The effects of traditional nixtamalization and extrusion cooking on total phenolics, ferulic acid, anthocyanins and Oxygen Radical Absorbance Capacity (ORAC) of Mexican pigmented (blue and red) and commercial (white and yellow) maize processed into tortillas were investigated. Tortillas prepared from extruded flours retained between 76.2–93.9% and 58–96.7% of total phenolics and total ferulic acid (TFA) respectively, compared to 50.5–75.7% and 19.6–55.8% assayed in traditional tortillas. Approximately 97–99% of TFA in raw kernels and their tortillas was in its bound form. The retention of TFA in traditional tortillas was significantly lower compared to tortillas from extruded flours. Traditional tortillas contained more free ferulic acid compared to tortillas produced from extruded flours indicating that the first process liberated bound ferulic acid with cell walls more efficiently. Blue maize lost more than 55% of the anthocyanins when processed into extruded or traditional tortillas. Approximately 68–92% of the ORAC associated with raw kernels or their tortillas was due to bound compounds. Traditional and extruded tortillas lost 16.4–52.4% and 6.8–24.8%, respectively, of the total ORAC associated with raw grains. Results clearly indicate that the proposed lime-cooking extrusion strategy was instrumental in retaining higher levels of phytochemicals, particularly ferulic acid, and antioxidants in all tortillas.  相似文献

Phenolic acids profiles, chemical antioxidant activities (ABTS and ORAC), as well as cellular antioxidant activity (CAA) of tortilla of Mexican native maize landraces elaborated from nixtamalization and lime cooking extrusion processes were studied. Both cooking procedures decreased total phenolics, chemicals antioxidant activity when compared to raw grains. Extruded tortillas retained 79.6–83.5%, 74.1–77.6% and 79.8–80.5% of total phenolics, ABTS and ORAC values, respectively, compared to 47.8–49.8%, 41.3–42.3% and 43.7–44.4% assayed in traditional tortillas, respectively. Approximately 72.5–88.2% of ferulic acid in raw grains and their tortillas were in the bound form. Regarding of the CAA initially found in raw grains, the retained percentage for traditional and extruded tortillas ranged from 47.4 to 48.7% and 72.8 to 77.5%, respectively. These results suggest that Mexican maize landrace used in this study could be considered for the elaboration of nixtamalized and extruded food products with nutraceutical potential.  相似文献

Nixtamalization process is the first step to obtain maize based products, like tortillas; however, in both the traditional and commercial processes, white grain is generally preferred. Creole maize races, mainly pigmented varieties, have increasingly attention since these are rich in anthocyanins and carotenoids. The aim of this investigation was to evaluate the antioxidant and antimutagenic activity of rich anthocyanins and carotenoids extracts from creole maize races before (grain) and after (masa and tortilla) the nixtamalization process. Most anthocyanins and carotenoids were lost during nixtamalization. Before nixtamalization, blue and red genotypes contained either higher antioxidant capacity and anthocyanin contents (963?±?10.0 and 212.36?±?0.36 mg of cyanidin-3-glucoside eq/100 g, respectively) than the white and yellow genotypes. However, the highest carotenoid levels were displayed by red grains (1.01?±?0.07 to 1.14?±?0.08 μg of β-carotene eq/g extract). Anthocyanins losses were observed when the blue grains were processed into masa (83 %) and tortillas (64 %). Anthocyanins content correlated with antiradical activity (r?=?0.57) and with 2-aminoanthracene -induced mutagenicity inhibition on TA98 and TA100 (r?=??0.62 and r?=??0.44, respectively). For white grains, nixtamalization also reduced carotenoids (53 to 56 %), but not antioxidant activity and 2-Aa-induced mutagenicity. Throughout the nixtamalization process steps, all the extracts showed antimutagenic activity against 2-aminoanthracene—induced mutagenicity (23 to 90 %), displaying higher potential to inhibit base changes mutations than frameshift mutations in the genome of the tasted microorganism (TA100 and TA98, respectively). The results suggest that even though there were pigment losses, creole maize pigments show antioxidant and antimutagenic activities after nixtamalization process.  相似文献

Einkorn wheat bulgur is a traditional food deeply rooted in some areas of Turkey, since ages. The objective of this study was to evaluate the impact of simulated traditional bulgur preparation on einkorn wheat bioactive compound content.A local einkorn wheat grain sample from Turkey was boiled for 2, 3 and 4 h, then dried in a thermo-ventilated oven. Tocols, carotenoids, phytosterols and phenolics, determined as free (FPC) and bound (BPC) phenolic compounds, were analysed in hulled (spikelets) and dehulled (kernels) bulgur samples, to highlight also glumes’ contribute to their content and evolution.Kernel carotenoid and tocol content significantly decreased following bulgur preparation, to an extent of 42–58% and 15–30%, respectively. Phytosterols slightly decreased in cooked (12–19%), with respect to raw kernels. Phenolics showed different patterns, highlighting glumes’ contribute: kernel FPC increased (+87%) after 4 h of boiling, whereas no significant variations were observed for BPC. A drastic decrease of total and BPC (20.5–28.0%), was observed in spikelets following bulgur preparation. Ferulic and p-coumaric acid resulted the most abundant phenolic acids, respectively, in kernels and spikelets.Decreases in tocol, carotenoids and phytosterol contents were observed whereas an increase of kernel FPC content was calculated after cooking.  相似文献

Sorghum is a staple crop and a potential dietary source of carotenoids in semi-arid regions of Africa, but information on the bioavailability of these pigments is limited. This study aimed at exploring the effects of agronomic manipulation on sorghum carotenoid contents at selected stages of kernel development and maturation and assessing carotenoid bioaccessibility from matured yellow-endosperm sorghum varieties (P88 and P1222), by comparing porridge made from sorghum whole and decorticated milled grains. Carotenoid content of sorghum milled fractions ranged from 2.90 to 7.22 mg/kg in P88 unbagged decorticated flour, at 50 and 30 days after half bloom (DAHB) respectively, to 9.87-13.69 mg/kg in bagged decorticated bran fractions in P88, at 50 and 30 DAHB respectively. Maize milled fractions were significantly (P < 0.05) higher in carotenoid content than all sorghum products. Bagging increased sorghum carotenoid content by 8-184% vs. unbagged panicles. Carotenoid bioaccessibility was generally higher from sorghum (63-81%) compared to maize (45-47%). Micellarization of xanthophylls (75%) was more efficient than carotenes (52%) in sorghum, while they were similar in maize (40-49%). These results suggest that the higher bioaccessibility of sorghum carotenoids combined with efforts to enhance sorghum carotenoid content may allow for sorghum to provide similar levels of bioaccessible carotenoid pigments as common yellow maize.  相似文献

Maize kernel color and carotenoid concentration are traits valued by the food industry to ensure the quality of their products. Correlations between color and carotenoid concentration have been extensively reported. Based on the concept that chromaticity is modified differently by opaque and translucent materials, we tested the hypothesis that maize kernel color is not only the result of total carotenoid concentration but also a consequence of kernel hardness. Kernel hardness (test weight, vitreousness, and floaters percentage), carotenoid concentration, and color (HunterLab) were measured in thirteen commercial hybrids. Genotypes showed significant differences in all analyzed kernel hardness traits, carotenoid concentration (24.7–39.4 mg kg−1), and HunterLab color dimensions. Kernel color values and kernel hardness were correlated. Genotype differences in b (yellowness) were observed in kernels with similar total carotenoid concentration but contrasting hardness. For a similar carotenoid concentration harder genotypes always showed lower b values. When whole kernels were milled and color was measured on the resulting flour, genotype differences in yellowness disappeared, further supporting that the kernel vitreous structure affects kernel color. Our results sustain the notion that the genotype capacity to form larger proportions of vitreous endosperm impacts color regardless of total carotenoid concentration.  相似文献

The potential use of quality protein transgenic maize (genetically modified maize with the cDNA of amarantin) for preparation of flour and tortillas through an extrusion lime cooking process was investigated. Tortillas from extruded transgenic maize flour had similar physicochemical and sensory properties than those from the commercial brand MASECA™; however, the former had the highest (P < 0.05) protein content (12.91 vs 8.93%, db), essential amino acids content, calculated protein efficiency ratio (C-PER; 2.27 vs 0.90) and protein digestibility corrected amino acid score (PDCAAS; 55.54 vs 30.18%) and therefore they were nutritionally better. The use of transgenic maize for flour and tortilla preparation through an extrusion lime cooking process may have a positive impact on the nutritional status of people from countries where maize is the basic staple food. It also represents an alternative process to nixtamalization that requires little energy and water, it does not generate wastewater, and all components of the maize kernel are retained.  相似文献

Maize is a staple food crop in many developing countries, hence becoming an attractive target for biofortification programs toward populations at risk of micronutrient deficiencies. A South African white endosperm maize inbred line was engineered with a carotenogenic mini-pathway to generate high-carotenoid maize, which accumulates β-carotene, lutein and zeaxanthin. As maize porridge is a traditional meal for poor populations in sub-Saharan African countries, high-carotenoid maize was used as raw material to prepare different maize meals. The objective of this work was to assess the impact of popular home-cooking techniques and different cooking parameters (temperature, time and pH) on the final carotenoid content in the cooked product, using a spectrophotometric technique based on the mean absorption of carotenoids at 450 nm. Carotenoid levels were not only preserved, but also enhanced in high-carotenoid maize porridges. The carotenoid content was increased when temperatures ≤95 °C were combined with short cooking times (10–60 min). The most optimum thermal treatment was 75 °C/10 min. When treated under those conditions at pH 5, high-carotenoid maize porridges doubled the initial carotenoid content up to 88 μg/g dry weight. Regarding to cooking techniques, the highest carotenoid content was found when unfermented thin porridges were prepared (51 μg/g dry weight of high-carotenoid maize porridge). We conclude that high-carotenoid maize may contribute to enhance the dietary status of rural populations who depend on maize as a staple food.  相似文献

The aim of this work was to supplement masa made from nixtamalized white maize flour (NWMF) with anthocyanins (0.0, 0.03, 0.06 and 0.12 g/100 g of masa), and to evaluate the effects on the rheological properties of the masa and on color, staling, in vitro digestibility, and hardness of tortillas. Tortilla baking reduced the content of anthocyanins by about 10%. The color parameters of the tortillas added with anthocyanins was similar to that of tortillas made with blue maize. Attenuated total reflection ATR-FTIR spectra showed that the 1022/1047 peak ratio increased, indicative that retrogradation increased with storage time, but the ratio was significantly lower for tortillas with added anthocyanins than without them, and lower for higher anthocyanins concentration. Freshly made tortillas added with anthocyanins exhibited lower ready digestible (about 35%) and slowly digestible (about 20%), but higher resistant (about 45%) starch fractions. Tortillas with 0.12 g of anthocyanins showed significantly lower hardness than the control tortillas (without added anthocyanins). Both previous mentioned effects can be associated with retrogradation, which on turn could be linked to anthocyanins-starch complexes and inhibition of amylolytic enzymes.  相似文献

Chilli peppers have been recognized as an excellent source of antioxidants as they are rich in bioactive phytochemicals such as carotenoids which are known to exert various beneficial effects in vivo. Absorption is an important factor in the determination of the potential biological effects of carotenoids. The bioaccessibility of a food constituent such as a carotenoid represents its potential to be absorbed in humans. There is very limited information in the literature regarding the content and bioaccessibility of carotenoids from dried peppers. Therefore, the objectives of the present study were: first, to determine the carotenoid content of 20 varieties of red, orange or yellow coloured sun-dried chilli peppers belonging to either of four Capsicum species (annuum, baccatum, chinense and chacoense); and second, to quantify the carotenoid micellarization (bioaccessibility) following an in vitro digestion procedure. Red peppers had a higher carotenoid content and bioaccessibility than either the orange peppers or yellow pepper. Xanthophylls showed greater bioaccessibility than carotenes. Our findings confirm that dried chilli peppers are a good source of carotenoids.  相似文献

Samples of extruded high protein weaning foods were produced using blends of peanuts, maize and soybean to achieve the desired level of protein. The extruded products, based on a raw and a preroasteds mix of ingredients, were developed and characterized in terms of the hot paste viscosity characteristics, chemical and nutritional quality, amino acid composition, and storage stability. A comparative evaluation of the extruded products was undertaken in relation to two similar existing products: the traditional roasted maize flour weaning food, and thecommercial version. In general, the extruded products were found to have better nutritional quality as indicated by the high protein content of 16.5–18.7% and quality, and excellent rat growth response. For both types of extruded weaning foods developed, between sixty- and one hundred-fold increases in mean weight gain of test rats were recorded over those eating the traditional sample. Correspondingly, the PER values which were between 2.3 and 2.5, were almost thrice the values obtained for the existing products. Significantly higher feed efficiency ratios were also obtained for the extruded products. Hematological data of test animals showed normal values for white blood cell (WBC) count, red blood cell (RBC) count, hemoglobin (Hb) levels and packed cell volume (PCV) for all the weaning foods studied, except the existing traditional roasted maize flour. In terms of storage stability of the extruded products, predicted shelf life periods of 7.8–10.4 months were obtained for the extruded raw blend, and 5.6–7.1 months for the extruded preroasted blend when stored at the average ambient temperature of about 30,°C in Ghana. In general, the preroasting treatment was found to reduce the quality characteristics of the extruded product.  相似文献

Barley is a rich source of dietary fibre that can promote beneficial physiological effects. The carbohydrate composition in different barley varieties differs considerably and choice of variety is thus important. This study examined whether differences in carbohydrate composition observed in barley kernels of different varieties persisted in the sifted flour and in an extruded product. Six barley varieties were milled and extruded and dietary fibre and starch in the kernels, flour and extruded product were analysed. The starch content was found to be higher in flour and extruded product than in kernels. The content of arabinoxylan was higher in sifted flour than in kernels, but was decreased by extrusion. The extractability of arabinoxylan was increased by extrusion, while its average molecular weight was decreased. Extrusion also decreased the content of mixed-linkage (1 → 3),(1 → 4)-β-D-glucan in all varieties, but increased its extractability. The six barley varieties were affected in much the same way by milling and extrusion, but clear differences could still be observed. For example, the arabinoxylan in variety SW 28708 was less affected and variety KVL 301 had much lower extractability (76% vs 91–98%) of mixed-linkage (1 → 3),(1 → 4)-β-D-glucan after extrusion than the other varieties.  相似文献

The efficiency of carotenoid micellarisation from plant foods can be used as an effective tool for the initial screening of carotenoid bioavailability. Therefore, the objectives of the present study were to assess the effects of cooking on the micellarisation of beta-carotene, lycopene, beta-cryptoxanthin and lutein from courgette (zucchini), red pepper and tomato; and, to a minor extent, investigate uptake of lutein by Caco-2 cells from micellar fractions obtained from raw and cooked courgettes. Both raw and cooked vegetables were subjected to an in vitro digestion procedure. beta-Carotene levels were significantly decreased in the digesta from each vegetable after boiling, grilling, microwave-cooking, or steaming, however all of the cooking methods enhanced beta-carotene transfer to micelles. Carotenoid micellarisation ranged from 1.7% to 100% depending on the food, carotenoid, and the cooking method tested. Grilling and microwave-cooking were generally the most detrimental on the transfer of xanthophyll carotenoids, namely beta-cryptoxanthin, to the micelles. Caco-2 cells absorbed greater amounts of lutein from the micelles of microwave-cooked courgettes than those that were raw, boiled, grilled, or steamed. Depending on the cooking methods used, carotenoid retention as well as micellarisation varied for each carotenoid among the different vegetables and different carotenoids present in each particular food.  相似文献

An HPLC-DAD method has been developed to quantitatively analyze for the content of zeaxanthin dipalmitate, a major carotenoid in Fructus Lycii, in different species of the genus Lycium. Determination was performed using an Alltima C18 column with the mobile phase consisting of acetonitrile and dichloromethane (42:58). The total contents of carotenoids in these samples were also determined by using UV spectrophotometric assay. Total carotenoid concentrations of different Fructus Lycii are within the range of 0.03–0.5%. Zeaxanthin dipalmitate is a predominant carotenoid, comprising 31–56% of the total carotenoids in Fructus Lycii. This study is the first systematic quantification of the carotenoids in the fruits of different Lycium species. The results demonstrated that these methods are reliable and facile techniques for rapid analysis of carotenoids for crude drug and plant-derived food supplements.  相似文献

The objective of the study was to obtain information on the chemical composition, functional properties, sensory quality and protein value of tortillas made from the nixtamalization of maize using either lime or wood ashes. The Ca, K, Mg, Fe, and Zn content of lime and wood ashes showed lime to be high in Ca content while wood ash contained more K and about 71% of the Ca content of lime. Both contained relatively high levels of Mg, Fe and Zn, but more so in the wood ashes. The level of reagent for nixtamalization was set at 0.8% of the maize weight. All other processing conditions were kept constant. The pH of the cooking solution was 12.0 for lime and 10.9 for wood ash. The moisture content of maize at 60 min of cooking was 45.8% for both treatments, however after 12 h of soaking, moisture level was 51.0% for the lime treatment and only 46.8% for the ash treatment. Solids (2.4%) in the lime cooking liquor were higher than in the wood ash liquor (1.0%). Chemical composition changes were similar between treatments in masa and tortilla; however, both masa and tortillas absorbed relatively high levels of all minerals including Fe and Zn from the wood ash treatment. The different treatment influenced functional properties particularly hardness and color. Tortilla characteristics were also similar. Protein quality of both alkali cooked products was lower than that of raw corn, more so the product from the wood ash treatment. Although some differences were observed in the sensory studies, human subjects did not dislike the wood ash made tortillas.  相似文献

Carotenoids are pigments responsible for the yellow-reddish color of many foods and are related to important functions and physiological actions, preventing several chronic-degenerative diseases. The objective of this study was to confirm the carotenoid composition of jackfruit by high-performance liquid chromatography connected to photodiode array and mass spectrometry detectors (HPLC-PDA-MS/MS). The main carotenoids were all-trans-lutein (24–44%), all-trans-β-carotene (24–30%), all-trans-neoxanthin (4–19%), 9-cis-neoxanthin (4–9%) and 9-cis-violaxanthin (4–10%). Either qualitative or quantitative differences, mainly related to the lutein proportion, were found among three batches of jackfruit. Since the fruits from batch A showed significantly lower contents for almost all carotenoids, it also had the lowest total carotenoid content (34.1 μg/100 g) and provitamin A value, whereas the total carotenoid ranged from 129.0 to 150.3 μg/100 g in the other batches. The provitamin A values from batches B and C were 3.3 and 4.3 μg RAE/100 g, respectively. The carotenoid composition of jackfruit was successfully determined, where 14 of the 18 identified carotenoids were reported for first time. Differences among batches may be due to genetic and/or agricultural factors.  相似文献

Fumonisins are mycotoxins produced primarily by Fusarium verticillioides and Fusarium proliferatum on maize. These are secondary, carcinogenic metabolites and have been reported on maize worldwide. Field trials were conducted during 2010/2011 and 2011/2012 in six diverse maize production areas of South Africa to study the efficacy of an existing prophylactic fungicide regime for the control of foliar diseases, on the infection of grains of seven cultivars by fumonisin producing Fusarium spp. and fumonisin synthesis. Seven cultivars were selected to include both yellow and white, Bt and non-Bt and regionally adapted varieties. Azoxystrobin + difenoconazole (strobilurin, 200 g/L + triazole, 125 g/L) was applied 40–45 days after planting followed by flusilazole + carbendazim (silicone triazole, 125 g/L + benzimidazole, 250 g/L) with petroleum as adjuvant, 28–30 days later. Fumonisins in harvested kernels were analysed using High Performance Liquid Chromatography (HPLC) and fumonisin producing Fusarium spp. were quantified by means of quantitative Real Time PCR (qPCR). Mean natural colonisation of maize kernels by fumonisin producing Fusarium spp. was highest at Makhathini (33,696 pg/0.5 g of milled maize kernels) and the lowest at Potchefstroom (179 pg/0.5 g of milled maize kernels). Cultivars differed in susceptibility to fungal colonisation and fumonisin synthesis with PAN6P-110, DKC80-10 and CRN3505 proving most susceptible and LS8521B and DKC78-15B most resistant. Mean fumonisin contamination was highest at Makhathini (23.62 ppm) and lowest at Buffelsvlei (1.50 ppm). Analysis of variance showed no significant differences in colonisation of grain by fumonisin producing Fusarium spp. between sprayed and control treatments. Sprayed treatments had significantly higher fumonisin levels compared with unsprayed treatments. A highly significant cultivar × environment interaction was recorded for fungal colonisation. Highly significant environment × fungicide-treatment × cultivar interactions were recorded for fumonisin production. The strong interaction between cultivar and environment may be due to cultivar adaptation/behaviour under different environmental conditions. The use of a prophylactic fungicide spray regime for control of leaf diseases in maize did not reduce Fusarium ear rot in maize, however, significantly elevated fumonisin levels were recorded.  相似文献
