Most animal-derived food products originate from production chains consisting of a series of well-defined, separate production steps. Undesired events affecting food safety can principally occur at any point within the production chain. The principle of integrated food safety assurance from stable to table has therefore been established. The livestock holding has thus to be understood as a fix element of the production chain, and the producer has to accept a part of the responsibility for food safety. On a farm, food safety can be negatively affected by animal feed (microbiological or toxicological contamination), management (hygiene, stocking density, cleaning and disinfecting), veterinary treatments (use of antibiotics) and recycling of slurry. Most relevant practices can be summarised under the standard of "good farming practice". HACCP programmes as they are applied in the processing industries could in principle also be used at the farm level. Influential management steps would need to be identified and controlled. This approach is, however, still in its infancy at present. Using the current monitoring systems, microbiological and toxicological problems in food are difficult to be identified before the end of the production chain. As the cause of a problem can be found at the farm level, traceability of products through the production chain is essential. In Switzerland, traceability of animals is realised using compulsory animal identification and the animal movement database. Using this link, information on the health status of a herd could be made available to the slaughterhouse in order to classify animals into food-safety risk categories. This principle is a key element in the ongoing discussion about visual meat inspection in Europe and elsewhere.  相似文献

SUMMARY A brief history of food safety in Australia in the context of the development of scientific knowledge is presented. Australia's food and food commodity residue and contamination surveillance and monitoring programs are outlined. Although chemical residues are perceived as a major health risk by the general community, the risk of food causing illness or death because of chemical residues is low. The major threat to human health from food is microbiological contamination, in terms of deaths, sickness and economic loss. The emerging influences in food safety are scientific and technical developments, deregulation, social and demographic factors, and the media. The risk of disruption of domestic and export markets by food safety issues is considerable. The emergence of international standards for food production and processing will enable commercial contractual arrangements to minimise the frequency of disruptive food safety incidents.  相似文献

Concern over the presence of veterinary drug residues in food has been increasing world wide. Because of this concern the Food and Drug Administration's Center for Veterinary Medicine (CVM) has been involved on an international basis in efforts to develop food safety standards for veterinary drugs. The major thrust of the Codex Committee on Residues of Veterinary Drugs in Foods (CC/RVDF) has been to achieve international agreement on veterinary drugs issues. CVM is an active participant on this committee. The CC/RVDF has established a list of priority veterinary drugs that are, or that have the potential to cause trade problems as the result of public health concerns. Included in this list are anabolic hormones, chloramphenicol, sulfonamides, nitrofurans, nitroimidazoles, somatotropins, benzimidazoles and trypanocides. In the upcoming years, the CC/RVDF will work toward developing international maximum residue levels for these compounds. The evaluation of the toxicity of veterinary drug-bound residues is another area of international concern. In conjunction with the Bureau of Veterinary Medicine, Health and Welfare Canada, CVM is developing guidelines on biological models to demonstrate the safety of veterinary drug-bound residues. In working with veterinary drug regulators from other countries, CVM has new solutions to human food safety problems.  相似文献

Ochratoxin A (OTA) is an important mycotoxin with potential to reach the human food chain through carry-over of contaminated, mostly cereal-based, feed into animal-derived products. Certain population groups, such as infants and children, are intensive and relatively restricted consumers of some animal-derived products, particularly milk and other dairy products, which may become contaminated with OTA. This review examines the literature on the occurrence of OTA in animal-derived products and discusses the public health and food safety implications of consumption of these products. The risk of OTA contamination of meat, milk, blood and derived products is discussed.  相似文献

The production of meat and poultry products has become increasingly complex. Technological growth has contributed to the need for sophistication in determining the origin and risk of food-borne microbial infections as well as environmental contaminants. The increasing use of agricultural chemicals in animal production and to some extent in processed foods has led to the presence of chemical residues in meat and poultry. These changes have caused the Food Safety and Inspection Service (FSIS), a public health agency within the United States Department of Agriculture (USDA), to institute new food safety initiatives and procedures for inspection of meat and poultry products. The goal is to reduce risks to the public health from conditions observed during antemortem and postmortem inspection or detected during processing. FSIS is committed to scientific innovation and has implemented several rapid inplant tests that have given the Agency inexpensive, less disruptive methods to determine product adulteration contamination.  相似文献

为检测质粒介导的喹诺酮类耐药性aac(6')-Ib-cr基因在食品动物源沙门菌的分布状况.采用PCR结合BstC1酶切法,以及DNA测序法检测316株食品动物源沙门菌中aac(6')-Ib-cr基因;微量肉汤稀释法检测aac(6’)-Ib-cr阳性和阴性菌株对10种抗菌药物的耐药性;采用PFGE分析阳性菌株的亲缘关系.结果是aac(6')-Ib-cr基因检出率15.82%(50/316);aac(6')-Ib-cr阳性株对氨基糖苷类耐药率高于阴性株,但对环丙沙星、恩诺沙星和氧氟沙星的耐药率低于阴性株;aac(6’)-Ib-cr阳性菌株具有不同的PFGE谱型.结论:aac(6’)-Ib-cr基因在本次检测的食品动物源沙门菌中普遍存在,以水平和垂直传播方式在菌群间传播.  相似文献

Veterinarians are integrally involved in the maintenance of a safe and sufficient food supply; this involvement may be put to the test when a crisis — particularly a nuclear crisis — occurs. Few people can be said to be experts in how to ensure a safe food supply in a nuclear crisis. However, a working knowledge of radionuclides and how they behave in the food system, and the ability to identify high-risk foods and high-risk consumers in a crisis situation should be a part of the education of all veterinarians. In this paper I review those features of postdisaster radionuclide contamination of the food chain most relevant to veterinary activities in ensuring a safe food supply.  相似文献
