Background

The protein/energy ratio is important for the production performance and utilization of available feed resources by animals. Increased protein consumption by mammals leads to elevated feed costs and increased nitrogen release into the environment. This study aimed to evaluate the effects of dietary protein/energy ratio on the growth performance, carcass traits, meat quality, and plasma metabolites of pigs of different genotypes.

Methods

Bama mini-pigs and Landrace pigs were randomly assigned to two dietary treatment groups (Chinese conventional diet with low protein/energy ratio or National Research Council diet with high protein/energy ratio; n = 24 per treatment) in a 2 × 2 factorial arrangement. Blood and muscle samples were collected at the end of the nursery, growing, and finishing phases.

Results

We observed significant interactions (P < 0.05) between breed and diet for total fat percentage, intramuscular fat (IMF) content, protein content in biceps femoris (BF) muscle, and plasma urea nitrogen (UN) concentration in the nursery phase; for average daily gain (ADG), average daily feed intake (ADFI), dry matter, IMF content in psoas major (PM) muscle, and plasma total protein and albumin concentrations in the growing phase; and for drip loss and plasma UN concentration in the finishing phase. Breed influenced (P < 0.05) growth performance, carcass traits, and meat quality, but not plasma metabolites. Throughout the trial, Landrace pigs showed significantly higher (P < 0.05) ADG, ADFI, dressing percentage, lean mass rate, and loin-eye area than did Bama mini-pigs, but significantly lower (P < 0.05) feed/gain ratio, fat percentage, backfat thickness, and IMF content. Dietary protein/energy ratio influenced the pH value, chemical composition of BF and PM muscles, and plasma activities of glutamic-pyruvic transaminase and gamma-glutamyl transpeptidase, and plasma concentration of UN.

Conclusions

Compared with Landrace pigs, Bama mini-pigs showed slower growth and lower carcass performance, but had better meat quality. Moreover, unlike Landrace pigs, the dietary protein/energy ratio did not affect the growth performance of Bama mini-pigs. These results suggest that, in swine production, low dietary protein/energy ratio may be useful for reducing feed costs and minimizing the adverse effects of ammonia release into the environment.

A restriction/realimentation feeding strategy was applied to pigs to increase the age at market weight and final ADG, modify protein and lipid deposition rates at carcass and muscle levels, and thereby improve eating quality of the pork. A total of 126 Duroc x (Large White x Landrace) pigs (females and castrated males) were used. At the average BW of 30 kg, within litter and sex, pairs of littermates (blocked by BW) were randomly assigned to ad libitum (AL) feeding during growing (30 to 70 kg of BW) and finishing (70 to 110 kg of BW) periods (AL, n = 56), or restricted feeding at 65% of the ADFI of the AL pigs, on a BW basis, during the growing period and AL feeding during finishing (compensatory growth, CG; n = 56). In each feeding regimen, 15 pigs were slaughtered at 70 kg of BW, and 41 pigs were slaughtered at 110 kg of BW. Additionally, 14 pigs were slaughtered at 30 kg of BW to calculate tissue deposition rates. The CG pigs showed decreased ADG (-35%, P = 0.001) during growing but increased ADG (+13%, P = 0.001) during finishing (i.e., compensatory growth) due to greater (P = 0.001) ADFI and G:F. Hence, CG pigs were 19 d older at 110 kg of BW than AL pigs. The CG pigs were leaner at 70 kg of BW than AL (e.g., 11.7 vs. 13.5 mm of average backfat thickness for CG and AL pigs, respectively, P = 0.023), whereas the differences were reduced at 110 kg of BW (20.6 vs. 21.0 mm of average backfat thickness for CG and AL pigs, respectively, P = 0.536). At 70 kg of BW, intramuscular fat (IMF) content of LM did not differ between CG and AL pigs (1.25 vs. 1.49%, respectively, P = 0.118), whereas CG pigs had less IMF in LM at 110 kg of BW (2.19 vs. 2.53% for CG and AL pigs, respectively, P = 0.034). Feeding regimen influenced the composition of weight gain. From 30 to 70 kg of BW, feed restriction reduced (P = 0.001) lean and adipose tissue deposition at the carcass level and protein and lipid deposition at the muscle level. From 70 to 110 kg of BW, the CG feeding strategy increased (P = 0.016) deposition of adipose but not of lean tissue at the carcass level. However, lipid and protein deposition at the muscle level were not affected. Thus, realimentation promoted deposition of subcutaneous fat over IMF. Feeding regimen hardly affected technological meat quality at 110 kg of BW. The CG feeding strategy decreased (P = 0.014) the meat juiciness score in relation to the decreased IMF but did not influence other sensory traits. Elevated IMF content and improved pork quality might be achieved by modifying the onset or duration of the restriction and realimentation periods.

We conducted two experiments to evaluate the effects of dietary energy density and lysine:calorie ratio on the growth performance and carcass characteristics of growing and finishing pigs. In Exp. 1, 80 crossbred barrows (initially 44.5 kg) were fed a control diet or diets containing 1.5, 3.0, 4.5, or 6.0% choice white grease (CWG). All diets contained 3.2 and 2.47 g of lysine/Mcal ME during growing (44.5 to 73 kg) and finishing (73 to 104 kg), respectively. Increasing energy density did not affect overall ADG; however, ADFI decreased and feed efficiency (Gain:feed ratio; G:F) increased (linear, P < .01). Increasing energy density decreased and then increased (quadratic, P < .06) skinned fat depth and lean percentage. In Exp. 2, 120 crossbred gilts (initially 29.2 kg) were used to determine the effects of increasing levels of CWG and lysine:calorie ratio fed during the growing phase on growth performance and subsequent finishing growth. Pigs were fed increasing energy density (3.31, 3.44, or 3.57 Mcal ME/kg) and lysine:calorie ratio (2.75, 3.10, 3.45, or 3.80 g lysine/Mcal ME). No energy density x lysine:calorie ratio interactions were observed (P > .10). Increasing energy density increased ADG and G:F and decreased ADFI of pigs from 29.5 to 72.6 kg (linear, P < .05). Increasing lysine:calorie ratio increased ADG and ADFI (linear, P < .01 and .07, respectively) but had no effect on G:F. From 72.6 to 90.7 kg, all pigs were fed the same diet containing .90% lysine and 2.72 g lysine/Mcal ME. Pigs previously fed with increasing lysine:calorie ratio had decreased (linear, P < .02) ADG and G:F. Also, pigs previously fed increasing CWG had decreased (linear, P < .03) ADG and ADFI. From 90.7 to 107 kg when all pigs were fed a diet containing .70% lysine and 2.1 g lysine/Mcal ME, growth performance was not affected by previous dietary treatment. Carcass characteristics were not affected by CWG or lysine:calorie ratio fed from 29.5 to 72.6 kg. Increasing the dietary energy density and lysine:calorie ratio improved ADG and G:F of growing pigs; however, pigs fed a low-energy diet or a low lysine:calorie ratio from 29 to 72 kg had compensatory growth from 72 to 90 kg.

The efficacy of recombinantly derived porcine somatotropin (rpST) in improving the performance and carcass characteristics of heavyweight finishing pigs was determined. In Study 1, 36 pigs were killed for determination of initial carcass composition at 102 kg, and 36 pigs each were given 0, 1.5, 3, 6, or 9 mg of rpST/d from 102 to 136 kg live weight. Corn-soybean meal diets fed contained 19.8% CP and greater than 1% lysine. Study 2 tested the effects of 3 mg/d on pigs for 4 wk from 84 kg BW fed a corn-soybean meal or a triticale-barley-peas diet. Performance variables (ADG, average daily feed intake [ADFI], and feed efficiency [FE]) were measured weekly. Treatment with rpST increased (P less than .01) ADG and FE and decreased (P less than .01) ADFI in both studies. In Study 1, leaf fat, backfat thickness, belly thickness, and carcass fat were all decreased (P less than .01) linearly by rpST. Loin eye area (LEA), total trimmed lean, and total protein content were increased quadratically (P less than .01). At the 3-mg dose, ADFI, ADG, and FE were 87, 130, and 137% of control, and LEA, backfat, total protein gain, and total fat gain were 107, 80, 136, and 52% of control. Loin eye area was not increased (P greater than .05) in the pigs in Study 2; however, backfat thickness was reduced 16% by rpST (P less than .01). The effects of rpST were the same on both dietary regimens (P greater than .05). These studies demonstrate the effectiveness of rpST in increasing ADG and carcass leanness and improving FE in heavyweight pigs and in pigs fed alternative feedstuffs.

This study aimed to evaluate the effects of dietary lysine/protein ratio and fat levels on the growth, carcass characteristics and meat quality of finishing pigs fed feed made from food waste, including noodles and chocolate. Four dietary treatments, 2 levels of lysine/protein ratio (0.035 and 0.046) and 2 levels of fat (3.3% and 6.0%), were adapted to a 2 × 2 factorial arrangement. Each diet for the finishing pigs contained the same levels of adequate crude protein (16%) and lysine (0.58–0.75%), and similar levels of high total digestible nutrients (90.2–92.6%). In total, 32 LWD pigs with an average body weight of 57.2 kg were assigned to 4 dietary groups. The pigs were slaughtered at about 115 kg. Growth performance was not influenced by the dietary treatments. Carcass characteristics were slightly influenced by the dietary fat level. As the dietary lysine/protein ratio decreased, the marbling score of Longissimus dorsi muscle increased and the intramuscular fat (IMF) increased from 6.82% to 9.46%. Marbling score was not significantly influenced by the dietary fat level. These results indicate that IMF increased without adverse effects on growth, carcass characteristics and meat quality, when pigs were fed a diet with low lysine/protein ratio.

Crossbred pigs (n = 144, average age and weight = 28 +/- 3 d, 7.5 kg) were used in two 6-wk trials to assess the effects of dietary pH and P source on growth performance, gastrointestinal digesta pH and chloride ion concentration (Cl-), and bone characteristics. Treatments were randomly allotted within blocks (based on weight within gender) to a 3 x 2 factorial arrangement with three dietary pH levels (5.4, 6.0, and 6.7) and two P sources: dicalcium phosphate (DCP) and defluorinated phosphate (DFP). Pigs fed the pH 6.7 diet had reduced ADG (P less than .01) and average daily feed intakes (ADFI; P less than .001) during wk 1 to 3 and overall compared with pigs fed the pH 6.0 diet, but ADG and ADFI were not affected when the pH 5.4 diet was fed. There was a dietary pH x P source interaction (P less than .05) for ADFI. Pigs had decreased ADFI as dietary pH was increased from 6.0 to 6.7 for both DCP and DFP, but ADFI was similar for the pH 6.0 and 5.4 diets with DFP, whereas ADFI was greater for the pH 5.4 diet with DCP. Dietary pH did not influence ADFI:ADG ratio (F:G; P greater than .05), and P source had no effect (P greater than .05) on either ADG, ADFI, or F:G.(ABSTRACT TRUNCATED AT 250 WORDS)

A total of 120 pigs [Duroc × (Landrace × Large White); initial average BW: 100.3 ± 2.5 kg] were used to investigate the effects of sex (barrows and gilts) and dietary total Lys restriction (7.0, 6.5, and 6.0 g·kg(-1)) on growth performance and carcass, meat, and fat characteristics. Pigs were intended for high-quality dry-cured ham from Spain (called Teruel ham), and a minimum fat thickness at the gluteus medius muscle (GM) is required (16 mm) for carcasses to be acceptable. Animals were slaughtered when they reached 129.0 ± 3.6 kg of BW. There were 6 treatments arranged factorially (2 sexes × 3 dietary Lys concentrations) and 4 replicates of 5 pigs per treatment. Barrows consumed more feed (P = 0.001) and tended to have less G:F (P = 0.06) than gilts. Carcasses from barrows were fatter (P = 0.001) and had heavier main trimmed lean cuts (P = 0.008) than gilts. A greater proportion of final acceptable carcasses for Teruel ham (P = 0.001) was observed in barrows than in gilts because of the greater percentage of carcasses that fulfill the minimum fat depth at GM required (P = 0.001). Meat from barrows had greater content of intramuscular fat (P = 0.02) than meat from gilts. Also, subcutaneous fat from barrows had less proportion of PUFA than fat from gilts (P = 0.02). A reduction in dietary Lys concentration decreased ADG (P = 0.004) and ADFI (P = 0.001) in pigs. In addition, backfat depth (P = 0.007) and fat at GM (P = 0.07) increased as dietary Lys decreased. The proportion of carcasses that fulfilled the minimum fat depth at GM required for Teruel ham increased as dietary Lys decreased in feed, but this effect was greater in gilts than in barrows (sex × Lys, P = 0.02). Meat and fat quality was not influenced by dietary treatment. We conclude that different feeding programs with different dietary Lys concentrations may be needed for barrows and gilts intended for production of dry-cured hams where a minimum carcass fat depth is required.

An experiment using 264 crossbred barrows was conducted to examine the interaction between space allocation and dietary ractopamine addition on pig performance and carcass characteristics using a 2 x 2 factorial arrangement of treatments. Treatments were 0.55 (19 pigs per pen) or 0.74 (14 pigs per pen) m2/pig from start (29.7 +/- 0.1 kg BW) to slaughter (108 kg BW) in a fully slatted facility and 0 or 10 ppm (as-fed basis) ractopamine for 28 d before slaughter. There were few treatment interactions. Pigs given 0.55 m2/pig had a lower ADG (P = 0.010), ADFI (P = 0.088), 10th-rib backfat depth on d 86 (P = 0.010), and carcass loin muscle depth (P = 0.011) than pigs given 0.74 m2/pig. There was no difference in feed conversion (P = 0.210) as a result of space allocation. Pigs fed diets containing 10 ppm ractopamine had decreased (P = 0.004) ADFI and improved (P = 0.001) feed conversion efficiencies for the 28-d feeding period, along with greater loin depth (P = 0.005) and carcass lean percent (P = 0.001). The improvements in 28-d carcass lean growth associated with feeding 10 ppm ractopamine resulted in an improvement in overall daily fat-free lean gain (P = 0.046). Under these experimental conditions, the response to dietary ractopamine was similar for crowded and uncrowded pigs.

Two hundred sixteen crossbred barrows and gilts (84.3 kg BW) were used to test the effects of dietary energy density and lysine:energy ratio (Lys:ME) on the performance, carcass characteristics, and pork quality of finishing pigs fed 10 ppm ractopamine. Pigs were blocked by BW and gender, allotted to 36 pens (six pigs per pen), and pens were assigned randomly within blocks to dietary treatments (as-fed basis) arranged in a 2 x 3 factorial design, with two levels of energy (3.30 or 3.48 Mcal/kg) and three Lys:ME (1.7, 2.4, or 3.1 g lysine/Mcal) levels. Pigs were fed experimental diets for 28 d, and weights and feed disappearance were recorded weekly to calculate ADG, ADFI, and G:F. Upon completion of the feeding trial, pigs were slaughtered and carcass data were collected before fabrication. During carcass fabrication, hams were analyzed for lean composition using a ham electrical conductivity (TOBEC) unit, and loins were collected, vacuum-packaged, and boxed for pork quality data collection. Energy density had no (P > 0.22) effect on ADG or ADFI across the entire 28-d feeding trial; however, pigs fed 3.48 Mcal of ME were more (P < 0.02) efficient than pigs fed 3.30 Mcal of ME. In addition, ADG and G:F increased linearly (P < 0.01) as Lys:ME increased from 1.7 to 3.1 g/Mcal. Carcasses of pigs fed 3.48 Mcal of ME were fatter at the last lumbar vertebrae (P < 0.08) and 10th rib (P < 0.04), resulting in a lower (P < 0.03) predicted fat-free lean yield (FFLY). Conversely, 10th-rib fat thickness decreased linearly (P = 0.02), and LM depth (P < 0.01) and area (P < 0.01) increased linearly, with increasing Lys:ME. Moreover, FFLY (P < 0.01) and actual ham lean yield (P < 0.01) increased as Lys:ME increased in the diet. Dietary energy density had no (P > 0.19) effect on pork quality, and Lys:ME did not (P > 0.20) affect muscle pH, drip loss, color, and firmness scores. Marbling scores, as well as LM lipid content, decreased linearly (P < 0.01) as Lys:ME increased from 1.7 to 3.1 g/Mcal. There was a linear (P < 0.01) increase in shear force of cooked LM chops as Lys:ME increased in the finishing diet. Results indicate that 3.30 Mcal of ME/kg (as-fed basis) is sufficient for optimal performance and carcass leanness in pigs fed ractopamine. The Lys:ME for optimal performance and carcass composition seems higher than that currently used in the swine industry; however, feeding very high Lys:ME (> 3.0 g/Mcal, as-fed basis) to ractopamine-fed pigs may result in decreased marbling and cooked pork tenderness.

Early-weaned pigs (n = 64) averaging 5.3 +/- 0.3 kg and distributed into two environments (dirty and clean) were used to evaluate effects of conjugated linoleic acid (CLA) on growth performance, immune competence, and empty body composition. A factorial (2 x 4) arrangement within a split-plot design, with four littermate pigs as the experimental unit for the environment, pig within litter as the experimental unit for dietary treatment, and d-0 body weight used as covariate, were used in data analysis. Diets were formulated to contain CLA at 0, 0.67, 1.33, or 2% and to exceed the NRC (1988) nutrient needs of pigs. Animals were given ad libitum access to feed for 7 wk in three phases (I, 1 to 2; II, 3 to 5; and III, 6 to 7 wk). Within phases, diets were isocaloric and isonitrogenous. In Phase I, as dietary CLA concentration increased, ADG and ADFI decreased linearly (P < 0.05 and P < 0.02, respectively). In Phase II, upon adaptation to dietary CLA supplementation, ADG increased quadratically (603, 623, 622, and 548 g/d; P < 0.01), ADFI decreased linearly (873, 840, 867, and 717 g/d; P < 0.02) and gain:feed ratio tended to increase linearly (691, 742, 715, and 763; P < 0.07). In Phase III, no differences in growth performance were attributed to either dietary or environmental treatments. The poor health status associated with the dirty environment induced a growth suppression; pigs in the clean room had a greater cumulative ADG (P < 0.01) and ADFI (P < 0.01) than pigs in the dirty room. In Phase I, lower plasma urea nitrogen levels observed in pigs found in the dirty room (P < 0.03) indicated a lower protein intake caused by a lower ADFI. The effects of dietary CLA on peripheral phenotypic profiles of lymphoytes did not appear until d 42. However, as indicated by the growth suppression of pigs in the dirty room, the negative effects of the environmental challenge on pig health and growth had already appeared during phase I. On d 42, CLA induced a linear increase in percentages of CD8+ lymphocytes (21.7, 22.3, 28.0, and 32.7%; P < 0.001). These data suggest that a 42-d dietary CLA supplementation preceding a disease challenge could have prevented disease-associated growth suppression. Also, CLA-mediated amelioration of particular infectious diseases will depend on which CD8+ T cell subset (i.e., CD8alphaalpha-immunoregulatory or CD8alphabeta-cytotoxic) is most influenced by dietary CLA supplementation.

Two studies were conducted at two locations to evaluate growth performance and carcass characteristics of growing-finishing pigs fed diets containing either glyphosate-tolerant Roundup Ready (event nk603) corn, a nontransgenic genetically similar control corn (RX670), or two conventional sources of nontransgenic corn (RX740 and DK647). A randomized complete block design (three and four blocks in Studies 1 and 2, respectively) with a 2 x 4 factorial arrangement of treatments (two genders and four corn lines) was used. Study 1 used 72 barrows and 72 gilts (housed in single-gender groups of six; six pens per dietary treatment) with initial and final BW of approximately 22 and 116 kg, respectively. Study 2 used 80 barrows and 80 gilts (housed in single-gender groups of five; eight pens per dietary treatment) with initial and final BW of approximately 30 and 120 kg, respectively. Pigs were housed in a modified open-front building in Study 1 and in an environmentally controlled finishing building in Study 2. The test corns were included at a fixed proportion of the diet in both studies. Animals had ad libitum access to feed and water. Pigs were slaughtered using standard procedures and carcass measurements were taken. In Study 1, overall ADG, ADFI (as-fed basis), and gain:feed (G:F) were not affected (P > 0.05) by corn line. In Study 2, there was no effect of corn line on overall ADFI (as-fed basis) or G:F ratio. In addition, overall ADG of barrows fed the four corn lines did not differ (P > 0.05); however, overall ADG of gilts fed corn DK647 was greater (P < 0.05) than that of pigs fed the other corn lines. There was no effect (P > 0.05) of corn line on carcass yield or fatness measurements in either study. Differences between barrows and gilts for growth and carcass traits were generally similar for both studies and in line with previous research. Overall, these results indicate that Roundup Ready corn (nk603) gives equivalent animal performance to conventional corn for growing pigs.

The objective of this study was to estimate genetic associations of prolificacy traits with other traits under selection in the Finnish Landrace and Large White populations. The prolificacy traits evaluated were total number of piglets born, number of stillborn piglets, piglet mortality during suckling, age at first farrowing, and first farrowing interval. Genetic correlations were estimated with two performance traits (ADG and feed:gain ratio), with two carcass traits (lean percent and fat percent), with four meat quality traits (pH and L* values in longissimus dorsi and semimembranosus muscles), and with two leg conformation traits (overall leg action and buck-kneed forelegs). The data contained prolificacy information on 12,525 and 10,511 sows in the Finnish litter recording scheme and station testing records on 10,372 and 9,838 pigs in Landrace and Large White breeds, respectively. The genetic correlations were estimated by the restricted maximum likelihood method. The most substantial correlations were found between age at first farrowing and lean percent (0.19 in Landrace and 0.27 in Large White), and fat percent (-0.26 in Landrace and -0.18 in Large White), and between number of stillborn piglets and ADG (-0.38 in Landrace and -0.25 in Large White) and feed:gain (0.27 in Landrace and 0.12 in Large White). The correlations are indicative of the benefits of superior growth for piglets already at birth. Similarly, the correlations indicate that age at first farrowing is increasing owing to selection for carcass lean content. There was also clear favorable correlation between performance traits and piglet mortality from birth to weaning in Large White (r(g) was -0.43 between piglet mortality and ADG, and 0.42 between piglet mortality and feed:gain), but not in Landrace (corresponding correlations were 0.26 and -0.22). There was a general tendency that prolificacy traits were favorably correlated with performance traits, and unfavorably with carcass lean and fat percents, whereas there were no clear associations between prolificacy and meat quality or leg conformation. In conclusion, accuracy of estimated breeding values may be improved by accounting for genetic associations between prolificacy, carcass, and performance traits in a multitrait analysis.

Crossbred pigs (n = 1,400) were used to evaluate the effect of group size (25 vs 50 vs 100 pigs/pen) in a wean-to-finish production system on growth performance and carcass measures. Pigs were weaned at 17 d (range = 15 to 19) of age with a mean initial BW of 5.9 +/- 0.02 kg and taken to a final mean pen weight of 116 +/- 0.9 kg. A 10-phase dietary regimen was used, and pigs had free access to feed and water. Feeder-trough space (4.3 cm/pig) and floor-area allowance (0.68 m2/pig) were the same for all group sizes. Compared to groups of 25, pigs in groups of 50 and 100 animals were lighter (P < 0.001) at the end of wk 8 after weaning and had lower (3%, P < 0.01) ADG and gain:feed (G/F) but similar (P > 0.05) ADFI during the first 8 wk of the study. At the end of the study, pig weight and the coefficient of variation in pig weight within a pen were similar (P > 0.05) across group sizes. During the period from 8 wk after weaning to the end of the study, pigs in groups of 100 compared to 50 animals had greater (3%, P < 0.01) ADG, and pigs in groups of 25 were intermediate for ADG. Average daily feed intake during this period was similar (P > 0.05) for all group sizes; however, G/F was greater (3%, P < 0.01) for groups of 100 compared to 25 or 50 animals. For the overall study period, ADG, ADFI, and G/F from weaning to slaughter weight were similar across group sizes (P > 0.05; 655, 648, and 658 g; 1,759, 1,755, and 1,759 g; and 0.37, 0.37, and 0.37; for ADG, ADFI, and G/F, respectively, for groups of 25, 50, and 100 pigs, respectively). Mortality was similar (P > 0.05) across group sizes; however, morbidity (pigs removed due to poor health or injury) was higher in groups of 25 pigs compared to the other two group sizes (7.0, 3.5, and 3.9% for groups of 25, 50, and 100, respectively; P < 0.05). Group-size treatment did not affect (P > 0.05) carcass dressing percentage, backfat thickness, or loin-eye depth. In summary, growth performance from weaning to market weight was not affected by group size.

Two experiments were conducted to determine the effect of substituting a more available dietary carbohydrate (CHO) for portions of corn or fat in the diet on growth performance, carcass traits, meat quality, and serum or plasma metabolites in growing-finishing pigs. A three-phase feeding program was used with corn-soybean meal diets formulated to provide 105% of the Lys requirement for barrows or gilts gaining 325 g of lean daily in Exp. 1 or gilts gaining 350 g of lean daily in Exp. 2. Diets were isoenergetic within experiments. All other nutrients met or exceeded suggested requirements. In Exp. 1, pigs were allotted to three dietary treatments (0, 7.5, or 15.0% sucrose), with three replications of barrows and three replications of gilts, and with three or four pigs per replicate pen; average initial and final BW were 25.2 and 106.7 kg. In Exp. 2, gilts were allotted to two dietary treatments (waxy [high amylopectin] or nonwaxy [75% amylopectin and 25% amylose] corn as the grain source), with five replications of four gilts per replicate pen; average initial and final BW were 37.7 and 100.0 kg. In Exp. 1, ADG and gain:feed ratio increased linearly (P < 0.02) as dietary sucrose increased. Minolta color scores, a* and b*, and drip loss (P < 0.06) also increased linearly with added sucrose. In Exp. 2, ADG, carcass weight and length, and the Minolta a* value were greater for pigs fed waxy corn (P < 0.08) than for those fed nonwaxy corn. Feed intake, longissimus muscle area, 10th-rib and average backfat thickness, dressing percentage, fat-free lean, percentage of lean and muscling, lean gain per day, total fat, percentage fat, lean:fat ratio, serum or plasma metabolites (Exp. 1: serum urea N; Exp. 2: serum urea N, and plasma nonesterified fatty acids, triacylglycerols, total and high-density lipoprotein cholesterol, insulin, and total protein), pH of the longissimus muscle, and subjective muscle scores (color, firmness-wetness, and marbling) were not affected by diet in either experiment. In summary, increasing availability of dietary CHO in growing-finishing pig diets improved growth performance, but it did not affect carcass traits.

The effects of dietary crude glycerin on growth performance, carcass characteristics, meat quality indices, and tissue histology in growing pigs were determined in a 138-d feeding trial. Crude glycerin utilized in the trial contained 84.51% glycerin, 11.95% water, 2.91% sodium chloride, and 0.32% methanol. Eight days postweaning, 96 pigs (48 barrows and 48 gilts, average BW of 7.9 +/- 0.4 kg) were allotted to 24 pens (4 pigs/pen), with sex and BW balanced at the start of the experiment. Dietary treatments were 0, 5, and 10% crude glycerin inclusion in corn-soybean meal-based diets and were randomly assigned to pens. Diets were offered ad libitum in meal form and formulated to be equal in ME, sodium, chloride, and Lys, with other AA balanced on an ideal AA basis. Pigs and feeders were weighed every other week to determine ADG, ADFI, and G:F. At the end of the trial, all pigs were scanned using real-time ultrasound and subsequently slaughtered at a commercial abattoir. Blood samples were collected pretransport and at the time of slaughter for plasma metabolite analysis. In addition, kidney, liver, and eye tissues were collected for subsequent examination for lesions characteristic of methanol toxicity. After an overnight chilling of the carcass, loins were removed for meat quality, sensory evaluation, and fatty acid profile analysis. Pig growth, feed intake, and G:F were not affected by dietary treatment. Dietary treatment did not affect 10th-rib backfat, LM area, percent fat free lean, meat quality, or sensory evaluation. Loin ultimate pH was increased (P = 0.06) in pigs fed the 5 and 10% crude glycerin compared with pigs fed no crude glycerin (5.65 and 5.65 versus 5.57, respectively). Fatty acid profile of the LM was slightly changed by diet with the LM from pigs fed 10% crude glycerin having less linoleic acid (P < 0.01) and more eicosapentaenoic acid (P = 0.02) than pigs fed the 0 or 5% crude glycerin diets. Dietary treatment did not affect blood metabolites or frequency of lesions in the examined tissues. This experiment demonstrated that pigs can be fed up to 10% crude glycerin with no effect on pig performance, carcass composition, meat quality, or lesion scores.

Three experiments were conducted to evaluate the effect of adding salts of formic acid to diets for growing-finishing pigs. In Exp. 1, 72 pigs (23.1 kg and 104.5 kg initial and final BW) were used to evaluate the effect of Ca/Na-formate and K-diformate on performance and carcass traits. Treatments were organized in a 2 x 3 factorial arrangement with two feeding regimens (limit and semi-ad libitum feeding) and three diets (control, .85% Ca/Na-formate, and .8% K-diformate). No significant feeding regime x diet interaction was found. The K-diformate diet increased overall ADG of pigs compared with the control and Ca/Na-formate diets, but had no effect on ADFI or gain/feed (G/F) ratio. Neither K-diformate nor Ca/Na-formate had any effect on carcass lean or fat content. In Exp. 2, 10 limit-fed pigs (24.3 kg and 85.1 kg initial and final BW) were used to study the effect of K-diformate on performance and sensory quality of pork. Adding .8% K-diformate to diets increased ADG (P < .13) and G/F (P < .04), but had no effect on sensory quality of the pork or content of formate in liver, kidney, or muscle tissue of pigs. In Exp. 3, 96 limit-fed pigs (27.1 kg and 105 kg initial and final BW) were used to determine the effect of adding K-diformate to diets on performance, carcass traits, and stomach keratinization and(or) lesions. Adding K-diformate (0, .6, or 1.2%) to diets increased ADG and ADFI (linear P < .01). The K-diformate reduced the percentage of carcass fat (linear P < .03) and fat area in the cutlet (linear P < .09) and increased percentage lean in the ham (linear P < .01), flank (linear P < .02), loin (linear P < .09), and neck and shoulder (linear P < .09). The K-diformate had no negative effect on stomach alterations. In Exp. 3, the concentration of coliform bacteria in the gastrointestinal tract was evaluated in eight control and eight 1.2% K-diformate-fed pigs. The K-diformate reduced the number of coliforms in the duodenum (P < .03), jejunum (P < .02), and rectum (P < .10) of pigs. In conclusion, K-diformate improved growth performance and carcass quality of growing-finishing pigs, whereas Ca/Na-formate had no effect. K-diformate had no adverse effect on sensory quality of pork or on stomach alteration scores.
