Feeding increased levels of dietary vitamin E can inhibit lipid oxidation. The aim of this study was to investigate the effect of levels of dietary alpha-tocopherol acetate (VE) and feeding duration on meat quality and lipid oxidation. Eighty-one pigs were allocated to 1 of 3 diets containing 40, 200, or 400 IU of VE/kg of feed, and each diet group was divided into 3 feeding periods (3, 6, or 9 wk). Carcass characteristics and meat quality were evaluated. Oxidative stability of fresh and cooked pork patties and pork chops was determined after chilled or frozen storage. Increasing dietary concentrations of VE did not affect any growth performance parameter. Drip loss, however, decreased (P < 0.05) with increased dietary VE levels. Moreover, an increased duration of VE feeding improved (P < 0.05) pH and drip loss. Less lipid oxidation (P < 0.05) was detected in fresh ground pork from pigs fed greater concentrations of VE after 4 d of storage. A greater (P < 0.05) resistance to oxidation in cooked ground pork was observed in pigs fed 200 or 400 IU of VE/kg at 2 and 6 d of storage. Fresh and cooked pork patty oxidation decreased (P < 0.05) linearly as feeding duration increased from 3 to 9 wk. After 6 mo of freezer storage, lipid oxidation of pork chops from pigs fed 200 or 400 IU of VE/kg was lower (P < 0.05) than for pigs fed 40 IU of VE/kg. Likewise, lipid oxidation of pork chops of pigs fed VE for an extended period of time (6 wk) was lower (P < 0.05) after 9 mo of storage. Fatty acid profiles of neutral lipid fraction of the LM became more unsaturated (P < 0.05) with added VE to the feed. These results indicate an increased intake of dietary VE concentration, and prolonged feeding of VE can improve drip loss and reduce lipid oxidation in ground pork and pork chops. This study suggests that supplementation with 200 IU of VE/kg of feed for 6 wk before market is beneficial in improving lipid stability and pork quality.  相似文献

日粮添加维生素E对降低动物脂质过氧化具有重要作用,可以改善动物肉品质及动物健康状况。本试验在日粮中添加不同水平的茶多酚,研究其对生长猪维生素E状态、血浆抗氧化性能及肉质的影响。选择240头平均体重为(31.24±0.48)kg的三元猪,随机分为3组,每组4个重复,每个重复20头猪。试验共设计3种日粮,对照组饲喂基础日粮,处理组在基础日粮中分别添加10和100 mg/kg茶多酚,试验共进行5周。结果显示:各处理组对生长猪试验初期和末期血浆总抗氧化力和铁还原力均无显著影响(P> 0.05),但对照组、10和100 mg/kg茶多酚添加组血浆试验末期铁还原力均显著高于试验初期(P <0.05)。日粮添加茶多酚对生长猪肝脏、肌肉、血浆α-生育酚和γ-生育酚含量均无显著影响(P> 0.05),其中肝脏生育酚含量最高,之后依次是肌肉、肺和血浆。日粮添加10或100 mg/kg茶多酚,肺中α-生育酚和γ-生育酚含量较对照组有提高趋势(P=0.09)。各组对生长猪肉质均无显著影响(P> 0.05)。日粮添加100 mg/kg茶多酚较对照组提高了生长猪屠宰后48 h肌肉的滴水损失。综上所述:生长猪日粮添加茶多酚对组织维生素E水平、血浆抗氧化力及肌肉品质无显著改善作用。  相似文献

Among others, selenium (Se) and vitamin E (VitE) have been provided to dogs to improve semen quality. However, scientific evidence documenting an effect in dogs is lacking. The aim of this study was to investigate the effect of supplementation of these antioxidants on various ejaculate parameters in a randomized, double‐blinded trial using Cairn Terrier males exhibiting normal seminal quality parameters. Three dogs each were fed a standardized diet and supplemented with 0.1 mg Se, 100 mg VitE or 0.1 mg Se + 100 mg VitE/dog for 3 months. Ejaculate analyses (volume, progressive motility, vitality, morphology, concentration) were performed before inclusion (D0) and after 1, 2 and 3 months (+1, +2, +3). At the same time, glutathione peroxidase (GSH‐PX) and VitE in seminal plasma (SP) and GSH‐PX in blood samples were determined. Vitamin E levels in SP were below the detection limit (1.0 mg/L) in all samples. GSH‐PX in blood (164.0–2794.4 IU/L) and SP (18.4–4326.0 IU/L) was highly variable. Supplementation only significantly affected the total percentage of sperm head abnormalities (p = .011). Time significantly affected the percentage of morphologically abnormal sperm (p = .025), sperm head abnormalities (p = .007), proximal droplets (p = .001) and GSH‐PX in SP (p = .015). Additionally, a significant interaction between time and group was identified for the percentage of membrane‐intact sperm (p = .048), head abnormalities (p = .018), acrosomal defects (p = .043) and proximal droplets (p = .002). Although some effects could be identified for selected parameters, we failed to identify a clear trend about how a 3 months VitE and/or Se supplementation affects semen parameters in normospermic Cairn Terriers.  相似文献

Crossbred "heavy" pigs (average weight 120 kg, slaughter weight above 160 kg) were supplemented with all-rac-alpha-tocopheryl acetate during the last 60 d of late finishing at doses of 25 (control), 50, 100, 200, or 300 mg/kg of diet. At the end of this period, the pigs were slaughtered. Carcass characteristics and the meat quality of pork chops from longissimus muscle (LM) at the last lumbar vertebra were evaluated on eight barrows from each dosage group. Alpha-tocopherol levels were determined in plasma during supplementation and in LM muscle after slaughter. Thiobarbituric acid reactive substances (TBARS) and drip loss were also evaluated in meat. Plasma alpha-tocopherol levels increased (P < .005) during supplementation in treated animals compared to controls, with a peak at 40 d. Alpha-tocopherol levels were higher (P < .05) in LM from pigs treated with 300 mg/kg than in controls (8.4 vs 5.6 microg/g). Dressing percentages correlated (P < .05) with the ratio of plasma alpha-tocopherol levels to the sum of cholesterol and triglycerides. Inhibition of TBARS during storage was related (P < .005) to vitamin E supplementation level, but drip losses in chops were not related to supplementation levels. We concluded that dietary vitamin E supplementation to heavy pigs during the last 60 d of finishing improves dressing percentage, reduces lipid oxidation, and increases the alpha-tocopherol concentration of tissues.  相似文献

Abstract

The study was conducted on 60 pigs kept in individual pens. The animals were allocated to four groups. The growing-finishing pigs from the control group were fed with basic feed containing 0.3 mg selenium (Se) derived from Na2SeO3 kg?1 and 60 mg of dl-α-tocopheryl acetate kg?1. The remaining three groups were differentiated by adding 0.2 mg kg?1 Se-enriched yeast (Saccharomyces cerevisiae) and/or 60 mg vitamin E to feed (grower and finisher). Our results show that the addition of organic Se to inorganic Se commonly used in pig feed caused a significant increase in hepatic Se and muscle. This indicates the possibility of using these products as functional foods to improve Se status in humans residing within regions which are deficient in this trace element. We found no beneficial effect of supplementation with vitamin E and Se on the quality of the meat.  相似文献

The effects of supplementation of beef cattle diets with organic Se (0.3 mg/kg) and vitamin E (300 I.U. alpha-tocopheryl acetate/kg feed), for 55 d preceding slaughter, on the antioxidant status and oxidative stability of muscle was examined. Dietary vitamin E supplementation led to an increase (P < 0.05) in plasma, and longissimus muscle alpha-tocopherol levels. In minced longissimus muscle stored in 80% 02:20% CO2, lipid and oxymyoglobin oxidation were lower (P < 0.05) in muscle from vitamin E-supplemented animals compared with unsupplemented animals. Dietary Se supplementation did not significantly affect muscle Se levels, glutathione peroxidase activity, or susceptibility to lipid and oxymyoglobin oxidation in the presence or absence of vitamin E. Covariance analysis indicated that, in addition to muscle alpha-tocopherol, differences in muscle glutathione peroxidase activity, and pH could account for variation in the susceptibility of muscle to lipid and oxymyoglobin oxidation.  相似文献

1. It has recently been shown that oxidative stress is involved in the pathogenesis of congestive heart failure (CHF) in broiler chickens. Vitamins E and C, common antioxidants, have been advocated for the prevention of heart failure in humans. The present study examines the effects of supplementation of these vitamins on incidence of CHF and prevention of oxidative stress in the myocardium.

Commercial male broilers were randomly allocated to three experimental groups and, respectively, offered commercial broiler diet (control), commercial diets fortified with vitamin E (960 IU/kg) or vitamin C (400 mg/kg). The broilers were monitored daily for overt signs of heart failure and clinical data including ECG and blood gas analysis were collected periodically. Lipid peroxidation was measured in cardiac tissues from apparently normal broilers and broilers developing CHF in each group using thiobarbituric acid reactive substances (TBARS) assay.

3. Overall, the incidence of CHF in broilers given diets fortified with vitamin E or vitamin C was not significantly different as compared to the control group. The incidence of overt signs of hypoxaemia was lower in the vitamin C group than in the control group. Lipid peroxidation was highest in broilers that developed CHF as compared to apparently normal broilers fed either vitamin E or C fortified diets. Neither vitamin E nor vitamin C was effective in preventing oxidative damage in broilers that developed CHF.

4. In conclusion, the present study confirmed that oxidative stress is involved in the pathogenesis of heart failure in broilers, but dietary supplementation of antioxidant vitamins did not prevent oxidative damage in broilers that developed CHF. Beneficial effects of vitamin C supplementation were evidenced by lower incidence of hypoxaemia, and the tendency to reduce the susceptibility of broilers to heart failure. However, vitamin E did not have any impact on clinical status or the incidence of CHF.  相似文献

Pork quality is influenced by nutrition, genetics, management, and pork-processing procedures. Pigs of lean genotype fed diets high in unsaturated fat may have thinner, lower-quality bellies with a soft fat composition. Therefore, we investigated the effects of supplementing 5% choice white grease that had been chemically hydrogenated to iodine values of 80, 60, 40, or 20 on pork quality. Diets were fed to barrows and gilts of two genotypes (NPD [Ham-line x Manor hybrid] and PIC [406, 419, or 420 x C22]; n = 240) in a 4 x 2 x 2 factorial design. Pigs (76.8 kg of mean initial weight) were placed on test at a common age and were fed dietary treatments for 52 d. Pigs of PIC genotype were heavier at trial initiation, had higher feed intake and feed conversion ratio (F/G; P < 0.05), and greater backfat (26.3 vs. 24.0 mm; P < 0.001) and loin depth (59.0 vs. 55.3 mm; P < 0.001) compared with the NPD genotype pigs. As the iodine value of dietary fat was reduced, belly thickness increased (P < 0.05) and length decreased linearly (P < 0.05). Congruently, belly fat iodine value decreased from 73.9 to 67.4 (linear effect; P < 0.001) and belly fat C18:2 concentration declined from 20.6 to 16.3% (linear and quadratic effect; P < 0.001). The belly mono- and polyunsaturated fat ratio increased 29% as diet iodine value declined from 80 to 20 (linear and quadratic effect; P < 0.001). Further, there was a linear increase (P < 0.001) in saturated fatty acid concentration of belly fat (C14:0, C16:0, and C18:0) as dietary fat iodine value declined. Quadratic (P < 0.005) effects were detected in the level of C18:1trans as iodine value decreased from 80 to 20, paralleling dietary content. Dietary fat iodine value did not affect fat digestibility, ADFI, or F/G. Pork belly quality was improved as defined by reduced iodine value, C18:2 content, increased saturated fatty acid content, increased thickness, and decreased length as dietary iodine value decreased. Results indicate that reduction of dietary fat iodine value by chemical hydrogenation has the desirable effect of improving pork quality and does not alter growth performance.  相似文献

Crossbred pigs (n = 216) were used to test the interaction, if any, of ractopamine (RAC) and dietary fat source on the characteristics of fresh pork bellies. Pigs were blocked by BW (77.6 +/- 6.5 kg) and allotted randomly to pens (6 pigs/pen). After receiving a common diet devoid of RAC for 2 wk, pens within blocks were assigned randomly to 1 of 4 treatments arranged in a 2 x 2 factorial design, with 5% fat (beef tallow vs. soybean oil) and RAC (0 vs. 10 mg/kg). At the conclusion of the 35-d feeding period, pigs were slaughtered at a commercial pork packing plant (average BW of 108.8 +/- 0.6 kg), and fresh bellies were captured during carcass fabrication. Neither RAC (P = 0.362) nor fat source (P = 0.247) affected belly thickness. Subjective (bar-suspension) or objective (compression test) measures of belly firmness were not (P > or = 0.148) affected by the inclusion of RAC in the diet; however, bellies from pigs fed soybean oil (SBO) were softer than those from pigs fed beef tallow (BT), as indicated by perpendicular (P < or = 0.005) and parallel (P < 0.001) suspensions. Moreover, bellies from BT-fed pigs required more (P = 0.096) force to compress 50% of their thickness than bellies from SBO-fed pigs (52.29 vs. 43.51 kg). Color (L*, a*, and b* values) of the belly lean and fat was not (P > or = 0.131) affected by RAC, and lean color was similar (P > or = 0.262) between fat sources; however, belly fat from BT-fed pigs was lighter (P = 0.030) and redder (P = 0.013) in color than belly fat from SBO-fed pigs. Bellies of SBO-fed pigs had greater (P < 0.001) proportions of PUFA and lower (P < 0.001) proportions of SFA and MUFA than belly fat from pigs fed BT. Regardless of the RAC inclusion level, PUFA:SFA and iodine values were lower in belly fat from pigs fed BT than SBO; however, within SBO-fed pigs, PUFA:SFA and iodine values were further increased by feeding RAC (RAC x fat source, P < 0.001). As expected, dietary fat source altered the fatty acid composition of fresh pork bellies, which subsequently impacted fresh belly firmness. Interestingly, including RAC in swine finishing diets exacerbated the effect of feeding SBO on pork fat polyunsaturation.  相似文献

Crossbred pigs (n = 216) were used to test the interactive effect, if any, of ractopamine (RAC) and dietary fat source on the performance of finishing pigs, pork carcass characteristics, and quality of LM chops during 5 d of simulated retail display (2.6 degrees C and 1,600 lx warm-white fluorescent lighting). Pigs were blocked by BW and allotted randomly to pens (6 pigs/pen), and, after receiving a common diet devoid of RAC for 2 wk, pens within blocks were assigned randomly to 1 of 4 diets in a 2 x 2 factorial arrangement, with 5% fat [beef tallow (BT) vs. soybean oil (SBO)] and RAC (0 vs. 10 mg/kg). Diets were formulated to contain 3.1 g of lysine/Mcal of ME and 3.48 Mcal/kg of ME. Across the entire 35-d trial, pigs fed RAC had greater (P < 0.01) ADG and G:F, but RAC did not affect (P = 0.09) ADFI; however, performance was not affected (P >or= 0.07) by dietary fat source. This study was designed to evaluate the effects of vitamin E supplementation on pork quality of two genotypes with distinct differences in pork quality traits. Pigs (n = 240; BW = 87 +/- 0.35 kg) were allotted by weight to one of 20 treatments (4 pens/treatment, 3 pigs/pen) in a 2 x 2 x 5 factorial randomized complete block design. Factors included 1) genotype (Berkshire or Hampshire sired), 2) sex (gilts or barrows), and 3) vitamin E level (12.1, 54.7, 98.8, 174.0, and 350.6 IU of vitamin E/kg diet). Hampshire-sired pigs had greater average daily gain (1.05 vs 0.98 kg) and gain:feed (0.30 vs 0.27) and less average daily feed intake (ADFI) (3.46 vs 3.62 kg) than Berkshire-sired pigs (P < 0.001) for the 6-wk study. Hampshire-sired barrows consumed more feed (3.54 vs 3.38 kg/d) and were less efficient (0.29 vs 0.31) than Hampshire-sired gilts (P < 0.05), but this sex difference was not observed in Berkshire-sired pigs (interaction, P < 0.05). Berkshire-sired pigs had greater backfat (34.1 vs 21.1 mm; P < 0.001), reduced longissimus muscle area (37.6 vs 46.3 cm2; P < 0.001), reduced lean percentage (53.0 vs 55.8; P < 0.001), and a greater head-on yield (79.8 vs 79.2; P < 0.05). Vitamin E increased (P < 0.05) ADFI linearly (P < 0.05), but had no effects on carcass composition. Loin chops from Hampshire-sired pigs had reduced ultimate pH (5.64 vs 5.91), greater drip loss (92.2 vs 66.3 mg), and increased Minolta L* (52.6 vs 48.6), a* (8.9 vs 7.5), and b* (6.9 vs 5.2) values compared to Berkshire-sired pigs (P < 0.001). Vitamin E had no effect on pH, temperature, drip loss, and L* or a* values, but tended (P < 0.07) to increase b* values linearly (P < 0.06). Oxidation as indicated by thiobarbituric acid reactive substances (TBARS) was greatest in Hampshire-sired gilts at the lowest level of vitamin E, and decreased linearly (P < 0.001) with additional vitamin E. However, TBARS responded in a cubic fashion (P < 0.05) to vitamin E in Hampshire-sired barrows and were not affected in Berkshire-sired gilts or barrows (three-way interaction, P < 0.02). Hampshire-sired pigs had greater TBARS than Berkshire-sired pigs (0.053 vs 0.047 mg malondialdehyde equivalents/kg). Vitamin E supplementation increased serum concentrations of vitamin E on d 21 (1.06 to 4.79 microg/mL) and d 42 (1.02 to 2.82 microg/mL) and increased tissue concentrations of vitamin E (1.99 to 4.83 microg/g) linearly (P < 0.001). 为了研究提高VE添加量对猪肉质的影响及其同添加有机微量元素效果上的差异,用170头65kg左右的PIC杂交商品猪进行为期35d的对比饲养试验.试验采用5(日粮)×2(性别)的二因交叉分组设计。5种日粮如下:0号(VE添加量为30mg/kg配合饲料,铁、铜、锌、硒均用无机盐形式添加)、1号(在0号基础上将配合饲料中VE添加量提高到200mg/kg,其他不变)、2号(将0号中的无机铁、锌分别用有机铁、锌替换,其他不变)、3号(将0号中的无机硒用有机硒替换,其他不变),4号(在0号基础上将配合饲料中VE添加量提高到200mg/kg,并将无机铁、锌、硒分别用有机铁、锌、硒替换,其他不变)。结果表明:①提高VE添加量对增加肌肉中的VE含量、日增重及校正pH值有极显著效果(P〈0.01):对改善肉色、降低滴水损失、提高嫩度和肌内脂肪含量虽未达到的显著水平,但均呈有益趋势;对背膘厚虽未达到的显著水平,但呈不利趋势。②提高VE添加量与用有机铁、锌替代无机铁、锌相比.使用效果除对肌肉中的VE含量外没有显著差别;与用有机硒替代无机硒相比,则除pH值及背膘厚外,一律呈现更佳趋势;用有机硒替代无机硒在pH值、滴水损失、肌内脂肪含量和日增重方面呈有利趋势,在肉色、嫩度和背膘厚方面呈不利趋势,但均未达到显著水准。③提高VE添加量与用有机铁、锌、硒替代无机铁、锌、硒一并使用,一律不如单独提高VE添加量或用有机铁、锌替代无机铁、锌。据此结果可以认为,单独提高VE的添加量或使用有机铁、锌可以改善肉质。  相似文献

Lymphocyte proliferation and peripheral blood mononuclear cell (PBMC) production of PGE(2) were assayed in 15 healthy dogs fed a basal diet supplemented with either sunflower oil (Group Sunflower oil), sunflower oil and menhaden fish oil (Group Fish oil), or sunflower oil and menhaden fish oil plus alpha-tocopherol acetate for 12 weeks (Group Fish oil + E). Lymphocyte proliferation was determined by a flow cytometric technique utilizing the fluorochrome carboxyfluorescein diacetate succinimidyl ester (CFSE). The PBMC supernatant PGE(2) concentration was assayed using a competitive enzyme-linked immunoassay. Group Fish oil had a significant decrease in lymphocyte proliferation at week 12. PBMC production of PGE(2) was decreased in all three groups but only significantly reduced in groups receiving fish oil supplementation. Based on these results, this level of fish oil supplementation appears to suppress the lymphoproliferative response in healthy, young dogs but this response can be attenuated by high levels of dietary vitamin E supplementation. Furthermore, fish oil-induced reduction in lymphocyte proliferation appears to manifest through a PGE(2)-independent mechanism and is not associated with increased lipid peroxidation.  相似文献

Background

Increasing the polyunsaturated fatty acid (PUFA) content and decreasing the saturated fatty acid (SFA) content of mutton can help to improve its nutritional value for consumers. Several laboratories have evaluated the effects of vitamin E on the fatty acid (FA) composition of muscle in sheep. However, little information is available on wool sheep, even though wool sheep breeds are an important source of mutton, especially in northern China where sheep are extensively farmed. The present study was designed to address the effects of vitamin E on muscle FA composition in male Aohan fine-wool sheep.

Methods

Forty-two male Aohan fine-wool lambs (5 mo old) with similar initial body weight were randomly divided into seven groups and fed diets supplemented with 0 (control group), 20, 100, 200, 1,000, 2,000, or 2,400 IU/sheep/d vitamin E for 12 mo. Three lambs from each group were slaughtered to measure vitamin E and FA content in the longissimus lumborum (LL) and gluteus medius (GM) muscles.

Results

Vitamin E concentrations in the LL and GM increased significantly after 12 mo of vitamin E supplementation (P < 0.05). However, this increase did not occur in a dose-dependent manner because the muscle vitamin E concentration was highest in the 200 IU/sheep/d group. Dietary vitamin E supplementation also caused a significant reduction in SFA content and an increase in monounsaturated FA (MUFA) content in the LL and GM (P < 0.05). All six doses of vitamin E significantly increased cis9 trans11-conjugated linoleic acid (c9t11-CLA) content in the LL compared with the control group (P < 0.05).

Conclusions

Dietary supplementation with vitamin E increased muscle vitamin E content and improved the nutritional value of mutton by decreasing SFA content and increasing MUFA and c9t11-CLA contents in Aohan fine-wool sheep. These effects were greatest in sheep fed a diet containing 200 IU/sheep/d vitamin E.  相似文献

Background: Increasing the polyunsaturated fatty acid (PUFA) content and decreasing the saturated fatty acid (SFA) content of mutton can help to improve its nutritional value for consumers. Several laboratories have evaluated the effects of vitamin E on the fatty acid (FA) composition of muscle in sheep. However, little information is available on wool sheep, even though wool sheep breeds are an important source of mutton, especially in northern China where sheep are extensively farmed. The present study was designed to address the effects of vitamin E on muscle FA composition in male Aohan fine-wool sheep.
