Analysis of disease and defect data from a national meat inspection database for very young calves slaughtered in New Zealand up to 1987 revealed low prevalences of diseases and defects but relatively high condemnation rates within particular disease and defect categories. Calves slaughtered between 1987 and 1992 showed a decrease in the total condemnation rate of carcasses from 2.20% to 1.17%. The greatest reductions in condemnation rates were seen in the categories of wounds and bruises and "other" reasons; navel ill (omphalophlebitis) was initially included in the latter category and condemnations due to this condition persisted as the most frequent cause of wastage. The decrease in condemnation rates occurred subsequent to implementation of a national farm-gate quality assurance programme and a scientific investigation of traditional meat inspection carcass condemnation criteria. The former led to an increase in the quality of calves submitted for slaughter and the latter to changes in specifications for meat inspection judgments for several localised and resolved diseases and defects. Alterations to the disease and defect recording categories of the database have resulted in more appropriate national statistics and such a database can be used to identify inconsistencies in the application of meat inspection judgments between slaughterhouses.  相似文献

The carcasses of 370 very young slaughter calves condemned for various diseases and defects at routine post-mortem meat inspection were subjected to further and more detailed macroscopic examination as well as histopathological examination of some tissues. Of the carcasses examined, 138 were condemned for navel ill, and in the majority of these cases the lesions extended beyond the umbilicus, particularly involving the umbilical vein and the urachus. Enzootic pneumonia was the most common cause of pleuritic lesions in the carcass, and 75 carcasses were condemned for this lesion. Arthritis, whether localised or involving a number of joints, was the primary lesion in 32 carcasses. Focal interstitial nephritis was observed in the kidneys of 36 carcasses, while 23 carcasses were condemned for wounds and bruising. A number of other miscellaneous diseases and defects, including generalised peritonitis, jaundice, hepatic abscesses and fever, were observed at low rates in condemned carcasses. Resolution or localisation of lesions had occurred at the time of slaughter on average in 35% of the condemned carcasses and the judgment of total condemnation was difficult to justify on a scientific basis and would not have been applied to other classes of slaughtered livestock. In the case of wounds and bruising, 95.6% of the carcasses could have been trimmed. There was also considerable variation in the likely pathogenesis and systemic effects of the diseases and defects observed. A need for clear and specific judgment criteria to be applied to the carcasses of very young slaughter calves at post-mortem meat inspection was identified.  相似文献

Omphalophlebitis, generally referred to as navel ill, is a common post-mortem meat inspection finding in very young calves slaughtered in New Zealand, and a gross pathological, histopathological and bacteriological evaluation of 147 carcasses condemned for this condition at routine post-mortem meat inspection was undertaken. Localised lesions restricted to the umbilicus alone were present in 29.9% of cases. The majority of cases included gross pathological change in the umbilical vessels and other tissue sites beyond the umbilicus. Most hepatic nodes were grossly normal but histological examination revealed that 61.5% of nodes from other than localised cases of navel ill were hyperplastic. However, there was little difference in the prevalence of hyperplastic hepatic nodes from cases of localised navel ill (21.4%) compared with normal calves (15.9%). Despite the wide range of bacteria isolated from umbilical lesions, Salmonella typhimurium recovered from the navel, liver and hepatic nodes of a single extended case of navel ill was the only isolation of known public health importance. Given the separation of cases of navel ill into different gross pathological, histopathological and microbiological categories, current meat inspection judgments whereby all calves with navel ill are condemned should be revised. In particular, routine condemnation of the carcass and viscera in all cases of localised navel ill (lesions restricted to the umbilicus alone) should be reassessed.  相似文献

A survey was undertaken in a deer slaughterhouse to record the diseases, defects, and productivity-related information that were detectable at postmortem meat inspection. A total of 4762 farmed deer were surveyed in 1988-89 over the period of highest throughput (October-January). Comparative data were drawn from a further two deer slaughterhouses and from national disease and defect statistics for slaughtered cattle. Farmed deer had a very different disease and defect status compared to cattle. Wounds and bruises dominated the disease and defect statistics, and resulted in an average loss of 26.9% in carcass value over all cases. In addition, most chronic pathological lesions were trauma-related. Tuberculosis was the only infectious disease of importance, and the prevalence of confirmed cases (0.38%) o was significantly higher than that in slaughtered cattle in New Zealand (0.07%). Average loss in carcass value for reactors and confirmed tuberculous cases was 74.7%.  相似文献

The prevalence of parasitic infections responsible for the condemnation of carcasses and viscera during meat inspection, and their economic implication, was estimated in a year long abattoir survey of 10 277 slaughtered farm animals in the region of Trikala, Greece. The organs examined for the presence of parasitic lesions during meat inspection were: liver and lungs of all animals, rumen of cattle, small intestine of lambs and kids, and muscles of cattle and swine. The parasitic lesions observed in the lungs of cattle, sheep and goats were caused only by hydatid cysts. No hydatid cysts were observed in the lungs of swine. The parasitic lesions observed in the liver of cattle, sheep and goats were as a result of hydatid cysts and flukes of Fasciola hepatica and Dicrocoelium dendriticum, while those of swine were due to milk spots only. Moniezia sp. proglottids were found in the small intestine of lambs only. The prevalence of parasites responsible for the condemnation of marketable organs was low (0.26%). Parasites were responsible for 22% of the total of condemned organs, and their annual cost was 99, 00 GDR (approximately 292 Euros). The parasites most contributing to marketable organ condemnation were hydatid cysts (26%) and D. dendriticum flukes (26%).  相似文献

A retrospective study covering a period of 10 years (1990--1999) was conducted using post mortem meat inspection records of the Veterinary Department Information Management Unit at Harare to determine the prevalence and seasonal variation of bovine fasciolosis in Zimbabwe. Records of monthly and annual returns from five major abattoirs were examined in regard to total cattle slaughtered and the corresponding number of livers condemned due to Fasciola gigantica infection. Prevalence of fasciolosis was calculated as the number of cattle found to be infected with F gigantica, expressed as a percentage of the number of cattle slaughtered. Seasonal variations in the prevalence were examined by pooling respective monthly condemnation data over a 10-year (1990--1999) period. A total of 2,474,232 cattle were slaughtered during this period and 917,565 (37.1%) of these cattle were infected with F. gigantica. The pattern of distribution of F. gigantica was significantly higher in cattle originating from catchment areas of high rainfall than in those of relatively low rainfall, and in those slaughtered during the wet season than those slaughtered during the dry season (P< 0.05). Based on the study findings a control programme for the disease in Zimbabwe is suggested.  相似文献

The occurrence of qualitative changes in meat was studied in a set of 1008 pigs slaughtered in four sanitation slaughter houses for the period of 12 months. PSE meat was found in 206 pigs (20.43 per cent) and DFD meat only in 9 pigs (0.89 percent) of the total number of pigs examined. The rule was applied that the defect should be demonstrated by two of three commonly used parameters (the pH value, colour and water loss by dripping). The highest occurrence of qualitative changes in meat of PSE type was registered in the group of animals with a defect of the respiratory organs (32.53 per cent) and the lowest in animals with diseases of sexual organs, including parturition complications (5.00 per cent). A similar trend was recorder even in the DFD meat occurrence. As to the seasons, the highest percentage of occurrence of PSE defects was in July and August (35.41 and 29.06 per cent) and the lowest (8.64 and 10.97 per cent) in March and January. The actual disease is proved to be only one of the secondary stress to induce the PSE meat formation.  相似文献

Pyaemia in pigs     
Pyaemia is by far the most important cause of condemnation in pigs slaughtered in Singapore abattoirs. Between 1983 and 1987, 1757 from a total of 4,899,731 pigs were condemned by meat inspectors for pyaemia, accounting for 0.036% of the total condemnations. The common post-mortem findings of affected pigs during the 5-year period are presented. Abscesses were most commonly seen in the liver (22%), spleen (21%), gastrohepatic lymph node (20%) and bronchial lymph node (17%). Pseudomonas pseudomallei was the most predominant organism isolated, accounting for 39% of the pyaemic cases. The public health significance of abscesses in pigs is discussed with particular reference to melioidosis.  相似文献

A retrospective study covering a period of 10 years (1990-1999) was carried out using post mortem meat inspection records at the Veterinary Department Headquarters at Kabete to determine the prevalence and economic importance of bovine fasciolosis in Kenya. Meat inspection records from abattoirs in 38 districts distributed over seven out of the eight provinces of Kenya were examined. Prevalence of fasciolosis was calculated as the number of cattle found to be infected with Fasciola, expressed as a percentage of the total number of cattle slaughtered. Using the average weight and market price of a bovine liver, the monetary loss occasioned by condemnation of Fasciola infected livers was calculated. A survey was also carried out at Dagoretti slaughterhouse complex in Nairobi to determine the relative occurrence of F. gigantica and F. hepatica in slaughtered cattle. Cattle slaughtered at Dagoretti slaughterhouse originate from all parts of the country. A total of 5,421,188 cattle were slaughtered in the seven provinces of Kenya during the 10-year period and 427,931 (8%) of these cattle were infected with Fasciola. The region with the highest prevalence of fasciolosis was Western Province (16%) followed, in descending order, by Eastem Province (11%), Nyanza Province (9%), Rift Valley Province (8%), Central Province (6%), Nairobi Province (4%) and Coast Province (3.5%). The total economic loss incurred by the country during the 10-year period as a result of condemnation of the infected livers was approximately US$2.6 million. The total annual economic losses during this period ranged from approximately US$0.2-0.3 million. The highest total economic losses for the 10-year period were recorded in Western Province (US$0.8 million) and Central Province (US$0.7 million). A total of 1584 cattle originating from five provinces of Kenya were slaughtered at Dagoretti slaughterhouse over a period of two months of which 147 (9.3%) were infected with liver flukes. All the liver flukes obtained from the infected livers were identified as F. gigantica. It is concluded that fasciolosis is prevalent in cattle in all provinces of Kenya, that it causes great economic losses as a result of condemnation of infected livers, and that F. gigantica is the main species of liver flukes affecting cattle in Kenya. Local climatic factors, cattle trade, rustling and population numbers, and the presence of the snail intermediate hosts are probably the main factors influencing the incidence of the disease in the various regions of the country.  相似文献

The efficiency and cost-effectiveness of government-regulated meat inspection systems are under review in a number of countries. A post mortem organoleptic meat inspection programme is the most costly component of an inspection system and the procedures applied to a particular class of livestock should be appropriate to the spectrum and prevalence of diseases and defects present in each geographical region. Awareness of the impact of specific inspection requirements on processing costs, the application of integrated quality management principles and the development of programmes that disseminate information on diseases and defects and reward the producer of high-quality carcases, are all features of an efficient and cost-effective inspection system.  相似文献

Official post-mortem inspection records of poultry in 11 industrial poultry abattoirs in the Fars province, southern Iran, between 20 March 2002 and 19 March 2006 were used to investigate the character and prevalence of poultry loss caused by disease and pathological changes in the province. Linear regression analysis for study of time trend and χ2-test for investigation of seasonal pattern were used as statistical methods. In the study period, 130,967,021 birds were slaughtered. As a result of official veterinary inspection, 959,416 (0.73%) birds were condemned. The condemnation risk was calculated for each quarter in a year. Cachexia and septicemia were the most common reasons for rejection of carcasses and were responsible for 62% of the total condemnations. The condemnation risk due to septicemia increased over the study period from 0.14 to 0.22%. The rejection risk due to overscalding declined over the study period from 0.07 to 0.01%. No trends in time were observed for the other causes of condemnation. In conclusion the majority of condemnations are caused by disease and improving the standard of disease prevention and control on farms is necessary. These results could form the basis of an assessment of trends in condemnations in poultry slaughterhouse and should prove useful to the poultry industry as a baseline data for future comparison.  相似文献

AIMS: To determine the reasons for pre-slaughter mortality and post-slaughter wastage in New Zealand bobby veal calves, and to assess compliance with the national animal welfare codes at a slaughter premises in New Zealand.

METHODS: The study was conducted at a single slaughter premises in Southland, New Zealand, during the 2011 bobby veal processing season. Calves that died during the pre-slaughter period underwent post-mortem examination to identify the reasons for death and notable secondary findings. Data from calves condemned at official post-mortem meat inspection were also analysed.

RESULTS: The mortality risk in the pre-slaughter period was 0.7% (288/42,494) and post-slaughter condemnation losses were 0.4% (180/42,206), resulting in a total loss to food production of 1.1%. Of the calves that were examined after dying in the pre-slaughter period (n=247), digestive tract disorders (41%) and omphalitis (23%) were the most common primary diagnoses. Secondary findings in these calves included absence of curd in the abomasum (25%), immaturity (21%) and emaciation (9%). Omphalitis (54%) and septicaemia (37%) were the most common causes of post-mortem wastage.

CONCLUSIONS AND CLINICAL RELEVANCE: Digestive tract disorders, omphalitis and septicaemia were the most common reasons for pre-slaughter mortality and post-mortem wastage. Further investigation of pre-transportation husbandry and feeding practices is indicated to determine compliance with animal welfare codes by farmers that supplied calves that had no curd in the abomasum, or were immature or emaciated on arrival at the slaughter premises.  相似文献

A total of 404 broiler chicken flocks processed in 15 slaughterhouses in western France were studied to estimate the condemnation prevalence and describe the official reasons for condemnation and the main macroscopic lesions observed in a sample of the condemned carcases. The condemnation rate was 87 per 10,000 birds slaughtered (95 per cent confidence interval 79 to 95 per 10,000) but differed significantly according to the type of poultry produced (standard, light, heavy or certified). The main reasons for condemnation were emaciation and congestion, with rates of 30 and 22 per 10,000 birds slaughtered, respectively. Congestion was significantly associated with arthritis and ascites, whereas infected skin lesions were associated with bruises and abnormalities of colour, odour or conformation.  相似文献

ABSTRACT: During abattoir meat inspection pig carcasses are partially or fully condemned upon detection of disease that poses a risk to public health or welfare conditions that cause animal suffering e.g. fractures. This incurs direct financial losses to producers and processors. Other health and welfare-related conditions may not result in condemnation but can necessitate 'trimming' of the carcass e.g. bruising, and result in financial losses to the processor. Since animal health is a component of animal welfare these represent a clear link between suboptimal pig welfare and financial losses to the pig industry.Meat inspection data can be used to inform herd health programmes, thereby reducing the risk of injury and disease and improving production efficiency. Furthermore, meat inspection has the potential to contribute to surveillance of animal welfare. Such data could contribute to reduced losses to producers and processors through lower rates of carcass condemnations, trimming and downgrading in conjunction with higher pig welfare standards on farm. Currently meat inspection data are under-utilised in the EU, even as a means of informing herd health programmes. This includes the island of Ireland but particularly the Republic.This review describes the current situation with regard to meat inspection regulation, method, data capture and utilisation across the EU, with special reference to the island of Ireland. It also describes the financial losses arising from poor animal welfare (and health) on farms. This review seeks to contribute to efforts to evaluate the role of meat inspection as a surveillance tool for animal welfare on-farm, using pigs as a case example.  相似文献

Previous trials of an experimental Taenia ovis vaccine using the recombinant antigen GST--45W(B/X) established that it was possible to achieve >90% protection against a single artificial challenge of T. ovis eggs. This trial was undertaken to assess vaccine efficacy against artificial challenge and natural infection acquired by lambs grazing contaminated pasture. Two hundred Romney lambs were vaccinated at 6 and 12 weeks of age. One hundred control lambs were not vaccinated but were allowed to run with the vaccinated mob. At 15 weeks of age, 10 controls and 18 vaccinated lambs were artificially challenged with 2000 T. ovis eggs. The remaining control and vaccinated lambs were allowed to graze contaminated pasture for 3 weeks and were then moved to clean pasture for 5 months. The artificially challenged lambs plus 24 of the field-infected lambs were slaughtered and the carcasses dissected to obtain cyst counts. The remaining field-infected lambs were slaughtered at a commercial processing plant and the carcasses examined by conventional meat inspection. The results showed that the vaccine provided a high level of protection against artificial challenge (92%) and natural infection (98%) when assessed by carcass dissection. The data from commercial meat inspection showed that vaccination provided 89% efficacy against downgrading or condemnation compared to non-vaccinated control lambs. The average difference in carcass values between vaccinated and non-vaccinated groups was 4.36 dollars, representing a 35% loss in value due to T.ovis infection in non-vaccinated lambs.  相似文献

Bovine tuberculosis (BTB) is a widespread and endemic disease of cattle in Ethiopia posing a significant threat to public health. Regular surveillance by skin test, bacteriology, and molecular methods is not feasible due to lack of resources. Thus, routine abattoir (RA) inspection will continue to play a key role for national surveillance. A cross-sectional study was conducted at Woldiya municipal abattoir from April 1, 2009 to April 5, 2010 to estimate the prevalence of BTB in slaughtered cattle on the basis of detailed abattoir inspection and to compare efficacy of RA inspection with respect to detailed abattoir inspection and isolation and identification of Mycobacterium. Diagnostic accuracies (with corresponding measures of statistical uncertainty) were determined by computing test property statistics (sensitivity and specificity). Agreement between RA and detailed abattoir inspections was measured using kappa statistics. Out of 1,029 slaughtered heads of cattle examined during the study period, 63 (6.12 %) and 15 (1.45 %) were diagnosed with gross tuberculous lesions by detailed abattoir meat inspections and RA meat inspections, respectively, making a prevalence of 6.12 % (95 % CI: 5.2–7.1) on the basis of detailed abattoir inspection. About 59.45 % of tuberculous lesions were observed in the lungs and associated lymph nodes, whereas 35.13 % lesions were from the lymph nodes of the head. From 63 cattle suspected with tuberculosis (TB) based on detailed abattoir meat inspection, nine (19.05 %) were identified as Mycobacterium bovis, while three (4.8 %) as Mycobacterium tuberculosis. The sensitivity of RA meat inspection was 23.8 % in comparison to the detailed abattoir meat inspection and 25 % in comparison to culture, respectively. Poor agreement (k?=?0.37) was seen between RA meat examination and detailed abattoir meat examination methods. Similarly, poor agreement (k?=?0.013) was seen between RA meat examination and culture results. In conclusion, relatively higher prevalence (6.12 %) was recorded in Woldiya municipal abattoir on the basis of detailed Abattoir inspection and RA meat inspection protocols currently utilized in Ethiopia which are insufficient to detect the majority (76.19 %) of TB lesions at the gross level, which indicates the magnitude of meat borne zoonotic TB as an ongoing risk to public health. Detailed abattoir inspection protocols were demonstrated to improve the detection level by approximately fourfold. In conclusion, routine meat inspections have limitations in detecting BTB-suggestive lesions which indicate the magnitude of meat-borne zoonotic TB as an ongoing risk to public health.  相似文献

The aim of this study was to document experience gained with herd health management in veal calf production and to describe the calves' most frequent health problems. Fifteen farms with an 'all-in-all-out' animal flow system and 20 farms with a continuous animal flow system were investigated and data on animal movements, housing, feeding, medical treatments, and management were collected. Cadavers underwent pathological examination, and data were recorded from the carcasses of slaughtered calves. On the 15 'all-in-all-out'-farms, 2'747 calves were clinically examined by the contract-veterinarian upon arrival at the farm, and 71,1 % of the calves showed at least one sign of illness. The main causes of death were with 54,9 % digestive disorders (a perforating abomasal ulcer being the most frequent diagnosis), followed by respiratory diseases (29,6 %, mainly pneumonia). The meat color of 25 % of the carcasses was red. Calves from farms with the continuous animal flow system, which recruit mainly animals originating from the same farm, showed significantly better results regarding antibiotic use, performance and carcass quality than those calves from farms with the 'all-in-all-out'-system.  相似文献

Toxoplasmosis is one of the most important zoonotic diseases worldwide and is caused by the protozoan Toxoplasma gondii. Besides vertical infection during pregnancy, humans can get infected post-natally either by peroral uptake of sporulated Toxoplasma oocysts or by ingestion of tissue cysts upon consumption of raw or undercooked meat. The aim of this study was to approximate the risk of human infection via meat consumption by estimating the seroprevalence of T. gondii in slaughtered animals in Switzerland and to compare data with prevalences assessed 10 years ago. The study included pigs, cattle, sheep and wild boar of different age groups and housing conditions whenever possible and applicable. A P-30-ELISA was used to detect T. gondii-specific antibodies and to determine seroprevalences in meat juice of slaughtered animals. A total of 270 domestic pigs (120 adults, 50 finishing, 100 free-ranging animals), 150 wild boars, 250 sheep (150 adults, 100 lambs) and 406 cattle (47 calves, 129 heifers, 100 bulls, 130 adult cows) were tested. Seropositivity increased with the age of the assessed animals. Independent of the age-group, the overall seroprevalence was lowest in wild boars (6.7%), followed by pigs (23.3%), cattle (45.6%) and sheep (61.6%), respectively. Conventional fattening pigs and free-ranging pigs surprisingly had comparable seroprevalences (14.0% and 13.0%, respectively). Unlike in other European countries, where generally a decrease in the number of seropositive animals had been observed, we found that the prevalence of seropositive animals, when compared with that of 10 years ago, had increased for most species/age groups. Conclusively, the results demonstrated a high seroprevalence of T. gondii in animals slaughtered for meat production and revealed that increasing age of the animals is a more important risk factor than housing conditions in Switzerland.  相似文献

Australia, a major exporter of meat, has met and continues to meet the import requirements of various countries. It is free of many epizootic and zoonotic diseases and is eradicating bovine brucellosis and tuberculosis. Frequently, individual country requirements have not been relevant to the animal and public health status in Australia. Such a situation is unscientific, wasteful and unnecessary, and may divert priorities away from areas of major public and animal health significance which should be the main concern of consumers both in Australia and overseas. In recent years the Inspection Service of the Department of Primary Industry has reviewed meat inspection procedures necessary to protect public and animal health in Australia and in countries importing Australian meat. Priorities include attention to national or regional occurrence of disease in Australia and to the use of scientific principles in inspection, including disease identification, concepts of pathogenesis and effectiveness in removal of diseased tissue from meat. Revised post-mortem procedures for cattle, pigs, sheep and goats more relevant to disease occurrence and consideration of public health are described. In particular, this involves a reduction in the number of lymph node incisions. Future directions for meat inspection in Australia are postulated. Concern is expressed that the requirements of some importing countries are fixed in their legislation and consequently might inhibit desirable developments. In this context it is important that scientifically sound national codes for meat inspection of the exporting country be accepted by importing countries as providing public and animal health safeguards.  相似文献
