Ninety-six pigs (49.5 +/- .5 kg BW) were allotted to six treatments and were injected once (SID) or three times daily (TID) s.c. with a [desamino-Tyr1, D-Ala2, Ala15] human growth hormone-releasing factor (1-29) NH2 analog (GRF-AN). Treatments were T1, noninjected control; T2, saline-injected control (TID); T3, GRF-AN (1.66 micrograms/kg BW, TID); T4, GRF-AN (3.33 micrograms/kg BW, TID); T5, GRF-AN (6.66 micrograms/kg BW, TID) and T6, GRF-AN (10 micrograms/kg BW, SID). Feed protein levels were 14% for T1 and 18.8% for T2 through T6. The GRF-AN increased serum growth hormone (GH) concentration for the entire growing period (about 56 d) in a dose-related manner and did not induce desensitization of the somatotroph cells; in fact, an increase (P less than .05) in the GH response to GRF-AN was observed in T4 and T5 after 1 mo of treatment. This GRF-AN produced (P less than .05) a dose-dependent effect on several variables in animals grown to 110 kg BW: in comparison to T2, T5 increased meat in carcass (6%), carcass length (3%), loin eye area (13%), liver weight (19%), kidney weight (30%), improved feed efficiency (20%) and decreased total feed intake by 50 kg (26%). Compared to T2, average daily gain was increased (P less than .05) by 13% by the 3.33 micrograms/kg TID dose. Blood parameters were measured on d 1, 29 and 57. Increased serum glucose and insulin levels were observed. Triiodothyronine and thyroxine concentrations were increased and decreased, respectively after 28 d of treatment but were unchanged on d 57. This potent GRF analog maintained high GH concentration for at least 56 d and affected several growth parameters and carcass characteristics in a dose-related manner similar in magnitude to that reported in studies using porcine GH.  相似文献

Crossbred pigs (n = 200) from Duroc sires mated to Landrace x Large White dams, with a mean BW of 107.0 +/- 2.4 kg and intended for highquality dry-cured hams (Teruel ham) from Spain, were used to investigate the effects of sex (barrows and gilts) and slaughter weight (SW; 120, 125, 130, 135, and 140 kg of BW) on growth performance and carcass characteristics. For productive performance, there were 5 treatments based on 5 SW; each treatment was replicated 4 times and the replicate was a pen made up of 5 barrows and 5 gilts allotted together. For carcass traits, there were 10 treatments based on 2 sexes and 5 SW; each treatment was replicated 20 times and the replicate was a carcass. Barrows had fatter carcasses (P < 0.001) and wider hams (P < 0.01) but a lower yield of trimmed shoulder (P < 0.05), loin (P < 0.001), and ham (P < 0.001) than gilts. Also, castrates tended to show a greater proportion of final suitable carcasses for Teruel ham (P < 0.10) than females because more barrows than gilts fulfilled the minimum requirement of carcass weight and fat thickness in the gluteus medius (GM) muscle (P < 0.01). An increase in SW tended to decrease ADG and G:F (P < 0.10). In addition, dressing percentage, fat, and dimensions of carcass and ham increased as SW increased (P < 0.001). Although the weight of trimmed primal cuts (shoulder, loin, and ham) increased with SW, the yield of trimmed loin or ham decreased (P < 0.01). The proportion of final suitable carcasses for Teruel ham improved as SW increased up to 130 kg of BW but not thereafter (P < 0.001) because of an increase in percentage carcasses that fulfilled the minimum carcass and ham weight (P < 0.001) and fat in GM (P < 0.05). We can conclude that barrows were better than gilts when intended for Teruel ham. Furthermore, an increase in SW up to 130 kg in pigs impaired growth performance but improved some aspects of carcass quality that are required by the Teruel ham industry.  相似文献

Growth, development, and carcass composition in five genotypes of swine.   总被引:3,自引:0,他引:3  
An experiment with 127 barrows representing five genotypes, 1) H x HD, 2) SYN, 3) HD x L[YD], 4) L x YD, and 5) Y x L (H = Hampshire, D = Duroc, SYN = synthetic terminal sire line, L = Landrace, and Y = Yorkshire), was conducted to evaluate growth and development of swine from 59 to 127 kg live weight. Animals were allowed ad libitum access to a pelleted finishing diet containing 18.5% CP, .95% lysine, and 10.5% fat, with an energy density of 3,594 kcal of ME/kg. Pigs were serially slaughtered at either 59, 100, 114, or 127 kg live BW. After slaughter, carcasses were chilled and backfat was measured at four locations. The right side of each carcass was fabricated into primal cuts of ham, loin, Boston Butt, picnic, and belly. Composition of each primal cut was determined by physical dissection into lean, fat, bone, and skin. Estimated allometric growth coefficients for carcass length, carcass weight, and longissimus muscle area relative to BW; carcass lean, fat, bone, and skin relative to both BW and carcass weight; and lean in each of the primal cuts relative to total carcass lean did not differ (P greater than .05) among genotypes. Relative to BW, the pooled growth coefficient(s) for carcass weight was (were) greater (P less than .001) than unity, whereas those for carcass length, longissimus muscle area, and backfat at first rib were smaller (P less than .001) than unity. Those for other backfat measurements were close to 1.00. Relative to either BW or carcass weight, the pooled coefficient(s) for fat was (were) greater (P less than .001) than unity, whereas those for lean, bone, and skin were smaller (P less than .001) than unity. Growth of lean, backfat, bone, and skin in the carcass were nearly linearly associated with increases in BW. The increase in fat weight was curvilinear as the pig grew and was accelerated in later growth stages, indicating that carcass fat percentage increased with increased BW.  相似文献

Pork carcasses (n = 133) were used to investigate the influence of carcass fatness and muscling on composition and yields of pork primal and subprimal cuts fabricated to varying levels of s.c. fat. Carcasses were selected from commercial packing plants in the southeastern United States, using a 3 x 3 factorial arrangement with three levels of 10th rib backfat depth (< 2.03, 2.03 to 2.54, and > 2.54 cm) and three levels of loin eye area (LEA; < 35.5, 35.5 to 41.9, and > 41.9 cm2). Sides from the selected carcasses were shipped to the University of Georgia for carcass data collection by trained USDA-AMS and University of Georgia personnel and fabrication. Sides were fabricated to four lean cuts (picnic shoulder, Boston butt, loin, and ham) and the skinned belly. The four lean cuts were further fabricated into boneless cuts with s.c. fat trim levels of 0.64, 0.32, and 0 cm. The percentages of four lean cuts, boneless cuts (four lean cuts plus skinned, trimmed belly) at 0.64, 0.32, and 0 cm s.c. fat, fat-free lean, and total fat were calculated. Data were analyzed using a least squares fixed effects model, with the main effects of 10th rib backfat and LEA and their interaction. Fatness and muscling traits increased (P < 0.05) as 10th rib backfat and LEA category increased, respectively. However, fat depth measures were not affected greatly by LEA category, nor were muscling measures greatly affected by backfat category. The percentage yield of cuts decreased (P < 0.05) as backfat category increased. Cut yields from the picnic shoulder, Boston butt, and belly were not affected (P > 0.05) by LEA category, whereas the yield of boneless loin and ham increased (P < 0.05) as LEA category increased. Compositionally, the percentage of four lean cuts, boneless cuts at varying trim levels, and fat-free lean decreased incrementally (P < 0.05) as backfat depth increased, whereas parentage total fat and USDA grade increased (P < 0.05) as backfat depth increased. As LEA increased, percentage boneless cuts trimmed to 0.32 and 0 cm s.c. fat and fat-free lean increased and total fat decreased; however, the difference was only significant in the smallest LEA category. Collectively, these data show that decreased carcass fatness plays a greater role in increasing primal and subprimal cut yields and carcass composition than muscling even in lean, heavily muscled carcasses.  相似文献

Live animal and carcass data were collected from market barrows and gilts (n = 120) slaughtered at a regional commercial slaughter facility to develop and test prediction equations to estimate carcass composition from live animal and carcass ultrasonic measurements. Data from 60 animals were used to develop these equations. Best results were obtained in predicting weight and percentage of boneless cuts (ham, loin, and shoulder) and less accuracy was obtained for predicting weight and ratio of trimmed, bone-in cuts. Independent variables analyzed for the live models were live weight, sex, ultrasonic fat at first rib, last rib, and last lumbar vertebra, and muscle depth at last rib. Independent variables for the carcass models included hot carcass weight, sex of carcass, and carcass ultrasonic measurements for fat at the first rib, last rib, last lumbar vertebra, and muscle depth at last rib. Equations were tested against an independent set of experimental animals (n = 60). Equations for predicting weight of lean cuts, boneless lean cuts, fat-standardized lean, and percentage of fat-standardized lean were most accurate from both live animal and carcass measurements with R2 values between .75 and .88. The results from this study, under commercial conditions, suggest that although live animal or carcass weight and sex were the greatest contributors to variation in carcass composition, ultrasonography can be a noninvasive means of differentiating value, especially for fat-standardized lean and weight of boneless cuts.  相似文献

Twenty-four U.S. crossbred (Duroc x White composite; D x Wc; 83.9 kg), 24 purebred Meishan (M; 59.4 kg), and 24 Meishan x White composite crossbred (M x Wc; 83.4 kg) barrows were allotted within genotype to a 16% CP corn-soybean meal diet or this basal diet + 20 ppm of ractopamine and allowed ad libitum access to feed for 52 d. No genotype x ractopamine interactions were detected (P greater than .05) in pigs for growth, lean cuts, ham and loin characteristics, leaf fat and visceral organ weights, fasting whole-animal heat production, and carcass traits except longissimus muscle area (LMA). The LMA was increased by ractopamine in D x Wc and M x Wc pigs (P less than .05) but not in M pigs. Compared with D x Wc and M x Wc pigs, M pigs had lower ADG, ADFI, and gain to feed ratio (G/F), shorter carcasses, and lower dressing percentage, LMA, predicted amount of muscle, weights of trimmed picnic, loin, and ham cuts, percentage of ham lean, and CP in ham lean, but heavier liver, kidneys, pancreas, and entire gastrointestinal tract with greater percentage of ham fat and ham bone (P less than .05). The M x Wc pigs had lower ADG, G/F, dressing percentage, LMA, amount of muscle, weights of trimmed cuts, and percentage of ham lean but heavier lungs, pancreas, stomach, and large intestine than did D x Wc pigs (P less than .05). Supplemental ractopamine increased ADG, G/F, dressing percentage, amount of muscle, trimmed loin weight, percentage of ham lean, and CP in ham lean and decreased weights of heart, lungs, kidneys, and pancreas in pigs (P less than .05). Neither genotype nor ractopamine had any effect on 4- to 24-h postprandial whole-animal heat production of pigs (P greater than .05). These results indicate that ractopamine will improve growth performance and carcass leanness in pure- and crossbred Meishan pigs.  相似文献

The objectives of this study were 1) to compare intermittent subcutaneous administration of human growth hormone-releasing factor (hGRF) at two doses with a similar regimen of ovine somatotropin (oST) for effects on growth and composition of gain in growing lambs and 2) to determine whether increasing the dietary amino acid availability enhances response to oST or hGRF. Eighty crossbred ewe and wether lambs (25.5 kg live weight) were assigned randomly in pairs to receive four daily injections of excipient, 40 micrograms oST/kg BW, 5 micrograms hGRF/kg BW or 10 micrograms hGRF/kg BW for 42 (n = 80) or 56 (n = 40) d. Doses were adjusted weekly for BW. Mean plasma oST concentrations increased from 2.03 ng/ml prior to treatment to 20.64, 4.80 and 5.45 ng/ml with oST, 5 and 10 micrograms/kg hGRF doses, respectively. Lambs did not become refractory to hGRF. Cumulative gain increased approximately 18% with 7 wk of treatment with oST and the low dose of hGRF (both P less than .01), and feed efficiency improved 21% with oST and 18% with both doses of hGRF (both P less than .05). Carcass lipid accretion rate decreased 22% to 30% (P less than .001), and carcass protein accretion rate increased 30% to 36% (P less than .001) with hGRF and oST treatment, respectively. Addition of fishmeal to the diet at 4% to replace an equal amount of soy protein improved gain 8.5%; it improved efficiency 14.2% (P less than .05) across all treatments, and it significantly enhanced the effects of oST on feed efficiency (interaction P less than .12) and hind leg muscle weights.  相似文献

An experiment was conducted to determine the effect of dietary betaine (0, 0.125, 0.250, or 0.500%) on growth, carcass traits, pork quality, plasma metabolites, and tissue betaine concentrations of cross-bred finishing pigs. Four replications of three pigs (two barrows and one gilt) each were used for each treatment. The basal diet contained 0.85 (69 to 88 kg BW) or 0.65% Lys (88 to 115 kg BW). Overall ADG and gain:feed were not affected (P > 0.10) by betaine, but overall ADFI was decreased (quadratic, P < 0.05; 0 vs betaine, P < 0.01) by betaine; pigs fed 0.250% betaine had the lowest ADFI. Loin muscle area, average back-fat, dressing percentage, percentage lean, total fat, lean:fat, and leaf fat weight were not affected (P > 0.10) by betaine. Tenth-rib backfat thickness was decreased (quadratic, P < 0.05; 0 vs betaine, P < 0.05); pigs fed 0.250% betaine had the lowest 10th-rib backfat thickness. Carcass length was increased (linear, P < 0.05; 0 vs betaine, P < 0.10) as the level of betaine was increased. Fat-free lean, lean gain per day, ham weight, ham fat-free lean, and ham percentage lean were increased (quadratic, P < 0.10), but percentage fat, total ham fat, percentage ham fat, and butt-fat thickness were decreased (quadratic, P < 0.10); these traits were respectively highest or lowest in pigs fed 0.250% betaine. Thaw loss and 24-h pH were increased (quadratic, P < 0.10; 0 vs betaine, P < 0.05) and cook loss was decreased (linear, P < 0.05) in pigs fed betaine. The CIE L* value for the biceps femoris was decreased (quadratic, P < 0.10; 0 vs betaine, P < 0.10); pigs fed 0.250% betaine had the lowest CIE L* value. Subjective color, firmness-wetness, marbling, percentage moisture and bound water of the loin muscle, and shear force were not affected (P > 0.10) by betaine. Betaine was not detectable (< 0.07 mg/g) in the loin muscle of pigs fed 0% betaine, but betaine was detectable and relatively constant in pigs fed 0.125, 0.250, or 0.500% betaine (0.22, 0.17, and 0.21 mg/g, respectively). Plasma urea N, total protein, albumin, triglycerides, and HDL cholesterol concentrations were not affected (P > 0.10). Plasma total cholesterol (linear, P < 0.10) and NEFA (quadratic, P < 0.10) were increased in pigs fed betaine. Betaine improved carcass traits when provided at 0.250% of the diet and improved some aspects of pork quality.  相似文献

Correlated responses in reproductive and carcass traits from a line of Duroc pigs selected for increased 200-d weight along with a randomly selected control line were studied in 189 litters (116 select, 73 control) and 191 pigs (106 select, 85 control), respectively. Reproductive and maternal traits studied included litter sizes born, born alive, and alive at 21 d and litter weight at birth and at 21 d. Carcass traits studied were carcass length, longissimus muscle area, average backfat thickness, 10th rib backfat thickness, specific gravity, weights of closely trimmed ham, loin, and shoulder, belly weight, subjective scoring of the longissimus muscle for color and marbling, estimated percentage of muscle and lean gain per day. Total weighted cumulative selection differential for 200-d weight was 81.7 kg. The realized heritability for 200-d weight was .18 +/- .08, and the change in 200-d weight was 2.5 +/- 1.2 kg per generation. The regression coefficient of litter size born on generation was -.29 +/- .12 (P less than .10) pigs per generation. None of the other regression coefficients for the reproductive traits differed from zero. Average backfat thickness, 10th rib backfat thickness, and belly weight increased by .093 +/- .016 cm, .122 +/- .029 cm, and .089 +/- .040 kg, respectively, per generation. Specific gravity, ham weight, shoulder weight, color score, and percentage of muscle decreased -.00086 +/- .00024, -.165 +/- .013 kg, -.104 +/- .011 kg, -.035 +/- .015 points, and -.47 +/- .12%, respectively, per generation in response to the selection.(ABSTRACT TRUNCATED AT 250 WORDS)  相似文献

Forty barrows (77.9 +/- 5.5 kg BW) were allotted to one of five treatment groups to examine the effects of various doses of human growth hormone-releasing factor (1-44)NH2 (hGRF) or porcine somatotropin (pST) administered twice daily on serum hormones and metabolites, performance and carcass traits. Barrows were injected s.c. with either a placebo, 10 micrograms hGRF.kg BW-1.12 h-1, 20 micrograms hGRF.kg BW-1.12 h-1, 20 micrograms pST.kg BW-1.12 h-1 or 40 micrograms pST.kg BW-1.12 h-1 for a 36-d growth trial. Blood samples were collected from 13 barrows at intervals for 360 min after injection on d 21. Compared with the placebo, 10 micrograms hGRF.kg-1.12 h-1 increased (P less than .01) serum pST and insulin and decreased (P less than .001) urea N. Injecting 20 micrograms hGRF/kg.12 h-1 elevated (P less than .001) serum pST, insulin and insulin-like growth factor-I (IGF-I) but lowered (P less than .001) urea N. Exogenous pST increased (P less than .001) serum pST, insulin, IGF-I and glucose but decreased (P less than .001) urea N. Growth rate tended to increase, and feed intake and feed/gain decreased, in a dose-related manner in response to hGRF. Also, pigs receiving 10 or 20 micrograms hGRF.kg-1.12 h-1 had reduced (P less than .1) backfat and increased (P less than .1) loineye area and percentage lean in the ham compared with pigs receiving the placebo. Barrows and gilts of 2 genetic lines with differing lean gain potentials (high-lean = 375 g of fat-free lean/d; low-lean = 280 g of fat-free lean/d) were used to determine tissue and organ weights and compositions from 20 to 125 kg of BW. The experiment was a 2 (genetic line) x 2 (sex) x 5 (BW) factorial arrangement of treatments in a completely randomized design conducted with 2 groups of pigs in 6 replicates (n = 120 pigs). Six pigs from each sex and genetic line were slaughtered at 20 kg of BW and at 25 kg of BW intervals to 125 kg of BW. At slaughter, the internal tissues and organs were weighed. Loin and ham muscles were dissected from the carcass and trimmed of skin and external fat, and the ham was deboned. Residuals from the loin and ham were combined with the remaining carcass. Body components were ground, and their compositions were determined. The results demonstrated that tissue weights increased (P < 0.01) as BW increased. Loin and ham muscle weights increased but at a greater rate in the high-lean line and in gilts resulting in genetic line x BW and sex x BW interactions (P < 0.01). Liver and heart expressed on a BW or a percentage of empty BW basis increased at a greater rate in the high-lean line resulting in a genetic line x BW interaction (P < 0.01). Liver and intestinal tract weights were heavier in barrows than in gilts, significant only at 45 (P < 0.05), 75 (P < 0.01), and 100 (P < 0.05) kg of BW. Loin and ham muscles from the high-lean genetic line and gilts had greater (P < 0.01) water, protein, and ash contents compared with the low-lean genetic line and barrows resulting in genetic line x BW and sex x BW interactions (P < 0.01). The remaining carcass (minus loin and ham muscles) had greater (P < 0.01) amounts of water and protein, and less (P < 0.01) fat in the high-lean genetic line and gilts. The high-lean genetic line and gilts had more total body water, protein, and ash, but less body fat, with these differences diverging as BW increased, resulting in a genetic line x BW interaction (P < 0.01). The results indicated that liver and heart weights were greater in high-lean pigs, reflecting the greater amino acid metabolism, whereas the liver and intestinal tract weights were greater in barrow than gilts, reflecting their greater feed intakes and metabolism of total nutrients consumed.  相似文献

Twenty Rambouillet wether lambs were given ad libitum access to a diet with (BAA, n = 10) or without (control, n = 10) 1 ppm of the beta-adrenergic agonist L644,969. Lambs were fed to a constant slaughter weight end point of 54.5 kg. Carcasses were fabricated to yield bone-in and boneless cuts that were trimmed progressively to 1.27, .64, .32, and .00 cm of s.c. fat remaining. Addition of BAA did not affect growth traits. Actual and adjusted fat thickness, body wall thickness, and percentage of kidney-pelvic fat did not differ between control and BAA lambs. However, BAA increased longissimus muscle area, longissimus muscle depth, and leg score while decreasing USDA yield grade. The BAA increased carcass conformation scores and decreased flank lean color scores. No other carcass quality measurements were affected by BAA. Addition of BAA did not affect overall carcass yields of bone-in retail cuts. However, BAA increased overall carcass yields of boneless retail cuts regardless of fat trim level. The BAA increased bone-in leg yield. Yield of boneless sirloin, bone-in loin and boneless loin were not affected by BAA. For these cuts, the percentage change from the control was highly dependent on fat trim level. There was no difference in short-cut, shank-off, semiboneless leg yield between control and BAA. Addition of BAA did not affect yield of bone-in rack regardless of fat trim level. However, BAA greatly increased yield of boneless ribeye. Effects of ractopamine on genetically obese and lean pigs   总被引:2,自引:0,他引:2  
Twenty-eight genetically obese and 24 lean barrows (65.0 and 68.7 kg average BW, respectively) were allotted within genotype to a 16% CP corn-soybean meal basal diet or this basal diet + 20 ppm ractopamine (a phenethanolamine beta-adrenergic agonist) and allowed ad libitum access to feed for 48 d. Compared to lean pigs, obese pigs had lower ADG, gain to feed ratio, longissimus muscle area, predicted amount of muscle, and weights of trimmed loin and ham, ham lean, heart, spleen, kidney and gastrointestinal tract (P less than .05). Obese pigs also had shorter carcass but higher dressing percentage, backfat thickness, fat depth, fat area, untrimmed loin weight and fasting plasma urea N concentration (P less than .05). Dietary supplementation with 20 ppm ractopamine reduced daily feed intake and improved gain to feed ratio in both lean and obese pigs (P less than .05). Pigs fed ractopamine had shorter carcasses, less fat depth and fat area, smaller weights of stomach and colon plus rectum, but higher dressing percentages, longissimus muscle areas, weights of trimmed Boston butts, picnics and loins, ham lean and predicted amounts of muscle than pigs not fed ractopamine (P less than .05). Supplemental ractopamine had no effect on fasting plasma concentrations of urea N, nonesterified fatty acids, triglyceride or glucose (P greater than .05). No genotype x ractopamine interactions for the criteria described above were detected (P greater than .05). These results suggest that ractopamine will improve the efficiency of feed utilization and carcass leanness in swine with different propensities for body fat deposition.  相似文献

Crossbred pigs (n = 240) from Pietrain x Large White sires mated to Landrace x Large White dams, with an average age of 100 d (60.5 +/- 2.3 kg of BW), were used to investigate the effects of sex and slaughter weight (SW) on growth performance and on carcass and meat quality characteristics. There were 6 treatments arranged factorially, with 3 classes (intact females, IF; castrated females, CF; and castrated males, CM) and 2 slaughter weights (114 and 122 kg of BW). Each of the 6 combinations of treatments was replicated 4 times, and the experimental unit was a pen with 10 pigs. Castrated males and CF ate more feed, grew faster, and had more carcass backfat depth and fat thickness at the gluteus medius muscle but lower loin yield than IF (P < 0.05). In addition, CF and CM had more intramuscular fat (P < 0.05) and less linoleic acid content in the subcutaneous fat (P < 0.01) than IF. Pigs slaughtered at 122 kg of BW had lower ADG (P < 0.05), decreased G:F (P < 0.05), and more gluteus medius fat than pigs slaughtered at 114 kg of BW (P < 0.05). It was concluded that CF and CM had similar productive performance and meat quality characteristics when slaughtered at the same age, and that castration of females improved ADG and increased weight and fat content of primal cuts with respect to IF. Therefore, castration of females is recommended in pigs destined for the dry-cured industry because of the beneficial effects on quality of the primal cuts.  相似文献

Correlated responses in reproductive and carcass traits were studied in 181 litters and 218 pigs from a line of Landrace pigs selected six generations for increased weight at 70 d of age and a contemporaneous, randomly selected control line. The reproductive and maternal traits studied included litter sizes born, born alive, and alive at 21 d and litter weight at birth and at 21 d. Carcass traits studied were carcass length, longissimus muscle area, average backfat thickness, 10th-rib backfat thickness, specific gravity, weights of closely trimmed ham, loin, and shoulder, belly weight, subjective scoring of the longissimus muscle for color and marbling, estimated percentage of muscle, and lean gain per day. Total weighted cumulative selection differential for 70-d weight was 30.2 kg. The realized heritability for 70-d weight was .13 +/- .06, and the change in 70-d weight was .65 +/- .29 kg per generation. The regression coefficient of litter size at 21 d on generation was .24 +/- .10 (P less than .10) pigs per generation. None of the other regression coefficients for the reproductive traits differed from zero. Carcass length, specific gravity, and ham weight decreased (P less than .10) -.075 +/- .036 cm, -.00054 +/- .00027, and -.102 +/- .048 kg, respectively, per generation. Targhee x Hampshire lambs (average BW 24 +/- 1 kg) were used to determine the effect of finishing on concentrate or by grazing ryegrass forage on slaughter weights of 52 kg (N) or 77 kg (H) on tissue accretion and lamb wholesale cutout. When fed to similar slaughter weights, the wholesale cuts of concentrate-fed lambs were heavier (P < 0.05) than the same cuts from forage-fed lambs; however, when expressed as a percentage of side weight, carcasses of forage-fed lambs had a higher (P < 0.001) percentage of leg than concentrate-fed lambs. Increasing slaughter weight from 52 to 77 kg resulted in a 1-kg increase in loin weight for lambs finished on concentrate and a 0.60-kg increase for lambs finished on forage (diet x slaughter weight, P < 0.03); however, the increased loin weight for lambs finished on concentrate was due largely to increased fat deposition. For lambs slaughtered at 77 kg, those finished on forage had more lean mass in the leg, loin, rack, and shoulder than those finished on concentrate, but lean mass in these cuts did not differ between diets for lambs slaughtered at 52 kg (diet x slaughter weight, P < 0.01). At the normal slaughter weight (52 kg), concentrate-fed lambs had 50% more dissectible fat than forage-fed lambs, whereas at the heavy slaughter weight, a 79% greater amount of dissectible fat was observed for concentrate- vs. forage-fed lambs (diet x slaughter weight, P < 0.001). Lean and fat accretion rates were higher (P < 0.001) for concentrate-fed lambs than for forage-fed lambs. The lean-to-fat ratio of forage-fed lambs was higher (P < 0.001) than that of concentrate-fed lambs; however, forage finishing decreased accretion rates of all tissues compared with concentrate feeding, and these differences between forage and concentrate feeding were magnified at heavier slaughter weights.  相似文献

The objective of this study was to develop prediction equations for estimating proportional carcass yield to a variety of external trim levels and bone-in and boneless pork primal cuts. Two hundred pork carcasses were selected from six U.S. pork processing plants and represented USDA carcass grades (25% USDA #1, 36% USDA #2, 25% USDA #3, and 14% USDA #4). Carcasses were measured (prerigor and after a 24 h chill) for fat and muscle depth at the last rib (LR) and between the third and fourth from last rib (TH) with a Hennessy optical grading probe (OGP). Carcasses were shipped to Texas A&M University, where one was randomly assigned for fabrication. Selected sides were fabricated to four lean cuts (ham, loin, Boston butt, and picnic shoulder) then fabricated progressively into bone-in (BI) and boneless (BL) four lean cuts (FLC) trimmed to .64, .32, and 0 cm of s.c. fat, and BL 0 cm trim, seam fat removed, four lean cuts (BLS-OFLC). Total dissected carcass lean was used to calculate the percentage of total carcass lean (PLEAN). Lean tissue subsamples were collected for chemical fat-free analysis and percentage carcass fat-free lean (FFLEAN) was determined. Longissimus muscle area and fat depth also were collected at the 10th and 11th rib interface during fabrication. Regression equations were developed from linear carcass and OGP measurements predicting FLC of each fabrication point. Loin muscle and fat depths from the OPG obtained on warm, prerigor carcasses at the TH interface were more accurate predictors of fabrication end points than warm carcass probe depth obtained at the last rib or either of the chilled carcass probe sites (probed at TH or LR). Fat and loin muscle depth obtained via OGP explained 46.7, 52.6, and 57.1% (residual mean square error [RMSE] = 3.30, 3.19, and 3.04%) of the variation in the percentage of BI-FLC trimmed to .64, .32, and 0 cm of s.c. fat, respectively, and 49.0, 53.9, and 60.7% (RMSE = 2.91, 2.81, and 2.69%) of the variation in the percentage of BL-FLC trimmed to .64, .32, and 0 cm of s.c. fat, respectively. Fat and loin muscle depth from warm carcass OGP probes at the TH interface accounted for 62.4 and 63.5% (RMSE = 3.38 and 3.27%) of the variation in PLEAN and FFLEAN, respectively. These equations provide an opportunity to estimate pork carcass yield for a variety of procurement end point equations using existing on-line techniques.  相似文献

Conjugated linoleic acid (CLA) was fed to growing-finishing barrows (n = 92) at 0.75% of the diet. A commercial CLA preparation (CLA 60) containing 60% CLA isomers was included at 1.25% to provide 0.75% CLA in the diet. The inclusion of CLA in diets was initiated at various BW and fed until slaughter. Growth, carcass, meat quality, physical, chemical, and sensory data were collected and analyzed. Treatments T1, T2, T3, and T4 included the last 0, 29, 56 and 87 kg, respectively, of weight gain before slaughter. Average daily gain and feed intake were not affected (P > or = 0.06) by CLA, but gain:feed responded quadratically (P = 0.05), over the entire BW gain (28 to 115 kg) with pigs of T2 and T3 having the greatest gain:feed. Loin muscle area increased (P = 0.01) linearly with increasing weight gain while fed CLA, and 10th rib, first rib, and last rib fat depth decreased (P < or = 0.05) linearly. Subjective quality measures on loin muscles increased linearly for marbling (P < 0.05) and tended to increase for firmness (P = 0.07) with increasing weight gain while barrows were fed CLA. Objective Hunter color values for loin chops from T1 and T4 were not different for L* (P = 0.12) or a* (P = 0.08) values but were higher (P < 0.05) for b* values with CLA feeding. Lipid oxidation values of loin muscle tissue were lower (P < 0.05) for pigs fed CLA (T1 vs T4). Increasing the period of weight gain while feeding CLA linearly increased (P < 0.01) saturated fatty acids and CLA isomers in loin tissue and linearly increased (P < 0.01) saturated fatty acids and CLA isomers in subcutaneous adipose tissue. Sensory panel characteristics of loin chops were not changed (P > 0.05) by feeding CLA. Increased gain:feed, increased loin muscle area, decreased fat depth, and improvements in marbling and firmness with CLA feeding could result in improved profitability of pork production systems.  相似文献

We investigated conjugated linoleic acid (CLA) supplementation administered to heavy pigs, assessing carcass characteristics, meat quality, and sensory characteristics of dry-cured (Parma) ham. Thirty-six pigs, averaging 97 kg BW, were assigned randomly to three feeding groups in which diets were supplemented with either 0, 0.25, or 0.5% (as-fed basis) of a CLA preparation containing 65% CLA isomers. All pigs were slaughtered at 172 kg BW. No (P > 0.05) differences were observed in dressing percentage, loin and ham weight, or pH and color of longissimus and semimembranosus muscle. Tenth-rib backfat thickness tended to be lower (P < 0.10) in carcasses from CLA-fed pigs. The oxidative stability of longissimus muscle was greater (P < 0.05) in pigs fed CLA than control, but only at the longer (300 min) oxidation time. Acetyl-CoA carboxylase activity in adipose tissue of CLA-fed pigs was less (P < 0.05) than that of pigs fed diets devoid of supplemental CLA. Composition of ham fat was markedly affected (P < 0.01) by dietary CLA, with higher saturated fatty acids, lower monounsaturated fatty acids, and higher CLA in the fat of CLA-fed pigs regardless of supplementation level. Although melting quality was improved (P < 0.05), most sensory characteristics and the chemical composition of dry-cured hams were not (P > 0.05) affected by incorporation of CLA. Results indicated that dietary CLA alters lipid metabolism, producing lower concentrations of monounsaturated fatty acids and increased concentrations of CLA isomers in the fat of heavy pigs. Moreover, supplementing diets with CLA produced only minimal improvements in Parma ham sensory traits and had no appreciable effects on fresh pork quality.  相似文献

Porcine leptin gene (LEP) and its association with production traits was analysed in the Polish Large White (PLW, n = 135), Polish Landrace (PL, n = 120) and synthetic line 990 (L990, n = 184). Two fragments of exon 3 of LEP were studied with the use of RFLP and SSCP techniques. The frequencies of C allele for the T3469C polymorphic site were 0.11, 0.10 and 0.11 in PLW, PL and L990, respectively. Phenotypic data were collected for the average daily weight gain, the feed conversion ratio, the weight of abdominal fat, backfat thickness (five measurements), intramuscular fat, meat content, loin weight, loin muscle area, ham weight and ham cut weight. The contrasts between TT and TC genotypes at the T3469C polymorphic site were estimated in the unitrait Animal Model with genotype at the RYR1 locus included. The lowest p values occurred for association test between T3469C polymorphism and intramuscular fat content in PLW (0.26 ± 0.14%, p = 0.05) and loin weight in L990 (?0.32 ± 0.13 kg, p = 0.01). We conclude that the detected associations are population‐specific and the analysed polymorphism of the LEP gene does not contribute directly to genetic variability of growth and carcass traits in pigs.  相似文献
