region x year-season and age of dam x sex combinations. From single-trait analyses, estimates of heritability with covariates to adjust for backfat thickness, slaughter age, and slaughter weight from Model 4 were, respectively, .10, .08, and .01 for marbling score; .09, .12, and .16 for dressing percentage; and .18, .17, and .24 for longissimus muscle area. From three-trait analyses, estimates of genetic correlations between marbling score and dressing percentage, marbling score and longissimus muscle area, and dressing percentage and longissimus muscle area were, respectively, -.99, .20, and -.11 with backfat thickness as covariate; -.88, .47, and .01 with slaughter age as covariate; and -.03, .39, and .91 with slaughter weight as covariate. Results of this study suggest that choice of covariate (backfat thickness, slaughter age, or slaughter weight) for the model seems to be important for carcass traits for Korean Native Cattle. Including sire x region x year-season interaction effects in the model for marbling score and dressing percentage may be important because whether sire x region x year-season interaction effects were in the model affected estimates of other variance components for the three carcass traits. Whether the maternal effect was in the model had little effect on estimates of other parameters. With backfat thickness and slaughter age end points, selection for increasing marbling score would be expected to result in decreasing dressing percentage for Korean Native Cattle. With slaughter weight as a covariate for end point, increased longissimus muscle area would be associated with increased dressing percentage, and increased marbling score would be related to increased longissimus muscle area. The differences in estimates associated with choice of end point, however, need further study. 相似文献

Barrows and gilts (n = 128) from four breed crosses were used to investigate the effect of age at slaughter on carcass traits, proteolytic enzyme activity, and meat and fat quality. Pigs were blocked by breed cross into four blocks, and within blocks, one pen (eight barrows and eight gilts) was assigned randomly to be slaughtered at either 8 or 10 mo of age. Pigs were fed a corn-barley-soybean meal finisher diet from 104 +/- 2.5 d of age (37.7 +/- 0.33 kg BW) to the appropriate slaughter age. Carcasses from older (10 mo) pigs had lower (P < 0.01) muscularity indexes and lean cut yields than those of younger (8 mo) pigs, but dressing percentage and longissimus muscle area increased (P < 0.01) with age. Older pigs produced a redder (P < 0.01) and darker (P < 0.05) semimembranosus, with lower (P < 0.01) ultimate pH and cathepsin B and B + L activities, as well as higher (P < 0.01) aminopeptidase hydrolyzing activity than younger pigs. Moreover, the longissimus muscle of pigs slaughtered at 10 mo of age had lower (P < 0.01) drip and cooking loss percentages than that from pigs slaughtered at 8 mo of age. Ham subcutaneous fat from 10-mo-old pigs had greater (P < 0.05) percentages of oleic acid and lower (P < 0.01) proportions of moisture, linoleic, and linolenic acids than subcutaneous fat from pigs slaughtered at 8 mo of age. Results from this study indicate that fresh hams from pigs slaughtered at 10 mo of age would be more suitable for the production of high-quality, Italian, dry-cured hams. 相似文献

Maternal grandsire,granddam, and sire breed effects on growth and carcass traits of crossbred cattle
Postweaning growth, feed efficiency, and carcass traits were analyzed on 1,422 animals obtained by mating F1 cows to F1 (Belgian Blue x British breeds) or Charolais sires. Cows were obtained from mating Hereford, Angus, and MARC IIIHereford, 1/4 Angus, 1/4 Pinzgauer, and 1/4 Red Poll) dams to Hereford or Angus (British breeds), Tuli, Boran, Brahman, or Belgian Blue sires. Breed groups were fed in replicated pens and slaughtered serially in each of 2 yr. Postweaning average daily gain; live weight; hot carcass weight; fat depth; longissimus area; estimated kidney, pelvic, and heart fat (percentage); percentage Choice; marbling score; USDA yield grade; retail product yield (percentage); retail product weight; fat yield (percentage); fat weight; bone yield (percentage); and bone weight were analyzed in this population. Quadratic regressions of pen mean weight on days fed and of cumulative ME consumption on days fed were used to estimate gain, ME consumption and efficiency (Mcal of ME/kg of gain) over time (0 to 200 d on feed), and weight (300 to 550 kg) intervals. Maternal grandsire breed was significant (P < 0.01) for all traits. Maternal granddam breed (Hereford, Angus, or MARC III)was significant (P < 0.05) only for fat depth, USDA yield grade, retail product yield, fat yield, fat weight, and bone yield. Sire breed was significant (P < 0.05) for live weight, hot carcass weight, longissimus area, and bone weight. Sex class was a significant (P < 0.001) source of variation for all traits except for percentage Choice, marbling score, retail product yield, and fat yield. Interactions between maternal grandsire and sire breed were nonexistent. Sire and grandsire breed effects can be optimized by selection and use of appropriate crossbreeding systems. 相似文献

Retained heterosis in F2 cows nursing F3 progeny was evaluated in 3-, 4-, and greater than or equal to 5-yr-old cows. Traits evaluated included milk yield at three stages of lactation and 200-d weight of progeny. Breed effects were evaluated in the nine parental breeds (Red Poll [R], Hereford [H], Angus [A], Limousin [L], Braunvieh [B], Pinzgauer [P], Gelbvieh [G], Simmental [S], and Charolais [C]) that contributed to the three composite populations (MARC I = 1/4 B, 1/4 C, 1/4 L, 1/8 H, 1/8 A; MARC II = 1/4 G, 1/4 S, 1/4 H, 1/4 A; and MARC III = 1/4 R, 1/4 P, 1/4 H, 1/4 A). Breed effects were significant for 12-h milk yield, estimated 200-d milk yield, and 200-d weight of progeny. Herefords were lowest (P less than .05) for 12-h milk yield and estimated 200-d milk yield, and Braunvieh produced significantly more milk than all breed groups except Pinzgauer and Simmental, for which the difference approached significance. The correlation among breed group means (nine parental breeds and three composites) for 12-h milk yield with 200-d weight of progeny was .91. We studied genetic relationships between age-constant live yearling beef bull growth and ultrasound traits and steer carcass traits with dissected steer carcass lean percentage adjusted to slaughter age-, HCW-, fat depth-, and marbling score-constant end points. Three measures of steer carcass lean percentage were used. Blue Tag lean percentage (BTLean) was predicted from HCW, fat depth, and LM area measurements. Ruler lean percentage (RulerLean) was predicted from carcass fat depth and LM depth and width measurements. Dissected lean percentage (DissLean) was based on dissection of the 10-11-12th rib section. Both BTLean (h2 = 0.30 to 0.44) and DissLean (h2 = 0.34 to 0.39) were more heritable than RulerLean (h2 = 0.05 to 0.14) at all end points. Genetic correlations among DissLean and RulerLean (rg = 0.61 to 0.70), DissLean and BTLean (rg = 0.56 to 0.72), and BTLean and RulerLean (rg = 0.59 to 0.90) indicated that these traits were not genetically identical. Adjusting Diss-Lean to different end points changed the magnitude, but generally not the direction, of genetic correlations with indicator traits. Ultrasound scan-age-constant live yearling bull lean percentage estimates were heritable (h2 = 0.26 to 0.42) and genetically correlated with each other (rg = 0.68 to 0.99) but had greater correlations with DissLean at slaughter age (rg = 0.24 to 0.48) and HCW (rg = 0.16 to 0.40) end points than at fat depth (rg = -0.08 to 0.13) and marbling score (rg = 0.02 to 0.11) end points. Scan-age-constant yearling bull ultrasound fat depth also had stronger correlations with DissLean at slaughter age (rg = -0.34) and HCW (rg = -0.25) than at fat depth (rg = -0.02) and marbling score (rg = -0.03) end points. Yearling bull scan-age-constant ultrasound LM area was positively correlated with DissLean at all endpoints (rg = 0.11 to 0.23). Genetic correlations between yearling bull LM method 1 width (rg = 0.38 to 0.56) and method 2 depth (rg = -0.17 to -0.38) measurements with DissLean suggested that LM shape may be a valuable addition to genetic improvement programs for carcass lean percentage at slaughter age, HCW, and fat depth constant end points. At all end points, steer carcass fat depth (rg = -0.60 to -0.64) and LM area (rg = 0.48 to 0.59) had stronger associations with DissLean than did corresponding live yearling bull measurements. Improved methods that combine live ultrasound and carcass traits would be beneficial for evaluating carcass lean percentage at fat depth or marbling score end points. 相似文献

Data from 970 feedlot steers and bulls were used to evaluate effects of different age end points on the accuracy of prediction models for percentage of retail product, retail product weight, and hot carcass weight. Cattle were ultrasonically scanned three to five times for fat thickness, longissimus muscle area, and percentage of intramuscular fat. Live animal measures of body weight and hip height were also taken during some of the scan sessions. Before development of prediction equations, live and ultrasound data were adjusted to four age end points using individual animal regressions. Age end points represented mean age at slaughter (448 d), mean age at the second-to-last scan before slaughter (414 d), mean age at the third-to-last scan before slaughter (382 d), and an age end point of 365 d. Ultrasound and live animal measures accounted for a large proportion of the variation in the dependent variables regardless of the age end point considered. For all three traits, final models based on independent variables adjusted to earlier ages of 365 and 382 d showed better or at least similar model R2 and root mean square errors than those based on independent variables adjusted to a mean slaughter age of 448 d. Validation of the models using independent data from 282 steers resulted in a mean across-age rank correlation coefficient of .78, .88, and .83 between actual and predicted values of the percentage of retail product, hot carcass weight, and retail product weight, respectively. Mean across-age rank correlation of breeding values for the corresponding traits were .92, .89, and .82. The results of this study suggest that live and ultrasound traits measured as early as 365 d could be used to predict end product traits as accurately as similar measures made before slaughter at age 448 d. 相似文献

The effect of selection for growth rate on carcass and meat quality was assessed by comparing selected and control populations of rabbits measured at the same stage of maturity and slaughtered at 9 and 13 wk of age. Embryos belonging to Generation 7 were frozen, thawed, and implanted in does to produce the control group. The control group was formed from the offspring of the embryos belonging to the Generation 7. Selected animals belonging to Generation 18 (S) were compared with contemporary animals of the control group (C). Carcasses were dissected and measured according to World Rabbit Science Association recommended practices. When animals were compared at similar degrees of maturity, selection for growth rate did not produce a negative effect on carcass and meat quality. There was no increase in fat content of the carcass, and there was an improvement of the meat:bone ratio with selection, with a difference between C and S groups of -0.42. However, the carcasses of S animals have 1.45% lower water-holding capacity. Carcass quality changed markedly with animal age. Heavy rabbit carcasses had lower organ percents and a higher loin percent. Dissectible and i.m. fat content were higher in older rabbits, with older animals having 0.97 and 0.79% more dissectible and i.m. fat content, respectively. Meat quality traits improved with age of slaughter, although there was an increase in glycolytic metabolism. Results from this study indicate that selection for growth rate has little effect in carcass and meat quality when rabbits are measured at the same stage of maturity. 相似文献

Crossbred pigs (n = 200) from Duroc sires mated to Landrace x Large White dams, with a mean BW of 107.0 +/- 2.4 kg and intended for highquality dry-cured hams (Teruel ham) from Spain, were used to investigate the effects of sex (barrows and gilts) and slaughter weight (SW; 120, 125, 130, 135, and 140 kg of BW) on growth performance and carcass characteristics. For productive performance, there were 5 treatments based on 5 SW; each treatment was replicated 4 times and the replicate was a pen made up of 5 barrows and 5 gilts allotted together. For carcass traits, there were 10 treatments based on 2 sexes and 5 SW; each treatment was replicated 20 times and the replicate was a carcass. Barrows had fatter carcasses (P < 0.001) and wider hams (P < 0.01) but a lower yield of trimmed shoulder (P < 0.05), loin (P < 0.001), and ham (P < 0.001) than gilts. Also, castrates tended to show a greater proportion of final suitable carcasses for Teruel ham (P < 0.10) than females because more barrows than gilts fulfilled the minimum requirement of carcass weight and fat thickness in the gluteus medius (GM) muscle (P < 0.01). An increase in SW tended to decrease ADG and G:F (P < 0.10). In addition, dressing percentage, fat, and dimensions of carcass and ham increased as SW increased (P < 0.001). Although the weight of trimmed primal cuts (shoulder, loin, and ham) increased with SW, the yield of trimmed loin or ham decreased (P < 0.01). The proportion of final suitable carcasses for Teruel ham improved as SW increased up to 130 kg of BW but not thereafter (P < 0.001) because of an increase in percentage carcasses that fulfilled the minimum carcass and ham weight (P < 0.001) and fat in GM (P < 0.05). We can conclude that barrows were better than gilts when intended for Teruel ham. Furthermore, an increase in SW up to 130 kg in pigs impaired growth performance but improved some aspects of carcass quality that are required by the Teruel ham industry. 相似文献

Crossbred steer and heifer progeny from 5-, 6- and 7-yr-old dams produced in a four-breed diallel crossing experiment involving the Brown Swiss, Red Poll, Hereford and Angus maternal grandsires and maternal granddams were evaluated for postweaning growth and carcass traits to estimate breed mean maternal heterosis, maternal heterosis for specific breed cross females, average maternal heterosis for all crosses, breed grandmaternal effects and net breed effects in crosses. All progeny evaluated were born in 1979 and 1980 and were sired by 7/8 or 15/16 Simmental bulls. Average maternal heterosis was significant for 200-d weight in heifers but not in steers and was not significant for final weight (444-d) in either heifers or steers. The effects of maternal heterosis on postweaning growth were not important. Differences among breeds in mean maternal heterosis values were small for growth-related traits. Breeds did not differ (P greater than .05) in grandmaternal effects for growth-related traits; Brown Swiss tended to be highest, Red Poll lowest, with Hereford and Angus intermediate. Differences in net breed effects in crosses favored Brown Swiss over the three other breeds and were generally significant for growth traits. Average maternal heterosis, though generally positive, was not significant for carcass traits on either an age-constant or weight-constant basis. Differences among breeds were small in grandmaternal effects, specific heterosis and net effects in crosses for carcass traits associated with both weight or composition; generally the Brown Swiss breed was favored on carcass traits associated with weight in the age-constant analysis and generally had a higher lean-to-fat ratio than the three other breeds in both the age-constant and weight-constant analyses. 相似文献

Meat quality characteristics of Bafra ram lambs slaughtered at different weights were investigated. A total of 24 lambs fattened
intensively was slaughtered at four slaughter weights of 30, 35, 40, and 45 kg. Water-holding capacity, cooking loss, tenderness,
color, as well as protein content did not vary significantly among the slaughter weight groups, although the 30-kg slaughter
weight lambs displayed the greatest postmortem pH fall in musculus longissimus dorsi (P < 0.05). As slaughter weight increased, intramuscular fat of musculus longissimus dorsi showed an increasing nutritive value
(P < 0.05), total unsaturated fatty acids/saturated fatty acids ratio (P < 0.05), and n6/n3 ratio (P < 0.05). However, atherogenic index and thrombogenic index values decreased with increasing slaughter weight, although this
