The effects of high pressure processing (HPP) at 500 and 800 MPa for 1 and 10 min, and the addition of glycerol (4% w/w) and salt (1% w/w) on the properties of water in corn tortillas were investigated. Moisture content and water activity were not affected by either HPP or addition of glycerol/salt. Thermal analysis techniques (such as differential scanning calorimetry and thermogravimetric analysis) and nuclear magnetic resonance spectroscopy (1H cross-relaxation and 1H T1 and T2 relaxation times) were used to characterize these samples at a structural and molecular level, respectively. Addition of glycerol and salt significantly decreased the ‘freezable’ water content of the tortillas while HPP had little effect on the measured structural properties. The proton mobility was significantly decreased by HPP but not affected by addition of glycerol and salt. These results show that both composition and HPP may alter the structural and molecular properties of water in corn tortillas.  相似文献

Wheat flour tortillas (31·9% moisture) were stored at −60, −12, 0, 4, 22, and 35 °C to evaluate textural changes during staling. Subjective rollability and two-dimensional extensibility tests revealed that tortillas stored at ≥0 °C had increasing force, work and modulus of deformation values during storage. Tortillas stored at ≤−12 °C retained their fresh attributes over 25 days. Tortillas staled more as defined by rheological changes when stored at 22 °C than at 0, 4, or 35 °C. Optimum storage temperatures of wheat flour tortillas are ≤−12 °C while optimum staling temperatures are between 4 and 35 °C.  相似文献

The texture, pasting and thermal properties of two common baked products made from wheat flour, buns and tortillas, were characterised periodically over 8 days of storage. Firmness of buns and tortillas increased throughout storage as measured using a texture analyser. Pasting viscosities of crumb-water slurries were measured with a Rapid Visco Analyser. Pasting viscosities at 74 °C, 95 °C of fresh products (one min after baking) were significantly lower than their respective dough pasting viscosities. No particular trend was observed in the pasting properties of bun and tortilla samples upon further storage up to 8 days. Amylose solubility decreased significantly immediately after baking in both buns and tortillas and continued to decrease throughout the storage period. Thermal analysis with a differential scanning calorimeter detected amylopectin recrystallisation almost immediately after baking (1 min) in tortillas, whereas amylopectin recrystallisation in buns was evident only after storage for 1 day. Amylopectin recrystallisation in tortillas continued to increase during storage. Overall, the harsher processing of buns, i.e. higher temperature, longer time and higher moisture environment, resulted in greater dispersion of amylose and amylopectin, and retrogradation of amylose in buns than in tortillas. Further, amylopectin crystallisation by itself did not contribute to staling, because more amylopectin crystallisation was observed in tortillas than in buns, even though the shelf life of tortillas is longer than buns.  相似文献

The aim of this work was to supplement masa made from nixtamalized white maize flour (NWMF) with anthocyanins (0.0, 0.03, 0.06 and 0.12 g/100 g of masa), and to evaluate the effects on the rheological properties of the masa and on color, staling, in vitro digestibility, and hardness of tortillas. Tortilla baking reduced the content of anthocyanins by about 10%. The color parameters of the tortillas added with anthocyanins was similar to that of tortillas made with blue maize. Attenuated total reflection ATR-FTIR spectra showed that the 1022/1047 peak ratio increased, indicative that retrogradation increased with storage time, but the ratio was significantly lower for tortillas with added anthocyanins than without them, and lower for higher anthocyanins concentration. Freshly made tortillas added with anthocyanins exhibited lower ready digestible (about 35%) and slowly digestible (about 20%), but higher resistant (about 45%) starch fractions. Tortillas with 0.12 g of anthocyanins showed significantly lower hardness than the control tortillas (without added anthocyanins). Both previous mentioned effects can be associated with retrogradation, which on turn could be linked to anthocyanins-starch complexes and inhibition of amylolytic enzymes.  相似文献

An LC-MS-based metabolomics approach was used to characterise the variation in secondary metabolite production due to changes in the salt content of the growth media as well as across different growth periods (incubation times). We used metabolomics as a tool to investigate the production of rifamycins (antibiotics) and other secondary metabolites in the obligate marine actinobacterial species Salinispora arenicola, isolated from Great Barrier Reef (GBR) sponges, at two defined salt concentrations and over three different incubation periods. The results indicated that a 14 day incubation period is optimal for the maximum production of rifamycin B, whereas rifamycin S and W achieve their maximum concentration at 29 days. A “chemical profile” link between the days of incubation and the salt concentration of the growth medium was shown to exist and reliably represents a critical point for selection of growth medium and harvest time.  相似文献

The quality of bread made from frozen dough is diminished, and staling rate is increased by changes that occur during freezing and storage. New cultivars of waxy wheat flour (WWF), containing higher levels of amylopectin, may help improve the quality of baked products. Bread quality and staling were investigated for bread containing 0–45% WWF and 55–65% water after freezing and 90-day frozen storage. The specific volume was highest with 15% WWF substitution and 60% water in bread made from both unfrozen and frozen dough. With higher levels of WWF and lower water content, bread staling rates decreased. Bread with higher levels of WWF were darker and had greater color variation. 1H NMR studies showed that bread with greater WWF and water had higher transverse relaxation (T2) times (9–11 ms), but less change in T2 during storage. This research demonstrated that specific combinations of WWF and water produced a better quality of bread after dough freezing.  相似文献

Bread staling involves a combination of physico-chemical phenomena that leads to a reduction of quality. This study aims at evaluating the impact of baking conditions (280 °C, 8 min; 310 °C, 5.5 min; 340 °C, 4 min), baking type (of fully baked (FB) and part-baked (PB)) and storage temperature (−18, 4 and 20 °C) on the staling of Sangak bread. Results showed that lower baking temperature with longer baking time produced drier bread with higher firmness. In FB Sangak breads, amylopectin retrogradation, amount of unfreezable water and firmness (measured by compression test) increased during storage at positive temperatures but hardness (determined by Kramer shear test) decreased significantly during first day of storage. The recrystallized amylopectin traps the free water resulting in crumb hardening. Water is also absorbed by the dry crust resulting in changes of rheological properties in the crust and crumb, and finally in staling. Storage at 4 °C resulted in increasing melting enthalpy of amylopectin crystallite in comparison with storage at 20 °C. Also it was found that firmness of PB breads due to rebaking was significantly lower than FB breads. There were no significant changes in staling parameters of FB and PB stored at −18 °C.  相似文献

The chemical composition and the components of corn grain affect the quality of tortillas produced from extruded instant corn flour (EICF). We have studied the effects of various types of corn lipids added at several concentrations to the regular raw corn flour before processing. The structural properties of flour, the effective moisture diffusion coefficient and the weight loss during cooking of fresh masa, as well as the textural characteristics of tortillas were analysed as a function of concentration and type of corn lipid added. The concentration of added lipid ranged from 0·5 to 2% (w/w). Each type and concentration of lipid was observed to have a different effect in the quality of masas and tortillas. Commercially it is desired to have tortillas with good properties and a high yield, that is, optimum weight transformation from corn to tortilla. From our analysis, the lowest dehydration rate (lowest effective moisture diffusion coefficient) and the best physicochemical and textural characteristics of fresh masas and tortillas were obtained from flour supplemented with 0·5% (w/w) of the nonpolar lipid fraction III. The loss in starch crystallinity due to the cooking process of masa into tortilla was similar in all treatments.  相似文献

The effect of the recombinantly produced xylanase B (XynB) from Thermotoga maritima MSB8 on the quality of frozen partially baked bread (FPBB) was investigated. Addition of XynB to wheat flour dough resulted in a significant increase in dough extensibility (L), swelling (G), and a decrease in dough resistance to deformation (P), configuration. Bread crumb characteristics were studied by differential scanning calorimeter (DSC) and dynamic-mechanical analysis (DMA). The results show that addition of XynB leads to improvements in the bread quality of FPBB and retards bread staling compared to the control. The greatest improvements were obtained in specific volume (+35.2%) and crumb firmness (−40.0%). The control FPBB was significantly firmer in texture and higher in amylopectin recrystallization than the bread with XynB. During frozen storage of FPBB with and without XynB for 8 weeks, the crumb firmness increased gradually and the specific volume slightly decreased with the frozen storage time. The ΔH values of freezable water (FW) endothermic transitions increased with frozen storage time for all samples. However, addition of XynB lowered the ΔH values indicating a decrease in FW. Therefore, XynB is useful in improving the quality of FPBB. DMA was also used to monitor the shrinking behavior of the samples. Addition of XynB increased the contraction during chilling but significantly diminished the total shrinking and frozen-state shrinking of the bread crumb during the freezing process.  相似文献

Fresh and stored maize (white and blue) tortillas were evaluated for physicochemical, rheological and structural characteristics assessed by calorimetry, x-ray diffraction, Fourier transform infrared (FTIR) spectroscopy, dynamic viscoelastic tests, and high-performance size-exclusion chromatography. Two endotherms were found in studies of fresh and stored tortillas. The low temperature endotherm (50–56 °C) was due to reorganized (retrograded) amylopectin, while the high temperature endotherm (105–123 °C) was attributed to retrograded amylose. The enthalpy value for the lower temperature transition was minor than that of the high temperature transition. Fresh tortillas showed an amorphous starch arrangement by x-ray diffraction study. Stored samples showed the presence of peaks at 2θ = 17o and 23o, indicating re-crystallization of starch components. FTIR results confirmed the development of higher levels of starch crystals during storage. Differences in the viscoelastic parameters were also observed between fresh and stored samples. At the longest storage times, white tortillas were more rigid than blue tortillas. Molar mass values for starch increased for both white and blue tortillas as storage time progressed, though relatively higher values were obtained for white tortillas. More starch reorganization occurred in white tortillas, in accordance to calorimetric, x-ray diffraction, FTIR and rheological results. These results corroborate that changes occurring in tortillas during storage are related to reorganization of starch components, and the maize variety more than the color plays an important role.  相似文献

Corn grits and corn fiber mixed at different mass ratios (0/100, 15/85 and 30/70) were extruded at different melt temperature (90, 105 and 120 °C) using extrusion with and without CO2 injection. The L value, reducing sugar content and antioxidant properties decreased after extrusion with or without CO2 injection. The color and antioxidant properties were relatively stable in the extrusion with CO2 injection at higher melt temperature (120 °C) in comparison with the extrusion without CO2 injection. Higher corn fiber content resulted in less loss of total phenolic content. The b, ΔE values and water absorption index increased after extrusion. The increase of the water absorption index was higher after the extrusion process with the CO2 injection especially at the lower melt temperature. The addition of corn fiber decreased L, b, and ΔE values, but significantly increased antioxidant properties under the same extrusion conditions.  相似文献

Water resources are limited for irrigation worldwide; therefore, there is a need for water-saving irrigation practices to be explored. Partial root-zone drying (PRD) is a new water-saving irrigation strategy being tested in many crop species. Experiments were conducted in potato (Solanum tuberosum L. cv. Folva) under open field conditions in 2004 and under a mobile rainout shelter in 2005. Two subsurface irrigation treatments were studied: full irrigation (FI) receiving 100% of evaporative demands, 50.1 and 201 mm of irrigation water in the 2 years, to keep it close to field capacity; and PRD, which received 21.7 and 140 mm of irrigation in 2004 and 2005 respectively. Due to rain in 2004, the PRD treatment was imposed over a short period only during the late tuber filling and maturing stages. In 2005, the PRD treatment was imposed during the whole period of tuber filling and tuber maturation. The PRD treatment was shifted from one side to the other side of potato plants every 5–10 days. Especially in 2005 it was apparent that stomatal conductance was generally lower in the PRD than in the FI plants, whereas leaf water potential tended to be lower in only a few instances. During the treatment period, plants were harvested five times, and no significant difference was found between the treatments in leaf area index, top dry mass and tuber yield. At final harvest, tubers were graded based on size into four classes C1–C4, of which the yield of the important marketable class (C2) was significantly higher (20%) in the PRD than in the FI treatment. Compared with FI, the PRD treatment saved 30% of irrigation water while maintaining tuber yield, leading to a 61% increase of irrigation water use efficiency. The limited data of 2004 support these results. In summary, PRD is a promising water-saving irrigation strategy for potato production in areas with limited water resources.  相似文献

Transgenically expressed Bacillus thuringiensis insecticidal-protein Cry1Ab was quantified in target tissues of insect feeding of several YieldGard® corn hybrids. The Cry1Ab protein is intended to protect corn plants from two economically important stem borers, Chilo partellus and Sesamia inferens. A total of seven YieldGard hybrids, all with MON810 event, were field-tested in a total of fourteen locations during the dry season (October–March) of 2005/2006 and wet season (May–October) of 2006. S. inferens and C. partellus oviposit on leaves of young corn plants, 15–60 days after emergence (DAE). The neonates initially feed by scraping the leaf lamina before migrating to bore into the stem. Thus high concentrations of Cry1Ab in whorl leaf and stem tissues would ensure effective control of the borers. The mean tissue Cry1Ab concentrations during the oviposition window of the borers (15–60 DAE), ranged from 50.05 to 21.01 ppm in whorl leaf, and between 9.26 and 3.47 ppm in stem tissue during the same period in the dry season of 2005/06. Similarly, Cry1Ab concentrations in whorl leaf and stem between 15 and 60 DAE during the wet season of 2006 ranged between 19.30 to 11.08 and 14.28 to 4.69 ppm, respectively. The baseline-sensitivity data of these insects to Cry1Ab in laboratory assays was determined. The concentrations of Cry1Ab in the target tissues as studied in seven YieldGard hybrids tested suggest effective management of the two borers. This paper also provides a summary of the expression of the Cry1Ab gene in various genetic backgrounds.  相似文献

This study was designed to test the hypothesis that the stability and physical properties of starch gels could be improved by adding small amounts of corn fiber gum (CFG). In the differential scanning calorimeter measurement, the enthalpy of retrogradation was 7.30 J/g for starch without CFG and 4.30 J/g for starch composite gel with 1.0% CFG. The addition of 1.0% CFG to starch significantly (p < 0.05) decreased the degree of retrogradation during the long-term storage from 61.6% to 36.5%. The addition of CFG retarded the syneresis of the starch system from 17.97% and 34.93%–6.15% and 26.57% after storage for 7 and 14 days respectively. The crystallization peak of starch containing 0.5–1.0% CFG was quite diminished. When compared with the starch gel alone, the addition of CFG significantly lowered the hardness of the composite starch gel from 60.92 to 45.81 N after 14 days storage. The starch gel without CFG showed the lowest rapidly digestible starch content and the highest resistant starch content in comparison to starch/CFG composite gels after 7 and 14 days storage. Over all, the addition of CFG considerably inhibits the retrogradation of corn starch gels during long-term storage.  相似文献

There is a growing interest for an environment-friendly nixtamalization process. Nixtamalization with calcium salts generates a minimum level of polluting residues. The effect of a nixtamalization process with calcium carbonate (NCC) on the indigestible carbohydrate content and starch digestibility of tortillas was evaluated. Traditional and NCC tortillas showed lower moisture content than commercial tortillas. Similar protein, ash, and carbohydrate content were found for the three tortillas, but NCC tortillas showed the highest lipid content. The NCC tortilla had the highest dietary fiber content, with the highest insoluble dietary fiber level. Fresh and stored (96 h) NCC and traditional tortillas showed similar resistant starch content. Fresh traditional tortilla showed the highest slowly digestible starch (SDS), but upon storage the rapidly digestible starch (RDS) content of NCC tortilla decreased. Fresh traditional and NCC tortillas had lower predicted glycemic index (pGI) than commercial tortillas, and upon storage, the three tortillas presented lower pGI values than their fresh counterparts. Consumption of tortillas produced with the NCC can produce positive effects in the human health.  相似文献

Summary A comparative study of nine Indian potato varieties showed a good correlation between their total carotenoid content and the tuber flesh colour. Regardless of varietal differences, carotenoid level showed an increase during storage at ambient temperature (25–30°C) and to a lesser extent at 2–4°C and 15°C. Tubers exposed to an irradiation dose of 10 krad for sprout inhibition showed decreased levels of carotenoids during storage, particularly at 15°C where 50% loss was observed after 6 months of storage. Irradiated tubers stored for seven months at 15°C, on reconditioning at 34–35°C for 6 to 12 days showed a 2- to 6-fold increase in their carotenoid content.  相似文献

The effect of electrolyzed oxidizing (EO) water in combination with ozone to control postharvest decay of tangerine cv. “Sai Num Pung” was investigated. The spore suspension containing 105 conidia ml−1 of Penicillium digitatum was prepared. EO water was generated by electrolysis of various concentrations of NaCl solution (5, 25, 50% and saturated NaCl). The spore suspension was inoculated into EO water and incubated at 27 °C for 1, 2, 4, 8 and 32 min. It was found that the EO water with saturated NaCl completely inhibited the spore germination of the fungus within 1 min. When the fruits inoculated with P. digitatum were washed in EO water at the same concentrations as previous experiment for 4, 8 and 16 min and stored at 5 °C for 18 days, it was found that immersion of the fruit in EO water for 8 min was the most effective to reduce disease incidences. Moreover, washing fruit in EO water and kept in a refrigerated chamber at 5 °C with continuous ozone exposure at a concentration of 200 mg l−1 for 2 h day−1 to extend storage life suppressed the disease incidence until 28 days. However, none of the treatments had any effect on the quality of fruit such as total soluble solids, titratable acidity, percent weight loss and peel color. Therefore EO water may be useful for surface sanitation and ozone has potential to control the recontamination of postharvest diseases in tangerine fruit in storage room.  相似文献

The amount of ice in both unfrozen steamed bread dough (UFD) and prefermented frozen steamed bread dough (PFD) with and without glycerol was investigated by differential scanning calorimetry (DSC). The quality of unfrozen steamed bread (UFB)/prefermented frozen dough steamed bread (PFB) was also evaluated. Frozen stability and steaming performance of prefermented frozen dough were negatively correlated with ice crystal growth. Glycerol effectively prevented the formation of ice crystals during freezing and frozen storage, maintaining the quality of steamed bread from prefermented frozen dough even over a period of 30 days. The best steamed bread performance was observed with the dough containing 2% of glycerol (flour weight basis) addition. Prefermenting conditions significantly affected the quality of UFB/PFB. The highest quality scores of steamed bread from prefermented frozen dough were obtained from 32 °C and 85% rh for 40 min.  相似文献

Storage retrogradation behavior and properties of sorghum, maize, and rice starches were compared to better understand the relationship of amylopectin fine structure to quality issues. Long-term changes in texture of starch gels were attributed to amylopectin retrogradation. In starch pastes aged 7 days at 4 °C, change in the storage modulus (ΔG) during heating (representing intermolecular associations) was highly and positively correlated (r = 0.93, p < 0.01) with the proportion of fraction I (FrI) long chains from debranched amylopectin. One sorghum cultivar, Mota Maradi, showed a dramatic increase in the storage modulus (G′) over the 7 day storage period that was related to its high proportion of FrI. Pastes/gels made from starches with normal (20–30%) amylose content and higher proportions of FrI long chains from debranched amylopectin tended to become firmer with more syneresis during extended storage. Both degree of polymerization measurements and previous models for amylopectin structure indicate that FrI represents long B chains of amylopectin. Cereal cultivars having amylopectin structures with lower proportion of long B chains were speculated to give improved quality products with lower rates of retrogradation and staling. This is particularly an issue in sorghum foods where products generally lack storage stability and tend to stale relatively quickly.  相似文献
