Field experiments were conducted to clarify the relation between the tillering ability and morphological characters, dry matter production, or nitrogen absorption among 14 rice varieties including different ecospecies with different plant types, and about the same heading time. Tiller number varied widely among the varieties and the number of tillers per plant at the maximum tiller number stage ranged between 14.3 and 39.5 in 1995 and 12.2 and 34.6 in 1996. Among all the varieties, IR 36 followed by Suweon 258 produced the highest maximum tiller number and Dawn produced the lowest maximum tiller number. The plant length and the specific leaf area, i.e. one of the indicators of leaf thickness, showed a strong negative and positive significant correlation, respectively, with the maximum tiller number. The varieties with a shorter plant length produced shorter and thinner leaves which would provide less competition for dry matter and nitrogen between mother stem and tillers and among tillers. This resulted in a higher efficiency of tiller production in the higher-tillering varieties for the same amount of dry matter production and nitrogen absorption. Percentage of productive tillers widely varied among the varieties, ranging from 42 to 73% in 1995 and from 50 to 81% in 1996. Semidwarf indica and japonica-indica varieties showed a lower percentage of productive tillers than the Japanese and tall indica varieties, and high-tillering varieties IR 36 and Suweon 258 produced the highest number of dead tillers, which resulted in the lowest percentage of productive tillers. The number of dead tillers depended mainly on the extent of competition for carbohydrates produced and nitrogen absorbed from the maximum tiller number stage to heading among tillers, although the increasing ratio of dead tillers was higher in indica varieties than in japonica varieties with a decrease in the amounts of these substances. 相似文献

We enzymatically modified rice starch to produce highly branched amylopectin and amylose and analyzed the resulting structural changes. To prepare the highly branched amylopectin cluster (HBAPC), we first treated waxy rice starch with Thermus scotoductus alpha-glucanotransferase (TSalphaGT), followed by treatment with Bacillus stearothermophilus maltogenic amylase (BSMA). Highly branched amylose (HBA) was prepared by incubating amylose with Bacillus subtilis 168 branching enzyme (BBE) and subsequently treating it with BSMA. The molecular weight of TSalphaGT-treated waxy rice starch was reduced from 8.9 x 10(8) to 1.2 x 10(5) Da, indicating that the alpha-1,4 glucosidic linkage of the segment between amylopectin clusters was hydrolyzed. Analysis of the amylopectin cluster side chains revealed that a rearrangement in the side-chain length distribution occurred. Furthermore, HBAPC and HBA were found to contain significant numbers of branched maltooligosaccharide side chains. In short, amylopectin molecules of waxy rice starch were hydrolyzed into amylopectin clusters by TSalphaGT in the enzymatic modification process, and then further branched by transglycosylation using BSMA. HBAPC and HBA showed higher water solubility and stability against retrogradation than amylopectin clusters or branched amylose. The hydrolysis rates of HBAPC and HBA by glucoamylase and alpha-amylase greatly decreased. The k cat/ K m value of glucoamylase acting on the amylopectin cluster was 45.94 s(-1)(mg/mL)(-1) and that for glucoamylase acting on HBAPC was 11.10 s(-1)(mg/mL)(-1), indicating that HBAPC was 4-fold less susceptible to glucoamylase. The k cat/ K m value for HBA was 15.90 s(-1)(mg/mL)(-1), or about three times less than that for branched amylose. The k cat/ K m values of porcine pancreatic alpha-amylase for HBAPC and HBA were 496 and 588 s(-1)(mg/mL)(-1), respectively, indicating that HBA and HBAPC are less susceptible to hydrolysis by glucoamylase and alpha-amylase. Indica–japonica variation represents the most significant genetic differentiation in Asian cultivated rice (Oryza sativa L. subsp. indica Kato or subsp. japonica Kato). Understanding the differentiation and distribution patterns of cultivated rice along altitude gradients will facilitate strategic utilization and conservation of rice germplasm from mountainous regions. In this study, we analyzed 203 varieties and 14 wild accessions of rice collected from localities across an altitude gradient between 450 and 2,350 m above sea level in Yunnan, China, applying the “InDel molecular index” developed recently. Results from PCA of the InDel data demonstrated significant genetic differentiation of rice varieties from Yunnan into indica and japonica types. A few cultivars and nearly all wild rice accessions showed only moderate or no differentiation. Further analyses demonstrated a clear distribution pattern of the rice varieties in the mountainous region: indica varieties were grown across the entire altitude gradient in the sampling areas, but most japonica varieties were found above 1,400 m. These results clearly indicated that indica rice could be cultivated in areas at much higher altitudes than those categorized by the traditional methods. The knowledge opens a new dimension for introducing indica rice varieties to mountainous regions at higher altitudes and for selecting rice germplasm in these regions. In addition, the pattern of significant indica–japonica differentiation in rice varieties from Yunnan suggested the exotic origin of cultivated rice, which did not support the hypothesis that Yunnan is a part of the center of origin of rice, although it is certainly one of the centers of genetic diversity for rice. 相似文献

The physicochemical properties and ultrastructures of japonica vs indica rice varieties and waxy vs nonwaxy rice varieties were compared. The viscogram values of the indica varieties were significantly higher than those of the japonica varieties. The gelatinization temperatures, breakdown, and setback were significantly lower for waxy than for nonwaxy rice varieties. Japonica rice exhibited lower hardness but higher adhesiveness than indica rice. The air space between individual starch granules was larger for waxy than for nonwaxy rice. The starch granules were compact in japonica rice, while the compound starch granules of indica rice were much smaller than those of japonica rice and were scattered widely in the endosperm. The protein bodies in japonica rice were concentrated near the cell wall, whereas those in indica rice were scattered around amyloplasts. These results suggest that the ultrastructure of rice affects the texture of the cooked product. 相似文献

The relationship between the slow digestion property of cooked maize starch and its molecular fine structure was investigated. Results of the in vitro Englyst assay showed a range of rapidly digestible starch (RDS) (70.1-98.9%), slowly digestible starch (SDS) (0.2-20.3%), and resistant starch (RS) (0.0-13.7%) among the tested maize mutant flour samples. Further analysis showed that amylose content was significantly correlated ( R = 0.763, P < 0.001) with RS amount but not with that of SDS, indicating that amylopectin is the starch molecule associated with SDS. Total starch debranching analysis revealed a parabolic relationship between SDS content and the weight ratio of amylopectin short chains (DP < 13, named SF) to long chains (DP >/= 13, named LF), which means amylopectin with a higher amount of either short chains or long chains can produce relatively high amounts of SDS. Furthermore, debranching analysis of the SDS materials from samples with the highest and lowest weight ratios of SF/LF (both had a high amount SDS) showed significantly different profiles, indicating there is not a uniform molecular structure for SDS. Thus, genetic mutants of maize samples have a good potential to provide raw starch materials of high nutritional quality. An additional finding showed that a simple and comparably high-throughput technique of Rapid Visco-Analyzer (RVA) can be used to screen genetic mutants on the basis of their RVA profiles. 相似文献

Sixteen red rice accessions from the southern United States were studied for their physical, milling, pasting, and thermal properties, chemical composition, and starch fine structure relative to cultivated medium- and long-grain rice varieties. All red rice samples were medium-grain, but their physicochemical properties were different from those of Bengal, a cultivated medium-grain rice. Their apparent amylose and crude protein contents were generally higher, and their amylopectin structure consisted of a higher percentage of the shorter branch chains (DP6-24) and a lower percentage of the longer branch chains (DP25-65). Red rice starch pasting and thermal properties were similar to those of Wells, a long-grain rice cultivar. The red rice samples can be classified into two major clusters according to their kernel properties by hierarchical cluster analysis: one cluster with more resemblance to Wells and another cluster with more resemblance to Bengal. Starch structure and kernel physicochemical properties may offer an alternative way of classifying red rice in addition to phenotypic and genetic indices. 相似文献

Retention of aroma compounds in starch matrices: competitions between aroma compounds toward amylose and amylopectin 总被引:1,自引:0,他引:1
The retention of three aroma compounds-isoamyl acetate, ethyl hexanoate, and linalool--from starch-containing model food matrices was measured by headspace analysis, under equilibrium conditions. We studied systems containing standard or waxy corn starch with one or two aroma compounds. The three studied aroma compounds interact differently: ethyl hexanoate and linalool form complexes with amylose, and isoamyl acetate cannot. However, in systems containing one aroma compound, we observed with both starches a significant retention of the three molecules. These results indicate that amylopectin could play a role in the retention of aroma. In systems containing two aroma compounds in a blend, the retentions measured for isoamyl acetate and for linalool were either equal to or less than those in systems where they were added alone. This phenomenon was attributed to competition between aroma compounds to bind with starch. The retention of aroma compounds blended in starch-based systems gave us additional information which confirmed that interactions occur not only with amylose but also with amylopectin. 相似文献

倒伏是影响水稻稳产高产的主要限制因素之一,该研究旨在通过比较不同处理的倒伏指数(Lodging Index,LI),及LI与倒伏相关生长性状和力学性能之间的关系,研究灌溉方式、肥料类型及水稻种类交互作用对倒伏相关形态特征、基部节间力学性状及产量等指标的影响。于2019和2020年6月-10月开展试验,研究2种水稻种类(南粳5055和Y两优900)在不同肥料类型(有机肥和化肥)及灌溉方式(控制灌溉和浅水勤灌)下的抗倒伏性能。结果表明:控制灌溉显著降低了株高和地上部分鲜质量(P<0.05);平水年(2020年)倒二茎节(I1)的LI受到水稻种类与肥料类型交互作用的影响,对于粳稻,两种肥料类型的LI无显著差异(P>0.05),对于籼稻,则表现为有机肥处理下I1的LI显著大于化肥处理(P<0.05);综合考虑抗倒伏性能和产量,有机肥施用下的控制灌溉模式适用于粳稻,化肥施用下的控制灌溉模式适用于籼稻。研究为通过灌溉和施肥措施调控不同种类水稻的抗倒伏性能提供数据支持和理论支撑。 相似文献

臭氧胁迫对稻米淀粉热力学特征值影响及其强弱势粒间差异 总被引:1,自引:0,他引:1
地表臭氧浓度增高情形下水稻减产,米质呈变劣趋势,但稻米热力学特征值的变化及其与生长季、品种以及籽粒着生部位的关系均不清楚。本研究利用自然光气体熏蒸平台,以8个水稻品种为材料,设置高臭氧浓度为100 nL·L-1,对照浓度为9 nL·L-1。连续两年系统研究了高臭氧浓度熏蒸对成熟稻穗不同部位糙米热力学特性(DSC)的影响。与对照相比,臭氧胁迫使稻米热焓值极显著下降4.15%,但对糊化起始温度、糊化峰值温度、糊化终止温度、DSC曲线峰宽和峰高均无显著影响;2017年度稻米热焓值、糊化峰值温度、糊化起始温度和峰高极显著大于2016年,但DSC曲线峰宽表现相反;稻米所有6个DSC特征值的品种间差异均达极显著水平。从稻穗不同位置看,所有测定参数均表现为稻穗上部 > 中部 > 下部,除糊化起始温度外差异均达极显著水平。方差分析表明,臭氧×年度对热焓值、糊化峰值温度和糊化终止温度的影响均达显著或极显著水平,臭氧×品种对糊化峰值温度、糊化终止温度、DSC曲线峰宽和峰高均有极显著影响,而臭氧×部位仅对DSC曲线峰宽有显著影响。以上数据表明,稻米淀粉DSC热力学参数因生长季、供试品种以及籽粒着生部位而异,臭氧胁迫环境下稻穗不同部位稻米的热焓值总体上均呈下降趋势,表现为更易糊化的特点。 相似文献

The yield of Koshihikari, a Japanese premium rice variety, is relatively lower than that of modern high yielding varieties. IR64 carries several well-known genes such as GS3, an important gene for grain size, sd-1, a semi-dwarf gene, and NARROW LEAF1 (NAL1), a gene for small, narrow flag leaves. In this study, we used two sets of chromosome segment substitution lines (CSSLs), from Koshihikari and IR64, and attempted to evaluate the genetic factors that cause differences between parents by analyzing the function of chromosome regions affecting a trait (CRATs). For 28 traits, we identified 312 CRATs in the Koshihikari background and 275 in the IR64 background. In these, donor alleles had positive effects in 84 and 103 CRATs, respectively. Among these, the CRAT related to GS3 and those for grain number expanded the potential sink size in Koshihikari, although this did not affect final yield. The combination of CRATs that enhances source ability may increase grain yield. Although the sd-1 gene might improve resistance to lodging, the yield of CSSLs with sd-1 decreased by 28.7 %. These results suggest that the smaller biomass conferred by sd-1 might reduce canopy photosynthesis. In the Koshihikari background, the CRAT related to NAL1 and those located on chr. 6 increased SPAD value but had the opposite effect on leaf size. Two CRATs that were detected on chr. 6 and 7 increased leaf area without any effect on the SPAD value. The combination of these CRATs for area and SPAD value might improve source ability. 相似文献

为改善挤压大米淀粉的功能特性,以米粉(rice, R)为主要原料,探究了不同槲皮素(quercetin, Q)添加量(0 ~ 10%)在挤压场下对米粉中淀粉的水溶性、吸水性、糊化特性等功能特性的影响。在此基础上,借助扫描电子显微镜(scanning electron microscopy)、X-射线衍射、红外光谱、及紫外可见光分光光度计揭示了Q在挤压场下对淀粉结构的演变规律。试验结果表明:当Q添加量为4%时,样品的吸水指数,碘结合能力均达到了最大值,且自由水弛豫时间提前;挤压体系中Q与淀粉通过氢键结合,颗粒结构变得更加立体、紧凑。与挤压米粉相比,槲皮素的添加延缓了淀粉的回生且提高了淀粉的热稳定性。根据以上结果可知,挤压体系中Q与大米淀粉复合,促进了淀粉分子链重排,进而改变淀粉的结构及功能特性,该研究可为开发抗回生的挤压大米淀粉基产品提供理论依据。 相似文献

为了改善大面积生产的水稻稻米品质,2015年和2016年以杂交中稻优质稻品种‘旌优127’、高产品种‘Ⅱ优602’为材料,通过分期播种并设置高氮低密与低氮高密两种栽培方式,研究了杂交中稻品种、气候及栽培方式互作对稻米品质的影响。结果表明,随着播种期推迟,整精米率、长宽比呈升高趋势,垩白度、胶稠度呈下降趋势,垩白粒率则呈"V"字型变化;高氮低密与低氮高密两个栽培方式间稻米品质差异不显著,栽培方式与年度、品种、播种期对稻米品质的互作效应均不显著;整精米率、垩白度、垩白粒率、长宽比同时受年度、播种期和品种的互作效应显著,胶稠度在年度和品种间互作效应显著,直链淀粉含量在播种期和品种间互作效应显著。对稻米品质影响程度的降序排列是品种、气候、栽培方式。有利于提高稻米品质的气象条件为:播种—移栽相对湿度小、日平均气温高,移栽—拔节期日平均气温低、日照时数少,拔节—齐穗期日最高气温低、日最低气温高、日均相对湿度低,齐穗—成熟期日照时数少。水稻抽穗前的气象因子通过改变穗粒结构而间接影响米质,抽穗后温度升高引起籽粒灌浆速度加快致稻米品质下降。 相似文献

C-type starch, which is a combination of both A-type and B-type crystal starch, is usually found in legumes and rhizomes. We have developed a high-amylose transgenic line of rice (TRS) by antisense RNA inhibition of starch branching enzymes. The starch in the endosperm of this TRS was identified as typical C-type crystalline starch, but its fine granular structure and allomorph distribution remained unclear. In this study, we conducted morphological and spectroscopic studies on this TRS starch during acid hydrolysis to determine the distribution of A- and B-type allomorphs. The morphology of starch granules after various durations of acid hydrolysis was compared by optical microscopy, scanning electron microscopy, and transmission electron microscopy. The results showed that amorphous regions were located at the center part of TRS starch subgranules. During acid hydrolysis, starch was degraded from the interior of the subgranule to the outer surface, while the peripheral part of the subgranules and the surrounding band of the starch granule were highly resistant to acid hydrolysis. The spectroscopic changes detected by X-ray powder diffraction, 13C cross-polarization magic-angle spinning NMR, and attenuated total reflectance Fourier transform infrared showed that the A-type allomorph was hydrolyzed more rapidly than the B-type, and that the X-ray diffraction profile gradually changed from a native C-type to a CB-type with increasing hydrolysis time. Our results showed that, in TRS starch, the A-type allomorph was located around the amorphous region, and was surrounded by the B-type allomorph located in the peripheral region of the subgranules and the surrounding band of the starch granule. Thus, the positions of A- and B-type allomorphs in the TRS C-type starch granule differ markedly from those in C-type legume and rhizome starch. 相似文献

Dimethyl sulfoxide (DMSO), with either 50 mM LiBr, 10% water, or both, was used as solvent for multi-angle laser-light scattering (MALLS) batch mode analysis of rice starch, and amylopectin and amylose weight-average molecular weight (Mw). DMSO/50 mM LiBr was a better solvent for these measurements than was DMSO/10% water, based on this solvent's ability to dissolve starch and to reduce the size of starch aggregates. Starch concentration decreased and amylose:amylopectin ratio increased when starch suspended in DMSO was centrifuged or filtered prior to size-exclusion chromatography (SEC)-MALLS analysis. A higher amylose:amylopectin ratio made starch more soluble, and the higher this ratio, the lower the Mw of eluted amylopectin. For SEC analysis of Mw, fractions of starch amylopectin and amylose dispersed in DMSO-based solvents yielded better results than starch dispersed directly into the solvents, because dispersion of these fractions decreased starch aggregation. When these two starch components were fractionated and then dissolved separately in DMSO/50 mM LiBr, the Mw of dispersed amylopectin ranged from 40 to 50 million, and that of amylose was ca. 3 million, whereas starch from three rice varieties of varying amylose content ranged from 60 to 130 million. We recommend that SEC evaluation of amylopectin and amylose be accomplished with fractionated samples as in this study; such evaluations were superior to evaluations of natural mixtures of amylopectin and amylose. 相似文献

采用溶液培养试验比较了富硒水稻与非富硒水稻对硒的吸收和运输特征,期望揭示富硒水稻秀水48和非富硒水稻丙9652籽粒硒累积差异部分生理机制。结果表明,两品种水稻根部对硒吸收的Km值差异不大,但富硒水稻秀水48的Vmax是非富硒水稻的1.57倍,两品种水稻根系对硒的共质体吸收皆受载体调控。硒吸收时间动力学试验证实秀水48茎中硒的浓度和含量在各个处理时间段均要高于丙9652,富硒水稻秀水48的木质部汁液中硒的浓度大约是非富硒水稻丙9652的2倍,在相等蒸腾速率的条件下,秀水48地上部硒含量显著高于丙9652,说明两品种水稻向地上部转运硒的能力差异显著,秀水48更易将根中的硒转运到地上部,高效的转运体系是富硒品种地上部硒含量高的关键所在。富硒水稻具备很强的向地上部转运硒的能力,部分原因在于其根部木质部对硒的装载能力较强。 相似文献

Eight rice varieties with wide diversity in apparent amylose content (AC) were selected and planted in the early (HZE) and late season (HZL) in Hangzhou and in the winter season in Hainan (HN) for two consecutive years to study the genotypic and environmental effects on starch thermal and retrogradation properties of grain. Genotypic variation (all at P < 0.01) accounted for >56% of the total variation for onset (T(o)), peak (T(p)), and completion (T(c)) temperature, width at half-peak height (DeltaT(1/2)) of gelatinization, enthalpy (DeltaH(r)) of retrograded starch, percentage of retrogradation (R%), and 45.8% for enthalpy (DeltaH(g)) of gelatinization. Seasonal variation accounted for about one-fifth for T(o), T(p), and T(c) and one-third for DeltaH(g), but less for T(1/)(2), DeltaH(r), and R% of the total variation, indicating that T(o), T(p), T(c), and DeltaH(g) were highly affected by seasonal environment in addition to the genotypic variation. The T(o), T(p), T(c), and DeltaH(g) in HZL were much smaller than those in HZE and HN. Correlation analysis for the eight genotypes showed that AC was significantly correlated with DeltaH(g) (r = -0.83, P < 0.01) and R% (r = 0.734, P < 0.05). DeltaH(g) was also positively correlated with T(c) (r = 0.878, P < 0.05), but it did not have any correlation with DeltaH(r), whereas the latter was positively correlated with R% (r = 0.994, P < 0.001). The intercorrelation of T(o), T(p), T(c), and DeltaT(1/)(2) themselves was significant at P < 0.001. The correlation analysis results suggest that there are different molecular mechanisms to regulate thermal properties (T(o), T(p), T(c), and DeltaH(g)) and retrogradation properties (DeltaH(r) and R%) as affected by environmental conditions. The implications of the results for rice breeders and starch-based food processors are discussed. 相似文献

Due to the relatively late start of organic rice (Oryza sativa L.) research in China, there is a still lack of systematic research on rice varieties, organic fertilizer management practices, and especially the mechanisms of nitrogen (N) uptake and utilization. Three rice varieties, Nanjing 5055, Nanjing 9108, and Nanjing 46, were grown at organic farming (OF) with three organic fertilizer levels (103.2, 160.8, and 218.4 kg N ha-1) and conventional farming (CF) with regular chemical fertilizers. Rice grain yields, yield components, and quality, dry matter accumulation, and plant N were measured at different growth stages during the 2012 and 2013 growing seasons. Compared with CF, OF had a significantly reduced yield. Nanjing 9108 showed significant reductions in number of panicles per unit area and the percentage of filled grains, and had the lowest yield. The effects of fertilizer type and application rate on dry matter accumulation during the main growth periods were significant for all varieties. The N content and uptake of organically grown rice were lower compared with that of rice under CF. The N recovery efficiency and N agronomic efficiency were significantly lower, whereas N physiological efficiency and N partial factor productivity were greater under OF than under CF. Under OF, the processing quality showed a slight but insignificant decline, protein content and gel consistency increased, and amylose content decreased compared with those under CF. Correlation analysis showed that under OF, grain yield was significantly correlated with N uptake. The medium organic fertilizer level (160.8 kg N ha-1) was found to be the optimum fertilizer treatment, and Nanjing 46 appeared to be the best variety for organic rice cultivation. To increase rice grain yields and reduce the potential risk of non-point source pollution in organic agriculture, further research is needed to improve the N use efficiency in organic rice cultivation. 相似文献

Changes in the taste of japonica, hybrid, and indica brown and milled rice, stored for 10 months at low (5 degrees C, 65-70% relative humidity) and room temperatures were observed by physicochemical analyses and a novel method using a taste sensing system. During storage, some properties increased or decreased while others were fairly constant. The main taste components of cooked rice such as sweetness (sucrose) and umami tastes (glutamic acid and aspartic acid) were reduced during storage, whereas glucose and fructose increased. The increase of fat acidity and consequent decrease of the pH value of the cooking solution may contribute to the off-taste of cooked stored rice. A taste sensing system with 10 lipid membrane sensors was also used to classify new and old rice samples using principal component analysis. Fresh and room temperature stored japonica and indica rice could be clearly distinguished; however, it was not possible to differentiate the samples stored at low temperature. 相似文献
