OBJECTIVES: To analyse the socio-economic factors related to breakfast eating, the association between breakfast eating and overweight, and to gain a more thorough understanding of the relationship between these two elements in a population-based cohort of 4.5-year-old children. We hypothesised that a relationship could be observed between breakfast skipping and overweight independently of socio-economic factors such as ethnicity, maternal education, single parenting and family income. DESIGN: A population-based study whereby standardised nutritional interviews were conducted with each child's parent. The children's height and weight were taken by a trained nutritionist and parents were asked about their child's breakfast eating. SETTING: The analyses were performed using data from the Québec Longitudinal Study of Child Development (1998-2002), conducted by Santé Québec (Canada). SUBJECTS: Subjects were 1549 children between the ages of 44 and 56 months, with a mean age of 49 months. RESULTS: Almost a tenth (9.8%) of the children did not eat breakfast every day. A greater proportion of children with immigrant mothers (19.4% vs. 8.3% from non-immigrant mothers), with mothers with no high school diploma (17.5% vs. <10% for higher educated mothers) and from low-income families (15% for income of $39,999 or less vs. 5-10% for better income) did not eat breakfast every day. Not eating breakfast every day nearly doubled the odds (odds ratio=1.9, 95% confidence interval 1.2-3.2) of being overweight at 4.5 years when mother's immigrant status, household income and number of overweight/obese parents were part of the analysis. CONCLUSION: Although our results require replication before public policy changes can be advocated, encouraging breakfast consumption among pre-school children is probably warranted and targeting families of low socio-economic status could potentially help in the prevention of childhood obesity.  相似文献

The effectiveness of β-casein as a chaperone in the aggregation of whey proteins was investigated. β-Casein altered heat-induced aggregation as shown by a reduction in turbidity of β-lactoglobulin, α-lactalbumin, and bovine serum albumin (BSA) solutions. The pH of the mixtures greatly affected how much β-casein reduced the turbidity of the solutions; the maximum reductions in turbidity were observed at pH 6.0. Reducing the pH decreased the effectiveness of β-casein as a chaperone. An increase in ionic strength by the addition of NaCl or CaCl(2) also decreased the effectiveness of the chaperone. The addition of CaCl(2) had a larger effect than the addition of NaCl. The chaperone effect was seen at temperatures up to 145 °C. Differential scanning calorimetry (DSC) showed that β-casein did not alter the denaturation temperature of β-lactoglobulin. The kinetics curves for loss of native protein and turbidity development showed that β-casein did not function by slowing the aggregation process. It was concluded that β-casein competes with whey protein in the aggregate process and the aggregates formed in the presence of β-casein are smaller in size than those formed during whey protein self-aggregation. The formation of smaller aggregates gives rise to less turbid, more soluble protein solutions.  相似文献

In this work, the sorption of strontium on a Ca-bentonite (CGA) from Almer??a (Spain) in column experiments was studied, and the results obtained were compared with the sorption onto the Na-bentonite (MX-80). The code CTXFIT (two site non-equilibrium sorption model) was used in order to fit the experimental data and to determine sorption and transport parameters. The effect of inlet Sr(II) initial concentration and the ionic strength were evaluated. The results obtained showed that the sorption capacities as well as the transport and sorption parameters of both bentonites were affected by the initial metal concentration. In experiments with higher inlet concentrations, columns were saturated faster, leading to shorter breakthrough and exhaustion times. On the other hand, a decrease of sorption and transport parameters was observed at higher ionic strengths, which would confirm ion exchange as the main mechanism of Sr(II) sorption onto both bentonites. The sorption parameters (sorption capacity and retardation factor) obtained indicated that the Ca-bentonite from Almer??a (Spain) presented better sorption performance than the Na-bentonite, which was related to the physical properties of the Ca-bentonite.  相似文献

In order to prioritise interventions for micronutrient deficiencies in China, the populations affected by iron and zinc deficiencies were assessed based on data from the 2002 China National Nutrition and Health Survey. The costs and cost-effectiveness of supplementation, food diversification and food fortification were estimated using the standard World Health Organization ingredients approach. Results indicated that 30% of children (60 years), pregnant and lactating women, and 20% of women of reproductive age were anaemic, some 245 million people. Approximately 100 million people were affected by zinc deficiency (zinc intake inadequacy and stunting), the majority living in rural areas. Among interventions on iron and zinc deficiency, biofortification showed the lowest costs per capita, I 0.01 (international dollars), while dietary diversification through health education represented the highest costs at I 1148(international dollars). The cost-effectiveness of supplementation, food fortification and dietary diversification for iron deficiency alone was I 179(international dollars) , I 66 and I 103 (international dollars) per disability-adjusted life-year (DALY), respectively. Data for biofortification were not available. For zinc deficiency, the corresponding figures were I 399(international dollars), I 153(international dollars) and I 103(international dollars) per DALY, respectively. In conclusion, iron and zinc deficiencies are of great public health concern in China. Of the two long-term intervention strategies, i.e. dietary diversification and biofortification with improved varieties, the latter is especially feasible and cost-effective for rural populations. Supplementation and fortification can be used as short-term strategies for specific groups.  相似文献

OBJECTIVE: To explore the relationship between subjective mood, folate status and homocysteine in healthy individuals. DESIGN: Subjective mood assessments were completed twice daily over the course of one week using the Positive and Negative Affect Scale (PANAS). The PANAS is a validated scale which considers mood state on two distinct continua, one reflecting positive mood and the other negative mood, each requiring response to 10 adjectives on a Likert scale. A blood sample was taken on one occasion at the start of the week during which subjective mood was assessed and analysed for red-blood-cell (RBC) folate, serum folate and plasma homocysteine concentrations. SUBJECTS: Male volunteers aged 19-47 years (n = 58) were recruited from local industries. RESULTS: High concentrations of RBC folate were associated with less variability (lower standard deviation) in negative mood (P = 0.023). Subjective mood, however, was not related to serum folate or homocysteine. CONCLUSIONS: This study appears to be the first to uncover an association between long-term folate status and subjective mood (employing the PANAS) in healthy males. More research is needed to further explore the relationship between nutritional status and mood.  相似文献

Genotype selection is an essential step in breeding programs determining nutrient content and composition and, thereby, the quality indices of grapevines and their products. The grapevine bioactive compounds, particularly flavonoids, are determinants of grape quality and possess strong health-promoting effects in grapevine and humans. Grapevine nutrient content and composition depends on genotype–environmental interaction in which genotype selection and stress conditions, particularly severity, time, and combination of stresses play significant roles in determining grape and wine quality. This review article aims to provide information required for appropriate genotype selection of grapevines for production of high-quality fruits. The influence of interacting factors, including genotype selection, grapevine metabolites, and environmental conditions, and their interrelationships on the quality of grapevines (flavor, aroma, pigmentation, color stability, and stress tolerance of red and white grapes) and their products (organoleptic properties and storage life of wine/must and juice) are discussed.  相似文献

Depending on plant genotype–environment interactions, cell signal transduction, and thereby gene expression, disruptive or promotive effects on grapevine physiology, metabolism, and, consequently, fruit quality and yield may occur. This review article aims to evaluate the effects of temperature and light stress on grapevine signaling and metabolic pathways to provide insights into breeding/engineering strategies for designing grapevines with improved quality, yield and tolerance. The modifications of signaling and metabolic pathways are discussed to assist geneticists with designing tolerant grape cultivars with high capacity of producing bioactive compounds and, thereby health-promoting effects in grapevines and humans.  相似文献

Fruit and vegetable availability: a micro environmental mediating variable?   总被引:2,自引:0,他引:2  
OBJECTIVES: To examine the association between fruit and vegetable (F&V) availability and consumption, the possible influences on this association, research gaps, and implications for developing strategies to increase F&V consumption. DESIGN: Systematic review of studies that have examined associations between F&V availability and consumption. RESULTS: Qualitative studies conducted among children and adults indicated that greater availability was associated with greater consumption. This finding was supported by cross-sectional studies among children. Availability was associated with dietary psychosocial variables such as preferences, and it appears that availability may moderate the relationship between these psychosocial variables and consumption. Intervention studies attempting to increase availability have resulted in increased consumption, and availability has predicted change in consumption over an 18-month period. DISCUSSION: Availability appears to be a key proximal determinant of consumption, especially of F&V, and thereby provides a target for change. However, the mechanisms that relate these variables are unclear and there is a need to clarify the direction of causality. We suggest that the possible causal mechanisms may include: (1) availability simply facilitates increased consumption; (2) the visual cues of available food may stimulate consumption; and (3) available food exposure may increase preference, which leads to increased consumption. Each of these possibilities requires close examination, as do policy-level interventions. CONCLUSION: F&V availability is associated with increased consumption. Research that elucidates the mechanisms between availability and intake, and tests policy-level interventions, is needed to advance increased availability as a public health procedure.  相似文献

The differentiation between cacha?a and rum using analytical data referred to alcohols (methanol, propanol, isobutanol, and isopentanol), acetaldehyde, ethyl acetate, organic acids (octanoic acid, decanoic acid, and dodecanoic acid), metals (Al, Ca, Co, Cu, Cr, Fe, Mg, Mn, Ni, Na, and Zn), and polyphenols (protocatechuic acid, sinapaldehyde, syringaldehyde, ellagic acid, syringic acid, gallic acid, (-)-epicatechin, vanillic acid, vanillin, p-coumaric acid, coniferaldehyde, coniferyl alcohol, kaempferol, and quercetin) is described. The organic and metal analyte contents were determined in 18 cacha?a and 21 rum samples using chromatographic methods (GC-MS, GC-FID, and HPLC-UV-vis) and inductively coupled plasma atomic emission spectrometry, respectively. The analytical data of the above compounds, when treated by principal component analysis, hierarchical cluster analysis, discriminant analysis, and K-nearest neighbor analysis, provide a very good discrimination between the two classes of beverages.  相似文献

A new, strong base, macro-porous anion exchange resin, Amberlite IRA 996, appeared to be more nitrate selective than sulfate selective in treating high nitrate concentrations (18 mg NO inf3 sup? -N L?1) in potable water. When regeneration is carried out in a closed circuit in which a biological denitrification reactor is incorporated to remove nitrate from the regenerant, regeneration salt requirement and brine production can be minimized. In this combination of ion exchange and biological denitrification, regeneration with 30 g NaHCO3 L?1) is possible in 6 hr at a flow rate of 11 BV hr?1. Accumulation of sulfate in the closed regeneration circuit does not affect the nitrate capacity of the resin.  相似文献

Abstract

Wastes applied to agricultural land can contain significant concentrations of bioavailable molybdenum (Mo). Because Mo uptake by forage crops could lead to hypocuprosis in ruminants, more knowledge is needed about which crops are most efficient in accumulating Mo. At an old sewage sludge‐amended site, the concentrations of Mo, copper (Cu), and several other trace metals were measured in various grass species. Generally, the grasses grown on the sludge site contained higher Mo concentrations than the same species grown on a nearby control site. However, because Cu concentrations were also higher in the sludge‐grown grasses, Cu:Mo ratios in the grasses were frequently higher on the sludge site. In contrast, all legumes tested (alfalfa, birdsfoot trefoil, red clover, pea), as well as canola and beets, had lower Cu:Mo ratios when grown on the sludge site. Sulfur concentrations in the two crops analyzed for this element (canola and pea) were higher on the sludge site than the control. It is concluded that Mo, Cu, and sulfur (S) bioavailability remains elevated in the soil several decades after sewage sludge application.  相似文献

The β-carotene bleaching assay, a common method for evaluating antioxidant activity, has been widely criticized due to its low reproducibility, problematic quantification, complex reagent preparation, and interference of different factors (temperature, pH, solvents, and metals). In this work we have examined the effects of these factors and developed a highly reproducible procedure for microplate assay, evaluated the critical points of the method, and proposed a kinetic model for quantifying both antioxidant and prooxidant activities. The application of these tools produced very consistent results, which provide robust and meaningful criteria to compare in detail the characteristics of several well-known commercial antioxidants, as well as several predictable prooxidants, and can be easily applied to natural extracts, food samples, and many other type of compounds. As an example, we have tested a set of commercial antioxidants and some typical lipophilic prooxidants. The activity of the tested antioxidants decreased in the following order: ethoxyquin ? α-tocopherol > butylhydroxyanisole > butylhydroxytoluene ? propyl gallate. On the other hand, hemoglobin and Fe(2+), Fe(3+), Co(2+), and Cu(2+) showed a strong prooxidant effect, and the activity was null in Cd(2+), Ni(2+), and Sr(2+), slightly antioxidant in Mg(2+), and strongly antioxidant in Zn(2+) and Mn(2+).  相似文献

Potassium (K) fixation and release in soil are important factors in the long-term sustainability of a cropping system. Changes in K concentration and characteristics of K fixation and release in rhizosphere and nonrhizosphere soils in the rapeseed (Brassica napus L.)–rice (Oryza sativa L.) rotation were investigated using a rhizobox system. The concentrations of different forms of K in both rhizosphere and nonrhizosphere soils decreased with plants compared to without plants, regardless of K fertilizer application. Potassium uptake by crops mainly came from the rhizosphere soil. In the treatment without K fertilizer (–K), the main form of K supplied by the soil to the crops was 1.0 mol L?1 nitric acid (HNO3) nonextractable K, followed by nonexchangeable K, and then exchangeable K. In the treatment with K fertilizer (+K), the main K forms supplied by the soil to the crops were exchangeable K and nonexchangeable K. The amount and rate of K fixation after one cycle of the rapeseed–rice rotation was greater in rhizosphere soil than in nonrhizosphere soil. The amount and rate of K fixation of soil in the +K treatment were significantly less than in the –K treatment. The cumulative amounts of K released with 1.0 mol L?1 ammonium acetate (NH4OAc) and 1.0 mol L?1 HNO3 extraction increased with the increasing numbers of extractions, but the K-releasing power of soil by successive extraction decreased gradually and finally became almost constant. The release of K was less in rhizosphere soil than in nonrhizosphere soil. The release of K in the +K treatment was similar to that in the –K treatment in rhizosphere soil, but the K release in nonrhizosphere soil was greater with the +K than the –K treatment. Overall, the information obtained in this study will be helpful in formulating more precise K fertilizer recommendations for certain soils.  相似文献

In this field study, we explored the spatial segregation between the litter- and humus-inhabiting organisms of the detrital food web using 15N-isotope technique. The study was established in 11 × 11 m plots fertilized with 15N-labelled urea. Ten years after urea application, soil samples were taken, both from the litter layer and the combined F+H layer. The samples were analysed for N content and the proportion of 15N in (i) the residual organic matter in the litter and F+H layer (excluding microbes), (ii) microbial biomass, and (iii) various feeding guilds of soil fauna. The basal resource, soil microbes, and the fauna were more enriched with 15N in the F+H layer than in the litter layer. In the litter layer, the 15N enrichment of the expected food source equalled the one of the consumers, whereas in the F+H layer all trophic groups, except microbes and small microbi-detritivores, showed a significantly lower 15N enrichment than their expected food source. The results indicate that large and mobile humus-inhabiting decomposers exploit the overlying litter layer as a feeding site, whereas the feeding of the more sedentary smaller organisms is restricted to the humus layer.  相似文献

The extensive damage to littoral and sub-littoral biotic communities caused by cyclone ‘Althea’, which crossed the tropical coast of Queensland on 24 December, 1971, are described. The effects of high wind speeds (mean 129·7 km/h), turbulent seas, storm surges, and heavy rainfall on mangrove, sea grass, algal, and coral reef communities are discussed. Mangroves withstood the immediate effects of the cyclone and protected coastal areas. However, long-term effects on mangroves are apparent. Severe wave action, shifting sand, and low salinities caused extensive damage to sea grass, algal, and coral reef communities. The effects of the cyclone on a Dugong population are described. The catches of Dugongs in shark nets set off Townsville increased from an average of 12·7 per year before the cyclone to 41 in 1972 (the year following the cyclone). This increase is attributed to increased movements in search of food, following extensive damage to sea grass beds. Associated with increased movements, there occurred a change in diet whereby large amounts of brown algae were eaten in addition to sea grasses. Sex and size (age) distributions of captured Dugongs are given and their possible significance discussed.  相似文献

For mixtures of many chemicals, a ray design based on a relevant, fixed mixing ratio is useful for detecting departure from additivity. Methods for detecting departure involve modeling the response as a function of total dose along the ray. For mixtures with many components, the interaction may be dose dependent. Therefore, we have developed the use of a three-segment model containing both a dose threshold and an interaction threshold. Prior to the dose threshold, the response is that of background; between the dose threshold and the interaction threshold, an additive relationship exists; the model allows for departure from additivity beyond the interaction threshold. With such a model, we can conduct a hypothesis test of additivity, as well as a test for a region of additivity. The methods are illustrated with cytotoxicity data that arise when Chinese hamster ovary cells are exposed to a mixture of nine haloacetic acids.  相似文献
