气调箱贮藏甜樱桃品质变化研究 总被引:3,自引:0,他引:3
本文以美早和萨米脱为试材,研究了气调箱保鲜处理对果实贮藏品质变化的影响。结果显示,甜樱桃贮藏过程中,气调箱内CO2浓度基本维持在12-15%;气调箱处理甜樱桃果实硬度显著高于对照果实,轻微降低了可溶性固形物的含量;但却保持了果实较高的可滴定酸含量以及维生素C含量。气调处理最明显的效果就是降低了甜樱桃果实的腐烂率。两品种相比较,萨米脱的腐烂率要远低于美早,耐贮性较好。两品种果实0oC贮藏60 d后仍具有较好的感官品质,并可以保证3 d的常温货架期。 相似文献

不同浓度臭氧处理对采后猕猴桃货架期间质构性能的影响 总被引:1,自引:0,他引:1
为探讨不同浓度臭氧处理对猕猴桃果实质地的影响,以"贵长"猕猴桃为试材,在(0±0.3)℃冷藏条件下贮藏120 d后进行货架试验,研究果实的腐烂情况,并应用质地多面分析法(TPA)对猕猴桃果肉质地参数差异变化进行研究。结果表明:臭氧能够抑制猕猴桃果实腐烂率的上升,浓度为200 mg/L的臭氧处理对果实腐烂率的抑制效果最好,货架结束时(12 d),果实腐烂率仅为13.71%;果实的硬度、弹性、凝聚性、咀嚼性和回复性相互之间均有较好的相关性,但黏着性与其他指标相关性较差,所以用硬度、弹性、凝聚性、咀嚼性和回复性作为评价猕猴桃质构性能的主要参数;与对照比较,臭氧均可更好地保持猕猴桃果实的硬度、弹性、凝聚性、咀嚼性和回复性等质构性能,其中200 mg/L臭氧处理效果优于浓度为100 mg/L和300 mg/L的臭氧处理组。因此,采后用200 mg/L臭氧处理猕猴桃能够保持果实较好的保鲜效果,更好地维持果实的质构性能。结果还表明,猕猴桃的腐烂率(x)与果肉硬度(y)在一定范围内呈现良好的线性关系,提出了拟合回归方程(y=0.244x2-24.39x+708.8,R2=0.915)用于臭氧处理猕猴桃货架期果肉质地变化的评价依据。 相似文献

为探讨西洋梨低温贮藏出库后常温货架期期间的品质变化问题,将采后不同处理的‘阿巴特’西洋梨果实在低温(0±0.5)℃冷藏120 天后再进行常温(25℃)货架5 天的品质研究。对‘阿巴特’西洋梨进行普通包果纸包果处理、壳聚糖涂被纸包果处理、壳聚糖涂被处理、1 μL/L 1-MCP处理、热水处理、热水+果蜡处理、果蔬洗涤剂处理、果蔬洗涤剂+果蜡处理、二苯胺处理(0.20%)、乙氧基喹处理(浓度分别为0.10%、0.20%和0.30%),研究其在冷藏后货架期间果实虎皮病和好果、硬度、可溶性固形物含量、pH等品质变化。不同处理的‘阿巴特’果实在货架期间的外观、果肉硬度、可溶性固形物含量和pH均为极显著变化。1-MCP处理和热水处理的‘阿巴特’在降低虎皮病发生和保持好果率方面的效果优于其他处理;1-MCP处理、果蔬洗涤剂+果蜡处理的‘阿巴特’在货架期间均提高了果实的果肉硬度,热水+果蜡处理、普通包果纸包果处理、0.20%二苯胺处理的‘阿巴特’均在货架后期保持了果实的果肉硬度;壳聚糖涂被处理的‘阿巴特’在货架初期提高了果实的可溶性固形物含量。1-MCP处理在预防货架期虎皮病发生、提高好果率、保持果实硬度、可溶性固形物含量和pH等方面的综合效果高于其他处理。 相似文献

为探究采前处理对蟠枣果实采后贮藏品质的影响,以新疆主栽鲜食品种蟠枣为研究对象,分别于果实花期、幼果期、膨大期、着色期采用清水(CK)、10 g/L氯化钙(CaCl2)、100 mmol/L水杨酸(SA)和10 g/L CaCl2+100 mmol/L SA进行采前喷施处理,采收后置于常温货架贮藏,每天统计果实的转红率、转红指数、腐烂率和失重率,测定果实的可溶性固形物含量、硬度和色泽等指标。结果表明:采前喷施CaCl2、SA和CaCl2+SA均可一定程度上抑制蟠枣的转红和腐烂,使其保持较低的失重率,使果实维持较高的可溶性固形物含量和硬度,保持较好的色泽,其中,10 g/L CaCl2+100 mmol/L SA采前处理效果最佳,常温货架8 d时,果实的转红率和腐烂率分别较对照低23.34个百分点和36.66个百分点,失重率仅为1.68%,果实可溶性固形物含量维持在21.47%,硬度为9.45 kg/cm2,保持较好的商品性。综上,采前喷施10 g/L CaC... 相似文献

分别采用普鲁兰多糖(1.5%、2.0%、2.5%)、谷胱甘肽(0.2%、0.3%、0.4%)、纳他霉素(0.02%、0.03%、0.04%)、柠檬酸(3%、4%、5%)4种保鲜剂溶液对圣女果进行处理,通过考察果实硬度、失重率、VC含量、腐烂率、可溶性固形物含量的变化以及感官评分的差异,判断不同保鲜剂对圣女果的保鲜效果.结果表明:2.5%普鲁兰多糖溶液对降低果实失重率、腐烂率和保持VC含量具有较好的效果;0.4%谷胱甘肽溶液对保持果实硬度及降低失重率具有较好的效果;0.03%纳他霉素溶液对保持果实硬度、VC及可溶性固形物含量,降低腐烂率具有较好的效果;3%柠檬酸溶液对保持果实硬度和可溶性固形物含量,降低腐烂率具有较好的效果.总体来看,各浓度组保鲜剂在保持圣女果果实硬度和可溶性固形物含量,减少水分及VC流失,降低腐烂率上均具有一定的效果,可以有效延长圣女果货架期. 相似文献

本文以鸭梨果实为试材,于0 ℃低温冷藏6个月后,采用1.0 mM ASA处理,与对照(CK)同时转入20℃,并对鸭梨果实货架期的硬度、TSS、失重率、呼吸速率、乙烯释放速率、可滴定酸和腐烂率等进行了研究,结果表明,ASA处理可延缓鸭梨果实的硬度下降,减轻果实的失重,抑制果实的呼吸和乙烯释放速率,维持鸭梨果实较好的外观品质和食用品质,延长其货架寿命。 相似文献

Strawberries (Fragaria x ananassa Duch.) were treated either with 1% calcium gluconate dips, 1.5% chitosan coatings or with a coating formulation containing 1.5% chitosan + 1% calcium gluconate and stored at 20 °C for up to 4 days. The effectiveness of the treatments was assessed by evaluating their impact on the following parameters: fungal decay incidence, loss of weight, firmness, external color, pH, titratable acidity and soluble solids content. Calcium dips were effective in decreasing surface damage and delaying both fungal decay and loss of firmness compared to untreated fruit. No sign of fungal decay was observed in fruit coated with 1.5% chitosan which also reduced fruit weight loss. Chitosan coatings markedly slowed the ripening of strawberries as shown by their retention of firmness and delayed changes in their external color. To a lesser extent titratable acidity and pH were also affected by coatings. Whilst addition of calcium gluconate to the chitosan coating formulation did not further extend the shelf-life of the fruit, the amount of calcium retained by strawberries was greater than that obtained with calcium dips alone, thus resulting in increased nutritional value of the strawberries. 相似文献

为研究气调环境对冷藏和货架期间早生新水’梨果实贮藏品质的影响,筛选其适宜的气调贮藏技术参数,对其冷藏和货架期间果实失重率、腐烂率、糖、酸、叶绿素含量及果皮色差进行测定。结果表明:低温冷藏60d,货架期3d,对照果实果皮和果心出现褐变,固有风味降低。处理Ⅴ的梨果实冷藏和货架期间果皮、果肉和果心严重发黑、果肉呈水渍状,果皮有汁液溢出。适宜比例的O 2、和CO 2气体配比组合可抑制冷藏和货架期间果实糖损耗和果实褐变。综合得出:1% CO2、8% O2 和92%N2 的气体配比(处理Ⅲ)可显著降低冷藏期间果实带皮硬度的下降速率,抑制果实葡萄糖、果糖和山梨醇的降解、以及果实果皮叶绿素尤其是叶绿素b的降解或氧化,延缓果实褐变,较好的保持果实固有风味;较好地保持货架期间胚乳的完整、色泽和果实固有风味,抑制果肉褐变。1% CO2、8% O2 和92%N2的气体配比结合温度为1±0.5 ℃、相对湿度为80%-85%的冷藏参数,可使果实的冷藏期延长至60d,货架期3d。 相似文献

为了探讨单氰胺对大樱桃萌芽和成熟期的影响,萌芽前,在平度、泰安两地的“红灯”樱桃树上喷洒单氰胺1.5%和2.5%溶液。平度保护地的施药时间为2003年12月24日,泰安保护地和露地的施药时间分别为2004年1月12日和2月10日。试验结果表明,单氰胺能有效促进大樱桃萌芽和开花。平度试验点:经单氰胺处理的樱桃萌芽、开花、成熟期分别比对照提前13d、8d、7d,单果重略小于对照。泰安试验点:经单氰胺处理的萌芽期比对照提前7d,但果实成熟期与对照差异不明显。因此,单氰胺在大樱桃上的作用效果与施药时期有关 相似文献

The effects of different modified atmosphere packaging (MAP) on antioxidant compounds and storage quality of ‘Hicrannar’ sweet pomegranates were investigated during long term storage. Pomegranates were harvested at the commercial harvest stage and packed in two different types of MAP (MAP1 and MAP2). After packaging, all fruit were stored at 6 °C and 90–95% RH for 120 days, then removed from storage for different quality analyses. Some fruit were kept at 20 °C for 3 days to simulate a period of shelf-life. Fruit weight loss, decay index, skin color, total titratable acidity, total soluble solids content, total phenolics, total anthocyanins and antioxidant activity were determined. Internal atmospheres created by the MAP were periodically assessed during cold storage, and CO2 concentrations increased and O2 concentrations decreased inside the MAP. MAP significantly reduced weight loss after both 120 days of cold storage and shelf-life. MAP2 was the most effective packaging in reducing weight loss. Storage of pomegranates in MAP also reduced decay and the decay index, and maintained visual appearance compared to control fruit. During storage, a decrease in L* and C* values and an increase in h° values were observed in all treatments. However, fruit stored in MAP2 had higher L*, C* and lower h° values than in other treatments. Titratable acidity and total soluble solids decreased after cold storage and shelf-life, and no significant differences among treatments were found.
