Four weaning foods were formulated using locally available cereals and pulses such as wheat (Triticum aestivum), barley (Hordeum vulgare), green gram (Vigna radiata) and jaggery. Cereal, pulse and jaggery were used in the proportion of 70:30:25. Roasting and malting were two processing techniques used. The developed weaning foods were evaluated for their nutritional characteristics and shelf life. All the formulations had a nutrient composition within the range prescribed by the Indian Standard Institute (ISI) for processed weaning foods. Peroxide value and fat acidity of weaning foods increased with increase in storage period. Malting of weaning foods resulted in higher increase of peroxide value and fat acidity as compared to roasted ones during the period of storage. All the blends were found to be acceptable up to 60 days of storage. The results, indicated that weaning foods developed from locally available less inexpensive foods may be used as good supplements for infants.  相似文献

The processing of grains resulted in 16–20% increase in starch digestibility and 17–32% increase in protein digestibility. Also 16–32% increase in iron availability was observed on processing. Locally available cereals and pulses such as rice (Oryza sativa), kangini (Setaria italica), sanwak (Echinochloa frumentacea), green gram (Vigna radiata) and jaggery were used to formulate three weaning foods. Cereal, pulse and jaggery were mixed in the ratio of 70:30:25. Roasting was the main processing technique used in the formulation of these weaning foods. The developed weaning foods had 5.06 to 5.68 g moisture, 10.28 to 13.71 g protein, 2.91 to 3.77 g ash, 1.08 to 1.87 g fat, 14.42 to 14.98 mg iron, 1.03 to 1.27 g crude fibre, and 357 to 374 Kcal. The weaning foods had a nutrient composition within the range prescribed by the Indian Standard Institute for processed weaning foods. The study indicated that the weaning foods obtained from locally available food stuffs have the potential of being produced locally, adaptable for household consumption and can be good substitute for commercial formulae.  相似文献

The effect of different extraction methods on the qualityof crude palm oil processed using traditional (local) and mechanical methods in selected areas of Rivers and BayelsaStates and their storage stability were investigated.Certain quality determining parameters such as free fatty acids (FFA), peroxide value (PV), saponification value (SV),moisture, impurities and volatile matter (MIV) content weredetermined prior to and after storage for three months. The free fatty acids (FFA) ranged from 7 to 19 percent, peroxidevalue (PV) ranged from 3 mEq/kg to 6 mEq/kg and moisture, impurity and volatile matter (MIV) ranged from 0.21 to 0.64 percent for locally extracted crude palm oil samples and mechanically extracted crude palm oil samples. There was no significant difference (p > 0.05) in the FFA of samples A and E before and after storage for 3 months. Also two of thelocally extracted crude samples (A and E) stored better whileone of the samples (D) showed a high level of deteriorationas shown in its high levels of FFA, PV and IV values. SamplesA and E resulted in a better quality of oil in terms of FFA (av. 7.25%) and PV (av. 4.5 meg/kg) when compared to the mechanically extracted one (sample C) with FFA (10.0%) and PV (5.78 mEq/kg). However, all the locally and mechanically extracted crude palm oil samples could not meet the industrial and international standard quality for crude palm with FFA (2–5%) and PV (2–3.5 mEq/kg). Among the three different storage containers used under different storage conditions, plastic containers (PC) resulted in a better storage stability of the crude palm oils in terms of FFA, SV, and IV than transparent bottles stored on shelves (TBS) and amber-coloredbottles stored on the bare floor (BPF).  相似文献

Tubers of three potato cultivars were stored at room temperature (20–39°C, 30–75% RH), under an insulated storage run on passive evaporative cooling (16–30°C, 70–90% RH) and a refrigerated storage (2–4°C, 90–95% RH) for 14 weeks and studied periodically for storage losses, reducing sugar content and dry matter percent of tubers, in order to explore the possibility of storing potatoes for processing at higher temperatures. Physiological losses in tubers remained less than 10% until 12 weeks of storage under evaporatively cooled storage. Reducing sugar contents increased by only 52.4–242.1% in tubers stored in evaporatively cooled storage as compared to 90.5–484.2% increase in tubers stored in refrigerated storage until 14 weeks. Potatoes stored in evaporatively cooled store were more suitable for processing into chips and french fries due to lower physiological losses and lower reducing sugar content of tubers.  相似文献

Field experiments were carried out at the Horticultural Research Institute, and in five commercial apple orchards, located in southwest Finland including the Åland Islands during 1994 and 1995. The experimental cultivars were Melba, Raike, Red Atlas, Åkerö, Aroma, and Lobo. The treatments were untreated control and preharvest calcium chloride (CaCl2) sprays at Ca 2.0 g/l. Fruit samples were stored for two to six months at 2–4 °C and 85–95% RH. The percentage of the incidence of physiological disorders of stored apples was scored. Fruit macronutrients, firmness, diameter and juice titratable acidity and percentage of soluble solids were determined. Only a few nutrient effects in the flesh of the apple cultivars were a result of CaCl2 sprayings. Preharvest CaCl2sprays increased fruit firmness and the titratable acidity but decreased soluble solids, soluble solids/titratable acidity ratio, and the incidence of physiological storage disorders of some cultivars. When looking at the mean of all cultivars, CaCl2 sprayings increased titratable acidity and decreased soluble solids/titratable acidity ratio after four months of storage during 1995 and reduced the incidence of physiological disorders after three months of storage during 1994 and after four months of storage in 1995.  相似文献

Eight types of supplementary foods based on popped cereals (wheat, ragi, bajra and sorghum) blended with legumes (soy and bengalgram) and fortified with essential vitamins and minerals were developed on a pilot plant scale. Four of the supplements were prepared with cereals, soy flour (SF) and bengal gram (BG) dhal and the other four were prepared with combinations of cereals and SF. These blends were mixed with jaggery (obtained by boiling juice out of sugarcane) syrup and pressed into compact form. One hundred gram portions of these foods provided 370 ± 20 kilocalories and 11 ± 1 g protein. Moisture, crude protein, total carbohydrates, total lipids, ash, dietary fiber and energy contents, of all the developed supplements were within the ranges prescribed by the Indian Standards Institute for processed weaning foods and could satisfactorily meet one-third of the Recommended Dietary Allowance (RDA) of these nutrients per day for preschool children. Organoleptic evaluation and feeding trials revealed that the foods were well accepted by rural mothers and children.  相似文献

A sensory profiling analysis of heat-processed oats (Avena sativaL.) was performed. The oat grains were of three varieties (Kapp, Mustang and Svea), stored at different relative humidities (30, 55 or 80%) for 3·5 or 15·5 months and heat-treated either with or without prior dehulling. The main differences in sensory attributes were related to the various thermal processes. Processed dehulled samples, particularly of theMustangvariety, had the highest intensities of oat odour, oat flavour, fresh odour and fresh flavour. Samples processed with hulls, in particular the varieties Kapp and Svea had the highest intensities of odour and flavour, rancid odour and flavour and bitterness. The sensory profile of processed oats were described partly by variations in phenolic compounds of low molecular weight, fat acidity and moisture content after processing. Twenty-nine per cent of the variation in odour and flavour attributes was explained by the 11 phenolic compounds analysed. Water content and the phenolic compoundsp-coumaric acid, vanillin,p-hydroxybenzaldehyde and coniferyl alcohol were significantly correlated (P<0·05) to high levels of rancidity, flavour intensity and bitterness and low levels of freshness, oat odour and flavour. The avenanthramides were related mainly to low levels of flavour intensity and rancid odour and flavour. Caffeic acid and fat acidity were related to low intensities of sweetness and aftertaste.  相似文献

Japanese mint (Mentha arvensis) oil (JMO) can be used effectively as fumigant againstSitophilus oryzae in stored sorghum. The effect of JMO at a dose of 166 µl/l of space on nutrient composition and protein quality was studied in infested and uninfested sorghum grains stored for 3 months. The results revealed non significant effect of JMO on gran moisture, total ash, crude fibre, crude fat, crude protein and fat acidity in infested and uninfested grains at the end of 3 months storage. The JMO treatment had small but significant effect on reducing and nonreducing sugars. The values of Protein Efficiency Ratio (PER) for uninfested JMO treated grains, infested JMO treated grains and for untreated control stored for 3 months were 1.11, 1.07 and 1.09, respectively against control casein diet for which it was 2.15.  相似文献

The oil content and quality characteristics of Canarium schweinfurthii Engl. oil are described. The oils were extracted from the mesocarp and endocarp using hexane to remove the free flowing lipid (FFL) and successive extraction with CHCl3-MeOH followed by water saturated butanol to remove bound lipid (BL). On a dry matter basis, the mesocarp contained 68.3% FFL and 13.7% BL while the endocarp contained 67.0% FFL and 13.0% BL. The quality characteristics of the mesocarp oil extracts were 151.9–195.3 mg KOH/g fat saponification value (SV), 20–40 mEq peroxide/kg fat peroxide value (PV), 71.1–94.9 g iodine/100 g fat iodine value (IV) and 1.33–8.30 mg KOH acid value (AV). Characteristics for the endocarp oil extracts were 95.4–184.3 mg KOH/g fat SV, 4.0–8.0 mEq peroxide/kg fat PV, 100.1–118.3 g iodine/100 g fat IV, and AV of 0.48–8.70 mg KOH. The fatty acid composition of the first hexane extracts indicated that the oils were primarily C16 and C18s. The mesocarp contained 31.7% hexadecanoic acid, 30.0% 9-octadecenoic acid, 30.1% 6,9-octadecadienoic acid and 8.2% 9,12,15-octadecatrienoic acid, while the endocarp, contained 31.2% hexadecanoic acid, 28.9% 9-octadecenoic acid and 31.3% 6,9-octadecadienoic acid.  相似文献

Six chickpea strains were analysed for their protein content and various protein fractions. The protein content ranged from 20.9–25.27%. Albumin, globulin, prolamin and glutelin contents ranged from 8.39–12.31%; 53.44–60.29%; 3.12–6.89% and 19.38–24.40% respectively. Salt soluble proteins (albumin + globulin) and globulins resolved into 19–23 bands whereas albumin proteins resolved into 30–34 bands. The molecular weights of various polypeptides ranged from 10–91 kD. Amino acid analysis of total proteins revealed that glutamic acid was present in maximum concentration followed by aspartic acid and arginine. Just like other pulse proteins, chick pea proteins were also found deficient in sulphur containing amino acids.  相似文献

Raw green gram contains trypsin inhibitor (5.6 × 10–3 units/0.1 g) while cooking destroyed the trypsin inhibitor in green gram. No destruction was observed in the case of lysine, methionine, cystine, threonine and tryptophan. Sulphur containing amino acids have been found to be the only limiting amino acids in green gram from studies on blood levels of amino acids and PER experiments. Raw green gram, when fed as a sole source of protein promoted an extremely low growth rate, (13.2 g/4 weeks) and PER (0.77) in rats. Cooking slightly improved the nutritive value of the gram, as indicated by increase in gain in body weight (24 g/4 weeks) as well as PER (1.22). The presence of inhibitors in green gram did not appear to affect some of the essential amino acids as observed from the blood amino acid levels.  相似文献

Biochemical changes in wheat grains stored at 10, 25 and 45 °C for six months were studied. A significant decrease in pH and an increase in titratable acidity was observed during storage of wheat grains at 25 °C and 45 °C. Moisture contents of wheat grains decreased by 15% at 25 °C and 26% at 45 °C during six months of storage. A significant decrease in water soluble amylose (20–28%) along with an increase in insoluble amylose contents (7.6–17%) were observed during storage at 25 and 45 °C. Amylase activity of the samples showed a decrease as the storage progressed. Total soluble sugars increased by 9% at 10 °C and 12% at 25 °C; a 37% decrease was observed after six months storage at 45 °C. Total available lysine decreased by 18.0% and 22.6% at 25 and 45 °C, respectively, after six months storage. In vitro protein digestibility of wheat grains decreased by 5.00% at 25 °C and 10.28% at 45 °C during six months of storage. However, no significant biochemical changes occurred during storage at 10 °C.  相似文献

Changes in polyphenols and in vitro protein digestibility due to germination and cooking were studied in horse gram and moth bean. Horse gram had higher amounts of polyphenols than moth bean. Polyphenol content in horse gram decreased from 1.6% to 1.1% at 48h germination, but in moth bean there was a reduction in polyphenol content from 1.3% to 1.0% at 24 h germination with a significant increase from 1.0% to 1.7% at 36 h germination. Seeds germinated for 48 h also exhibited higher amounts of polyphenols than in raw moth bean. The germination had no effect on total protein content, but a progressive increase in free amino acid content was observed in both legumes. In the ungerminated form, horse gram protein was more digestible than moth bean protein. The in vitro protein digestibility of both the legumes increased during germination. Cooking decreased the protein digestibility of horse gram either in ungerminated or germinated form, but such a decrease was noticed in moth bean at only 36 h germination. Moth bean either in raw form or germinated for 24 h did not exhibit a decrease in in vitro protein digestibility after cooking. Cooking decreased polyphenol content by 20%–50%. The apparent decrease in polyphenols in moth bean and horse gram due to cooking has been attributed to a decrease in assayable polyphenols.  相似文献

Wheat flour tortillas (31·9% moisture) were stored at −60, −12, 0, 4, 22, and 35 °C to evaluate textural changes during staling. Subjective rollability and two-dimensional extensibility tests revealed that tortillas stored at ≥0 °C had increasing force, work and modulus of deformation values during storage. Tortillas stored at ≤−12 °C retained their fresh attributes over 25 days. Tortillas staled more as defined by rheological changes when stored at 22 °C than at 0, 4, or 35 °C. Optimum storage temperatures of wheat flour tortillas are ≤−12 °C while optimum staling temperatures are between 4 and 35 °C.  相似文献

Guava (Psidium guajava) fruits of cv. L-49 with individual shrink wrapping using 9 LLDPE film could be successfully stored up to 12 days at ambient and 18 days in evaporative cool chamber with negligible loss in vitamin C content. The untreated fruits lose 25–30% of ascorbic acid within 1week after harvest. Delay in senescence and metabolic activities as supported by less changes in soluble solids, sugars, acidity, respiration, and ethylene evaluation rate was also observed in individual shrink wrapped fruits in cool chamber. The spoilage of fruits by Fusarium rots was significantly less in cool chamber in individually shrink wrapped fruits followed by Sta-fresh treatment. Sta-fresh was more effective in cool chamber than ambient. Individually stored wrapped fruits scored a better value of sensory score than Sta-fresh under both the storage condition.  相似文献

Proximate composition and selected functional properties of four cultivars of bambara groundnut ( Voandezeia subterranea Thoura) were ascertained. Crude protein ranged from 17.5 to 21.1 percent; crude fat 7.3–8.5 percent; total ash 4–5 percent; crude fiber 1.8–2.0 percent; carbohydrate and moisture content for the different cultivars were 53.0–60.8 percent and 7.5–12.3 percent, respectively. The results of functional property determinations indicated that the bulk density ranged from 0.65 to 0.75 g/ml; water binding capacity 2.1–2.9 g/2g sample; oil binding capacity 0.9–1.6 g/2g sample; emulsifying activity 55.-1–60.0 percent and emulsifying stability 10–12 percent. The results show that bambara groundnut has great potential for incorporation into various human foods where it could provide useful plant proteins.  相似文献

Tempe, an Indonesian mold fermented food, was prepared from cowpeasand soybeans using the traditional oriental process with modifications whereappropriate. Four complementary foods were developed from whole maizemeal or dehydrated fermented maize (ogi) flour fortified with eithercowpea tempe or soybean tempe. Wholesomeness and potentials of thevanilla-flavored foods as weaning diets were determined. The nutrientcontent of all the developed products were within the range prescribed bythe FAO/WHO pattern for processed weaning foods. The products hadloose bulk densities between 0.40–0.55 g/ml and packed bulk densitiesbetween 0.68–0.75 g/ml; reconstitution indexes were between92.30–104.00 g/ml; viscosities were 34.2–65.0 CP at 70 °C and45.0–76.9 CP at 30 °C. Total plate counts ranged from 3.2 ×103 – 4.3 × 104cfu/g; coliforms staphylococcus, mold, andyeast were absent in some of the products. The results on sensoryattributes showed that tempe-based weaning diets were comparable withMameal, a commercial product. Maize and maize-fortified diets wereslightly higher in packed bulk density. Fortification reduced the viscosityof the diets and the values reduced with increasing temperature. Tempe-based weaning foods reconstituted easily in hot water, while cookingdestroyed most of the microorganisms present. Maize-based tempefortified foods were relatively inexpensive and have potential as weaningfoods.  相似文献

Roasting was the processing technique employed in developing weaning foods which resulted in significant increase in HC1-extractable minerals, an index of their bioavailability to humans. Six green leafy vegetables and herbs – spinach, amaranth, bengal gram, cauliflower, mint, coriander and carrots – were analyzed for moisture, protein,ascorbic acid, -carotene, total iron, ionizable iron (as % of total iron) in vitro iron (% of total iron), copper, manganese and zinc. Moisture content of the leaves and carrots varied from 75.1 percent (bengal gram) to 95.4 percent (carrot) and protein from 9.83 percent (carrots) to 30.9 (mint) percent. Ascorbic acid, -carotene, total iron and ionizable iron contents were at a maximum in case of bengal gram leaves whereas level of ionizable iron and in vitro iron as a percent of total iron was highest in carrots. Copper, manganese and zinc contents were maximum in spinach.  相似文献
