Abstract

The effects of washing on the chemical composition, gel-forming ability and color of Monterey sardine mince were investigated. Recoveries were 41.5, 46.3 and 52.1% for solids and 49.9, 52.7 and 59.9% for protein using washing ratios of 1:20, 1:15 and 1:10, respectively. No differences were detected among the washing treatments except for gel cohesiveness as measured by texture profile analysis. Large variations in muscle composition were observed at different months of harvesting which could preclude the effect of washing on the characteristics of the mince. Results showed that washed mince possesses an excellent gel-forming ability, suggesting that sardine could be used for surimi processing.  相似文献

Textural characteristics of silver carp surimi gel prepared from acid- and alkali-produced protein isolates were investigated and compared to the surimi gels derived by conventional methods. The acid-aided method showed the most efficiency to recover proteins (86.2%) in comparison to the alkaline-aided (79.8%) and conventional (76.7%) methods. In the washing of fish mince, every step resulted in reduction of sarcoplasmic protein, and consequently the myofibrillar fraction became more concentrated, as shown by the protein patterns in wash water. Some myofibrillar proteins (mainly actin and myosin) were removed along with sarcoplasmic proteins during washing, reducing yield efficiency during the conventional method of making surimi. During the pH shifting process, myosin heavy chain (MHC) was degraded during low (2.5) pH solubilization, whereas there was only a minimal loss of MHC by either hydrolysis or proteolysis during alkaline solubilization. The breaking force and breaking distance of surimi gel prepared in the pH-shifting processes were significantly (p < 0.05) greater than those of surimi gel made by conventional methods, as were expressible moisture, cohesiveness, and springiness. In conclusion, the pH-shifting technique can be considered as an efficient alternative process in recovery of greater quantities of functional protein from silver carp fillet.  相似文献

Abstract

The gel forming ability and other characteristics of the mince of 11 underutilized marine fish were studied. They were Bombay duck, silverbelly, sea catfish, silver jewfish, jewelled shad, queenfish, Spanish mackerel, hardtail, Indian tuna, tripletail and false conger eel. Mince was prepared from fillet and a portion of the mince was washed two times with cold water (5°C) containing 0.1% NaCl. Both washed and unwashed mince were ground with 3% NaCl. Ground paste was then stuffed into plastic tube and heated for one- and two-step heating. In the one-step heating, the tubes were subjected to 25°, 30°, 35°, 40°, 50°, 60°, 70° and 80°C for 60, 120 and 180 min. In the two-step heating, the tubes were pre-heated at 25°, 30°, 35°, 40°, 50°, 60°, 70° and 80°C for 60, 120 and 180 min. After the pre-heating, the tubes were immediately subjected to 85°C for 30 min. The gel was subjected to puncture, folding, expressible moisture and sensory tests.

Two-step heating distinctly improved the gel strength compared to the one-step heating. The improvement due to two-step heating was more at low preheating temperatures from 25-35°C. Washing improved the texture and color of all of the gels except Bombay duck and decreased the extent of gel-disintegration in silverbelly, queenfish, sea catfish and hardtail. The gels were set optimally at 35°-40°C for most species. Species variation in the disintegration of the gels was observed. Bombay duck mince produced very weak gel. Neither two-step heating nor washing could improve the gel quality of Bombay duck mince. Our data suggested that jewelled shad, queenfish, silver jewfish, sea catfish, tripletail and false conger eel could be suitable as the material for surimi.  相似文献

ABSTRACT:   In order to elucidate the mechanism of the changes in gel forming characteristics of fish meat by pH-lowering, the gelation-temperature curve and the gelation-moisture content curve were examined using the acidified walleye pollack surimi or neutralized one after acidification. In the gelation-temperature curve, the gel strength was highest at 30°C and lowest at approximately 50–60°C, irrespective of pH shifting. The gel strength at 30°C and 80°C decreased with the decrease in pH value. The neutralization of acidified surimi improved the gel strength, but it was considerably lower than the original gel strength. The gel strength at 50–60°C was not affected by pH lowering. The gel strength at 80°C could not be revived to the original by pH readjustment, either in the presence or in the absence of EDTA. These results suggest that irreversible changes of meat protein take place under the low pH, and the oxidation ability of sulfhydryl (SH) groups of protein molecule is not affected by pH-shifting.  相似文献

Arrowtooth flounder was found to be a suitable raw material for the production of surimi. Based on SDS-PAGE and autolysis tests, proteolytic activity was not observed during the production process itself, and the 12% residual activity in the mince after washing was effectively inhibited by bovine plasma powder, egg white and a2 macroglobulin. Plasma and egg white continued to increase gel strength values when added at levels higher than necessary to prevent proteolytic activity according to punch test results. Neither carrageenan nor whey protein concentrate were effective as either a protease inhibitor or gel enhancer.  相似文献

ABSTRACT:   The effects of shrimp head protein hydrolysate (SHPH) from three species of shrimp (northern pink shrimp [ Pandalus eous ], endeavour shrimp [ Metapenaeus endeavouri ], black tiger shrimp [ Penaeus monodon ]) on gel forming ability and protein denaturation of lizardfish surimi during frozen storage at −25°C were evaluated. The quality of lizardfish surimi with 5% (dried matter) of any of the three SHPH or sodium glutamate (Na-Glu) was examined in terms of gel strength, whiteness, Ca-ATPase activity and the amount of unfrozen water, comparing with those of surimi without additive as the control. The residual Ca-ATPase activity and gel strength of surimi with SHPH were higher than those of the control throughout 180 days of frozen storage, regardless of shrimp species. The highest effect was found in surimi with Na-Glu. The gel strength and Ca-ATPase activity found a high positive correlation. The addition of SHPH to surimi also increased the amount of unfrozen water by approximately 1.29–1.36 fold higher than the control, however kamaboko gels of the control was significantly whiter. From these results, freeze-induced denaturation of lizardfish muscle protein could be lessened by the addition of SHPH, resulting in a high gel strength and Ca-ATPase activity.  相似文献

ABSTRACT:   Horse mackerel and tilapia surimi were subjected to six different heat and pressure treatments in order to compare gelation characteristics of easy- and difficult-setting gels, that is, temperature dependence, by observing rheological properties and microscopic molecular mobility. The stress–relaxation and proton spin–spin relaxation time (1H T 2) of water were measured for all treated gels. Horse mackerel gel demonstrated higher elasticity, large distribution of the stress–relaxation process, and smaller water 1H T 2 than tilapia in both heat and pressure treatments. The water 1H T 2 was steeply increased in the pressure treatment at around 294 MPa for both fishes. In contrast, the 1H T 2 rarely changed in the heat treatment in spite of the considerable change in rheological properties. From the experimental results, it is considered that the gelation of horse mackerel (easy setting) surimi is induced by highly unfolding and re-aggregation of protein, which contributes to the formation of a strong network structure compared with tilapia in both heat and pressure treatments, and that pressure treatments hardly improve the gel strength of tilapia (difficult setting) surimi. The water 1H T 2 measurement was used effectively in order to study gelation characteristics of easy- and difficult-setting fish through observing its molecular dynamics.  相似文献

本研究以鲟鱼(Acipenser sinensis)肉为原料,通过正交实验对鲟鱼鱼糜的漂洗工艺进行了优化,对鱼糜漂洗前后的蛋白质含量及其组成、水分分布、凝胶性能等进行了研究。结果显示,鲟鱼鱼糜的最佳漂洗工艺为:水漂洗1次,盐水漂洗1次,盐的质量分数为0.25%,漂洗时间为1 min。鲟鱼鱼糜经漂洗后,其盐溶性蛋白比例显著升高(P<0.01);鱼糜中的水分受到的束缚力增加,自由度减小,形成了更为致密的凝胶网状结构;破断力、凹陷距离、凝胶强度、持水力、白度等表征凝胶性能和鱼糜品质的指标明显提升。研究表明,采用恰当的漂洗工艺可显著提高鲟鱼鱼糜的品质。  相似文献

Fish protein hydrolysates (FPH) have gained increasing attention as nutritious fish products. Lipid oxidation associated with fishy odor in FPH limits its utility. Thus, an appropriate pretreatment of fish mince prior to hydrolysis by lowering pro-oxidants and lipid substrates could tackle such a problem. Different pretreatments of Nile tilapia minces including (1) washing (W), (2) washing and membrane removal (W-MR), and (3) washing/membrane removal followed by acid or alkaline solubilization (W-MR-Ac or W-MR-Al) were conducted prior to hydrolysis. During the hydrolysis process, degree of hydrolysis (DH) and chemical changes were monitored. Color and sensory properties of milk fortified with hydrolysates prepared from mince without and with pretreatment were also determined. Among the pretreated mince samples, W-MR-Al contained the lowest remaining myoglobin and heme iron contents and also showed the lowest total lipid and phospholipid contents (P?<?0.05). When mince and W-MR-Al were hydrolyzed using Alcalase for up to 120?min, higher DH were found in W-MR-Al. Furthermore, lower peroxide values, thiobarbituric acid reactive substances, and non-heme iron contents of hydrolysates from W-MR-Al were also observed (P?<?0.05). When FPH powder from mince and W-MR-Al (0.3% to 0.5%) were fortified in milk, the former yielded a lower likeness score (P?<?0.05) at all levels used. The addition of the latter up to 0.5% had no effect on likeness of all attributes, compared with control (without FPH). An appropriate pretreatment of mince was a promising approach to lower fishy odor problem, caused by lipid oxidation in FPH.  相似文献

ABSTRACT

Lipid and protein oxidation in catfish (Clarias lazera) surimi during processing and storage were assessed. Catfish surimi were washed in deionized water: M0 (no washing step), M1 (one washing step), and M2 (two washing steps). Lipid, protein, water, and iron contents were determined. M0, M1, and M2 were stored for 0, 1, 4, 7, or 10 days at 4 ± 1°C; at each time point, samples were removed for analyses. Lipid oxidation was assessed by measuring malondialdehyde content. Protein oxidation was assessed by measuring protein solubility and protein sulfhydryl and carbonyl group contents. Based on the results, lipid content, L* and a* (color parameters), and fatty acid content in M1 and M2 were significantly reduced. Lipid oxidation development was faster in M1, and the ranking was as follows: M1 > M2 > M0, with M0 being significantly less oxidized than M1. Increasing the number of washes increased protein oxidation, and the ranking was follows: M2 > M1 > M0. Altogether, lipid and protein oxidation and physicochemical changes occurred simultaneously to different degrees in surimi during various processing and storage conditions.  相似文献

Abstract

Setting and thermal treatment effects on texture and color of tropical tilapia surimi gels were compared to Alaska pollock and Pacific whiting gels. Heat treatments that most favored intrinsic gelling factors of a fish species exhibited strong gel formation. Whiteness values increased as total thermal inputs increased, which reflect the increasing opacity of the gels. Pollock gels were generally the strongest and whitest. Tilapia gel quality was generally second to pollock gels, however, in heat treatments using setting temperatures ≥ 40 °C, tilapia gels were comparable (60 °C setting) or superior (40 °C setting) to pollock gels. The optimum heat treatment for tilapia surimi appeared to be a 40° C setting for 1 hr followed by a 90 °C cook for 15 min. SDS-PAGE patterns of gels prepared with 60°C setting followed by 90 °C cooking elucidated the various degree of protein degradation depending upon the species in a descending order of whiting, tilapia, and pollock.  相似文献

This study was aimed to determine the effects of phosphate compound substitutions (sodium bicarbonate and xanthan gum) and preparation methods—headed, gutted whole fish, and mince; fresh and after frozen storage (?20°C for 3 months)—on Nile tilapia mince qualities. Results showed that bicarbonate (0.3% with 8% sucrose/sorbitol) is an efficient phosphate compound replacement as evidenced by the comparative values of salt extractable protein, Ca2+-ATPase activity, total sulfhydryl content, and textural properties to those of the phosphate-added—0.3% sodium tripolyphosphate (STPP) with 8% sucrose-sorbitol—sample after 3-month frozen storage (p > 0.05). Both cryoprotected samples containing STPP or bicarbonate exhibited higher denaturation temperatures of myosin than others. Xanthan gum (0.5%) could neither stabilize the biochemical and physicochemical properties of mince during 3-month frozen storage nor improve textural properties of gel from frozen whole fish.  相似文献

The effect of microbial inactivation and washing process on physicochemical and sensory quality of pasteurized fish sausage during cold storage (4°C) was evaluated. Mince was obtained after the grinding; washed mince (WM) was obtained by single washing of mince; and surimi was obtained after three washing and dewatering cycles. Texture profile analysis results demonstrated that textural characteristics of pasteurized fish sausages remain stable during storage period (p > 0.05). Color analysis showed that Hunter L* had an increasing trend, and a* and b* had a decreasing trend over time (p < 0.05). Thus, it is possible to inactivate all microorganisms in pasteurized fish sausage without any undesirable effect on physicochemical and sensory quality.  相似文献

The effects of setting (suwari) at around 40 °C on the breaking strength and breaking strain rate of thermal gels treated at 85 °C for 20 min during the following processing step were examined in association with the polymerization and degradation of myosin heavy chains (MHCs) for surimi prepared from white croaker, walleye pollack and deepsea bonefish. In the case of white croaker and walleye pollack, maximum values of breaking strength and breaking strain rate were obtained after suwari at 30–40 °C for both 30 and 60 min, at which temperature MHCs were polymerized. In comparison, these textual properties of the thermal gels decreased in surimi prepared from deepsea bonefish after suwari at around 38 °C for 30 min and at around 32 °C for 60 min, with concomitant degradation products of MHC. The textual properties of deepsea bonefish after suwari at temperatures >45 °C tended to be almost the same as those after suwari at temperatures of <30 °C, where neither polymerization nor degradation of MHC was observed.  相似文献

为探究转谷氨酰胺酶(TG酶)催化过程中,鲢肌原纤维蛋白凝胶性能的变化,进一步提升鲢鱼糜制品特性和营养价值。对不同催化时间(0、15、30、60 min)后鲢肌原纤维蛋白凝胶的交联度、凝胶强度、白度、持水性、微观结构及消化特性变化进行了分析。结果显示,TG酶诱导蛋白胶凝后,蛋白凝胶交联度显著提高。在TG酶催化过程中,随交联时间的延长,白度值增加、持水性提高。通过扫描电镜分析,发现凝胶网络孔径变小,结构变得更加致密。在催化时间30 min下,交联度、白度值及持水力显著提高,弛豫时间T22显著减小。TG酶催化后的蛋白凝胶在消化初始阶段水解程度较低,因为交联度提升,蛋白网络结构越来越致密,降低了胃蛋白酶对其水解位点的可及性。蛋白消化90 min后,网络遭到破坏,导致其水解速率明显提高。研究表明,在适当的交联时间下,有助于提升蛋白凝胶的凝胶特性。该研究为TG酶对鱼肉制品品质及消化特性的改善提供了实验依据。  相似文献

The effects of setting time, whey protein concentrate (WPC), and calcium chloride (CaCl2) on textural properties of silver carp surimi were investigated. Response surface methodology was used to evaluate and compare the effects of setting time (30–90 min), WPC (1–9% of protein ratio), and CaCl2 (1–59 mmol/kg) on the gel strength. Models for breaking force, breaking distance, and gel strength of surimi gel were established. The maximum gel strength was achieved at the setting time of 60 min, WPC and CaCl2 at 5% protein ratio, and 15–18 mmol/kg. CaCl2 was the most significant factor affecting the gel strength.  相似文献

ABSTRACT:   This study examined the thermal gelation characteristics of myofibrillar protein (MP) and salt-ground horse mackerel surimi that had been mixed with hydroxypropylmethylcellulose (HPMC). Analysis, using thermal scanning rigidity monitor and differential scanning calorimetry, demonstrated that thermal gelation begins in the thermo-reversible HPMC gel used in this study at approximately 60°C. In the rescanning test, first scanning diagrams showed similar pattern, but second scanning diagrams were rather diverse between MP and MP/HPMC mixture. The addition of HPMC increased rigidity of salt-ground surimi and modified the thermal gelation during the heating process, suggesting that certain enhancing effect of gelation occurred when the mixture of MP and HPMC was heated. In the annealing test, the addition of HPMC lowered the breaking force, but increased the gel strength of surimi due to a substantial increase in deformation. Although the strong cross-linking between the two components might not occur during the gelling process, HPMC gel formed at high temperature occupies some space in thermal gel by interacting with proteins and resulted in a combinative gel with a higher rigidity and gel strength at higher temperature.  相似文献

ABSTRACT

Changes in chemical parameters of tropical fish used for surimi production—namely, threadfin bream (TB; Nemipterus spp.), lizardfish (LZ; Saurida spp.), and goatfish (GF; Upeneus spp.)—during ice storage and their respective washed mince were investigated. Total volatile basic nitrogen (TVB-N), trimethylamine (TMA), hypoxanthine (Hx), and total biogenic amine (BA) content of mince increased with storage time. Crude protein of fish and their respective washed mince reduced as storage time of fish was prolonged. Principal component analysis (PCA) revealed that washed mince produced from fish stored in ice for 7–12 days showed chemical characteristics that were distinct from those of washed mince prepared from spoiled fish. The TMA, TVB-N, and Hx content of washed mince appeared to be sufficient raw material freshness indicators in these three species.  相似文献

ABSTRACT

The effects of melanin-free ink (MFI) and pre-emulsification on gel properties and stability of bigeye snapper surimi gel fortified with seabass oil during refrigerated storage of 10 days were studied. Lipid oxidation as determined by peroxide value (PV) and thiobarbituric acid reactive substances (TBARS) of surimi gel increased as the level of seabass oil increased (P < 0.05). When MFI was incorporated into surimi gel, lower PV was obtained throughout the storage (P < 0.05). Addition of seabass oil pre-emulsified with soy protein isolate (SPI) in the presence of MFI yielded surimi gel with the highest breaking force and could improve oxidative stability during refrigerated storage (P < 0.05). Slight decrease in whiteness was found in surimi gel added with MFI, while those added with MFI along with pre-emulsified seabass oil showed increased whiteness (< 0.05). Addition of MFI did not affect total viable count and psychrophilic bacterial count in surimi gels. Thus, the incorporation of pre-emulsified seabass oil prepared using SPI in conjunction with MFI could improve quality and oxidative stability of gel from bigeye snapper surimi.  相似文献
